(Re: Hear It From the Helping Hands, Issue 341) Your collection of responses from our cleaning help was both hilarious and informative. It's good to hear from the other side as well. As always, your community-friendly magazine gets everyone involved, from the very young to the bubbies and beyond! Many things shared by the cleaning ladies were a wake-up call to some and a reminder to others. We understand that they want to share their take on various parts of their tasks, yet our cleaning help needs to understand that if they are doing playroom walls for over three hours (!), it is expected that they should be told to hurry up. Or, if they talk on the phone for more minutes than there are in an hour, without even remembering what they were asked to do or what is expected of them, then it makes perfect sense that we get frustrated. Yes, we are reliant upon our cleaning help and must treat them respectfully, but they need to take into consideration that this is a partnership where they need to answer their phones when we call, show up in a timely manner, do what is expected of them, and not constantly raise their hourly rate. (Inbox, Issue 340) On the note of cleaning ladies and raising their pay, there is another issue that’s been happening as a result of a lack of respect between us Yiddishe sisters. I recently heard of four cleaning ladies (mine included) who just informed their employers that they are stopping to come clean for us. How come? Because they were offered more money at local heimishe stores who need the extra help before Pesach Do the math. A full week's worth of work affects so many of us, who often keep them all year just to make sure we have enough help Erev Pesach. Please be respectful of our cleaning help. As a principal in one of the local heimishe schools, I’m witnessing a disturbing trend. I hope that by voicing my concerns in this public forum, we can start a discussion that will effect direct change. At this time, between Purim and Pesach, schools start the hiring process for the coming year. With each passing year, I’ve noticed that it is becoming considerably more challenging to fill available teaching positions. Every principal in our community is assuredly nodding their head in agreement,

and Torah Umesorah did a wonderful job this winter in bringing awareness to this serious concern. There are several factors that contribute to this worrying trend; the primary one being low wages typically associated with a job in chinuch. Over the years, I’ve spoken with many idealistic graduates who would make fantastic teachers, but their (notso-idealistic) parents dissuaded them from accepting a job whose starting salary is less than an entry-level position in an office. And although I used all of my persuasive skills to help them understand that the sipuk one derives from work like this cannot be compared to other jobs, one would have to concede that a girl would need to be extremely
motivated (or seriously free from financial worries) to work twice as hard and get paid half as much. The simple solution would be to raise the teacher salaries… but every tuitionpaying parent knows that would translate to increased tuition amounts — and, “I would be so grateful to pay $25 more per child per month,” said no one ever. So what do I want from you, dear mother, grandmother, aunt, cousin, daughter, friend, teacher and valuable community member? First, awareness. There is a crisis! The future of your children’s chinuch is at stake! Schools are an integral part of our society, and teachers are the single most important element of our schools. If

If we fail to keep our effective teachers in the classrooms, how will your daughters learn fundamental skills? Second, ideas. Perhaps some talented, creative individuals out there can come up with practical and realistic ways to help fund the increase in teachers’ salaries so that it wouldn’t need to affect the pockets of our already overwhelmed parent body. And for those of you who believe the myth that schools are money-making machines, I invite you to accept a position as a school administrator for one day to see for yourself the true meaning of a “notfor-profit” organization. And last, respect. The teachers in our classrooms are doing a job that is at best, delightfully challenging, and at worst, nearly impossible. They need your appreciation, cooperation, understanding, and most of all, respect. When parents send their child to school each day, they are entrusting their G-d-given gift into the hands of a teacher for seven full hours. Teachers are surrogate parents — they are taking your place; you owe them the world! Fellow Monseyites, please realize that change has to happen fast, so that our schools can continue doing what we, as a community, are relying on them to do. S.R.

In this week’s parsha, the pasuk tell us that all baby boys should be circumcised on their eighth day of life. This mitzvah is celebrated with much pomp. Well-wishers shower the baby and his family with the bracha: “K’shem shenichnas l’bris, kein yekanes l’Torah, l’chuppah, u’l’maasim tovim.” This language is not used when performing other mitzvos or celebrating other life cycle events. Why has it become the custom to say this specifically at a bris? RAV SHALOM SCHWADRON repeated the following story that he heard from a mohel who had been in the Soviet Union during communist rule. It may have been a risky thing to do behind the Iron Curtain, but that didn’t stop one communist soldier from fulfilling his duty. One day, the soldier appeared at the door of the “shul” where courageous Yidden gathered to daven. My baby son is already a full year old, and I was never able to find the right moment to make a bris for him as the halacha dictates.” His eyes looked at me pleadingly. “Can you come with me to where we’re hiding and perform a bris on my son?” I pondered the situation for a moment. This could be a trap. But the man looked so sincere, so passionate. Something inside me propelled me to follow him. The soldier stood at the side of the shul until we finished davening, and then he took the lead. I followed behind him cautiously.

We went into a car and drove a short distance. Then he took me through a gate, which led to another gate. We entered a large house, and the soldier led me to the other side through a long hallway. Finally, the soldier opened a wide door and went inside. I followed him into a large round room that resembled a simcha hall. There were a few people inside. The room was set up for a bris, with some cake and wine on the table, a chair for the sandek, and a large chair that would serve as a kisei shel Eliyahu. There were tears in my eyes as I extended a hand to those present. The one-year-old boy was brought in, and I performed the bris. The joy in the room was palpable. The father and his friends sat beside me, thanking and lauding me for helping out with this courageous, holy mitzvah. Suddenly, there was a loud shout. What happened? We all panicked. The noise had come from the ladies. Someone had fainted. As it turned out, it was the mother of the newly circumcised boy who had passed out. After waking her and offering her something to drink, the mother came back to herself. The father of the baby returned to the table where I was sitting, a serene expression on his face. Still, he couldn’t bring himself to speak. Tears of emotion welled up in his eyes. Finally, he explained, “You see, our son is now one year old.

