RECIPE

20-MINUTE CHEESY CHICKEN ENCHILADA SOUP YIELD: 4-6 Servings Total Time: 20 min Prep Time: 5 min Cook Time: 15 min INGREDIENTS: 2 tablespoons vegetable oil 1 cup diced white onion (about 1 small white onion) 2 cloves garlic, minced 1/2 cup masa harina (corn flour) 3 cups chicken stock 2 cups cooked, shredded chicken 1 1/4 cups (or 1 10-ounce can) red enchilada sauce, homemade or store-bought* 1 (14-ounce) can black beans, rinsed and drained 1 (14-ounce) can diced tomatoes, with juices (I prefer fire-roasted) 1 (4-ounce) can chopped green chiles 1/2 teaspoon ground cumin 8 ounces sharp cheddar cheese, freshly grated 1 teaspoon salt, or more/less to taste optional toppings: tortilla chips/strips, diced/sliced avocado, grated cheese, sour cream, chopped fresh cilantro, and/or pico de gallo Large zip-top bag Roasted potatoes (optional) DIRECTIONS: 1. Heat the oil in a large stock over medium-high heat. (To save time, peel and dice the onion for the minute or so that the oil heats.) Add the onion and sautĂŠ for 5 minutes, or until cooked and translucent. Add the garlic and sautĂŠ for an additional minute until fragrant. Stir in the masa harina and cook for an additional minute.

2. Pour in half of the chicken stock and stir until completely combined. Add in the remainder of the chicken stock and stir to combine. Immediately add in the chicken, enchilada sauce, black beans, tomatoes, green chiles, salt and cumin, and stir until combined. Continue stirring occasionally until the mixture reaches a simmer. Reduce heat to medium-low and let it simmer for 3 minutes, stirring occasionally so that the soup does not stick to the bottom of the pan. Then stir in the cheese, one handful at a time, until combined. Taste, and season the soup to taste with salt.

3. Serve the soup warm with desired toppings.

EMPTY NESTERS

Traditions Empty Nesters Celebrate

THE "SOUPER" BOWL

The Traditions Empty Nesters kicked off their 2019 festivities on Saturday, February 2 with a Souper Bowl event that was perfect to chase away the bitter chill of the previous week!

Forty-eight friends and neighbors signed up to attend the event.

We enjoyed five different crock pots of soup, ranging from white bean and ham, to clam chowder, to taco soup, vegetable beef and __ (something French…I can’t remember the exact name).

Our all-star chefs included Carol & John Mays, Becky & Hunter Bicknell, Kay & Richard Hyslop, Mary Ann & Jim Barry and Cheryl & Steve Morrell. All the other guests also contributed: yummy appetizers, breads and (score!) fabulous desserts!

After dinner, Coach Margaret Hanson did her best to provide instructions for our two games. First, she reminded us of our school days when we made triangular paper footballs and practiced punting them over our friends’ finger goalposts. She bravely tried to teach our directionally-challenged group how to fold our papers into those footballs. “Fold it like a hot dog…not like a hamburger.” After a few false starts, we were finally ready to play. At each table, the members were instructed to take turns kicking their paper footballs between the uprights of our wooden goalposts (cleverly crafted by Beth Grimes).

After a 10-minute period, the points were tallied to determine which team had the high score. One team had kicked more than 100 field goals! However, they received a penalty flag when it was determined by the referee that they had not followed the

rules to win. So, the 2nd place team, who had kicked 30 field goals, was declared the winner! That team was captained by Wayne Davis and Bruce Higbie, who admitted that their skills may have been perfected during their time spent in detention in high school. And both of those gentlemen would consider coming out of retirement to replace the Falcons’ kicker, Matt Bryant, who has recently been released from the team.

Our final game of the evening was even more challenging. Each table team got a sheet of paper with 30 questions on it and using the clues provided had to guess which NFL team. For example, the clue “Pope’s assistant” would be the Arizona Cardinals. Or Nov. 1st is their day would be the New Orleans Saints. I No sweat, right? At the end of the evening, the SAME team who won the kicking contest (Bolens, Davises, Thompsons, Higbies), won the “Name That Team” contest. Can you say MVP? Being good sports, however, the SOUPER Bowl champions graciously shared their fabulous prizes of chocolate football candies with the other teams. And at the end of the evening, we all went home as winners!

GOLF GROUPS COUPLE’S GOLF

This group has three consecutive tee times every Sunday morning. In Spring, Summer and Fall, they begin play at 9:30AM More tee times can be added depending on how many couples wish to play. LADIES’ GOLF GROUP

Currently, the ladies have two standing tee times Monday thru Friday starting at 8:30 AM. If you are interested in joining the Ladies Golf Group (even occasionally), please email Pam Poppe at ppoppe@mindspring.com if you wish to be included. Each Friday, Pam sends an email to the group asking which days you are interested in golfing during the coming week. She only asks for a 48-hour notice so she can add or cancel tee times. Don’t worry about handicaps since the skill levels vary widely. These women golf for fun! If the morning times don’t work for you, please let Pam know if you are interested in playing 9 holes at other times of the day.

