Feel like a victim?

Don’t invite me to lunch

The argument began, as so many do, over words. A friend, male, late 40s, Jewish, was detailing an anti-Semitic insult he’d suffered at the hands of a client. Then he wanted it to be my turn.

“You must be the victim of discrimination like that all the time,” he asserted.

My response?

“I’ve never been the victim of anything in my life. Have I experienced anti-Semitic language and insults? Sure. A lot. But victimized? I don’t think so.”

Our conversation descended into semantics and harshness over what constitutes victimhood. My friend argued that we’re all — all 7.6 billion Earthlings — victims of slights and people we may never admit or never know harmed us. I argued that his definition of victimization trivializes real injury.

“If everyone’s a victim, then no one’s a victim” was my final salvo. “I’ve been to murder scenes. I’ve interviewed survivors of concentration camps and rape. I just don’t see a parallel between how they’ve been hurt and some idiot calling you a hebe.”

It’s true that there’s no such thing as a free lunch. Mine probably cost me a friend.

I thought about this exchange for days, about why being called a victim so lodged in my craw.

I guess it’s because in America today, the prevalent narrative — one I reject with great force — is that we are a nation of victims and victimizers, the afflicted and the afflicting, and I try every day to live my life as neither one.

To consume news in 2021 is like reading an endless scroll of society’s victims.

Violence, racism, income inequality, police brutality, bullying, ageism, sexual harassment, gender inequality, COVID-19, LGBTQ discrimination, kink shaming, sizeism, and countless more stigmas and prejudices.

If I sound intolerant, cold or sarcastic — or like I’m “mansplaining” in a discriminatory huff — that’s not my intention. www.LovinLife.com

But lately I find myself experiencing an “empathy deficit,” the sense that my well of compassion might be running lower than Lake Mead on a blazing June afternoon.

A confession: I do everything I can to empathize with victims in proportion to the injury done to them and the theft committed against them.

I grieve the murdered dead. I want justice and greater compassion for all who suffer sexual assault or hate crimes. I loathe Harvey Weinstein and Jeffrey Epstein for their criminal acts. I want police officers to seek out wrongdoers without seeing skin color.

I donate to charity. And yes, I “hold these truths to be self-evident, that all men are created equal” and that we, one and all, possess “certain unalienable rights, that among these are life, liberty and the pursuit of happiness.”

I was raised to honor the Golden Rule.

Or, as Jesus put it in Matthew 7, “So in everything, do to others what you would have them do to you.”

That’s an old-fashioned way of thinking, of course. Today, it’s insufficient to treat others as you hope to be treated. Instead, we’re asked to treat everyone exactly as they would like to be treated or risk being branded a victimizer.

Alternately, we are expected to empathize with anyone who has not been treated up to their own exacting standards.

Don’t believe me? Check the scathing Yelp reviews authored by anyone who has ever been served a not-quite-medium-rare burger.

There are victims in the world, and I do feel for them. But there are also people who seem to define themselves chiefly by the injuries they have suffered, every sickening insult, every deprivation, every last inequality.

That is their prerogative, I suppose. But they probably shouldn’t invite the rest of us to lunch anytime soon.

Dear Gabby Gayle: Why men want younger women goes back to why we choose mates. Women look at a guy and think: “I can make something of him,” selecting a remodel project, which also explains why nice girls choose “bad boys.”

Guys find a girl they want “just the way she is” expecting she will never change, because he expects to stay young forever. Problems arise because girls change to women, to mothers, then menopause and grandmothers. Guys no longer see the girl they want, so divorce and remarry someone closer to the original model.

Like Hugh Hefner said at 80, he always (and only) liked 18-year-olds. Likewise, women divorce men because they (the men) continually resist being remodeled into someone they never intended to be.

Dear Gabby Gayle: My dad lives with us. He is hard of hearing and won’t wear his hearing aids. I have teenage children whom he criticizes frequently — in their presence. The kids are embarrassed to bring their friends around because they never know what dad will do.

