24 large shrimp, peeled and deveined

2 roasted garlic cloves, mashed

1 tablespoon chili powder

The Shrimp and Roasted Garlic Tamale is a dish that has been enjoyed by Bobby Flay's fans worldwide, and it was created by Bobby Flay himself in his first restaurant. This dish features prominent ingredients such as masa harina, shrimp, garlic, and vegetables. I find this dish particularly appealing because it includes one of my favourite ingredients - shrimp. Shrimp pairs perfectly with garlic, creating a delicious flavour that is further enhanced when combined with chilli powder, cilantro leaves, and vegetables. Furthermore, the recipe calls for an ingredient, Masa Harina, which I am not entirely familiar with.

In a large bowl, whisk together the masa harina, baking powder, and salt. Add the warm water and vegetable shortening and stir until a smooth dough forms.

In another bowl, mix together the shrimp, roasted garlic, chili powder, cumin, salt, black pepper, and cilantro.

To assemble the tamales, spread about 2 tablespoons of the masa dough onto the center of a corn husk. Top with a spoonful of the shrimp mixture, then fold the corn husk around the filling, tying the ends with kitchen twine. Place the tamales in a steamer basket and steam for about 25-30 minutes, until the dough is firm and pulls away from the husk. Serve hot, garnished with additional cilantro leaves if desired.
