Yearning to get back in shape after giving birth to her third child, Gilbert mom Elizabeth Ayers Cluff felt a little uncomfortable as she slid into her sports bra.

She was concerned. She didn’t feel a lump, but did have tightness and pain. Her OB-GYN recommended a mammogram. That, unfortunately, revealed that this mother of three children younger than 6 had breast cancer “They moved very quickly,” she says about the doctors.

Soon she was swept up in talks about mastectomies, the removal of lymph nodes and prosthetics.

“Once you’re told that, you just go through the motions,” she says. “They talked to me about postsurgical clothing. My mind couldn’t think about it.

It’s like telling someone to go shopping. It was too overwhelming.”

Ayers Cluff doesn’t want anyone else to feel the way she did, so she founded Gilbert-based I’mpact One Breast Cancer Foundation. The nonprofit collects and ships prostheses, bras and wigs to women throughout the country at no charge.

here are days when I feel a bit more like a counselor than a financial professional when I am talking to my clients about money. That’s because money is an emotional topic. No one talks about it until they absolutely have to and that can make for awkward conversation especially when you’re talking to your spouse about money.

As you’re preparing to talk to a financial professional about money and investing, keep these tips in mind: 1. Financial responsibility is for both of you. As a couple, the family finances are the responsibility of both parties. Each person needs to have the information about all the accounts so they understand the complete financial picture to make informed decisions.

2. Focus on the future. Where you are today isn’t one person’s fault over the other, it is what it is.

We can only move forward to reach financial goals. There’s nothing we can do about the past except make a plan for the future.

3. Be responsible. Just because you’re moving forward today doesn’t mean you should ignore the past. It’s important to address old debt and have a plan to pay it off. Then you can invest more for your future.

4. Regular discussions. Plan distraction-free time once a month to meet with your spouse to review family finances. This includes the monthly budget as well as investments. It’s important to understand where you stand financially so you can adjust before it’s too late and you’re sitting on a pile of debt without retirement savings.

5. Be willing to change. Just because you’re over budget this month doesn’t mean you’ve started a trend. Be willing to change spending habits with the end goal in mind.

6. Set financial goals. Now that you’re talking to each other about money and having regular meetings to discuss family fi nances, you should also be setting and reviewing fi nancial goals like funding the education of a child or grandchild, retirement savings, and succession planning for business.

When Carol Sillion was diagnosed with triple negative breast cancer a year ago, she started losing her hair after one treatment.

She contemplated where to go to find a wig.

She discovered Paris Wigs and feels fortunate to have found the store and its owners, Heather Norton and Haley McCoy. “From the moment I entered the store, I felt like a queen,” she says. “Haley, one of the owners, took her time with me and found the perfect wig to complement my face. She cut and styled my wig to my liking. I was so excited! As time went on, I met the other owner, Heather. She was also very helpful with my wigs.

“Since then, I have purchased 16 wigs. I stop in to the wig shop at least once a week to visit and have one of my wigs styled. I have found a real friendship with Haley, Heather and their employee Ashley. All three of them make me feel so welcomed and it truly is a happy place to visit.”

At first, a visit to Paris Wigs may seem to be overwhelming, with its wide array of synthetic and human hair wigs, extensions, toppers, pony clips and bangs.

But then, once customers are greeted by Norton and McCoy, the anxiety dissipates as they help patrons restore their hair and self-confidence. The two say they can always find the perfect, most natural-looking solution through wig customization to match their clients’ color.

“We love this company and building meaningful relationships with our clients,” said Norton. “It’s very fulfilling to see clients cry tears of joy as they regain their confidence leading to a more rewarding social life, marriage and more.”

Norton and McCoy, who met while working together in Oregon, knew that their business would serve their purpose and passion. Their desire has always been to support women’s needs, particularly because they were raised by strong single women.

After relocating to Arizona, they set out to help women, especially those going through chemotherapy or in need of wigs for reasons such as thinning hair or visible scalps. After learning that there

weren’t any wig shops in the East Valley, they opened up Chandler’s Paris Wigs in 2014 to positive reviews.

Can wigs be the new trend for every woman looking for a change?

McCoy responds with a resounding yes and provides the following tips to newcomers. “The key is to give yourself enough time to learn about the different wig styles and cap designs and schedule an hour for your consultation. Take in all the information and don’t be in a hurry. Also, bringing a trust friend or family member is helpful because they will tell you which ones look best.”

The company also has a large YouTube following and regularly posts videos showcasing new styles and trends.

They share that the best part about experimenting with wigs is their clients’ ability to express themselves creatively through their hair instead of playing it safe.

It usually creeps up slowly, those extra 10 pounds. We often don’t realize it until we put on a pair of pants we haven’t worn in a while, or catch a glimpse of ourselves in an unexpected mirror and cringe. Although it’s not the easiest thing to lose those 10 pounds, it also doesn’t have to be a dreaded event either. Here’s the skinny on how to get skinny, starting with the hard stuff: 1. CUT OUT SUGAR.

