To Our Devoted Directors, Teachers and Melamdim, We appreciate the creativity that you add to all of our children’s programs. I would like to make you aware of one typical incident that happens to many of us. When sending the popular goldfish home with our children, you probably don’t realize what happens when the children walk into the house with the goldfish. Scenario 1: The mother will get rid of it inconspicuously as soon as the kid takes his/her eyes off their precious goldfish. Scenario Two: The child puts the poor fish through all kinds of torture. Then there are the mothers like me, who put their precious energy into feeding, changing the water and basically caring for the goldfish and eventually (unfortunately) the fish ends up dying, which is very sad for a child — but that is not the point today. The bottom line is: It is just tzaar baalei chaim! That’s all! What percentage of students/campers do this? It’s exciting for a day or two, but it’s not fair and it’s not right to expose the fish to such torture. I think the right thing is to eliminate it from the program altogether. Thank you! S.S.

PEDESTRIAN SAFETY Dear Mother, It is 5:00 p.m. and I am driving home from work. You are taking a stroll with your four children, one in a stroller. I am headed eastbound on Maple Avenue, just after the Phyllis Terrace corner, when my life is nearly turned upside down. A vision appears in my windshield and there you are, you and your four children, just inches away from my car. I hit the brakes hard, grateful there are no cars behind me and your family remains unscathed. Yet, I’m reeling. I’m numb. I almost drove straight into you and your family. Just imagine what could have, chas v’shalom, happened... No one should be crossing the street in the middle of the road

without a crosswalk. You were not more than 15 feet from the nearest crosswalk where you could have gotten across the street in a safe way. And what really bothers me is that your baby is being used as a traffic sensor while you stand a safer two feet away. A baby in a carriage should never be the one to “test the waters” and determine whether cars will stop and allow you to cross or not. It is inconsiderate to walk halfway into a busy street and expect the cars of the other lane to make shortstops and wait for you and your children to pass. There are designated crossing areas, and they should be utilized. While I believe that tznius, shalom bayis and parenting classes are all amazing topics already covered by our institutions, I feel that pedestrian safety is hardly addressed. Children at a young age learn how to stop, drop and roll and to call 911 in an emergency, but why does the learning have to end there? So many girls and boys are walking our streets in an unsafe manner (e.g. without reflectors at night, darting out from between parked cars without checking for oncoming traffic, etc.). How amazing it would be if Monsey organizations would create a learning initiative for teenagers and adults, not just children, to address the needs of our growing population and make our neighborhood a safer place for drivers and pedestrians. The bottom line is, we all need to learn how to navigate the streets safely and properly. If not for ourselves, let’s do it for our children who deserve to live long, healthy lives. R. Niederman

WHEN IT RAINS IT POURS Dear Drivers, I’m curious what you think when you see a woman waiting on the sidewalk for her child’s bus during a heavy rainstorm. Do you think: target practice!? Because that’s what it feels like. It was quite the interesting feeling to have a tidal wave wash over me on a Monsey street… Next time you see a person walking or waiting on the sidewalk, please slow down and veer away. It’s not fun to get soaked from “kup biz fees.” Sincerely, Drenched

RE: “THE PERSPECTIVE FROM ABOVE” Dear Upstairs Neighbor, It is quite understandable that a large family will make normal everyday noise. Everyone also understands that some kids were “created with genes that need action!” What’s not understandable is why other people have to suffer for what you think is normal noise. What you may think of as “confining kids,” may actually be plain old chinuch. Although “come winter or a rainy day, your kids may have different ideas for unwinding,” please do that on your own account. How about arts ‘n crafts, listening to a CD or baking with your children? With all due respect, scooters, pogo sticks and trampolines are just some examples of toys that belong outdoors only. Add to that jump ropes, rubbers and bouncing balls. It’s not just when we put our kids to sleep that we need to live peacefully. It’s also while we wash laundry, cook and bathe our kids that we don’t want scooters zooming on our heads. Those are not normal everyday sounds. Try to put yourself in your downstairs neighbor’s’ shoes. Why should someone

