Pelham Cares in need of volunteer drivers

BY TINA CHIVERS VOICE Staff When Lou Bradley wants to serve her community, she gets in her car and drives.

Bradley is a volunteer driver for Pelham Cares, and has been serving the community fro a little more than one year.

Betty Brown, Pelham Cares coordinator, client services, says that the organization is in need of more volunteer drivers.

The drivers are asked to provide rides to medical appointments for local clients of Pelham Cares.

Many of the clients are elderly people who do not have any means of

reliable transportation.

“All that’s needed is a car, a police check and a valid driver’s license,” says Bradley.

“I just help the clients into my vehicle and pop the wheelchair into my trunk—there’s no need for a truck; a car will do just fine.”

Dan Whipple is a Fonthill resident who uses the Pelham Cares driver service. A couple of years ago, Whipple suffered a spinal cord injury, leaving him an incomplete quadraplegic. Whipple says that he now needs help getting to and from his physiotherapy appointments.

Bradley, who has driven Whipple and other Pelham Cares clients, says that she volunteers her time as a way of giving back to her

own community.

“My parents aren’t here, so I can’t assist them,” she says. “So, I like being able to assist other seniors.”

The time commitment is entirely up to the volunteer. Drivers may submit their schedules to Pelham Cares, and the organization will call on them only when it is convenient for the drivers.

“If Pelham Cares calls and it doesn’t fit with my schedule, they simply call on someone else,” says Bradley.

According to Whipple, as the population of Pelham continues to age, there will be an even greater need for the service.

“More and more people are aging, and there is really an amazing need out there,” he says.

Rotary Club offers work in Brazil

The Rotary Club of Fonthill is once again inviting young professionals to take part in the Group Study Exchange.

The 2012 destination is Brazil.

Group Study Exchange involves young professionals between the ages of 25 and 40 who have been in their vocation for a minimum of two years and who are not a member of Rotary nor related to a Rotarian.

Successful candidates must be able to take a month away from their job to travel to Brazil and must be prepared to attend frequent team meetings

between December and their departure date of April 26, 2012 (returning May 28, 2012) The application deadline is Nov. 21, 2011, with the selection session happening all day on December 10, 2011.

The Group Study Exchange program, sponsored by the Rotary International Foundation, is an exciting program is to give young business and professional men and women the opportunity to experience a cultural and vocational exchange. The program provides travel grants for a four-person team and a Rotarian team

leader. While in Brazil, the team members are being hosted by local Rotarians.

The chosen team members will study the institutions, the Brazilian way of life and observe their own vocations as practiced in Brazil. The program is planned by the hosting Rotarians and their clubs.

VIEWpoints Turning the page in this chapter of the Voice I can hardly believe that a year has come and gone. Yes, it’s been a year since I donned the Voice of Pelham editor’s hat, and now it’s time to say goodbye.

Being the writer that I am, I’d like to think of my time at the Voice as another chapter in my life—a chapter made up of many pages, and filled with memorable highlights.

For starters, the people of this town have been amazingly accommodating to me, and I have made some wonderful friendships during my time here.

There are too many people to mention, but I’m sure you know who you are!

Some of you are now my Facebook friends, some of you have been in my home, and some of you have shared a campfire with me, and some of you share common interests with me.

And truth be told, I will miss Pelham itself.

I have witnessed the camaraderie among the people in Pelham, and I’ve enjoyed the small-town atmosphere. The summer bandshell concerts are an incredible testimony to the uniqueness and closeness of this town.

It was always so much fun to watch the town’s residents share summer evenings together, just chilling and listening to the tunes. Even the little outings like going to the grocery store or bakery were fun—I’d always bump into a friendly and familiar face.

Back in the days (of dinosaurs) when I was a journalism student, I learned about community newspaper reporting.

Writing for a community newspaper is much different than writing for a daily paper. The community news is in the faces, the expressions

of emotion, the smalltown charity events and get-togethers. This is the fabric of a town like Pelham, and these are the things that are important to you as residents.

