Sweet Breakfast Rice (Arroz con Leche) Submitted By: Trine Lasora DFN: Rebecca Farina District: Jim Thorpe RECIPE DESCRIPTION A warm, comforting, and creamy start to the day! This sweet breakfast rice traditionally known as Arroz con Leche is a wholesome alternative to oatmeal. Simmered slowly in whole milk until thick and velvety, it is delicately flavored with vanilla and sugar. Finished with a dusting of cinnamon and best served alongside fresh fruit. RECIPE OVERVIEW Prep Time: 5 minutes Cook Time: 50–60 minutes Total Time: 1 hour Yield: 10 Servings Serving Size: 1 Bowl
INGREDIENTS ¾ Cup White Rice 1 Cup Water (for initial boiling) 4 Cups Whole Milk 2 tsp Vanilla Extract 2 tsp Sugar 1 tsp Cinnamon (for garnish) Fresh Fruit (Optional)

Bring to a boil and cook until all the water has been absorbed by the rice. Heat the Milk: While the rice is simmering, warm the 4 cups of whole milk in a separate pan or in the microwave (do not boil). Slow Cook: Once the water is absorbed, add the hot milk to the rice pot. Reduce heat and simmer for approximately 45 minutes. Stir frequently to prevent the rice from sticking to the bottom and to help it achieve a thick, creamy consistency. Flavor: Once the mixture has thickened to a porridge-like texture, stir in the vanilla extract and sugar. Serve: Portion the rice into bowls while hot. Top with a generous dusting of cinnamon and serve with a side of fresh seasonal fruit, if desired.