He passes gas whenever he feels like it and thinks nothing of it. He has been

known to criticize their friends, too. I wish we had insisted on assisted living before he came to live with us, but now it would be like kicking him out. Can you offer a solution? – Signed, MR

Dear MR: I agree that this is a sticky situation! I do not advise couples to take in mom or dad, because it rarely works out. If your dad has a nice private room with television and comfy chairs, I suggest that you tell him when the kids have company he needs to stay in his quarters.

Also, instruct your kids to smother him with kindness. You need to do something to arouse kindness in him. If this doesn’t work, take him assisted living shopping under the guise that he should have a plan in case it doesn’t work out living with you. Hopefully, he will get the hint.

Dear Gabby Gayle: It is vacation time. And I am not a happy camper.

We got lucky last year because of the pandemic, and now that things have opened up my husband is planning a vacation.

My husband is a different guy when he gets behind that wheel. God forbid if you need a bathroom stop. “You can go when we get gas!” he says. I have to pack lunches, which we eat while driving! Don’t even suggest stopping to see a landmark. You would think we are on some emergency drive to get someplace in a hurry.

I am at my wits’ end. Vacations are meant to be a time of happiness, relaxation, laughing, seeing the sights. Help!

BY CHRISTINA FUOCO-KARASINSKI Dr. Eric Cornidez says this is one of the most exciting times in interventional pain management.

The opioid problem has paved the way for the use of procedures like radiofrequency ablation or kyphoplasty.

“The opiate problem opened our eyes and led us to figuring out what else we could do for our patients,” Cornidez says of the Pain Institute of Southern Arizona.

“I’m not saying the use of opioids is bad, but too much of something is never really a great thing. It’s pushed the culture to think about other procedures.”

One of the alternatives is cortisone shots, but again, they have their own set of side effects.

Radiofrequency ablation Also called rhizotomy, radiofrequency ablation is a nonsurgical, minimally invasive procedure that uses heat to reduce or stop the transmission of pain. The radiofrequency waves burn — or ablate — the nerve that is causing the pain so it can no longer send pain messages to the brain.

During the procedure, radiofrequency needles are placed alongside the nerve that goes to the joint.

The physician makes the joint numb with local anesthetic and then heats the needles with radiofrequency waves to burn the nerves that go to the joints.

nal, knee, shoulder or hip pain. Patients typically experience 80% to 100% pain relief that can last for six months to several years, he says.

“It breaks that communication between the painful area of the brain of that says, ‘Ouch,’” Cornidez adds. “It generally decreases pain from six to 18 months because those little rascals actually grow back.

“The nice thing is many patients go beyond just 18 months. This is my theory. I’m not fixing the problem. I’m empowering the body to be more active. If an ablation works for a year, I tell my patients to be as active as possible to build up their core strength. By the time those little nerves grow back, they can rely on the stronger muscles.”

electrical impulses to block or mask the pain signals transmitted by nerves. When any part of the body is in pain, sensory nerves pick up the message and transmit it to the brain. People only feel the pain after the brain receives and interprets the message.

Spinal cord stimulators have three parts: a small generator, a wire with multiple electrodes and a controller. The generator, which produces the electrical impulses, is implanted under the skin of the Spinal cord stimulator abdomen, upper buttocks or chest.

The physician then uses the remote controller to initially program the strength and frequency of the electrical impulses. Then the patient will use it to turn the spinal cord stimulator on and off.

“It makes a significant difference,” Cornidez says.

Kyphoplasty Cornidez utilizes kyphoplasty as well.

This minimally invasive procedure repairs a vertebral compression fracture and helps restore the spine’s natural shape.

Some patients experience rapid pain relief after the procedure.

After a patient is sedated, the physician guides a needle through the skin on the back and into the fractured vertebra. A special X-ray device called a fluoroscope helps the physician position the needle.

A balloon device is placed through the needle and into the vertebral body. The physician carefully inflates this balloon to expand the fractured bone. When the balloon is deflated, it leaves a cavity in the middle of the vertebral body. The balloon is then removed.

