Starr Boggs Remembered by Friends and Family

tarr Boggs, the iconic chef restaurateur, whose four decades eponymous restaurants were the most sought after dining experience in the Westhampton, died this spring at the age of 70, barely a month after selling his final restaurant. Boggs was remembered by friends and family as the consummate chef, owner and friend whose skills in the kitchen were equally matched by his kindness and generosity to his patrons and the community. Ralph Starr Boggs was born on November 9, 1951 in Onancock, Virginia to Ralph and Betty Boggs and grew up on the family farm in Onancock. Dinners were prepared with products that were grown and raised on the farm, or gathered from the Chesapeake Bay nearby. His grandmother, Reaston Boggs, taught him to cook with and to appreciate the quality of fresh, local ingredients.

Starr Boggs is survived by his brother, Joe, wife Kathy and their children Ryan, Tucker and Brooke Martin, and a sister, Dale Bundick and her son Russ, all of Virginia.

A superb Athlete and an honors student, Boggs attended the prestigious College of William & Mary in Williamsburg, Virginia where he played football until a knee injury sidelined his career. Although he never attended culinary school, it was in Williamsburg that he became interested in a career in the restaurant business, and he took

a job in the kitchen of the historic Williamsburg Inn. After college he worked in restaurants in Virginia, Florida and Nantucket before landing a job as head chef at The Restaurant in the Inn at Quogue in l981 at the young age 29 years. A year later, he partnered with the Inn at Quogue’s owner, Susie McAllister, to open The Patio Restaurant in Westhampton Beach. The first review of the new restaurant by longtime Newsday food critic Peter Gianotti was simply “Shining’ and Gianotti remained a fan of Boggs throughout his career, giving him the top 4-star rating in each iteration. Besides his love of food, Starr was an avid golfer and loved fishing, sailing and music.

“Starr had a philosophy about food. You buy the best ingredients and you take care of them when you cook them,” said Frank Lucas, the longtime Starr Boggs chef de cuisine and friend. “With his staff he expected them to work hard and to care. You have to care, not just show up. He did and so did they, and he loved them and respected them for it, and they loved him and respected him too”.

ong Island, as well all know, is a special place for many reasons. Whether it’s time spent in the Hamptons, enjoying the outdoors, or catching those incredible days at our ocean beaches, not much can compare to a perfect day out-east.

Another fascinating aspect of Long Island is it’s world-class fishing. Even if you aren’t a fisher, enjoying local Long Island Seafood is an opportunity not to be missed. We are in a special place; the Labrador Current draws cold water species down from the North off of our shores, and the Gulf Stream Current brings Southern species up from the South. These two currents almost create a ballet of advances and releases throughout the year. Along with this ever- performing dance of ocean currents, comes some of the most bountiful, unique and sought after seafood that we are known for around the world. So lets talk about all of these special, and sometimes hidden, local treasures! For starters, what is Calamari? Calamari is another name for Squid, and there are many types throughout the worlds oceans. Here on Long Island, right off of our ocean beaches, we harvest Loligo Squid which happens to be one of the most sought after of all! If you should see a larger local commercial fishing boat meandering within eyesight of the beach in summer, chances are they are harvesting the same Calamari that you would enjoy at Haskell’s Seafood in Westhampton Beach! Haskell’s Seafood is committed to only working with the local landings of Long Island, so it’s actually a sure bet. Not many people visiting Long Island realize there is such an important fishing industry operating among everything else that is happening, and the good news is that the fisheries on Long Island and in the United States are the most carefully regulated and sustainable in the world. OK, what about fin-fish….and what is a “fin-fish” technically? Fin-fish is a very broad definition of all the fish that move through the water using their fins for guidance and propulsion. Some of the popular fin-fish local to Long Island consist of Striped Bass, Fluke, Tuna, Mahi-Mahi, Black Sea Bass and more. At Haskell’s Seafood, we often hear “Wait a minute! I thought Mahi-Mahi comes from Florida!?” Thanks to the Gulf Stream Current mentioned, Mahi-Mahi actually range seasonally from Florida all the way to Long Island as well. Mahi-Mahi, Yellowfin Tuna, Bluefin Tuna, Big Eye Tuna, and even Wahoo, appear off the Long Island shores in deep water in the summer months. Imagine the Gulf Stream Current as the I95 Highway for warm water loving seafoods! And let’s not forget that the Labrador Current deserves the I87 Highway credit for all the cold water loving seafoods like Codfish, Hake and more. Finally there are those fin-fish that are most comfortable in the middle. Fortunately for us, Striped Bass, Fluke, Weakfish and Porgy tend to appreciate 68 degrees like most Long Islanders seem to keep the air-conditioning set. As mentioned, here on Long Island there is a meeting ground and performance of seafoods coming and going, all able to find a moment of residence, which we fondly refer to as “Seasonality”. If you are starting to wonder if there are more important aspects about local Long Island seafood beyond this incredible seasonal selection, you are absolutely right! Think about how eating food from the place you are in is the most sustainable approach to living. It’s an old way of living that is gaining more and more renewed attention everyday. When we as people “eat local”, we are cutting out a huge amount of energy from the equation

