The 50-year journey of the Mid-Atlantic Center for the Arts & Humanities (MAC) began in 1970 when a small group of dedicated neighbors joined together to save the 1879 Emlen Physick Estate from the wrecker’s ball. Over the years, the organization’s efforts have continued, restoring and opening both the Cape May Lighthouse and the World War II Lookout Tower.

Those years also included thousands of special events and tours, all of which contributed to make Cape May MAC Cape May’s leader in heritage tourism, educational outreach, historic preservation and cultural enrichment.

A hidden treasure in the heart of Cape May City Located next to Cape May City Hall, the Colonial House (c 1730), was originally a tavern and the family home of Revolutionary War Patriot Memucan Hughes. The front room features a tavern room. Other rooms open to the public in this unsung survivor from Cape Island’s very beginning depict a colonial era cooking/eating room. A fine example of vernacular architecture and colonial living back in the days.

History of the Light Cape May’s lighthouse is actually the third beacon to be constructed in the Cape May Point area. The first was built in 1823 and stood 70 feet tall atop a stone foundation, a little over a quarter mile to the southwest from the present lighthouse. That original tower lasted just 24 years before erosion threatened to topple it, with the ocean surrounding the lighthouse at high tide. The site is completely submerged off the coast of Cape May Point.

A replacement was hastily built in 1847, about a tenth of a mile south of the current light. The second lighthouse was 78 feet tall, standing on what was then a small hill. Many corners were cut during construction to get it operational as soon as possible and structural problems were apparent almost immediately, Just 12 years later, it was decommissioned and replaced by the lighthouse we know today.

In 1859, after two years of work by

the Army Corps of Engineers at a cost of $40,000 ($1,215,162 in today’s dollars, according to the Consumer Price Index), a brand-new Cape May Lighthouse was first lit on Halloween night. At 157.5 feet tall, the new tower dwarfed the earlier two and its light could be seen up to 19 miles away. It was equipped with a kerosene lantern and first-order Fresnel lens, which rotated continuously and created a sweeping light that flashed every 30 seconds.

That original kerosene lantern would be replaced with a Funck hydraulic float lamp in 1878, an oil vapor lamp in 1902, a 250-watt electric lightbulb in 1932 and, following the removal of the original Fresnel lens in 1946, a 36-inch rotating directional code beacon with a 1,000-watt lightbulb. The flash pattern was adjusted to every 15 seconds with the new beacon and when that too was replaced with a VRB-25 lamp in 2017 (following a lightning strike that

caused irreparable damage) the LEDs were programmed to retain the same 15-second flash.

Cape May’s lighthouse was listed on the National Register of Historic Places in 1973 and, though the Coast Guard still maintains the beacon as a navigational aid, the remainder of the lighthouse and grounds have been open to the general public since May of 1988.

Since that time, nearly 3 million people have visited the lighthouse and climbed to the top. A great thanks is owed to the Mid-Atlantic Center for the Arts & Humanities, which leased the property from the State of New Jersey, restored the lighthouse and added several safety enhancements.

Cleaning the lens was just one of the many jobs of a Lighthouse Keeper.

Lighthouses are classified according to the size and brightness of the lights.

This was called their “orders.” There are six sizes (orders) of lighthouse lights.

The first “order’ is the largest and brightest and the sixth is the smallest. The Cape May Lighthouse’s original 1st Order Fresnel lens is on display at the Museum of Cape May County in Cape May Court House.

Frances Ralston and her son, Dr. Emlen Physick, were not at all unfamiliar with Cape May when they chose to live here. It had been a favorite summer vacation spot for Emlen Physick, Sr., Mary Frances, and their son, Emlen. And Frances continued to summer here following Mr. Ralston’s death.

It was said that they often rented part of the Daniel Ware house and became good friends with the Ware family.

During Emlen’s youth and early adulthood, the Cape May Harbor didn’t exist, but was a series of inlets and marshes waiting to be explored. Maurice

Brooks recalled that Frances wouldn’t allow Emlen to have a row boat until he learned to swim. When he did, Maurice’s great grandfather, Daniel Ware, then built Emlen a row boat which he used in New England Creek.

Emlen and Frank Leach were close friends and the same age.

Frank kept diaries from 1870 to 1881, the years when he and Emlen were ages 15 to 26. Their friendship lasted for 45 years until Emlen’s death in 1916. We are lucky to have some information from Frank’s diaries about their close friendship.