The physician then injects bone cement through the needle, which fills the cavity. The cement hardens inside the vertebral body, stabilizing the fracture.

When the procedure is complete, the needle is removed and the opening in the skin is closed.

Vertiflex Cornidez calls the Vertiflex procedure “groundbreaking” for lumbar spinal stenosis. He says the procedure is simple and minimally invasive treatment, but it can provide effective long-term relief by lifting pressure off the nerves to alleviate leg and back pain.

The Vertiflex procedure uses a small spacer designed to relieve pressure on the nerves. Physicians place the spacer between the spinous processes through a small tube that is approximately the size of a dime.

Once the spacer is placed, it is intended to relieve pressure off the nerves, and reduce the pain, without having to lean forward or sit down.

Previously, if shots weren’t working, patients went to a spine surgeon, who made a big incision to take out bones and fuse the back, causing scar tissue. These big surgeries often mean multiple days in the hospital and a six-month recovery.

are right outside the spine. The clip keeps that space open without fusing the back.

“Because of the pain, patients often lean forward to open up the spaces themselves,” Cornidez says.

“I’ve had patients who have walked out pain free with a super small incision and a Band-Aid.” These procedures, he says, can cut down on the use of opioids.

“If you’re doing well and you’re feeling better, you don’t need medication,” he says. “We can just use telemedicine to follow up.

“I try to teach all of my providers — who are very, very talented Harvard, Mayo, Chicago or Sanford trained — that we don’t have to use big words or huge abstract theories.

“At the end of the day, this stuff could be simple. Life’s too complicated already.”

Local car clubs break down their benefits

BY LAURA LATZKO Each classic car has its own history and story to share. Those who own these vehicles often have strong memories attached to them.

Through local car clubs, aficionados meet likeminded people with a love of cars, especially certain makes or models.

Tucson offers several different car club options, many of which are specific to certain types of cars.

The clubs had to scale down or take a break during the height of the COVID-19 pandemic, but they are beginning to open again.

Tucson British Car Registrar The Tucson British Car Registrar has a rich history that goes back almost 40 years.

President Ben Cohen says the club evolved from focusing solely on MGs to embracing other cars. It now has a variety, including Austin-Healeys, MGs, Mini Coopers, Jaguars, Morgans and Triumphs — primarily from the 1950s to 1970s.

The club has about 138 members, with close to 180 cars.

“Many members are multiple car owners or, as we say, are ‘multiple offenders,’” Cohen says.

Some individuals inherited cars from their family.

“There are a few people in the club who have that family history, where it’s been in their families for generations,” Cohen says.

“We have three-generation cars. The grandkid now is driving the car.”

Cohen, who started with the 30-yearold club in 1994, became interested in British cars in the 1970s. He first bought an Austin-Healey in college.

He now has a number of British cars, including rare ones like a Lotus that is one of 1,000.

“You feel lucky to be able to find it, let alone own it and drive it,” Cohen says.

Hadinger calls her car “Angel Baby,” a nickname given to her by her father. She says other members also name their cars after their wives or mothers or have silly names for them.

When she goes out with her husband in their classic Chevy, she will often wear a Pink Ladies jacket, and he will sometimes don his high school letterman jacket.

“When I take out ‘Angel Baby,’ I feel like a different person,” Hadinger says.

During the COVID-19 pandemic, the Classic Chevy Club of Tucson moved its board meetings to Zoom. Its charity Classic Chevy Showdown car show, held in April, was canceled for two years. It has been tentatively rescheduled for November.

Last December, it held its annual toy drive event benefiting organizations such as Marine Toys for Tots, Casa de Los Ninos and Ronald McDonald House Charities.

Before the pandemic, the club met for meals at local diners and held events like an annual picnic and drive-in movies featuring ’50s-era flicks.

When a few members contracted COVID-19, the Classic Chevy Club of Tucson held drive-by events for them to uplift their spirits.

The club has also displayed cars at assisted-living homes. Hadinger says seeing the classic cars makes residents nostalgic.

“A lot of people in those homes remember those cars. Those are the cars that they grew up with,” Hadinger says.

