It’s unprecedented, but our nod for restaurant of the year goes once again

If there’s any sign that an establishment is earning the love of local crowds, among the most brightly lit might be the rapid opening of a second place, with a name that hints to the first. Over the past year, the Rancher Butcher Chef brand — known commonly by its initials, RBC, did just that by opening up Bar RBC in downtown Bend.
RBC’s original location in Northwest Crossing, opened in 2022, is well-established as a favorite for those seeking stellar steaks and luscious sides — so much so that last year, the Source also named it “Restaurant of the Year” in its 2024 Restaurant Guide. The craveable dishes, enduring hospitality and outstanding bar program have us coming back for more in 2025. It’s indisputably the place that locals recommend to others seeking the best place in town.
With the addition of Bar RBC in 2024, we selfishly like to think that there’s more of the love to go around. While the steakhouse places a large focus on hearty dishes with a hint of Spanish and old-world European influences, the new space focuses on tapas, Spanish wines and cocktails, with a “grown-up bar vibe,” said co-owner Renee Gorham. Similar colors, so to speak, but slightly different shades.
“It’s so fun to have two places that have a common thread of flavor profiles but very different offerings, providing our guests with more variety while remaining consistent,” Gorham told the Source.
But if the flavors are often similar, the brand’s hospitality is even more indistinguishable. For Gorham, creating an experience for people is the defining factor.
“Diners are appreciating hospitality more than ever – the whole experience, food, service and atmosphere: the identity of a space is so important,” she said.
“People want familiarity and good value. Everything is so expensive, but when you get that real sense of welcome – that’s priceless.”
Partner Garrett Peck shares that philosophy.
“We have dedicated our work to helping our guests eat, drink and be served better at a fair price,” he said. “Our staff has always been the heart and soul. Through training, communication, expectation and work ethic we have built a team that executes on a very high level consistently, every day without fail. Service above all else, and setting of the vibe daily, that’s what hospitality is all about.”
At the original RBC, a constant evolution also helps keep things interesting. Gorham highlighted the expansion of its program for dry-age beef — the process of aging beef in an open-air environment to break down enzymes and make the meat more tender. It’s hard to overlook the restaurant’s focus on this element, with racks of drying beef being one of the first things diners see.
Gorham said she’s also excited about RBC’s new partnerships with a wider range of ranches in the area, and about the restaurant’s constantly evolving sides and appetizer menus.
“Right now, my favorite thing on the menu is deviled eggs with a fried oyster on top,” she said.
And of course, there’s also the wine list.
“Our wine list is really special, and is based on relationships,” she said. “It rounds out what makes RBC, RBC.”

