The restaurant world is ever-changing. The annual Source Restaurant Guide aims to include new openings and popular staples to help you plan your eating year! We know more is coming as well. Bamboo Sushi is expected to open in the spring of 2026 in downtown Bend on NW Oregon Avenue. The owners of Powder House Bend are building a two-story taphouse/food cart lot behind their building off SW Century Drive which will have as many as 10 trucks and space for events and games. The Way West will be a mash-up between Bend Brewing Company and Sisters Meat & Smokehouse for a bar-deli opening on the ground floor of the Jackstraw apartments on SW Industrial Way, expected to open this summer.
This issue also gives a shout-out to the restaurants and food carts the Source team felt have been exceptional this past year. But in all honesty, we had a long list of favorites.

Several things make Sen a remarkable dining experience, but it’s the combination of all of them that solidifies it as the Source’s restaurant of the year. First among everything, the hospitality is what is immediately apparent. There is a genuine warmth to the staff that makes Sen not just a destination, but reminds the diner that the best places to spend time and money treat you like an honored guest, not just as a three-top they can’t wait to turn over.
Owner Bua Karoon curates an environment at Sen Thai Noodles & Hot Pot that feels special the moment you walk through the door. “I was born and raised in Thailand,” says Karoon, “where food has always been at the center of daily life, family and community. I met my husband, Krit Dangruenrat, in New York in 2010, where his family-owned Thailand Cafe [was] where I first discovered my passion for hospitality. A few years later, my aunt and uncle shared that they were opening a Northern Thai restaurant in Bend, Wild Rose. That was our first time visiting Bend, and we immediately fell in love with the town. In March 2025, my aunt and uncle retired and returned to Thailand, and we took over Sen. Around the same time, Wild Rose was purchased by another Thai entrepreneur. While the restaurants are no longer connected, they will always share part of the same story.”
Sen has long since differentiated itself from Wild Rose, in this writer’s opinion. The space is a study in contrasts, with the decor feeling upscale and modernist, but the food and vibe are relaxed and calming, like a neighborhood noodle shop. Sen acts as a reminder that we all deserve moments of peace, reflecting on the unblemished perfection of Mirror Pond.
“Our space and location are a little unexpected,” says Karoon. “It feels very Bend—simple, relaxed and surrounded by the kind of scenery that many of our local customers love sharing with visiting friends and family, because it reflects the beauty of Central Oregon.”
But the food. Oh my goodness! Yes, the hot pot has long been an unmissable staple of the Bend culinary scene, and the restaurant’s Pad Thai differentiates itself from the rest with the combination of flawlessly prepared rice noodles and the perfect balance of the tamarind and fish sauce with many locally sourced ingredients. But Sen is so much more than just hot pot and noodles.
If you’ve never had the crispy garlic chicken appetizer, then you’re missing out on one of the most singular starters in Bend. The boneless fried chicken is so tender and so gently breaded that it melts in your mouth, but with the lightly fried garlic and the sweetly tangy chili sauce, it’s the kind of opener that blows your palate wide open and gets you really excited for what comes next.
What truly sets Sen apart and makes it more than worthy of our distinction of Restaurant of the Year is the weekend brunch. No one around is doing anything close to this. Bend comes closer to putting a stamp on being a true foodie city when we have restaurants experimenting with fearlessly flavor-forward concepts like this.
On the sweeter side, are Thai tea short stack buttermilk pancakes layered with a Thai tea drizzle, or a French toast stuffed with Ube peanut sauce, topped with seasonal berries.
“We wanted our brunch menu to feel familiar, with dishes like French toast, chicken Benedict, and pancakes, while introducing flavors that reflect who we are,” says Karoon. “For us, brunch became more than just a menu. It’s a way to connect cultures, share a part of home and create a moment where something new still feels comforting. We didn’t want guests to feel overwhelmed, but rather curious and welcomed.”
Curious is the perfect word to describe this menu, as it was almost impossible for me to choose between Thai Tea pancakes and Fried Chicken Benedict; between the traditional Kai Gra Tai (two sunny-side-up eggs, ground pork, roasted tomatoes, Chinese sausage, potatoes, mushrooms, and bacon) or a Thai curry baked egg. Instead, I went with the Tom Yum Grits, which takes inspiration from Southern shrimp and grits and fuses it with a distinctly Thai personality.
I would put the Tom Yum Grits up against any dish in the food Mecca of Portland or beyond. Full stop.
“I think running a restaurant is about much more than just making good food for people,” says Karoon. “Of course, the food is very important, but as I mentioned earlier, the reason I fell in love with this business is really the hospitality side of it. What truly makes the experience unforgettable is the service and the connection we create with our guests.” We couldn’t agree more, which is why Sen is our Restaurant of the Year.

