FOR THE HOLIDAYS For years, Betty Mims of Seminole County added to her abundant collection of Christmas finery, from an expansive Department 56 village to the many ornaments on her Elvis tree, to 60 sets of 12 Days of Christmas decorations for yet another tree. Every year she’d set it up and take it all back down.

“Then it got so big until they decided to move a barn on the property down to their house,” says the late Mims’s daughter-in-law, Stephanie. Eventually they convinced her to leave it up year around, creating what is now known far and wide as the Christmas Barn south of Donalsonville.

Sadly, Betty Mims died in a car crash in September 2022.

But her family, including her husband Willard, three children, six grandchildren and two great-grandchildren, keeps her memory and her love of Christmas alive, gathering frequently at the barn for birthdays and other events, surrounded by all the decorations.

“We’re trying our best to just keep those things that she loves, and we want to keep it up and keep it going,” adds Stephanie. “We all just enjoy it together.

L

iteracy for Thomas County (LFTC) is a group of civic-minded individuals working to foster a wellrounded community by promoting and supporting literacy. Their goal is to provide the children of Thomas County with the literacy resources they need to become successful and impactful in their community.

Chairman of the LFTC board of directors, Melvin Hugans, talks about the evolution of the organization, which has been in existence for almost a decade. “It has evolved from the organization that supported literacy within the community from the aspect of adult literacy all the way down to pre-K students.

The goal for [LFTC] is to provide literacy resources for the community at every level.”

Today, Literacy for Thomas County has a two-pronged approach: promoting adult literacy and reinforcing childhood literacy. They execute these objectives with the aid of the Thomas County School System, Thomasville City Schools, and Southern Regional Technical College (SRTC).

According to LFTC board member and SRTC Director for Adult Education Charles Semones, the newest statistical data available shows a huge drop in third grade reading scores for Thomas County and Thomasville City Schools and the state as a whole.

“We also have around 18 percent of the population in the county that does not have a high school diploma, which is defined as ‘illiterate’ by the US Census,” says Semones.

Bob Dechman, Ed.D., assistant superintendent of federal programs and accountability for Thomas County Schools, expounds. “In 2022, 60 percent of all third graders in Thomasville and Thomas County were reading on grade level as reported by the Georgia Milestones Language Arts Test. That paints a more urgent picture, with only 33 percent of third graders in the county and city school systems scoring proficient or better.”

Why is promoting literacy important for Thomasville?

“We see a huge negative economic impact in communities with low literacy rates,” Semones explains. “Businesses look at these rates to decide if they want to build factories or relocate to certain communities based on workforce. Local businesses, hospitals, and governments also need strong literacy rates in order to have the necessary applicants for critical positions.”

So literacy initiatives are beginning early in Thomas County. Each year, LFTC spearheads several projects with the help of local partners, including companies like Flowers Foods, United Way, Rotary Club, Thomasville National Bank and Kiwanis Club.

Stephan Thompson, an LFTC board member representing the Rotary Club, remarks, “Rotary’s partnership helps LFTC overcome barriers of having enough volunteers to help with the various programs. You can never have too many volunteers when you need them.”

With volunteer help, LFTC recently gave out dictionaries to every third grader in the county. As a bonus, the dictionary has more than just definitions; it contains U.S. presidents, the periodic table, statistics on each state, and over one hundred pages of additional information.

Every October the organization conducts a communitywide literacy fair, including literacy item giveaways from over 40 vendors, one free age-appropriate book per child in attendance, a literacy entertainer, and many literacy games. Their turnout is usually about 700 people.

Dechman says the literacy fair is his favorite project because “it allows us to engage children and families before they enroll in school. There’s nothing like seeing the radiance of someone excited about their new book. Their curiosity is engaged and they are eager to learn.”

Semones describes their Books Are Magical program.

“We provide three children’s books to most four-year-olds in Thomas County. We partner with the public and private schools and many daycares,” distributing about 700 books three times a year.

When it comes to adult literacy, they’re also in the mix. LFTC provides a minimum of $1,000 annually to a scholarship fund through the foundation at SRTC for adult education students of Thomas County. “We hope to see a decrease in the number of people needing a high school

equivalency. Our scholarship should help with this as the GED now costs $184,” says Semones.

Hugans says adult literacy programs are an area LFTC is looking to grow. He says, “A couple of our board members work at [SRTC] here in Thomasville in the general education department (GED), and they are working with adults who are trying to master the skills of reading and literacy. Our hope is that we will be able provide resources for students who are in that program.”

In the long-term, LFTC has a number of goals, including improving third grade reading scores, reducing the number of citizens needing a GED, and educating others in the areas of financial and digital literacy.

“Our hope as we continue to grow is to not just give out books or literacy resources,” says Hugans. “Our hope is to eventually have instructional resources that go along with teaching kids or families. Whether through video instruction or face-to-face tutoring, our hope is to become that type of organization.”

Dechman also believes school attendance is a big key to promoting literacy. He explains, “Being present at school every day is an important habit to establish early in life. If it’s a school day, kids should go to school. That’s where they’re going to get the most benefit from the activities teachers have planned for them. We need students to be present for every minute of instruction. If they miss even a part of a day, they have to catch up. One element about teaching students to read proficiently is that you have to work on that skill daily. We work on it in every class period, across

every subject, and we ask our students to read nightly as well.” He gives this analogy: “If employees are absent, the business does not function properly or sometimes not even at all. Similarly, in schools, if students aren’t participating in instruction, they fall behind. They have to make up work and there is a snowball effect that falling behind makes future assignments that much more difficult.”

