Six months into the new year..that’s what it still feels like..the ‘new year’ but here we are barreling full speed ahead into June, which is month #6 on the calendar making this month the halfway mark of 2022. We are welcoming in another North Texas summer where patio seating in restaurants has become as in demand as are brunches which gave us inspiration for the theme for the June edition of ‘Fort Worth Foodies Presents…’: ‘Picnics, Patios and Pups’.

We will take you on an abbreviated trip through the countryside and visit a restaurant/brewery with a patio that overlooks a catfish fishing pond where a guest can feed the fish with pellets spill out from a bubblegum type dispensing machine. Live music can be heard on some evenings and always..a gorgeous Texas sunset. We’ll visit a patio nick-named The Riverside Riviera where Barbecue is served, cornhole is played and all of this under the shade of massive trees around which the patio was carefully constructed.

The Trinity River runs alongside the property providing an endless source of air cooling and the owners even put out fly swatters because it’s about time someone finally did that.

There are too many wonderful patios to do the subject justice so perhaps you can come up with your “Patio Bucket List’ for this summer? If you come up with one, post it to the group so we can see which ones caught your attention.

Most of the patios in Fort Worth are pup friendly but not all have a selection of food you can order that will make your beloved furry friend feel like a welcome guest. Read on to see which patio ranks very high with this editor with its mutt menu, bowls of water and even a free bandana for Fido on Sunday. You’ll want to know about this.

Picnics are as popular as ever and are being redefined with elaborate baskets and even settings. If you’re headed out to the Botanic Gardens, be sure to call or email 24 hours ahead of time to order from their recently introduced picnic basket menu. We’ll break it down and show it off. or an elevated outdoor dining event, caterers are now constructing temporary tables and creating exquisite ‘picnic’ experiences for birthdays, date night and even corporate gatherings.

The low tables are filled with sumptuous food while the attendees luxuriate on pillows that provide seating comfort while creating a setting to remember. One of our favorite creators of charcuterie boards has perfected the art of the picnic which she refers to as ‘Elevated Picnics’. Read on and you’ll understand why. You’ll also want to bookmark her contact information for use all year round.

We sourced a couple of purveyors who create food items and beverages that would enhance anyone’s picnic, day at the pool, on the boat or camping. It’s all about knowing your resources and we are happy to provide a couple of very good ideas.

Fathers’ Day is a June event and we haven’t forgotten Dad! We celebrate you while you celebrate him with food and an adult beverage recipe. We hope you get a chance to try them both. We think they’ll become family favorites.

Pups on the patio

Most of the patios in Fort Worth are pup-friendly. The exception may be those patios that can only be accessed by walking through the restaurant, where dogs aren’t allowed. Dining on a patio with your pup has gotten to be as elevated as are some of the dishes being prepared and your pup is as welcome in most of these beautiful patios. In fact, some restaurants such as Fort Brewery Pizza & Beer and Mutts Canine Cantina will make your pup feel like a valued guest with a pup perfect menu.

Fort Brewery refers to theirs as a Mutt Menu and it offers such pup pampering plates as ‘The Basic Woofer’ (chicken & brown rice), Many Mini Muttballs (miniature meatballs on a bed of Mashed Potatoes), Doggo Day Spa (a mix of apples & carrots), Nice Fetch (scrambled eggs & Wild-caught salmon) and the granddaddy of them all The Spoiled Rex (bone in ribeye with the bone wrapped to-go with a special dessert.

Let’s trot over to the other side of town…Clearfork to be exact. Mutts Canine Cantina (https://muttscantina.com) is an off-leash dog park, bar & grill. Situated in a park-like setting with chairs and tree stumps available for the humans to sit and chill while the mutts sniff each other, trot around, play, and socialize. The front porch is covered and has picnic tables and benches for your larger gathering and hosts birthday parties for kids and pups alike. The restaurant is open-air where orders are placed through an open window, cantina-style. It’s absolutely impossible to leave in a bad mood! I had such a fun time watching the dogs and people interact.

The aroma from the food was heavenly and judging from the empty containers, the burgers and fries were happily woofed down. There are smiles, hugs, music, food and adult beverages to be ordered. Day passes are available for only $9.99 and the monthly pass is a very affordable $19.99.

