disappointing results.” Upon returning to Rochester for Christmas break, she went to see a local chiropractor, Dr. Larry Oteham. “What a game changer! I was much improved after a few adjustments. Learning about our bodies and the benefits of chiropractic changed my life and led me to where I am today.” After her time at Tyler was complete, Irwin moved to Chesterfield, Mo., to finish her bachelor’s degree in human biology and then entered Logan College of Chiropractic. Upon graduation with her doctorate of chiropractic in 1991, she moved back to Rochester to work with Oteham. His office was located in what is currently the

She enjoyed that experience while learning how effective chiropractic care can be for so many different conditions and all ages. “My favorite job is what I’m doing now, working from my home. It’s rewarding to be a part of my patient’s wellness plan and to help them reach their health goals. God created a masterpiece when he designed our bodies. When the body is functioning properly, it will heal itself in many instances. I love to be an instrument in that healing process,” she stated. “I have two special greeters that receive much attention from patients, Dax and Serena, our almost-ten-year-old Labradoodles. My patients love them and often bring them doggie treats”. Because she is small in stature some wonder how she manages as a chiropractor. “It’s often not about strength,” she remarked. “It’s about leverage and precision.” She believes it is important to stay strong mentally, spiritually and physically herself, so she is at her best to help her patients. “Early morning hours are for quiet time with Jesus and exercise.” The COVID-19 virus posed a challenge for Irwin. “I will typically encourage patients to come in when they have colds or the

If they were feeling unwell, patients were encouraged to stay home.” Although she’s a chiropractor, she’s a mother first. “My husband Jeff and I adopted fraternal twins in 1999. Our Russian blessings, Jacob and Jamin, were born 10 weeks premature. We knew there was a possibility of them having special needs but that did not discourage us, as we believed they were part of our family before bringing them home. We like to say our kids have different abilities not special needs. God provided everything we have needed along our parenting journey and now Jacob and Jamin are happy and healthy in group homes in Fort Wayne.” Irwin is a member of Faith Outreach Center of Rochester and is very active with Redeemed Ministries, sending coloring bibles and encouraging letters to female prison inmates in Indiana.

Pickled eggs Good neighbors: Here’s to the reader wanting a pickled egg recipe. Grandma’s pickled eggs: 18 eggs. Syrup: 1 c. beet juice (drain from 1 pint pickled beets), 1 cup sugar, 1 cup white vinegar, 1 teaspoon salt. Carefully place eggs in a large pot and cover with water. Bring to a hard boil. Remove from heat, cover and let stand for 12 minutes. Remove from pot and add to a bowl of ice water. Peel and place in a half gallon jar. Drain the juice off the pickled beets. If you don’t have a full cup, add water to the beets and shake the jar a bit to get more juice. In a small saucepan, mix together beet juice, sugar, vinegar and salt. Bring to a boil. Pour hot syrup over eggs and refrigerate. Shake the jar a couple times a day so the eggs are pickled evenly. After three days, the eggs are ready to eat and will keep up to one month. This is a recipe someone requested for pickled eggs: 1 dozen eggs, hard-boiled and peeled, 2 (16-ounce) cans pickled beets, 2 cups cider vinegar, 4 cups water, 1 cup sugar (or more to suit taste). Put eggs in a gallon bowl with beets on top, draining liquid off beets into saucepan. Add vinegar, water and sugar. Bring to rolling boil, remove from heat and cool. Pour over eggs and beets and refrigerate a couple days for nice red eggs. To the person wanting pickled beets and eggs recipe: 2 cups vinegar, 3 cups sugar, 2 cans sliced or whole beets, reserve juice, 1 heaping tablespoon pickling spice, 6 eggs, hard-boiled and peeled. Combine sugar, vinegar and 1 cup beet juice (add enough water to make a cup if not enough juice). Heat until sugar is dissolved then cool. Put beets and eggs in covered glass jar; pour cooled liquid and spices over them. Refrigerate when cool. Keeps three to four months in fridge. Can add more beets and eggs as wanted, no more liquid. Ready to eat in four days. Pickled eggs: 12 eggs, boiled (set aside). In a large saucepan combine: 2 cups granulated sugar, 2 cups white vinegar, 2 cups water, 2 regular sized cans of sliced beets. Bring to soft boil. Remove from heat. Add peeled eggs. I store mine in a gallon ball jar in the refrigerator. Any covered container works. The longer you let them “soak,” the more pickled they will be. (Seven days, if you can wait.) After the first dozen eggs are consumed, the pickle juice will pickle another dozen, just throw them in. Pickled eggs and beets: Combine dark red beets and juice, about 2 cups of apple cider vinegar, a little salt and enough sugar (lots) to make a good

