hen it came time to hang a livingroom light fixture in her newlybuilt Uplands home, homeowner Allison was on the street in front of the house, guiding placement of the glamorous light so it could be seen from the road. She wanted the sparkle from the two-metre circular light that she fell in love with two years ago at Restoration Hardware to be enjoyed by passersby. “At night, I see cars slow down to a crawl,” she said. “It’s just glorious — a really fun fixture.” It’s typical of the hands-on approach and attention to detail that Allison and Blane brought to the project, resulting in a home they say is the family’s “absolute dream.” (Although Blane gives all the credit to Allison’s keen sense of style and design.) The stunning home on a Beach Drive corner lot is an award-winning showcase that marries West Coast warmth with modern flair. It garnered the top prize in the recent Vancouver Island Building Excellence (VIBE) awards as the best build of its size on Vancouver Island and was built to green-platinum standard by Horizon Contracting. That means it’s one of the most energy efficient houses out there. But even with all that, it’s mostly just a well-loved family home. “Family is everything to us,” Allison said. Indeed, there are family photos in almost every room, and a key part of the new build was creating fun space — including an eight-seat theatre and games room — for the couple’s two teenagers. The family had the advantage of having lived on the property for three years before deciding to build a completely new home. They bought the property in 2010, after moving to Victoria from Calgary in 2007. They were drawn to its large lot size (.75 of an acre) >12

and terrific location just across from the Victoria Yacht Club. The bungalow-style house was in desperate need of renovating, which they did soon after buying. As time went on and their family grew up, the couple decided they needed more and better-utilized space. “Another renovation would not have added any value. We weren’t getting what we wanted. We decided to bite the bullet. If we’re going to do this, let’s do it right and get exactly what we want,” Allison said. Their time living on the property gave them a practical head start. They knew the land well, from where the best morning sun was to where the trees cast cool shadows. And while the previous bungalow hadn’t suited the family’s needs, it had been well-situated on the property. The kitchen and living room are in the same places they were in the previous house, open to light all day.

“I’m from the Prairies and while I love the West Coast, I miss the big open skies of Saskatchewan,” Allison said. That led to 138 windows throughout the house, flooding the open style interior with light. The family wanted a sense of openness and flow in the main living areas, which drew them to a modern, high-ceilinged style. They’ve warmed and softened the modern architecture with the use of wood, stone and natural products throughout. The initial plan from an architect evolved as the twoyear project progressed. Allison had a very clear vision of what she wanted and worked closely with Horizon Contracting, a Victoria-based company, who made sure it happened. Tim Agar, managing partner of Horizon Contracting, said Allison’s ability to clearly communicate what she

FAVOURITE THING wanted made the job much easier. “Allison approached it with a very clear, well-thought-out goal in mind. She was able to articulate to me the look and feel she wanted. We really collaborated to keep that vision in place all the way through the project.” Allison isn’t a trained decorator or designer but has loved doing it all her life, in her homes and in her classrooms when she was a school teacher. “Maybe I missed my calling,” ” she h llaughed. h d Key to her vision was a warm and welcoming space where people would feel immediately at home. The couple loves entertaining and host everything from their annual Robbie Burns party and sit-down dinner for 40 to Easter egg hunts and a traffic-stopping Christmas decorating extravaganza. (There is an entire room dedicated to holding the family’s Christmas decorations and lights.) State-of-the-art technology from Nanaimo-based InSight allows them to control the mood in the entire house with the touch of a button on their phone. The program controls everything from lighting and music to temperature and security. “It really brought simplicity to something that could have been a bit overwhelming,” Allison said. “We love the flexibility it gives us in setting a scene.” Walk in the front door and you’re immediately gazing into a two-metre fish tank encased in a wall, filled with exotic fish and plants. That sense of bringing the outside in is echoed in an adjacent dining room wall. Light grey tiles look like waves. “I wanted that sense of water and the waves continuing. It speaks for itself. It’s very comforting — modern, yet warm and inviting,” Allison said.

The striking walls are pieces of art in and of themselves. Allison uses curves throughout the house to soften the squareness of modern architecture. The curved showpiece chandelier in the living room is above a semicircle white leather sofa. Coffee and side tables from Scan Design in Victoria combine rounded modern glass with driftwood. The adjacent bar is a slab of curved Mahal d TTajj M h l quartzite, i named for the warm mix of grey, cream and white waving through the stone. It’s used in the kitchen as well, including a four-metre island. The living room is open to the dining room and large kitchen, which flows seamlessly to a huge outdoor living space. The kitchen is sleek and uncluttered. A roomy butler’s pantry encloses a baking station, entertaining supplies and groceries. Another room is home to a beverage centre, with a stash of teas, hot chocolates and drinks. That’s also the dish room, where dozens of platters and serving dishes line a wall. “When they’re in drawers, they get chipped and you forget what you have. This way, they’re displayed. It’s also an art wall,” Allison said. “I dreamt of this!” The family bedrooms are all on the main floor, with a master suite area on one side of the living area and the teenagers’ loft bedroom areas on the other side. Although the house is 10,000 square feet and a modern design, the nooks and different living areas make it feel cozy. A family room has a wood-burning fireplace. The teen wing is off that, with each having a loft-style suite. There’s a small living area for the hobbies — music and

sports play key roles for both — with loft bedrooms above. “I wanted something really special for them,” Allison said. “And it’s very practical, just off the family room and near the kitchen. They’re always having friends over, which we love.” There are two large mudrooms just off the back door, one for the teens, the other for the adults, as well as two laundry areas close to the bedrooms. “I knew I wanted that from the design of the old house.” One of the biggest surprises of the house is the large exterior

living space, with its outdoor kitchen, including a pizza oven and a Kamado Joe, a ceramic grill with its distinctive dome shape, from Capital Iron. The couple wanted an easy flow between inside and outside and they got it with folding glass doors leading to a West Coast creation integrating Douglas fir and western red cedar in a soaring canopy that almost looks like the prow of a yacht. Guests can warm themselves by a large wood-burning fireplace, soak in the hot tub, swing in the hammock or