Building literacy in a community takes everyone. LFTC is always looking for partners. Civic organizations, daycare centers, schools and businesses are all welcome to join the campaign. Hugans invites those who are interested to join them the third Wednesday of every month. “We try to keep our website updated. The idea is we try to get them into a board meeting and then, from there, we kind of have an induction. So, if they are interested, check us out!”

Even the healthiest eaters among us are bound to indulge a bit during the holidays, whether it’s a few bites of a special family recipe or a tasty gift from a beaming giver. Here is an assortment of treats that just might be the hit of your holiday table.

Sweet Treats

THE THOMASVILLE KITCHEN

Christmas Bark 12oz quality chocolate chips or chopped chocolate 3/4 cup crushed candy canes OR 3/4 cup raw nuts or seeds (almonds, pecans, hazelnuts, pistachios and/or pepitas) AND 1/4 cup chopped dried cranberries, cherries, apricots and/or candied ginger About 1/2 tsp flaky sea salt, optional (If making with nuts and fruit) If you have time, toast the nuts/ seeds: Preheat the oven to 350 degrees. Toast the nuts/seeds on a rimmed baking sheet until fragrant and turning lightly golden on the edges, about 6 to 9 minutes. Transfer the nuts and seeds to a cutting board and roughly chop them.

Melt the chocolate in a microwave-safe bowl in 30-second increments, stirring after each one. Don’t overdo it. The chocolate is done when it’s about 90% melted—keep stirring off the heat and the pieces should completely dissolve.

Cover a large, rimmed baking sheet with parchment paper. Use a silicone or rubber spatula to spread chocolate evenly over the center area of the baking sheet—aim for about 1/4 thickness (it won’t reach the edges). Sprinkle the peppermint (or nuts and fruit) evenly over the chocolate. If you’re adding flaky salt to the nut and fruit variety, crush it between your fingers as you sprinkle it over the chocolate. Lightly use your palms to press the toppings into the chocolate.

If you’re in a hurry, place the pan on a flat surface in the refrigerator to harden for about 15 minutes. If you’re not, let the chocolate cool at room temperature for 2 to 4 hours, until completely hardened. Once the chocolate is completely hardened, use your hands to break it into about 25 pieces. Serve immediately or cover and store at room temperature for up to 1 week.

Chocolate Bark Variations For this recipe, you’ll need about 3/4 cup toppings. Choose from any of the following, and chop or crush them if they’re large: Dried, unsweetened coconut flakes or shredded coconut Pretzels White chocolate: Buy high-quality white chocolate and melt it in a double boiler. Drizzle a small amount of melted white chocolate over the melted dark chocolate and swirl it gently with a toothpick. Top as desired.

THE THOMASVILLE KITCHEN

Christmas Pudding 1 cup unsalted butter, softened 15 medium Medjool dates, pitted and chopped 1 cup dried apricots, chopped 1/4 cup currants 1/3 cup golden raisins 1 cup dried cranberries 1/3 cup finely chopped crystallized ginger 3 tbsp bourbon whiskey 1 large orange, zested and juiced 10 tbsp unsalted butter, melted 1 large egg, beaten 1/2 cup heavy cream 3/4 cup buttermilk 1/2 tsp kosher salt 1 ¼ cups roughly chopped pecans 1/2 cup dry breadcrumbs 1 ¼ cups all-purpose flour 4 sprigs fresh rosemary (or two sets of chopsticks) 1/4 cup maple syrup (Optional) Select a heat-proof bowl of any size or shape and generously grease with butter.

Combine dates, apricots, currants, raisins, cranberries, ginger, whiskey, orange zest, and orange juice in a mixing bowl. Toss thoroughly to combine.

Pour in melted butter and stir until everything is evenly coated. Mix in egg, heavy cream, and buttermilk. Add salt, pecans, breadcrumbs, and flour and mix until batter is very thick and sticky.

Transfer dough to the prepared bowl and press it down to flatten with a spatula.

Place a circle of parchment paper over the top and press down to seal. Stretch 2 pieces of plastic wrap over the bowl, then place the bowl on a third piece of plastic wrap. Bring the ends up and over the bowl and seal tightly. Cover the bowl with 2 pieces of foil, then tie a piece of string around and secure tightly.

Place in the refrigerator, 8 hours to overnight.

Lay rosemary sprigs or chopsticks in the bottom of a large Dutch oven. Place the wrapped pudding on the rosemary or chopsticks and fill the Dutch oven halfway with water. Place over high heat, cover, and bring to a boil. As soon as it boils, reduce heat to medium and steam, covered, for 4 hours, checking every hour to see if you need to add more water.

Use kitchen towels and carefully lift the pudding out of the Dutch oven. Snip the string, take off the foil, remove the plastic wrap, and peel off the parchment. Place a plate over the bowl and invert the pudding to unmold. Brush maple syrup over top.

Cut and serve immediately.

