Just a bit of rain

W

hen I was about ten years old, my dad came in from the barn chores one summer day and sat down to breakfast.

“Margie, when you play outside this morning stay around the house as there’s going to be a big storm sometime today.”

“Okay, Dad. How do you know?”

“The radio man was announcing it on the news this morning. He said that rain and wind seemed to be heading toward us here in the Niagara Peninsula.”

Mother asked him, “What about the animals?”

“I’ve kept them in the barn today. They have hay and water so they’ll be okay.” Dad looked quite serious as he said this. He was usually cheerful but not today.

It was not long before the sky darkened. Alhough the dark gray clouds were fascinating to watch, even I could see that they looked and travelled differently today. Soon I decided that I should get inside instead of watching nature. My sister, Mary, was just getting her breakfast, as in summer holidays we could sleep in if we wanted to, or if there were not outdoor chores on our list.

Countdown to Christmas: It hardly seems possible, but we’re just two and a half weeks out from the big day. The Town of Pelham’s Outdoor Christmas Market made a comeback last Friday evening, and it was good to see so many visitors in attendance. About half of the crowd wore face masks, a larger percentage than I would have expected, but maybe thoughts of Omicron were dancing in our heads. The apparent good news (said cautiously and quietly) is that while this latest variant of concern is evidently more contagious, its effects may be less severe. Yet the early evidence appears to be based primarily on pediatric infections, and kids generally suffer less severe Covid illness than adults, so let’s not count any chickens just yet...

Speaking of pint-sized: While I strolled the Christmas Market I kept catching sight of what looked like a fully grown yet almost miniature Yellow Labrador Retriever. I finally caught up with the owners, a couple who had come up from Port Colborne, who confirmed that sure enough, the four-and-a-half-yearold was indeed 100 percent Yellow Lab, as confirmed by a DNA test. My wife and I are big Lab fans, and have lately been saying that as the years pass and we become ever more creaky what we really need is a smaller version of the same breed with its super personality. Can’t someone cross, say, a Whippet with a Lab? And here it was! Alas, lightning won’t strike twice, as it turned out the dog was a rescue, and not from Edmonton or Etobicoke. From Egypt! The couple explained that the Canadian organization Golden Rescue had brought a planeload of Egyptian street dogs into Canada about four years ago, including this beauty. She appears at right in the photo on page 11, but the angle makes her look deceptively larger than her real size...An alluring sale: Our neighbour next door at the Voice office, Allure Spa, has brought on some new talent (see their ad, p.17), and if I’m not wrong, they’re coming up on their 10th anniversary of business. Congrats!...Yet another accomplishment: Pelham’s member of the new Niagara Youth Advisory Panel was nearly a foregone conclusion— Natalie Anderson, granddaughter of the recently passed Lloyd Beamer, attended her first meeting late last month (p.3). I’m telling you, in a couple of decades we’ll be calling her Madam Prime Minister!...Entertaining diversions: If you're looking for evening viewing options, consider the classic screwball comedy from 1972, What’s Up, Doc, starring Barbra Streisand and Ryan O’Neal. I’ve not been the biggest Streisand fan in the past, but this came highly recommended and indeed it’s an excellent romp, and holds up very well. Our Apple TV served it up for $4.99. Enjoy those 1970s hotel decorations. Less rewarding was the new and much anticipated feature, The Power of the Dog, streaming on Netflix. Be warned, if you're at all a sentient adult, you'll spend two hours predicting almost every plot point several minutes ahead. That's my public service message for the week...Looking good: Pelham was down to four active Covid cases as of Monday. Stay safe. ◆

Rotary awards eight What's That

BY VOICE STAFF For the fi rst time in two years, late last month the Rotary Club of Fonthill hosted an in-person Paul Harris celebration dinner, one attended by some 70 Rotarians, friends, family and community members, and which allowed the club to honour and recognize the community service and commitment of a number of individuals.

Three posthumous awards started off the evening. The late Gary Accursi, Mike Ciolfi, and Ron Leavens all “contributed greatly to the Town of Pelham through their political

careers but also through their lifelong commitment to volunteering, coaching and supporting community events and activities,” said the club through a media statement.

The club then presented community Paul Harris Fellows to Fred Arbour, Vilma Moretti, and David Weeks, as well as Fellows to two of its members, Jennifer Allen and David Schulz.

Named for Rotary founder Paul Harris, these most recent recipients join over 1 million fellow Fellows worldwide.

In an effort to bring further attention and deterrence to driving while impaired by alcohol or drugs, the Niagara Regional Police Service reports the names of those people who are charged with an alleged criminal impaired driving offence in the Region.

None of the following charges have been proved in court. In addition to being charged, these individuals are also bound by a Ministry of Transportation 90-Day Administrative Driver’s License Suspension and are prohibited from operating a motor vehicle on a roadway. The public is encouraged to contact the Niagara Regional Police Service Traffic Safety Hotline or Crime Stoppers to report those who are driving in contravention of the suspension. The following individuals have been charged criminally with impaired driving by alcohol or drugs, driving with a blood alcohol concentration above 80 mgs of alcohol in 100 ml of blood, or refusing to provide a breath / blood sample.

Pelham student named to Niagara Regional Youth Council Natalie Anderson joins youth representing Region's 11 other municipalities

BY DON RICKERS Contributing News Editor Regional Chair Jim Bradley’s Niagara Region Youth Advisory Panel held its inaugural meeting in late November, at which he welcomed, via Zoom, representatives from all 12 local sub-municipalities.

Natalie Anderson, a Grade 12 student at E.L. Crossley, was online as Pelham’s representative, as was Diana Huson, Pelham’s directly elected Regional Councillor.

But the two did not meet face-toface until last Saturday, when they spoke with the Voice at the Meridian Community Centre.

“I'm hoping that this council will expose me to greater diversity, and make me more aware of the different groups in Niagara,” said Anderson. “I'm really looking forward to getting to know the other student members, because we are like-minded. It will be awesome to connect with them, and discuss issues like equity and inclusion in the region.”

Anderson said that she is most passionate about environmental causes like recycling, but also sees mental health as a topic that needs greater attention.

The first meeting was an orientation on how Regional gov-

ernment works, said Anderson, who is also on the student council at Crossley, and serves as prime minister of the Mayor's Youth Advisory Council in Pelham. In addition, she holds a part-time job at Sobeys, is on the school curling team, and plays flute in Crossley’s marching and concert bands.

Anderson has applied to medical science at Brock, Western, Queen’s, and McMaster for September 2022 admission.

Her grandfather was Lloyd Beamer of Beamer’s Hardware, the longtime retail fixture on Pelham Street. Natalie’s father, Doug, works at the store.