I’ve been dreaming about the next time I can go to Ken’s Artisan Pizza for at least the last 15 years, so it feels odd now to be naming it the Rookie of the Year. But many will already know that those two things can co-exist, because Ken’s has been a world-renowned pizzeria in east Portland since the original owner Ken Forkish opened it in 2006. In 2022, Forkish sold the pizza place to Peter Kost, who last year endeavored to bring another location to Bend. Hence, Ken’s can be both new and old; much like it can also be both a weekday staple and a bona fide date night destination.
Walking into the space on NW Bond Street, it’s not hard to see the effort that went into making the Bend version of Ken’s a stunner. Tall ceilings, old-world style plaster walls and the dome of a gigantic custom-made oven offer plenty in the way of vibes.
But of course, it’s what comes out of that oven that is earning this Bend newcomer our Rookie of the Year status in the Source’s 2026 Restaurant Guide. It’s tough to wrap my head around the fact that these Neapolitan-style pizzas, so expertly done, can go from raw dough to baked perfection in less than two minutes, but that’s exactly what happens to the pizzas entering and swiftly exiting that dome. Crusts come out bubbly and blackish at the edges, made from a slow-fermented sourdough and topped with a host of flavorful combinations — from the mainstays such as the Fennel Sausage & Onions and the Soppressata (with its spicy calabrese salami) to the Cavolini, featuring shaved brussels, balsamic, chili crisp and at least three cheeses.
At the Bend location, open, after much ado, in February 2025, the pizzas share the limelight with the “top of the menu,” says owner Kost.
“The biggest thing that I see that’s different between Bend and Portland is that we sell more starters, in terms of salads and whatever vegetables we’re serving — wood fired vegetables and whatever starters we’re doing,” he said. But at least some of that may be on account of Portland diners’ longstanding habits; as Kost puts it, “the tradition in Portland where for many years, the top of the menu was smaller. We expanded that over the last four years.”
Those who saw the Bend Ken’s space when it was a nightclub may have some idea of the overhaul the place underwent to turn it into the snazzy, yet invitingly casual restaurant it is today, but that’s just part of the story. Four staff members, not including Kost, moved to Bend from the Portland location to get it set up and ensure the Ken’s standard was upheld. Permitting delays set the opening back a few months, Kost said, which only added to the anticipation for both diners and staff. But even with the reputation that Ken’s had already earned in the Rose City, Kost said he was prepared for the restaurant to have to earn its reputation in a new city, hundreds of miles from the mother ship.
“Even though there’s ties to Portland, we just needed to temper that [excitement] and be OK with the fact that it may not be packed at the beginning. If we do our thing and do it the way we know how to do it, it’ll build,” Kost said of his thinking at the time. “At a time where I was feeling kind of beaten down, we opened and there was the line. There’s been a line every day, so that was a joy to see.”
A year-plus into opening, diners will still find lines out the door, especially at busier times. But those who crave Ken’s will find a way. Hint: If you’re a latecomer like me, who always seems to miss the weekday dinner hours of Bend’s elsewhere dining scene, there’s likely still a bar stool available for you here. Enjoy a cocktail, and soak up the scene. When it’s your turn for pizza, your pie will be cooked to perfection in two minutes or less.

You’d be forgiven for assuming that local sushi chef Jeff Berneski has it all figured out.
Source readers, after all, voting in the 2021 Best Of Central Oregon contest, elected Berneski’s NorthFresh Sushi Best Rookie Food Cart. And Berneski had only just relocated to Central Oregon the year before. And this year, NorthFresh is also earning the title of Best Food Cart in our annual Restaurant Guide. Or perhaps that should be “carts” plural. Pesently, the Salem native owns and operates food carts in both Redmond and Bend. Yet Berneski says the pursuit of perfection, however elusive, is the point.
“The method in Japan — people do nigiri all their life, but they’ll say it’s never perfect,” Berneski said. “You’re always perfecting it. It’s an evolution of learning.”
Much of his never-frozen fish arrives by air each day, delivered by Hawaiian Fresh Seafood. Berneski sources his yellowtail from Japan, king salmon from New Zealand and tuna from Hawaii.
“For some reason, the waters of Hawaii carry the best tuna,” Berneski said, listing shelf life and color as winning attributes.
Berneski prepares sushi at a truck stationed at Midtown Yacht Club and, as of March, at Redmond’s Dry Canyon Club. On the limited menu: gyoza, poké bowls, sushi rolls and sashimi/nigiri offerings. He says he was the first to introduce bigeye tuna to many Central Oregonians.