Sugar creeps into foods you wouldn’t even expect it to be in, such as pasta sauce, bread, salad dressings and flavored yogurt.

Start reading labels and shy away from the sugary stuff!

2. JUST SAY NO TO ALCOHOL. Sad fact, yet true. Alcohol

is not only high in empty calories, it can cloud your judgment and lead you to a late-night snack. Dedicate one month to being alcohol-free and notice the difference.

3. GIVE UP MEAT. Try a vegan diet for one week (or maybe just one day per week) and notice how you feel. Vegan diets done right are a very satisfying way to dine.

7. STOP WORKING!

Well, at least just take a quick stretch break once every half hour. Stand up from your desk, stretch your body, grab a drink at the water cooler, and then sit back down a little more refreshed in body and mind.

CINDY JOHNSTON IS THE QUIET VOICE OF REASON BEHIND THE GILBERT-AREA RESTAURANTS OF HER ENTREPRENEURIAL HUSBAND, JOE

Cindy Johnston stops short of saying that Liberty Market is her favorite restaurant. That would be like a mom saying she has a favorite child. But you can tell she’s comfortable here, in her element, feeding off the dining room’s espresso-fueled energy.

The project across the corner from Joe’s Real BBQ in the Gilbert Heritage District worried her, opening as it did in 2008, in the depths of the recession. The cafe lost money its first year. Cindy wondered if she and Joe had stretched their entrepreneurial superpowers too far.

"I hadn’t planned

on being a day-to-day worker or getting that involved,” she says.

“But I enjoyed it. I miss it when I’m not here."

But she knew that hand-wringing wouldn’t get the job done at Liberty Market. She hosted, served tables, rolled napkins, put toilet paper in the bathrooms - whatever it took to help out and make the restaurant a success.

“I hadn’t planned on being a day-today worker or getting that involved,” she says. “But I enjoyed it. I miss it when I’m not here.”

Happily, the East Valley economy started picking up steam again and Liberty Market thrived. So did downtown Gilbert, attracting other notable restaurants, such as Postino East, Zinburger, Snooze and Barrio Queen.

Cindy and Joe Johnston's Agritopia home reflects their warm and inviting personalities. Cindy often zips over to the Coffee Shop on her Vespa to grab a coffee or a cold drink.

DEVIL’S ADVOCATE That’s Cindy’s main job in this longrunning, highly successful partnership.

“Joe has great ideas,” she says, “He’s very optimistic. I try to think of all the things that could go wrong.”

Alarm bells sounded in her head as the couple discussed plans for Joe’s Farm Grill, which opened in 2006. By that time, Cindy and Joe had turned the Johnston family farm into Agritopia, which inspired other “agrihoods” to pop up all over the United States. Now it was time to remake Joe’s boyhood home.

Where he saw a hip, mid-century modern burger stand and a magnificent patio, she saw kids falling out of trees and parents filing lawsuits. Warning signage allayed her fears. Cindy says there’s a line of demarcation between identifying potential pitfalls and squelching ideas.

And once she’s on board, she becomes a project’s “biggest cheerleader.”

She couldn’t find a single wrinkle for Barnone, she adds.

“It’s really cool.”

Slated to open Nov. 11, Barnone will house 10 maker spaces in a renovated Quonset hut that used to serve as the barn for the farm at Agritopia. The Johnstons are planning spaces for a florist, graphic designer and other craftspersons. They also want to bring a small winery and brewery to the plot of land, a stone’s throw from The Coffee Shop. One of the largest spaces will be for Fire and Brimstone, a 60-seat eatery specializing in wood-fired fare. It will be helmed by son James. Their other son, William, is business manager for Johnston & Co., the family business.

MAKING OF AN ENTREPRENEUR Cindy grew up in Superior in a Lebanese family. She continues to make baklava, rolled grape leaves and also

cures her own olives. She remembers fondly how her dad would declare the brine was just right when an egg floated in it just so. A friend of the family who worked at Boyce Thompson Arboretum let them harvest olives at the park.

Her dad owned a dry-cleaning store in Superior, and Cindy and her sister, Sandra, worked there growing up. Sandra Saoud Pike runs an image development and modeling agency in Chandler and owns Sincerely, Sandra, a cosmetics and skin-care store.

After graduating high school, Cindy earned a scholarship to Arizona State, majoring in education.

Because her scholarship was sponsored by a mining company, she returned to Superior each summer to work in the firm’s warehouse, a job that required her to wear a hardhat and steel-toed boots.

Cindy taught third grade in Mesa for three years.

“I loved the kids, but teaching was not my gift,” she says.

Accounting comes more naturally for her, a skill that came in handy after she got to know a guy named Joe. WORK AND PLAY Sandra, who knew Joe’s mother, introduced the two.

“It took him a month to call me,” Cindy says. “It took him three months to hold my hand. He’s a gentleman... still is.”

After a two-year courtship, they married in 1985.