The Woof Menu includes a pupsickle (frozen peanut butter and beef broth on an edible stick which is a dog biscuit) and a Doggie Dog (bite size 100% beef frank). Both will get your pups tail wagging with delight! Mutts Cantina also offers an impressive food and drink menu (take a look at their Cold Stacks which are milk shakes available with such delectable items as oreos, nutella, pretzels, peanut butter and sea salt caramel and pecan praline spiked with a shot of bourbon) and a Yappy Hour.

You can’t go wrong at either restaurant and both restaurants should be experienced. I’m as delighted to see the furry friends of the other diners as I am when I have my pup with me on such outings. When you’re headed out for a meal, remember the patios of the restaurants, most of whom are pup friendly. It’s so much fun to go to the dogs while dining.

The Pink Cactus Pinterest inspired living has leapt off the screen and onto a picnic blanket at a location of your choosing. Seating is no longer on a picnic blanket, either. Some of these exquisitely curated events include constructed frames where beautiful fabric can be draped to provide a backdrop for the inevitable photos, and dance in the wind for added beauty. Flowers, balloons, food and beverages can be set up to emulate a feast of the gods and to make the celebran feel soooo celebrated. The table is often a long, linear plank and seating is often arranged on plush cushions or low seats to bring the merriment close to Mother Earth.

Everything about it speaks to an unforgettable experience. Kellie Villafaña and her husband Carlos are one of those ‘best friend’ couples who manage to work and live together very well. Family, including extended family is central to everything they do, so when Kellie decided it was time to take a leap of faith and start her own company, it was done with complete support from those who are most important to her In July, 2021, the duo started The Pink Cactus We provide everything you need from start to finish. Admitting to being consumed with thoughts of how she can further elevate the experience, Kellie says she thinks about it non-stop and wants her picnics to inspire her customers and their guests. It’s a magical event where each attendee is treated to a feast for the eyes as well as the palate.

At present, she caters to gender reveals, birthday parties, girls' days out, reunions, anniversary celebrations, and birthday parties. She has her sights set on expanding into weddings and even corporate events. As long as she’s growing, and she is, she’s happy. The goal is to move into a brick-andmortar which she and her husband feel are realistic within the next few months.

Scott mentioned the pickled garlic would be pitch-perfect for a dirty martini. He carries pickles with different flavor profiles which would hit the high notes in sandwiches and pizzas being created in the restaurants around town. The options are endless.

What is a given is that the attention to the quality of the item would be an exciting addition when incorporated into a chefproduced dish. Having Scott as a trusted purveyor would be a welcome dimension to any thriving eatery.

Whiskey Grapefruit cocktail (Combine Whiskey, Cocchi Rosa, Grapefruit, Honey, and Ginger Beer for a refreshing, yet easy cocktail for Father's Day.

● 1.5 oz Blackland Bourbon Whiskey ● 3/4 oz Cocchi Rosa ● 1 oz Grapefruit Juice ● 1/2 oz Lemon Juice ● 1/2 oz Honey Syrup 1:1 ratio of honey and water ● 1/2 oz Ginger Beer ● 1 Garnish with Grapefruit Slice In a shaker, add your ice, Whiskey, Cocchi Rosa, Grapefruit, lemon, and honey syrup, and give this a good shake.

Strain over fresh ice in a collins glass and top up with ginger beer. Garnish with Grapefruit slice.

Patio Bucket List

Thought about making a ‘Patio Bucket List’ for you all to try to check off this summer, but that was a short-lived idea that I had to abandon after I realized how many patios there are in this city. Listing them all by location, amenities, and more would take days to compile. Onto Plan B, which is to highlight a few patios I’ve come across that stand out to me for one reason or another. Most of the ones I’ve chosen are our brand partners (advertisers) for which I have a preference as would be expected. We thank them for their support and are very happy to reciprocate by showcasing their patios and helping to bring business their way.

Most of these gorgeous patios never come up on popular ‘Best of’ lists but each has merit and is worthy of mention for everything they offer.

Each one has its unique characteristics, each one is from a restaurant that offers very good food and each one deserves to be experienced first hand. I’m sure you have a few of your own that you’ve visited a time or two.

While you're thinking of it, why don’t you come up with your own ‘Patio Bucket List’ that you can try to check off this summer? Think of it as a patio treasure hunt and perhaps you can bring in an extra element of adventure by ordering a new item from the menu you’ve never had, or maybe you could bring your pup as most are dog friendly and a couple even has a menu designed just for your canine companion.