Huson said that about 60 applications were received for the 12 spots on the youth committee.

“Many of them had backgrounds on student councils at their respective schools, and most were quite politically minded. They are a really impressive group of kids,” said Huson, who has been a vocal advocate for more diverse voices, including youth voices, in the Regional government dialogue.

In addition to great interest in the environment, Huson said she saw plenty of concern around

An area that especially deserves youth input is regional transit, said Huson.

“The Region recently voted in favor of uploading Niagara transit responsibilities,” she said. “Two of the delegates who gave presentations were the presidents of the student unions at Brock and Niagara College, and we also had an Indigenous representative talk about the importance of transit for their people, as well as other

racialized populations. The student presentations were quite impactful.”

Students, particularly in rural areas, can have long commutes to get to classes and part-time jobs, said Huson, who also noted that many had extra family responsibilities, such as looking after their siblings, and helping care for elderly loved ones.

“I want to listen to Natalie's voice, because that's the whole point of the committee,” said Huson. “My advice to her? Don't be

shy, or hesitant to contribute in the meetings. You're there for a reason.”

The Youth Advisory Committee was developed to provide the Regional Chair and council with a fresh perspective on matters that affect young people across the region.

The panel’s primary role is to give advice on policies, programs, and services, identify gaps and barriers, and suggest ideas to increase youth participation in regional programs and services.

Editorial Animal rights absolutism wins neither hearts nor minds

T

he right to protest is at the heart of what it means to live in a liberal democracy. The fact that people can advocate for whatever social change they wish to see, even when it irks those in authority, and often the wider public, is something to cherish and defend. Indeed, one can argue that the most effective journalism consists in the irking of authority—insisting that the public’s business be conducted in public, for example—and in generally comforting the afflicted and afflicting the comfortable.

To be clear, this newspaper shares the sentiment of the 19th century German philosopher and defender of animal rights, Arthur Schopenhauer: “Since compassion for animals is so intimately associated with goodness of character, it may be confidently asserted that whoever is cruel to animals cannot be a good man.”

That said, what occurred on Pelham Town Square last Friday night was misguided, unfortunate, and frankly counterproductive.

Protesting the use of horses, in an agricultural community, for a service which they have provided for more than a millennium, seems

to miss the point by a wide margin.

Some municipalities in Canada have essentially banned horses for recreational purposes in their urban cores— Toronto and Montreal being good ex-

amples.

Such downtowns have commonalities—a large number of tall buildings forming echoing canyons, considerable traffic volumes, frequent loud noise, and huge numbers of people. None of these exist in Pelham.

Those are scary and foreign environments for horses, and one can reasonably advocate for a carriage ban in major urban cores. Any mistreatment of horses in these (or any) circumstances is, obviously, deplorable.

tural community, in which horses already exist, comfortably, is fundamentally different, we cannot say. A carriage ride in Pelham does not compare to the cruelties imposed upon horses prior to the Industrial Revolution.

Lastly, the service provider for the Christmas event is a reputable business. The animals which worked on Friday night were clean, healthy, and probably more agitated by the protesters’ screaming bullhorn than by anything else. While we emphatically endorse the right to demonstrate, bullhorn users should know enough about their cause célèbre to realize that frightening horses can get someone killed.

In addition, protesters initially located themselves near a line of children waiting to see Santa Claus. Terrifying tots, and enraging their parents, is not smart public relations. One might say it even reflects a lack of horse sense.

Perhaps next year those who wish to have an actual dialogue or debate with the Town could write letters to the editor, or attend as delegates before Town Council to make their case, rather than use the bullying cudgel of a bullhorn at a family event. ◆

OPINION Cluck them by their names While it is an honour to be recognized by Mike Breaton as the creative genius behind the name of “Gregory Pecker” [“Gregory Pecker, the cock tale,” Column Six, Dec.1, p.1], let the public record show that I am most proud of the naming of "Jolene," a feisty red hen whose beauty is indeed beyond compare.

Short Hills prematurely opened after Indigenous hunt?

December 1 was a government-sanctioned Indigenous hunting day in Short Hills. According to signs posted, the park is closed the day of the hunt and not open ‘til noon the following day. Supposedly some hunters are allowed back in the morning after for “clean up maintenance.” On Dec. 2, all entrances to the park were open by 10 AM. At 11 AM, I noticed a hunter's truck parked in the Wiley Rd. parking lot all by itself and a few minutes later an Ontario Parks truck showed up and parked. Another Parks truck parked after that and also a hiker, with two small children. This hiker was not notified by the staff in the two Parks trucks that there were active hunters in the park.

This hiker and his children entered the park and encountered two native hunters in full camo gear carrying unencased cross-

bows and told the hiker they were looking for lost binoculars. After 30 minutes, I saw another hunter exiting the park, in full gear and carrying a bow. Soon after the hunters left and so did the Parks staff.

The hiker and his sons came out of the park after hiking and told me about the encounter with the hunters. Why is the public being allowed into the park when there are active hunters inside? The park should have been closed until noon but was wide open, barricades down. This is a tragedy waiting to happen and I want to know why the Province's own safety rules and protocols are being ignored. I have photos of all of the above and have forwarded to the Ministry with no reply. Who is going to keep us safe?

Want safer streets? Make driver licenses tougher to get I am of the belief that at least 50 percent of people operating vehicles are not properly qualified to do so. The driver test in North America is so simple that virtually anyone can pass.

However, we know this will never change because that would seriously impact vehicle sales which would then present another problem for the prevailing government.

Nor do I think that increasing the fines for infractions would change very much. I am sure that the amount of a fine is the last thing on the mind of a vehicle operator rushing to get to their destination while listening to the latest music craze.

Constantly, because I typically abide by the posted speed limits, I am invariably followed by someone so close that, in my rear view mirror, I can almost see the colour of their eyes!

Obviously, they are not aware that at 50 kph a vehicle travels almost 14 metres, about 4 car lengths, every second—and it takes almost one second to react to a situation.

One day whilst returning west on Highway 20 and approaching the Welland Canal, I passed a large illuminated sign advising “Bridge up for 5 minutes.” Just after this is a 50 kph sign and the road sweeps gently to the left, then more sharply to the right before coming to the Allanburg Bridge.

Knowing that I had five minutes before I could cross the bridge, notwithstanding any vehicles ahead of me already waiting, I simply took my foot off the gas to allow my vehicle to “cruise.” Needless to say, this infuriated the idiot operating the vehicle behind me, because he sounded his horn and accelerated—crossing the double yellow lines—just to pass me, only to travel a couple of hundred metres before having to heavily apply his brakes to avoid colliding with the line-up of vehicles waiting for the lift bridge to descend. Surprisingly, that vehicle was followed by two more, presumably relatives with the same brain power!

