DONATING MEALS, SAVING JOBS AND SERVING THE COMMUNITY: ZYDECO DELIVERS THE FINE DINING EXPERIENCE TO PEOPLE WHO NEED IT MOST WORDS BY LAUREL BRAUNS • PHOTOS BY DARRIS HURST “We’re reinventing every day,” he said. “Shortages in the supply chain, trouble getting food, fluctuating prices… we’re accommodating these as fast as we possibly can. The challenges have been a lot more than I expected. It's controlled chaos. I have to take it day by day.”

This spring, the Helts created the Our Kitchen, Your Table meal donation program to offer a memorable dinner to dozens of underserved communities. In the process of creating the program, they’ve saved some of their employees' jobs and transformed federal assistance they were granted through the Paycheck Protection Program into a valuable community service.

So far they've delivered over 2,000 meals to veterans, unemployed teachers, foster care families and many more. Prizing quality over quantity, Zydeco’s chefs produce 50 free meals a night served Monday through Friday for pickup or delivery. The first week of July, the program fed 250 volunteers

ur Restaurant of the Year for 2020 is a vibrant downtown gem and a cornerstone of the small-business community in Bend. Our readers voted Zydeco Kitchen & Cocktails both Best Dinner and Best Food Service in our Best of Central Oregon readers' poll in 2019. For our staff-selected Restaurant of the Year award in this year's Restaurand Guide, we are honoring Zydeco not only for its inspired dishes and caring waitstaff, but because of a new community meals program, “Our Kitchen, Your Table. During the pandemic, Zydeco has provided thousands of high-quality

dinners to people hit hardest.

“This helps people with the cost of groceries and not having to cook, but we really wanted to do something to make them feel special, to provide them more than just a regular meal they would cook for themselves at home,” said Cheri Helt who co-owns Zydeco with her husband and Executive Chef Steve Helt. “They can take a moment and have a celebration for themselves during this time of crisis… relax and feel cared for by someone else.” Right now, customers can order takeout, or enjoy a high-

ly coveted sidewalk table at Zydeco Kitchen & Cocktails on Bond Street in downtown Bend. The restaurant blends upscale Northwest casual with a Cajun flair through signature dishes like the shrimp andouille and crawfish jambalaya and grilled or blackened redfish. Local farmers provide the fresh veggies for the roasted beet salad and the vegetable risotto with butternut squash, leeks and mushrooms.

Getting the ingredients has been a daily challenge since the pandemic began, explained Steve Helt.

with Court Appointed Special Advocates for Central Oregon. It's a community-supported program; this week, Advanced Northwest Welding bought the groceries and Sunrise Micro Farm donated the greens. Congrats to Zydeco for going above and beyond this year, and for earning the award as the Source Weekly's Restaurant of the Year!

Dear Central Oregon,

Wow. This is a year.

All of us in the restaurant world have been busy lately. We hav e had forced unpaid vacations; we furl oughed our friends; we’re hav ing some sleepless nights.

We try to keep feeding the nee dy; even when the needy sud denly became our own. We bring wa ter to the Reservation; we giv e meals to first responders; we virtuou sly donate gift cards to virtual auctions.

We can tell you the ins and out s of ppp loans, grants, and line s of credit. We invested in take-out packages and p.o.s. systems, lea rned on-line ordering; we’ve been tested, and we’ve taken COVID tests.

Half of our dining spaces are eliminated to provide social dist ancing.

We tented parking spots and bui lt decks on sidewalks overnig ht, purchased plexiglass walls and bleached our pens. Local mask makers gifted us our first masks; got som e boozy hand sanitizer from our local distillery so we could fee l safer, and we re-opened. We became the mask police and our sixteen -year-old hosts are now the kee pers of the new rules.

We have cried and raged, and we have become a lot closer as a restaurant community.

This is probably going to be a long road, so thank you for you r support; for ordering take-out every Thursday or Tuesday; eve ry week, for buying gift cards and giving generous tips to our staf f.