She kept the books for the Coffee Plantation, Joe’s first entrepreneurial foray after leaving the engineering field.

Faith, family and friends are important to Cindy.

She’s a greeter at Redemption Church in Tempe and participates in Bible Study Fellowship.

Joe’s engineering work in the first couple of years of their marriage allowed them to make many visits to New York City and Boston, and they developed a passion for train travel.

“It’s a fabulous way of seeing the country.” she says.

“Joe’s a great planner - and he gets the top bunk.”

Long ago, men were the masters of the backyard barbecue domain. They were in heaven with their hamburgers and early gas grills that specialized in frequent flare-ups and uneven cooking. And if those grills had one of those newfangled side burners - oh boy - you were the alpha dog of your Gilbert neighborhood.

Today, husbands and wives are equal partners in outdoor kitchens, and they’re willing to spend money on them that rivals or exceeds what they spend on indoor kitchens.

“It’s getting a lot more elaborate for sure,” says Scott Bonn, who co-owns with Kurth Hentges One Call Landscape & Design, which does most of its work in Gilbert, Chandler and Mesa. “We’re seeing people throw a lot more money into outdoor kitchens than they have in the past.”

Outdoor kitchens often go hand in hand with major swimming pool and landscape makeovers. It’s all about crafting an exciting outdoor entertainment experience and blurring the line between indoor and outdoor living spaces, Bonn says.

The trend has swung dramatically to bringing the entire indoor kitchen experience, including the kitchen sink, outside. Homeowners want under-counter refrigerators or refrigerator drawers. They want insulated stainless steel coolers that drop into countertops and

Most of all, they want pizza ovens.

There are several ways backyard chefs can get into pizza ovens, depending on which heat source they prefer, says JT Thomas, manager of BBQ Island in Tempe.

The gas Alfresco Pizza Oven Plus has a 20,000 btu ceramic slab hearth and ceiling, plus a 20,000 btu ceramic log. It’ll be ready for your Neapolitan in 15 minutes and cook it in about three. The oven can go on a countertop or be built into a wall.

Fancy appliances aside, Bonn says Gilbert homeowners are putting a lot of thought into their outdoor kitchen layouts. As with indoor kitchens, cooks use 36-inch counters to work on, while friends and family members hang out at 42-inch bar height counters.

Shade structures with misters over workspaces and dining areas ensure that cooler heads prevail in summer. Clients want a lot of electrical outlets, Bonn adds, because today’s gas grills also have built in halogen and LED lighting. Outlets are also needed for refrigerators, to power blenders and—something cavemen of the 1980s didn’t have to worry about—to recharge smartphones and tablets.

IF IT’S IN THE PIPELINE AT THE ARIZONA LEGISLATURE, IT HAS GRETCHEN MARTINEZ’ EYES ON IT

Filling the

bills

By Srianthi Perera Photography by Cheryl Haselhorst As part of her job for Gov. Doug Ducey, Gilbert's Gretchen Martinez must read and understand every bill under consideration in the Arizona Legislature.

This year, after the Legislature adjourned, there were 227 bills pending.

“I think public-policy-making is fun,” said Martinez, 28, director of legislative affairs for Ducey. “I know a lot of people think I’m crazy for saying that.”

When the Arizona Legislature is in session, usually from January to May, Martinez gets up early at her home in Gilbert’s Morrison Ranch to be at the governor’s office in Phoenix by about 7 a.m. She’d usually return home at about 9 p.m.

Meanwhile, her husband Logan also prepares for a day of work – at home.

He telecommutes for his job in customer service at American Express. For company, he has Brutus, their 50-pound, 7-month-old, still-in-training pit-bull mix.

Martinez’s appointment came as a result of her internship in former Arizona

Governor Jan Brewer’s office. She landed that position largely due to her fluency in languages, including French and Spanish; her degree in political science from the University of Arizona that included semesters of studying abroad in Ukraine and France; and her eye-opening year in Santiago, Chile.

Martinez moved to the South American country with her parents when she was 16.

Her father was working for a mining company, which meant frequent moves, and she went along — kicking and screaming, she said. Chile didn’t sound like a good idea to a teen who was about to get her driver’s license and had studied French — and not Spanish — for two years in high school.

But Chile, as it would turn out, stoked her interest in politics.

It was the time of the Iraq War and President George W. Bush’s re-election campaign, and anti-American sentiment was strong in Chile, she said.

“I was with kids from around the world and found myself often having to defend what America was and what it stood for, and why we were in the war,” she said. “I just started reading a lot about politics and trying to understand why I was so proud about my country.”

That was the turning point.

“I decided that I definitely wanted to work in politics,” she said.

After a year in Santiago, Martinez returned to the Valley and continued with her education, leaving her parents behind.

Subsequently, she got a job in Governor Brewer’s office.

“I think, when you’re 21 years old and working in the governor’s office, your eyes are open very wide and you just get to see the real impact that individuals can have on a state level,” she said.