It is difficult for me to imagine how these three idiots were ever given a pass for their driving test. No, I should correct that because as I already said, virtually anyone can pass. Day after day, we hear of crashes or collisions —thankfully they are usually no longer referred to as accidents — which are creating hold-ups on the main arteries around the GTA. Very occasionally, hold-ups are caused by mechanical failure of a vehicle but much more often, they are as a result of the loose nut behind the wheel.

Then of course there are the “rubber-neckers”—but that has to be a whole different story.

Travelling

on the QEW on a recent Sunday, I caught up with slow-moving traffic and assumed there must have been a crash up ahead. Eventually however, I passed a police cruiser, lights flashing, pulled onto the hard shoulder just behind a stretch limousine, where someone was changing a wheel. After this, the speed of the traffic again increased. I’m thinking I should make a YouTube video of such an incident, I See SAFER next page

16 Days of Activism, Sulphur Spring opens, Santa in town

ast Thursday, I was honoured to attend a flag-raising at Town Hall to recognize the International Day for the Elimination of Violence Against Women, and to advance awareness of the 16 days of activism against gender-based violence.

Speaking was the President of the board of directors of Women’s Place of South Niagara, Teresa Quinlin-Murphy, where she has been a volunteer for the past five years. If her name seems familiar to you it is because Mrs. Quinlin-Murphy is also Town of Pelham’s own Director of Corporate Services and Town Treasurer.

The most tragic statistic concerning gender -based violence is that every 13 days a woman or child is killed by a man they know. To help combat this violence, Women’s Place operates a 24hour, 7-days-a-week phone line, that last year handled 2,592 calls, which works out to seven calls per day. The flag that was raised, known as the Wrapped in Courage flag, will fly for a week at Town Hall.

On a happier note, I am pleased to announce that the Sulphur Spring Drive road repair project is completed, and for the first time in five years this road is open to through traffic.

There is a phase two to this project, which is not nearly as challenging as the first phase, to be completed next

year. The Town thanks the contractor for doing such an awesome job in completing this part of the project, under somewhat trying conditions. I believe the paper will carry a detailed story in next week’s edition.

Sources tell me over 150 children met with Santa with their Christmas lists

ast Friday evening was The Christmas Market in the Town Square, where local artisans displayed their creations and products for sale. Hot dogs and chili were available at the Fonthill Lions booth. Beverages were available for all. It was perfect weather for this event, live Christmas music played for the enjoyment of shoppers and visitors alike, while horsedrawn carriage rides added to the enjoyment. Of course, the highlight of the evening was the arrival of Santa, with his trusty Elf carrying the naughty or nice book, winding their way through the crowd to Santa’s greeting place.

Sources tell me over 150 children met with Santa with their Christmas lists

and wishes. It is amazing how this scene never gets old. To see the look of awe and excitement on the faces of the little ones adds to the joy of Christmas for kids and adults alike.

Unfortunately this year, a group protesting the use of horses for carriage rides showed up with their signs and bullhorn. Most of the night they stayed at the Pelham Street entrance to the square, but for about a half- hour they moved down where Santa and the children were visiting. It was disgusting to see and hear these protesters blaring their message at threeto-five-year-old children waiting to see Santa. Niagara Regional Police were informed but, unfortunately had higher priority calls to attend to. If the police had answered the calls the protesters would have been served tickets for using amplified sound at this event, in violation of the Town’s noise bylaw.

Like many attendees, my wife and I enjoyed a carriage ride around the town square. Both horses and people were well treated and under no stress.

Finally, don’t forget the Santa Claus Parade this coming Saturday in Fenwick—the fun starts at 1 PM, and this year there will be no activities in Centennial Park, just the parade along its route. Hope to see you there! ◆

Open letter to Pelham Town Council I believe it's time to put to bed of the continued discussion to build a road across the Steve Bauer Trail. It's been nearly a year since the Pelham Tree Conservation Society brought forward the concerns of the residents of Pelham about this illthought-out plan to build unnecessary roads through the beloved path. It would cause significant damage to the natural habitat of our unique walking path.

This trail is in constant use year-round.

Last January, the PTCS put together a video of the trail with many people of all ages using this trail on a cold winter day. Steve Bauer, whose name presides on the trail, spoke passionately, asking our Mayor and council not to put a road through his namesake. We had many walkers stop by to record their objections to any roads crossing the trail.

Last January, the elementary school children of Fonthill created positive posters of why they wanted to save the trail as it stood then and still does today. We presented petitions with over a thousand signatures of Pelham residents among the over 5000 signatures to stop the roads and destruction. All this we delivered to council

and the Town.

At the January 11 council meeting, a motion by Councillor John Wink and seconded by Councillor Bob Hildebrandt was passed not to allow any more roads to cross any of the Town’s trails.

At the end of January, PTCS did a complete tree count on both sides of the entire trail between Port Robinson and Merritt Road. From early spring and continuing, we have photographed and recorded vegetation, trees, reptiles, mammals, and birds within the trail.

We have learned the value of the trail not only for humans but as a small wildland inside a growing community. We believe this trail must be preserved for future generations.

On July 5, Sterling Developments gave three options to the council about the roads over the trail.

Their paid study from S. Kauafmanof Turkstre Mazza Associates proved our point, which they admitted that both of the developments could be constructed without in lieu of any roads crossing the path. Why continue to continue to discuss roads crossing the trail?

It is to create a low-level bridge over the wetlands.

This way, no roads are required to cross the trail and would protect our valuable wetlands.

Our natural infrastructure has great monetary value. On December 1, Regional Council voted unanimously for Option 3C which helps protect our environment.

On September 29, PTCS held a walk along the Steve Bauer Trail to Peace Park.

At the park, Steve’s parents and his wife delivered to the Mayor an autographed Friends Of the Steve Bauer Trail T-shirt. PTCS again had Steve's message not to build any roads across the trail. We must stop destroying this sanctuary of nature. It is natural undivided path that is easily accessible to all citizens.

It’s time to save the trail from road crossing.

It also time to stop developments from destroying our wetlands. Kunda Park Developers must build a low-level bridge over the wetlands, not through it.

Several days in a row I called at 8 AM only to be told the closest place to get a booster was in Mississauga. (Nothing in Halton, nothing in Hamilton.) I checked with several local Pelham pharmacies.

One staffer told me I was not eligible until mid- December (not true). Most said they were booked, so call back. Is vaccine being offered first to those connected by history? Some sites say walk-in (where?).

I called Niagara Health only to be told kids over five were being vaccinated so go online or phone around.

