FONDUE FUN With the weather on the chilly side, why not add some warmth to your next small gathering with fondue? What is nice about a fondue party is all you need to do is the prepping and the guests will do the rest. When planning the menu choose at least two sauces for main course and one for dessert. WHAT’S COOKING WITH LOCAL MELISSA CUMMINS Happy New Year! I’m dedicating the month of January to casseroles. In keeping with a healthier new year, all of my comfort food casseroles will be low fat. I will mix it up for you so they won’t all be dinners. I hope you enjoy them! CHICKEN TORTILLA CASSEROLE 1 large onion, chopped small 1 red pepper, chopped small 2 cups. chicken breasts, cooked and chopped into bite sized pieces 2 cans cream of mushroom soup (low fat or fat free version) 1 small can diced tomatoes and chilies, drained 1 15 oz. can black beans, drained and rinsed 1 15 oz. can corn, drained 1 tsp. garlic, minced 1 tsp. chili powder 1/2 tsp. pepper 3 cups baked tortilla chips, slightly crushed 2 cups reduced fat shredded cheddar cheese Preheat oven to 350 degrees. Spray a large skillet with cooking spray and saute onions and red peppers for about 5 minutes. Stir in chicken and next 7 ingredients, remove from heat. Spray a 9x13 casserole dish with cooking spray and cover bottom with half of the crushed tortilla chips, then spoon in half of the chicken mixture and sprinkle half of the shredded cheese. Repeat layers. Bake at 350 for 35 minutes or until cheese is melted and bubbly.

Emergent: Visual Sips from the Waterline, Photographs by Lynn Teo Simarski, on View through Feb. 2 at Adkins Arboretum
During the six years she lived aboard a boat on the Chesapeake and its tributaries, photographer and science writer Lynn Teo Simarski often slipped her kayak into the water to explore the delicate borders where water mingles with land. In her show Emergent: Visual Sips from the Waterline, on view through February 2 at the Adkins Arboretum Visitor’s Center, her digital photographs tell the stories of the remarkable plants she found in the region’s quiet coves and marshes. Sliding along low in the water, the kayak gives Simarski a close-up, intimate view of every detail of the shoreline. In photographs that range from spare black-and-white images of slender marsh grasses and their dancing reflections to masses of lotus leaves floating in water rippled with brilliant autumn colors, she distills moments of beauty and playfulness that few people get to see. There are softly rising mists, dramatic slanting shadows and an occasional dragonfly perching weightlessly on a bit of grass. Simarski, who lives in Alexandria, Va., when she and her husband aren’t aboard their 40-foot trawler, Bright Pleiades, said, “I kayak as much as I can. That’s really my favorite part about having lived on the boat.” In a perfect image of the interconnections of earth, water and sky, sprightly blades of grass emerge from satiny reflections of the clouds above in “Skygrass.” Simarski’s fascina-
The majority of the show’s photographs come from the Chesapeake region, but Simarski shot a few of them in Maine, Wisconsin and South Carolina. Interestingly, except for some tassels of Spanish moss dangling from a leafy branch, it’s hard to tell the difference. There’s a certain universality in the elegant calligraphic gestures of blades of marsh grass and the ever-changing effects of light, mirrored skies, turning tides and shifting seasons. With its perky bright green stalks tipped with gold, “Spikerush” is a jaunty image. A type of sedge, it’s small and grows just barely above the water’s surface. Simarski found it with tiny concentric rings dimpling the water where its stalks meet their own reflections. “This is one that was not from a kayak,” she explained. “It was spring, and I was going for a walk at the marina in Galesville, Md., where we keep our boat. I saw these patterns in a ditch, and I was just stunned. Here were these rushes only about three inches high. So, I ran back to the boat and drove back over so I could stand on the car and look down at the ditch to get the viewpoint I wanted.” In addition to her photography, Simarski has written articles on the Bay for Chesapeake Bay Magazine and Bay Weekly. She and her husband, Guy G. Guthridge, are currently working on a book called Chesapeake Winter about their years living aboard their boat and their conversations with scientists, watermen and others about the Bay’s future. They are planning a trip to Florida along the Intracoastal Waterway. For Simarski, the margins of water and land are endlessly compelling. Speaking of her love for these vulnerable, ever-changing perimeters, she said, “The boat enables me to go to these places you can’t get to by road and put the kayak in. The boat is our magic carpet.” This show is part of Adkins Arboretum’s ongoing exhibition series of work on natural themes by regional artists. It is on view through Feb. 2 at the Arboretum Visitor’s Center located at 12610 Eveland Road near Tuckahoe State Park in Ridgely. WRUS Students Take on Local Hunger Project Wye River Upper School students have created a small food pantry to serve the needy. The project was created in response to a school initiative called the 12 Demonstrations of Learning, which involves a list of action-oriented projects that help students develop important 21st Century skills and values. Their specific objective was to “Identify a community need and demonstrate your role in addressing it.” A group of four students determined that they could make a difference in their local community by joining together around their interest in fighting hunger. Junior, Sophie Content shares, “There’s so much good we can do in our daily lives, with very little effort. This project is going to make a impact on people’s lives for a long time. Also, it’s really important to raise awareness that food insecurity is everywhere, even in our small town.” The Loving Kindness food pantry is a free-standing, cabinet-sized pantry that contains non-perishable food items which are available to anyone in need. It is located at St. Paul’s Episcopal Church in Centreville, which located at 301 S. Liberty Street. The box is next to the prayer garden. In order to successfully complete the project, Wye River students partnered with the church as well as other community professionals. The building of partnerships is considered an important growth opportunity for students at Wye River and a way to practice critical life skills like communication and collaboration. Students called a meeting with Reverend Mary Garner of St. Paul’s and discussed the design and location. They wanted the design to reflect the aesthetic of the church. They reached out to Ace Hardware in Centreville who generously donated the materials. Finally, the students enlisted the help of a professional carpenter, Dave Stehle, who is the parent of a WRUS alumni. Stehle advised them about materials, design, and helped with the construction of the pantry. The name, Loving Kindness Pantry is significant to the students. It was inspired by a scholarship that is awarded each year by Saint Paul’s Church to a graduating Wye River senior - The Loving, Kindness Award. Community members are invited and encouraged to contribute non-perishable items such as hearty soups with peel back lids, protein bars, water bottles, toiletries, warm socks, gloves, and umbrellas. Donations may be dropped off at the front office of Wye River Upper School or added directly to the pantry. “Our group believes that the philosophy should be ‘Take what you need. Give what you can,’” stated Wye River freshman, Jackson Maddox. Wye River students will be helping sustain this project for years to come and they hope that this makes an impact beyond expectations.