Snowball Cookies 1 cup unsalted butter, softened 1/2 cup powdered sugar 1 tsp vanilla extract 2 ¼ cups all-purpose flour 1 cup very finely chopped pecans 1/4 tsp salt 1/3 cup powdered sugar, or more as needed Preheat the oven to 350F. Beat butter, 1/2 cup powdered sugar, and vanilla with an electric mixer in a large bowl until smooth. Gradually mix in flour, pecans, and salt until completely incorporated. Roll dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets.

Bake in the preheated oven until bottoms are light golden brown but tops are still pale, 12 to 15 minutes. (Try not to let cookies get too brown: it’s better to undercook them than to overcook them.)

Remove cookies from the oven and let sit on the baking sheets briefly before removing to wire racks.

Place 1/3 cup powdered sugar in a shallow bowl; roll hot cookies in sugar to coat, then return to the wire racks to cool. Once cooled, roll cookies in the powdered sugar once more.

A

parent’s determination to provide their children with every tool they need to survive and thrive is almost superhuman. It’s what keeps them up at night, what keeps them driving hours for appointments, what fuels their will to search on Google for resources and insight into their children’s unique struggles. This same determination took a dazzlingly creative mother from hobby artist to full blown art instructor and lifelong champion for those who have much to offer but often need people who believe in them.

Dixie Lee Hedrington-Miller is one of the founders of the incredibly impactful arts community and non-profit now known as Friends & Stars, Inc. She and a few other dedicated friends from Florida created an artistic haven where people with disabilities of all kinds could thrive. Originally located in Florida, the organization was founded in 2010.

As the mother of a deaf child, Hedrington-Miller saw that art instructors in schools were befuddled by how to provide artistic opportunities to her son, claiming they would if they had the necessary resources. “He sat at my feet while I was painting for years,” she stated, her emphasis reinforcing that she saw he had untapped artistic potential, but teachers were afraid to interact with him.

“So, then I created a world where they can be stars,” she says of Friends & Stars, a non-profit organization serving all ages with “different abilities.” In 2017 the organization moved from sunny Florida to rural Georgia and now Hedrington-Miller runs a solo studio outside Thomasville near Ochlocknee, GA. With incredible zeal and creativity, she has created an oasis in an orchard of pecans, with giant colored pencils in the yard and sculptures artfully located around the vast property.

Hedrington-Miller’s tour of the studio space is less about the rooms and more about the art on the walls.

Piece after piece she proudly discusses, sharing about her students and the materials they used to create an underwater scene or a rooster or a diorama.

Simply put, Hedrington-Miller sees possibility in everyone and everything. Her calm, cadent voice tells story after story

of people she has met over the past few decades, those with behavioral issues or with diagnosis of cerebral palsy and other conditions. This is not a place where newcomers are given a box of crayons and some construction paper. This is a bona fide art studio where artists are made and trained.

She knows in her soul how it feels to watch your child be excluded from extra-curricular activities when you know they could participate with some level of accommodation. So, she made herself a lifelong student of differences and she has skillfully created an aesthetically pleasing and warm environment, where a mentally challenged adult can sit with a hyperactive child and a deaf boy and a teenage girl with limb differences and, together, they learn to shine like stars in the artistic realm.

T

What finer legacy can one generation leave to future generations than the stewardship of land?

he Red Hills region has much to be proud of, including the vast stretches and wide swaths of private properties owned by individuals aware of the importance of wildlife conservation and land and resource management. An invaluable resource to landowners in the area is Tall Timbers, a non-profit organization whose mission is to foster exemplary land stewardship through research, conservation and education. Their primary research focus is the ecology and management of fire-dependent ecosystems and wildlife, including bobwhite quail, in the Southeastern Coastal Plain.

Their conservation efforts are dedicated to helping protect the distinctive, rural landscape of South Georgia and North Florida and its traditional land uses from farming to hunting.

Tall Timbers strives to expand the use of Exemplary Land Stewardship practices, which balance ecological values and economic utility within a framework of long-term conservation. The foundation of this type of stewardship on upland habitats is the frequent use of prescribed fire to manage for bobwhite, selection timber harvest, other traditional land uses and biodiversity. Scenic, open, multi-aged forest structures are hallmarks of Exemplary Land Stewardship, according to Tall Timbers leadership.

Under the Jon Kohler & Associates brokerage, Lori Bembry Weldon and Walter Hatchett teamed up in the Red Hills region earlier this year to help multigenerational families and new landowners maintain such land stewardship practices.

“Between Walter and I, there are well over 50 years of land experience and all that goes along with helping clients manage and be great stewards to the places we help them sell and buy,” says Weldon, a licensed broker associate. Properties have included quail plantations, equestrian estates, ranches, private islands on Georgia’s coast, luxury waterfront homes, timberlands and land management, family

Their tagline of “Honoring Family Traditions Through Responsible Land Stewardship” sums up the goal of their recent partnership in the South Georgia and North Florida region.

“Walter and I have a commitment to honor those traditions of responsible land stewardship practices that are congruent with preservation and conservation, all of which are deep values of the Red Hills,” says Weldon of their family-oriented business.

“We both came from long backgrounds of growing up on the land and learning from our families all of these principles to help pass on land legacies for families or even help create new ones.”