Congress seemed far away, but Arizona was here.

“They feel so far away from us so often. I was so impressed at how responsive the state Legislature is to the issues in Arizona and how close to the people the governor is,” she said, adding that it’s “the same with Governor Ducey.”

In 2012, Ducey ran a campaign for a salestax increase and she received an opportunity to be his campaign manager. She took it up, all the while holding down a full-time job at the Arizona Chamber of Commerce and Industry.

“We kind of worked so well together that we have been working together ever since,” she said.

After the governor was elected in 2014, Martinez worked on the transition team. In January 2015, she was hired for her current role.

When the state Legislature is in session, Martinez’s calendar is chock-full of meetings with the governor, legislators, lobbyists and policy advisers.

“Everyone has bills that they’re working on and they want to make sure the governor understands it, and the governor’s office doesn’t have questions and issues,” she said.

Martinez is not expected to know the ins and outs of every topic because policy experts from various subject areas are available.

Given a choice, she would hone in on education, criminal justice and health care, although there is no policy area she didn’t want to “sit down and learn.”

Once the legislation is finished for the year, the next hoop to jump through is getting pending legislation through, because the governor only has 10 days to act on the bills.

Those are sleepless nights.

“There’s always the glimmering light at the end of the tunnel because we know that there’s

always an end to that part of it that helps us get through it,” she said.

Afterward, there’s an implementation period when the office has to ensure the bills that were passed are being implemented by the government’s executive agencies.

“Then, we roll right into policy development for the upcoming year,” Martinez said.

With such a schedule, it’s no wonder that she doesn’t have much time for leisure or hobbies.

On most weekends, she visits the Gilbert farmers market, indulges in the town’s vibrant food scene in the Heritage District or spends time with her niece and nephews who live in the West Valley. Logan plays Christian music

on multiple instruments in a worship band at their local church.

A three-year resident of Gilbert, Martinez appreciates the town’s sense of community, but is not yet plugged in to the municipal circles.

“I need to be better civically engaged at the local level. I just do so much at the state level, I don’t have the time to do that much,” she said.

And, for the time being, she wants to stay put.

“I think a lot of people, especially when they get a taste of politics, want to go to (Washington) D.C.,” she said. “I wasn’t like that. I knew that by staying here and working on my career here that I can have a bigger impact.”

The new season at the Higley Center, 4132 E. Pecos Rd., opens with acoustic guitarist Chris Proctor, who has been called a “solo guitar orchestra” and compared with Leo Kottke.

First up for the Hale is “The Drowsy Chaperone,” the Tony Award-winning musical satire. It opened Aug. 26 and plays through Oct. 8. Kaufman and Moss Hart, the 1930s comedy concern an eccentric urban family.

The musical “Seven Brides for Seven Brothers” is slated for Oct. 13 to Nov. 26. In the Old West of the mid-1800s, seven roughhewn brothers find seven brides, but the brides aren’t necessarily happy about that. The Hale’s annual presentation of “A Christmas Carol” arrives Dec. 1 and stays through Christmas Eve. “Mark Twain’s is He Dead?” opens New Year’s Eve and runs through Feb. 11. It’s the story of a French artist who fakes his death to increase the popularity of his paintings.

The next show, The Marvelous Wonderettes, is a jukebox musical featuring ’50s and ’60s hits such as “Sincerely,” “Mr. Sandman,” “It’s My Party” and “Respect.” It runs Mondays and Tuesdays Jan. 17 to April 18.

“Thoroughly Modern Millie” takes center stage from Feb. 16 to April 1. Its musical sendup of 1920s flappers was first an Oscar-winning movie before becoming a Tony-winning Broadway show. The Army is a load of laughs in “No Time For Sergeants,” which plays from April 6 to May 13. The original, 1950s production ran for two years on Broadway and launched the career of Andy Griffith.

Sir Elton John and Sir Tim Rice’s spectacular Broadway hit “Aida” closes the season from May 18 through July 1. Based on the storybook retelling of Verdi’s opera by soprano Leontyne Price, it tells the tale of a love triangle in ancient Egypt to such Elton John hits as “Written in the Stars.”

caused by multiple factors, but the most common cause is an underlying genetic pre-disposition to hair loss known as androgenetic alopecia or female pattern hair loss. Question: How you do know what is causing your hair loss?

Answer: A simple patient history is the easiest way. Many women have blood tests for hormonal issues, thyroid dysfunction, iron levels, and vitamin D deficiency. Unfortunately this rarely produces any other cause other than normal pattern hair loss.

Power Ranch woman lives to make women look ‘pretty’

BY CHRISTINA FUOCO-KARASINSKI As a child growing up in California, Lindsey Forrest Bouffard always enjoyed art. In high school, she was in charge of publicity and creating signs for the school.

“I would always do scrapbooking or make cards for people,” she adds. “I really liked fashion, too. I worked at Nordstrom while I was at BYU in Utah.”

At Nordstrom around 2004, the current Power Ranch resident found her niche—makeup.