Today, when the boy was brought back to her arms, having joined the ranks of Klal Yisroel with his new status postbris, she kissed his forehead for the very first time…” * * * * * With the mitzvah of bris milah, a baby boy is born anew. He is transformed into a full-fledged child of Klal Yisroel, an uplifted Yid. We use the term “Er hut zich ge’Yiddished” to aptly describe how the baby has gained his new status. Just as the baby has become elevated through his bris, we wish upon him the zechus to become elevated through all the mitzvos he performs throughout his life, from Torah to chuppah and ma’asim tovim.
Did You Know? The Midrash describes how Hakadosh Baruch Hu instructed Eliyahu Hanavi to take part in every bris milah in Klal Yisroel. Eliyahu replied that he is zealous by nature. “How will I be able to be under one roof with a ba’al bris who is sinful?” he asked. Thus, Hashem promised to forgive the ba’al bris for all of his aveiros. “And if the mohel is sinful?” He, too, would be forgiven, Hashem responded. “And what about the people who come to take part in the bris? What if they are ba’alei aveirah?” Finally, Hakadosh Baruch Hu promised that they, too, would be forgiven. What an opportunity the bris milah presents!

Feeling the Void (Last week we discussed the possibility that many peoples’ worries and inability to live in the moment stem from a wish to deflect the real source of their pain - the spiritual void that we all have within.) When Yankel feels paralyzed because of his worries, he’s not able to be present with his family. His wife approaches him to discuss an important matter about the children but Yankel’s head is not there. His 9 year old son, Binyomin, chatters to him about the new boy in his class. Yankel nods as if he’s listening but really he’s so stressed he hasn’t heard a word his son has said. Yankel is distraught and feeling hopeless when he comes to see me. We
ultimately need to do the work to make space for this particular feeling of pain and loss. Rav Y.G. is a menahel of a local yeshiva. He’s looking to hire a new maggid shiur but he’s worried about what will happen if the bochurim don’t like his choice and end up causing problems for him. Consequently, he can’t bring himself to make a decision. His fear (of what other people will think) and shame based on faulty childhood beliefs

Of course, learning Torah, tefillah and observing the mitzvos are a means to close that disconnect but the reality will always be that as long as we’re in this world, there is a separation that we must acknowledge and give space to. When an individual allows himself to

feel the void within, becoming more comfortable with his discomfort, he will naturally feel more aligned with himself and will be able to move on with his life, doing what needs to be done in a calmer, more present way. The key is to be conscious about the void. Give it the space it needs. And realize that it’s not a one-time deal. The same way we make space in our lives to eat and sleep daily, we need to make space for our yearning and any resulting pain and sadness. The main thing is, we need to be conscious of our desire to connect to our feelings of disconnect. And interestingly enough, I find that when we give space for feeling the disconnect, the making room for it in itself is healing and takes away the sting.

This homemade duck sauce is just the right condiment to have handy all Pesach long. Use it on chicken, meat, fish or as a dipping sauce. INGREDIENTS

T. oil large onion, diced T. sugar T. lemon juice cup orange juice tsp. potato starch tsp. salt tsp. red pepper flakes (optional) slices salmon

1. Saute the onion in oil along with the sugar for approximately 20 minutes. 2. Add the remaining sauce ingredients, and cook until the sauce thickens to resemble store-bought duck sauce. 3. Pour the duck sauce over the salmon, and bake at 375° for 20 to 25 minutes.

This method of preparing falshe fish was originally my late grandmother’s. Four generations of balabustas enjoy cooking this each Erev Pesach. I prepare it in bulk to enjoy as our fish course for every meal, but I’ve also divided the recipe to include a 2-pound option. The results are fabulous. Ball jars are the most convenient way to preserve the “fish” balls so they last through the entire yom tov. Ladle hot sauce with the balls into jars. Cover the jar with the lid and band. Turn the jars upside down until they’re completely cooled, then store them in the fridge for up to three to four weeks.

You’ll need an extra-large bowl to combine this mixture, which should be cooked in two 16-quart (or 12-quart) pots.

1. Place the ground chicken in a bowl with the slightly cooled potatoes. Set this aside. 2. Cut a bit less than half of the parsley and knob celery (reserving the larger halves for the cooking water), and place these with the remaining vegetables and eggs in a food processor fitted with the S blade. Process this until the mixture is very finely ground. 3. Add this to the chicken mixture, along with the sugar and salt. Mix well. COOKING INSTRUCTIONS:

1. Line two loaf pans evenly with parchment paper, letting it hang over the sides. Set aside. 2. Prepare the gefilte fish: Mix together all ingredients, except for the salt, in a mixer on high speed for about 10 to 15 minutes. Add the salt and mix for another minute. 3. Divide the mixture in two. 4. Cook the carrots in boiling water until they’re tender, about 15 to 20 minutes. Drain them well. 5. In a food processor, process the drained carrots for about 15 seconds. Add half the fish mixture and blend well. 6. Spread some of the gefilte fish mixture evenly in one pan, and smooth the top. Spread the carrot-gefilte fish mixture over this first layer, and smooth the top. Repeat this in the second pan. 7. Place a piece of parchment paper on top of the fish, then cover the pan with aluminum foil. 8. Bake for 1½ hours in an oven preheated to 350°. When done, the top should be firm to the touch, the edges should pull away from the sides of the pan, and a skewer inserted into the center of the fish should come out clean. 9. Let the fish cool for 20 to 30 minutes. Remove the fish from the pan by pulling at the parchment paper. Let the fish cool completely, then cover and refrigerate overnight. 10. Slice and serve.

Airlines Call on President To Drop Passenger Mask Mandate Citing shrinking infection rates and vanishing mask mandates in other public settings, the CEOs of ten airlines have called on President Joe Biden to finally free flyers from the ongoing face covering requirements. A letter released by travel industry lobbying group Airlines for America highlighted the absurdity of people being allowed to congregate mask-free in crowded restaurants and stores while being forced to wear face coverings on airplanes, whose filtering systems produce “hospital-grade cabin air.” The letter also noted that current mask mandates are no longer in line with current COVID realities and place a tremendous burden on airline employees who are tasked with their enforcement. Signatories on the letter included the CEOs of Alaska Air, American Airlines, Atlas Air, Delta Air Lines, FedEx Express, Hawaiian Airlines, JetBlue Airways, Southwest Airlines, United Airlines and UPS Airlines. Biden extended the mask mandate on his first day in the White House, renewing the order through April 18 just two weeks ago. The Centers for Disease Control had recommended keeping the mask mandate in place on all forms of public transportation for another month on March 10, reported CNET. As difficult as the mask mandate has been for travelers, it has also created endless headaches for flight attendants. According to the Federal Aviation Administration, 635 out of 961 cases of unruly passengers reported from January 1 through March 21 involved masking issues. Of the 5,981 reports of pas-
senger confrontations last year, 72% were related to masking policies. Bloomberg reported that the federal government has been contemplating creating a nationwide no-fly list that would ban the worst offenders from all commercial flights. United’s no-fly list is more than 800 names long, while Delta’s includes 1,900 passengers, 900 of whom are facing potential civil penalties.
U.S. Travelers Can Return Home From Abroad With Expired Passports Through June Acknowledging the difficulties that many encountered trying to renew their passports during the pandemic, the United States Department of State has announced that travelers will be allowed to return home through June 30 on passports that expired after January 1, 2020. A release by the State Department said that it has been working closely with the Department of Homeland Security and commercial airlines to allow citizens to return home from abroad. The exemption only applies to travel from foreign countries to the United States or on connecting flights through another foreign country with a final destination of the United States. Certain criteria apply to the new allowance, and travelers returning to the United States on expired passports should check to confirm their eligibility at www.bit.ly/3Dnez99 before finalizing their travel arrangements. As of October 29, the State Department estimated current passport processing times at eight to eleven weeks, with a five- to sevenweek turnaround time on expedited passport applications.
Wieder Decides Not To Pursue Assembly Seat Approximately six weeks after word surfaced that he was considering a possible run for the State Assembly, County Legislator Aron Wieder declared that he would not be throwing his hat in the ring to represent the newly drawn 97th District. 262