Having a well-thought-out plan for who will own your land and how it will be managed after your death ensures that it will be successfully transferred to future generations without being sold or developed. It can also reduce your tax liability. Passing land from one generation to the next while keeping the woodland legacy intact takes work, planning and dedication. Legacy planning is the broader effort that not only encompasses the typical estate plan, but

also articulates the family goals and ways to involve the next generation. Engaging the next generation in the care and enjoyment of your land helps ensure a smooth and successful transition to keep your land intact, in forest and in the family, according to the Georgia Land Conservation Assistance Network.

Not all land is passed down through generations, however, and considering property as an investment is often a great option, says Hatchett. The Georgia Conservation Tax Credit is a financial incentive for landowners to help protect Georgia’s natural resources.

Landowners who donate fee-title lands or permanent conservation easements to a government entity, state agency, or a Land Trust Allianceaccredited land trust, like Tall Timbers, may apply for a credit against their state income taxes.

Since 2007, Georgia has allowed taxpayers who make a qualified donation of land or conservation easements to qualified conservation organizations to take a credit against Georgia income taxes. The Georgia law allows a state income

tax credit for up to 25 percent of the conservation easement value (based on an appraisal). The tax credit is capped at $250,000 for an individual state income tax payer and up to $500,000 for many types of corporations. The tax credit is also transferable, which means it can be sold to another Georgia income tax payer. Transferring the tax credit is beneficial for landowners who don’t have a large state income tax liability or someone who would prefer cash from the transaction.

Hot Toddy 3/4 cup water 1 ½ oz whiskey 2 to 3 tsp honey, to taste 2 to 3 tsp lemon juice, to taste 1 lemon round 1 cinnamon stick (optional, for garnish) In a teapot or saucepan, bring the water to a simmer. Pour the hot water into a mug. Add the whiskey, 2 teaspoons honey and 2 teaspoon lemon juice. Stir until the honey has dissolved into the hot water. Taste, and add 1 teaspoon honey for more sweetness, and/or 1 teaspoon more lemon juice for more zing. Garnish with a lemon round and cinnamon stick (if using). Enjoy!

Change it up: Instead of whiskey, use brandy or dark/spiced rum.

For extra flavor, you could also steep 1 tea bag (green or black tea) in the hot water for 2 to 3 minutes or add a splash of apple cider. Change up the garnishes by adding a slice of apple or fresh peeled ginger, whole cloves or star anise.

Mulled Wine 2 small oranges or 1 large 1 bottle of merlot, zinfandel or grenache 1/4 cup brandy 1 to 2 tbsp maple syrup or honey, to taste 2 whole cinnamon sticks 3 star anise 4 whole cloves Optional garnishes: Fresh whole cranberries (about 1/4 cup), cinnamon sticks, additional orange rounds or half moons

Winter Chai Latte ¼ cup filtered water 1 chai tea bag 2 tsp granulated sugar * ¾ cup milk Cinnamon optional for topping Spiced rum and/or orange liqueur, if desired In a small pot, bring water to a boil. Pour into an 8-ounce mug and steep tea bag for 5 minutes. Remove and discard tea bag.

Stir in sugar. While your tea steeps, pour milk into the pot and heat over medium heat until milk begins to steam (do not bring to a boil). Whisk vigorously until foamy or use a handheld milk frother to froth milk. Pour most of the milk into the tea concentrate, stirring to combine before adding in the last of the milk and foam. Sprinkle with cinnamon and/or add a little rum or orange liqueur, if desired, and enjoy!

Notes * If you typically prefer your coffee drinks less sweet, start with 1 teaspoon sugar and add more to taste.

To prepare the oranges, if using 2 small, slice one orange into rounds and slice the other in half. If using 1 large orange, slice it in half through the round middle, then slice one of the halves into rounds. Place the rounds into a medium heavy-bottomed pot or small Dutch oven. Squeeze the juice from the remaining oranges into the pot. Pour the wine into the pot, followed by the brandy. Add 1 tablespoon of the sweetener for now. Add the cinnamon sticks, star anise and cloves.

Warm the mixture over medium heat until steaming (about 5 minutes) and keep an eye on it. When you start seeing the tiniest of bubbles at the surface, reduce the heat to the lowest of low.

Carefully taste and add another tablespoon of sweetener if it’s not sweet enough for your liking. If it’s not spicy enough to suit your preferences, continue cooking over very low heat for 5 to 10 more minutes.

Serve in mugs with your desired garnishes. If you’re adding cranberries, you can add them to the pot to make it look extra festive. If you expect to polish off the mulled wine within 20 minutes or so, you can keep it on the stove over extra-low heat (it will become spicier with time). Otherwise, remove it from the heat, cover, and rewarm over low heat if necessary. Leftovers will keep in the refrigerator for a couple of days, covered. Pour it through a strainer if you don’t want it to become any spicier than it already is.

Notes For a slow cooker option, combine the mixture in your slow cooker, cover, and cook over low heat until steaming, about 30 minutes to 1 hour.

Appliance King Story by Madison Thornhill It’s no secret that when consumers in South Georgia and North Florida need new appliances, they think of Bobby Dollar first.

A

ppliances make our lives easier, but the task of appliance shopping can be daunting.

Bobby Dollar’s Appliance Consultants strive to make the appliance shopping experience as convenient, effortless and efficient as the appliances they sell. As they celebrate 40 years of business in Thomasville, owner Bobby Dollar reflects on his journey to becoming one of South Georgia’s premier appliance dealers.