NOT A WORD OF COMPLAINT After reading the back and forth of the upstairs and downstairs neighbor, I feel a public shout-out to my downstairs neighbor is in order. As I’m trying to raise a family of lively boys right over her head, not only has a word of complaint never crossed her lips, but even when pressed to the wall, she always insists that she hears no sounds coming from my apartment, no raised voices, no late-night crying and the “occasional” roughing around doesn’t bother her. While I definitely try to keep early morning noise away from sleeping quarters and am cognizant of the fact that noise from above is very disturbing (after all I’ve had my fair share of being woken up by my upstairs neighbor’s kids), call it lack of chinuch if you wish, but I often don’t manage to have rambunctious little people see things my way and stop them from banging, jumping or moving furniture around. DAYS, WEEKS, MONTHS passed and the time had finally arrived to go through the pile of papers that I had stacked away for a later date. I placed the pile on our dining room table and later that night, my husband and I looked through each paper to decide what to do with it. Some we threw out and others we kept. We were about halfway through the pile when a paper with a name and phone number appeared. The name meant nothing to me, but from my husband’s excited expression, one would think he had just won a raffle. This is the story: There was an orphaned girl who was about to get married. Her mother had been niftar and her father was in desperate need of financial help, and my husband had wanted to help him raise money for the chasunah. The paper with the name and phone number on it was the name of a person who had generously given money when my husband had collected previously for another family. He had forgotten about this person until just then. My husband excused himself and quickly went to call the number on the paper. The man remembered the situation and committed to giving a nice amount once again.

Becoming Weigh Smarter Where Do I Start? IN OUR EAT-AND-RUN, massive portion-sized culture, maintaining a healthy weight can be tough. Losing weight can be even tougher. If you’ve tried and failed to lose weight in the past, you might believe that diets don’t work — and you’re probably right. If you never eat anything you like, your diet will probably fail. It took me a good 10 years to figure that out, and you don’t want to take that same path. There are many ways to develop a healthy relationship with food, curb emotional triggers that lead to overeating and achieve lasting weight loss. Let’s outline some important points so you can decide what best fits your needs.

Calories 1. Weight loss isn’t a linear process that simply happens over time. When you cut calories, which is the focus of most conventional diets (in different shapes and forms — like the point system, weighing every ounce of food or simply counting your total caloric intake for the day), it all boils down to the same problem. If, for example, you start on 1,500 calories and you drop weight, you will need to keep cutting calories in order to achieve your goal. Some people get to 1,000 calories and can no longer lose weight. The sad part is that when your caloric intake is too low, your metabolism slows down, hunger kicks in, and before you know it, you’re right where you started — only with a few extra pounds. 2. A calorie isn’t always a calorie. While you can certainly argue that 100 calories is 100 calories, your body metabolizes different foods in different ways. For example, eating 100 calories of honey or corn syrup will have a totally different effect on your body than eat-

ing 100 calories of broccoli or lean protein. The latter will burn off extra body fat for fuel, while the sugary stuff will add inches to your waistline. 3. Many of you don’t necessarily eat to satisfy your hunger. You may turn to food for immediate comfort or to relieve stress from your work, from boredom, from loneliness, or just because. With this type of overeating, most weight-loss plans will derail quickly. Of course, since I’m a low-carb pro, I find this approach a smart way to go. Whenever your insulin spikes (you don’t need to be diabetic!), the only choice your body has is to break those calories down into glucose and store the extra glucose as fat! Some people can handle more carbs per meal than others, but if you’re struggling with your weight and you feel like you’ve tried it all, this might be something to consider. I know many people are shocked to hear this, but guess what? Some fruits are loaded with sugar (albeit natural sugar), and ingesting fruit all morning can flood your system with a tremendous amount of glucose. When your insulin spikes, the only way for your body to get rid of the extra sugar is to store it as fat in your cells. So, if you love fresh fruit and you’re trying to lose weight without results, now you know it’s likely because you’re ingesting too much sugar. And while you’re consuming sugar from fruit rather than cake, once your body breaks down the energy into glucose, it doesn’t matter where it came from. The truth of the matter is that sugar is sugar. THE PRINCIPAL OF a Bais Yaakov retired, and it came time to select a new principal. Several of the candidates stood out as obvious choices. These were women who lived and breathed Bais Yaakov. They were veteran teachers whose students always excelled in every way. They attended teachers’ conventions and were constantly revamping their teaching style to meet the needs of the current generation of students. There was one candidate — Mrs. Blumenfeld — who might have been overlooked among this sea of professionals. She was not at all the obvious choice. She, too, put great effort into her teaching, but she had not developed much of a public reputation as a teacher. She attended conventions like the others, but she just sat quietly, listening carefully and taking notes. However, it was she who was chosen as the next principal. The board of directors understood that their choice would elicit surprise, and therefore they decided to add an explanation as to why this woman had been chosen. In their letter of announcement, they explained: “While there were many exceptional candidates considered for this job, one factor made Mrs. Blumenfeld stand out. Mrs. Blumenfeld always put the learning of the students ahead of everything, even her own career. Mrs. Blumenfeld was not merely content to become an excellent educator — without fear of competition, she made sure that other teachers could maximize their potential as well. When she attended the teachers’ convention each year, she donated money to the

