There is a saying that goes…if you want to know about good food ask the locals; If you want to know about great food, ask the chefs…and that’s just what we did. We’ve brought together some of the deserts most talented chefs to share some secrets and see what’s cooking in their kitchens.

From savory dishes to dazzling desserts, the future of food is happening here in Palm Springs. Find out what kitchen tools the chefs can’t live without, what’s on their plates at home, late night snacks and favorite ingredients…the chefs tell all.

TONY DI LEMBO Tropicale - Executive Chef / Owner 330 E Amado Rd, Palm Springs, CA 92262 (760) 866-1952 The Tropicale Restaurant & Coral Seas Lounge® is located in the heart of Palm Springs, California. Opened in 2008, the restaurant has earned numerous awards including Open Table’s Diner’s Choice Award for 2009 and 2010. A chic and sophisticated décor provides the setting for its distinctive “world cuisine”, a provocative mix of zesty influences that creates a delightful dining experience in this beautiful desert community.

After Attended the Culinary Institute of America in New York and graduated 4 AOS Degree, with High Honors, Tony lived and studied in Italy and France. He then returned to the states and became full-time personal chef for Barbra Streisand.

With a very successful run of restaurants; INDIGO and TAHITI on Third Street in Los Angeles, a wholesale bakery called Breadworks, Chippy’s Diner, The Copa Room …adding numerous achievements to his credits, Tony now shares his culinary genius with Palm Spring.

What is the one cooking utensil you could not live without?

Mini Chopper, I use it all the time. It saves so much time and you can just use it for everything.

Favorite ingredient ?

My favorite ingredient has got to be garlic. Being Italian and just in general, you’ll find garlic is used every single cuisine, and it always seems

to act like the bass in the symphony. But you have to be careful how you use it. It has to be cut right, cooked right, and used the right amounts in order for it to be effective.

What’s on your dinner table?

There’s usually not much on my dinner table because when you own a restaurant, and eat in the restaurant six nights a week, when you’re home it’s usually pretty casual. Every once in a while, I’ll test out some great Indian dish, or something kind of exotic.

Food / Dining philosophy ?

I’m really finding people are favoring simplicity with foods. As I get older, I find it’s just easier, and certainly healthier. I’ve also become almost exclusively organic with what I cook and eat. Meats, veggies, dairy, etc., are all available organically produced and lend themselves to more flavorful cuisine, and certainly more healthy. So many vegetables are grown with pesticides, and chemicals, and even though the producers claim that they can be washed away, I’m not gonna take that chance.

And eating meats or poultry that are raised with chemicals, hormones, and on an un-natural diet of corn and fillers, etc., just doesn’t make sense to me either. The world used to be organic, then we found chemicals and pesticides, but I really think it’ll soon return to organic. This is my philosophy and philosophy of the restaurant. Most of the foods that we serve at the restaurant and certainly all of the meats, fish, and poultry, are all organically produced.

Mark has owned a number of different restaurants in Door County Wisconsin such as the Village café, a local hot spot for breakfast and lunch and would feature nightly traditional Door county fish boils.

Bayou on 3 rd. was Door county’s first Louisiana/ Cajun restaurant.

With Marks love of New Orleans, he captured dishes such as crawfish

Trio Restaurant (Door County) was collaboration with Mark and two friend’s Jerry and Ron; Trio Door County is a wonderful country French and Italian restaurant. When Mark moved to Palm Springs Jerry and Ron bought him out and Trio Door County is still going strong.

FELIPE CASTANEDA El Mirasol Cocina Mexicana El Misasol at Los Arboles Executive Chef/Owner 140 E Palm Canyon Dr, Palm Springs, CA 92264 (760) 323-0721 Hailing from the small ranching town of Tepechitlan, Zacatecas in central Mexico. Felipe grew up in a family of modest means that revered the food traditions of Mexico. The eldest of 11 children, after high school he set out to find adventure in California and eventually found his passion working in the Mexican restaurant of the San Fernando Valley. In the 28 years since he opened the original El Mirasol on South Palm Canyon, he and wife Lisbet have grown the family business (now two restaurants and the new Arboles Hotel) while raising three daughters in the desert.

Felipe carries many of the mannerisms of a self-made man; a friendly, easygoing demeanor that puts people at ease, a sharp eye for details, and the ability to manage the “crisis du jour” without missing a beat. But its’ that reverence for the food traditions of Mexico that really drives him…a reverence which will be crystal-clear the first time a piping hot plate of tangy El Mirasol Pork Chili Verde hits your table.

What is the one cooking utensil you could not live without?

My knives of course! With my knives, there is nothing that I cannot create.

Favorite ingredient?

Chiles! So many to choose from, each with their own unique qualities!

I love to cook and to experiment with this many times overlooked beauty!

Chiles to me are like all beautiful things in nature, each unique, each an individual and each to be treated with care and respect!

When most kids were watching Saturday morning cartoons Ethan sat captivated in the kitchen watching his German descended, Texas-born Grandmother prepare simple meals with great detail.

His Grandmother’s instruction and beautiful food instilled a desire in Ethan to bring happiness to people through food and solidified a cooking style philosophy Ethan would take with him always.

After graduating from St. Edward’s University in Austin, Texas with a Bachelor’s Degree in Communication Studies, Ethan’s dream to become a chef became a reality when he was accepted to the most grueling culinary school in the United States, the New England Culinary Institute.

While there, he earned several accolades and accommodations from the administration and the chef instructors to include the very prestigious Golden Tongs Award for Overall Excellence.

After graduating, Ethan worked for some highly regarded chefs at hot spots in Boston, Los Angeles (Shutters on the Beach), and San Francisco (Grande Café – Brasserie and Bar) before returning to Texas.

He was Executive Chef for the Lombardi Family Concepts restaurant, Taverna, then Executive/Concept Chef of Snap Kitchen where he worked alongside nutritionists to develop a health conscious menu that still captured a robust flavor profile.