Eggs over easy?

The children of Mary Jo Brooks, who was Dr, Physick’s heir, have given us a wonderful group of Dr. P’s belongings over the years. Among them is a silver-plate egg warmer in the shape of an egg.

Victorians loved specialized serving dishes.

Majolica asparagus servers in the shape of asparagus spears, oyster dishes in the shape of oyster shells, cheese domes in the shape of a wedge of cheese with an attendant mouse, and this, an egg warmer in the shape of an egg. The eggs would be hard-or-soft cooked, then placed in a rack inside the server, with water in the bottom of the well. A tiny alcohol burner would keep the water and the eggs

warm through a breakfast.

As you may remember from Victorian and Edwardian period television shows and English murder mysteries, while dinner was an elaborate affair with waiters and courses, breakfast was always served as a buffet meal in the late 19th and early 20th centuries. This allowed house guests who were up late carousing to come down to breakfast when they wanted. They could also choose to eat whatever suited their hangovers. While Dr. Physick seems to have led a very moderate and sober life, the tradition of buffet breakfasts probably extended to this house, as well.

Beating the heat With Memorial Day behind us, it won’t be too long before we’ll all be complaining about the heat. Before you crank up the air conditioning, stop and think what it must have been like in Victorian Cape May. Before air conditioning, Victorian life followed seasonal cycles determined by the weather. Not surprisingly, workers’ productivity declined in direct proportion to the heat and humidity outside – on the hottest days, employees left work early and businesses shut their doors.

Stores and theaters also closed down, unable to accommodate large groups of people in their stifling interiors. Cities emptied as people fled to the mountains and the seashore.

Architects designed homes to maximize airflow in hopes that the occupants would be kept cool. High ceilings were not just decorative, but also allowed a space for hot air to go. As the hot air rose, people on the floor stayed cooler. Coupled with large pocket windows, like those you can see at the Physick House Museum, that rose all the way into the walls above, high ceilings promoted airflow that kept air moving through each room. Adjoining rooms were yet another way to improve air circulation. All the rooms in the living areas of the Physick House join those next to them.

A wide, covered porch also helped

to keep the Victorian house comfortable. As air passed under the covered porch, it was shielded enough from the sun to drop a few degrees. By the time the air passed into the house, it was much cooler than the air outside.

Shutters and shades were

also employed to keep the house cool. Louvered shutters, like we find on the Physick House, allowed air to pass through but kept out the heat of the sun. Often, shutters and shades were opened and closed throughout the day as the sun moved around the house. Many a maid was probably kept busy as she traveled from room to room adjusting the shutters to keep out the sun.

Before window screens, summertime must have been a horrendous experience. Open windows did allow the air to flow through the house, but also left the occupants of the house open to attack from every gnat, mosquito and no-see-um on the planet. Window screens solved that problem.

was available in the United Sates by the 1870s. As the benefits of wire screening became evident, manufacturers turned out patented screens of every design. There were expandable screens, hinged screens, sliding screens and spring framed screens. These screens were available in numerous types of wood including rosewood, mahogany, and pine. Here at the Physick House, the family opted for sliding screens. If you look at the window screens carefully, you’ll see that they can be slid up and down on a wooden track, which holds the screen close to the open window.

Sliding screens meant that the maid could simply slide the screen out of the way as she adjusted the exterior shutter to block the hot sunlight from entering the house.

Since those early iron or steel screens would quickly rust to pieces (especially near the ocean) it was cus-

tomary to paint them. Typically, screens were painted either green or black depending on the wishes of the mistress of the house.

Remember, too, that Victorian ladies (and gentlemen) were not sitting around in T-shirts and shorts, but rather in stifling layers of clothing, including those confining undergarments.

Dr. Physick’s library For the Victorians, a well-developed home library was a sign of culture and education. Popular topics included travel, archaeological expeditions, Colonial history, selfimprovement, domestic advice and serialized fiction. With the rise of mechanized printing and cheap pulp paper, inexpensive books made reading a national pastime in the Victorian Era. A 1935 probate inventory of the Physick Estate shows that the Physick family shared the Victorian love of reading. The Physicks owned many classics by such authors as Thackeray, Tennyson and Shakespeare,

as well as books reflecting their particular interests, such as “The Dog in Health and Disease” and “Every Horse Owner’s Cyclopedia.”