scholarship fund, thus affording more teachers the opportunity to grow as educators alongside her. In addition, Mrs. Blumenfeld made the curriculum materials that she had created open and public so that other teachers could use the work she had developed to help in their own teaching. A true leader is one who is not only concerned with her own growth, but one who enables others to grow, which is why we selected Mrs. Blumenfeld.” In Parshas Pinchas, Moshe Rabbeinu informs the daughters of Tzelafchad that Hashem agreed that they should be granted a portion of the land in Eretz Yisroel as their inheritance. There is an interesting Midrash that Moshe Rabbeinu then approached Hashem and asked that the next leader of the Bnei Yisroel should be one of his sons as their inheritance, just like the daughters of Tzelafchad were granted their portion of land as an inheritance. (Bamidbar Rabbah 21:14) Hashem responded that Yehoshua should be the next leader of Klal Yisroel, not one of Moshe Rabbeinu’s sons. Hashem explained that Moshe’s sons “sat for themselves and were not osek b’Torah.” Hashem went on to explain that Yehoshua served Moshe greatly and accorded him much honor, adding: “He would come early and leave your council chamber late; he would arrange the benches and roll out the mats.” In his Divrei Aggadah, Rav Elyashiv, ztz”l, explains that Moshe Rabbeinu’s sons were talmidei chachamim of sufficient caliber to lead the

Imagine if every time a father takes his son to shul or to Avos U’Bonim, he also takes along a boy who has nobody to take him. Imagine if every time a family made a simcha, they helped pay for a poorer family’s simcha as well. There are so many ways we can work on stretching our mindset to be more inclusive of others. Let’s all try to think of at least one way to make sure that our personal development fosters the growth of others as well.

Helicopter Commuter Service Offers Stress-free Travel to Popular Locations A MONSEY-BASED HELICOPTER SERVICE is ready to hit the skies, offering travelers between popular destinations the ability to get from Point A to Point B quickly and efficiently. Upperide launched in the Monsey area last week and, in addition to private helicopter services, the service also flies routes between Monsey and Lakewood, Monsey and Manhattan and weekend flights from both Manhattan and Lakewood to the Catskills. While Upperide, priced at $294.75 to $491.75, is clearly a

luxury service, it offers lightning fast travel times. According to a company spokesman, it takes 12 minutes to fly from Manhattan to Monsey and 24 to go from Lakewood to Monsey. Flight time from Manhattan to the Catskills? An eyepopping 22 minutes, with just thirteen minutes more for the Lakewood/Catskills route. Executive District Attorney Richard Kennison Moran said that the death of the baby boy may result in upgraded charges against Gomez. “We are considering all options, including upgrading the charges to manslaughter,” said Moran. Renewed calls have been issued over the past week for much needed pedestrian safety improvements in the area.

She unbuckled him and let him down on the grass and stubble, distracted. He was wearing his white romper, already grass-green across the tummy. Strawberries Who doesn’t love strawberries? Although fresh strawberries are not widely used anymore, we can easily substitute the frozen bags and it will yield just as luscious and refreshing results. Let the strawberries completely defrost before using them.