that it takes imported foods to get to us. We shrink the carbon footprint of our food when choosing, for example, local Black Sea Bass fillet over an imported fish from origins we are unsure about. No matter what, far less energy was spent in getting that food to our plate, and it’s something to feel very good about. What about the abundance of seafoods? Long Island and the Untied States have the most closely managed fisheries in the world, so at all times, there are management groups tracking how much fish is being harvested, how robust the stock of each species of fish is, and then adjusting our fishing regulations immediately to ensure that our fish stocks will always have a sustainable future. Some of our seafoods have enormous stocks and may at times be even lesser-known. So let’s talk about some of these fish that may need a formal introduction! A fish that has an enormous stock or bio-mass, that is lesser known, we at Haskell’s Seafood refer to as an “Underutilized Seafood”. These fish include Skate, Smooth Shark, Ling, and some that have gained popularity include Porgy, Weakfish and Triggerfish. So what would be the best way to explore some of these fish? A visit to Haskell’s Seafood in Westhampton Beach and a solid recipe offered can open a world of discovery to ones new favorite fish! Most importantly, education about our local fisheries is really the doorway to new food experiences and engaging in conversations like this one can inspire. Pairing local Porgy fillet with local basil and green vegetables is one of those things that is just incredibly right, and a lot of it has to do with seasonality; they were meant to go together. Finally, the stars of the raw bars, Shellfish and Crustaceans! We are once again blessed with some of the best Clams, Oysters, Mussels, Blue Claw Crabs due to the fact that our bays have tidal and briny ocean water that passes back and forth over them cyclically throughout the day and night. In our Atlantic Ocean, the true meaning of Dry Sea Scallops are harvested and Lobster are potted off the coastal ledges. All we have to do know is recruit a boat or two that would be willing to target the migration of Royal Red Shrimp that pass by the tip of Montauk in April in very deep water, just for a moments time, and we could consistently boast about that too! Much of our fisheries are about telling it’s story. Many of us have our own; growing up and fishing on the bays of Long Island, bringing the catch back to the house for an evening feast with family. It truly is our heritage on Long Island that we are talking about and sharing that story keeps heritage alive and well. We encourage this type of conversation at Haskell’s Seafood which often leads to education passing back and forth, awareness of our surroundings, and a responsible role that is played in the big/small picture of our Local Seafood Landings. I often say to myself, “What better of a life could you live, sharing all of this with others, experiencing the seasonal offerings year after year, and celebrating life on Long Island the same way it has been done for centuries, but doing it today and each day thereafter.” We look forward to all of your visits at Haskell’s Seafood this season and thank YOU for being a part of the big/small picture here on the East End of Long Island! n Antique and Classic Vehicle Show presented by the Westhampton Beach Historical Society jointly with the Vanderbilt Cup Region of the Antique Automobile Club of America (AACA). The Greater Westhampton communities are famous for their Atlantic Ocean white sugar sand beaches on the barrier island known as Dune Road. Which community you live in determines which beaches you can actually access. The Villages of Westhampton Beach, Quogue and West Hampton Dunes each have their own municipal beaches for their village residents while the surrounding hamlets and have fewer free options available to them. In addition to these municipal beaches, there are ample private beach clubs and hotel related accommodations that will offer great beach experiences in the Greater Westhampton communities.