During my time with the Voice, I’ve always tried to shine a light on the “movers and shakers” who live in this town— the people who tirelessly volunteer their time to help make the community a better place, the folks who give of themselves to help others living in their town. And I loved covering the “human interest” story—the talented artists living

here, the adventurous explorers, the teens who are willing to travel abroad to experience the living conditions of those who are less fortunate.

No call was ever too small, and I hope that I’ve served the community well. Thank you for the opportunity to live vicariously through you as I wrote your stories.

I am leaving, but I will always carry my memories of Pelham with me wherever I go. I am grateful for having had the opportunity to share your community with you (even for just a year), and I hope I’ve written a chapter that

Historical Society reflects on the war of 1812 Mr. Ralph Hogue, well-known educator and former resident of Welland, entertained the members with memorable stories, pictures and art work about his early life during the depression and war years reflecting on his experiences, his family’s life and business as well as the effect of world events on Welland.

He painted vivid pictures of an exciting class trip to the canal to see the “Bluenose” on its way to the Chicago World’s Fair.

He reminisced about listening to radio broadcasts of story programs such as “Little Orphan Annie”, “Dick Tracy” and the infamous “War of the Worlds” narrated by Orson Wells which terrified audiences with the fear of actually being invaded by Martians.

Family game nights were enjoyed as members played Chinese Checkers, Pick Up Sticks and card games like Old Maid

for the youngsters and Bridge for the adults. The blues of the depression and the war years were musically softened and chased away with songs like “Just Around the Corner”, “Smile, Darn You, Smile” and “Pack Up Your Troubles” which he delightfully sang a few bars of for members! Many of Welland’s buildings, landmarks and businesses were highlighted. He recalled good food at the Olympia Restaurant, the bustle at the train station of the T H & B and the N S & T Trolley and the Welland Ship Canal with its summer swimming in the waves of passing freighters. Proudly he displayed the photos and original paintings of his Uncle Lem’s artistic capture of the family blacksmith shop. Mr. Hogue’s grandfather, Michael Hogue, ran a very busy and successful shop shoeing the horses of the local dairies which used

Members nodded their heads with smiling faces as he recalled the fun of the original Welland Fairgrounds in September with the animals, food and rides of the midway.

Mr. Hogue’s presentation left members yearning for the halcyon days of the past in Welland during those years.

Trevor Minor spoke of his lucky historical artifact find on eBay from a seller in Greece! It is a menu dated 1959 from Keith’s Restaurant in Fonthill which boasts a complete roast beef dinner for $1.50, coffee for 10 cents and their famous slices of pie for 25 cents! Drop in a see a copy of it and have a piece of pie! The 200th Anniversary of the War of 1812 is of significance in this historically rich area of Niagara. In celebration, the Historical Society is

presenting a four part series on the War of 1812 developed by the National Film Board of Canada.

Part One, entitled “When I Meet My Doom…” begins with the declaration of war by the United States in Governor William Hull’s words: “Inhabitants of Canada the army under my command has invaded your country. The United States offers you peace, liberty and security. Your choice lies between these and war, slavery and destruction.” The story of the contributions of British military commander Isaac Brock, Shawnee War Chief Tecumseh, militia and citizens is told vividly through a variety of photos, paintings, poetry, re-enactments, maps and beautiful, scenic landscape photography.

Part Two, entitled “Or Leave Our Bones Upon Them…”, tells the story of Tecumseh and the dream of an Indian confederation on their

Procedural rules are important; they matter BY DAVE AUGUSTYN Mayor of Pelham Have you ever been part of a formal meeting that followed meeting guidelines like Robert’s Rules of Order? We use strict rules at Town Council and at Regional Council to advance public business on your behalf. For example, our meetings follow specific agendas, and the “first order of business” is to approve that agenda. The Clerk keeps accurate meeting notes and we approve those “minutes” at the next meeting.

A motion must be “moved” and “seconded” before we even discuss it. In addition, we use a committee system. Whatever a Committee decides is then “recommended” to Council for approval. But, Council can actually change that recommendation altogether, and, once approved by Council, a decision or action becomes final. We follow other rules as delineated in a “Procedural Bylaw”.