Hat etiquette Top Hat Thomas M. Seeds, Date: c. 1895 Thomas M. Seeds was a native Philadelphian. His father was a hatter who began teaching Thomas the trade at a young age. By the time he was 20, Thomas was making and selling hats.

According to an 1868 advertisement, Seeds’ hats were “made to order.”

Thomas Seeds passed away in 1898 having been in the hat business for almost half a century.

In Victorian American culture, wearing a hat was a must. An old adage at the time was “only a beggar goes round bareheaded.” There were many rules governing gentlemen and their hats. According to Rules of Etiquette & Home Culture (1893), for example, “in bowing to a lady a gentleman should remove his hat with the hand furthest from her. One gentleman does not re-

move his hat when bowing to another gentleman, unless the latter is much older than himself.”

In addition to this top hat, Dr. Physick also owned one made by the Stetson Company. Although that hat is not in the Physick Estate Collection, we do have the box from 1913 in which it was shipped.

Time for ice cream To the Victorians, ice cream was associated with the elite and wealthy. Ice cream’s necessary ingredients: cream, milk, white sugar, and flavorings, were fairly expensive and therefore the dessert was only enjoyed by those who could afford it.

The other luxury item needed to make ice cream was time. A cook needed time to crush the ice and the sugar, time to infuse and distill essences, extracts, and other flavorings, time to prepare the ice cream mixture, time to churn it (this was done by hand without the aid of an ice cream maker), and time to let it freeze.

Around 1850, a mechanical, handcranked ice cream freezer became available. The freezer consisted of a tin container with an inner beater, which rested inside a large wooden tub that had a drainage hole for the melted ice.

Although the ice cream freezers

lessened the hassle of making the dessert, it didn’t entirely eliminate it. Many people chose to purchase their ice cream from local ice cream saloons or parlors. A serving of ice cream at the ice cream parlor cost about six cents. Typically, local parlors made their ice cream on the premises, however, some were supplied by large ice cream factories.

George Schmidt’s factory in Jersey City is a fairly typical example of a larger organization. Schmidt’s factory produced several flavors including vanilla, lemon, chocolate and strawberry.

Ice cream’s popularity in the Victorian Era was two-fold. It not only was a refreshing treat on a hot summer day but ice cream also spoke of the upper class that was, until recently, the only class able to enjoy the confection. Ice cream was still viewed as a luxury that proclaimed to one and all that you enjoyed the good life.

Pack up the pic-nic For most picnickers in today’s world, these outings call for paper plates, paper cups, thermos bottles, coolers, plenty of ice, and as many convenience foods as possible. The world in the Victorian era was vastly different. The picnic (hyphenated, as it was in 1880s issues of the Cape May Wave) was indeed a moveable feast, and was a heavy load for family and servants to carry.

In an era before plastic bottles and paper plates, picnic accoutrements were the “real thing: china plates, real glassware, metal flatware, earthenware crocks, metal pots and pans, wine bottles, teacups and saucers, etc. If a large number of people were invited, the number of utensils and victuals must have been backbreaking.

The Victorians marked the passing of the summer season with popular community pic-nics to celebrate Decoration Day (a.k.a. Memorial Day), Independence Day, and Labor Day. A typical summer holiday celebration might include attending morning church services or patriotic ceremonies, marking the solemnity or historical nature of the holiday, which would be followed by the whole town’s gathering at a park or green for a pic-nic celebration.

Picnics, as the photography of the period documents, were dress-up times; women might wear one of the stylish lingerie dresses, while men often sported a coat and tie. In 1886 in Cape May, a Decoration Day memorial service was rained out, but the newspaper re60

ported that “the pretty white dresses the girls had ready for Decoration Day will do just as well for the next pic-nic.”

Typical picnic fare could include a simple menu of fried chicken, cornbread, cold salads, beer, lemonade, or root beer, which was touted as the “National Temperance Drink” invented by Philadelphia pharmacist Charles E. Hires.

But, the menu for a large outdoor gathering could also be rather extensive.

Smaller groups of people probably

embarked on these mini-adventures quite often. The Cape May Wave of April 15, 1882 mentions locations on the bay side of the Cape as favorite destinations for “pic-nic excursion parties.”

