The sweltering, sticky days of Florida summer are here, and it’s about time that you jump into some refreshing water.

We aren’t all blessed with a backyard pool or friends who live in swanky apartment complexes with rooftop amenities. But you don’t have to be a tourist to take a dip at resorts and hotels across the Tampa Bay region.

We rounded up some of our favorite ways to indulge in a pool day, including spots with great amenities and places to eat on-site. Be sure to book in advance, especially ahead of busy weekends.

Epicurean Hotel

Hyde Park’s Epicurean Hotel is known for cooking classes, whiskey tastings and proximity to swanky South Tampa restaurants. It also has a lovely pool. Local legend says that when explorer Hernando de Soto reached Old Tampa Bay in 1539, he believed he’d found the “fountain of youth” that Ponce de Leon had been searching for. The Safety Harbor Resort and Spa was built on top of the mineral-rich spring waters of de Soto’s Espiritu Santo

Rent a private pool with Swimply

Mark Cuban may have rejected this concept when it appeared on “Shark Tank,” but Swimply now has tens of thousands of pools available for rent across the country. Described as “Airbnb but for pools,” the platform allows homeowners to put their backyard oasis up for rent. Prices range from $15 to several hundred dollars an hour. Tampa Bay Times columnist Stephanie Hayes used Swimply to plunge into a Seminole Heights pool and offered her approval, especially if you can split the cost among a group of friends.

Emperor penguins visiting SeaWorld Orlando this summer

SeaWorld Orlando is making history this summer as the only place in the Western Hemisphere where guests can see emperor penguins, the world’s largest and most iconic penguin species, up close.

The 16 emperor penguins were transported to Florida from SeaWorld San Diego for a stay that began Saturday.

SeaWorld Orlando upgraded its Antarctica Realm to meet the environmental needs of the species, the park said in a statement. Changes included reducing temperatures to around

28 degrees and mimicking Antarctic light cycles to reflect their natural rhythms.

“This is an incredibly rare and exciting opportunity for guests to encounter one of nature’s most extraordinary species,” said Jon Peterson, park president of SeaWorld Orlando.

Native to the harsh, frozen landscape of Antarctica, emperor penguins are built for life on the ice, with dense feathers and impressive swimming abilities that allow them to dive deeper than any other bird species.

They generally weigh 60 to 90 pounds and stand about

44 inches tall, with a lifespan of 20 to 25 years in the wild, and up to 50 in professional care. They are listed as a “near threatened” species by international conservation organizations, meaning they aren’t endangered but could likely become vulnerable in the near future.

They are notable as birds that don’t build nests. The males incubate a single egg atop their feet under a brood patch. The males fast during incubation, losing up to 45% of their body weight.

This aquarium is ‘theme park under the sea’

A Sea Life aquarium has opened next to Legoland in Winter Haven, wedged between the Peppa Pig theme park and Legoland, and offering what they say is the first “theme park under the sea.”

It has more than 25 interactive exhibits, including a stingray bay, hands-on rock pools and 10 underwater-themed galleries.

Standalone Sea Life tickets are $25, or you can add $15 onto the standard Legoland ticket.

At the heart of the experience is a 180-degree ocean tunnel structured so even little ones can stand eye to eye with sharks and rays as they glide overhead in a tank holding 150,000 gallons.

“This isn’t just an aquarium. It’s a space where children can learn to care about the ocean by seeing it through their own eyes,” said Franceen Gonzales, president of Lego -

land Florida Resort. “We’re proud to launch Sea Life Florida as a place of both play and purpose.”

Merlin Entertainments, which owns Legoland, also owns Sea Life and more than 40 aquariums globally.

The new aquarium designed for kids features more than 3,000 creatures. All through June, guests can round up their ticket price to support the Sea Life Trust, which helps protect marine animals worldwide.

“We want to help children truly connect with animals by bringing the animals to their level,” said Sea Life Florida curator Sarah McMahon.

“When they see a stingray glide right past their face or lock eyes with a curious octopus, something amazing happens. That spark of curiosity turns into respect. And respect is the first step to protecting our ocean.”