“I had not even opened the doors yet to my business when GE sent my appliances to go into my display, and I sold the entire truck full of appliances before I could even get them onto my floor,” Bobby Dollar recalls of his opening. “I felt like from that point on we were going to be very successful.”

Dollar gathered a wealth of appliance industry knowledge spanning his 50-year career in appliance sales that began in his uncle’s appliance store at age 18. He also worked alongside his father. In 1983, he decided to go into business for himself.

Dollar credits the Thomasville community for helping him start his own business, particularly two community members who showed a level of kindness and neighborly support that Dollar will never forget.

There was a mere $3,700 in his checking account when he went to the Bank of Thomas County to apply for a business loan. While he was there, Elijah Hill, a well-known building contractor for the African American community, was also there. Hill also served on the bank’s board of directors. Hill agreed to cosign Dollar’s business loan for $12,000 dollars, enabling him to start the appliance business.

“That was unusual, but out of the graciousness of his heart, he did it,” says Dollar. “We then got into his truck and drove over to Bob Ausley, another prominent builder for the white community in town.

They were good friends. We were all good friends at the time,” says Bobby.

Hill told Ausley that Dollar wanted to go into business for himself and that he needed a building.

At the time, Bob Ausley had a building right up the street from him.

“And he gave me that building for six months rent-free,” says Dollar. “So, between Mr. Elijah Hill, the builder, and Mr. Bob Ausley, the builder, I got my business started.”

That is how all the pieces came together for Bobby Dollar’s Appliance Consultants. Bobby is thankful that the Thomasville community supported him back then and continues to support his business now and that the support has grown to surrounding areas.

“I tell people that we are fortunate to live in Thomasville because we are surrounded by a lot of large communities and those communities do business with us,” says Dollar, whose largest market is in Florida, including Tallahassee, Crawfordville, St. George Island and beyond. Their Georgia clients come from as far as Cordele and surrounding areas.

“I tell people all the time we are like the Delta hub.

Everyone comes into us here in Thomasville. We are a very unique store with a niche market because of our selection,” says Dollar.

Bobby Dollar’s Appliance Consultants is the regional showroom for Sub-Zero.

“It’s one of the best lines of appliances you can buy. Half of my showroom is dedicated to that brand.

That’s been one of the most successful things that we’ve done, being a showroom for them. People come from all over who want that brand,” he says.

They are also one of the largest dealers for General Electric, another sought-after brand. Not only do they carry the brands that consumers want, but they have inventory available when consumers want them and at a competitive price compared to big box stores.

For over 25 years, Bobby Dollar’s Appliance Consultants has been a member of BrandSource, the largest buying group in the United States. Being a member of BrandSource allows Bobby to sell appliances for the same price or lower price than their box store competitors.

“People perceive Lowe’s or Home Depot to be cheaper than we are, but it’s actually the opposite,” says Dollar, who keeps three local warehouses filled

According to him, the appliance industry did not take a hit during the pandemic compared to other industries. In fact, his business actually tripled during the course of the pandemic.

If you’re lucky enough to have a house full of folks this holiday season, you’re lucky enough. Whether it’s a day or two before Thanksgiving, the week between Christmas and New Year’s, or even well into January for a late celebration when everyone can get together, feeding the masses doesn’t have to feel daunting. And remember, you don’t have to do it all alone! Get those guests in the kitchen to help and enjoy visiting while you prepare the meal together.

Slow Cooker Split Pea & Ham Soup 16 oz dried split peas (about 2 cups) 1 1/2 lb ham bone 3 carrots, diced 1 yellow onion, diced 1 shallot, diced 2 stalks celery, diced 3 cloves garlic, minced 1 tsp dried thyme 1/2 tsp ground black pepper 1 bay leaf 6 cups low sodium chicken stock

In the bowl of a crock pot, combine the split peas, carrots, yellow onion, shallot, celery, garlic, thyme, pepper, bay leaf, and chicken stock. Mix well.

Add the ham bone on top and nestle into the contents of the slow cooker. Cover and cook on low for 5-6 hours, or until ham is tender and easily pulls off the bone. Remove the ham and shred into bite-size pieces using two forks, then return the ham meat to the slow cooker, and discard the bone. Remove the bay leaf and serve. Great with corn muffins!

Boneless Short Rib Cottage Pie Potatoes 3 lbs russet potatoes (4 large), peeled and cut into 1 1/2-inch pieces 1/2 cup heavy cream 1/4 cup milk 4 tbsp butter, cubed 1 cup (4 oz) shredded Swiss (or regular Gruyère cheese), divided 3/4 tsp salt Beef and Vegetables 2 lbs. boneless beef short ribs trimmed and cut in 1-inch pieces 1 1/2 tsp salt 1/2 tsp ground black pepper 3 tbsp olive oil, divided 1 large onion, diced 1 cup diced carrot 1 cup diced celery 2 tbsp flour 4 cloves garlic, minced 1 14.5 oz can fire roasted diced tomatoes, undrained 2 tbsp low sodium soy sauce 1 tbsp ketchup 1/2 teaspoon chili powder 1/4 tsp each dried oregano, dried parsley, paprika, salt, pepper 1/4 cup heavy whipping cream Garnish chopped fresh parsley

Beef: Preheat oven to 325 degrees.