Maybe it’s like a rocket ship landing in a placid Cascades lake — or perhaps more appropriately, like a clatter of hooves in a mud puddle, but it’s hard to overstate the gusto with which Hawkeye & Huckleberry Lounge splashed down on Bend this year. With a massive bar and dining room — done to the nines in cowboy couture — a hugely popular happy hour, an impressive menu of steak and sides, and the star power of not one, but two celebrity chefs, it would have been hard to be a foodie in Bend this year and to have missed the spectacle that is this place. For its scale and ambitious approach alone, we’re naming it our Rookie Restaurant of the Year.
Hawkeye & Huckleberry is the next big dream of chef and Food Network star Brian Malarkey, a repeat restaurateur who grew up in Redmond and owns a family ranch that supplies the beef for the restaurant. He’s joined in the endeavor by Executive Chef Carlos Anthony Ochoa — himself a Food Network regular — and General Manager Jayme Hardebeck, who have opened some 16 restaurants with Malarkey.
“I think Brian sold it to us as a dream, really — come back to his hometown, where we have a ranch, where we have our own cattle, our own farm a in beautiful part of Central Oregon,” Ochoa told the Source, “…this dream about coming here and doing something super special that’s unique to all of the places that we’ve ever done before.”
For Ochoa, who’s no stranger to working with local farmers and producers at Malarkey’s other restaurants in California and elsewhere, producing one’s own product is a dream come true.
“Being so attuned to the cows and the farm and what grows in Central Oregon has been amazing,” he said. He also offered up some praise for Hardebeck.
“Jayme has done such a good job with the nightlife and making this a fun, exciting place to be,” Ochoa said. Hawk & Huck, as it’s affectionately called, hosts regular live music Fridays, as well as pop-up events for special days including Mother’s Day and Easter.
A shot-ski gets pulled out often for group shot-taking. A cowbell rings often to encourage another “cheers” at the bar.
“Because really, when you open up a restaurant, half the battle is the food, and the other half is making it somewhere where you can make memories. I think we’ve done a really good job of creating something special and unique in this town,” Ochoa said.
Hardebeck agreed.
“Brian [Malarkey] always has a saying: They’ll come for the food. They’ll come for the chefs. Carlos and Brian are both on TV, and they’ll come for that, but they’ll come back for the service. And just creating a family is something that, at our restaurants, we’ve had success of being able to do.”
With that in mind, Hardebeck gave a shoutout to the restaurant’s loyal team.
“It starts with hiring the right people on our team. We got Hailey Cook — who’s an amazing bar manager that we brought in from Maui,” he said. While the drinks menu contains a number of fun and fruity options, one of Cook’s signature cocktails also has ties to the ranch. The Doc Holliday is a take on an old-fashioned, with a beef tallow wash.
“It really ties into our program,” Hardebeck said.
When it comes to the two regular Food Network stars who dreamed up that program, we had to ask what you’re very likely wondering: Will Hawkeye & Huckleberry be appearing on TV? The answer is yes — it already has. Ochoa just completed filming with “Tournament of Champions,” which features him in Bend.
“We did a great spread on Hawkeye and started to really highlight what we’re doing,” Ochoa said. Meanwhile, the family ranch recently appeared on an HGTV show, and Malarkey will soon host a new “Cutthroat Kitchen,” where his cowboy steakhouse will be featured. So, if you’ve thus far missed the massive splash that Hawk & Huck has made in real-life Bend, you can also witness it on TV.

The beloved family-run food truck receives appreciation for its classic yet flavorful offerings

Tacos Pihuamo is a Mexican food truck situated off of southeast Third Street, just north of Reed Market Road. While the location is somewhat obscure, the food and the service offered at the truck has earned it a reputation as the best food truck in Bend and, according to many, the best tacos in Bend.
Miguel Lara opened the food truck back in 2012. Prior to that, he worked in construction. However, during the recession, when the construction industry was struggling, he decided to try something new: food.
According to Lara’s daughter, Angelica Veliz, she and her siblings’ mom have always been good cooks. Their dad, Miguel, also had what the girls called a, “buena mano para cocinar,” or in English, a good hand for cooking. She also described him as having good, “sazón,” or a good sense of flavor.
The business is completely family-owned and operated. While Miguel Lara and Magdalena Mendoza are the main bosses, their daughters, Elizabeth Lara, Angelica Veliz and Miriam Lara, and son Miguel Angel Lara, are also a part of the business, along with extended family members.
The food cart offers a series of traditional Mexican classics, including tacos, burritos, enchiladas, tortas and more. People have the choice of getting chicken, steak, pork or shredded beef, also known as birria. Most of the meals come with a side of beans and rice that accompany each meal perfectly. Just last year, the cart started adding desserts, such as tres leches cake, baked by Angelica. For the recipes, the family likes to keep them simple and authentic.
“My parents have always said that the simpler the food is, the better,” Angelica told the Source.
While the food truck has been running for over 10 years, the family is still shocked by the community’s support and love for their food.
“We didn’t really realize, and honestly, we still don’t really realize, how much people really enjoy our food,” said Elizabeth. “We’re beyond blessed to hear every single comment, where people really do enjoy and love our food.”
While the success is apparent now, with consistent customers and long lines throughout the day, the family said it took hard work to get there.
According to Angelica, it took years and a lot of work from the whole family. With the truck being completely family-run and operated, there’s a particular attention to detail that everyone follows. Angelica called it a team effort.
“My dad had always taught us to work hard for what you want. He really instilled that in us,” Angelica told the Source. “I feel like the reason it’s successful is because it’s always been the family running it. We were always there,” she said.
Elizabeth attributed it to their family dynamic – always pushing each other to improve and get better. They always show up, Elizabeth said, rain or shine. And the customers do, too.
“It’s just such an unbelievable feeling of appreciation towards the community that has always been there for us since we started,” she said. “I’m not sure if people know how grateful we are to be in the Bend community.”