SENIOR MEN’S GOLF GROUP

The senior men gather to play an organized format of stroke play on Monday, Wednesday and Friday. You never know who you will get paired with on these days, so it’s a great opportunity to meet your fellow neighbors and make new friends. On Thursdays, it’s just pair-up and play as you like. The course is closed on Tuesdays. Currently, our block of tee times starts at 10:00 AM. You can play as often or as little as you like; just show up at least 15 minutes before the first tee time. This is a social group with members of varying skill levels. Every spring and fall the men gather at the club grill for a fun evening with their significant others. IS IT REALLY HARDER TO LOSE WEIGHT AS WE MATURE?

Getting old ain’t for sissys! As we mature in age, we start to experience physical and mental changes and losing weight can seem more difficult, especially if you’re finding it more and more difficult to get around. Sarcopenia, which means muscle loss, affects all of us as we age. In addition, our bodies burn fewer calories at rest, but our appetites haven’t necessarily decreased.

We can’t turn back the clock so what are we to do?!!

1. KEEP MOVING! Arthritis, recovery from surgery, etc. can slow you down but if you have clearance from your doc, you should be exercising or getting some kind of daily physical activity. There are lots of low-impact options such as walking and yoga. When pain is the problem, pay special attention to what you eat and eating anti-inflammatory foods. Stick to veggies, fruit, whole grains, beans and legumes and heart healthy fats such as avocados and nuts/seeds. Limit meat, especially red and pork.

2. DITCH THE OLD WAY OF DIETING – a cup of java and glass of OJ does not a good diet make. You also need protein and fiber for breakfast and really at every meal. Check out myplate.org for nutrition guidelines and recommendations on what a balanced diet looks like.

3. Focus on what you can add to your diet not cut out – sure, you can lose weight by just eating a piece of dry toast for breakfast but really, what’s the goal here? We want to become stronger not weak and frail. Our bodies need fuel with the proper nutrients, vitamins and minerals which is hard to get on a very restrictive diet. Nutrients also preserve what muscle of bone density we already have!

4. ARE YOU AFRAID TO EXERCISE OR THAT YOU WON’T DO IT RIGHT? Well, any kind of movement is better than nothing I suppose however, you don’t want to hurt yourself or make a past injury rear its ugly head. Find an activity that keeps you moving and that you enjoy and this way you will do it and it won’t be so hard to get motivated. Look for ways to get strong with a strength training program whether in your home, gym or getting a certified personal trainer. Do it and don’t delay! Muscle mass fuels your metabolism so our bodies burn more calories too. It’s never too late to get strong!

5. CUT OUT SNACKS. GOOD OR BAD ADVICE? I say snack if you are hungry and your snacking on something nutritious. Healthy snacking can keep you from overindulging when you do finally sit down to a real meal. Snacking keeps your blood sugar stable by eating ideally, every 3 – 4 hours. Examples of good and satisfying snacks are an apple with a handful of almonds or yogurt and berries.

Hope this helps. I encourage everyone, not matter what age, to make a goal of getting stronger this year. Women keep doing things that keep you active and strong (cleaning, gardening, etc.) and open your own jar and bottle lids. Men take the advice for women as well, especially about cleaning! Do pushups on the counter or floor when waiting for your coffee to brew (women do this too!) And, if you need some accountability or just don’t know where to start, please contact me about training in your home, my home gym, Traditions fitness center or a convenient location of your choice. R EM I NDE R S Please remember that the condition of the exterior of your home has an overall impact on how the Community is perceived. Be conscious of your lawn, flower and tree beds as well as the exterior of your home. Insure that your flower and tree beds are free of weeds and have ample fresh pine straw or mulch applied (pine straw/mulch should not look grey or weathered). Please make sure that you have your lawn and beds on a weed control and fertilization program; regular applications are necessary to keep your lawn free from weeds. In some instances, it may be necessary to pull weeds while you are waiting for your weed program to take effect. We would also like to remind residents that burning of grass is prohibited as it is considered unsightly and hazardous. Grass burning will result in an immediate fine of $250 and amenity access cards will be disabled until paid. We would like to avoid sending notices for homes and yards that are not well maintained as much as possible and your attention to these items will help us accomplish this goal.

Please remember that recreational vehicles, boats, trailers, and commercial vehicles are not permitted to be parked or stored on the property unless you are able to store them inside your garage and out of sight. When the weather starts warming up these are items that many residents may forget. Again, we appreciate your help and cooperation. Your support will help keep Traditions beautiful and make it the best Community it can be!