Spray 13x9-inch glass baking dish with cooking spray. Set aside. After trimming beef, toss with 1 1/2 teaspoons salt and 1/2 teaspoon pepper while still on the cutting board. Heat 2 tablespoons oil over medium high heat in a large skillet.

Add beef and cook undisturbed for 3-5 minutes to brown on one side.

Continue to cook, while stirring, for 5-7 minutes until nicely browned all over. Remove beef with a slotted spoon to baking dish and spread in a single layer. Cover and bake for 30 minutes. Pour remaining juices from skillet into a 1 cup measuring cup.

Add enough water to equal one cup of “reserved juices.” Set aside.

Vegetables: Add remaining 1 tablespoon oil to now empty skillet and heat over medium high heat.

Add onions, carrot and celery; cook 5 minutes, stirring frequently.

Sprinkle in flour and cook 1 1/2 minutes while stirring. Add garlic and cook 30 seconds. Stir in the 1 cup reserved juices, tomatoes, soy sauce, ketchup and all remaining seasonings/spices. Bring to a boil, then reduce to a simmer until thickened and most of the liquid is absorbed, about 10-15 minutes, stirring occasionally. Stir in 1/4 cup heavy cream. Set aside.

Potatoes: While vegetables are simmering, add potatoes to a large 5-quart sauté pan/skillet and add water until it reaches about 1 inch up the sides. Season with 1/2 teaspoon salt. Cover and bring to a boil then reduce heat to low. Simmer for 10-15 minutes or until very tender; drain. Add potatoes to bowl of electric or handheld mixer.

Heat butter, heavy cream and milk for 1 1/2 minutes. Slowly stream heated butter/cream mixture into potatoes while beating until light and fluffy (but do not overbeat). Stir in 1/2 cup cheese and 3/4 teaspoons salt. Set aside.

Assemble: After meat has baked 30 minutes, remove from oven and increase oven temperature to 425 degrees. Spread vegetable mixture evenly over beef in baking dish. Spoon potato mixture over vegetable mixture; spread evenly.

Sprinkle with remaining 1/2 cup of cheese.

Bake at 425 uncovered for 30-35 minutes or until beef is tender and top of potatoes are golden. Remove from oven and let sit 10 minutes to set before serving. Top with freshly grated parsley.

White Pesto Spinach Lasagna 2 tbsp extra virgin olive oil 6 tbsp salted butter 12 oz wild mushrooms, roughly torn kosher salt and pepper 2 cloves garlic, minced or grated 1 tsp dried oregano 1/4 cup all-purpose flour 2 cups whole milk 2 cups vegetable broth 2 cups shredded Emmi Raclette (provolone or fontina can be used) 1 cup grated parmesan cheese 2 cups whole milk ricotta cheese 2 (10 oz) packages frozen spinach, thawed and drained 1/2 cup basil pesto, homemade or store-bought 1 box no-boil lasagna noodles

Preheat the oven to 350 degrees.

Grease a 9x13 inch pan. Heat the olive oil in a large skillet over medium heat. When the oil shimmers, add the mushrooms and season with salt and pepper.

Cook undisturbed for 5 minutes or until golden, stir and continue cooking until the mushrooms have caramelized, 3-5 minutes. Remove the mushrooms from the skillet to a plate on the side.

Add the butter, garlic, oregano, salt, and pepper and cook 30 seconds or until fragrant. Whisk in the flour and cook for about 1 minute. Add the milk and broth. Bring to a boil and stir for 1 minute. Remove from heat and stir in the Raclette cheese and 1/2 cup of parmesan cheese. Stir until the cheese is fully melted and

the sauce is smooth. Set the cheese sauce aside.

In a medium bowl combine the ricotta, spinach, and pesto. Spread 1/4 of the cheese sauce in the bottom of the prepared baking dish.

Top with 3-4 lasagna sheets. Spread with 1/2 the ricotta cheese mixture, another 1/4 of the cheese sauce, and half of the mushrooms. Place another 3-4 lasagna noodles on top and then top with the remaining ricotta cheese mixture, another 1/4 of the cheese sauce, and the remaining mushrooms. Add the remaining lasagna noodles and pour the remaining cheese sauce over top. Top with a 1/2 cup of parmesan cheese. Bake uncovered for 45 minutes or until the top has bubbled up and browned a bit. Let stand 10 minutes before serving.

Beautiful Healing WITH FELICIA DILBERT

I

n the crisp autumn air of late October 2023, I experienced the gentle embrace of Sanctuary Clinics nestled in the heart of Monticello, Florida. I felt a profound sense of peace as I ascended each step, sensing that this day was crafted with delicate care, tailored for weary hearts truly needing sacred rest. It felt, in every way, unique to the divine.

I stood before a circle of remarkable women, ages 18 to 73. Twelve courageous souls gazed at me, their eyes conveying the silent depths of struggle. Trying had become their weary companion, an exhausting familiarity. Each woman silently acknowledged that Sanctuary Clinics held a custom-made key, a solution they had yet to find elsewhere, with access to a team of wise, vetted

professionals and anointed spiritual directors equipped to care for them.

I felt so happy as I prepared to teach my six-hour Beautiful Healing Circle Curriculum. I recalled that these were the same truths that were revealed to me three months after my mother died. And here I was today, six years later, watching these exact words give life, usher healing tears up and out of hurting hearts, and bearing witness to unspoken burdens released. Our connection transcended mere words: It delved into the profound understanding of life’s deepest traumas and their toll on the soul. On that fateful day, we embarked on a profound journey of healing and hope, a united longing to experience the promises ahead while celebrating the divine light within us.