Street-side, Italian-American bliss on the go

This is not a (fire) drill. But the team behind Cotto does, surprisingly, have the fire marshal to thank for the situation they currently find themselves in. It’s no secret that The Podski’s Mikel Lomsky likes to collect Bend’s finest at his centrally located, Old Bend gathering place for carts and locals, and Cotto has quickly become one of the city’s rising stars.
If you’ve been around Italian cuisine, you’ve likely heard the phrase, “cotto o crudo” — cooked or raw. Prosciutto crudo from Parma is a global delicacy, but as the name suggests, Cotto specializes in fried and flattop grilled to-go bites and sandos, alongside a pair of salads. Launched in January 2024 by the Fink family in The Ale Apothecary’s west side courtyard, Cotto quickly attracted attention for its Italian-American street food fare and was voted Best New Food Cart in last summer’s Source Weekly readers’ poll. It had always been Michael Fink’s dream to sling their wares at The Podski, and the aforementioned fire marshal unwittingly made this dream in Italian a reality when it was determined that space restrictions made Cotto’s presence at The Ale Apothecary untenable. Meanwhile, across town, The Podski was also reorganizing its layout thanks to a similar crackdown, but in a stroke of luck, it actually opened up a space for Cotto’s cart.
“We had set the goal to be in The Podski — it was a pipe dream,” says Sarah Fink, Cotto’s behind-the-scenes manager of HR, financials and marketing. They made the move in late September and haven’t looked back, recently growing to eight employees including themselves.
“It all happened for the right reasons,” adds Michael Fink, her brother-in-law. The idea for starting a cart may have been his, but the chef mastermind behind it all is James Fink, the elder and taller.
Classically trained with decades of restaurant experience in Bay Area Italian joints as well as Central Oregon institutions like Jackson’s Corner, Deschutes Brewery and Brasada Ranch, the trio ran the beloved farm-to-table eatery Wild Oregon Foods for several years before the pandemic. There’s a lot of overhead with a restaurant and the cart was instantly “easier to manage, not quite as much stuff going on,” Michael explains. They didn’t have
a lot of startup cash, but were inspired by Americana’s success. “Between the three of us, we had everything we needed. I mean, three of us ran it for the first six months — just us,” Sarah laughs.
“All three of us had full-time jobs and still ran the cart in the afternoon,” Michael continues.
“Yeah, that was a fun balancing act,” Sarah adds.
Being experienced chefs and restaurateurs, the three were intentional in choosing the concept for Cotto — one that mixed traditional Italian street food with Americanized options from New York and Chicago, like chicken Parmesan and porchetta sandwiches, fried mozzarella sticks and takes on chopped and caprese salads.
People often think of Italian as either fine dining or pizza, Sarah says. “I think that there’s this whole middle space that is wide open — that is very accessible, very casual, bursting with flavor and that people are just opening their eyes to.”
This is where the arancini come in. A common Sicilian snack, Cotto’s balls of rice are stuffed with ingredients like cheese, mushrooms or a carbonara blend, which pays homage to the pasta dish, before being coated in breadcrumbs and deep fried, each emerging with a solid, crunchy shell.
“Nobody knows what an arancini is around here,” Sarah laughs — but they do now!
The best-selling chicken Parm also contributes to Cotto going through 20 to 40 pounds of chicken breasts every single day. Cotto has sold more than 1,500 of these monster sandwiches — with three layers of pounded, fried chicken — this year alone.
A new spring menu features pepperoni pizza-inspired arancini (“feed the masses,” Sarah chimes in) and a grilled sausage, onion and bell pepper sandwich with an Italian cheese blend, marinara and Parmesan on a Big Ed’s hoagie — which keeps the integrity of all the sandos intact.
And don’t forget dessert: You can’t go wrong with classic cannolis (filled with lemon-vanilla creme and a choice of pistachio or dark chocolate chunks), but the zeppole doughnuts come straight outta Sarah’s Coney Island childhood.