“The difference with bigeye tuna is that it has so much more vibrant color — it’s almost like a pinot noir color. Its fat content is higher and it’s less muscley.”
That he orders his fish from the same wholesalers as the fanciest restaurants allows Berneski to offer the same supreme quality from his food cart windows but for much less.
“If you go to Nobu in Malibu, California, you sit down, there’s gonna be flowers, a warm towel and all this stuff, but then you’re paying like $20 for two pieces,” Berneski said. “Anyone can get that same salmon, it’s just what you do with it.”
Berneski immersed himself in sushi trade, by accident, at the Momiji Japanese Restaurant Salem location in 2008. He started there as a server — just a job to pay the bills, he said. After a transition behind the sushi bar, a crew of five chefs involved Berneski with the sushi preparation.
“These guys were studs,” Berneski said. “What really upped my skills is we’d get 20 or 30 cases of salmon. You’d have me cutting the heads off and filleting them, and then I would pass them to the next person, and he would cut them into pieces. With four salmon per case, you learn really quickly how to hold your knife.”
With the guidance of his Momiji mentors — particularly the owner Bruce, whom Berneski requests we only mention by first name — Berneski honed his knife skills, dialed his work ethic and furthered his passion for sushi.
Also a bodybuilder, Berneski swears by fish as an efficient protein delivery device.
“Fish is clean. It’s got omega. It has little to no fat, but such high protein content,” he said. “When you eat fish, you feel good; it’s not heavy on the body. I’d rather eat bigeye or ahi tuna than chicken every day.”

Robert De Los Santos’ love language is serving someone up a delicious plate of food. He’s been that way since his days growing up in the countryside of the Dominican Republic, where it’s customary for people to have a meal ready for anyone who might happen to walk in the door.
The love behind the food explodes from the plate at The Dominican, the Caribbean-style food cart De Los Santos opened in January 2025 with his wife, Trisha. It’s been a bit over a year since they’ve been delighting diners from the Dogwood at the Pine Shed on NE Second Street, but the cart is so delicious (and still relatively new on the scene) that we couldn’t help but peg it for this year’s Rookie Cart of the Year in our annual Source Restaurant Guide.
Sharing the love of food starts with the free samples the cart offers to anyone who comes to the window. Never tried La Bandera — marinated beef — or a deep-fried tostone — a salty, double-fried plantain? The couple is happy to entice you to try their offerings with a little paper cup.
“I think that a lot of people have been turned on to the food based upon having the sample,” Trisha De Los Santos told the Source. “They’re like, oh my gosh, La Bandera! It’s so great.”
My own love affair with The Dominican started in one of those little cups, where Robert and Trisha lovingly placed a hunk of yuca — the root veggie also known as cassava— and Carne Frita, Robert’s seasoned steak that plays a little sweet, a little crispy. I instantly knew I needed a whole plate.
Not content to just let me stay with one dish, Trisha suggested a combo plate that gave me the Carne Frita offerings — yuca, beans and meat — as well as the stuff that comes on La Bandera, including rice, beans and the always-yummy tostones. It was far more than one person could take down in one meal, and I was grateful for the leftovers. Robert’s combinations are both soulful and precise. I was hooked.
I’ve been back numerous times, mostly sticking to the Dominican side of the menu, but also enjoying the salads, sandwiches and burgers — Robert’s takes on the classics. Of course, here you can get tostones with that Bacon Cheeseburger… if you wish.
What started as a sweet gesture of customer service turned me into a loyal customer — but I think that’s the whole point.
“I think people see that there’s another component to the good food that we serve,” Trisha said. “I think that we’re really attentive to just really connecting with people and ensuring that we have a good level of customer service. For us, the receiving part of that is that people come back and they share their stories.”
Sharing stories and experiences has had its benefits for the owners, too.
“When Robert moved stateside, his soul was hungry because, you know, the food is not the same,” Trisha recounted. Seven years into his journey in the U.S., opening the cart helped him share his culture, and also connect with fellow Dominicans in the area. The foods at The Dominican have also attracted Africans and other people from Equatorial regions, whose homelands share foods like cassava and plantain.
“People who come to our window, they feel, like, heard and seen, and they feel like family,” Trisha said. “That’s how we want them to feel, and to be.”
Robert and Trisha recently returned from a trip back to the Dominican Republic. It was the first time Robert had been back since moving to the U.S. and gaining American citizenship, and with the food cart now part of their lives, he kept a close eye on foods and flavors he might be able to bring back to Bend.
Selfishly, I am in support of those travels… not just because everyone deserves time in a Caribbean paradise, but also so us hungry diners can see what Robert De Los Santos comes up with next.