Wieder made the announcement on Friday, taking to social media to thank those who signed his petition to represent the newly drawn majority Orthodox Jewish district, which encompasses both Monsey and Spring Valley. He left the door open for a future run, saying, “If the opportunity arises in two years, I might reconsider.” Assemblyman Simcha Eichenstein had voiced his support for a Wieder Assembly run back in February, as previously reported in The Monsey View. Eichenstein described Wieder as “uniquely qualified” and as someone who “would be ready to hit the ground running on day one.”
East Ramapo’s Educational Monitor Resigns Citing personal reasons, the state-appointed educational monitor for the East Ramapo Central School District unexpectedly submitted her resignation last week, leaving the New York State Education Department scrambling to find a replacement. The Journal News reported that Dr. Denise Lowe was one of two monitors who reported to Commissioner Betty Rosa on the district, which has been operating under state oversight for the last several years. Then-commissioner MaryEllen Elia brought Lowe on as a monitor in 2018, noting that she had more than two decades of experience as a school leader, nearly five of which were spent helping struggling schools and districts. With more than half of the students moving into the district not speaking English as their primary language, East Ramapo fiscal monitor Bruce Singer said that he hopes that the department acts quickly to bring in a new academic monitor. Singer said that he believes that community outreach is a primary objective for the district’s monitors in order to continue bridging the divide within East Ramapo, which has long faced problems stemming from its unique demographics with yeshivah students outnumbering their public school counterparts by a ratio of three to one.

three others, a somber ceremony in Clarkstown marked the tragedy and highlighted its impact, which sparked safety changes to school buses and railroad crossings nationwide. Bus 596 was on its way to Nyack High School on March 24, 1972, when sewer construction in Congers caused the driver to take a detour, reported New City Patch. The driver drove down a hill and through an ungated railroad crossing, putting the school bus and its high school passengers directly in the path of an oncoming Penn Central Freight Train. Despite activating its emergency brake and sounding its alarms, crew members were unable to stop the 83 car train in time, and the school bus was split in two on impact, with half the bus dragged 1,000 feet until the train came to a halt. A National Transportation and Safety Board investigation determined that the train crew had acted correctly, and the school bus driver was convicted of five counts of criminally negligent homicide. The crash, the worst in New York involving a school bus, triggered a push for marked and gated railroad crossings throughout the United States and also prompted safety upgrades, including more stringent construction standards for school buses and increased driver training and certification. The Journal News reported that the tragedy also resulted in the installation of seat belts and radios in school buses, so that drivers could stay in contact with their dispatchers, and led to regulations requiring school buses to stop at all train crossings, even when railroad crossing barriers are in their upright position and no trains are visible. Speaking at the remembrance event at Congers Lake Memorial Park, Clarkstown Supervisor George Hoehmann praised those who raced to the railroad crossing to offer their help and offered words of encouragement to the survivors. “We honor those who had the courage and ability to rebuild their lives after tragedy and adversity, the families and the students who lost loved ones and the injured who, despite trauma, were able to survive and eventually thrive against all odds,” said Hoehmann. “In Clarkstown we promise never to forget.”

I thought there were only three!” Izzy said in surprise. “Only three survived the war,” Chaim Simcha corrected, “but there were eleven to begin with.” He handed his brother a slip of paper with his own, penciled-in notes. “It wasn’t easy to find their information. Not many people who would know are still alive, and a lot of the records disappeared in the war. But I looked into it. I made this list myself.” Izzy studied the paper. It contained eleven entries with names and dates for births and deaths. Some of the dates were complete, while others were merely a year or a month. If a family got a visa, it included all of their children. So if someone was willing, you’d put your kid in with them and sign his name as a part of the family in order to get him on the boat. The Brochshteins took Mischa to America. When they heard the Rebbe died, they even adopted him, raised him as their own. But the pressures of life here got to them. Then he grabbed another shelf from a stack and covered the edges with glue. “Why aren’t you screwing this one in?” Chaim Simcha asked. “Why the glue?” “This is for the middle of the unit. A screw over here would be visible from the outside. So glue and dowels is the way to go.” He set the board in place and attached giant clamps on top and bottom. Then he wiped away the excess glue that seeped out from the joint. Chaim Simcha gave a low whistle. “Just a hobby, huh?” Izzy gave an embarrassed cough. “So, what are we doing tomorrow morning?” “We have a meeting with Jacob Brock,” Chaim Simcha explained. “Brock?” “The Brochsteins changed their name to Brock when they got to America, and some of Mischa’s kids took their last name — including Jacob.” “Wait, Jacob is Mischa’s son?” Izzy said in surprise. “Yes. He’s in his mid-sixties, but he’s not well. He’s in an assisted-living facility, which is where we’ll be meeting tomorrow. RATZY D. About a week before Rosh Chodesh, I “unofficially” go into the Pesach kitchen. I start with the potato starch process, since it needs to be dry by the time I start cooking. When I officially open the Pesach kitchen, the first two days are really one long day with a nap in between, if I’m lucky. I start the food prep by cleaning all the chickens (which I order in advance to arrive in time for Rosh Chodesh), and I prepare the falshe fish mixture as well as a ground chicken mixture for patties. On this day(s), I also saute a whole lot of onions to have on hand over Pesach, probably about 10 pounds.
DINI FREUND Before anything, I focus on preparing food items that will make all other food preparation easier. The first thing I put up is pots and pots of sauteed and caramelized onions to be used generously in Pesach roasts, liver, cholent, potato dishes and the sauteed onion chicken, which is a big number in our home. Some years I saute and caramelize as many as 50 pounds of onions! And it usually needs more than a day to finish. In this first block of time, I also grind cinnamon as well as black pepper, which I use to season dishes. And next up is juicing oranges and lemons, since I also use these in various recipes. Another thing I do that first night, and every night following until yom tov, is prepare batches of dried apples, something my family enjoys a lot over Pesach. Since I don’t want to tie up the oven during the day, we peel, core and slice several yellow apples into rings each evening, and before I go to sleep, I turn on the oven on a low number, which shuts off with the oven’s timer after four hours.