The group has honored special requests, such as driving members of a homecoming court to a local high school in classic cars.

The club’s peak season is October to April, but it still hosts monthly events in the summer.

Friendships have formed between participants and have lasted for years.

“They have bonded over cars and formed lifelong friendships out of it,” Hadinger says.

Old Pueblo Mustang Club Classic Mustangs have a certain mystique. In Tucson, the Old Pueblo Mustang Club is one of the longest-running Mustang-focused clubs in town.

Established in 1990, it is a charter member of the Mustang Club of America. The club is open to early to modern Mustang models, starting with the 1964 1/2 Mustang.

The remaining founding member, Laurie Slawson, says Mustangs share similar sporty features, rear-wheel drive and a distinctive running horse symbol.

“We are small, but we are a bunch of people that really get along well together and enjoy having fun and driving the Mustangs,” Slawson says about the 35-member club.

Slawson has participated in Tucson car clubs since 1982. Within these clubs, she found a place where she belongs.

“If I can help someone, I will,” Lawson says. “If it’s a vintage Mustang, I’ve got a pretty good idea of what the answer is.”

During the COVID-19 pandemic, Lawson says many individuals shared photos of recent progress on their vehicles and of new cars they purchased.

Now that congregating has become safer, the club has hosted events like pizza parties. It is usually more active in the fall and spring due to winter visitors, like many other organizations.

Slawson, the secretary for the Mustang Club of America, attended and judged at Mustang shows nationwide before the pandemic. This year, she hopes to go to three national shows.

This year, the Old Pueblo Mustang Club is hosting its national show from October 7 to October 10, after having to cancel twice due to the pandemic. It features between 150 to 175 cars. Judged participants must be Mustang Club of America

members and attend all three days.

Other car owners who want to participate can display both their complete and unfinished Ford cars on Saturday. These cars are voted on through ballots.

Along with cars on display, the show will have a karaoke night, a banquet with live entertainment, and a pool party.

Slawson says she and her fellow Mustang aficionados are eager to host and attend car shows again.

“People are just going crazy, wanting to get out to the shows,” Slawson says.

Lovely Rita A new biography of Rita Moreno tells the story of an amazing performer

BY BOB GRIMM A few years ago, I had the honor of interviewing Rita Moreno before she made her appearance at the 2015 Loft Film Festival here in Tucson.

Speaking with Moreno transcended the usual interview exchange and left me reeling with joy. Beyond having great stories to tell, she is as nice a person I have ever had the opportunity to talk to, and it left me wishing more people could get the chance to sit and talk with her. Words can’t really describe how cool she is.

A good documentary with her devoted participation can certainly showcase that coolness, and “Rita Moreno: Just a Girl Who Decided to Go for It” does this in a big, soul-enriching, entertaining way.

The EGOT winner (Emmy, Grammy, Oscar and Tony) participates enthusiastically in the doc that covers the many years and expansive experiences of her storied career.

Director Mariem Perez Riera gathers a host of entertainers, along with Moreno, to celebrate her legendary, trailblazing career. The roster includes Gloria Estefan, Lin-Manuel Miranda, Eva Longoria, George Chakiris (Nardo from “West Side Story”), Norman Lear and fellow EGOT Whoopi Goldberg. Morgan Freeman, Easy Reader from the eternally awesome “The Electric Company,” in which Moreno featured prominently, also offers his opinions on the wonders of Rita.

With access to a treasure trove of film clips and archival pics, Riera tells the whole story leading up to the present. That present is handled by plenty of new time with Moreno.

Moreno is such a charmer, watching her cook breakfast or apply makeup is a mesmerizing experience.

Her career got its true start after meeting MGM boss Louis B. Mayer with her mom in his hotel room.

Mayer instantly signed Moreno after observing she looked like a “Spanish Elizabeth Taylor,” and she was off to the races.