STUNNING DESIGN laze on the chaise loungers. The kids got a trampoline for Easter, tucked in a corner of the large, grassy property. Allison planted several palm trees, dressed up in twinkle lights. “That’s another tree we never had on the Prairies. I love that I can see them from almost every room.” Contractor Tim Agar has watched people’s reactions to the outdoor living area. “It’s hidden from the street and takes people by surprise when they walk outside. It’s very striking.” While most people are caught up in its beauty, Agar, who describes himself as a “systems guy,” sees the structural challenges. Buried in the façade of natural wood is a skeleton of steel. The large timbers provide a beautiful covering for the complex structure that allows the high peaked structure to perform well seismically. Agar worked with Mann Engineering to find a solution that allowed the creation to stand unobstructed and meet building and seismic codes. The house also has numerous invisible innovations that make it every environmentally sound. Horizon Construction is Vancouver Island’s first official Holmes Approved Homes Partner Builder, a stamp of approval from well-known TV personality and builder Mike Holmes. “This gives [home buyers] third-party verification from an internationally recognized expert that our homes meet the highest quality standard out there, adding value now and at resale time.” Agar said. The distinction fit well with Agar’s deep interest in building homes that focus on the environmental aspects of a building, its energy consumption and indoor air quality, areas that were important to the family as well. “We scrutinized every material, from the subfloor adhesive to the stains,” Agar said. Those can off-gas for years, saturating the home with volatile organic compound (VOC) emissions. These come from consumer and commercial products and are a significant contributing factor in the creation of air pollution in urban areas. >21

Horizon energy modeled the building three times to make sure its energy consumption was as minimal as possible. “It’s a large house, but its carbon footprint is equal to that of a 1,500-square-foot home,” he said. Heating and lighting sources were optimized. For example, a gas boiler would have been inexpensive to install, but from then on, would create a lot of carbon every month for hot water and heating. Instead, Horizon installed a hybrid air to water heat pump. Two of them create all the heat in the house very efficiently using little energy, Agar said. “A house doesn’t have to be a big gas guzzler using dead technology.” Careful attention was paid to indoor air quality and the environment. Four heat recovery ventilation systems were installed, meaning the air is changed within the house multiple times over 24 hours. “These are invisible items that have an incredible impact on the

homeowners’ quality of life,” Agar said. h It is more expensive at the outset, but not a lot, he said, and often recoups the initial ccost with long-term savings. “People can get too focused on the features you can see – the fine mill work, the electronics. They steal the budget and the things that are truly important – the quality of the air and the health of the home – can get overlooked.” It’s better for the homeowners in the long run and also on the tradespeople working in construction, he said. “We’ve become more and more aware of the impact on site pollutants on our own staff and workers.” Agar and the family were thrilled with the highly competitive VIBE award, which takes beauty as well as the environmental factors into consideration. “We love that it’s a healthy and happy home. We’ve very blessed,” Allison said.

Start seeing the patio for what it is: an extension of your home. “The biggest mistake is underestimating the potential of your outdoor space and not using it enough,” said industrial designer Stephen Burks. “It can be fixed by taking your indoor activities outside.” Swap your dining room for a meal in the warm breeze on the patio. Or take your movie marathon night from living room to under the stars. How much to shell out for an outdoor room? When shopping for an outdoor rug, choose one stylish enough to be reused indoors, yet made to withstand outdoor elements. He’s also a fan of modulated sofas that can be break up in smaller pieces. Picking out the right materials is crucial. Look for tables and chairs made of aluminum, which is rust-proof and lightweight, said Roberts. For outdoor pillows and patio umbrellas, she recommends the Sunbrella fabric to protect against the sun’s UV rays. Even if your outdoor space is limited to a tiny balcony, you can still enjoy an alfresco haven. “This was me 10 years ago,” said Roberts who found a three-piece bistro set to be the best solution at the time. n a previous life, Christopher waslife, a pilot n Walker a previous and an aircraft Christopher Walker mechanic. was a pilot and an aircraft mechanic.

But 25 years ago, he radically shifted gears and followed a different passion, which required equal precision, but more imagination and ingenuity. Today, he numbers among Victoria’s foremost, highend custom homebuilders. “I always had a creative streak and although I love aviation I was interested in real estate, too,” said Walker, who made his first foray into the market in 1992 and hasn’t looked back. Since then, he has been constructing and designing unique homes, and among his most recent creations is this waterfront home, which is collaboration between his own Christopher Developments and Zebra Design & Interiors Group. >34 Capital HOME | 31

OCEAN MARVEL It was a challenging location because the lot was long, narrow and sloping — “Whenever you’re dealing with the waterfront it can be difficult once you start opening up the bank,” he said — and almost immediately they encountered a hitch in the form of what looked like an archaeological midden. “Thankfully it wasn’t. There were no bones or anything and it didn’t take too long, only about three weeks. You often encounter this on waterfront properties, but you have to follow the correct procedures….” Walker also had to go through a variance process that took some time. The building was a little bigger than allowed because he wanted to incorporate a space above the garage for an office. But at the end of the day, the owners have a stunning result with a classic home, in a beautifully terraced Oak Bay setting, landscaped with giant boulders and natural flora. The home has 4,400 square feet of living space, with in-floor radiant heat powered by a gas boiler. Most of the ceilings are 10-feet high, although stepping up to 11 or more in some areas and soaring to 20-plus feet over the staircase. Christopher Development’s crew did all the interior finishing, Hobson Woodworks did the cabinetry and Walker did a lot of listening to the owners. “That is an absolutely important attribute in a builder. At the beginning, owners give you all kinds of ideas and you try to narrow that down to what they really want, which is difficult as there are so many options for people, especially if they have money. But they will also have a budget and you have to respect that, so we keep people informed if there are extras or changes. >37

SHE ADDED THAT A NANA DISAPPEARING-STYLE WALL WOULD NOT HAVE SUITED THE DESIGN OF THIS CLASSIC HOUSE. WALKER SAID THESE WINDOWS ARE EXTREMELY ENERGY EFFICIENT, AND ARE USED IN PASSIVE HOUSES AS THEIR RATING IS “BETTER THAN ANYTHING ON THE MARKET AND WE NEED THAT BECAUSE THIS CAN BE A PUNISHING LOCATION IN THE WINTER.”