VILLAGE OF WESTHAMPTON BEACH ROGERS BEACH Full-service Main Village Beach Pavilion just south of the Beach Lane Bridge is complete with public restrooms, snack bar concession, changing rooms with lockers as well as both indoor and outdoor showers. Lifeguards are on duty during summer season. LASHLEY BEACH @ JETTY 4 Limited-service Village Beach Pavilion with public restrooms and outdoor showers. This is a preferred local surf spot with a more relaxed atmosphere also with lifeguards on duty during the summer season. Both of these Village of Westhampton Beach locations maintain parking lots and are accessible by permit for Village residents at no cost. Non-resident beach stickers may be obtained at the Municipal Building on Fridays between the hours of 4-7pm, and Saturdays from 9am to 1pm. The Village extends beach privileges as a courtesy to taxpayers and year-round residents residing in the hamlets of Westhampton, Quiogue, Remsenburg and Speonk for a fee. Summer renters inside the Incorporated Village’s boundaries may obtain beach privileges for a fee. VILLAGE OF WEST HAMPTON DUNES The beaches of the Village of West Hampton Dunes have had the honor of being designated as one of the top best restored beach in the United States following years of both short-term and long-term re-nourishment. Access to the Atlantic Ocean beach via a series of boardwalks over the dunes throughout the village. Lifeguards are not provided and at no time is random parking permitted on Dune Road for public beach access. PIKE’S BEACH This Town of Southampton limited service beach located in the Village of West Hampton Dunes is operational for residents and leaseholders within the Town of Southampton as well as non-residents. It was opened in the late 1990s after having been closed for more than 10 years. This 400 foot beach offers lifeguard supervised swimming, sunbathing, and bathroom facilities. Lifeguard on duty between 10 am and 5 pm. Parking Fee: Charged 10 am to 5 pm. A permit is required 7 days a week from June 1st through September 15. Seasonal Beach Fees for Southampton Town Residents $30 / Vehicle, Senior Residents $20 / Vehicle, Non-Resident $225 / Vehicle and NON-RESIDENT DAILY PASSES $20 / per day. Entering its 30th year as the Incorporated Village of West Hampton Dunes, Mayor Gary Vegliante, takes much pride in the village that has blossomed into a thriving and vibrant coastal community over these past 3 decades. West Hampton Dunes represents a blueprint for coastal hazard management and habitat enrichment. At one time, West Hampton Dunes was the poster child of what could go wrong with a project. Today, it is a lesson in successful partnership and coastal management. Over three decades, nature did its best to wash the entire barrier island into the sea, and political forces worked to block the heroic effort needed to prevent complete devastation. But the group of neighbors who founded the village on a tattered strip of sand can take pride in the power of will and sheer determination. As a result, visitors from all over can continue to enjoy all the beauty and white sands of the public beaches on Dune Road for years to come.

The shoreline of what is now the Incorporated Village of West Hampton Dunes has experienced increased erosion since the construction of a groin field to the east of the Village boundary. The erosion eventually led to a breach in the barrier island in 1992, and in loss of private property. West Hampton Dunes is a small village on the south shore of Long Island, New York, located entirely along the barrier island separating the Atlantic Ocean and Moriches Bay. The Village comprises 342 properties bordering Dune Road and three miles of roadway that traverses the barrier beach. The Village extends approximately two miles eastward from Cupsogue County Park on the eastside of Moriches Inlet.

Michael Paraskevas has been an illustrator since graduating from The School of Visual Arts in 1984. He then went on to receive his MFA from SVA in 1986. He’s worked for most major magazines including Sports Illustrated, Time, Town & Country, New York Magazine and Rolling Stone, to name but a few. Michael Paraskevas has also illustrated and written 24 children’s books over the years with his mother, Betty. The two went on to create and write the animated television series Maggie and the Ferocious Beast for Nickelodeon. Two of their other books were also made into animated series: Marvin the Tap-Dancing Horse for PBS and Kids from Room 402 for Fox Family.