Ethan was approached by David Bull, a Top 10 Food and Wine chef and former Executive Chef of the Driskill Hotel, to join his team in opening Second Bar and Kitchen – a highly anticipated casual dining restaurant in downtown Austin. The menu collaboration between Ethan and Chef Bull resulted in a perfect culmination of simple American cuisine that could tantalize the most complex of palettes. In 2012 on a whim, Ethan moved to the Coachella Valley to broaden his experience and took a position as Chef de Cuisine at the bluEmber, the signature restaurant at Rancho Las Palmas in beautiful Rancho Mirage. Ethan has completely redesigned the restaurant’s menu for which he continues to receive accolades What is the one cooking utensil you could not live without?

Razor or Y peeler. These are an indispensable tool that every cook should have. They are inexpensive and are great to turn fresh vegetables into an amazing salad.

Who or what inspires your recipes?

My Maternal Grandmother, Blanche. She was and continues to be a major driving force in everything I do in a kitchen. I miss her terribly, however, her spirit lives through me and my food.

Favorite ingredient?

Verjus...it is a tad sweeter than vinegar and it can help everything taste better.

Favorite late night comfort food?

I would not know what I would do if I weren’t a Chef, but if you must know, I would be a Painter.

CHEF JOANE – DISH dish Creative Cuisine Executive Chef/Owner 68525 Ramon Rd., Ste. A-101 Cathedral City, CA 92234 760.832.6526 dish is the brainchild of former local lawyer turned chef Joane Garcia Colson. After a successful legal career, both as a trial lawyer and trial consultant, and over 10 years as the Executive Director of a non-profit that provided continuing legal education to lawyers, Garcia-Colson left the legal arena to pursue her passion, cooking and sharing food with others. Joane completed her culinary training at the Arizona Culinary Institute in Scottsdale, graduating with both honors and distinction and most recently worked at Binkley’s Restaurant in Cave Creek, AZ under the tutelage of James Beard Foundation Best Chef Southwest finalist Kevin Binkley. Joane has been passionate about food since an early age and began cooking as a young girl when she was growing up in Colorado.

COVER At dish, Garcia-Colson and her team pride themselves in creating new and exciting contemporary American cuisine with an emphasis and focus on flavor. “ Our hope is that our guests have a unique, delicious and creative dining experience from start to finish.”

He believes cooking came to him, and not the other way around. In 2010, he graduated from the Art Institute’s International Culinary School in San Bernardino majoring in Culinary Arts. Today he is focused on growing professionally and individually to fulfill his dream of becoming a positive impact to as many people possible.

What is the one cooking utensil you could not live without?

This is a really tough question to answer! And it is very hard to narrow down the list of utensils I love to just one. At the moment, I would say a Chinois. Ask me in an hour and I will probably give you a different answer.

What is the one cooking utensil you could not live without?

This answer may be a typical one but I would have to say Tongs.

They have to be the good ones with the spring at the hinge. No rubber, no lock mechanism, no grips; The Standard (see what I did there) 12” stainless steel tongs. When I first started working on the hot line, a cook said to me “these are your hands,” holding a clean, dry kitchen towel in one hand and a pair of tongs in the other.

How are your recipes developed?

Through trial and testing. When I get an idea I make the dish, taste it at all stages and continue tasting until I think it is ready to share with others. At this point, I share the new dish with trusted people, get their feedback and continue to refine and improve the dish until I am happy with it and my testers give it a thumbs up. To me it is important to consider and keep in mind the palettes of others. As a chef, I am not cooking for myself, but for the guests that dine at my establishment.

Favorite ingredient?

Another very difficult question. As with the question about what cooking utensil I could not live without, I have many ingredients I love using. Ginger, black pepper, star anise, jalapeno, berries, cherries, white balsamic vinegar, champagne vinegar, port to name a few.

What’s on your dinner table?

New dishes I am working on. Unless I am too tired to cook at home.

Then the cooking falls to my wife.

What would you be if you weren’t a chef?

Documentary filmmaker.

GABRIEL WOO Jiao - Chef de Cuisine 515 N Palm Canyon Dr, Ste B-10 Palm Springs, CA 92262 (760) 321-1424 Born in Guadalajara, Mexico, Gabriel Woo (28) has lived in the Palm Springs area since 1989. The last name “Woo” comes from Gabriel’s Chinese lineage. He remembers watching Julia Child on television at age 9 and tried making his first peanut butter cookies as soon as he found the cookbooks at the elementary school library. His first job was stewarding at the Tamarisk Country Club in Rancho Mirage, CA. at age 15. At age 22, after working various positions in different fields, he decided that cooking was his calling.

Favorite Ingredient?

I love the whole Allium family. Onions, shallots, chives, garlic, etc.

They are usually the foundation on which to build your “flavor structure.”

Favorite late night comfort Food?

It’s all about the cold cold cold bowl of plain, hearty cereal with almond milk. Especially out here in the desert! If I’m out late with friends, there is nothing wrong with the California Burrito from Santana’s. It has fries in it! Best part is they’re open 24 hours!

What would you be if you weren’t a chef?

Creativity and Art run in my family. I am a fan of building things from scratch by hand so I think I would tap into the crafty side of myself.

I wouldn’t mind being a musician either. I played the alto-sax through middle school and as a freshman in the high school marching band.

JUAN CARLOS VIZAGA Wangs in the Desert - Executive Chef 424 S Indian Canyon Dr, Palm Springs, CA 92262 (760) 325-9264 My live and passion as a Chef started in Beverly Hills working at Jackson’s on Beverly Ave. The clientele were mostly Hollywood celebrities.

After that, I worked at Chasen’s Restaurant, Four Seasons in Beverly Hills, and Four Seasons Newport Beach.

One of my favorite work place was “ Splashes” at Surf and Sand in Laguna Beach, a restaurant with organic Mediterranean cuisine where the waves of the ocean splash against the Resort.

I have always been attracted to the desert. I worked in Rancho Mirage and now I am so happy to work at Wang’s in the Desert in Palm Springs since my passion is to develop new flavors and create Art on a plate.

Using French techniques and blending Asian flavor and display Art on the plate.

Ginger, Lemongrass, Sake, Chambord, Balsamic reduction.

Fresh herbs, Ginger, Onion, lavender and organic vegetables.

Largest Cake you’ve made?