With Thoreau’s wisdom echoing in my heart— ”It’s not what you look at that matters; it’s what

you see.”—I shared the essence of my bestselling book, Beautiful Healing, Volume 1: Seven Love Letters for the Truth Seeker’s Soul. To these women, it became more than just a book; it transformed into a guiding light, leading them toward the profound truth: Beautiful Healing resides in the space between tragedy and restoration. Not everyone can grasp this truth.

However, these women could. It was as if I penned those love letters just for them.

A young woman (completely covered in blankets) began participating in an affirming activity in the back left corner of the room. As the morning passed, I noticed she had removed one of the blankets. After lunch, she shed more layers of her metaphorical cocoon until the blankets were completely off. The scarf was next to go, and eventually the wool cap disappeared, unveiling her precious face. This transformation was the result of feeling safe, seen, and heard.

Throughout the rest of the day, we laughed, cried, and celebrated personal growth and victories. We communed while listening to worship music, enjoying delicious food (compliments to the chefs), and embracing profound teachings rooted in righteousness. Beautiful Healing transformed from a mere curriculum into a way of life, a path to rediscover worth and ignite the power to embrace the strength within.

Every woman experienced a metamorphosis that day, me included. That sacred time was nothing short of miraculous, a testament to the power women harness when surrounded by safety, validation, and unwavering love. This extraordinary experience was made possible by the kindness of Beth Burns, a mentor and friend of two decades.

Her steadfast belief in my abilities warmed my heart and fueled my passion, leading me to Dr. David Hoskins, the founder of Sanctuary Clinics.

As we stand on the threshold of a new year, please reflect on the lessons of 2023. It has been a long, winding journey. Allow yourself the space to breathe, rest, and marvel at a blank page’s beauty.

Embrace this season with open arms and a positive spirit. Settle your mind through journaling. A journal can be a haven, your own sanctuary, where your thoughts flow freely without judgment. Take

the limits off and let that creativity flow, sis! Or, perhaps, lose track of time by diving into a good book.

he Diamond T Store at Thomasville High School raises money for students in the Career, Technical, Agricultural Education program as well as JROTC programs. Last year, they were also able to give a scholarship to a graduating senior pursuing a degree in nursing. Their goal is to increase the number of scholarships they award each year from proceeds earned from the school store.

Students in various student organizations are able to work in the store and directly earn money for their program to be able to attend regional and state events. They also have a Thomasville High School Facebook page where the community can see new items as they arrive and find current store hours.

Available to the public as well as students, the store is generally open every afternoon from 3-3:30pm and Fridays from 3-5:30pm. They are also open when the athletic department is selling tickets to the football games during the school day. TM

s the holidays come full speed ahead, it’s easy to get overwhelmed and put yourself, especially your wellness, last. Here is your chance to take your health by the horns this season so you can really enjoy the holidays.

Imagine a Thanksgiving-to-New Year’s where you maintain or even lose weight and not get run down or sick because of your compromised immune system (more on this later). Follow these tips and I can almost guarantee you’ll enter the New Year feeling ready and prepared. Hello, goals!

TIP #1 MOVE Of course, you guessed it. The first tip is to get moving! Aim for at least 20 to 30 minutes a day, five days a week. Get outside and soak up some vitamin D, which will help boost your immune system and your mood and build stronger muscles and bones. If walking is the only exercise in your wheelhouse, then walk away. Try picking up the pace and/or going farther to reap extra benefits. According to the Mayo Clinic, walking is known to help maintain a healthy weight and lose body fat, improve cardiovascular fitness, increase energy levels, strengthen your immune

system, and improve your mood, cognition, memory and sleep.

Lift something heavy. Building strength is crucial for maintaining a strong metabolism since it increases lean muscle mass. Muscle mass plays a significant role in maintaining a healthy weight, which is exactly what we want to do over the holidays. Whether it’s weightlifting machines, dumbbells, kettlebells, or your own body weight, strength training is one of the best ways to maintain a strong metabolism and prevent your weight from fluctuating. Strength training can also help with insulin sensitivity, aka blood sugar control, so your body can handle eating Grandma’s famous pumpkin pie without gaining weight.

TIP #2 BALANCE BLOOD SUGAR Maintaining a healthy blood sugar or blood glucose level is crucial for your health no matter what time of year it is. High blood sugar levels, or “riding the blood sugar roller coaster,” for an extended period can cause a lot of health problems. Elevated blood sugar can lead to prediabetes, diabetes, metabolic syndrome or insulin resistance and causes serious often preventable side effects. For the sake of this article, we will focus on fatigue and weight gain.

To put it plainly, elevated blood sugar is a major contributor to why people gain weight and feel tired, especially over the holidays. So how do we keep our blood sugar under control without denying ourselves some yummy food we only get once a year? Here are some helpful tricks that you can apply to any luncheon, dinner or party not only during the holidays but all year round.