Pinellas offering cosplay weddings for ComicCon

If your wedding is in need of a superhero origin story, the Pinellas County Clerk of the Circuit Court office is ready to provide a lair. From July 28-Aug. 1, it will offer cosplay weddings during the week leading up to the Tampa Bay Comic Convention.

Universal has new scares for Halloween Horror Nights

It’s June, so that must mean we should expect announcements about Halloween festivities at theme parks.

In a first for Universal Orlando and its popular Halloween Horror Nights, it is partnering with the hit Prime Video series “Fallout,” a post-apocalyptic show based on the video game of the same name, for a haunted house at this year’s event.

It is the first haunted house Universal has released details about, though the theme park had previously said there will be a “Five Night’s at Freddy’s” experience based on the horror movie in which animatronics from an abandoned children’s pizza restaurant come to life and kill.

Tickets are on sale for the afterhours event that runs Aug. 29-Nov. 2, with single-night tickets ranging from $83-$108.

The “Fallout” house will include scenes and characters from the series, which is set in a time after nuclear war

has destroyed civilization. The year is 2296. Mutated animals and creatures roam, but people live in luxurious underground shelters known as Vaults. A maze will take guests outside the Vault and into the Wasteland, where they will need to dodge attacks from Scavengers, Raiders and even mutated cockroaches known as RAD Roaches. Guests will visit the Super Duper Mart, encounter the Ghoul and even meet Maximus and his massive T-60 armor.

Halloween Horror Nights at Universal Studios will feature 10 haunted houses in all, as well as scare zones and live shows.

Admission is more costly on weekends, and Express passes, which have become increasingly necessary with the huge crowds the event draws, go for $139.99-$260.

Charming its way into a new hit

When Wild Child opened on a developing stretch of Central Avenue in the summer of 2020, it was anyone’s guess how things would play out.

How would a mostly outdoor restaurant sporting tropical vibes and a hard-topin-down Latin and Caribbean menu land in a city that was still figuring out its culinary identity while grappling with a pandemic?

By now we know the answer: Five years in, Wild Child is still one of the most popular dining destinations in Tampa Bay, a place where you can find one of the best, most exciting meals around.

Now, the owners behind

the ’burg’s biggest hit have opened a new concept: Slim Charmer, a 26-seat cocktail bar and restaurant that debuted in April on the same stretch of Central Avenue that has very much made its mark. And if the hour-long weekend waits and 90-minute limit placed on tables are any indication, the spot is off to an auspicious start.

For their sophomore effort, owners Rob Reinsmith and Matt Kaye didn’t look far, opting to take over a historic 800-square-foot building abutting their flagship restaurant’s patio. Like its predecessor, the concept is ambitious and unique, managing to deftly tap in to exactly what diners — and drinkers — want right now.

The elegant martiniforward cocktail program at Slim Charmer feels sleek and streamlined. Its petite dinner menu — just 13 dishes — is composed mostly of cold and raw selections, drawing inspiration from across Europe, including Spain, France, Italy and Portugal.

Like the menu, the decor also feels worlds away from Wild Child’s bright, colorful vibes: The handsome, narrow dining room features dark booths and a few small tables, a slatted wood ceiling and terrazzo floors. The intimate, sultry vibes are further complemented by candlelight throughout the space, which includes a small bar area. Every now

and then, the door opens and a thin triangle of sunlight creeps in, but an evening here is spent mostly engulfed in dark, moody lighting and the sweet blast of air conditioning.

Sydney Knowlton oversees the excellent beverage program, composed of a long list of martinis, classic drinks, “tini” martinis, and low- and noalcohol cocktails. All the restaurant’s signature martinis are priced at $16, which, while not exactly cheap, feels competitive in the current market. And the short wine list, though less of a focus, is nonetheless carefully curated to feature small producers and natural options. (Knowlton just opened the boutique wine store Neighborhood Wine Shop with her partner across the street.)

Grimm, who spent several years cooking next door at Wild Child. An elegant undercurrent runs through this menu, from a selection of toasts and raw dishes to small plates and a rotating dry-aged steak.