Largest cake was an 8 tier Las Vegas Themed Cake. Took 3 days and the hardest part was getting it to the venue without it falling!

Favorite Dessert?

Yikes, I am actually not a sweets person, which is strange since this is what I do for a living and have a passion for. If I had to name something I really enjoy, it would be Coconut Cream Pie. What would you be if you were not a chef?

I would be a radio personality! I had a long career in radio before coming a chef and really enjoyed the career.

What would you be if you weren’t a chef?

Helping people is important to me whether it is through the channel of Real Estate or a non - profit organization.

Chef Roman Blas’ journey to Palm Springs began in Atlanta where he graduated from the Le Cordon Bleu College of Culinary Arts with honors. He then worked in top-rated restaurants including the Ritz Carlton and for well-known and innovative chefs, including Tyler Florence and Richard Blais, winner of the Bravo TV’s “Top Chef All-Stars.”

His chocolate covered potato chip cupcake was chosen by Food and Wine Magazine as one of America’s most savory cupcakes and CNN’s America’s Most Crazy Cupcakes! His “Loaded Bars” made of a caramel cookie crust, coconut, ganache, and chocolate pearls won The People’s Choice Award at the October 2011 Chocolate Affair in Palm Springs. The bakery took First Place in the 2012 Fantasy Springs Cupcake Challenge with the creation of Chocolate Miso Caramel Crunch.

Soon the Food Network started calling as did other media outlets as well as radio and other publications.

Chef Blas is not afraid to experiment with flavors and ingredients and has become known for his creative innovative dessert creations and creating fans locally and nationwide!

What is the one cooking utensil you could not live without?

Offset Spatula. I use it for everything in the kitchen. Cakes, cupcakes, pies, bars, cookies, everything!

by Scott Robertson. Scott was born and raised in Palm Springs, CA and graduated from Palm Springs High School.

He earned a degree in Business Administration from Humboldt State University in 1987, and opened the Ritz Carlton in Rancho Mirage as Sous Chef in 1988. He also worked at the Wyndham Palm Springs as Chef de Cuisine, and was Executive Chef for Indian Well Country Club, Chaparral Country Club and Avondale Country Club, and Executive Sous Chef for Indian Ridge Country Club.

He has cooked for Presidents, Cater, Reagan and Ford at the Mission Inn in Riverside. His experience as Executive Chef at Eisenhower Medical Center and Heart Hospital of the Desert Led him to open New Leaf Catering ten years ago, along with his restaurant Just Soup.

What is the one cooking utensil you could not live without?

Fav cooking tool. 8 inch Global Santoku, or the go to back up Micro plain. Both of these tools are ultra-versatile.

What’s the largest number of people you have cooked for?

Largest group feeding. IMB California 10 day conference. 5000 thousand meals daily. Crazy, crazy 15-hour days and food from every angle and continent.

Favorite ingredient?

Seasonal fresh.

Favorite late night comfort food?

Killer Peanut butter and honey. Frosted mug of whole milk.

COVER What would you be if you were not a chef?

If it was a paid position, I would love to design and build high performance speedboats. Non paid position; Working in the local school districts. Teaching creative and healthy food preparation. We need to pass on our knowledge to the next generation of chefs.

CHANTAL CATER Cheeky’s, Birba and Jiao - Pastry Chef After graduating from The le cordon bleu in Pasadena in 2005, I was lucky enough to land an externship at Providence in Los Angeles when they were first opening. I got to see first-hand how opening a fine dining restaurant works. They currently have two Michelin stars. I continued to build my career and work through the ranks, finally landing the executive pastry chef position at the Parker Palm Springs before deciding to join the foundation 10 family. The task of creating desserts for three different restaurants and types of cuisine for cheekys, birba and jiao has been one of my favorite things about this company....that and that we truly are a family.

One cooking utensil you can’t live without?

Large offset spatula. Icing a cake with a butter knife just doesn’t cut it. You can also use it to lift and move delicate desserts and brandish it at anyone who might be trying to steal a cookie.

Largest dessert you’ve done?

I once did a huge five tier wedding cake where the tiers were each seven inches tall. It was massive! I still get knots in my stomach when I think of transporting that cake to the event space. It arrived safe and sound luckily!

Worst kitchen or event disaster?

A bride had given me her beloved grandmothers apple cobbler recipe for dessert at her wedding. I did 100 bowls and put them on a covered cart. When the stewards picked it up to take it to the event space, a wheel slipped off the side of the loading dock outside the kitchen and the whole thing crashed to the ground. I had twenty minutes to do it all over. It got to the table just in time and the couple never even knew there was a problem. And I still use that recipe!!

Favorite ingredient?

Using a high quality butter is a must in baking. The flavor, texture, smell...it’s amazing. I also really enjoy using my vanilla extract that I make myself.

What is your favorite dessert?

I get asked this a lot and I answer differently every time! It’s so hard

to pick one thing but the thing I enjoy making the most is ice cream. There are endless possibilities and its guaranteed to put a smile on a customer’s face. (Especially when I made sriracha lime ice cream!) I make sure all three of our restaurants have a few flavors to choose from each week.

What would you be if you weren’t a chef?

I can honestly say there is nothing I’d rather be! I went to art school for a while but traditional college wasn’t for me. Culinary school was where I thrived. I do hope to add “restaurant owner” to my title one day.

TALKS LAST MEAL ON EARTH

Advice for restaurateurs and old-school cocktails We sat down with TV’s best-fed hedonist, Anthony Bourdain, who is keeping busy these days with his hit travel series “Parts Unknown,” his publishing career and an upcoming appearance at this year’s National Restaurant Association Restaurant, Hotel-Motel Show in Chicago. Love him or hate him, Bourdain is the biggest, baddest food dude on the planet. The self-proclaimed “chef slacker” shares his advice for restaurateurs and new chefs, and talks about his desired last meal on Earth and love of old-school cocktails.

Q. You have 24 hours left on Earth: Where would you go, and what would you eat?

A. “Sukiyabashi, Jiro in Tokyo. I would sit down in front of the greatest sushi master that I have ever met and eat whatever he puts down in front of me. That would probably take about 22 minutes, if past experiences are my guide. I have had it before, and it’s one of the greatest meals of my life. If I’m going to be shot in the back of the head after a meal that would be a good way to go.”