“sweet-sour” taste. Heat to boiling point. Put peeled eggs in a container (maybe a crock) and pour hot beet mixture over them and keep in a cool place for at least four to five days. Note: Cook eggs the day before and have them ready to peel before preparing the beet mixture. Beets may be “canned” or pre-cooked. If not, just cook for a few minutes when the beet mixture is being prepared. Here is a recipe a friend gave me and I like them so much: 1 can beets, drained. Mix liquid, 1/2 cup sugar, a little over 1/8 cup vinegar and several shakes of salt. Bring to a boil, add beets and heat for a few minutes. Chill overnight. You might want to add a little more vinegar. To make pickled eggs, drain the juice from the beets, add hard-boiled eggs and leave them set for a couple of days. Enjoy!

OBITUARIES Phyllis J. Hays

Margaret Clay Burkett Passionate Environmentalist

Margaret Clay Burkett, 94, Rochester, was surrounded by her loving family when she passed away at her home Saturday, March 13, 2021. In Fulton County, Margaret Clay was born Oct. 5, 1926. She was the treasured daughter of Roscoe and Mildred Hearn Clay. Margaret was 0$5*$5(7 the oldest of the three Clay children. She shared her childhood with a brother, Max, and sister, &/$< %85.(77 Shirley. Most of her childhood was spent near Talma. She attended Talma High School for two years then moved with her family to Richland Township. A young spirited woman with great enthusiasm, Margaret was a cheerleader during all of her high school years at both Talma and Richland Center. She graduated in 1944 as a Richland Center Wildcat. On Sept. 22, 1944, Margaret Clay married the love of her life and best friend, Mr. Richard “Dick” Haggerty Burkett in Marshall County. Their union spanned 67 years and produced two handsome sons, David and Randy. The family tree continued to grow over the years, with the added blessings of two more generations. In the early years, Dick and Margaret began raising baby chicks who later produced eggs. Their start in poultry came from Uncle Bert Leedy. Enjoying life in Richland Township they proudly oversaw a fine herd of 50 crossbred beef cows, sheep and a few Holsteins. They also looked forward to spring, when they tapped for maple syrup. Passionate environmentalists, Dick and Margaret planted more than 34,000 trees during their lifetime. A vibrant leader of the Fulton County Republicans, Margaret served as vice-chairman with chairman Jim Heyde during the years of President Ronald Reagan. She was also elected as county treasurer. Margaret owned the license branch for four years and later was appointed as supervisor. A great memory was in the early years when Margaret raced horses with her brother Max at the Rochester Racetrack (City Park). Aboard her horse Dan, Margaret consistently beat Max and others who challenged her. She had a love and appreciation for antiques. Paramount in Grandma Margaret’s life was her family. There was nothing better than gathering for the holidays and special family celebrations, making memories. Left to cherish Margaret’s memory are two sons, David Burkett and Randy Burkett and wife Beth, all of Rochester; two grandchildren, Dustin Burkett and wife Jennifer and Jessie Burkett; three step-grandchildren, Terry, Andrea and Debra; four great-grandchildren, Alexa, Kamrynn, Avery and Lola; seven step-great-grandchildren, Adrian, Breanne, Ayden, Haylin, Cole, Abby and Delany; a brother, Max Clay of Florida; a sister-in-law, Jackie Burkett of Rochester; two nieces and four nephews, Pam Alber Locke, Jeralyn Burkett Hines, Rick Alber, Jay L. Burkett, Bill Burkett and Pat Burkett. Margaret was preceded in death by her parents, Roscoe and Mildred Clay; beloved husband, Dick; sister, Shirley Alber; and daughter-in-law, Linda Burkett. A graveside celebration of life for Margaret Clay Burkett will be held in the Richland Center IOOF Cemetery at 3 p.m. Wednesday, March 17. Rev Steve Hartman will officiate. She married Gary D. Hays in 1968, in Birmingham, Ala. He preceded her in death. Survivors include her daughters: Wendy (Doug) Bower, Rochester, Vicki (Mark) Turnpaugh, Nyona Lake; three grandchildren; a great grandchild on the way; sister, Lydia Glassburn, Rochester; brother, Robert (Debra) Croussore, Rochester; several nieces and nephews; mother-in-law, Dixie Hays, sisters-in-law: Tonya (Tim) Buell, Tracy (Bernard) Todd, Georgia, Diane Hays, Doug Working; good friend, Jana Vance and her entire Zebra family. She was preceded in death by her parents; husband; brother, Terry L. Croussore; great–grandson, Maverick Bower; sister-in-law, Vicki Working; brother-in-law, Marvin N. Hays; inlaws, Marvin and Madelyn Hays. Private services will take place with interment at Citizens Cemetery, Rochester. Memorial contributions may be made to the American Cancer Society. Robert “Bob” Alan Simons Robert “Bob” Alan Simons, 72, rural Akron, died at 8:26 p.m. Wednesday, March 10, 2021, at Parkview Randallia Hospital, Fort Wayne. He was born Dec. 29, 1948, 52%(57 $/$1 in Wabash, to 6,0216 Charles Robert and Lois (Highley) Simons. He married Cheryl Sarll Dec. 12, 1975, in Wabash. She survives. Additional survivors include his son, Tom (Connie) Simons, Warsaw; daughter, Becky Simons, Wabash; mother, Lois Simons, Wabash; two grandchildren; brother, Douglas (Pam) Simons, Wabash. Burn ban in place for Fulton County Fulton County Board of Commissioners declared as of 2 p.m. Friday, March 12, a state of emergency exists in Fulton County and a countywide burn ban affecting certain activities shall be in place in an appropriate safety response to the fire hazards presented by current drought conditions. The commissioners found Fulton County is at an elevated risk of widespread fire hazard because of the ongoing drought conditions. Those portions of the Indiana Code which are applicable to the conditions are to be in full force and effect in the county for the exercise of all necessary emergency