“I started to really get into the makeup line that I worked for,” she says about Stila. “I liked that it was really pretty. When I would sell makeup to my clients, it always fit. Clothing doesn’t always fit.

“I really fell in love with that.”

Since then, she has become a successful makeup artist. Bouffard trained in Los Angeles and Hollywood, and has had “amazing opportunities” to make celebrities beautiful on set for red carpet events. Bouffard has even been to New York Fashion Week. She has worked with the likes of Victoria Beckham, Amanda Bynes, Diana Agron and Francis Fisher.

“I perfected my craft with a lot of practice and watching a lot of people who I had admired; artists I thought were good. I’m still learning. You never stop learning as an artist.”

She met her husband, Chris, online in 2011 and married later that year. It was then that she changed her focus to offer

“She’s a joy,” she says. “She’s actually confident. She knows what she looks good in. She doesn’t like a lot of makeup on her face; more on her eyes. I was so nervous doing her makeup.”

She researches her clients by looking at photos of previous sessions, and just works to recreate that.

“I run Painting You Pretty out of my home,” says Bouffard, who has lived in Gilbert for four years, loving the community feel.

“I can travel to people and I do that when I need to go to a wedding, or if clients want me to come to their house. I will give makeup lessons or classes at my home. I do makeovers at my home as well. It’s been a really rewarding thing to do.”

EDUCATION IS IMPORTANT Bouffard was a pro artist at Stila Cosmetics in Los Angeles.

“When I was with Stila, I did education and I worked for their events,” she says. “I wrote their blog and I helped with the press. I’d go to fashion week with them.

“I did a little of everything, but a lot of it was artistrybased. When I wasn’t doing that, I was doing make up for red carpet events, photo shoots or I was on set. I worked with ‘E! News’ sometimes. I did the Oscars, Golden Globes and the Emmys.”

Before she married Chris, she had the opportunity to work with Pat McGrath, whom she calls one of the best makeup artists.

“She did makeup for Fashion Night Out with 200 models in New York,” she says. “It was a career highlight. It was really nerve wracking.”

Sometimes the tables are turned and the celebrities or clients are the ones who are nervous.

“If you don’t do a good job, their makeup is picked apart by press,” Bouffard says. “A lot of them aren’t as confident as they should be. They’re so beautiful, too.”

She says that Beckham was a dream to work with.

FAMILY LIFE Bouffard grew up in Rancho Santa Margarita, close to the beach.

“We grew up in a really nice town with great people. When I moved to Arizona, I was so hardcore about being able to move back to California.”

She traveled between California and Arizona for a bit, but it was hard on her husband.

“When you don’t have anyone, it’s easy to drop everything and cater to someone else’s schedule. I’m very flexible to someone else’s needs, but suddenly I had to (adhere) to my family’s schedule.”

She has since warmed up to Gilbert, enjoying its community feel and family-friendly atmosphere. The latter is perfect for her and Chris, who have two children, 3-year-old Harvey and 5-month-old Benji.

Even with all of her experience, she’s modest.

“I’ve worked with some cool celebrities, but that doesn’t mean I’m too good to do someone’s makeup who lives down the street from me,” she says. “Some of the most rewarding days are when I can help my friends understand how to do their makeup better.

“I recently went to Sephora with a client because she never had the guts to go there because it was so overwhelming. If I can help someone experience that joy and confidence that comes from wearing makeup, I’m satisfied.”

BRIGHTEN YOUR LIP COLOR The pigment in your lips fades with age, so it’s important to add it back with a lip color. Brighter, happier shades are my favorite because they look healthy and youthful. Most people steer clear of these shades in favor of something duller and less obvious. However, these shades often lack enough life to provide you with a more youthful look when you are older.

USE POWDERS SPARINGLY Too much powder takes away the dimension of your face and emphasizes your flaws. This is unflattering as you age.

An excess of powder will enhance wrinkles, pores, dry patches and texture problems. If you are worried about oil on your skin, use a translucent, loose powder because the texture is very refined and less likely to enhance problem areas on your skin.

You can also use blotting papers throughout the day to combat oil instead of relying on powder.

DON’T ASSUME YOU MUST USE MATTE FOR EVERYTHING A lot of women turn 40 and stop using shimmer altogether, worried they are going to emphasize all the problems that come with their new age. While some matte textures are definitely beneficial, you can still use shimmer. Shimmer is especially flattering on your cheekbones and the lids of your eyes.

If shimmer scares you, look for satin textures.

Good Cause Sabrina Kearney finds solace in speaking about mental health

Sabrina Kearney felt uncomfortable moving from a small town in Virginia to the greater Washington, D.C., area after graduating from college in 2007.

Kearney was stressed out and called the employee assistant program for help. After three sessions, she was diagnosed with chronic, low-grade depression.

“I didn’t understand,” says Kearney, who now lives in Gilbert with her husband, Richard, a postal processing clerk, and daughter, Erma, 3 1/2. “I thought depression means mental illness.