HADASSAH STEINMAN Usually, the first thing I do is fry several batches of crepes. This means that I get the Pesach lokshen off my list and also have crepes at hand to use for mock cabbage pasta (which consists of shredded root vegetables with strips of crepes) as well as vegetable blintzes.
R. ITZKOWITZ I start by putting up an oversized pot of apple compote followed by many batches of Pesach noodles. I aim to start about three weeks to Pesach.

Although I haven’t made Pesach on my own just yet, I’ve been very active in my mother’s kitchen before Pesach. We kasher the kitchen about three nights before yom tov, and the morning after kashering we start with the shmaltz! While that’s cooking we do the juicing for both lemon juice and orange juice. Next up are huge pots of apple compote and chicken soup. That’s usually it for day one. By then the stovetop is full, and there’s no space for more cooking anyway.

LEAH STERN I don’t officially go into my Pesach kitchen until a week before yom tov. This year, it’s on plan for after Shabbos Hagadol, b’ezras Hashem. Unofficially, though, I sneak in on or right before Rosh Chodesh to put up jars of borscht, because the beets need time to ferment properly. My kids also beat me to the Pesach kitchen. Several days before I begin cooking, they make must and potato starch, two items that I can get by without eight days, but they think is worth the patchke. About a week to yom tov, when my chicken order arrives, I officially take up my post in the Pesach kitchen. Before anything, I make shmaltz (because I can’t cook anything except compote without it!). I then tackle the rest of the chicken order. While I don’t get to cook everything before yom tov, I do love to clean all the chickens in advance and package them according to my needs, marking them clearly while I’m at it. This way on yom tov I have portions ready to go into the soup, or turkey ready for the cholent, and it makes everything so much easier. Once the chicken cleaning and packaging is done, I start with a big pot of sauteed onions.
ETTY BERGER Most years I start with a big pot of sauteed onions, but this year I have loads of fruits (apples, pears and some peaches) sitting and waiting for me to peel and prepare a big fruit compote out of them.
RIKI GOLDSTEIN Several days before yom tov, when all the scrubbing is done and we’re really ready for it, we open up our Pesach kitchen. We don’t do it early since we don’t have the nerves to open up while there’s still chometz all over the place, and we don’t need three weeks to cook for an eight-day yom tov. The fish order comes that first day and has to be washed, portioned and frozen. Then I start making our favorite cakes and kugels. We chop onions — loads! — to be sauteed. We then start to put up meat and soups. And, best of all, we make a filling supper for that night, so the family is happy that we’re finally here.

MIRIAM PESSY WERCBERGER I start cooking about a week before Pesach. First on my list is the cocoa stuff, obviously: cookies, cakes and desserts!
TOBY P. After the grocery order is done, the first things I do are put up a big pot of compote and fry a whole bunch of crepes for lokshen. Then I reserve the next entire day for baking. Whatever I manage to pack into this day makes up the bakery inventory for that Pesach. Each week at the end of Pesach, we write down how much went of each item — both homemade, as well as purchased items like matzah, potato starch, etc. — and then I work off that list the following year.

GOLD… AND POTATOES High up in the Andes Mountains and down in its humble valleys, the Inca civilization flourished in the early 1500s. Most famous for the tremendous amounts of gold that the region possessed, there was another hidden treasure to be found there: the first edible potatoes. Wild potatoes grew in the Andes Mountains for hundreds of years. But the wild tubers were tiny — and worse, poisonous. Somehow, though, the wild animals of the area ate the potatoes and survived. Through close observation, the Andeans realized that the animals licked edible clay before eating the poisonous plants, and so the people followed suit. They dipped the potatoes into clay dust, and the dust stuck to the toxins in the potatoes and made them safe to eat. Eventually, Andean farmers learned to breed potatoes that were not poisonous, and a solid industry of potato agriculture took off. Because the mountain range had different climates at different altitudes, the mountain farmers learned to grow many different varieties of potatoes. An average family grew more than ten different potato varieties for their different flavors and tastes, and it soon became a diet staple, served boiled, mashed or even dried. 284

There are over 4,000 potato varieties in the Andes until today, in colors, shapes and sizes that look bewilderingly different from the potatoes we know. In fact, Andean farmers claim that the potatoes we eat are bland and tasteless, and they grow those common varieties only for export.
NEW FRONTIERS Potatoes were hidden in the faraway mountains, unknown to the rest of the civilized world, until the mid-1500s. In 1536, Francisco Pizarro, a Spanish explorer, invaded the Incan Empire after hearing rumors of their great golden treasures. After conquering the territory of what is today Peru, he confiscated whatever gold he could find. Pizarro’s troop of soldiers were the first Europeans to eat potatoes, imitating the natives of the land. And when some Spaniards made their way back home, some potatoes of a single variety accompanied them, presumably as food for the trip home. Unknowingly, however, through taking this single variety, the sailors changed history forevermore. The humble potato tuber didn’t garner much interest upon its first appearance on the European continent. Nobody could have foreseen that it was a greater find than all the valuables that Pizarro collected. When the potato first arrived on European shores via Spain, it was welcomed with mild interest. Spaniards recommended it as a good food for laborers who did heavy work. But as they experimented further with potatoes, they discovered that it was a great source of nutrition and didn’t spoil easily.
Soon, Spanish armies were given potatoes to bring along on their expeditions through Europe, and as the armies passed through different countries, more and more people were introduced to this new food.
SPUD SUSPICION In many countries, the potato was greeted with suspicion, like anything new and strange. Most farmers wouldn’t plant it, and people were afraid to eat it. Rumors abounded that the potato caused disease and was dangerous to eat, and it took time for these rumors to be proven false. In France, potatoes became acceptable only as animal food and as prisoner rations. The average French citizen was still reluctant to eat the new food, despite the rampant starvation resulting from the high price of bread. It took one man to change that. Antoine-Augustin Parmentier was a doctor in the army. When he was captured by enemy soldiers, Parmentier was forced to eat only potatoes, as befit a prisoner. To his surprise, however, Parmentier found that this diet kept him in perfect health. When Parmentier finally returned to France in 1763, he studied the potato and found that, indeed, it was a great source of nutrients and also very filling. He was determined to show everyone that the potato was in fact a good and healthy food that could be a great dietary solution to all of the starving French peasants. Aware that only aggressive marketing could change people’s opinions about the potato, Parmentier came up with brilliant ways to promote its benefits. 286