Well, a very interesting debate recently occurred at the Region that highlights the importance of knowing this process and these procedures. You see, during the Public Works Committee meeting on September 27, we considered a staff report regarding a new development called “Cannery Park” on the former CanGro lands in Niagara-on-the-Lake.

While a developer has upgraded a portion of the former operation and is successfully running a coldstorage facility, he also wants to rezone the surrounding lands and build 238 homes. While supportive, staff recommended continuation of an Ontario Municipal Board appeal so that the Region could negotiate a proportional cost-sharing agreement on behalf of taxpayers. This agreement would cover between $1.8 and $2.3 million of costs to upgrade and widen the Regional Road and to direct home construction away from an existing sewage pumping station.

voted down the recommendations. Then, after further debate, the Committee recommended to Council that Staff negotiate with the developer and have more information for our October 18 Committee meeting.

On October 6, Council debated the Committee’s recommendations; then, following a series of amendments and recorded votes, the majority of Council – and notably many of those who quite vocally wanted to give fast, carte blanche approval – postposed action on the entire matter “until October 19”.

But, since the deferral is to a day following the Public Works Committee meeting, we cannot actually deal with the matter until our Council meeting on October 27. It’s unfortunate when the real issues – like the appropriateness of a development, or the mitigation of additional costs to taxpayers – are lost because of the misunderstanding and misuse of meeting procedures.

Confit is a way of preserving food (most often duck) that involves salting the meat (normally the leg, though other bits work as well) for a day or two then poaching it in duck fat until tender. The meat is then immersed in a jar of hot duck fat and sealed, a process that will keep the meat for lengthy periods of time. When removed from the fat and either fried or baked, the meat is sinfully rich and flavourful. Duck fat is also lavishly used in the South of France, especially for cooking potatoes. Duck fat is not like other fat.

In fact, some scientific studies have likened its properties more to olive oil than to animal fats, and the French don’t seem to suffer from imbibing it in magnificent quantity.

Ducks are by nature fatty creatures, so anytime the meat is cooked, fat results. Diced potatoes cooked in duck fat until golden and crisp are every bit as good as the fantastic frites the French do better than anyone (except the Belgians). And then there is foie gras. Ducks are force fed until they are obscenely fat and their livers are enormous (at which point, they are among the most valuable birds on earth). Those livers are now called “foie gras” or “fat liver” (the French translation looks better on a menu), and they sell for prices that make gold look cheap.

Brian Green inferior quality livers that aren’t sold as fresh foie gras are processed into paté or terrine and sold in tins or jars in specialty shops where even these secondary products fetch impressive prices.

However, as I have said, the magret or breast of the duck is the most commonly available part of the duck, and you’ll see it in French supermarkets and butcher shops the way you might see T-bones or pork chops here. The very best magrets are those from ducks that have been fattened to produce foie gras; they are about twice as thick and meaty as the breasts of normal ducks. Preparing magret de canard is simple, and in previous columns I’ve mentioned my favorite recipe (from Michael and Anna Olson’s On the Twenty cookbook).

Just score the fat in a grid pattern and fry the breast fat side down for about 5 minutes, then pop it into a pre-heated 375 degree oven (without turning it over) for another 15 to 20 minutes. Duck, unlike other poultry, should be served medium to medium rare. Serve it with a sweet sauce like the sour cherry gastrique the Olsons use (or smear honey on the meat while it’s still very hot) and, of course, potatoes sautéd in the fat.

Students and staff at École Nouvel Horizon took part in a Toonie for Terry event held on September 28, the National School Run Day along with 3,700 other schools across the country. The students really enjoyed the walk and run as well as the three legged soccer game and potato sack races complementing the limited mobility theme. Nouvel Horizon has taken part for the past six years to raise awareness about cancer, cancer research as well as the importance of getting involved as a community to help others. The donations came in at $211 contributing to an overall total of $4,490 for the Terry Fox Foundation in the past six years.