An informed customer is a happy customer.” He records all communication in an on-line file — everything from budgeting and invoicing to photos of the site and changes that are made. “Everything is documented and we use a very good app.” Walker also has cameras on site so owners are able to login and watch the process any time they want, and at the end of the build he gives them a time-lapse film. “Technology is changing all the time,” he said. In addition to being serious audiophiles, and musical themselves, the owners are oenophiles: “So we created a wonderful, temperature controlled room for their wine collection,” said Walker, of the lower level space which has a dry stack-look stone wall at the back, using the same locally-quarried stone as was used for the home’s exterior. It is a small space, about nine by nine feet, but with a big impact. It also has a large glass custom door with dark, oak stained frame, grey slate tile on the floor and a copper leaf ceiling with perimeter lights to add a warm glow. Other unique elements include an eye-catching newel post and spindles, all meticulously designed in three dimensions by Walker and custom turned in Vancouver, to give the staircase a bit of a nautical flair. “I built a model of the staircase in a 3D program called Sketchup, then transferred it to CAD drawings and sent the file to Vancouver where it was input into a computerized lathe. I basically designed the entire staircase that way, including the flush-mounted step lights.” >40 Capital HOME | 37

OCEAN MARVEL A sound-proofe office and music room over the garage is entered through a long passageway lined with built-in cabinets and shelves where the owner, an avid guitar player, can store his instruments and other memorabilia. And a One Touch home automation system called Control 4 manages everything from window blinds to the high-end sound system and security cameras around the house. Walker said his company always focuses on very detailed, transparent budgeting and cost control. “If anyone is considering hiring me they can speak to anybody I’ve built for.” Zebra interior designer Lorin Turner started working with Christopher Developments almost nine years ago. “It’s been an incredible relationship because Chris is so thorough, such a considerate builder. That makes my job a whole lot easier. Chris is always interested in trying new things, pushing the envelope, while being sensitive in managing time, people, budgets, and the crises that invariably arise.

It takes a special person to do this and also respect nature and the land.” In formulating a theme and overall look for the home, Turner started with traditional elements, “wanting to reference a classical European home — something with some history — while also honouring the environment, the beautiful scenery and location.” In playing up those elements, she used traditional materials and motifs, but applied in a contemporary, casual and comfortable way. For instance, for a crisp new look she used hand-made, pale aqua, glazed tile from California on the kitchen backsplash and installed an amusing highlight strip with a little bubble tile in the master ensuite shower. “We had a little fun with the motifs as I didn’t want it too formal looking.” Fresh, almost whimsical elements — such as a glass penny tile backsplash in the mudroom — were used here and there throughout the house. >43

“My absolutely favourite space is the den where we did an Asian lacquered hutch, a curio cabinet, with cut bamboo tile in the back to give it texture and interest, and a concrete fireplace.” The walls are wrapped in a grass cloth that has a silvery metallic sheen in a warm taupe. “Because the room vaults quite high and is kind of narrow we used sliding-glass pocket doors into the hall to give it a more spacious look. We wanted a nice, big, comfy sectional for TV viewing and to settle into on cold winter days, and we didn’t want a door to swing in because of limited room. We also and didn’t want it to swing out into the hall which is rather narrow.” Throughout the house, the owners used predominantly an aged European white oak, with wide, long planks. “But the flooring is different in every bathroom. In the master, we used bianco Carrara in a chevron mosaic because we wanted to play with texture. It’s a hotel-inspired bathroom with deep-stained cherry wood cabinets, which is offset nicely with the white marble. “Overall it’s not a huge kitchen, it is quite small comparatively for this size of home, but really well planned and highly functional.” She explained that kitchen appliances take up more space than ever these days, “everything is large-scale format,” but the owners didn’t want the kitchen to look as if it was overtaking the rest of the open living space. For this reason the central island was painted a slightly darker shade than the other cabinets, to reduce visual impact. She added that many of the larger custom homes these days have additional closet spaces on multiple floors that can be converted into an elevator shaft if desired, and this home is no exception. “People want to be able to age in place and move comfortably between floors,” said Turner. It’s all about accessibility at every age and people wanting “forever” homes that are well positioned for the future. And speaking of positioning, the siting of the house was a key concern that called for some flexibility and creative thinking. Because the lot was long and very narrow, and the house was large, it was a challenge for Zebra’s principal designer Rus Collins. “We only had so much waterfront to work with and we wanted to maximize rooms to face the phenomenal views,” he said. “It came together really well for such a narrow frontage, because we were lucky enough to have a lane down the side of the house so we could face the front to the lane,” where it has the added advantage of looking wide, not skinny.” All the important rooms in this timeless French countrystyle home — with it’s steep pitched roof, small dormers, and intermingling of stone and brick on chimney, sills and lintels — take advantage of the nearby ever-changing waterscapes. W

hen last we visited Ralph and Alicia Siegel, their burgeoning Bainbridge Island compound was missing just one critical component: someplace to live. Phases 1 and 2 of a three-phase, 10year, compound-amassing project by BC&J Architects already had created an enchanting cedar-shingle boathouse and a cozy, coordinating carriage house/garage on the waterfront property. Those made ideal interim nests while the Siegels were based in the U.S. Midwest, awaiting the big retirement move back to the island where they met. Phase Three took four more years of designing and building and finessing and filling — and now, lo and behold, the home is a complementary, contemporary centerpiece that wraps up the compound and establishes a special, spacious gathering place for the Siegels and their three far-flung sons and their families. The Phase 3 goal: maximum warmth, zero sterility. “We wanted it open, with as much natural light as possible,” Alicia says. “Concrete, glass, metal, wood — and cozy. BELLEVUE, Washington — There’s something rather magical about Dan and Cari’s peacefully meandering driveway. For one thing, it’s tucked into its Bellevue neighborhood as stealthily as an endless scarf up Siegfried’s sleeve. For another, once you eventually descend to the end of it, you’re in Old World Europe. Well. It looks like Old World Europe. And that’s magically deliberate. Dan, Cari and their college-age daughters, Alyssa and McKenna, live in a luxuriously romantic stone home on Lake Washington that gives the classic French chateau a run for its euros: 6,500 square feet of intricate craftsmanship; natural, durable materials; impeccable details — and 21st century livability. “From the beginning, the owners wanted to give the house a feeling of Old World quality with European roots,” says architect Tom Kuniholm. “The tall stone gables, chimneys and terraces recall grand residential architecture of the British Isles or Lake Lucerne.” >50