STRAWBERRY TART This tart is a treat for the eyes and the palate! Since it is milchig, it is a great choice for a late shalosh seudos dessert. Fruity and filling — a real treat!

CRUST: 1 ¼ cup flour 1 stick margarine 1/3 cup sugar ¼ teaspoon salt

FILLING: 1 bar cream cheese ¼ cup sugar 1 ½ lb. frozen strawberries, dissolved and cut in half ¼ cup strawberry jam

DIRECTIONS: 1. Preheat oven to 350°. Using your hands or a pastry cutter, combine flour, margarine, sugar and salt. Transfer dough to a 9-inch round tart pan with a removable bottom. If you don’t have one, you could always use a disposable 9-inch round pan. Press dough evenly into pan and up the sides. Freeze crust until firm, for 15 minutes. Using a fork, prick crust all over and bake for 30 minutes. Press down gently with a spoon if puffed up. Cool completely in pan. 2. To make filling: Mix cream cheese and sugar until smooth; spread mixture evenly in bottom of baked crust. 3. Starting from the outside edge, arrange strawberry halves in tight circles over cream cheese.

4. Microwave strawberry jam until liquefied, and gently brush strawberries with jelly. Let chill for 1 hour before serving. Remove from pan just before serving.


STRAWBERRY GELATINS Once you taste these strawberry gelatins, you will never, ever go back to making the store-bought strawberry jello again – ever! It’s that good!

INGREDIENTS: 1 ½ lbs. frozen strawberries, defrosted ¾ cup sugar 2 tablespoons lemon juice 2 packs clear jello

DIRECTIONS: 1. Quarter the strawberries and place into a large bowl together with sugar and lemon juice. Set aside for about 10 minutes. 2. Place 1 cup cold water in a small pot and sprinkle jello over water. Let stand for 5 minutes. 3. Puree strawberry mixture in blender. Strain through a sieve into a large bowl. Add enough water to strained jello mixture that it should total 3 cups. 4. Heat the water and jello over medium heat, until it just starts to boil and jello dissolves. Stir into blended strawberry mixture. Divide mixture among 4 dessert cups and chill until firm, about 3 hours. 5. To serve, chop a few defrosted strawberries and spoon on top of chilled gelatins.

ALMOND FLAVORED CORNMEAL SHORTCAKES This dessert screams summer. It makes for a beautiful presentation and has a heavenly taste. Enjoy! SHORTCAKES: ¾ stick margarine ½ cup flour ¾ cup sliced almonds (make sure it is sliced and not slivered almonds) ¾ cup sugar 2 eggs ¼ teaspoon salt 1 teaspoon vanilla extract

FILLING: 1 lb. frozen strawberries 1/3 cup sugar ¾ cup whip cream

DIRECTIONS: 1. Preheat oven to 350°. 2. In a food processor, blend ½ cup sliced almonds with sugar until finely ground. Add margarine, eggs, vanilla and salt. Blend until well combined. Add flour and cornmeal and continue blending until just combined. 3. Divide batter evenly among 6 jumbo greased muffin tins. Sprinkle with remaining ¼ cup sliced almonds. Bake for about 20–25 minutes, until toothpick inserted in center comes out dry. Cool completely. 4. Quarter strawberries. Combine in a bowl with ⅓ cup sugar. Let stand until syrupy, for at least 20 minutes. 5. In a separate bowl whip the cream until peaks form.

I thought we are here to see planes, I think to myself as we enter a long, concrete tunnel that is somewhat dark and eerie. Our footsteps echo as we follow our guide down the endless path, not quite sure where we are headed, or even, where we are. The arced ceiling is lined with pipes of various sizes, and the fluorescent lights remind me that we are well underground. This place definitely feels like a bunker. Our trek awards us with an occasional door etched into the side of the concrete, leading to who-knowswhere, and yet we continue on, another step, another moment in