MPP Oosterhoff’s office told me, “No worries, there is lots of vaccine availability.” She continued with saying that Covid is “no big deal anyway.”

Eroded confidence stems from this lack of organized practices. Covid vaccine delivery implementation has not improved enough. There is not a cohesive message even in Pelham. Surely we deserve better.

Beached Niagara landmark needs repairs say Feds Jordan Harbour's grand wreck, La Grande Hermine poses danger

BY DON RICKERS Contributing News Editor Travelling along the QEW by Jordan Harbour, it’s hard to miss.

La Grande Hermine looks like an abandoned pirate ship. Its masts and bowsprit are still in place, but it has no sails or hardware, and is clearly weather-worn and dilapidated.

The 141-foot, steel-hulled vessel’s name translates to the rather inelegant “Big Weasel” in English.

Since 1997, it has been an icon — some would say an eyesore — in the marina basin behind the Beacon Harbourside Hotel. In 2003, the ship was set ablaze by arsonists, which hastened its deterioration.

Launched in 1965 as a life-sized replica of the sailing vessel in which French maritime explorer Jacques Cartier embarked on voyages across the Atlantic and down the St. Lawrence River in 1530, the ship was featured at the Montreal Expo in 1967. La Grande Hermine was later converted into a floating restaurant in Quebec, and was eventually purchased by a businessman who had a tug tow it to Jordan Harbour, with the intention of converting it into a floating casino in Chippawa.

However, the owner passed away before the permits were approved, and the boat was left abandoned.

Pelham Town Hall raises flag in support of ending gender-based violence

BY DON RICKERS Contributing News Editor The magnitude of the suffering is truly staggering.

In 2020, some 160 women and girls were killed by violence in Canada, with over 40 percent murdered at the hands of a current or former intimate male partner. Indigenous women are killed at six times the rate of non-Indigenous women.

Over 6000 Canadian women and children sleep in shelters on any given night, because it isn’t safe at home.

Last year in Ontario, every 13 days a woman or child was killed by a man.

Even here in Niagara, the situation is dire.

As Pelham Mayor Marvin Junkin noted in his address at a flag-raising ceremony last Thursday morning at Town Hall, Women’s Place of South Niagara has a 24/7 support line which fielded 2592 calls last year.

“Today is an opportunity to learn from those who are dedicated to bringing awareness of gender-based violence, and to champion an organization that is actively supporting those in our community that have been impacted by abuse,” said Junkin.

The ceremony was an ob-

servance of the International Day for the Elimination of Violence Against Women, meant to highlight the 16 Days of Activism Against Gender-Based Violence.

“We must work together to address this issue,” said Junkin. “We don’t always see the impacts of violence, but that doesn't mean it's not happening.”

Pelham’s Director of Corporate Services and Treasurer, Teresa Quinlin-Murphy, who also serves as Chair of the board of directors at Women’s Place of South Niagara, indicated that the wearing of the purple scarf has become a symbol of the courage of women as they seek support and safety from violence.

“The purple scarf and flag are a signal of Pelham’s commitment to helping end gender-based violence, and to ensure that survivors know that they're not alone,” said Quinlin-Murphy. “Women’s Place of South Niagara has an outstanding staff, which supports women and children in their critical time of need. Quinlin-Murphy asserted that provincial and federal governments under-fund shelters across Ontario, and stressed that her organization must fundraise 30 percent of its operating budget every year in order to be able to provide essential services to the communities of south Niagara.

“This equates to $650,000 in fundraising every year, which is a serious concern,” she said. “Staff should be focused on fulfilling the mission statement of Women's Place, which is to stop

abuse and violence against women and children by providing safety through shelter counseling, education, advocacy, and community partnerships.”

Women’s Place of South Niagara currently operates two shelters: Nova House in Niagara Falls (20 beds) and Serenity Place in Welland (10 beds). In the spring of 2022, the agency will have 40 beds, all at the Niagara Falls location.

In 2020, 109 women and 66 children stayed in Women’s Place shelters, representing some 7000 bed nights.

Amanda Braet, the Director of Development and Stewardship at Women’s Place, said that they raise money through calendar sales, and also their “Book Riot,” which promotes literacy and the recycling of books. Due to the pandemic, the Book Riot has been on hold for two years, at a substantial loss of revenue for the organization.

“We're hoping that in June of 2022, at the Gale Centre in Niagara Falls, we’ll be able to jump-start the Book Riot with an arena filled with thousands of books and eager buyers, and

make it a wonderful event,” said Braet.

The 16 Days of Activism Against Gender-Based Violence is an annual international campaign that kicked off on November 25, the International Day for the Elimination of Violence against Women, and runs until December 10, Human Rights Day. It was started by activists at the inaugural Women’s Global Leadership Institute in 1991, and is used as an organizing strategy by organizations around the world to call for the prevention and elimination of violence against women and girls.

Raising for the Ride Garneau's streak remains unbroken

BY DON RICKERS Contributing News Editor Retired airline captain Pierre Garneau, of Fonthill, swapped two wings for two wheels 11 years ago. Ever since, he has been a top pledge earner for the Niagara chapter of Motorcycle Ride for Dad (MRFD), a national organization that raises funds for men’s prostate cancer research and awareness.

In 2021, Garneau was not only the top pledge earner in Niagara ($11,300 from 135 individual donations), but also the second- highest in the entire country. Over the years he has amassed some $66,000 for the cause.

Established in 2010, the Niagara Motorcycle Ride for Dad has raised well over $600,000 dollars, through 24 active chapters across Canada, in the fight against prostate cancer.

“The money that is raised stays in Niagara, funding important research for prostate cancer,” said event co-chair Matt King. “The ride has provided dollars for research that has played a role in reducing the side effects of treatment, thus allowing men to retain their dignity, and reduce the

stigma surrounding prostate cancer treatments.”

Prostate cancer is the fourth most common cancer in Canada, and the top-ranking cancer for men, with one in nine diagnosed with the disease.

Some 23,000 Canadians were diagnosed with prostate cancer in 2020.

Early detection is critical.

Men over 40 should book a prostate-specific antigen (PSA) test with their family doctor, especially if prostate cancer has been diagnosed in a close relative. Elevated PSA results may reveal prostate cancer that's likely to metastasize and spread to other parts of the body, or indicate a quick-growing cancer that's likely to cause other problems. A digital rectal exam (DRE) may also be done as a part of the screening process.

The Motorcycle Ride for Dad is usually a one-day event with 200 to 300 participants arriving in Niagara-on-the-Lake on Father’s Day weekend, for a scenic ride through the Niagara region. Due to Covid-19 safety protocols in place this year, Garneau did his fundraising ride on August 27 with a few friends. They met up at Clare’s Cycle in NOTL, which is a sponsor of the event.