Q. You’ve made it well known that you started in the restaurant industry by washing dishes. What’s one piece of advice that you wish you could tell your former self about the restaurant industry?

A. “I was a very happy dishwasher! I just wanted to be part of it. I didn’t want to necessarily rule the world. I made many decisions along the way where I chose to have fun rather than to excel. I chose to be a chef rather than the student of a really talented first-rate chef. I made a conscious decision not be the best that I can be. I was pretty set in my ways about the kinds of kitchens that I felt comfortable in and wanted to work in, and that was not conducive to me ever becoming a Michelin-starred chef. I think that the greatest lesson I ever learned in the restaurant business (and I learned it early) was to show up on time. Whatever work, whatever commitment, you have, always show up on time to show the people who you work with the respect that you can at least do that.”

Q. Which chefs are most exciting to you now that you could see establishing future partnerships within your publishing career?

A. “For the chefs that I’ve published and hope to publish, it’s not just about the food. It’s people who are doing interesting things and who have an interesting story and point of view. The recent chef

books I would have loved to publish would be Gabrielle Hamilton’s memoir (Blood, Bones & Butter: The Inadvertent Education of a Reluctant Chef) of The Joe Beef Guys. There are real voices there of people who are saying something new and interesting to create a whole world and mindset that explains the food. Generally speaking, I look for someone who has a powerful voice and can explain why they cook the way that they cook in a personal and dynamic way.

Roy Choi’s book is coming out soon, and I think that he will be a good example of that.”

Q. What’s the best advice that you have for restaurateurs facing the challenges of today?

A. “Today’s restaurants need to have a concise vision of what they are good at and what they have to offer that is different from the guy across the street. Restaurateurs need to speak in a strong confident voice, saying, ‘I might not be good at some things, but I’m good at this, and this is what I’m going to do.’ I think the days of trying to be everything to everybody are over now. We have an empowered chef class now and a much more curious, daring and younger dining public. I think the future is going to be chefs who speak with a coherent, concise voice with a real identity. Own that this is what I do. More of like in Asia where you have the roast duck guy and the chicken and rice guy.”

Q. What do you look for in your favorite cocktail?

A. “I am a big fan of cocktails, but if takes you more than 10 minutes to make it, there’s a problem. I’m an old-school guy: Give me a good Manhattan, old fashioned, or the perfect Negroni with the finest gin, vermouth and Campari with maybe a slightly toasted almond zest, and I’m a happy guy. I think the standard for me is the drink that I’m about to make with bourbon better than bourbon?”

With the fall of both the Defense of Marriage Act and Prop. 8, our relationships are now equal, and all Californians are now more free.

But, our work does not begin and end with marriage. Our mission

is full equality and absolutely nothing less. We stand atop a great victory in the Supreme Court, but that also gives us the vantage to see beyond marriage to the next hard climbs of equality.

Isn’t an epidemic of bullying and youth suicide as pressing — if not more pressing — than the freedom to marry? Transgender

EQCA UPDATE people face discrimination, harassment, violence and economic injustice at alarmingly high levels. Some seniors are returning to the closet rather than facing harassment in nursing homes. While we have strong anti-discrimination laws in California, there is still no federal employment nondiscrimination law, leaving members of our community terribly vulnerable in 34 states.

The challenges still facing the LGBT community after decades of historic discrimination are all around us: The American Academy of Pediatrics reports that lesbian, gay and bisexual adolescents are victims of bullying twice as often as their straight peers. No more than 10 percent of American youth are LGBT but 40 percent of homeless youth are LGBT, according to the LGBT Youth Homeless Service Provider Survey. The journal Child Welfare reports that 62 percent of homeless LGBT youth have attempted suicide compared to 29 percent of their straight peers. According to the National Gay and Lesbian Task Force, LGBT elders often resist services designed to help them because of real or perceived discrimination. Harassment and discrimination is rampant in the transgender community. Unemployment for transgender people is twice the national average; 90 percent of employed transgender people have faced harassment at work; and 47 percent describe losing a job or promotion due to their gender identity, all according to the National Trans Discrimination Survey by the National Gay and Lesbian Task Force.

There is a temptation to see our victories with marriage as somehow completing our work. We must remember that equality will always be challenged. Just 24 hours before the rulings on marriage, the Supreme Court gutted the Voting Rights Act negating decades of policy protecting the right to vote for many Americans.

The pro-choice movement had its landmark Supreme Court victory, Roe v. Wade, 40 years ago in 1973. Last year alone, in Congress and state legislatures across the country, there were over 2,000 pieces of legislation introduced with the intent of stripping women’s reproductive health rights. Similarly, LGBT people will always need political power and vigilance against those who would hold us back out of prejudice, ignorance or malice.

Because we hold to the principles of equality with great integrity, we will continue our work beyond marriage. There were many with us on the campaign for marriage who agree that there are other pressing priorities. They supported us when we stumbled, felt the pain of our setbacks and shared the elation of our victory. Their solidarity came with an implicit promise that we would not forget them, that equality means more than marriage. Now that we have marriage, we must in no uncertain terms fulfill that promise and use the joy in our hearts to rededicate ourselves to securing full and lasting equality for every Californian.

All funds generated through the Angel Program go directly to support AAP’s food voucher program, and help contribute to the $50,000 needed each month to continue those services. OBAMA NOMINATES TWO MORE OPENLY GAY MEN TO DIPLOMATIC POSTS

The White House announced the nominations of John Berry to be the U.S. Ambassador to Australia, and James “Wally” Brewster, Jr., to be the U.S. Ambassador to the Dominican Republic, bringing to five the number of openly LGBT ambassador nominations this month. John Berry is the former Director of the Office of Personnel Management from April 2009 to April 2013, and was the highest ranking openly-LGBT official to serve in the Obama administration.

Previously, Berry served as the Director of the Smithsonian National Zoological Park and the Executive Director of the National Fish and Wildlife Foundation. He received his B.A. from the University of Maryland, College Park, and an MPA from Syracuse University.

