Iced berry

terrine

Makes 8 to 10 slices INGREDIENTS Terrine • 1 large Madeira sponge cake, or panettone • 300g each ripe strawberries, blueberries and raspberries • 2 litres vanilla ice cream, slightly softened

INGREDIENTS Topping • 250g frozen raspberries • 200g fresh or frozen blueberries • 200g sliced strawberries • 1 tablespoon icing sugar

METHOD Line a 900g loaf tin with cling film, making sure it overlaps the sides of the tin so that you can fold it over the dessert.

Place a layer of vanilla ice cream onto the base of the tin and on top of that place a few thin slices of sponge cake. Cover with a row of strawberries, and next to that a row of blueberries, and next to that a row of raspberries. Cover the berries with vanilla ice cream and continue layering as before till the loaf tin is full. Press down firmly to make sure you seal all the holes. Fold the cling film over the top. Place the tin in the freezer and freeze till really hard. Remove the terrine from the freezer 15 minutes before you want to serve it. Dip quickly into warm water and unmould it onto a platter. Top with the berries and give it a good shaking of icing sugar. TIP: For easier slicing, dip your knife in hot water.

They even got to make their own museum display of objects from the past. They all had LOTS of fun!

PINELANDS NORTH PRIMARY SCHOOL Red Roots After welcoming the first intake of 40 children in January 2017, Red Roots draws amazing families from all around the world – families who tell us they could not imagine their children anywhere else. Grade 1s of 2018 The Grade 1s of 2018 have had a wonderful start to the year. This is the first class that have come to us from Red Roots and so settling in has been easy. We have already had several exciting events. We had our Foundation Phase

Sports Day on Saturday, 27 January. Besides this, we have spent time hunting for cookies in the garden and have celebrated the rain by playing in the puddles. The Grade 1s have also discovered how funny the PNPS teachers can be.

This acknowledgement of excellence in the NSC results is a reflection of the sterling work done by our Accounting department, headed up by Mr Leon Collop. They make us proud!

After being received by the learner leaders, they were divided into their respective houses and made their way into the first assembly. The programme was jam-packed with fun activities aimed at creating a sense of belonging

and house identity. Initial nervousness was soon transformed into energy, enthusiasm and action. Orientation week concluded with a braai for parents, learners and staff, where everyone could enjoy the live jazz provided by the school band – a wonderful start to an exciting year.

Jason will be studying Electrical Engineering at UCT. • Lukhanyo Grootboom with 83% for isiXhosa and placed 4th in the province for isiXhosa. Lukhanyo will be studying a BCom at UWC or Accountancy at CPUT. • Mikyla Emergui and Peter Marais both with 99% for Visual Arts. Peter will be studying a BA at UCT, majoring in Law and English and Mikyla a BA at UCT, majoring in Film & Media and Drama. • Tayla Simpson with 96% for History and 95% for Fine Arts. The Pinelands High School class achieved an average of 84.1% for History. Tayla will be studying a BA at UCT majoring in English and English Literature. • Jesse Murray with 94% for Dramatic Arts. The Pinelands High School class achieved an average of 83.4% for Dramatic Arts. Jesse will be studying a BA LLB at Rhodes. • Matthew Clothier with 96% for Physical Sciences, 93% for Mathematics, and 92% for Life Sciences. Matthew is taking a gap year for 2018 and then returning to South