Whatever you decide to do, have fun and let us know where you ended up, what you enjoyed about it and what you ordered. We’d love to follow you on your patio safari, seeking out menu items we will all want to try and peoplewatching opportunities we will all want to experience.

Sammie’s isn’t located near the BBQ Golden Triangle but it’s worth finding. Located at 3801 E. Belknap St. it has all of the elements of a true Texas BBQ joint, complete with an extensive patio with a pool table, corn hole, and a beloved 1953 ???. The regulars affectionately refer to it as The Redneck Riviera since the Trinity River runs parallel to the side of the property. The patio was built around massive trees which provide much-needed shade. The trees also add to the organic feel of the casual spot which is also dog friendly.

Sam Gibbons and his girlfriend Mackenzie ?? are the relatively new owners. The building was purchased in 2017 and set out on its current trajectory of offering such time-honored dishes as smoked bologna, mouth-watering brisket and on Friday, the coveted 2” thick smoked pork chops which typically sell out so getting there early (doors open at 10:30) will be a good strategy to adopt.

Sam is keeping the bbq torch-lit, figuratively speaking. He was raised in a BBQ family. His dad owned and operated Smokies (???) and with his newly minted degree in business from Texas A&M University, Sam set out to carry on the family legacy of serving up traditional Texas BBQ, cold beer, and sides such as mac and cheese. The restaurant is filled with locals and regulars but the city is catching onto this gem of a find.

Lynn Wilford Scarborough, is the CEO of Cheeza Pleeza, a company that produces a unique line of gourmet cheese spreads and dips. This is not the “old store-bought pimento cheese”, these handcrafted spreads are in a category of their own with crazy big flavors like dill pickle, green chili and wasabi. In five years, they have made and sold over 20 tons of cheese tubs through small stores and farmers markets in the DFW area.

Each flavor is made in small batches with quality ingredients, natural preservative, no added sugar and less sodium than other brands. They currently offer chunky cheese spreads, dips in savory, spicy, KETO, sweet and vegetarian flavors that will add a gourmet touch effortlessly. They easily transition from being a dip to a topping for baked potatoes, burgers, as a spread for bread and will be a welcome addition to any cheese or charcuterie board.. The flavors are Five Cheeza Savory Pimento, Hatch Green Chile, Dill Pickle Palooza, Poblano Jack, Greek Holiday, Wasabi Wowee and Mega Garlic dip. They all sound delicious!

The taste experience is developed with a sophisticated palate in mind but it’s not a prerequisite. Cues from wine experts were an important part of the recipe development. Great products, like an expensive wine, have different layers of flavor: a front, a medium, and a back or finishing flavor. In the development of Cheeza Pleeza each flavor has a multi-layered, progressive taste, one that has helped Lynn gain an impressive following.

Lynn adds “For example, when you taste the Hatch Green Chile, the first taste is of the cheddar and acid from the chilies, then the flavor of the garlic and Mexican cheese blend and finally there is a slow back burn growing from the combination of peppers.” The Hatch Cheeza is her best seller with men, college students, and any playoff game.

60,000 tubs of cheese in five years is remarkable for a small shop. For the company, the goals are to provide great, nutritious, ready-to-eat food. Lynn wants to see Cheeza on dairy shelves across the country and beyond.

She adds “Life is best when shared and most often when we break bread together. When we share a meal, life is made richer.” and she wants her product to be the most shared cheese in the world.

Have you ever wondered why bread is sold in a Brown Paper Bag? It’s for a reason. Whether it’s ciabatta loaves, sourdough, or that fresh baguette it always seems to come wrapped in a brown paper bag, with the ends of the loaves sticking out on top? There’s a reason for this, and no, it’s not aesthetics, or a fiendish plot by supermarkets or bakeries to make your bread go stale faster so you have to return to buy more. Rather, according to Reader’s Digest, wrapping freshly baked bread loaves in that distinctive brown paper and keeps air on the bread. This in turn helps keep the crust crisp and delicious. As Southern Living notes:” If you store your bread in a plastic bag, the moisture from the bread gets trapped in the bag making the crust soft. Storing in plastic will keep the bread fresh longer, but you’ll lose the crust.”

Pre-sliced sandwich bread is wrapped in plastic so you can keep it in your pantry longer. Fresh bread loaves, meanwhile, are meant to be eaten within a day or two of purchase, maintaining their taste at its highest level is the primary concern. Hence, the paper bags. Of course, even when the fresh bread does start to go stale it still has uses in dishes like bread pudding.