Inside, a broad balcony overlook, sky-high ceilings, shallow arches and an impressively baronial hall/dining area express the requested aesthetic. But at the same time, Kuniholm says “the house was built to provide for informal family life and relaxed entertaining.” So, cozy pockets of comfort, practicality and fun snuggle all along the wide-open, highly vaulted great room: an intimate bay-windowed sitting area; a cutout, compact mirrored bar with actual pennies covering the actual bar; and a darkish nook that “started it all,” Cari says. “I ripped out a magazine picture and said, ‘Tom, make this happen.’ The whole house evolved from there.” Informal and formal, Old World and state-of-the-art, this highly evolved home succeeds grandly on many levels — literally, many, many levels. Its low-bank, acre-or-so waterfront site, at the end of that winding, hilly drive, posed quite a challenge, Kuniholm says. “None of us wanted a daylight basement. We went to great pains to terrace down to the water, and the floor plan is strategically stepped down to follow the contour of the hillside. There is a fair amount of level changes to nestle into the waterfront: three floors with half-levels in between, to get the hillside to work with the house.”

All those levels require a lot of stairs, as you might imagine, from the welcoming sunken auto court to the exquisitely tiered backyard terrace — with one almost-unimaginably OMG entry stairway inbetween: locally milled walnut treads, risers and stringers bracketed by meticulously hand-wrought iron. “It’s the tour de force,” says Kuniholm. That could be an understatement. “All the steelwork is hand-forged, with a hand-shaped, carved railing,” says artisan fabricator Nathie Katzoff, of NK Woodworking & Design. “Each piece is unique in geometry and 100 percent custom.” The elaborate handrail is held together by just two or three fasteners, he says; otherwise it’s all wood joinery. “It’s really traditional, 2,000-yearold techniques. It was a fair amount of work.” That could be another understatement. Katzoff crafted the staircase in the shop and installed it in pieces. All told, he says, it required 3,000 hours of labor. While we’re talking numbers ... there’s that stone: 38 tons on the exterior, all from a quarry near Bozeman, Montana. Authenticity counts. And here, in this hidden Old World slice of hightech Bellevue, it works. Magically.

t seems utterly fitting that Christopher Donison should live in a home overlooking the water, with a grand piano stylishly positioned in the floor-to-ceiling window so the composer and conductor can sit and play a little jazz or Chopin, while casting his eyes over the ripples and boats below. jazzy JANION Soon after The Janion was completed last December, Donison moved into an attractive and compact, twobedroom, two-bathroom condo at the foot of Pandora Avenue, overlooking the Blue Bridge. That won’t be for long, because when the bridge disappears he will have an unobstructed view of the Inner Harbour without the rusting relic in the foreground. One of the first to buy into the Janion, literally and figuratively, Donison immediately embraced the concept of living in a small space and was one of the first in line with a friend when the units came on stream. “We went and saw the mock-ups and I bought two micro condos as an investment. Both were under $200,000 at the time,” recalled the musician, who made the shrewd purchase just before the market took off. He went back the next day and, after learning that a two-bedroom unit had just come available, he bought

it instead and let one of the small condos go. (He recently sold the other micro suite for about $100,000 more than he purchased it for.) The Janion came on the market in October 2013 and had immediate appeal. Ninety per cent of the condos sold in a flash as the building features mostly micro lofts, with a few penthouses and small twobedroom units like Donison’s, which is slightly less than 900 square feet. Featuring a restored historic brick façade on Store Street and curved glass wall on the harbour side’s concrete addition, the project is an exciting blend of old and new architecture, and Donison loves both the building and its urban location. “My only worry is that I will become drunk, fat and broke,” he joked, referring to all the enticing eateries and bars in the vicinity. “I’m thinking of putting in a zipline from here to the Drake.”

But he is quick to add the building counterbalances those temptations with a well-equipped exercise room, a rooftop common area where residents can enjoy dawn yoga exercises, and something else he’s never seen in a condo — a “boathouse” on the ground floor, where kayaks can be stored and carried straight down to the water. “I don’t have a kayak yet, but I’m tempted. “Another pleasant surprise was finding out this place is built like a bomb shelter, with concrete walls that are about 1½ feet thick so I can play the piano without anyone minding.” His fourthfloor unit faces south and west, so on a clear day the rooms are flooded with sunshine and he can always close the blinds if it becomes too bright. In addition the building has horizontal louver-type extensions above the windows that slice the summer light in half, reducing heat and glare. The louvers are designed to filter the light when the sun is high in the sky, but in the winter when rays are lower the light passes through for maximum passive solar gain. Donison’s suite is in the new part of the building that faces the water, and one wall of his living room curves like the prow of a ship, which delights him and curious passersby, too, who can see

his piano from the street and enjoy the sonatas or Gershwin tunes when his windows are open. “The idea of living in a square, boring condo box just didn’t appeal to me, so this is perfect. This condo doesn’t have a single square angle and that keeps me constantly interested in the space… I’m really attuned to that kind of thing,” said the composer who graduated in piano performance from UVic and went on to win a Dora Mavor Moore award for music direction in Toronto. When he was at school, Donison was keenly interested in architecture, too, and thought at one point of becoming an architect. “Maybe I would have been if I had not been a composer. I used to enjoy designing houses and that probably explains my interest in design, in this building and its interesting shapes.” >