Most of the menu feels specifically designed to pair with a martini (or several). Take the crusty slices of focaccia topped with creamy stracciatella cheese and a salty pop of caviar ($26). Dusted with Meyer lemon zest and pickled shallots, it’s the perfect start to a meal, especially when paired with the 50/50 martini ($16), a smooth combination of equal parts Nikka gin (or Grey Goose vodka), Dolin blanc vermouth and orange bitters.

A dish of crispy potato chips takes a hint from Spain and arrives layered with a velvety black-trufflelaced Parmesan foam, deliv-

ering a salty, savory, fatty kick that practically begs for a drink. It’s an exercise in decadence and the perfect accompaniment to the Freezer Door martini ($16), a potent quaff that riffs on the classic. It’s made with either Grey Goose vodka or Fords gin, vermouth and fino sherry, and garnished with either olives, a lemon twist or an onion.

An excellent clam-topped toast ($18) features briny little necks sourced from nearby Joe Island in Palmetto, swathed in a garlicky sauce studded with pancetta, fennel and a luxurious lick of heat from Calabrian chile butter. The earthy roasted mushroom-topped toast ($16) gets a knob of Cambozola and smoked oyster mushroom cream and is finished with vin cotto, a tasty combination that could use a little more acid

to balance out some of the richer elements.

Close to half of the menu is dedicated to raw selections, ranging from shucked oysters (market price) to a steak tartare ($20) and several crudos, including the excellent crudo misto ($18), a classic rendition of the Sicilian dish featuring silky slices of yellowfin tuna, Faroe Island salmon and a punchy combination of capers, Castelvetrano olives, Calabrian chiles, lemon and a healthy glug of olive oil. A dish of Maine razor clams ($18) would feel at home in the Portuguese Algarve: The long, thin shells provide the infrastructure for the chilled clams, which are prepared just so that their delicate flavor shines, light and citrusy from a dash of yuzu, a little tarragon and pickled green tomatoes.

Part of the restaurant’s unique approach includes changing the menu frequently. Though the first two months provided the kitchen time to get their footing, the plan going forward is to switch up most of the menu monthly. (A showstopper hamachi and strawberry dish on the opening

menu is long gone, but, if you can, get the clam toast while it lasts.)

Some dishes won’t budge. The fan favorites that appear destined to stay include oysters (though the selection is always in flux), razor clams and the crudo misto.

There will always be some kind of bright, composed salad. Recently that has included a brilliant roasted and raw carrot salad ($16) interspersed with fava beans and nibs of creamy, marinated sheep’s and goat milk feta, cured black olives for a pop of salt and fried shallots for crunch. A jum-

ble of fresh mint, dill and a vinaigrette zingy with preserved lemon tie the whole thing together. There will always be one rotating sandwich. On a recent trip, a killer play on a New Orleans muffuletta stole the show, served on a chewy sesame-sprinkled roll from Miami’s Sullivan Street Bakery (the restaurant sources all its bread from there). Another rotating constant will be one larger dish: always a dryaged steak, which recently featured a 30-day-aged New York strip. At $85, it’s by far

the most expensive dish on the menu, but it’s worth every penny. The thick, rosy planks of steak arrived perfectly seasoned under a cap of melted ramp butter and served alongside half a head of sweet, soft roasted garlic and a peppery arugula salad tossed in a zippy Meyer lemon vinaigrette and a shower of Parmesan.

One rotating dessert will always have a home on the menu, too. I was lucky enough to snag the salted caramel and milk chocolate torte ($9), the best dessert I’ve had in recent memory, accompanied by a cloudlike quenelle of whipped creme fraiche. The dish’s time appeared to be limited, but let’s hope it reappears in the future.

For the adventurous diner, there’s plenty of allure in Slim Charmer’s avantgarde, always-evolving approach. For those looking for consistent favorites, maybe not. (That’s OK, though: Plenty of consistency can be found next door.) Either way, get comfortable with the menu of martinis. There’s not much to move around there, and that’s a very good thing.