There’s not much that will take my breath away more than a Texas sunset.

I’m not talking about noticing the sky turn from day to night, from my house in the burbs in Fort Worth, I’m referring to the fiery crimson-golden sunset emanating from behind the horizon filled with scrub oak and mesquite. The vision has special meaning to me, but being an urbanite, I often forget they exist. When I do catch sight of one, it takes my breath away all over again and anchors me to the ground I’m standing on.

There’s not much else that says ‘Texas’ to me than those exquisite sunsets.

Such was the experience I had when leaving The Break Room Brewing Company, a restaurant in Cleburne. As the other guests and I spilled out onto the parking lot after a sumptuous feast, that is what met us. A glorious Texas sunset. It was a perfect greeting to what was a fabulous meal and a very good time shared with friends, new and old.

The Break Room Brewing Company isn’t a freshman project.

It’s the third restaurant owned and operated by the husband/wife team Collin and Shannon May and business partner Jeremy Hutton. The original restaurant was a small burger spot in Crowley, which has since been sold, the second one, still thriving, is in Pagosa Springs, CO. and the third one is the one we visited in Cleburne, (4001 SH-174, Cleburne, TX. 76033). The trio travels back and forth from Pagosa Springs to Cleburne as the needs arise. Their love for Colorado is evident with the partitions separating the bar area from the dining area, having abstracts of mountain ranges painted on them, and the walls hosting beautiful photos of aspen trees and babbling brooks taken on the many hikes Shannon has enjoyed. She usually has her camera with her, and her eye captures the natural beauty of Colorado in a very dramatic but realistic way.

The restaurant in Cleburne also hosts its own natural beauty with a catfish pond off of the large deck in the back. The deck is also where live music is played, and the diners can order from a menu that is Texas in size and scope. For the Starters, you’ll have eight items from which to choose. We opted for the Wings, Queso and Mozzarella Sticks. All were crunchy where they needed to be crunchy, smooth, deeply flavored and those wings were absolutely great! We annihilated that queso, and it was a very, very generous serving. The mozzarella sticks came as a very big surprise as they were also very good with a distinctly Italian flavor, and the marinara sauce was good enough to eat with a spoon. If there had been any left over, I’m sure we would have.

The entrees were an interesting mix of grilled pork chops (juicy and excellent), grilled trout, which was my pick, and I was very impressed. I love trout but have been let down so many times. This dish was perfectly prepared and not one bone in it. Not one! The Reuben was interesting and outstanding. The meat was incredibly flavorful and tender. It was sliced thicker than the deli Reubens I’m used to, but it gave the sandwich more bite, and it was also outstanding. We were told the meat is in-house cured, which came as no surprise since the attention to the smallest details were studied by the owners and tweaked to perfection. Shrimp Scampi was another entree ordered, and the shrimp looked fresh and succulent. It came to the table with two generous pieces of toasted garlic bread perched on top. The presentation was beautiful, and I was told it was absolutely delicious. The Fried Catfish Basket was also delivered perfectly cooked, perfectly crunchy and perfectly delicious. Onion rings were served with them, and I was told they were every bit as good as they looked.

Rock Springs Cafe & Catering Is located within the Fort Worth Botanic Gardens Known for monthly Afternoon Teas, Rocksprings Cafe & Catering also caters for the many events hosted within the 110 acres of the spectacular gardens at any one of the 14 unique venues, which can include weddings, family reunions, college reunions, and holiday parties. Always innovating, they’ve recently introduced a picnic basket onto their menu.

The package includes an assortment of items you choose which includes plastic dishes, silverware, alcoholic or non-alcoholic beverages, and a picnic basket and a blanket. While they request you return the basket and blanket, we think you’ll agree it’s a package you’ll want to be sure to order while spending time in the gardens.

The menu offers various ‘Tiers’ from which you’ll make your selection. Be sure to order at least 24 hours in advance by calling or emailing. If you’ve ever wanted to spend more time in the gardens in lush surroundings while enjoying a beautifully prepared picnic, here’s your opportunity!

Grilled orange chicken skewers

DIRECTIONS 1-In a medium bowl, combine Maggi sauce (or soy sauce), orange juice, orange zest, vegetable oil, garlic, white pepper (optional), and black pepper.

Stir well until combined. Add chicken breast and stir to coat. Cover the bowl with cling wrap and refrigerate for at least 1 hour (or overnight). You can also