James “Wally” Brewster, Jr. is the Senior Managing Partner for

SB&K Global, a brand strategy and consumer dynamics consulting firm based in Chicago. Brewster is a National LGBT Co-Chair for the Democratic National Committee and currently serves on the Board of the Human Rights Campaign Fund.

If confirmed by the Senate, Berry and Brewster would bolster the limited ranks of ambassadors in U.S. history who have been openly LGBT. When Obama took office in 2009, only two previous ambassadors had been openly gay. Friday’s nominations mark the seventh and eighth appointments. “John Berry has been a devoted public servant for thirty years, and will bring tremendous experience to our embassy in Canberra,” said Chad Griffin, President of the Human Rights Campaign, in a statement. “His lifetime of professional experiences make him an outstanding choice to be the nation’s next Ambassador to Australia.”

On Brewster, Griffin said “his global business and management expertise is matched by his enthusiasm and commitment to human rights and democracy around the world.”

“Wally’s political intelligence and work in public affairs and communications make would make him a valuable contribution to our nation’s diplomatic efforts,” said Griffin.

Last week, Obama nominated Rufus Gifford, his former campaign finance director, to be U.S. Ambassador to Denmark; James Costos, a vice president of HBO, as his envoy to Spain; and Daniel Baer, Deputy Assistant Secretary for the Bureau of Democracy, Human Rights, and Labor, to be ambassador to the Organization for Security and Cooperation in Europe (OSCE).

GOP LAWMAKER INTRODUCES BILL TO AMEND U.S. CONSTITUTION TO BAN GAY MARRIAGE

U.S. Rep. Tim Huelskamp (R-Kan.) on Friday introduced legislation to amend the U.S. Constitution to ban same-sex marriage.

The measure comes just two days after the U.S. Supreme Court struck down a key provision of the federal Defense of Marriage Act (DOMA) that denied federal benefits to legally married gay couples,

and cleared the way for same-sex marriage to resume in California.

Under Huelskamp’s bill, “Marriage in the United States shall consist only of the union of a man and a woman. Neither this Constitution, nor the constitution of any State, shall be construed to require that marriage or the legal incidents thereof be conferred upon any union other than the union of a man and a woman.”

The bill has 28 Republican co-sponsors, but it remains to be seen whether House GOP leaders will offer any support in light of the recent Supreme Court rulings.

Huelskamp said last week that the Supreme Court ruling was a “radical usurpation of legislative and popular authority will not end the debate over marriage in this country.”

“Five activist justices have short-circuited the democratic process,” he said.

The last Congressional vote to take place on a proposed federal marriage amendment occurred in the U.S. House in 2006, when the Amendment failed 236 yea to 187 nay votes, falling short of the 290 yea votes required for passage in that body.

House Speaker John Boehner (R-Ohio) and House Majority Leader Eric Cantor (R-Va.) were co-sponsors of the failed 2006 effort.

Observers say Huelskamp’s bill is a waste of Congress’ time and money, as he would need the support of more than 50 House Democrats, the Democratic-controlled U.S. Senate, and 38 states to ratify such an amendment.

COSTA RICA ACCIDENTALLY APPROVES SAME-SEX UNIONS COURTESY OF HUFFINGTON POST GAY VOICES Costa Rica may have accidentally approved same-sex unions.

Costa Rican lawmakers approved a bill on Monday that changed article 22 of the ‘Law of Young People’ according to local newspaper La Nación. The text previously stated that unions were only recognized if they were between a man and a woman.

Now conservative lawmakers are realizing they accidentally approved same-sex unions by voting for the new bill that recognizes: “The right to recognition without discrimination contrary to human dignity, social and economic effects of domestic partnerships that constitute publicly, notoriously unique and stable, with legal capacity for marriage for more than three years” And they’re freaking out.

Lawmaker Manrique Oviedo of the PAC (Citizen Action Party) is urging President Laura Chinchilla to veto the bill, stating that he “feels deceived” and “he made a mistake” when he voted for it, according to Amelia Rueda Al Aire.

Justo Orozco, of the Costa Rican Renovation party, said the case would have to be looked into since “you can’t give rights to those who don’t deserve them.”

Yet, according to Lawmaker Jose Maria Villalta, a member of the leftist Broad Front Party, the conservative lawmakers simply didn’t read the entire bill before approving it. He said this has now ‘opened the door for recognizing the rights of same-sex unions,’ according to SDP Noticias.

If the bill passes, Costa Rica would join the five Latin American countries that have approved same-sex unions. Brazil was the most recent to do so on May 14, 2013.

HIGH SCHOOL REUNION

It’s here: my 50th high school reunion. Fifty years was an unimaginable amount of time when I was 17 and now, like a thunderbolt, that long stretch of life is behind me. My best friend from high school is going to the reunion with her halo of wild dark hair gone white – like mine. What will she see?

Trim athletes now bald, pot-bellied and lame? Willowy young girls now wrinkled and thickened? Comfortable retirees who worked, reproduced, and are replacing a generation of old people who once sat on New York City park benches in the sun?

In truth, I’m quite proud of my class of 1963. Three that I know of got caught in the second wave of feminism and became chairs of women’s studies departments. Five of us, at least, have published books.

Many taught at the college level. I’m looking forward to hearing the accomplishments of others when my BFF reports in. She urged me to go with her, but she’s a few hours up I-95 from the school and I’m across the continent we studied in school. In addition, I felt like the odd girl out back then and I feel just the same now. As she e-mailed, “Wish you were here but you would probably explode.”

Oh, and did I mention a federal judge? Who would have thought one of us, especially a woman, would accomplish as much as she has.

If she’d been born ten years earlier, she might have gotten as far as president of a PTA.

High school was so long ago, yet so fresh in my mind. I went into it determined to leave my bashfulness behind. I managed to make friends, and also to grow a persona that would mature with me. My poetry was published in our literary magazine; I was gay and proud of it; my ambition, beyond writing, was to be a gym teacher. One foot was in the circle of high school intelligentsia, the other in a sneaker on the tennis and volleyball courts.

An altruistic alumna, who became a librarian, created an internet page for those early sixties classes. By way of introduction, she wrote, “We came of age in the mid-sixties. It is hard to believe the changes we went through and our world went through in the years between 1963 and 1967. Did we make the times or did the times make us?” What a great question for us, for any generation.

