WHAT’S COOKING WITH LOCAL MELISSA CUMMINS I recently discovered that my granddaughter loves apple scones. I had never baked them before, so I decided to five them a try. I was surprised at how easy and GOOD they are! Hope you enjoy them.

Apple Scones

2 cups flour (gluten free 1 to 1 flour works great too) 1 tsp. cinnamon 1/2 tsp. baking soda 1/4 cup sugar (I use raw sugar) 1/2 cup butter, cold and cut into cubes 1 egg 1/3 cup plain yogurt 1/2 tsp. vanilla extract 2 apples, peeled, cored and diced cinnamon/sugar to sprinkle on top (optional) Preheat oven to 350 degrees. Line a cookie sheet with parchment paper and set aside. In a large bowl, mix together flour, cinnamon, sugar and baking soda. Add the butter and mix together with clean hands until dough is crumbly. In a separate bowl mix egg, yogurt and vanilla together. Fold wet ingredients into butter/dry ingredients. Do not over mix. Gently fold in diced apples just until dough is holds together. Turn dough onto parchment covered cookie sheet. Use floured hands to form dough into a circle about 9 inches round and 1/2 inch thick. Cut into 8 triangle pieces (like a pizza). Separate pieces slightly. Sprinkle scones with cinnamon/sugar. Bake 20-25 minutes or until light golden brown. Completely cool before serving. *Serve with butter, jam or lemon curd.

Benedictine’s annual Spring Benefit: A Night at the Races, set for May 4th Benedictine’s annual Spring Benefit fundraising event is set for Saturday, May 4th at the Tidewater Inn in Easton, Md. Guests are invited to experience A Night at the Races at this year’s Kentucky Derby themed affair complete with a live viewing of the races, a sophisticated southern menu, and live bidding on custom auction items. Kaleigh Hart, an 11th grader at Kent Island High School (KIHS), is the Queen Anne’s County Public Schools Visual and Performing Arts Teen of the Week. She’s been a dancer and a member of Ms. Wright’s Dance Company at KIHS since her freshman year, has taken Dance I, II and III in addition to taking classes at Studio 180 in Annapolis.

This past year she choreographed a dance entitled “Rise Up”, which was selected to be showcased in the 30th Annual Maryland State Dance Festival held at Goucher College. This is such an honor because it was the first time in KIHS history that a dance was selected to be performed in the festival by Ms. Wright’s Dance Company!

Mr. Michael Bell, Supervisor of Visual & Performing Arts for QACPS was also in attendance that night and applauded their hard work and dedication: “Kaleigh’s choreography was hands down the best performance of the night, and Ms. Wright—an exemplary model of success for our district, not only as an outstanding dance teacher, but as a truly wonderful leader. The whole performance was amazing!”

And for Hart, she loves to perform and loves choreography. “I can just see the pictures in my head and it stays in my mind until I can choreograph it to get the pictures out. I love to see it all come to life on stage,” Hart explained.

Not only does Hart dance, but she also sings, and really well too! This year she took a giant leap, auditioned and became part of the KIHS musical Mary Poppins. In the future, Hart would love to choreograph for various studios, her college plans definitely involve dance, and she’d even like to own her own dance company one day.

Kaleigh is so appreciative for the love and support of her mother — her ‘Nan’, in addition to her siblings, her best friend Abby and let’s not forget her KIHS Dance Teacher and mentor —Ms. Wright.

Deputy Johnston was also awarded a firearm and athletic award at the commencement.

While attending the graduation, Sheriff Gary Hofmann stated, “I’m proud of the commitment and devotion each deputy recruit has displayed to graduate from the Eastern Shore Criminal Justice Academy. Each recruit had to endure six months of strenuous physical activity and comprehensive training in order to make it to graduation day. In addition, the recruits spent many additional hours at night studying and preparing for tests and scenario-based trainings. The determination they have shown is admirable. I’m proud to welcome them to our agency.