We’ve come to the Boeing factory in Everett, Washington to watch as the modern day beasts of aviation come to life. Here they are hammered and nailed, custom made to suit the countries and airlines that have ordered them. To tell the truth, technology’s not really my thing — even if it kept me 35,000 feet in the air on the trip over. Honestly, I’d rather be at Seattle’s oceanside aquarium where baby sea lions scamper over their sleeping mothers and otters pry their dinner loose from the inside of urchins. Or perhaps, I’d rather be on the whale-watching tour we’d scheduled before reality hit: The reality that we’d be floating on a man-made object above a limitless, tempestuous body of water, host to multiton levyasan-type creatures that would be breaching alongside us, known by the nickname of Killer Whale. On second thought, Boeing sounds pretty good. And so we begin the climb up a steep set of stairs until we are roughly 50 feet above the mammoth plane parts below. This is the world’s largest building by volume, and several aircraft are being formed here, bit by painstaking bit. Hundreds of workers swarm the floor, each diligently focused on a unique task at hand. Here and there yellow bikes are parked and the occasional employee is seen pedaling,

It’s the custom manufacturing of each piece that is done elsewhere that adds on years; by the time everything reaches Everett, it’s just putting Humpty Dumpty together, which takes only a short while, comparatively. And of course, before the final product is given the goahead to fly beyond Boeing walls, it will be subjected to various safety tests to ensure that everything is up to par. I mentally urge my husband, but it seems he doesn’t read minds. I’m surprised when Mr. Leather smiles at us, takes camera in hand, and zooming in on the clearly chasidishe couple in front of him, snaps a photo. Handing the device back to my husband, he says, “I’m Jewish, too, you know.”

Really?! “You familiar with New York?” he asks, as if he really has no clue that we’d just arrived from there… “There’s a big synagogue in Brooklyn, over in a place called Borough Park. Ever heard of that area?” We nod our heads, admitting that we’re quite familiar indeed. “Beth El, over on 15th Avenue. I was bar mitzvah’ed there,” he proudly says, using the word as a verb instead of a noun. A transient thing, the bar mitzvah. An act to engage in and then move on. My heart hurts for the man, for the lost treasure he doesn’t know he’s missing. A few minutes of small talk later and the man’s son who’s been waiting patiently on the side, urges his father on. With a wave and smile, he’s gone, this meeting of Jewish souls in an unlikely place but a fleeting moment in eternity. Perhaps, just maybe, some spark is kindled in that pintele Yid. I guess we didn’t come for the planes after all.

Now that the regular weekly routine of backpacks and homework is replaced with “What are we doing today, Mommy?” advertisements for kosher vacations to exotic places linger in my mind. At this point, the practical side of my brain reminds me that traveling is fun and exciting, but also stressful and expensive. Instead of trying to come up with a good counter argument, I have decided that I should take “Mrs. Practical’s” reminder to heart and have created a plan to travel the world without leaving home. My itinerary includes adventures in India, Vietnam, China, Mexico and Ethiopia, without having to worry about packing bags, connecting flights, or jet lag. Your family will love experiencing a taste of travel, both through the flavorful recipes, and fascinating facts about Jewish connections to each of these countries. MANGO LASSI: A Mango Lassi smoothie is a delicious and easy introduction to the flavors of India for your whole family. Smoothies are great for the hot summer days and, with the addition of cardamom, you will be quickly transported to the hectic streets of Mumbai — without having to worry about losing sight of kids!

INGREDIENTS: 2 cups chopped frozen mango, slightly defrosted 1 ½ cups full-fat yogurt ½ cup milk ½ teaspoon ground cardamom or ground cinnamon (For a more traditional Indian flavor use cardamom) 2 tablespoons honey

DIRECTIONS: 1. Place all of ingredients into a blender, and blend until smooth and creamy.

For over 40 years, Muhammad Abdul Yassin, a Muslim in Mumbai, engraved all of the Jewish tombstones for the Mumbai Jewish Cemetery. When Yassin was ready to retire, his sons Salaam and Islam took over the family business.

CHICKEN SALAD ROLLS: Servings: 6 rolls 1. Jules Rueff, a Jewish-French merchant and shipowner, is credited with originating the plans for the railroad in Saigon-My Tho in Cochinchina in the 1870s. 2. The United States Consul in Saigon from 1929–1932 was a Jewish diplomat named Henry Samuel Waterman. 3. While under Vichy-French rule from 1940–1945, anti-Semitic laws were implemented in Vietnam (then known as French Indochina).

