It wasn’t until Mesa’s warm welcome in 2009, at the height of the Great Recession, that they truly knew they were on to something.

Today, the budding local chain has a cafe in Chandler and just opened a store in Queen Creek.

The lunch and dinner menu, based on Dad Alfred’s and Mom Nana’s recipes, is anchored by 10 traditional combo platters. Portions are huge.

Favorite specialties include Alfredo’s Green Chile Pork, the Pollo Rico and the Sonoran Enchiladas.

Many Mesa families also go for the Faja Pasta, a clever and delicious marriage of Mexico and Italy.

When Food Network’s “Diners, Drive-Ins and Dives” visited Sal’s a few years ago, a guest said, “It’s a slice of New York in the middle of the desert.”

That was Sal Cuffaro’s simple business plan 12 years ago, and it always will be whether the cameras are on or off.

Why the 2:12 starting time? It refers to the HUB’s “212 in all we do” customer-service philosophy. At 211 degrees, water is very hot, explains operations manager Katie Ellering. At 212, water boils and creates steam that can move a locomotive.

By the time she got to third grade, Danielle Wilson still couldn’t read. Then, a teacher by the name of Anthony Smith took an interest in her, working with her until she mastered that vital skill.

It also set Wilson on course to be a teacher. “He took an extreme interest in helping me,” Wilson said of Smith, now a principal at Chandler Unified’s Auxier Elementary School.

“I pretty much decided then that I wanted to have an impact on children like that.”

With a master’s degree in curriculum development and nine years of teaching experience, Wilson teaches an unusual combination of subjects to largely kindergarten and pre-school children – unusual, that is, until you realize “they’re at the age where they’re just learning where their feet are.”

She mixes music and physical education – one class had them using hula hoops to the James Bond 007 theme music – and said teaching “is a lot of fun,” for both her and her students.

Wilson, who also sings, plays piano, clarinet and drums and is three years into learning the guitar, said every day she comes to school and practices the care and attention with her students that Smith did when she was a little girl.

With all of those winter and spring sports, home and away games, pep rallies and fundraisers – and now with fall sports in full swing – a lone cat can get a little burned out.

Or maybe it will wander off, as happened a few years ago. It took all of the bio-med students’ CSI skills to track the missing feline down.

In a hilarious student RMTV segment at the time, cheerleaders and pommies weren’t too keen on finding the furry attention-grabber but most students were desolate.

“He was the only one who appreciated our music,” lamented one marching band member.