Mental illness means crazy. I said, ‘I’m not listening to you, goodbye.’”

She didn’t do anything about it until she fell so ill that she couldn’t function well.

“I couldn’t get out of bed,” she says. “I would call my aunt and ask her to get milk, even though I lived by a grocery store. That meant I had to leave my house and that wasn’t happening.

My aunt persuaded me to go back to a psychologist.”

Now that she’s come to grips with it, Kearney used mental illness as a platform for her run in the Mrs. US Universal Pageant. She did not place in the top 12 in the late-July event.

“It took me a couple of years to wrap my head around that,” she says about her diagnosis. “Just because you have a mental illness, it doesn’t mean you’re crazy.

“I’ve met some people who are crazy and they don’t have a mental illness,” she adds with a laugh.

The pageant seeks “dynamic” women who love to help their community and has a strong platform. Contestants must be 25 or older, married and live with their husbands.

“We don’t have to have a talent,” she says. “The interview is 40% and the rest is broken up evenly into fitness wear— not bathing suits—evening gown and an onstage question. For the interview, we

had to write a bio sheet about ourselves. The interview with the judges is based on what your bio said.”

To support her cause, Kearney volunteers for National Alliance on Mental Illness or NAMI. “It’s a program that takes people who are living with chronic mental illness and they go out and talk to people with mental illness to try and combat the stigma,” says the 37-year-old Kearney, who currently does not take medication for depression, but will resume soon.

She also volunteers as a youth leader at her congregation, Discovery Community Church. She works as a spacecraft systems engineer who oversees testing of satellites.

She earned a degree in computer science from Capital College outside of Baltimore.

ROAD TO THE PAGEANT In 2012, Kearney was in the running for the Mrs. Maryland title when she became pregnant. She fulfilled the duty of participating in community events, but she did not take part in the pageant.

“A couple of years later, I took part in the Mrs. Wyoming pageant,” says Kearney, a former Cheyenne resident.

“I had a great time. It was my first pageant.

I didn’t do horrible; I didn’t finish last. I didn’t like my hair. I didn’t like my dress. I was trying to be somebody else. I wanted to be me—not the girl with the fake lashes and looking crazy.”

An acquaintance introduced Kearney to the Mrs. US Universal Pageant, and she liked it because “everybody looked regular.”

“I’m not a fancy person,” says Kearney, who stays in shape thanks to Charles Ward of Gilbert-based Alive & Thrive Fitness. “That’s why I like doing the pageant. It makes me feel like Superman, getting all glammed up.”

She applied for the pageant and was chosen to represent Arizona.

“Since then, I’ve been trying to do what I can with my title. I’ve been doing about one or two community things per month,” she says.

“Like I mentioned, I do presentations and I volunteer at my church. I’ve done a couple of fun runs at the park. I’m just trying to get out and meet people. After I return from the pageant, I have an appearance at a local retirement home in Gilbert.”

“I’m just a regular person who’s trying to show other people with mental illnesses or disabilities that you can still set a high goal for yourself and work toward it.

Because she and Cholewka are both from Gilbert, the idea went off without a hitch. “Shanna and I know from being

involved in Gilbert events for many years that there is a strong and powerful women’s community in the East Valley, and we wanted to give them a voice,” says Cholewka, founding attorney of Cholewka Law. “Our mission is to encourage and empower women right in their own backyard.”

Step into Romeo’s Euro Café in Gilbert’s Heritage District and the first thing you see is a wall filled with Mexican folk art—colorful crosses, Milagros, statuary and dishes. Then you pass by a case crowded with mouthwatering cakes and pastries. Farther down the way is a wall packed with wine bottles.

The cozy, welcoming café is a reflection of the tastes and personalities of owners Romeo and Janice Taus—there's nothing cookie-cutter or corporate about it, and they like it that way. So do the customers who have been coming here, and to their previous place in Mesa, for upward of 25 years.

The artwork and restaurant design are Janice’s passion.

“We had a very limited budget but I think it has a nice feel,” she says. “I kind of like doing something with nothing sometimes.”

And the pastries, well, they’ve been part of Romeo’s life since his mom started baking rum cakes with buttercream, chocolate ganache and raspberry preserves for his birthday.

“My mom has been baking that cake for my birthday for 60 years,” he says. “Anyone who’s been here a few years has had one on their birthday as well.”

Now and then, one finds its way into the pastry case, beside such temptations as the Intoxicated Love and Satin Bondage cakes. Janice suggests you stop at the case before you order dinner.

“Sometimes it’s not a bad idea to pick your dessert first because some of them taste a little better if they’re not too cold,” she says.

Chains are fine for what they offer, and hot, chic new spots are fun. But it’s the dining spots you know, where they know you and make you feel welcomed, that help define a communit y and enrich its experience. Especially in a downtown area like Gilbert’s Heritage District.

And that’s what the Euro Café brings to the area. Along with some great food and wine.