The best part about making these Chicken Salad Rolls is the fun your kids will have rolling them! Also, the fact that you can use up your leftover Shabbos chicken makes this recipe a double win! Once you get the hang of the technique, your kids will want to you to make all their favorite dishes in rolled form… spaghetti and meatball salad rolls anyone?

INGREDIENTS: 2 cups shredded leftover Shabbos chicken (or 2 chicken breasts baked and shredded) Fresh veggies of your choice sliced into sticks (e.g. cucumbers, bell peppers, carrots, green beans, avocado) Lettuce of your choice

IF USING EGG ROLL WRAPPERS: 6 egg roll wrappers, defrosted 1 egg, lightly beaten with 1 teaspoon of water


DIRECTIONS: 1. For leftover Shabbos chicken: shred chicken using two forks to pull the meat apart • If making fresh chicken breast: Sprinkle chicken with salt and pepper and bake at 350° F (180° C) for approximately 30 minutes or until cooked through. • Note: Let chicken cool until easily shredded, using two forks 2. Slice veggies into sticks approximately 4 inches long (doesn’t need to be exact). • If using green beans, chop off the ends and cut to the same approximate length. 3. Wash and check lettuce. • Note: If using egg roll wrappers (which don’t need to be soaked) skip instructions 4 and 5 below. 4. Fill a round cake or frying pan (or any shallow round pan you have in your kitchen) with an inch of room temperature water. 5. Place one sheet of rice paper in water for 20–25 seconds until the paper becomes soft (you want it to still have some stiffness or it will tear easily when you are rolling it). 6. Place rice paper (or egg roll wrappers) on a flat, clean surface, and pour a small amount of sweet chili sauce in the center spreading it around with the back side of a spoon. 7. Layer lettuce, then veggies and chicken onto the center of the rice paper or egg roll wrapper.

8. Note: For egg roll wrappers, lightly brush the corners with egg wash. 9. Roll the rice paper or egg roll wrapper the same way you would roll a burrito • Mentally divide rice paper or egg roll wrapper into 3 (the part closest to you, the two sides and the part furthest away from you). • Lift the part closest to you up over the filling. • Fold in the two side flaps creating an envelope. • Roll slowly away from you tucking in any ingredients that may start to spill out. 10. Serve with teriyaki or sweet chili sauce for dipping. • Note: Wait a minute or two before eating your salad rolls, so that the rice paper can stiffen slightly. 11. Egg Roll Instructions: After rolling, place the rolls seamside down on a plate or baking sheet. Fill a large skillet with oil, approximately ¼ inch deep, and heat over medium to medium-low heat. Fry the egg rolls 5 minutes or until crispy and golden brown on all sides.

CRISPY ORANGE BEEF: Serving Size: 6 Chinese food has long been a cuisine offered by kosher restaurants, but you may not know that there are many regional Chinese cuisines, each with their own unique flavors and ingredients. Crispy Orange Beef is a child-friendly version of the more traditional crispy ginger beef (which can be an intense flavor for kids) paired with a delicious orange sauce. Your kids will love the crunchy texture of the beef and the exciting, yet still kid-friendly sauce.

INGREDIENTS: 1 ½ pounds beef (rib eye or shoulder top cut) cut into strips ¼ cup cornstarch ½ cup vegetable oil

SAUCE: ½ cup chicken or vegetable broth ¼ cup orange juice

DIRECTIONS: 1. Line a baking pan with paper towels and place beef strips in a single layer onto the paper towel. Refrigerator for 30 minutes to dry out. 2. Mix sauce ingredients in a medium bowl and set aside. 3. After 30 minutes, remove the beef from the fridge and put in a zip top baggie with ¼ cup cornstarch. 4. Tightly close the bag and shake the beef in the cornstarch until beef is completely coated.