One of the great pleasures of the film is that it gathers some of her award acceptance speeches, including her adorably short, enthusiastic thank-you for her Oscar. (I’m thinking she and Joe Pesci might be tied for Oscar speech brevity.) It also contains her Tony acceptance speech, where she allowed herself to go a little crazy. Seeing these accomplishments in one sitting blasts home the notion that Moreno is the very embodiment of the word “icon.”

There was a lot of pain mixed with the glory, and Moreno doesn’t shy away from the misogyny, racism and sexual abuse that plagued her career and the career of many others who came before and after her. She endured many years being typecast in one-dimensional supporting roles, even after getting her Oscar for “West Side Story.”

It was her desire to reinvent her career after that Oscar that eventually led to a significant career in TV, including her central role in “The Electric Company” and her Emmy-winning appearance on “The Rockford Files.”

More recent chapters of her career include her starring in the prison drama “Oz” and her role in the remake of “One Day at a Time.” Moreno shares stories on these roles that are so engaging, your Netflix, HBO Max, Amazon and Hulu queues are going to load up with Moreno-centric projects after seeing the doc.

A good part of the film is devoted to Moreno’s time with notorious boyfriend Marlon Brando, including the very good and the very, very bad. While the film isn’t a crucifixion of Brando, with Moreno reflecting on at least some of the positives of his presence, the guy definitely came up as a big zero at the end of their time together. He didn’t deserve her.

You’ll see Moreno again a little later this year in Stephen Spielberg’s remake of “West Side Story,” a remake in which the Puerto Rican roles are actually played

by Puerto Rican performers this time around. The original is one of my favorite films, but I’m game for a new take, and so is the luminous Moreno. I can’t wait to see her in action again.

‘Believe’ in This Voyager faithfully recalls Journey

BY CHRISTINA FUOCO-KARASINSKI Tommy Dears contends everyone loves the rock band Journey and its songs like “Faithfully,” “Don’t Stop Believin’” and “Separate Ways.”

The longtime Ahwatukee musician said it was an easy decision to start a Journey tribute act that the band named Voyager.

“Journey is one of the greatest bands,” says Dears, a drummer. “For musicians, Journey is a challenging band to pay tribute to. At the same time, it’s rewarding.

“They’re an iconic, Hall of Fame band that is well respected among not only the masses but musicians. We love their music, and we’re all really into it.”

Voyager — which also includes vocalist Darwin Santos of Gilbert, guitarist Andy Martin of Gilbert, bassist Billy Fry of Glendale and keyboardist/guitarist Kevin Sage of Mesa — has two local shows coming up at the Gaslight Music Hall, 2 p.m. and 6 p.m. Saturday, July 17.

Journey or Voyager fans can expect to hear the legendary band’s greatest

hits. Dears describes the show as a roller coaster of emotions and tempos, as Journey’s set is filled with ballads and upbeat rockers.

“It’s a trip down memory lane,” Dears says. “We’re going back with all the songs you remember. Another key thing to our show is we play the songs as they were recorded. Our goal is to play the songs like the record. Some tribute bands, they play the live version. We don’t do that.

“You have to have endings for songs.

We do pick from Journey’s live shows, so you can hear endings based on that. For the most part, though, the songs sound the way you remember them on the record.”

Dears explains that Voyager constantly learns new songs, as it’s a meticulous undertaking to be in a tribute band that plays around the United States.

“Each show has 22 Journey songs,” Dears says. “We know 39. We recently rehearsed to refresh ourselves on some of the songs we haven’t played in a while

so we don’t lose them. We’re having the time of our lives. It’s so much fun to play music that people love.”

The most challenging song to learn was “Mother, Father,” which Dears described as Perry’s favorite Journey song.

“It was the one he thought was the most fulfilling song he ever wrote and sang,” he says. “It’s a rare cut. Not that many people know it. You have to play that song when we have a diehard Journey crowd. It’s for people who know all their stuff. That song has a lot of different parts and is vocally very challenging because of the intricate parts.”

Another similarity between Voyager and Journey is both of the bands’ singers are from the Philippines.

“That’s a cool little connection that we have there,” Dears says. “That’s a neat thing.”