Did we help change the world for the better? Well, we sure tried.

How many of us died in Vietnam? How many were arrested for protesting that war? How many were active in the civil rights movement? The women’s movement? Gay liberation? Were environmentalists? Pro- or anti-choice activists? Did any grow their hair, drop acid and become hippies? My BFF was at Altamont when the Rolling Stones were there. Were others at Kent State? I know some were hit with cancer. At least two committed suicide.

THE AMAZON TRAIL Long enough that I’m looking at retirement from my job too. When I checked out the high school page it was clear I’m one of the last to stop working for a living. I feel like a sixties dropout compared to them.

I’ve had jobs ever since graduation, but just to scrape by while I gave most of my energy to writing. Looking at the bios on our class pages I see teachers, ad execs, attorneys, designers and engineers, along with those who identify themselves as homemakers and mothers. As far as I can see, I’m the only one who boasts of writing queer books or even of being queer.

Why do I have no desire to be at the reunion? Would it really be too disturbing to see the metamorphoses of these people from dreaming kids to world-weary adults? Only one was a lover and I ran into her out here about 20 years ago. She wanted to stay in touch, but too much water over the bridge for me. I have a very full life, for which I’m grateful, and my seventeenth summer, lovely as it, and she, was, has been over for a long, long time.

No, I have no desire to see those folks. We sat in classrooms and passed one another in hallways. We survived high school, adult careers, marriages, marches, the tech revolution, empty nests, losses and successes.

Some of us proved to be a waste of space, others made a bit of history or culture or money or offspring. I may be odd girl out again, but I have no time to review milestones. In my head, I’m still 17, anxious to get on with writing future stories, to, finally, making a lasting marriage, to changing the world.

THE GIRLS OF SUMMER

Are you wondering what to listen to this summer? If so, listen up! Considering summer encompasses celebration and dance, I listed some of the greatest and most fun summer albums from female artists.

These choices are ideal for those who choose to stay indoors and beat the heat, as well as those who prefer to sip their frozen margaritas poolside and soak up the sun. In this list of summertime music, I have selected half-dozen discs that heated up summers past, and continue to sizzle because of their timeless brilliance.

DONNA SUMMER - Bad Girls (1979) Before Madonna, Beyoncé, and Rihanna, there was only one dance diva, and that was the late, great Donna Summer. Back in the summer of ’79 and on the heels of Summer’s multi-platinum opus, “Live and More,” six months prior, the anticipation for this album was mind-blowing. I recall the first single, “Hot Stuff,” going straight to Number One in June of ‘79.

Then the album hit and went through the roof. There was even a fulllength uninterrupted album listening session on the radio the eve of

its release! How many artists get that kind of treatment today and still live up to the hype? The album spawned so many hits and classic tracks, including “Bad Girls,” “Dim All The Lights,” “Walk Away” and a record that stands alone in synth history, “Sunset People.” I played this album for years and still listen to it on my iPod at least once a month.

One word: Masterpiece.

TINA TURNER - Private Dancer (1984) Released just in time for the summer of ‘84, I don’t know anyone who wasn’t praising the former Acid Queen and playing this “autobiographical” event. I couldn’t get enough of it. From the opening track, “I Might Have Been Queen,” through “What’s Love Got To Do With It” (THE song of the summer), to “Better Be Good To Me,” “Show Some Respect,” “Steel Claw” and the ultimate title track, I knew that this album was destined for greatness the first time I heard it… and the second time, and thousands of plays later. This one always reminds me of that summer, and never fails to put a smile on my face. This is Turner’s jewel-in-the-crown achievement and the ultimate summer rocker.

LISTEN UP RIHANNA - Good Girl Gone Bad (2007) Ever since Barbadian recording artist Rihanna burst onto the music scene in 2005, she has become the reigning queen of pop/R&B/dance. Her debut album, “Music of the Sun,” featured a couple of great singles. But it was her third studio album, “Good Girl Gone Bad,” (nominated for nine Grammys!) containing the summer anthem and biggest single of 2007, “Umbrella,” plus the international hit singles “Don’t Stop the Music,” “Take a Bow,” “Shut Up and Drive,” and “Disturbia” which catapulted Rihanna to superstar status. Flash-forward eight years and twelve No. 1 singles later, she is the best-selling artist of the past decade, and no matter the weather, summer just isn’t complete without a bit of RiRi.

MADONNA - True Blue (1986) Speaking of Madonna, this album did not leave my turntable, nor did the cassette from my car, for the entire summer of ‘86. How could it? Right after I was over “Papa Don’t Preach,” “Open Your Heart” and “Where’s The Party?” from overexposure, I started listening to side 2 (yes, albums and cassettes had sides!). I discovered “True Blue,” and the song that defined my summer, “La Isla Bonita.”

Who knew in 1983 while we were wondering when this girl would be a flash-in-the-pan, we’d still be talking and listening, and hanging on to every word thirty years later? Who knew? She did.

MARIAH CAREY - The Emancipation Of Mimi (2005) Remember when the media said Carey was all washed-up in the fall of 2001?

I do. I remember thinking with a solid track record of 11 consecutive years and 15 No. 1 singles (at that time), “o ye of little faith.” Every recording artist hits a bump in the road with a less-than-stellar album.

Mariah Carey just happened to fall hard with her motion picture debut in the box office flop “Glitter.” Four years and two albums later, she re-emerged with “The Emancipation of Mimi,” which is arguably her finest album to date. The whole collection is a tour de force. She kicked off the summer of ’05 with the second most successful single of all time, “We Belong Together,” with a staggering 14 weeks at No. 1. What’s even more astounding is that the only single more successful in the history of the rock era also belongs to her; the 1995 international smash “One Sweet Day.” To the naysayers, Mariah was hardly “washed up.” In addition, since that time, she now owns the most No. 1 singles in history by a female artist (18) and is second only to The Beatles, who have 20. Mariah is still as hot as a desert summer, as the music remains oh so cool.