Betty passed away in 2010 and Mickey continues to work on animated projects for a variety of companies. His large-scale beach paintings have sold all over the world through various galleries in the Hamptons. Michael Paraskevas works in acrylic, oil, watercolor or whatever the mood suits him at the moment. He also works digitally since the demands of the current illustration market requires quickness and the ability to change things at the last minute.

Westhampton Free Library The Westhampton Free Library is celebrating 125 years as your community center, providing a wide spectrum of programs and services to meet the needs of our population in a safe, socially distanced atmosphere. In other words, the library is your hub for entertainment, information, and technology resources. There is always something happening at our beautifully renovated Westhampton Free Library. The recent renovation project included the conversion of 2,500 square feet of unused space into usable space. Our children’s program room was expanded, and our main floor was reconfigured to accommodate a more efficient flow, additional book stacks, and a quiet study room. Adults can learn about everything from history to travel as part of our ongoing Library Discussion series. They can also participate in our writers’ groups or join our book discussion groups. This summer, we are also hosting our annual Monday Night Movies on the Great Lawn. Our health and exercise classes, some offered virtually and others at the beach or in the library, include Senior Total Fitness, Zumba Gold, Yoga, Chair Yoga, and Pilates. Children can make discoveries in our second-floor Idea Place. Programming for children and families includes story time, reading clubs, music and movement classes for toddlers, cooking classes, craft workshops, and much more. You can also visit the Tween Scene that’s reserved just for kids ages 10-12. In our Teen space, young adults can read, play video games, watch movies, and visit with friends. The library has something to offer everyone at any age. Our collection is diverse. Throughout the library, you will find DVDs, video games, magazines, newspapers, graphic novels, and, of course, lots of books. Our patrons also have access to an extensive collection of e-books and audiobooks that can be downloaded onto smartphones, laptops, and tablets. If you are having trouble figuring out how to use your personal electronic device, then visit our Library Geeks at our Inspiration Bar – the hours are available in the library newsletter. Continue your education through Universal Class, which offers over 500 online classes, all from the comfort of your own computer and on your own time schedule. The Westhampton Free Library has been the community’s educational hub since it opened its doors in March of 1897 with a charter granted by the State of New York and signed by Melvil Dewey, creator of the Dewey Decimal System. In 1951, our original Library Avenue building opened and served the community for more than 100 years, providing generations of families with books, music, and programming. In June 2010, our new state-of-the-art library opened its doors to the residents of Westhampton, Westhampton Beach, Quogue, East Moriches, East Quogue, Eastport, Remsenburg, and Speonk. Our library is beautiful and environmentally responsible. The renovated building features efficient lighting, occupancy sensors, high-efficiency heating and air conditioning units, plumbing that reduces water usage by 45%, and solar panels that generate 8% of our energy. The Westhampton Free Library is a special place where families can come together to learn, read, or just have fun. This summer, we will offer hundreds of programs. Fill out our What Should I Read Next form, and we’ll put together a bundle just for you. •Hold My Spot: Hold My Spot allows devoted fans of certain authors to have a copy of new books automatically placed on hold. Fill out the form and pick as many authors from the list as you like. When your chosen author(s) publishes a new book, a hold will be placed on it for you automatically! Each time an author publishes a new book, the order of the hold will be randomized to ensure that all participating patrons have an equal chance to be first in line. •Chat Reference Services: Looking for an easy way to ask a question? Ann Skovek Seed Library

In honor of Ann Skovek, who left a generous donation to the library, we are offering our Seed Library once again to card-holding library patrons. Patrons can stop by the library’s Reference Desk to “check out” an array of seed packets that are hand-stamped and come complete with growing instructions. Available seeds include calendulas, cosmos, parsley, summer and winter squash, and more! Limited to four seed packets each month, per household.

We will read six books, practice book trivia, have weekly meetings, and then compete against other Suffolk County libraries in August for the title of Battle Champions!