“We took the Niagara Parkway through Niagara Falls and Chippewa, to Fort Erie, and finally home to Pelham,” said Garneau. “It was a beautiful sunny day with light traffic.”

Garneau was pleased to see funding go toward a new treatment, called stereotactic ablative body radiotherapy (SABR), which uses high-precision doses of radiation over five treatment sessions, and has resulted in low remission, high retention of sexual functioning, and improved cure rates and quality of life.

Donations of $10 or more are tax-deductible, said Garneau, and can be made online with VISA, Mastercard, and PayPal. Canvassers accept cash and cheques, and mail-in donations are also possible.

“Every donation, regardless of how small, helps make a difference,” he said.

A pandemic casualty last year, Pelham’s Ou

BY VOICE STAFF After taking a sensible break from public appearances last year, Santa was back and jollier than ever at Pelham’s Outdoor Christmas Market last Friday, which kicked off at 4 PM at Pelham Town Square.

While a small group of animal-rights protesters noisily demonstrated against horsedrawn carriages present at the event, Market-goers did their best to enjoy the festive atmosphere and seemed to succeed.

Good cheer was plentiful, with a palpable sense of relief that some measure of normality had returned, if even for an evening.

The Town counted some 1500 visitors, who enjoyed 16 booths a-marketing, ten stations a-warming, 8 hooves a-clopping, 5 vocalists a-singing, 3 groups a-fundraising, 2 walkers a-stilting, and 1 rotund fellow a-Santa-ing.

As each child approached St. Nick, his right-hand elf carefully examined the naughty-or-nice book to determine 2021 gift eligibility. While some cases were touch-andgo, and stockings of climate-change-inducing coal seemed imminent, in the end all who met with Mr. Claus were given a hearty thumbsup. Whether supply-chain issues will interfere with Santa’s deliveries remains to be seen. The red-robed fellow will next appear in Fenwick on Saturday, in a parade in his honour, starting at 1 PM.

Niagara, we’re here for you.

Protest disrupts Christmas Market

Niagara group condemns horsedrawn carriages

BY VOICE STAFF A group of protesters loosely affiliated with a Facebook page called “Ban Horse Carriages Niagara” stood near the intersection of Pelham Street and Pelham Town Square last Friday evening, demonstrating against what spokesperson Elizabeth Sigrun asserted was the inhumane use of two horses at the event, on site to pull two carriages.

The Voice counted nine protesters. Asked if any lived in Pelham, Sigrun initially seemed to confuse supporters with protesters, then clarified that none of the protesters were Pelham residents. She acknowledged that the same group has targeted the carriage trade in Niagara-on-the-Lake.

One demonstrator used a bullhorn at high volume to criticize Town Council and Mayor Marvin Junkin for permitting the carriages to be present.

“We’ve tried for three weeks to get them to cancel this,” said Sigrun, adding that “several people” in Pelham supported their cause,

but were afraid to do so publicly.

In a handbill, the group asserted that the use of horses for carriage rides is a “cruel and antiquated anachronism in the 21st century.

Public opinion is rapidly shifting towards a broader realization that exploiting animals for fleeting and

frivolous ‘entertainment’ is unnecessary and unethical.”

and blizzards,” and the danger of “urban traffic noises.”

None of these conditions were found at Pelham Town Square on Friday evening, where the two carriages looped on a short circuit around Town Hall, with an occasional vehicle departing the adja-

cent municipal parking lot.

The group initially set up near children queuing to see Santa Claus, which prompted Fire Chief and Chief Bylaw Officer Bob Lymburner to direct the demonstrators to leave Town property and relocate to the sidewalk along Pelham Street. Lymburner said that the group’s use of a bullhorn violated Pelham’s noise bylaw and that Niagara Police had been requested to attend the scene. Police had not arrived before the demonstrators departed at 6:45 PM. In a follow-up email over the weekend, Sigrun put the Voice in touch with two Pelham supporters, Craig and Robin Zavitz.

“As longtime residents we were happy to see the Outdoor Christmas Market offered again this year,” Robin Zavitz said. “We were not happy to see the antiquated practice of horse drawn carriages, which have been banned in many cities, added this year. Enjoy your tree trimming, your carols and your festivities without exploiting the horses. How about next year you do a hayride drawn by a tractor?”

Two large Canadian cities, Montreal and Toronto, have banned horse-drawn carriages from their downtown cores.

Mayor Junkin refers to the demonstrators’ conduct as “disgusting” in his regular column this week (p.5), and the Voice addresses such use of horses in Pelham in this week’s editorial (p.4).

The Wolfpack: Niagara's “Millennial mobsters” Tracing the cocaine route from South America to southern Ontario

BY DON RICKERS Contributing News Editor Journalist Peter Edwards calls them “millennial mobsters,” a loosely connected, tech-savvy band of underworld players age 35 and younger, who smuggled cocaine into Canada for Joaquín “El Chapo” Guzman’s multi-billion dollar Sinaloa cartel.

Given Niagara’s proximity to the American border, it is not surprising that a bunch of local entrepreneurs, calling themselves the “Wolfpack Alliance,” saw an opportunity to enrich themselves. Murder was just part of the bargain.

Edwards sat down with the Voice last week to discuss his book, “The Wolfpack,” the first major work that focuses on the links between Canadian and Mexican organized crime.

The book has just been released by Random House Canada.

Although most of the drug gangsters depicted in his book are currently serving prison sentences, the flow of cocaine and other illicit substances into Canada continues unabated.

“I thought that the pandemic might really hurt these guys, but it didn't at all,” said Edwards. “These drug traffickers are really good at what they do. They don't look at it as a crime, it's simply how they survive.”

When he first began researching his story, Edwards believed that only a handful of cartels were in competition in the drug trade, but he soon learned that an exponentially larger number of splinter groups were involved, sometimes forming alliances to maximize on profits. But it is a risky business.

“If criminals join forces, they benefit from each other’s strengths, but they also get the other guy’s enemies,” said Edwards.

The felons came from diverse backgrounds. Some lived in nice, middle-class neighbourhoods, with parents holding professional jobs.

“They grew up as kids craving attention, who wanted to be rock

stars, but didn’t really have any skills,” said Edwards. “They displayed an overwhelming sense of entitlement. Through their drug associations, they became more interesting to girls who are out of their league.”

Niagara drug kingpin Nick Nero, from Niagara Falls, figures prominently in Edward’s book. He was arrested for trafficking $30 million worth of cocaine, the largest seizure in Niagara history, and is serving time in prison as the mastermind behind the killing of Toronto gangster Johnnie Raposo and three other men.