The 35 or so people were there for a Sicilian wine tasting by Pearly Baker Fermentables, a new wine shop in Tucson that’s named after a St. Louis preacher/ Prohibitionist.

Shop owner Bryan Eichhorst discussed the five wines as people sipped and nibbled on meats and cheeses.

“It’s great to be with a group and try different wines,” says Mark Langworthy, an agricultural economist who was enjoying the event with his wife.

Eichhorst recently started a monthly wine club. Membership costs $50 a month, which includes three bottles of wine — a red, white and something “interesting,” be it bubbles, rosé or dessert wine. Members pick up their wines at the Downtown shop the first Thursday of the month.

“Everything is going to be interesting and sourced,” he says. “I’ll be reaching out to small independent producers and trying to get their wines into the shop.”

Pearly Baker Fermentables is one of a half-dozen wine clubs in Tucson that attract people who love wine and are interested in learning more.

Like most of the local wine clubs, Eichhorst is focusing on those that aren’t easily found.

“If anyone is interested in tasting new and esoteric, you’re not going to be getting any boring New Zealand sauvignon blanc,” he says.

The first Sunday of the month is the pickup for Revel’s wine club. In May, owner Todd Getzelman worked the crowd, pouring tastes for each of the four wines featured that month. Revel has two club tiers — Grand Cru and Premier Cru — for customers.

Revel is a European-style bar on East Ninth Street, near Fourth Avenue. It features wines and beers from around the world, as well as meat and cheese boards.

According to Revel’s website, Premier Cru costs $35 monthly and is ideal for

burgeoning palates interested in a selection of wines guaranteed to please novice wine drinkers and aficionados alike.

At $50 a month, Grand Cru is “curated for adventurous palates with the pursuit of expanding knowledge through atypical varietals and styles.”

Tucsonans Annie Witte and Robert Gillies stopped by Revel for the May pickup and tasting.

“If you’re going to partake in a wine club, why not support local businesses?” asks Witte, a production manager for a medical device company. “Plus, they have great wines here.”

“What’s nice about this wine club is you get to have some more esoteric wines,” says Gillies, a 42-year-old who works for a liquor distributor. “The wines are from smaller producers, and we get some unusual grape varieties.”

Jeanne Snell, who owns Arizona Wine Collective in St. Philip’s Plaza with her husband, Peter, says her club started in September 2018.

“What makes our wine club unique is that you will get all Arizona wines from different wineries,” says Snell, noting that they work with 15 to 20 Arizona wineries.

“You’re supporting a local business that’s supporting local products.

“You’re going to get quite a variety — different techniques from different winemakers, including ones that are new, don’t have tasting rooms or where people don’t have easy access to them.”

“You probably wouldn’t pick up these bottles, because you wouldn’t be familiar with them,” he says.

Luke Anable, who owns Natural Wine Co., was at the Sicilian tasting at Owls Club to discuss his wines that were being poured.

“I think we’re in a wine Renaissance right now,” Anable says. “And it’s being run by independent retailers, the stewards of wine culture. It’s a special moment. I think a wine club is a further distillation of that.”

Tucson welcomes its own boutique winery

BY VALERIE VINYARD It’s no secret that Tucson offers a wealth of things to do and see.

Until April, however, a boutique winery wasn’t one of them.

Normally, winery lovers would need to drive out of town, often to Elgin or Sonoita, to get their winery fix.

Now oenophiles have a chance to visit a working winery called Old Pueblo Cellars, located near the end of an unpaved road in Northwest Tucson.

Don’t worry, the road isn’t too rough.

However, be sure to wear closed-toe shoes, or else a chunk of jumping cholla might adhere itself to your foot as you’re walking to the tasting room.

Old Pueblo Cellars owner and winemaker Roger Pelton boasts years of experience working with wine. It all started in 1974, when he and his wife purchased property, called Mockingbird Ranch, in Mariposa County, California.

Decades earlier, a vineyard was planted

by Italian immigrants on the land of the ranch, so Pelton had the grapes harvested and tried his hand at winemaking. Pelton said that was the spark that inspired them

Pelton made wine for family and friends until the 1990s, when the couple moved to Texas. He took a break from winemaking while there.