But he stressed, when it comes to décor, “I cannot claim credit for all of the fastidious elegance in the suite. That comes to me through my wife, Cheryl, who passed away last year…” The couple had previously rented a house in Oak Bay, but planning ahead they decided something smaller would suit them just as well. “And this is such a cool place with all the glass and harbour views,” said Donison, who is in his early 60s and one of the oldest people in the building since most of the others are millennial and techies. How did he choose to furnish his suite, which is not only compact but has expansive glass walls and a large pillar in the living room? Donison believes big furniture is the secret in a small space and so he has an enormous Edwardian breakfront cabinet, a family heirloom, in the small bedroom, a large coffee table and two white sofas in the living area and king-size bed in the master. “None of my friends thought I’d get the cabinet or the bed in here, but I spent months measuring and now it’s like a cozy cocoon.” Being in harmony with a space is important to him and he has devised all kinds of nuanced additions and space, efficient solutions to fine-tune its efficiency. For instance, he has designed a slender, eight-inch-deep, built-in sideboard in the front hall for stemware, with a wine column in the middle for his reds, and he has ordered

a chopping block to cover his white wine fridge, thereby extending the usable kitchen counter space. “I do feel as if I have golden horseshoes in my life because I love it here and downtown is becoming more and more trendy. When the bridge is finished and the new marina is done it will be wonderful,” said the musician, who is also organizing a studio in Market Square for his three other pianos, recording equipment, several decades’ worth of scores, a spare fridge and more sofas. “It may not be Monaco here, but as the world falls apart, this little part of the globe will seem more and more of a haven. Looking out from here at night it feels like Manhattan.” CH

he talented husband-and-wife team of furniture craftsman Bruce Ketterer and painter Kathleen McPhail has created an exquisite cottage in a large wooded property near Victoria. It’s a work of art, set in a two-hectare forest, at the top of a long and serpentine drive. The property owners had built the shell originally to house goats, but changed their minds and asked this artistic due to create a glamorous guest cottage instead. The two artists were given total freedom to let their creative juices flow, since the owners had worked with them before and trusted them implicitly to envision and then construct a French country cottage with a hint of Italian flavour. created by first painting French blue and off-white shapes, then artistically sanding them for an antique look. She also did all the fine art paintings that hang on the walls. Tight-knot Douglas fir that had blown down on the customer’s property was kilned and milled in Chemanius, and used for most of the floors except in the bathroom where the heated floors are covered in Peruvian travertine, which also carries partially up the walls. In keeping with the old-world feel, hand plastered walls were created by local artisan Dan Campbell. “The owners wanted a comfortable old-world feel for their guests, and a look that complemented their European-style main house,” said McPhail, who noted she and Ketterer enjoyed the project because it meant they could draw upon their love of everything Italian. They then furnished the space with an eclectic array of vintage finds, as well as Ketterer’s unique pieces of furniture. “We have always been interested in the way European designers manage to juxtapose old world architecture and style with modern pieces and contemporary living spaces,” said McPhail. live trees, native to the Mediterranean region, are among nature’s oldest trees, and they look it. Gnarled, brawny trunks, a crown full of silvery leaves, and clusters of tiny green fruit give olives an interesting Old-World look. Designers have lately been warming to the tree, its wood and olive hues.

he wood’s distinctive characteristics — its smooth density and interesting grain pattern — have made olive furniture and accessories popular. “There’s a great sculptural quality to olive wood — a simple bowl becomes an elegant art piece,” says designer and artist Mike Harrison. You can find manufacturers and retailers offering spheres crafted from olive wood, as well as a tables and various bowls. Olive wood serveware can be especially nice; on a buffet, a platter laden with charcuterie, cheese and fruit is gastronomic art. A beautifully turned wooden spoon, with the grain curving about the form, is a sensuous tool.

live’s wide array of hues allows for versatility in decorating. Its place in midcentury modern’s colour covenant has made it a popular paint hue the past few seasons. It pairs well with other toothsome colours such as chocolate, orange, raspberry, cream and mustard. “Olive tones are timeless, and green is an important colour in 2017,” says Sue Wadden, colour marketing director for Sherwin-Williams. The company’s Restless Olive packs all the punch of a zesty martini. Benjamin Moore’s Tate Olive, from its Historic palette, has a refined intensity. Spanish Olive dials the hue back to a more neutral position. Olive pairs successfully with many other woods, and with mid- and light-toned wood stains, where its organic appeal gives the colour greater depth, says Stephanie Pierce of Masterbrand Cabinets. Consider using the colour in family rooms, bedrooms and kitchens for a warm and welcoming vibe. “I like seeing olive green tones used with dusty pinks and navy blue,” says Wadden. “Because olive is such a quintessential food colour, people enjoy a positive association with this colour, especially in the kitchen. Olive tones are great on cabinets and furniture. My own bedroom is a deep olive green, so I really do love this colour.” Vintage Turkish olive-gathering buckets, made of galvanized metal with symmetrical air vents, have a nice cottage look and can hold herb plants or fragrant milled soaps. And then there’s olive oil. There are hundreds of ways to enjoy its flavour, but there are other uses for it, too. The folks at www.marthastewart.com recommend olive oil as a natural furniture polish, and a combo of oil and vinegar as a cleaner. A little oil on a clean rag will restore shine and protect from tarnish your stainless steel and brass items.

utdoors, olives are hardy if you can protect them from wind. Or you might need to bring them in for the winter. In ideal conditions, theyâ&#x20AC;&#x2122;ll grow over 30 feet tall. Olives are fast growers and proliďŹ c fruit-bearers outdoors, if given favourable conditions. Donâ&#x20AC;&#x2122;t over-water, prune the inside branches carefully so the whole tree gets lots of light, and increase the pot size after the ďŹ rst year. Dwarf varieties are easy to grow in a pot or basket, if given decent light and ample sunshine. As an indoor tree, olives are less in-your-face than decorâ&#x20AC;&#x2122;s current darling, the ďŹ ddlehead fern. That makes them easy to place even in a small room. Some design and home stores offer dried lavender and fresh olive branches in a relaxed and aromatic wreath. CH

irrors are often considered to be the hidden secret of design. Often just as powerful as artwork and in some cases a more appealing design option, decorating with mirrors for many homeowners may feel overwhelming. If you are considering using mirrors, here are some useful tips.

Consider using mirrors in a series. You don’t just have to use a single mirror on a wall. Consider using two or three in a series — it will help to elongate a space.