Raposo was gunned down in a targeted hit in June of 2012, as part of a plot to steal his 200-kilogram shipment of cocaine. Trigger-man Dean Wiwchar, Nero, Rabih Alkhalil, and Martino Caputo were all charged with first-degree murder and conspiracy to commit murder.

Police built their case by analyzing the mobsters’ Blackberry smartphones, thanks to a password scribbled on a sticky note that Nero, an amateur bodybuilder who trained to be a wrestler, had inadvertently left unattended. Authorities found email messages that showed communication between all four of the accused leading up to the shooting.

Prior to the murder of Raposo, Nero had been confined to a St. Catharines halfway house during the week, the result of a prior conviction for the heist of an armoured car in Toronto in December of 2003.

Nero’s share of the loot — about $1 million — remained missing, and when the courts tried to collect, Nero pleaded poverty (despite the fact that he drove a red Ferrari to and from the halfway house).

Prior to his conviction, Nero had connected with Zavisa “Zav” Drecic, a full-patch motorcycle club member from Welland, who was a conduit for Nero to rub shoulders

Many drug-dealing motorcycle gang members that Edwards met and interviewed had been touched by violence early in their lives, and were a product of their environment.

“A lot of these guys, as kids, had seen their mothers beaten by their fathers, and their thinking was ‘When I'm 17, this isn't going to happen anymore.’ A lot of them were rebelling against their father, and mad at authorities because they didn't protect their mother.”

Edwards said that it was very rare to see a Hells Angel combination involving a father and a son, “but with the mob, you always get a lot of that.”

Drug-dealing motorcycle club members, interviewed for his book, weren't apologetic about what they did, said Edwards.

“I told then, don't tell me anything you don't want to see in print, because I'm not your priest or your shrink.”

The worst thing for them is betrayal, said Edwards, and the ultimate insult is being called a conniver or a weasel.

Unlike the Hell’s Angels, who have a highly structured organizational stratification, the millennial mobsters were much more loosely

associated.

“The smartest guy would be the dominant one, but they wouldn't actually have a title,” said Edwards, who is hoping that his book might spawn a TV or movie deal.

“I’m hoping for television interest,” said Edwards. “It sounds really crass, but if it's a film, it's a oneshot deal, whereas a TV series can go on forever.”

Mid-level drug smugglers could earn $150,000 a month, but lived in constant fear of challenges and lethal hits from rival gangs.

“It’s easy to find out where a guy lives,” said Edwards. “You just attach a magnetic GPS tracking device to his car while he’s in a bar, and wait for him to drive it home.”

Niagara’s location close to the American border makes it perfectly situated for drug trafficking.

“The cartels are active in Chicago, which isn't that far from Buffalo, and Buffalo is just a blink of an eye from here,” said Edwards.

The book also details a cocaine trafficking sweep by police, dubbed “Project Roadmaster,” in 2014, which netted Jeffrey Kompon of Welland, Laurence Aiello of Fort Erie, and Guy Caputo of Fonthill. A search warrant for a warehouse in rural Port Colborne resulted in the discovery of cocaine sealed inside large stone boulders that were imported from Mexico. All men were

given prison terms.

Asked if casinos are used by the mob to launder illegitimate money, Edward’s responded, “I think so. But if I was laundering money, I’d put it into condos in Toronto or Vancouver.”

Edwards is the bestselling author of 15 non-fiction books, and the first-ever beat reporter on organized crime for the Toronto Star.

He is also executive producer for the CityTV series “Bad Blood,” based on his book “Business or Blood: Mafia Boss Vito Rizzuto's Last War.” Rizzuto was a Montreal-based crime boss who led the Sicilian mafia in Canada, whose death in 2013 prompted other druglords and millennial mobsters to make a play for his lucrative ventures.

He worked on his book with fellow journalist Luis Horacio Nájera, who had been a newspaper reporter in Juarez, Mexico (a region Edwards refers to as a “war zone”) where he covered smuggling, corruption, and the drug trade.

Threats from the cartel caused him to flee to Canada.

Is he fearful of repercussions from the underworld for his tellall?

“Not really,” said Edwards with a shrug. “Working for a big newspaper like the Toronto Star, it would generate a lot of negative attention if something happened to me.”

Then he added, with a laugh, “but I wouldn't mind you starting my car for me.”

Finally, there are Canadians who understand what Christmas is really all about. When they hear a classic Christmas carol like “Hark, the Herald Angels Sing,” they actually appreciate the truths being proclaimed. Keller points out that this carol contains the core message of the Gospel. If you listen to the words carefully, it answers four key questions: Who is Jesus? Why did He come? How did He accomplish His purpose? and How can I receive what He offers?

When you think about it, the coming of God to earth is no trivial matter or historical footnote. It changed everything and it has the potential to change us. Jesus, the “God-man,”deserves complete submission, loyalty and commitment. When we make Him our “Lord” He becomes our Master, Ruler, Boss and Leader.

But most of us (especially in the individualistic West) naturally resist anyone

or anything that threatens our personal autonomy. Keller writes, “Each of us wants to be the captain of our own soul, the master of our own fate.” We’re rightly appalled by what King Herod did on the first Christmas (see Matthew ch.2) when he felt his rule was being threatened.

But Keller believes there is a “little King Herod” in each of us that wants to rule our life and keep Jesus out.

In contrast, the author points to Mary as an excellent example of a surrendered life. When the angel revealed what was going to happen in and through her, she replied, “I am the Lord’s servant. May your word to me be fulfilled.” (Luke 1:38) Mary didn’t understand everything but she trusted God and surrendered her life to His will. That is what God desires from each of us as well.

Keller writes, “My hope is that, when the reader is done, the true meaning of Christmas will no longer be hidden.”

As time evolved, the group expanded to include facilities that most of us would not consider to be true resorts: Albion Hills Conservation Park (Caledon), Frost Centre Ski & Snowshoe Trails (Dorset), Hardwood Ski & Bike (Barrie) and others. OSRA modified its name from ski to snow to reflect its expanded nature, although all member facilities must have some basic amenities such as a change area and washrooms.

Nichol noted that he and his board are currently in

discussion about adding Provincial parks and similar facilities with fewer amenities to the website.

“If we can help direct people to trails in their close proximity that they might not know about, or even a short drive away, we should try to do that to encourage people to be outside.”

At present the site lists 49 downhill facilities, 11 Nordic (cross-country skiing) areas, 16 snowshoeing areas, seven skating locations and ten tubing hills, providing a comprehensive resource for anyone looking for a fi rsttime winter outing or seeking somewhere new to ski or snowshoe.