TIP #3 EAT IN ORDER The order of how you eat your food matters. Aim for eating vegetables first, protein second, fat third, carbs/desserts last. The vegetables and protein will help slow down how quickly your body absorbs the sugar. When levels rise and drop

quickly, we tend to overeat and grab for more sugary foods, and the cycle repeats. Before you go to your next holiday party, eat a serving of vegetables and enjoy stabilized sugar levels which helps keep your waistline slim and your energy levels high.

TIP #4 MOVE Move after you eat. Really, this again? Yes, this again! If you can move around for just 10 minutes after you eat, your blood sugar levels won’t rise as high. This can be as simple as taking a short walk, doing the dishes, or having a dance party in the living room.

TIP #5 LOSE THE BOOZE This is usually when people tune me out and walk away. But stay with me for a minute. Alcohol has a big negative effect on your metabolism and energy—two things we want to increase

and make your waistline grow. There’s a scientific reason for the catch phrase “Beer Belly!”

Since your liver has to work much harder to eliminate toxic chemicals from your body, your immune system becomes compromised and inflammation rises. On to the next section, where you will see how alcohol also affects sleep.

Which means all those extra calories you’re getting at the holiday Christmas party are now being stored as fat. Those yummy cocktails and craft beers also disrupt your body’s ability to process carbohydrates. Remember how we talked about glucose levels earlier? Those glucose molecules get trapped in your bloodstream, causing high blood sugar levels, which damage your body

TIP #6 SLEEP Ahhh…sleep. Did you know that just one night of disrupted sleep can have a negative effect on not only your mood and memory but metabolism and glucose levels?

So, imagine what happens to your body when it is chronically in sleep deprivation mode. The effects are not pretty: immune system failure, diabetes, cancer, obesity, depression, and memory loss.

Once again, for the sake of this article, let’s focus on weight loss. A study published in the Canadian Medical Association Journal showed that sleep deprivation is directly related to an inability to lose weight. Several other studies have also indicated that sleep deprivation affects your food choices going into the next day. Sleepdeprived individuals tend to choose foods that are high in calories and carbohydrates, which

REM (your deepest sleep stage) sleep is significantly disrupted by alcohol being in your system. Want to still enjoy your drinks?

Have a booze curfew of at least a couple hours before bed, followed by water, so the alcohol can get out of your system before you go shut-eye for the night. Unfortunately, it’s true that alcohol does help you fall asleep fast, but it does not help you sleep well.

Entering the holidays with knowledge is power. Knowing how each of these areas of your life is affecting your quality of life is one step closer to living a healthy lifestyle.

Pick and choose what you will focus on daily to not get overwhelmed. Ask a friend to stay sober with you at a party. Dance with your kids. Turn off the TV and get some quality sleep. Your body, mood, energy and waistline will thank you! TM

December 4 Downtown Christmas Parade The Annual Thomasville Downtown Christmas Parade is hosted by Thomasville YMCA and ThomasvilleThomas County Recreation Department. Parade begins at 6:30pm.

December 5 Tree of Lights Donors, families and the community are invited to the lighting of the living tree—a ceremony that heralds the beginning of the holiday season and offers a celebration of life and remembrance for attendees. 6pm, front lawn of Archbold Memorial Hospital on Gordon Avenue.

December 8-10 & 16-17 TOSAC Christmas Performance Thomasville on Stage and Company presents The Best Christmas Pageant Ever. In this

hilarious Christmas classic, a couple struggling to put on a church Christmas pageant is faced with casting the Herdman kids, the most inventively awful kids in history. You won’t believe the mayhem—and the fun—when the Herdmans collide with the Christmas story head on.

Fun for the whole family. Shows are at 7pm on December 8, 9 and 16; 2pm on December 9-10 and 16-17.

6-10pm December 14-15 Victorian Christmas Journey into the past as Thomasville’s turn-of-the-century downtown ushers you into the spirit of Christmas long ago with the 36th Annual Victorian Christmas.

Stroll the bricks and be entertained by performers, carolers, and musicians. Shop, dine, and welcome the holiday season in Downtown Thomasville! Victorian Christmas is a two-night event, and both nights will feature: live reindeer, carriage rides, a live nativity presented by First Baptist Church, visits with St. Nick, marshmallow toasting, chestnut roasting, live entertainment on The Ritz Amphitheater stage, delicious food vendors of all types, and more!

Traveling Art Exhbition PEBBLE HILL PLANTATION

Pebble Hill Plantation recently hosted the opening reception for Identity & Restraint: Art of the Dog Collar, an innovative traveling exhibition developed in partnership between the National Sporting Library & Museum (NSLM) and The American Kennel Club (AKC) Museum of the Dog in New York, NY. It’s on display through May 11, 2024.

IN THOMASVILLE! Dr. Bryan Spooner graduated from Liberty University inHORIZONTAL 1992 with a bachelor’s of Podiatric LOGO in biology. He earned his Doctor SECONDARY LOGO’s Medicine degree from the University of Osteopathic Medicine & Health Sciences, where he was a member of the Pi Delta Podiatry National Honor Society in 1997. He completed his two-year podiatry residency at Massachusetts General Hospital in Boston.

Dr. Spooner joined Tallahassee Podiatry Associates Foot & Ankle Center in 1999. Board Certified in podiatric surgery by the American Board of Foot & Ankle Surgery, he is also a Fellow of the American College of Foot and Ankle Surgeons.

Born in Augusta and raised in Jacksonville, Florida, he says starting a practice in Thomasville feels like a homecoming.