Consider placing a mirror above a bed. Typically the choice above a bed is artwork or a mirror.

Experiment with finishes. While metallic such as silver and gold are most popular, consider mixing in frames that may be made out of wood or even painted.

If you’re looking for a relatively easy way to spruce up a room, consider laying a solid foundation — not concrete or wood, mind you, but a rug. Floor coverings can be a solution to anyone’s decorating dilemma or simply a means of adding a little pizazz to a room. Whether it’s a traditional accent rug or blocks, floor coverings provide visual impact as well as creature comforts. They also add oomph because often a rug is the largest design element in the room contributing color and drama to the overall feel of a space. “A fantastic area rug can make a room come alive. Whether they’re handwoven or knotted pile, made from wools, silks or cottons, rugs bring in color and texture and can define the mood of the room it anchors, simply by lying about on your floor,” said designer Dorothy Willetts. Rugs provide texture, either tactically through feeling or visually, while acting in support for colors of the room. They also are functional, helping with the acoustics of the room and cushioning the hard surfaces in wide use these days. When choosing, consider the size of the room, the colors in it and the furnishings. “Rugs have a lot of purpose and offer a lot of design opportunities for a space, and in some cases provide the final touch to pull a room together,” said Corinne Derush, who helps clients turn room design ideas into reality. “Rugs are more of a complement piece,” she added. “When I’m helping a client, we try to break it down into several pieces. We look at what they have and pick a floor plan: Is the room a more formal sitting area, is it a high-traffic area, are there children and pets in the house?” And when you’re decorating your home, it’s all about the visual. Ashley Stark Kenner and Chad Stark have literally written the book about carpeting — “Decorating With Carpets: A Fine Foundation” (The Vendome Press, New York). Filled with stunning photos of rooms in which rugs are showcased, it offers homeowners plenty of inspiration. The photos act as a guide to decorating since they are from rooms by designers and decorators that their company, Stark Carpet, has worked with throughout its more than 75 years in business.

“Carpet is an anchor to the room and more than a fashion accessory,” said Stark Kenner, creative director. “It helps pull the entire room together. When you’re thinking about designing a room, you can’t leave that out.” Designers usually begin by choosing a color scheme and then a rug. From there, the possibilities are endless. “I think people are becoming more fearless in their design,” Stark Kenner said. “People want a reflection of themselves.”

With the help of writer Heather Smith MacIsaac, the cousins decided to look back and share the experiences of the almost 100 designers the company has worked with to inform people about different ways to decorate with carpets. The book title is apt. “Designers and homeowners alike can use this book as a resource to see different applications of rugs, from how a simple design can ground the room to how something complex and colorful can add energy in both traditional and contemporary settings,” Stark said. W

hen my wife and I have been missing friends and want to reconnect with them in the summer, we will have them over for “happy hour.” It’s a casual, early evening get-together where we sit out on the deck, sip cool beverages, chat, laugh and get caught up on things. There will, of course, also be food to enjoy while we sip and often it will be tapas, the perfect type of food for this kind of occasion. Tapa is the Spanish word for “cover” or “lid.” Lore suggests that the tradition of serving tapas in Spain began humbly, when bartenders would put an edible tapa, such as a slice of cheese, ham or bread overtop their patrons drink. The tapa did provide something to nibble on, but in the early days its more important role was to provide a cover for the drink so insects or dust would not get in the glass, an issue in open-air and roadside bars. As I noted in my book, Everyone Can Cook Appetizers, from this practical beginning a huge variety of intriguing, palate-pleasing and savoury tapas have been created. These days, though, they are now served on small plates or small dishes or bowls. The concept has been a hit and now countless places in Spain and around the world serve tapas.

There are a number of what you would call classic Spanish-style tapas that have been served for eons, such as croquetas, tortilla, garlic shrimp, roasted almonds, marinated olives and pickled anchovies. But new types are being created all the time and that’s understandable because tapas can really be just about anything, as long as they’re snack-sized, palate pleasing and served with a drink. On the following pages, you will find six tapas recipes and a drink that you can serve with them, B.C. Rosé and Berry Sangria. Most recipes can be prepared in advance, so when your guests arrive to enjoy them, you’ll be able to spend most of your time with them, not in the kitchen.

his berry-flavoured, rose-based sangria is perfect for sipping while enjoying tapas on a warm summer day. Serve spoons with it so you can pull the berries out the glass and eat them. Recipe could be halved, or doubled, if you are serving smaller or larger crowd. PREPARATION TIME: 10 minutes, plus chilling time COOKING TIME: None MAKES: About 12 servings

2 (750 mL) bottles B.C. rosé wine, such as Quail’s Gate, Hester Creek or Joie 1/2 cup orange liqueur, such as Grand Marnier 1/2 cup icing sugar, or to taste 1 cup fresh blackberries or halved and thinly sliced strawberries 1 cup fresh blueberries 1 cup fresh raspberries 1 lime, halved or quartered, then thinly sliced 1 orange, halved or quartered,

then thinly sliced 2 cups cold soda water sICECUBES Pour wine and liqueur into a large bowl. Whisk in icing sugar until dissolved. Taste and add more icing sugar, if needed. Add berries, lime and orange; cover and refrigerate sangria four hours or overnight. When ready to serve, add soda water to the sangria. Fill a pitcher or two, depending on size, half full with ice. Ladle in the sangria and serve.

Wine- Braised Chorizo & Figs White Gazpacho Shooters

S

tart off your meal of tapas with a shot of this refreshing, light-coloured version of gazpacho that features the taste of grapes, almonds and cucumbers. PREPARATION TIME: 15 minutes, plus chilling time COOKING TIME: None MAKES: 12 (1/4 cup) servings 1 slice white bread, torn into pieces 1 cup chicken or vegetable stock 1 cup (about 20 to 25) seedless green grapes, each halved 1/2 cup slivered blanched almonds (about 50 grams) 1/4 English cucumber, peeled and cubed 1 medium garlic clove, sliced 2 Tbsp extra virgin olive oil 1 1/2 Tbsp white wine or cider vinegar salt and white pepper to taste 12 thin English cucumber sticks, for garnish 1 tsp snipped chives (optional) Place first eight ingredients in a blender. Blend until smooth. Season the gazpacho with salt and white pepper, and then transfer to a jug. Cover and refrigerate at least four hours, or up to one day. When ready to serve, stir and then taste the gazpacho and add more salt and pepper, if needed. Pour soup into small 4-ounce or so glasses. Garnish each gazpacho with a cucumber stick and, if desired, some snipped chives, and then serve.