Sometimes the Lord irritates us before he illuminates us. His power is so great he can use common things like dirt and water to produce a miracle. The man could hear but not see, and the Lord cured him physically and spiritually. This man has the characteristics of the lost person. (1) He was blind. The spiritually blind, though intellectual like Nicodemus, can never see or understand spiritual things. (2) He was begging. The spiritually blind are poor in God’s sight, though perhaps rich in the eyes of the world. They are begging for something to satisfy their deepest needs. (3) He was helpless. He could not cure himself; others could not cure him. The cure shows how Jesus Christ saves a spiritually blind person. (1) He came to the man in grace. Jesus Christ could have passed him by, for it was the Sabbath and he was supposed to rest. While the disciples argued about the cause of the blindness, Jesus did something for the man. (2) He irritated the man. A speck of dirt

irritates the eye; imagine how cakes of clay must have felt. But the dirt in his eyes encouraged him to go wash. It is just so with the preaching of the Bible: it irritates sinners with conviction so they want to do something about their sins. (3) He cured the man by his power. The man proved his faith in Jesus Christ by being obedient to the word of God. “Religion” today wants to give people substitutes for salvation, but only Jesus Christ can deliver from the darkness of sin and judgment. (4) The cure glorified God. All true conversions are for God’s glory alone. (5) The cure was noticed by others. His parents and neighbors saw a change in his life. So it is when a person is born again — others see the difference it makes. “Therefore if any man be in Christ, he is a new creature: old things are passed away; behold, all things are become new” (2 Corinthians 5:17). The same light that leads one person can blind another. The Gospel brings about different reactions from different kinds of hearts: the spiritually blind person receives the truth and sees; the self-righteous religious person rejects the truth and becomes even more blind spiritually. It is a dangerous thing to reject the light. It would have been easy for this man to hide his confession and therefore avoid controversy, but he fearlessly stood his ground. He knew what a difference Jesus Christ had made in his life, and he could not deny it. Everyone who has met Jesus Christ and trusted him should make it known openly. Have you?