Why Gilbert?

“We wanted someplace close to our former

place, where we’d still be in the middle of our customer base,” Janice says. “I’ve always liked the feel of the downtown. A long time ago, when I worked with a drug company, I used to call on the pharmacy across the street, so I was familiar with the area. It’s a fast-growing communit y, and it still has its character.

"There’s something about the way things were designed here, having the parking lot at the back versus right on the street that has a different feel. People like it—I like it.

“I think what they’ve done down here is wonderful. You can tell, with others being drawn here, that they think so as well.”

The Tauses didn’t start out as restaurateurs.

Romeo is an immigrant from Romania who has been in this country since the early 1970s. His family settled in Detroit, and his early working years were spent in the automotive industry, then the discount drugstore business, where he met Janice.

Janice had family in Arizona. Despite forays into Las Vegas and the South Shore of Long Island, the state kept luring the couple back.

Romeo got into serious cooking when he worked in an office next to a pizzeria and became friends with the owner.

“On Sundays, he'd give cooking classes,” Romeo says. “I used to go there, watch the Pistons play basketball and be the towel boy for his cooking classes. For me they were like magic classes.

“All my free time, I went in. I felt compelled that this was something I really needed to get involved in. I spent a little over a year in his kitchen as a stagier (unpaid student worker).”

In June 1991, the Tauses opened their own café in Mesa. They shared the duties, with Romeo in the kitchen, and Janice in the front of the house and

handling much of the business side. “I had worked in a kitchen before, but it kind of morphed into Romeo being the cook,” Janice says. “I’d be in the kitchen working from a cookbook and recipes, and he’d come in and just throw things together.”

“It was a very humble beginning,” Romeo says. “We expanded a couple of times, and when we left we had a 125-seat restaurant, a couple of patios, a bakery, a bar, a wine bar, a music venue and art gallery.”

Over the years, the neighborhood changed, and 12 years ago, the Tauses decided to open a new restaurant, this one in downtown Gilbert.

“We thought this neighborhood had a great future,” Romeo says. “The people from the town and the Heritage District, and Joe Johnson from Joe’s Real BBQ, Farm Grill and Libert y Market, were the driving force. We just buckled up for the ride.

“We thought, if we build it, they’ll come,” he adds. “That’s exactly what happened.”

In the culinary field, people are always attracted to what’s new. The challenge is to keep them coming back after they’ve “discovered” a place. Romeo and Janice seem to have learned the secret.

“I try to project a place that I would like to go to,” Romeo says. “It’s a very welcoming place, where you can feel comfortable about coming in and enjoying yourself. I like to think that this is what we do well.

“Our food is very personal, and we’re not for everybody,” he adds. “For somebody who is in their early 20s, this is not a happening, cutting-edge place to be seen.”

He’s right. Instead, it’s a place made for regulars, folks who come in often for familiar favorites. And there are plent y to choose from on the expansive menu that runs the gamut from traditional Mediterranean appetizers to salads and antipasti, pitas and subs. There are three pages of main dishes and then those pastries. Leave room for dessert.

One of the items on the menu is Sunflower Beef, a combination of steak strips, green onions, red peppers, Portobello mushrooms, sunflower seeds and capers in teriyaki sauce over linguini. It may seem like an unlikely choice on a Euro Café menu, until you consider Romeo’s Romanian roots.

The country, bordering the Balkan Peninsula, was crisscrossed by traders linking Asia and the Middle East with Europe and Northern Africa. So the cuisine reflects an intercontinental range of traditions.

The menu keeps growing, in part because Romeo likes to add new things, while customers—and Janice—hate to see old favorites go away.

“It’s an enormous menu,” Romeo says. “We probably have

50 or 60 items, but this is what we do. We make our own gyros, bread and dressings—everything.”

The menu additions include items that Romeo and Janice have been serving since their Mesa days.

Every third Tuesday, they host a food and wine pairing with three wines and three courses for $33.

“It’s as much for the crew as it is for the guests,” Romeo says. “We create new, seasonal, regional dishes and we pair them with wines so they can do something fun.”

About six years ago, Thursday night wine and food pairings were added. Romeo and Janice join guests for the meal. “People work hard and we would like them to stop and take a few hours out of their busy week, relax and have a conversation,” Romeo says.

“We do one appetizer, one salad, two entrees and dessert, with wine.

"My wife serves, and she and I sit down. We’re open books for people who want to ask about the food, the wine, the restaurant. This way I can solicit reactions.”

“I really like that we’re sitting with the guests,” Janice says.

“I like having communit y tables, and they’re different every week, depending on who comes.”

The Thursday dinners are five courses for $27, and five wines, one paired with each course, for another $10.

Cauliflower Gratin

Cauliflower Fritters INGREDIENTS 1 1 medium size head (around 450 gr) 1/3 cup all-purpose flour 2 large eggs 2 garlic cloves, finely chopped 4 tablespoons cornmeal 1/2 teaspoon chili powder 1 1/2 teaspoon salt 5 tablespoons nutritional yeast Fresh cilantro, chopped (2 tablespoons) Fresh black pepper

DIRECTIONS 1. Break down the cauliflower florets and cook either by steaming or simmering in water for 5 minutes.