LADY GAGA - Born This Way (2011) When this disc debuted just weeks before the summer of 2011, it was clear that Lady Gaga’s second studio album had already joined the ranks of past superstar pop icons – most importantly, her much talked-about predecessor, Madonna. With her Monster Ball Tour in high gear, Gaga was already releasing hit singles at the rate of one a month. It wasn’t until people stopped looking, and really began listening to the vocals that Stephanie Germanotta possessed. Watching this singer/songwriter from the Upper West Side of Manhattan on YouTube, the naysayers had to admit that this girl could SING! “Born This Way” provided the gay community with its latest, and one of its most important, anthems in the title track, along with already classic cuts that include “Judas,” “Hair,” “You And I,” “Marry The Night,” and the infectious dance floor highlight, “The Edge Of Glory,” making “Born This Way” one the greatest pop/dance albums of the summer of 2011, as well as one of the greatest dance albums of all time. © 2013 STEVEN M. The month’s issue is about food, wonderful food. There is a strong commandment about travelling and where you will choose to eat. It is simple- Eat where the locals eat. Cast aside every chain or franchise where you might temp to stop. Just say no.

The other hard and fast rule is eat the local specialties. The places described are the best local spots and recommended by the folks who live in these beach towns. And for Desert rats- concentrate mostly on fresh local seafood. You cannot get enough before you return to the Desert.

Starting on the coast in northern California, and working south, these are amazing gems. Save this article for your next trip. Let’s begin in funky, progressive Santa Cruz.

The Beach Street Café is across from the boardwalk on the beach. The food is amazing.

All local, and all unique dishes. Everything is superb, but the clam chowder is wonderful. And everyone gossips! You will learn much more about Santa Cruz than at any museum.

Moving south on Highway 1, you will arrive at Seaside just north of Monterey. The absolute best local place on the Peninsula especially because you will be looking for seafood, is the Fishwife on non-descript Fremont Blvd. Hands down you will be tasting the best calamari ever. And they produce a homemade habanera sauce that is amazing-so amazing they sell it by the bottle to take away!

Leaving Carmel, continuing on south to Big Sur, do not miss a stop at Ventana. The restaurant sits high atop the cliffs and overlooking

the ocean. The meals are all prepared from sustainable food from area farms and purveyors. The view plus the amazing feast- superb.

In downtown Pismo Beach, search for the perfect little dive on Pomeroy Street. Splash Café! The place serves more than 20000 gallons of clam chowder a year. The chowder is great but the Ahi Tuna Sandwich is the one that will have you going back for seconds!

Continuing south on US 101, you will come to drop dead gorgeous Santa Barbara. There are many spots to eat of course, but do not miss the Santa Barbara Shellfish Company. It is on Stearns Wharf.

Stated as a fish shack in 1980, it maintains its fresh fish atmosphere.

Rachel Ray ate there and proclaimed it California’s best! The fresh cracked crab, and oysters will place you into euphoria!

Sitting on a bluff overlooking the Ventura-Los Angeles County line with an address in Malibu is the convenience store/biker and surfer bar named Neptune’s Net! They serve fresh lobster, crab, oysters and shrimp. The view of the ocean, the fun crowd and the amazing food at reasonable prices make this a do not miss!

EVA’s-a Caribbean Kitchen is overlooking Highway 1, but just across from the ocean. From their tropical libations-read lots of rum!- lively Jamaican music, and food from authentic recipes, you are going to love this place. The menu is huge- you will remember the Jerk BBQ Salmon for the rest of your life. The tropical libations might make the details of your meal a bit foggy- do not miss the Dark and Stormy- dark rum and ginger beer!

TRAVEL

Located in Point Loma, home to southern California’s largest fishing fleet, which has some amazing restaurants especially for you and your travelling companions who cannot get enough seafood while driving along the Coast! The Venetian is very special- it has been at this one location since 1965 serving amazing seafood along with its famous pizza. Think caramelized scallops and tons of garlic on a pizza. It doesn’t get better than that!

On Shelter Island, sits the truly excellent Bali Hai. It has a very authentic South Seas approach to the menu, especially all those tropical cocktails. The food is marvelous and detailed- you must try

the Thai Spring Rolls with the world’s best dipping sauce- using plum wine. Someone in your party needs to order the walnut shrimp. There is the best sweeping view of downtown San Diego, and it is perfect for slow, romantic walks along the beach.

Just east of Point Loma is the best, freshest spot for seafood in San Diego- now that is quite a statement in a place like this city, but it is so true! The Blue Water Seafood Market and Grill. Can we say this has the best fish taco in California? Yes. Every day the seafood is fresh-caught be that local fishing fleet. It is so fresh and amazing flavors come of that grill. Plan to wait in line, but it is truly worth the wait!

Of all the California beach towns, it is Ocean Beach that has endured the greatest, local, one of a kind beach town. There are dozens of locally owned spots, by Pamo’s rises above them all as the late nightspot. Folks rave about the roast beef, the eggplant parmesan and many other dishes! Most folks take them home, or just eat them walking down Newport Avenue.

This summer, thousands of gays and lesbians will converge on the charming and newly popular seaside town of Asbury Park for Sand Blast, the annual LGBT party weekend on the Jersey Shore.

Taking place Friday, July 19th thru Sunday, July 21st, this year’s festivities will feature 23 thrilling activities from surfing to guided bike rides, beach dodge ball, a burlesque show, a downtown art gallery walk, two pool parties, nighttime dance extravaganzas and The Beach Party, the weekend’s main soak-in-the-sun event with music by DJs Tony Moran and Hector Fonseca. The gay community began pilgrimaging to Asbury Park in 1999 and 2000. At the time, the city was in terrible condition with an abandoned mile-long boardwalk, a downtown with just a handful of stores open amidst block after block of boarded up storefronts and a residential neighborhood packed with turn-of-the-century Victorian houses in falling down condition. A small handful of NYC gays, who’d recently taken the plunge and bought a weekend house, decided to throw a summer party and invite their friends to come see the stunning beach and gorgeous old houses a few blocks from the ocean that were selling for under $100,000. They called the weekend Road Trip Asbury Park.