First, Parmentier hosted an upscale dinner, inviting only highsociety guests — and every dish served at the dinner was made from potatoes! Sure enough, the guests at the party testified that it had all been delicious. Next, Parmentier had the king and queen of France wear purple potato blossoms. The flower that grew from the potato tuber was of a pretty color, and soon the queen was wearing it in her hair. The king stuck the flower in his lapel, bringing the flowers into style for nobility to wear. Parmentier’s most successful move yet, however, came in 1785. He persuaded the king, Louis XVI, to let him plant potatoes on 100 acres of useless land right outside the capital city of Paris. Parmentier wanted the people to become curious about these new plants, so he hired a troop of guards to protect the field. Parisians couldn’t figure out what was so valuable that needed to be under such heavy guard, and soon their curiosity drove them to investigate the matter, just as Parmen-
tier had hoped. When the French sneaked into the field, the guards pretended not to notice, as per Parmentier’s orders. The curious people even got away with stealing some of the plants, and of course, once the potatoes were forbidden fruit, they looked all the more tempting. And that was how the French learned that potatoes were actually a delicious, filling food that was incredibly easy to grow.
FEAST OR FAMINE Once Europeans began experimenting with the potato, there was no looking back. Europeans had always relied on grains as their main food source, but their poor soil couldn’t grow enough grain to feed the people. As a result, famine was common, and life expectancy was short. Unbelievably enough, the humble potato, all on its own,
ONE POTATO, TWO POTATO Frederick the Great, King of Prussia, was also known for his love of potatoes. He was even called the Potato King. But he couldn’t convince the Prussian peasants to plant and eat potatoes. At first, he used threats and armed soldiers in his campaign to boost the humble potato. He even sent out a royal edict ordering the planting of potatoes, and announced that he would cut off the nose and ears of anyone who refused to plant the tubers. Nothing changed, however, until Frederick changed his tactics. He took a page out of Parmentier’s book, and planted a royal field with potatoes, and it was placed under heavy guard. Suddenly, public curiosity surged. Local people sneaked into the garden to check out the valuable crop, and in a magnificent switcheroo, they became all too eager to plant potatoes just like the ones in the king’s garden, which were being served at the royal table.

changed that. Potatoes were easy to grow in any soil, didn’t get affected by harsh climates, wouldn’t spoil through a long winter, and were surprisingly filling and nourishing. Farmers also discovered that planting potatoes was easy; all they needed to do was use a piece of the potato in place of a seed. Potatoes were such a productive plant that Europe’s food supply soon doubled, and the people of Europe no longer faced the constant threat of hunger. Populations exploded as the nutrients the potatoes possessed meant that people were less susceptible to common illnesses of the time, like scurvy, and more infants survived. Life expectancy also improved, as people had more food and were in overall better health.
A BLIGHT ON HISTORY In Ireland, the starving peasants were thrilled with the potato. They were introduced to this new food in 1589, and they quickly came to realize that their poor soil and cold climate were no problem at all in terms of growing potatoes. By the time the 1800s rolled around, a whopping 40% of Irishman relied on potatoes as their only solid food. Soon they were healthier than the average European peasant of the time, who ate mostly bread, a less nutritious food. And this was the case until the infamous Potato Famine. In 1845, Ireland’s potato crop was infested by a species of mold that killed off nearly half of all the potato plants, and the Irish people saw their food for the year destroyed by an invisible enemy. Millions of people faced starvation, and this led to mass emigration from Ireland, mostly to America. Despite all their efforts, however, over a million people died as a result of the famine. From Ireland, the potato infestation, called the potato blight, spread to the rest of Europe, where powerless farmers helplessly watched their crops fail. Eu-

ropean potatoes were especially vulnerable to the plant disease, because they were all planted from a single variety. The continent had no other potato varieties, which might have better withstood the onslaught.
BACK IN THE AMERICAS While South America was the source of the potato for the rest of the world, North America never saw a potato on its shores until Europeans populated the land. The Irish immigrants who had fled the famine were actually the ones to successfully popularize the potato in their new home. These potatoes were called Irish potatoes. Even with the new Irish population in America, it wasn’t until Thomas Jefferson served potatoes in the White House that potatoes became as popular as they are today. Thus, history repeated itself once again as American citizens watched their leader eat potatoes before quickly following suit. Some say that the president actually served French fries, which is how Americans grew to love the food. Whatever the case, it’s hard to imagine a world without potatoes. Indeed, the world would be quite a different place without the tuber known as the humble spud.