2. Drain the water. While still warm, chop the cauliflower in tiny pieces (or use a food processor) 3. Mix cauliflower with spices, garlic and cilantro.

4. In a separate bowl, beat the eggs and add to cauliflower mixture along with corn meal, flour and nutritional yeast.

5. Heat up a pan with 2 tablespoons of oil (I used coconut oil) and fry 3-4 minutes (depending on size of your pan).

6. Cook until golden brown on each side for a few minutes.

Cauliflower has a reputation for being bland. That’s only the case, though, if your preparation isn’t inspired. Cauliflower isn’t the “it” food for nothing.

There are a lot of options in preparing this vegetable—roast, sauté, steam, cook or blend. Some even mashed cauliflower instead of potatoes as a lower-calorie substitute.

Here are a few recipes to up the ante on your cauliflower dishes.

INGREDIENTS 1 (3-pound) head cauliflower, cut into large florets Kosher salt 4 tablespoons (1/2 stick) unsalted butter, divided 3 tablespoons all-purpose flour 2 cups hot milk 1/2 teaspoon freshly ground black pepper 1/4 teaspoon grated nutmeg 3/4 cup freshly grated Gruyere, divided 1/2 cup freshly grated Parmesan 1/4 cup fresh bread crumbs DIRECTIONS Preheat the oven to 375 degrees F. 1. Cook the cauliflower florets in a large pot of boiling salted water for 5 to 6 minutes, until tender but still firm. Drain.

2. Meanwhile, melt 2 tablespoons of the butter in a medium saucepan over low heat. Add the flour, stirring constantly with a wooden spoon for 2 minutes. 3. Pour the hot milk into the butterflour mixture and stir until it comes to a boil. 4. Boil, whisking constantly, for 1 minute, or until thickened. 5. Off the heat, add 1 teaspoon of salt, the pepper, nutmeg, 1/2 cup of the Gruyere, and the Parmesan. 6. Pour 1/3 of the sauce on the bottom of an 8 by 11 by 2-inch baking dish. 7. Place the drained cauliflower on top and then spread the rest of the sauce evenly on top. 8. Combine the bread crumbs with the remaining 1/4 cup of Gruyere and sprinkle on top. 9. Melt the remaining 2 tablespoons of butter and drizzle over the gratin. 10. Sprinkle with salt and pepper. 11. Bake for 25 to 30 minutes, until the top is browned. Serve hot or at room temperature.

Too Easy!

Simple Parmesan Chicken Make this Italian chicken dish for a special meal or a simple dinner.

WHAT YOU’LL NEED: • 1/2 cup dried bread crumbs • 1/2 cup grated Parmesan cheese • 2 teaspoon Italian seasoning • 1 egg, beaten • 5 skinless, boneless chicken breasts

DIRECTIONS: 1. Preheat oven to 350 degrees Fahrenheit 2. Mix the Italian seasoning, breadcrumbs and Parmesan cheese in a medium bowl.

3. D ip the chicken breasts in egg, then in the bread crumb mixture to coat. Place the chicken in a 9X13 inch baking dish.

4. B ake in the preheated oven for 30 to 35 minutes, turning over chicken 5 minutes before removing from the oven.

Optional: After removing the chicken from the oven, spread marinara sauce and top with shredded mozzarella cheese.

5. Place the chicken back in the oven for the cheese to melt before serving.

What's Cooking WITH JAN D'ATRI DONNA’S ENGLISH TOFFEE We ate it only once a year during the holidays, and every time I bit into an almond Roca, I remember thinking there wasn’t anything on earth as delicious as this!

That’s probably one of the reasons I’ve always been so timid about making homemade English toffee. If I couldn’t make it just like the quintessential bites of Roca, I wouldn’t even try. Then came the email from Donna Nall of Phoenix along with her recipe for English toffee. Since then, I’m embarrassed to tell you how many batches of this favorite childhood delight I’ve been stirring up—much to my neighbor’s delight.

Here’s Donna’s email: “Jan, for the past 10 years my gift to my family and friends is baking homemade candy but the candy process is very painstaking. I make caramel and fondant for pecan log rolls, caramel for pecan turtles, ganache for truffles and several kinds of fudge. This can be a two- or three-day process, so I wanted to find a recipe that would take the place of the pecan log rolls and truffles. When I found this English toffee recipe, my first reaction was there are hardly any ingredients in this recipe and I had all them on hand, so why not give it a try?

I’ve been making candy for years and I couldn’t believe how fast this toffee recipe came together. Now it is the only candy I make other than fudge.”

Before you know it, the holidays will be here. and we’ll be looking for gifts from the kitchen and new recipes for cookie exchanges. Donna has just given us a delicious head start.