NOTE: To peel and devein a prawn, hold tip of tail of in one hand. Slip the thumb of your other hand under the shell between its swimmerets (little legs). Pull off the shell and, if desired, leaving the tip of the tail in place. With a small paring knife, make a lengthwise slit along the back of the prawn. Now pull out, or rinse out with cold water, the dark vein. Pat prawn dry and it’s ready to use.

his dish features an intriguing blend of flavours. The sausage, cinnamon and clove provide some spiciness; the sugar and figs sweetness; and the wine and vinegar some balancing acidity. Serve with slices of bread to pile the mixture on. This dish can be prepared a day in advance and reheated just before serving.

PREPARATION TIME: 15 minutes COOKING TIME: About 30 minutes MAKES: About eight to 10 small servings 1 small onion, halved and thinly sliced 1 Tbsp olive oil 360 grams dry-cured chorizo sausages (about 3 to 4 depending on size), cut into 1/2-inch thick rounds 8 dried figs, each halved or quartered, depending on size

Chili Garlic Prawns

2/3 cup red wine 1/4 cup sugar 1/2 cup red wine vinegar 1 cinnamon stick, broken into t 2 tto 3 pieces i pinch ground cloves Place oil in a medium pot (mine was 8-inches wide) set over medium-high heat. Add onion and cook and stir until softened, about four minutes. Add the remaining ingredients, bring to a boil, and then the lower heat until the mixture gently simmers (small bubbles should just break on the surface). Gently simmer mixture, stirring occasionally, for 30 minutes, or until the braising liquid has greatly reduced and become glaze-like. Spoon mixture into a serving dish and serve. NOTE: Unlike, raw fresh chorizo, dry-cured chorizo is a ready to eat type of that sausage sold at supermarkets, butcher shops and specialty charcuterie stores, such as The Whole Beast in Victoria. Dried figs, such as mission or sun-dried kalamata figs, are sold at most supermarkets.

hese nicely spiced, garlicky prawns are marinated 30 minutes before being quickly cooked in hot skillet.

PREPARATION TIME: 15 minutes, plus marinating time COOKING TIME: three to four minutes MAKES: 20 prawns 3 Tbsp extra virgin olive oil 2 Tbsp fresh lemon juice 1/2 tsp crushed red chili flakes 1/2 tsp dried oregano 1/4 tsp smoked paprika 2 large garlic cloves, minced

20 large prawns, peeled, with tip of tails left on, and deveined (see Note) 1 Tbsp. chopped parsley lemon slices, for garnish (optional)

Combine first six ingredients in a bowl large enough to hold the prawns. Add prawns and toss to coat. Cover and marinate prawns 30 minutes. Set a large skillet over medium-high heat. When hot, add prawns and their marinade. Cook prawns 90 seconds per side, or until just cooked through. Set prawns and pan juices on a serving plate and sprinkle with parsley. Enjoy hot or at room temperature, garnished with lemon slices, if desired. Capital HOME | 77

Citrus & Fennel Seed Marinated Olives

  

I

n this recipe, licorice-like fennel and tangy citrus nicely accent the salty taste of the olives. The olives need to marinate in the refrigerator a day or two, so keep that in mind when planning to serve them.

 

PREPARATION: A few minutes COOKING TIME: 20 minutes MAKES: About 10 (1/4 c up) servings 2 tsp fennel seeds, lightly toasted (see Note) 1/2 cup extra virgin olive oil, plus more as needed 1 tsp ďŹ nely grated orange zest 2 Tbsp orange juice 1 tsp ďŹ nely grated lemon zest 2 Tbsp lemon juice 1 tsp dried oregano 1/4 tsp ground cayenne pepper 2 1/2 cups mixed, green and black, unpitted olives, drained well if in brine

Combine all ingredients, except olives, in a medium bowl. Mix in the olives. Spoon the mixture into a tall, 3- to 4-cup jar. Push down on the olives to help submerge them in the marinade. Cover olives with a bit more oil, if needed. Seal jar and refrigerate one to two days to allow the ďŹ&#x201A;avours to meld. The oil may partially solidify when chilled, so bring olives to room temperature before serving. These olives will keep at least two weeks in the refrigerator. NOTE: To toast fennel seeds, place in non-tick skillet and set medium heat. Cook and swirl the seeds, until lightly toasted and aromatic, about two minutes. >

The egg white in this recipe helps the flavourful coating mixture, which includes smoked paprika, adhere to the almonds during roasting, giving them an appealing crunch. The recipe yields four cups, which may seem like a lot. But the almonds will keep awhile, if you have any left after serving them, that is. They are pretty addictive! PREPARATION TIME: 10 minutes, plus cooling time COOKING TIME: 45 to 50 minutes MAKES: 14 (1/4 cup) servings 1 tsp smoked paprika 1 tsp cayenne pepper 1 tsp ground cumin 1 tsp onion powder 1/2 tsp garlic powder 2 tsp coarse sea salt (do not use fine salt) 1/2 cup granulated sugar

1 large egg white 4 cups whole, unsalted, skin-on almonds (about 600 grams) Preheat the oven to 275 F. Line a 13-inch x 18-inch baking sheet with parchment paper. Combine spices, salt and sugar in a small bowl. Place the egg white in a medium bowl. Whisk until white is lightened and frothy (do not turn into meringue). Add almonds and sugar mixture and toss well to

Roast nuts (no need to stir them while roasting) in the middle of the oven 45 to 50 minutes, until their exterior is dry. Let nuts cool completely on the baking sheet. Break apart nuts that have clumped together. Store almonds in a tight-sealing jar at cool room temperature until ready to serve in small dishes.