Rochester native named Woman of the Year 109th Annual Chamber Awards Recently, the Kosciusko Chamber of Commerce held its 109th annual Chamber Awards Program. The virtual event was held on the chamber’s YouTube channel and Facebook page. Community members tuned in as several local businesses and individuals were honored. The program began with Chamber President & CEO Rob Parker welcoming everyone to the event and the national anthem and presentation of colors by the Warsaw Community High School Junior ROTC. The chamber’s 2020 board president, Doug Baumgardner

provided a list of the chamber’s accomplishments during the last year and Parker gave an overview of the initiatives the chamber is focused on. An additional update was given by LaunchPad Director Sherry Searles about the current child care crisis in Kosciusko County. David Slone presented the Woman of the Year to Angie Ritchey, chief technology officer at Lake City Bank. Ritchey is a native of Rochester and a graduate of Caston High School. She now resides in Warsaw with her husband, and serves as the chairwoman of Cardinal Services, an

organization with which she has been involved for several years. “Our Woman of the Year is very active in the community, at work and at home with her family,” said Slone in his presentation of the award. “She is hard working, generous and is always there to support those who need her. Her commitment to others with challenges in our community is evident in her decision-making focus and level of involvement in local non-profit organizations that help those in need. She jumps in wholeheartedly, welcomes more involvement, and is a role model for others.”

Two area farms receive 2021 Hoosier Homestead Awards Lt. Gov. Suzanne Crouch and Indiana State Department of Agriculture Director Bruce Kettler presented 51 Hoosier Homestead Awards to families last week at the Indiana State Museum in recognition of their commitment to Indiana agriculture. To be named a Hoosier Homestead, farms must be owned by the same family for more than 100 consecutive years, and consist of 20 acres or more, or produce more than $1,000 in agricultural products per year. “For generations, each of the families honored today have been committed to Indiana, to agriculture and to their families,” Crouch said. “The past year has been challenging in many ways but our agriculture industry remains strong. Hoosier farmers are a big reason why Indiana remains the 10th largest farming state. I was grateful to have the opportunity to present this award to these historic farming families.” Families are eligible for three different distinctions of the Hoosier Homestead Award, based on the age of the farm. They can receive the Centennial Award for 100 years, Sesquicentennial Award for 150 years or Bicentennial Award for 200 years of ownership. Since the program’s inception in 1976, more than 5,800 families have received the award. Two families were recognized with the Bicentennial Award during the ceremony; the Weinantz farm from Bartholomew County was established in 1820 and the Hall farm from Orange County was established in 1818. “The Hoosier Homestead program is a testament to the resiliency of our Indiana agriculture industry,” Kettler said. “Each of these families have played a significant role in the heritage of our state and I am certain their legacy will continue for years to come.” Area farms recognized in the March 2021 Hoosier Homestead Award recipients included the

FCCF provides $13,000 in grant money to local organizations In June 2020, the Fulton County Community Foundation paired with WROI to raise money for the Fulton County Emergency Relief Fund in an effort to assist those in the area affected by COVID-19. During the 12-hour event, donors pledged more than $8,000 and, with the matching dollars from the Fulton County Community Foundation, more than $13,000 was raised. Where did these dollars end up you ask? All over Fulton County. Some of the grants given went to Hoosiers Feeding the Hungry, Akron Community Center, Matthew’s Market and the Compassionate Health Center. Each of these organizations were able to use the additional funding to better service their clients in Fulton County. Hoosiers Feeding the Hungry

provided meat processing for 350 pounds of pork and 750 pounds of beef in the area. First Farmer’s Bank made a generous donation that allowed the purchase of several animals for meat. First Federal Savings Bank and other individuals continued to help the stock of meat in local food pantries grow. Hoosiers Feeding the Hungry used the $5,000 grant made possible by the Radiothon to process the meat for eating. This was truly a community effort. Akron Community Center serves a wide range of community needs in Fulton County. It holds senior lunches, Akron Lions, Hispanic community celebrations, monthly fish fries, graduation parties, class reunions, weddings, AA, girl scouts, elections and more. Due to COV-

ID-19, ACC was forced to return deposits for bookings and stop renting its facilities. This loss of income was detrimental to ACC. The $2,500 emergency relief fund grant helped alleviate some of this loss. Matthew’s Market is a local food pantry that serves all people of Fulton County who are food insecure. They work diligently to provide food, education and spiritual support to low-income families. In order to store more food without it perishing they were in need of a freezer. This $5,530 grant helped purchase a new freezer and more food. The lack of food donations due to COVID-19 led the market to have to supplement its supply by purchasing some food itself. The grant provided gave them the funds they needed to do so.