I asked Nichol what was trending in winter outdoor activities. He responded that there is pent-up demand to get out and ski and board in

Ontario, which is leading to increased purchases of clothing and equipment and the infamous supply chain challenges.

“We’re getting all kinds of calls from people who are getting really excited to get back out on the snow, but there’s also some hesitancy for people that want to go skiing but don’t want to go into the lodge.”

Nichol explained that the Ontario industry must follow both Provincial and local health authority regulations and guidelines. As an outdoor activity, proof of vaccination is not required (at this writing) for skiing or snowshoeing, unless one enters an indoor facility such as change rooms, common lunch rooms or Continued next page

Passed away peacefully at home with his beloved wife and best friend Shirley (nee Arnold) of 64 years by his side. He was in his 87th year.

Loving father of Todd (Janice), Trent (Debbie), Darla (Grant). Adored Grandfather of Kelsea (Declan), Hanna (Jason), Justin, Lisa, Sarah (Justin), Kayla (John), Alexa (James), Eli, Isaac. Cherished Great Grandfather of Maverick and Naomi. He will missed by brothers Wesley, Ken, Allen and sister-in-laws Doreen, Pearl, Ina and brother-in-law Larry (Kate). Missed by many nieces and nephews. Predeceased by parents Naaman and Elsie, siblings Leo, Melba, Roger, Dorothy, Glenn, brother-in-law Ed and sister-in-laws Eileen and Joan. At age 15, Carson started full time work at Moyer’s Sand and Gravel. In 1964 he worked at GM retiring after 31 years. He was a member of Pelham Centre Community Church, where he served faithfully for 60 years.

Carson lived his entire life in the family home he built in 1956. Carson enjoyed playing hockey and was a founding member of The Pelham Pioneers. He enjoyed fishing with family and friends, golf, cards, pool, woodworking and yard work. Carson and Shirley enjoyed travelling to Europe, the Caribbean, across Canada and, every summer to a special place, Green Lake. Carson’s calm, compassionate, loving manner will be terribly missed. Special Thanks to the Paramedics and the Medical Staff at Welland Hospital, Dr. Ansari, Dr. Chiew, Dr. Khandelwal and Dr. Shoebridge and Cardiac Department of Hamilton General Hospital.

Friends and family were received at the Pelham Funeral Home, 1292 Pelham Street, Fonthill on Wednesday, November 24th. The Celebration of Life took place at Pelham Centre Community Church, 461 Canboro Road, Ridgeville on Thursday, November 25th. The family then gathered for a private interment at Hillside Cemetery. It is with great sadness that our family announces the passing of John Lochlin Daboll on November 28, 2021. John was in his 85th year, living on his family farm dating back to the late 1700s in Pelham Township.

Throughout his life John was a hardworking farmer while being employed at General Motors. He was incredibly wise and gave true meaning to “if dad can’t fix it nobody can”. John was known as an amazing storyteller of town history and took pride in saying “Pelham was as close to heaven as you can get.” Above all he considered his family and the love we have for each other as his biggest achievement and joy. Numerous safety videos include information on how to mount and dismount a variety of lifts, the benefits of skiing with a helmet, how to move up the mountain (literally) to ride bigger runs safely, and other topics.

For those interested in the environmental impact of Alpine skiing, it was refreshing to see the transparency of “Welcome to the Environmental Performance Section of the Ontario Snow Resorts Association’s Best Management Practices Manual.” This tab contains 36 pages of best environmental practice case studies within the industry, including a detailed list of ways that various facilities

in North America are responding to environmental concerns. Nichol was personally enthusiastic about OSRA partnering with Waterloo University and Protect Our Winters Canada, an advocacy group for policy solutions to climate change.

Mary passed away on her own terms on November 18th, 2021, in her 93rd year. A longtime resident of Fonthill, Mary will be well remembered by family, friends and neighbours in Toronto, Fonthill and Florida as an independent, bright, quickwitted woman who was always the life of the party. He will be remembered by his many aunts and uncles, nieces and nephews, and cousins. He will leave an imprint on many hearts of all friends and co-workers present and past. Jordyn graduated from Wellandport Christian School, E.L. Crossley, Niagara College, and Dave McMahon’s dog training academy. Dog training and breeding were Jordyn’s life passion, as well as music, and movies. He worked many years in the catering business and was currently employed at Empipe Solutions in Hamilton.

Family and friends were received at the Bethany Christian Reformed Church, 1040 Balfour Street, Fenwick, on Thursday, November 18th. The memorial service to honour Jordyn’s life took place at the church Friday, November 19th. The service may also be viewed by going to the Church’s website. A private interment took place at Hillside Cemetery in Ridgeville.

ur fi rst family ski vacation would be at Whiteface Mountain in upstate New York. We could stay in Lake Placid, a short drive away, and enjoy all the advantages of this unique winter sports community that had recently hosted the 1980 Winter Olympics. We could skate on the Olympic long track, where Gaetan Boucher won a silver medal, then ski the mountain where Crazy Canuck Steve Podborski took bronze.

It seemed like a good idea to put our six-yearold daughter and ten-yearold son on the double chair

lift together. My wife and I would catch the next chair so that we could “keep an eye on them.” After all, the chair had a single steel safety bar designed to secure a full-sized adult, and our kids could almost reach the footrests. What could go wrong?

We were within 50 metres of the mid-mountain transfer station, positioned precariously in the gap between Little Whiteface and Whiteface, when a rogue blast of wind screamed through the trough like a runaway train. Their chair, almost weightless with just the two young kids on it, swung wildly, at times

horizontal to the snow and ice-covered ground ten metres below. Thankfully they managed to hang on to that single safety bar for the eternity required to get to the off-load station, and disembark safely.

Our family left Lake Placid chastened, but hooked on outdoor winter activities.

This vivid memory returned as I studied the Safety and Environment page of Ski Ontario’s website, and discovered a six-minute safety video entitled Ski Lift Types and Tips. Had we viewed this video prior to our fi rst ski trip, our kids would assuredly not have been alone on an unknown lift ascending the eastern United States’ highest mountain.

Hidden Christmas

T

imothy Keller is one of my favorite authors. He writes with insight, creativity and challenge.

He’s also prolific having penned 14 books including “The Reason for God,” “The Prodigal God,” and “Making Sense of God.” The title above comes from a short book he authored in 2016.

Its subtitle reads, “The Surprising Truth Behind the Birth of Christ.”

Keller begins by noting that Christmas is both a religious and secular celebration. He writes, “My fear is, however, that its true roots will become more and more hidden to most of the population.” This motivated him to write “Hidden Christmas” to reveal its true meaning. In his words, “to understand Christmas is to understand basic Christianity, the Gospel.”