Thank you for air hugs, and wee kly poem deliveries and words of encouragement. Thank you for wearing your mask and being kind.

Everything in the bowl— the kimchi, the daikon, bean sprouts, salad, pickled veggies—these are things that were on our table every night. All of my plates are well thought out; they tell a story.”

As the food truck continues to evolve, Vidinha hopes that he can make some of the popular rotating specials—like the ever-popular Sushi Burrito—staples of his creative menu. “Right now, the sushi burrito is a specialty item that I can only make in small batches,” he explained. “It’s basically just a big sushi roll, made with spicy tuna, shrimp, poke, fresh salad mix. The goal is to get it on the menu fulltime. I’ll be changing up my cart so I can start making more of those.”

The food at Aina is an experience in and of itself, but for Vidinha, dining is about more than just what you’re eating.

“Aloha is big in Hawaii; Aloha is in me,” he said. “When I first started in the back of house, in a hotel in

ina Kauai Style Grill, tied for Rookie Food Cart of the Year, was selected for its welcoming Aloha spirit and for bringing Central Oregon a slice of Hawaiian culture and cuisine it had not yet seen.

Owner Ian Vidinha grew up on Kauai, with native Hawaiian and Portuguese roots. His culture translates into his unique and traditional food and into the feel-good experience he provides to customers. Some popular dishes include the expertly crafted Spicy Poke Bowl, Poke Nachos

(which are topped with a housemade sriracha sauce and creamy wasabi aioli) and the crunchy and flavorful Chili Pepper Chicken.

“I was born and raised on Kauai and I moved to the mainland in 1999,” Vidinha explained when

asked how he got his start in the food industry. “I started cooking pizza in Colorado, and I ended up as a corporate trainer. I went back to school, got my business degree and then moved to Bend, where I was a stay-at-home dad for two years. I R E S TA U R A N T G U I D E 2 0 2 0

realized I needed to get something going; to do something that I was passionate about.”

Thus, Aina—which means “of the land”—was born. Opened early this year at 9th Street Village, the cart quickly became a local staple serving up

traditional (however slightly reimagined) homemade Hawaiian meals.

“I wanted to serve the food I was raised eating,” Vidinha said. “Everything on the menu is my take on the meals I ate growing up. I like making poke, so I concentrated on perfect-

W

here does one go for good Italian in Bend? This year, the new player on the food cart scene is Sunny’s Carrello, which earns the tie for our 2020 Rookie Food Cart of the Year.

Owned by Amy Wright and her wife Courtney, Sunny’s is Bend’s answer to hearty, homemade Italian food— the kind that any nonna would be proud to serve.

Sunny’s has been open since November, and is now permanently located at River’s Place, the east-side Bend taphouse and food truck hub.

“We did a couple of beer dinners with our friends over at the Ale Apothecary,” Amy Wright, chef, menu mastermind and cart co-owner, explained. “I made a hundred-layer lasagna for one of the dinners and it was a huge hit. Everyone said, ‘You should cook Italian!’ I actually learned how to cook in an Italian restaurant 24 years ago, when I was in college in Massachusetts. I’ve worked in various restaurants for the past 29 years. My wife and I moved to Bend seven years ago and opened Sunny Yoga Kitchen in Northwest Crossing six years ago.”

After friends encouraged Amy Wright to focus her talents on freshly made Italian cuisine, Sunny’s Carrello was born—and the outcome has been something worth earning this rookie-cart award. Wright and her wife focus on sourcing local ingredients and making each dish component with love, from scratch. “We make all of our own pastas, sauces and dress-

ings. We make our own focaccia bread, and we work closely with Agricultural Connections to source local produce and get flours and olive oils that are based out of Portland.” Popular dishes include their housemade Penne Alla Vodka and Polenta & Meatballs. She creates daily and nightly specials, and often rotates new dishes. There are

some kid-friendly options available as well, including housemade spaghetti with sauce or butter and parmesan cheese.

“River’s Place carries a great selection of wine,” Wright concluded. “People have been coming in and getting a nice bottle to pair with their meal.”