Serrano Ham-Wrapped Manchego Cheese & Melon

Serrano ham, or jamón serrano, is a Spanish-style of dry-cured ham somewhat like prosciutto. It has a rich taste and pleasing bit of saltiness and is often sliced paper-thin, which makes it perfect for wrapping around cheese and fruit. PREPARATION TIME: 10 minutes COOKING TIME: None MAKES: 12 pieces 6 paper-thin slices serrano ham, each cut in half, lengthwise

12 thin (about 3-to 4-inch long) honeydew melon wedges 150 gram wedge manchego cheese, cut into thin slices (see Note)

Lay a half slice of ham on a work surface. Place a slice of melon at one end of the slice. Top the melon with a slice of the cheese. Roll the ham around the cheese and melon and set on a serving plate. Repeat with these steps with remaining ham, melon and cheese. These could be made an hour before serving. Note: Spanish manchego cheese is sold in the deli section of some supermarkets and at specialty food stores.

M

y grilled oysters with garlic butter dish looks as green and summery as your backyard at this time of year. You may be familiar with the flavours in this butter from the classic French escargots a la bourguignonne. And, if I was a betting woman, I’d be willing to bet that 90 per cent of folks who love snails love this dish because of the rich green garlicky butter. That’s definitely my fascination with it. But this butter isn’t just for escargots — it makes amazing grilled oysters and the ultimate garlic bread. I like to grill oysters on the half shell, which makes for both a pretty presentation and failsafe cooking. The tough shell protects the delicate oysters from the hot fire, tempering the heat and transferring it through the shell. The oyster simmers in its own juices mixed with the cooking liquid from a marinade, sauce or compound butter. This is just the right temperature, and will not result in overcooked, rubbery oysters unless you leave them on the grill too long.

GRILLED OYSTERS WITH GREEN GARLIC BUTTER SERVINGS: 4 appetizer-sized portions

START TO FINISH: 15 minutes

1 dozen shucked oysters Green Garlicky Butter (see recipe below) Hot Sauce for serving Lemon wedges for serving repare a gas or charcoal grill for medium direct heat. Line a sheet pan with the bottom oyster shells from the shucked oysters. Top each oyster with a generous spoonful of the oyster liquor (liquid that the oysters are packed in) and the green garlic butter.

Place oysters directly on the cooking grates. Cover the grill and cook until butter is melted and liquid is bubbling, about 2-3 minutes. You can tell if the oysters are cooked if they are opaque and puffed up. The edges will also stand out slightly. Transfer to a serving platter lined with kosher salt and serve immediately with lemon wedges and favourite hot sauce, if desired. >

GREEN GARLIC BUTTER (a.k.a. ESCARGOT BUTTER)

G

rating garlic with a microplane provides a garlic paste that is more easily mixed into the butter.

1 stick unsalted butter, softened at room temperature 2 tablespoons minced fresh parsley 3 cloves of garlic, peeled and grated 1 small shallot, grated 1/2 teaspoon granulated or dehydrated garlic 2-4 teaspoons dry white wine, such as a French Burgundy or French-style Chardonnay, depending on taste 1/2 teaspoon sea salt (or more to taste) Mash or stir butter until it is smooth and slightly ďŹ&#x201A;uffy. Add parsley, garlic, shallot and dehydrated garlic. Mix together, mashing with the back of a fork to make sure all the ingredients are incorporated. Add wine and salt. Mix until smooth and fully incorporated. Taste for seasoning. Add more salt if needed. On a piece of parchment or plastic wrap, drop butter in spoonful to form a log. Roll butter in plastic wrap and smooth out to form a round log about 1 1/2 inches in diameter. Refrigerate until ďŹ rm and easy to cut into pieces. Can be made in advance and stored tightly covered in the refrigerator for up to a week and in the freezer for up to 3 months. Chefâ&#x20AC;&#x2122;s note: When I make this for the grilled oyster recipe above, I drop generous and equal spoonful of the soft butter on a piece of parchment paper and place it in the freezer to harden. This way, the butter is already portioned out for each oyster. You can do this in advance and place the individual butter patties in sealable plastic bag in the freezer for up to two weeks. CH

BAGAN, Myanmar — The moment of takeoff was silent, and mesmerizing. Within seconds, our hot air balloon was floating above the treetops, gliding toward what Marco Polo called “one of the finest sights in the world” when he saw it 700 years ago: the ancient Myanmar city of Bagan. Below us, the baked brick spires of hundreds of 11th and 12th century Buddhist temples poked sky ward through the purple-red horizon of dawn, graceful and serene. When I spotted the giant golden dome of the Dhammayazika Pagoda, glittering like a jewel in the first rays of light, my heart skipped a beat. I had just spent several days exploring these iconic monuments and pagodas, walking through their dark stone corridors, climbing their steep exterior steps. But peering at them from the edge of a moving basket in the sky was an entirely different experience, at once thrilling and existential. Our pilot, a Belgian named Bart D’hooge who has flown here for nine years, described Bagan as “stunning ... even if you see it just from the ground.” >

The city is home to the largest concentration of Buddhist temples, stupas and monuments in the world. More than 2,200 are spread across a plain adjacent to rice ďŹ elds and villages along the Irrawaddy River. Only from above can this vastness be fully appreciated. The temples were built by a series of Burmese kings who ruled the region for about 250 years, until city was abruptly abandoned in the late 13th century for reasons that are not entirely clear. Although time and the elements have eroded many of the structuresâ&#x20AC;&#x2122; once ornate exteriors, the buildings themselves are still largely intact. On Aug. 24, 2016, a magnitude 6.8 earthquake shook central Myanmar, damaging at least 389 of them, according to the countryâ&#x20AC;&#x2122;s Department of Archaeology. Some have been closed to the public fully or partially. Others are in various states of repair, covered in elaborate arrays of bamboo and wood scaffolding. Overall though, the most iconic temples remain accessible to visitors. Local residents still ďŹ&#x201A;ock here to pray before the colossal Buddha statues, many lit by bright beams of sunlight inside. And foreign tourists still arrive en masse, their numbers having grown steadily since the military, which ruled