“T
he moistest cake ever! You won’t believe it’s Pesach’dig,” I announce as a preamble before rattling off the ingredient list to yet another caller. This lip-smacking chocolate cake recipe is our trademark Pesach cake. I once clipped the recipe, and ever since have had avid callers requesting it year after year. And yet, heavenly and non-Pesach’dig as a cake may taste on Pesach, after Pesach, no one craves the deliciousness of dissolving chocolate KLP cake on their tongues anymore. That’s what happens when you have leftover cake after the chag. Now, what happens when you have ten 9x13 pans you need to get rid of before Pesach? Unbelievably, it happened to us. * * * * *
It was the year I resolved to tackle my baking a full week before yom tov. And Pesach baking is simple: All my kids vote for The Chocolate Cake, so that’s the only recipe I make. Times ten. Ages ago, I stopped bothering with layered cakes and nut cakes, which my picky eaters de-seed anyway. So while I was standing in my minuscule, airless Pesach kitchen, wiping bowls and stiffening snows, my husband popped in, his face in a I-have-a-mission mask. I didn’t quite go for the look. “How’s it going? It’s hot in here. We put a fan in here for a reason,” he remarked, turning on the fan. The sound instantly irritated me. Not that he wasn’t right about the steaming conditions in the room, but I handle heat better than I handle noise. “That’s better,” he said. “I’m visiting because I want to check which cocoa you used for the cakes.” If I thought the noise was irritating, my husband’s newfound culinary interest irked me even more. “Ummm, I used two brands this year; I can’t even remember which…” “I’ll tell you why. We were just made aware in shul that one of the cocoa brands is sporting a kashrus symbol without that kashrus agency’s knowledge. It is not the only supervision the company had, so I wouldn’t deem the cocoa chometz. Still, the hashgacha I rely on has no relation to this company. It’s not something that I want in our home on Pesach.” And so, from a heap of eggshells and potato peels, four empty cocoa containers were retrieved. “Oh, I see only one out of the four containers you used was from that company,” he announced after careful scrutiny. Instantly I exhaled in relief, but the relief was short-lived. What does one out of four help me? It would require a lab to test which cake was made with which container of cocoa. “But what do we do now?” I was on the verge of
breaking down. “Look at all these cakes! I was sure I’m done for Pesach. Just get a heter from the Rav. I spent all day on these!” “Pesach is a time when we’re machmir. This is not the hashgacha we eat,” my husband replied apologetically, scanning the glossy stack of aluminum foilwrapped pans. “I’m really sorry about this.” I just groaned. Did he really understood? “Like I said,” he added, “they’re not chometz; they simply don’t meet our kashrus standards, especially for Pesach. You can keep them in the freezer until after Pesach and enjoy them then.” Blinded as was I by the gleaming stack of aluminum pans before me, the logic was lost on me. “You know what?” I suddenly blurted, knowing it was time to give up. “Why not let the kids enjoy them now? They have one week to finish ten cakes! You should’ve seen how they begged to taste a piece before! They’ll be ecstatic!” My husband was glad I overcame my disappointment so soon, and my kids simply didn’t know what hit them. Or hit their mom. Since when does Mommy allow unrationed cake like this? Knowing that after Pesach these cakes would lose all their luster, I didn’t care about their speed of consumption. They ate, and ate, and ate some more. The big ones, the little ones… everyone helped themselves. The best part (when I was finally able to find some good in this terrible situation) was that I didn’t need to be careful with the little ones. They were able to enjoy their cakes in every room in the house. Well, almost. After the baking burnout, I decided to leave Baking Session Number Two for when everything else would be done. And several days later, with soups, kugels, meats and sides complete, I was ready to attack my chocolate cakes once again. Of course, I ensured that, this time, the cocoa met my husband’s kashrus standards before getting to work. My daughter peeked into the kitchen as I was opening the first can of cocoa. “Don’t tell me you’re making more cake!” she groaned. “What’s wrong?” I asked. “I doubt anyone can stick another piece of this into their mouths,” she said, looking nauseated. I exited the kitchen and summoned my kids. “Who wants me to make more chocolate Pesach cake for Pesach?” “Not me!” said one “Please! I’ve had my share,” declared my drama queen, feigning vomiting motions. “Ma, are you serious?” my teenager piped up. “I can’t even stomach the thought of this cake.” I was glad I took a vote, because what would I do with leftover cake after Pesach? But now I’m still looking for a moist, delicious recipe to replace my trademark Pesach cake. Anyone?

can’t tell you that I ever really dreamed of having a Pesach kitchen. But since yom tov necessities never showed up miraculously in my refrigerator no matter how hard I wished for them, it meant kashering my kitchen a full three days ahead, year after year, in order to have enough time for the pre-Pesach cooking marathon. And it goes without saying that no one in my house was overly enthusiastic about those extra chometzfree days, and over time, the idea of a Pesach kitchen started to sound pretty appealing, even to me. By the time our long-awaited vision of expanding our house started to become a reality, we had no doubt in