The local closings of restaurants such as Cracker Barrel and Shari’s might lead one to think that Bend is a microcosm of what’s been happening with restaurants across the country, especially casual dining chains. But as those of us who live here know, Bend is its own macrocosm in so many ways, typically incomparable to other small cities of its size. So while the closing of chain restaurants may be reflective of what’s happening elsewhere, the rest of the local restaurant musical chairs game is a bit of a mind spin.
Most recently and surprisingly have been the closings of Neighbor Rotisserie, Nome Italiano and the Domaine Serene Wine Lounge downtown. Both Neighbor Rotisserie and Nome were owned and operated by local entities that own other successful, still-open restaurants, while the Domaine Serene brand has been synonymous with Oregon pinot noir for decades — and their wine lounges in Lake Oswego and Portland are still going strong. One can hypothesize the how-comes and the why-nots, but James Meskill keeps it simple.
“It’s been a tough year in the restaurant business,” Meskill told the Source Weekly when Nome closed recently. Meskill is a co-owner of SixTop Restaurant Group, which owned Nome and still owns Bos Taurus, Hablo Tacos and Miyagi Ramen.
Things are tough all over, what with rising costs of ingredients, a shrinking middle class and the fact that 17% of all restaurants close within the first year of opening, according to the U.S. Bureau of Labor Statistics. Still, the National Restaurant Association says Oregon’s nearly 12,000 restaurants contribute $1.80 to the state economy for every dollar spent in a restaurant. It’s the state’s third-largest private employer, providing 200,000 jobs. Another fascinating factoid: nine out of 10 restaurants are small businesses, not big corporate chains — and it’s those momand-pops that seem to be thriving in our little corner of the culinary world.
The past several years have seen the opening and flourishing of locally owned establishments such as Rancher Butcher Chef in Northwest Crossing (and their sister downtown tapas lounge, Bar RBC), BOSA Food & Drink on Galveston, Celeb-
rity Chef Brian Malarkey’s cowboy steakhouse Hawkeye & Huckleberry Lounge, and numerous international options, including Chef Joe Kim’s Yoli (Korean), JIA Asian Street Kitchen (Asian), Yokocho Izakaya (Japanese) and Blissful Spoon’s new nighttime offering Papillon (Moroccan). Most recently, two new Indian restaurants were announced — Spiceland (downtown in the former Chomp Chomp space) and The Crown Curry (in Nome’s former space) — along with a new Vietnamese spot, Pho 88 in the Old Mill.
RBC co-owner Renee Gorham says it’s an exciting time to be in the restaurant community and she attributes that to the people.
“As we’ve become more entrenched in our community I’ve truly come to appreciate all the hard-working professionals who take pride in their work and study their craft. When hospitality is at the core of any operation, our entire community benefits from that genuine sense of welcome.” Her husband and partner Chef John Gorham adds, “As a chef, I see the evolution of a great food city based on the availability to source the best ingredients. We’re getting better products more frequently and purveyors have really started paying attention to Bend.”
Cali Schipper, general manager at the commissary kitchen Prep-A Chef’s Kitchen in Bend, notices how the local culinary scene continues to evolve, with a growing focus on artisanal products.
“From handmade pasta and sourdough to pickled vegetables, natural salt blends and specialty matcha, local offerings highlight creativity and quality,” she states. Honey infusions, small-batch sauces, gourmet granola and premium pet food further reflect Central Oregon’s commitment to support local producers. While the food truck trend has slowed, retail food products continue to thrive,” she goes on to say.
Ultimately, Bend’s restaurant scene reflects a city in transition. Though some familiar names have shuttered, a new generation of independent, innovative, and community-focused dining spots are redefining what it means to eat out in Central Oregon. Bend isn’t mirroring national trends — it’s creating its own.