Of course, small groups of picnickers didn’t necessarily need to travel long distances to enjoy an al fresco feast. Sometimes it was just as pleasant (and much easier!) to enjoy the great outdoors in one’s own back yard. Since home horticulture had become such a popular pastime in the Victorian era, one’s own back yard could become quite the horticultural achievement, filled with fine specimens of trees, plants and flowers finely arranged and manicured.

A dip in the pool Bathing in the ocean prompted fierce discussion among social critics and visitors. One Cape May visitor commented in 1870 about the women he saw who were brave enough to enter the water in their “ridiculous” costumes: “There is nothing more hideous than a woman in that horrible attire, clinging nervously to the life line or clasping her male protector with a death grip while the waves tumble her about.”

When women did enter the water their suits clung to their bodies, revealing far more than any Victorian would have otherwise thought proper.

Writers commented that they were “shocked at the daily spectacle the bathing beach presents.”

Others thought the whole thing titillating. Not only did swimming call attention to women’s bodies by wet clingy fabric, it also exposed parts of women’s bodies not normally seen. One rogue wave could hike up a skirt or throw a woman inappropriately into the arms of a male companion. Take, for example, one vacationer’s observation of women in the surf: “Fat women are seized by the advancing walls of transparent green, foam crested, are whirled round and round like corks, and dashed into the reluctant arms of their old bachelors, who seem horrified at the gifts of fortune.

Manly forms that were proudly defying the coming waves, are suddenly inverted, and nothing is seen of them save wildly agitated pedal extremities.”

Although swimming pools were not a major factor in Victorian recreation, some pools were built in the 19th century. The idea behind their construc-

tion was not only to provide the people with a recreational outlet, but also to give the poor an opportunity to clean themselves. Each municipal pool was equipped with showers and dressing rooms.

A similar “swimming tank” opened at Long Branch, New Jersey in 1890.

The tank could accommodate as many as 200 to 250 people a day and offered a “view room” with “comfortable chairs where a large number of spectators could look down on the swimmers.”

Swimming was beginning to be recognized as a sport; swimming clubs were organized and more and more contests of swimming speed were held.

In 1896, swimming was included in the competition of the first Olympic Games.

Only men were allowed to participate at that time. The first swimming events for women in the Olympics were added in 1912. The Victorian bathing costume was hardly suited to any type of exercise, and as women’s participation in athletics increased, styles eventually became more streamlined which allowed for the freer movement necessary for swimming.

Sit back and relax Morris Style Reclining Chair

C. 1885 The term “Morris chair” today is applied to a large chair that has an adjustable back.

The style of chair is named after its creator, the British designer William Morris (18341896). In 1861, Morris started a business entitled Morris, Marshall, Faulkner & Co. which was later renamed Morris & Co. Morris introduced a revolution in design.

Believing furniture should be hand-crafted and made with traditional techniques, he is credited with being the father of the Arts and Craft movement. Morris-style furniture became very popular from the Victorian Era through the 1930s.

Morris chairs were notable for being able to recline. Unlike recliners today, they were extremely low-tech. The back of the chair hinged onto the bottom of the seat.

A brass bar fitted into a series of notches to control the angle of the back piece.

According to a 1916 probate inventory of the Physick Estate, this reclining chair was in the Library where it remains today.

Plus Fours

Early 20th Century Plus Fours are a type of men’s pants that became popular in America in the early 20th century. Unlike knickerbockers, which ended at the knee, plus fours extend four inches below the knee, hence the name. They were especially popular for playing golf because their bagginess and extra length allowed for greater mobility.

In the Victorian era, middle class Americans began to have more leisure time as a result of the Industrial Revolution. Two “crazes” became popular as well: exercising and nature.

Golf fit in with both of them and became very popular in the United States. Golf was seen as a “moral and healthful exercise.”

Cape May had its own nine-hole golf course which was incorporated on July 29, 1898. One of the charter members was Dr. Emlen Physick, who also served as the club’s first Vice President. According to an article in

the June 17, 1899 edition of the Cape May Wave, there was a golf tournament in which 22 players participated. Dr. Physick finished the tournament in 16th place. He was 20 strokes off the lead. Women were allowed to play at the Cape May Golf Club and even Dr. Physick’s mother, Mrs. Ralston, was an associate member.