Each year more events and activities are added to Road Trip Asbury Park. In 2008, against the advice of the rest of the volunteer

team, Brad Hurtado decided to launch a circuit-style daytime dance on the beach. No one else wanted to accept the burden and expense of such a large party so Hurtado took the financial risk on himself, taking out an equity line of credit on his Asbury Park home. His

partner, Sean, named the party Sand Blast.

It was a hit from the start and soon became the marquee event of the weekend. By 2010, the weekend’s name was officially changed to Sand Blast and The Beach Party propelled the weekend into new heights of popularity.

Luckily, for Asbury Park, the city avoided the devastation from this past winter’s Hurricane Sandy. Whether due to its slightly higher elevation or just the luck of where the storm hit, the mile long boardwalk suffered only two damaged spots that have been repaired. Asbury Park’s quirky shopping district and the magnificent Victorian residential neighborhoods were also unscathed. With so many other beach towns devastated by Sandy, it’s predicted this summer will be one of the biggest and busiest summers in Asbury Park, making it the best time ever to experience Sand Blast Weekend.

LISTEN TO YOUR BODY

When you listen to your body, it will tell you wondrous things! Yeah, sure…. Is this some kind of esoteric joke? Whatever do you mean by “listen to your body?” People who have conversations with themselves tend to be viewed by others with at least a little suspicion or perhaps even thought of as downright bonkers.

So, let’s try again. Drop all your preconceived notions and opinions.

We’re going to get very simple. Here, to “listen to your body” simply means to first realize and accept that your physical body does not behave or operate as a separate entity or base machine—to be oiled, kept warm and free from rust—until it eventually falls into disrepair and disease. It is a miraculous network of signals, senses, vibrations, and positive and negative feedback loops, to name just a very few.

It could even be said to be political in nature, because it is constantly waging war on many fronts, advancing and retreating (as is the immune system), in order to systemically keep homeostatic peace. Remember the concept of homeostasis in Biology 101?

We have all heard the wise old saying: “You are what you eat.”

Let’s go one step further. What we eat, or what we don’t eat, will affect us in some way to a greater or lesser degree. We all pretty much know, or should know, what is generally accepted as nutritious fare--the kind of fuel necessary for the constant repair and replacement of many kinds of body tissue. There is a plethora of information in cyberspace as well as in your favorite bookstore on this topic. What we all need to do is take this scientifically accepted information and combine it with our senses when we eat.

In short, we “listen to our body” in very subtle ways and make common-sense corrections in our eating course. As we go along, we have to judiciously steer our boat of nutrition for our individual bodies to more fine-tune what works for us and what doesn’t. For example, if you’ve ordered a delicious, flavored ice tea at your favorite restaurant, but notice that you’ve gone through that plus two more refills by the end of the meal, you might want to “listen up.” Is your body telling you something? Do you not think it might be kind of odd or lop-sided that you just had to have three giant servings to quench your perceived inordinate thirst or desire to have more and more? And then, how did you feel after your meal? Did you feel much too full? Or did it seem to take longer than usual to digest that fabulous meal? These are examples of questions that you might pose to yourself.

If, by practicing such body awareness, you suspect that the equation is not quite balancing, you have just “listened to your body” or payed attention just a little bit more, whereby you can simply decide to implement greater balance next time. Perhaps you will limit your consumption of that incredibly delicious beverage to only one next time, foregoing any refills. Just remember, because any beverage or food or drink is incredibly delicious does not mean you should allow your taste buds to override common nutritional sense. Just by developing the simple habit of listening to your body like we’ve just discussed can, in many instances, contribute significantly to your quest for vibrant health!

NATURES PERFECT EXERCISE

One goal that a lot of people strive for is losing some body fat around the hips and abdominals. It takes a lot of work and dedication to carve out a set of hot looking abs. However, the vast majority of people either don’t work on their abs seriously or they don’t work their abs productively. To effectively develop the abdominals, that is, to make them show…you must first concentrate on working the entire body, thus burning more calories from the stored body fat that keeps you from seeing the muscles. By working the body as a ‘whole’, you will find that you are also less prone to injury than on isolation machines only.

Another goal for a lot of people is toning or gaining some muscle, especially the chest. In a broader sense, we find that the front and sides of the shoulders are part of the overall appearance of this area as well. For the sake of simplicity, let’s call the whole combined area the ‘front upper torso’. This area is responsible for a variety of movements in such sports as, swimming, tennis and gymnastics. In ‘functional’ daily use some examples would be moving furniture, washing your car and giving someone a big hug.

In both examples above, the individual muscle groups must be worked from a variety of different angles for best results. The gym and health club environment has numerous machines and exercise classes that will work all of the muscles concerned, but require you to go from one exercise technique or movement to another in order to successfully work both areas in their entirety. However, both of those goals can be reached simultaneously by changing your exercise style. An excellent style of exercise to use for whole body conditioning is basic swimming.

Swimming is the single best exercise anyone can do. In fact, it’s one of the few exercises where virtually all the muscles of the body are used; upper chest, back, shoulders, arms, core, glutes and legs. Think of it as ‘Water Gymnastics.’ The best strokes for all-over body toning are the freestyle, breaststroke and backstroke. It’s such an effective exercise that will help you to get in and stay in good shape, loose body fat, tone muscles and keep you healthy.

Swimming and other forms of water exercise improves muscular strength, cardiovascular conditioning, posture, flexibility and endurance.

It’s also ideal for post rehabilitation following surgery or an accident.

In fact, it is the most common form of rehab used by the NFL and other professional sport organizations. While not overworking the heart, it improves the use of oxygen by the body as well as increases overall lung capacity and function. Additionally, it’s a great ‘low impact’ way to exercise for people affected by arthritis, and other joint ailments caused by the jarring effects of running and jogging.

Of course, as with all fitness routines, proper meal planning is essential. As Jack LaLanne noted years ago, “Exercise is your King; Nutrition is your Queen; and together they form your Kingdom.”

During the first weekend of August, you can always enjoy a series of circuit parties, street parties and (of course) the world’s only gay Canal Parade, a parade of boats of large variety on the first Saturday of August, which usually goes from Westerdok over the Prinsengracht, Amstel river, Zwanenburgwal and Oudeschans to Oosterdok.