our minds that a Pesach kitchen was going to be incorporated somewhere into those blueprints. There was just one small problem. Given that we were adding to our existing structure and not starting fresh, there was no practical place for a Pesach kitchen, other than to somehow squeeze it into our not overly large laundry room. Ever the problem solver, my husband ordered a side-by-side washer and dryer that could also be stacked, if we wanted to go in that direction, as well as the necessary brackets. Logically, the plan made sense — stacking the appliances would carve out a small but serviceable work area for Pesach — but the idea didn’t resonate with me because it would make doing laundry a lot less convenient a full twelve months of the year. And as much as I wanted that Pesach kitchen, there is always a whole lot of laundry going on over here at Hotel Eller, and
I wasn’t interested in making that job any harder than it had to be. Which left me wondering if maybe, just maybe, there was another way to make things work. We already had a sink and an oven in the laundry room, and if I wanted to hang cabinets over the washer and dryer, we had the space to do that, too. All we were really missing for a reasonable facsimile of a Pesach kitchen was space for a work area, even a small one, and as Nissan drew near, the proverbial lightbulb went off in my head. A few months earlier, when we were in the midst of construction and entirely kitchenless, our contractor was nice enough to create a bare-bones temporary cooking area in the garage. I set up a six-foot folding table in the garage and made neat rows of my flour, sugar, oil, tuna and other goodies on it. It didn’t take me long to realize that if one six-foot table could hold a fair
amount of groceries, stacking an identical table on top of the first one would allow me to store twice as much food in the same amount of space. My double-decker pantry turned out to be a lifesaver in my garage/temporary kitchen, which left me wondering — why not try to recreate the same setup in the laundry room/Pesach kitchen? It wasn’t lost on me that my laundry room was way smaller than my garage, and to say that space was tight would definitely be an understatement. There were exactly ten inches of space between those tables and the sink, and you couldn’t squeeze past another person without doing some major breath-holding and maneuvering. But everything fit, and I designated the lower table as my work area, reserving the upper one for foil pans, cutlery, utensils, paper towels and a variety of other essentials. It all worked except for one tiny detail that was actually pretty significant. While technically I had six beautiful feet of space where I could slice and dice to my heart’s content, the height was all wrong, since tables are sized for sitting down and eating, while I needed something at counter height for my chopping, mixing and egg-cracking marathon. Surveying my domain and all of my Pesach provisions, I pulled eight cans of kosher l’Pesach mushrooms out of the cabinet and taped them together in pairs to create four double-height cylinders. I slid one set of mushroom cans under each table leg to elevate the work area to a more reasonable position, and voila, I had a perfectly acceptable workspace, even if it was just a tad unconventional. Still, it worked, and over the years my kitchen space has evolved, though it certainly hasn’t grown any. I keep my tables covered with disposable tablecloths topped with a thick layer of newspaper, and as I make my way through endless pans of brownies and kugels, I peel off the dirty newspaper, adding an additional layer or two when I get close to the bottom. I discovered that small, square grocery boxes are perfect for holding utensils and other odds and ends, and I use three to keep my milchig, fleishig and pareve stuff separate from each other but still within arm’s reach. I have a clip lamp clamped to the underside of my upper table for better lighting, and a pole lamp that was lurking in my basement gives me extra light at the sink so I can actually get stuff clean when I am washing up. The walls around my sink and stove are covered with plastic refrigerator liners, taped in place, guarding them against messy splatters. I also have silly cartoons and pictures taped to the wall in my work area, because I have learned over the years that Pesach preparations are so much less stressful if
you can maintain a positive attitude while getting the work done. I will be the first one to tell you that my Pesach kitchen is illogical, crazy and would make any designer cringe. But I am amazed each year that such a tiny bit of space, barely big enough for two people to stand in, can make such a difference in my life — even if I go a little rogue in my cooking habits by sautéing vegetables in foil pans with plastic spoons, repurposing plastic lids from potato-starch containers as spoon rests, and eyeballing ingredients in disposable cups and spoons instead of pulling out actual measuring utensils. It’s been eleven years since I first created my not-exactlyking-size kitchen, and while my kids tell me that there are now plastic folding tables with height-adjustable legs on the market, I think I am going to stick with my current setup for now. Somehow, there is something about the hodgepodge
THERE WERE EXACTLY TEN INCHES OF SPACE BETWEEN THOSE TABLES AND THE SINK, AND YOU COULDN’T SQUEEZE PAST ANOTHER PERSON WITHOUT DOING SOME MAJOR BREATHHOLDING AND MANEUVERING. of items cobbled together that makes me feel like I am back in summer camp, bringing out my resourceful side and making me feel like there’s nothing I can’t do, even if I am dealing with less-than-ideal circumstances. For whatever reason, working out of this minuscule, self-created space sparks my sense of adventure and keeps my preparations in perspective, imbuing them with a sense of fun and keeping me cheerful, upbeat and actually looking forward to Pesach. My Pesach kitchen may not be anybody’s dream kitchen — not even mine. But it is a place that reminds me that we can all make great things happen, just by working with lots of imagination and whatever we happen to have in our own daled amos. March 30, 2022

Hi, everybody! In order to get into the spirit of writing this article, I sauntered into my kitchen with my trusty pen, all ready to spurt forth my thoughts on how to clean the crumbs out of the toaster for an hour and end up in tears with your toaster in the garbage. (Happened to me. Really.) Now I just dissolve in tears when at 3 a.m., after sorting toothpicks and straws, I find that I’m out of chocolate. So… if you’re doing the kitchen this week, or starting next week, I would love to take this opportunity to tell you, my dear readers, that it’s okay to be frazzled and it’s okay to be exhausted and it’s okay to feel a little overwhelmed. But let me tell you this: If you’re frazzled, exhausted and overwhelmed at 3 a.m., (or if you’re sorting straws or toothpicks!), well that is not okay. Yes, we all love super clean kitchens and super organized closets, but normal is key here. Normal means different for everyone, and only you yourself know when you’re going off track with your general Pesach cleaning and into Overboard Mode. It’s not easy work. However, the atmosphere can be calm and relaxed if you train yourself to stay focused. Staying focused means dancing with your broom and singing with your scrub brush.
KITCHEN CABINETS AND DRAWERS PREP LIST: Basically every cleaning supply you own will be used in the kitchen. We will be focusing on the cabinets in this article, so grab some good shmattes, a good scrub brush, gloves, a strong cleanser, a mild cleanser, Ajax, Soft Scrub, or anything you use for scrubbing pots and so on. Now let me explain how the kitchen works. If you’ll empty the cabinets, clean their contents, and put them back inside, that’s totally okay. But I highly recommend throwing out all the little gadgets that were a must-have once upon a time and now sit forlorn and forgotten in the back of your drawer. Even when you think you have nothing extra in the kitchen, I can guarantee that if I personally visit your home, I’ll find stuff to discard or give away. Okay, okay, I’m not coming into your kitchen right now, but I will make random house calls to make sure you decluttered your kitchen according to my demands!

Okay, let’s begin! Chazak has such inspiring Pesach shiurim — 845-356-6665. You can listen while you work. The pots will somehow get shinier quicker. Organizing is one of my passions. Cleaning is a different story. While I enjoy cleaning (stop making faces; I didn’t say recleaning and recleaning and recleaning) because I know the end result is satisfying, I look for quick shortcuts as much as anybody. The kitchen seems to be the toughest place in the house to clean, but it isn’t really. It just needs the most time. Aside from your appliances and pots, you generally just need to empty your cabinets, and… A. Discard all those sippy cups, bottles and drink bottles that haven’t seen the light of day the past year. B. Wipe out cabinets well. For all year, liners are optional. I personally don’t like the look and use them only for the cabinets under my sink.
as well as the outside periodically to avoid the buildup. Fill it with hot, soapy water and baking soda. Boil it for 15 minutes. Drain. Repeat. Rinse well. Clean the outside with a regular shmatte and cleanser. If water stains persist, wipe down with a cloth soaked in vinegar. (Ask a Rav about Erev Pesach use.) POTS N’ PANS:
C. Whatever you put back inside, whether it’s baking paraphernalia or a hundred differently sized containers, ask yourself if it’s really needed. Wipe well. Scrub what needs scrubbing. Once the insides of your cabinets are done, you’re halfway through your kitchen. For those of you who like to really deep clean their kitchen’s contents, here are some methods for cleaning them: DISHES/CUTLERY/GLASSES: If you’d like to get your dinnerware looking the way they did when they were out of the box, fill a basin with warm water and soap and soak. There are quite a few methods for cleaning your dishes. I like this one. Let soak for a few minutes. Wipe dry. BOSCH MACHINE/ FOOD PROCESSOR/BLENDER: If you’d like to clean these machines properly, you will need gentle, nonabrasive scrubbing brushes in a few sizes. The harsh brushes scratch the plastic. You can use toothpicks, Q-tips, skewers with paper towels or other messy methods — but brushes do a beautiful job with 95% less hassle. Separate all the parts. Submerge everything, besides the motor part, in warm, soapy water. Take a good look at all the little nooks and crannies. Use a tiny bottle brush to get inside those spaces. Regular dish soap works well. Rinse and dry. CROCKPOT: Soaking it in hot, soapy water for an hour or two does wonders. If soaking does not do the work completely, rinse out the water and sprinkle with baking soda and scrub. If you still need more than that, use an oven cleaner, but I’m not a fan of this cleanser as the fumes are strong. Let it sit for a few hours or overnight.
Sink water in the percolator can give you those white pieces of hard water that float around. Unless you use spring water for every refill, they will keep coming back. Clean the inside