However, when they moved to Tucson in 2008, they bought an 8.25-acre parcel of land and started planting heat-loving grape varieties. Pelton said he received consulting help from Golden Rule Vineyards, a winery in Willcox.

The first planting in the vineyard was in 2013, with bottling starting in 2016. Pelton is serving 2016 and 2017 vintages in the distinctly Southwestern-style tasting room.

It’s a gorgeous walk to the winery and its lush tasting room. When you take a seat at the bar or settle into one of the plush chairs or couches, Pelton will hand you a tasting sheet that features descriptions of the six wines on one side and a helpful “Wine Tasting 101” guide on the other.

The winery grows four red grape varieties and two white. If you try the tasting flight of six wines, you’ll start with malvasia and viognier, both white grapes. Susan McGinley echoes her husband’s praise.

“The atmosphere here is beautiful,” she says. “This landscape is beautifully curated.”

McGinley says they have visited “a ton of wineries” in California. The retired UA science writer for the College of Agriculture describes Old Pueblo Cellar wines as fuller flavored than other Southeast Arizona wineries in Elgin and Sonoita.

“I think the quality of the wines are very high,” she says. “The wines have a vivid taste.”

When it comes to creating the wines, Pelton does things differently.

The wines undergo cold fermentation, so they aren’t filtered. Sulfites aren’t added, and Pelton uses organic fertilizers and pesticides.

“This is an unbelievable wine,” McGinley says as he sips a glass of tempranillo. “I’ve had tempranillo from Spain, and this rivals any of those.

“You’re tasting world-class wines without the world-class prices.”

Main meal salad with cilantro lime dressing

I’ve always thought that we have certain flexibility with our choices for lunch and dinner.

But breakfast? That’s a whole different story. If you’re a bacon person, you’re never going to order sausage. If you love your eggs over easy, then scrambled just won’t do. I think it’s safe to say that breakfast our way is nonnegotiable. The same thing may be true with salad and salad dressing.

If Italian vinaigrette is your choice, then a green goddess dressing is just not going to satisfy.

The other issue with salad is, well, it’s generally thought of as the obligatory side to your entrée.

That all changes here, with this mega main meal bonanza of goodness, flavor

and crunch with a surprisingly bright and full-bodied cilantro lime dressing! Wow, do I love this salad!

I love everything about it — the fixings and the fact that it’s the main event!

You can start with any lettuce you like.

My choice is a combination of healthful greens like a spring mix and a crunchy chopped bag salad that is so readily available these days.

This recipe has grilled chicken, but it’s fantastic with strips of steak of you’re a beef eater.

I’m hoping this salad and the delicious dressing has everything you love and then some.

Main meal salad with cilantro lime dressing For the salad • 4 cups spring mix.

• 2 cups bagged chopped salad of your choice.

• 2 cups grilled chicken, cubed.

• 4 hard boiled eggs, chopped.

• 1 large or 2 small avocados, diced.

• 4 to 6 sliced crispy bacon, rough chopped.

• 2 cups fresh corn, cut off the cob and toasted in dry skillet.

• 2 cups cherry tomatoes, sliced in half.

• 1 1/2 cups cheese curds or cheese of your choice, cubed.

• 1 cup toasted pumpkin or sunflower seeds.

• Bleu cheese for topping, optional.

For the dressing • 2 tablespoons fresh lime juice.

• 2 tablespoons white balsamic vinegar (or white wine vinegar).

• 3 tablespoons honey.

• 2 tablespoons stone ground or Dijon mustard.

• 1/4 cup cilantro, chopped fine.

• 1/2 teaspoon salt.

• 1/2 teaspoon pepper.

• 1/2 cup extra virgin olive oil.

Directions Mix the cilantro lime dressing. Refrigerate until ready to use. In a large bowl, add the salad ingredients. When ready to serve, pour desired amount of dressing over salad and gently toss.

Serve with bleu cheese for topping, optional.