Running a restaurant in Central Oregon in 2026 is not for the faint of heart; by nearly every account, it’s harder than it has ever been. But the ones who make it work are rewriting the rules in real time.
“Hands down the most difficult challenge in operating restaurants right now is trying to make a profit,” says longtime restaurateur John Nolan, owner of The Victorian Cafe and three Hideaway Tavern locations. “Profit margins in restaurants have always been very tight… if you are making 10% then you are running a solid business. Those days are no longer.”
That squeeze is coming from every direction. Food costs are up. Labor costs are up. Utilities, insurance, licensing fees. Even the invisible infrastructure of running a kitchen has gotten more expensive. Nolan points to new regulations that have increased the frequency and cost of required services like hood cleanings and grease trap maintenance. What used to be occasional upkeep is now a line item that runs into the thousands annually. “It’s the same pain that everyone feels at home but on a larger scale,” he says.
“It takes a lot of passion, heart and drive to be in the food business in Central Oregon right now,” says Cheri Helt, who owns Zydeco Kitchen & Cocktails and Stacks Deli with her husband, Steve. “You have to work really hard to make your margins and make your restaurants work.”
That work increasingly involves adaptation. Not just tweaking a menu or raising prices, but rethinking the entire model. When the Helts opened Stacks Dinner & Delicatessen in the Old Mill District, they did so with intention. “We really wanted to do something that fit the niche of a casual environment with upscale high quality food,” Helt says. “We are doing counter service so that we have less staff to be able to deliver high quality food… something you could come and get quickly but that doesn’t compromise quality.”
It is a small but telling shift, one that reflects a broader trend across Bend and nearby Redmond. Counter service. Streamlined menus. Smaller footprints. Restaurants designed not just for ambiance, but for efficiency. Because the math has changed. “Is everything an answer?” Helt says when asked what has shifted since opening Zydeco in 2004. “If so, then I’d say everything.”
Two decades ago, she says, restaurant workers could reasonably expect to build a life here. “When we started Zydeco, everyone that worked there was able to own their own homes.” Today, affordable housing is one of the biggest challenges facing restaurant staff, and by extension, the businesses that rely on them.
“It’s the challenge of rent and affordable housing for staff,” Helt says. “We always want to make sure that everyone that works for us… can afford all of their bills and that they’re taken care of.” That commitment often means offering benefits like health insurance and competitive wages, even as margins tighten. It is a balancing act that requires both discipline and belief.
Deschutes Brewery Assistant General Manager Melissa Talbott echoes that sentiment. “Daily, we are watching our labor and cost of goods, while not compromising the guest experience or food quality. It truly is a balancing act.”
Nolan puts it more bluntly. “Respect the margins,” he says, one of his five rules for running a successful restaurant. “Pick and choose your battles.” It is not just about survival. It is about identity. “Provide a product or experience that sets you apart from others,” Nolan says. “Never try to be everything.”
That ethos helps explain why, despite the challenges, Central Oregon continues to punch above its weight as a food destination. Bend, in particular, has built a reputation as a bona fide foodie town, one that rivals cities many times its size. And just up the road, Redmond is in the midst of its own culinary moment, with a steady stream of new cafes, food cart lots and restaurants adding fresh energy to the scene.
There have been losses, too. Closures over the past year serve as a reminder that even well-loved spots are not immune to the pressures. It was just last May (2025) that the popular downtown eatery 900 Wall closed abruptly.
Roughly 17 percent of restaurants close within their first year, according to the U.S. Bureau of Labor Statistics. It is a tough business in any environment, and this is not an easy one. Nine out of 10 restaurants are small businesses. They are the places where owners are still writing the specials, still jumping on the line when someone calls out, still greeting regulars by name.
“I had a woman come in who had spent her 70th birthday at Zydeco,” Helt recalls. “Yesterday it was her 84th birthday and she was here with her family celebrating. To have someone choose to dine with us for their special occasions over a 14-year span is an honor and a blessing.” That kind of loyalty is not built on convenience alone. It is built on consistency. On care. On the feeling that a place matters.
Consistency has been the name of the game at Deschutes since it was founded in Bend in 1988, along with plenty of creativity. “Here at the Brewery, we believe there isn’t just one factor to maintaining a successful restaurant in today’s environment,” explains Talbott. “We expect our team to create relationships, engage, and have fun with our guests, guiding them through the dining experience. But we also need to be cognizant of our menu, keeping it creative and offering the highest quality ingredients at a price that is sustainable for those dining with us.”
For all the spreadsheets and stress, there is still something magnetic about the business. A pull that keeps people in it, even when the odds suggest otherwise. “I still love the restaurants,” Nolan says. “And I will keep rolling with the punches as long as I can.”
