Burgers, fries and a legendary smile

By JERIMY SHERIN Staff Reporter Plastic cups sweat moisture onto well-worn tables as music plays in the background. The smell of burgers and fries drifts through the air as a TV blasts sports updates. This place has had its food and products endorsed by sitting presidents, ESPN personalities and country music legends. And if you can find a seat on game day, you’re one of the luckiest people in the county.

This is the worldrenowned “jumpin’ little juke joint” at the corner of West and Elm streets called “Eskimo Joe’s,” and it turns 40 years old this week.

Eskimo Joe’s opened on July 21, 1975, but the origins of the business started a few months before, the result of a sudden Sunday-afternoon partnership between Stan Clark and Steve File.

“Starting this place was an absolute, spur of the moment, wild hair deal,” Clark said. “I’m watching reruns of Star Trek, laying on the couch, and File walks in. He goes ‘Hey, Clark, I’m gonna open a bar!’”

Clark knew that a twostory bar was available to rent, and offered to go into business with File.

“Ten minutes later we’re shaking hands with the guy that owns the building, and that’s how this thing started,” Clark said.

The bar was set up to serve what was advertised as the coldest beer in town, sometimes for 10 cents a bottle, and work began immediately on logistics and a logo.

The bar found quick success so close to campus.

“I never had designs on getting rich or making something that was huge,” Clark said. “I just wanted what I was doing to be special. And I think we accomplished that, honestly, within the first few weeks we were open.”

Clark, who graduated from Oklahoma State University with a degree in business administration in 1975, discussed the Eskimo Joe’s history on Friday while eating cheese fries and drinking Arnold Palmer’s at the restaurant.

What could’ve been a deathblow to his business turned out to be a very successful decision to diversify.

“Nothing like diversity, frankly, to bring out the best, to bring out the energy, to bring out the all-out effort,” Clark said.

“At the time, I had 13 employees. By the time we added a small kitchen, and a very simple menu, we had 45 employees. I loved the immediate response so much so that I decided to open a second restaurant, and in another few months,

I had 105 employees. So it changed things quickly.”

Success like that in the restaurant business is not only rare, it’s unheard of. A study

by Ohio State found the failure rate for restaurants was 57 to 61 percent over a three-year period.

“Because we were at risk, it was part of the motivating factor that drove us so hard to become successful,” Clark said.

“I think one of the things about the restaurant industry that adds to its high mortality rate is that anyone that likes to eat might think ‘I wanna open a restaurant.’

Maybe they’re a good cook, but they don’t have any business background. Or maybe they’re a good business person but they’re not a people person, and they understand numbers but they don’t understand people. I think more than anything, we’re in the people business.

And if you treat people well, and you care about delighting them, you’ve got a real good chance at survival.”

“Survival” could very well be Eskimo Joe’s middle name. Clark has closed a couple of restaurants that were not as successful as the company had hoped for, including Stillwater Bay Oyster Company and Joeseppi’s.

“At the end of the day, it’s gotta contribute,” Clark said. “If you’re not making money, you can’t do any good for anybody.”

But pure profits and constant expansion are not what drives this business. There are no plans to open a restaurant outside of Stillwater.

Eskimo Joe’s: ‘...I think more than anything, we’re in the people business...’

From Page 4 “I don’t know, I just never could look at another place and think in my heart that that was going to be Eskimo Joe’s,” Clark said.

At Eskimo Joe’s, having a good time is not the only goal. Doing good for others is also a top priority, and has been engrained into the company’s culture for a long time.

“Special Olympics was the first cause-marketing cause that we ever got involved with,” Clark said. “We actually contacted Special Olympics of Oklahoma and told them ‘Look, we want to help. I don’t know what we can do, but when you guys bring all those people to town, we feel like we owe you something. What can we do to help?’”

It was at that point the Special Olympics asked Clark to have a shirt designed.

The T-shirt was created, and proceeds from the sale of the shirts go directly to Special Olympics of Oklahoma.

“That was back in 1998, and it’s enabled us to give them back tens of thousands of dollars.

“Folds of Honor was the same deal,” Clark said, noting the donation Eskimo Joe’s will make to the nonprofit organization. Folds of Honor provides scholarships to military families that have lost loved ones in combat.

Clark hopes to be able to donate $20,000 to the nonprofit.

scholarship for four years for the child of a fallen or disabled military person,” Clark said. “We’re thrilled if we can do that.”

When it comes to the menu, Clark has a clear favorite after all these years.

“I love me some hamburgers,” Clark said. “I love Joe Specials, I love Little Joe’s, and I love our Fowl Things, too. But probably my very favorite thing is our fresh cut French fries, with or without the cheese. I think our fries are just world-class.”

Cheese fries and good burgers aren’t the only things Eskimo Joe’s is known for.

Happy, energetic employees who love their jobs are a staple of the business as well.

“Those five hundred people are key to what we do every day,” Clark said.

“Those young ladies over there at the hostess stand are a lot more important to the success of Eskimo Joe’s than I am because they’re the ones making that first impression. Are we attentive?

Do we care? Are we really delivering a fun experience?

Many employees have parents who also worked for Clark.

“We’ll have kids that say ‘My dad worked there, said it was great!’” Clark said.

“We’ve employed tens of thousands of OSU students now, and for them, hopefully this is a very special part of their memories of their college experience.”

The weeklong celebration of the fortieth anniversary is packed with concerts, contests and prizes. Monday night kicks off the week with an outdoor concert featuring The Great Divide at 8 p.m.

The concert is free, accepting $10 donations to the Folds of Honor Foundation at the gate.

On Wednesday, the latest Eskimo Joe and Pistol Pete design will be revealed at noon, and “Celebrity Waiter Night” will be from 6 to 8 p.m. with OSU’s Coaches vs.

Cancer group. Friday night, the restaurant will host Rhythm and Brews, Stillwater’s first craft beer and music festival, beginning at 5

p.m. The event features more than ten Oklahoma musical artists and six Oklahoma breweries.

Kendra Moreland, director of public relations, highlighted the culmination of the week’s events this coming Saturday.

“We start with a kid’s carnival on our northeast lot,” Moreland said. “It’s just kids coming to get wet, with water inflatables and face painting and free entertainment for the kids from 9 to 12 on Saturday morning. While that’s going on, from 11 to 1, we start the poster giveaway and signing. Stan and Mike Staubus, who draws the art, will sign them.”

With forty years of success under his belt, Stan Clark, and his business, shows no signs of slowing down.

“I have absolutely no

designs on retiring whatsoever,” Clark says. “I love what I do, and I can’t imagine not working. I feel very fortunate and we’ve been able to do a lot for others. From a philanthropy standpoint, those opportunities are widening every year, so I do look forward to some significance on some other fronts. But really, this is the platform that lets me do things of significance.”

Oklahoma State University’s award-winning student newspaper has served Stillwater and the campus community since 1895. The O’Colly is a real newsroom that prepares students for a professional career in journalism.

We publish newspapers on Monday, Wednesdays and Fridays, during the school year.

The O’Colly is independent from the university and entirely student run, with more than 100 students on payroll. A staff of four professionals advise, guide, educate and provide support.