BAKING SUPPLIES: First make sure that you actually need all those cookie cutters. Whatever supplies haven’t been used in the past year can go. Most supplies can be wiped down with soapy water or a mild cleanser. Make sure all supplies are completely dry before putting them away. Be aware that stainless parts rust easily. BOWLS: Nopes! You don’t need that many. Get rid of all the differently sized ones that you might use when Tante Mirel comes for a visit. Glass, plastic and stainless bowls can all be cleaned the same way. Fill your sink with warm water, dip the bowl in, and air dry. CONTAINERS: Don’t get me started! Trust me when I tell you that you don’t need half of them. Sort the lids with their owners. If the owner has gone missing, throw the rest away. If the plastic ones are discolored, now is the time to discard them. Rinse your glass containers the same way you wash your bowls. You’re gevaldig! Do a little dance. Nobody’s watching, Okay, maybe I’m on my rounds to check up on you, but I’ll just join in. Trust me, after “cleaning” out the nosh closet (you can’t throw everything in the garbage, after all), I can use all the dancing and jogging I can get.

To get your pots and pans looking brandnew without huffing and puffing, sprinkle baking soda generously over surfaces, peroxide on top of that, and add more baking soda on top. Let sit for two hours or so. Wipe away. Total magic. A magician gets a kick out of a rabbit appearing from his top hat. You’ll feel the same way after seeing the amazing results on your shiny pots.

From potato kugel to hash browns, French fries to mashed potatoes, potato salad to potato starch… there’s hardly a food as versatile as the potato. No wonder your average American eats 111 pounds of potatoes a year. (Hey, what percentage of that happens on Pesach?) Let’s explore this popular veggie-carb. Innovative Incas Friend or Foe? The potato is a vegetable, but its nutritional profile is more similar to a carbohydrate, and it is rich in several vitamins and minerals.
The Incas are generally credited with being the first to discover this versatile veggie. To the Inca farmers, however, the potato wasn’t just a food. They took advantage of its potent properties and used it as a remedy for many ailments and problems, including:
Potatoes ranked number-one most filling when compared to some 40 common foods.
Toothaches
Broken bones
Because it is so filling, the potato may actually aid in weight loss. (French fries and potato chips don’t count!) A small study showed that eating boiled potatoes as a side dish leads to lower calorie intake than pasta or white rice.
Rheumatism
Frostbite
The Incas even made use of the water the boiled potatoes were cooked in, rubbing it onto their aches and pains. They also judged time lapse according to how long potatoes took to cook.
Skin blemishes
Perhaps the popular practice of placing potato peels or grated potato on a burn originates from the Incas, too?
Can Potatoes See? Interestingly, potatoes are still somewhat alive after they are picked! When they begin to grow eyes, you know they are nearing their end. At the same time, the eyes indicate new potato beginnings. From these buds, new potato plants can grow. Exposing the buds to warmth and moisture will cause stems and roots to grow from the base. Potatoes with eyes are safe to eat, as long as they are still firm to the touch. The eyes themselves should be removed as they may contain toxins.
Colored Look-Alike? It may seem similar, but it is in fact unrelated. The sweet potato is not part of the potato family; it is part of the morning glory family, whereas potatoes are nightshades.

The best time to eat potatoes is in the morning.
With a Chip on His Shoulder Popular lore says that potato chips were invented by mistake. It happened in 1853 when high-profile diner Cornelius Vanderbilt (the railroad mogul) sent his plate back to the kitchen because he disliked the thickly sliced potatoes he was served. Chef George Crum felt slighted and decided to “show him.” He sliced some potatoes as thinly as possible and deep-fried them. The rest is history.

Belgian Fries? Potatoes were relatively new to Europe when they gained popularity in Belgium. The Belgians used to fry little fish to eat, but when the rivers froze in the winter, they looked for a replacement. They began to fry potato sticks, cut to the size of their small fish. During the Franco-Austrian War of 1859, French soldiers were introduced to the treat, and they popularized it throughout the world. Another version claims they were called French because the dominant language in Belgium was French at the time.

In 1949, Brooklyn-born George Lerner came up with an idea of producing face and body parts that could be poked into a fresh potato. And Mr. Potato Head was born! Skeptics worried that coming so close after World War II, parents would frown on the waste of perfectly good food, but surprisingly, after some good publicity, more than 1 million potato heads sold in 1952 alone.
Could you survive without potatoes? Irishmen could not.
Mr. Potato Head went plastic after parents complained of finding moldy potatoes under their kids’ beds…
Potatoes were a staple crop in Ireland. When the crops failed from 1845 to 1852, some 1 million people perished.
Stick a rusty knife into a potato, and its oxalic acid in the potato will do the trick and remove the rust! Oxalic acid also has cleaning properties and is used in household cleaning items.
Potatoes are composed of 80% water. The term “couch potato” was coined when a cartoonist’s friend poked fun at his lazy, inactive state as he lounged on his couch, doing nothing all day. The cartoonist liked the comparison and drew sketches that made the phrase go viral.
China is the leading potato producer, with nearly one-quarter of the world’s potatoes grown there.
Peru was the first country to grow potatoes. The crop spread to Europe as animal fodder in 1570, and made it to the table only in 1795. Idaho harvests 13 billion pounds of potatoes annually, more than any other U.S. state. March 30, 2022