In the first part of the book, Keller focuses on the Gospel of Matthew and the gifts God gave on the first Christmas. Then in the second part, he turns to the Gospel of Luke and reveals how we can welcome and receive those gifts. He concludes with a chapter called “The Doctrine of Christmas” based on John’s first epistle.

Christmas is more about Santa Claus, time off school or work, family, food, presents and parties. They are largely oblivious to the fact that the true meaning of Christmas is about an event which divided history— the birth of Jesus, divinity becoming humanity. They will go through the Christmas season again this year and miss the main point like the toddler who is fascinated with the shiny wrapping paper and ignores the precious gift inside.

Partially hidden

And then you have a significant chunk of the population which understands

more of the true meaning of Christmas. These folks were probably church-goers as children and youth. They learned the main storyline of Christmas in Sunday School or from their pastor’s sermons.

But the full depth and richness of the message has not yet been grasped. Their minds give intellectual assent but their hearts have remained guarded and unmoved. They might even attend a carol sing or a church concert because of family tradition. But something is lacking.

Mostly hidden

Sadly, for most Canadians I concur with Keller that the true meaning of Christmas will be mostly hidden. They may hear a few Christmas carols (with Biblical truths in them) as they shop for presents in the local mall.

But they will be too busy or preoccupied to give the words much thought. As the cliché goes, “Familiarity breeds contempt,” and the familiar tunes of the carols will be heard but the message not absorbed.

A GRANDE EVENING At a recent Fabulous Fenwick Lions dinner meeting, 2021 Lion President Jeff Pickup presented Lori Grande, of Pelham Cares, a cheque for $800, consisting of the club’s yearly donation of $700 plus $100 toward Food Drive expenses.

Grande outlined how Pelham Cares worked during Covid to make the lives of some Pelham residents better.

continued from Page 1 of thunder seemed to tear the sky apart. Every cloud closed in for a dense, solid-looking dark gray sky. Lightning shot through the sky in sudden shafts of brilliance. I had never seen such a sight and began to feel uneasy.

“Be sure all the windows are closed,” Dad shouted. We all raced around upstairs and down to check. Then the rain began — not in drops, but in heavy torrents and sheets. How glad I was to be inside.

“What about the kittens and mother cat?” I screamed. “Hush,” said mother.

“Mother cat will have them safely in their box in the shed long ago. Animals can sense a storm long before we can.”

Just then we heard a strange howl.

Dad said, “It’s the wind gathering speed with the rain.”

Sure enough, even our house shook a bit. Were we really safe? The sound of glass shattering made us all jump.

“It’s the bay window,” shouted Mother. Luckily, we were all in the kitchen away from the dining room, but we rushed to see the damage. Sure

enough, the whole centre window of the bay was in sharp shards across the dining room floor, with several of Mother’s flowers pots joining the mess.

“I’ll get something to cover the window," shouted Dad above the noise as he maneuvered his way around the piles of broken glass to the shed to get some boards. Another blast of wind brought a pile of fresh straw through the opening. Rain was bad enough— but straw! Then more and more straw entered our dining room as if invited, each blast wetter and stronger that the last. Hurriedly we rushed to close all inside doors to keep our indoor straw stack separate from other rooms if possible. Between the lightning, the loud thunder, the heavy rain and the howl of the wind, and a storm that was now inside our house as well as outside, I began to understand what the word “bedlam” meant.

After a short, tense time, everything was over. The wind died down to a decent breeze, the rain turned to a few sprinkles, and the sun began to show feebly through the clouds while turning them to rather pretty colours.

But our home had not settled down

yet. Gingerly my dad gathered up the glass shards into the woodbox. Dad brought the big broom from the shed for Mother, and Mary used the house broom as they swept and swept straw.

I had the dustpan and little brush to try to get all the tiny chaff from the baseboards and every corner. It was our neighbours, the Newhouses, who had their wheat threshed that week when the fresh straw was blown into a large straw stack behind their barn.

Today they had half a stack…much of the other half was in our dining room.

For days afterwards we were picking chaff from the floor, baseboards and crevices.

It was later that we learned on the news that we had experienced a tornado. Many years later I learned that in the McNab Road area several trees were uprooted from the sandy soil near the lake and one huge tree damaged a cottage, trapping a pregnant lady inside. She was rescued unhurt. It was a day to remember. ◆ Everyone has a tale to tell.

cups blanched almond flour tablespoons coconut flour cup unsweetened cocoa powder teaspoon baking soda teaspoon fine sea salt cup maple sugar cup light-colored raw honey cup expeller-pressed coconut oil ounces unsweetened chocolate, chopped teaspoon pure peppermint extract

Coating 10 ounces dairy-free and soy-free semisweet chocolate chips 3⁄4 teaspoon expeller-pressed coconut oil 1⁄4 teaspoon pure peppermint extract In the bowl of a stand mixer fitted with the beater attachment, or using a food processor, combine the almond flour, coconut flour, cocoa powder, baking soda, salt, and maple sugar and mix thoroughly on medium speed.

In a saucepan, combine the honey, coconut oil, chocolate, and peppermint extract and cook over low heat, stirring until melted. Pour the melted chocolate mixture into the dry ingredients and beat on medium speed until fully combined.

Using your hands, pack the dough firmly into two balls, then flatten each into a thick disk. Roll each disk into a 1⁄4-inch-thick circle on a piece of parchment paper. Stack the pieces (with parchment paper in between) on a baking sheet and refrigerate for at least 1 hour, or up to 2 days. (If chilling for more than 2 hours, cover the top piece of dough with another piece of parchment paper.)

When you’re ready to bake the cookies, preheat the oven to 350 F and line two or three baking sheets with parchment paper or silicone baking mats.

Remove one of the dough pieces from the refrigerator. Use a 2-inchround cookie cutter to cut out circles and place them on a prepared baking sheet. Repeat with the remaining dough, rerolling and cutting circles until all the dough is used.

Bake one sheet at a time for 8 minutes, rotating the sheet halfway through baking. Cool the cookies on the sheets for 5 minutes, then transfer them to a wire rack to cool completely.

To make the coating, melt the chocolate chips and oil together in a double boiler or a heatproof bowl set over a saucepan filled with about 1 inch of boiling water. Stir the mixture frequently until the chocolate melts. Stir the peppermint extract into the melted chocolate. Turn off the heat and remove the bowl from the pan.

Dip each cookie completely into the melted chocolate and use a fork to lift it out. Tap the fork gently on the side of the bowl to allow any excess chocolate to drip off. Place the dipped cookies on the prepared baking sheets, then refrigerate the cookies for 1 hour to help the chocolate set. Serve chilled.