5. Heat oil over medium-high heat in a heavy bottomed, deep frying pan.

6. Fry beef in small batches until crispy and golden brown and set aside.

Some historians claim that a Jewish community was founded in Kaifeng (the capital of the Honan province in central China) in 200 CE or perhaps even earlier, but most evidence supports a Jewish migration to Kaifeng from Persia starting in 960 CE. 2. Jews who came to Kaifeng between 960– 1127 practiced Judaism freely and continued to give their children Hebrew names for eight to nine generations, and, at the same time, immersed themselves in Chinese culture and society. 3. During the Mongol rule of Kaifeng, Jewish and Muslim ritual slaughter was banned because the Emperor was angered by the idea that his subjects believed the meat the Emperor was eating wasn’t good enough for them. 4. In 1663, 241 members of the approximately 5,000 member Jewish community passed government exams and became Chinese officials, including 21 community officials and 38 civil, military, academic, and medical officials. 5. Although it is difficult to trace the Jewish roots of the people living in Kaifeng today, there are some families who continue to practice Jewish rituals such as lighting Shabbos candles and not eating pork.

SEVEN LAYER DIP

1. When Hernan Cortes embarked on his conquest of the Aztec Empire in 1521, many Conversos (Jews who had been forcibly converted to Catholicism, but secretly continued to live as Jews) joined the expedition in the hopes of escaping the Spanish Inquisition. 2. During his reign from 1864 to 1867, Mexican emperor Maximilian I invited Jews from Belgium, France and AustroHungary to live in Mexico, but by 1867 only 20 Jewish families had officially settled. 3. In 1899, Francisco Rivas launched a weekly journal called El Sabado Secreto (The Secret Sabbath) which featured articles on Sephardi history and language. 4. The first Talmud Torah in Mexico was established by Turkish Jewish immigrants in 1905. 5. Today’s vibrant and diverse Mexican Jewish community can trace its roots back to Jewish immigrants from Spain, Portugal, Russia, Poland, Lithuania, Turkey, Syria, Lebanon, and the United States, amongst other countries.

Whether the next travel destination on our itinerary is familiar to you and your family or you’ve never ventured south of the border, the best thing about making Mexican Seven Layer Dip is watching the excitement in your kids’ eyes grow as they add each mouthwatering layer. Make sure to take a picture of the finished product for your Travel the World scrapbook, but be quick or your Seven Layer Dip will be gone before you know it!

INGREDIENTS: 1 (16 ounce) can baked kidney beans 1 teaspoon garlic powder 1 teaspoon cumin 1 package taco seasoning mix 1 (8-ounce) container sour cream 1 cup of salsa 1 or 2 avocados peeled, pitted and chopped 1 green bell pepper, roughly chopped 1 bag shredded cheddar cheese 1 can sliced black olives 1 large tomato, roughly chopped 1–2 green onions chopped (optional) 1 bag of taco chips for scooping


DIRECTIONS: 1. Heat beans in a medium saucepan over low heat for approximately 5 minutes. 2. Using the backside of a fork or potato masher, test to see if beans are easily mashed 3. Once easily mashed, remove them from the heat and add the garlic powder, cumin, and taco seasoning 4. Mash bean and spice mixture until smooth 5. Spread beans in a 9 x 13 glass dish or a deep, round glass serving dish (glass is not integral but your kids will love seeing the layers before they quickly devour the dip) 6. Layer sour cream over beans 7. Pour salsa over sour cream 8. Chop the avocado and green bell pepper and layer over salsa 9. Sprinkle a liberal amount of cheese (don’t hesitate to use the whole bag) over the veggies 10. Drain black olives and spread over cheese layer 11. Top off the dip with chopped tomato and green onions 12. Open a bag of your favorite taco chips and dig in!

INJERA BREAD Ethiopian Injera Bread wins the award for most fun to eat! Instead of using forks and spoons, your children will revel in using the Injera bread to scoop everything up on their plate. Because of its spongy texture, Injera bread is the perfect utensil for dips and saucy meat dishes. Your kids will finally have the excuse they’ve been looking for to eat with their hands!

INGREDIENTS: 1 ½ tablespoons yeast

1 cup whole wheat flour

½ teaspoon white sugar

3 cups all-purpose flour

1 cup lukewarm water

1 teaspoon salt

3 cups room temperature seltzer Vegetable oil for frying

DIRECTIONS: 1. Place yeast, sugar and lukewarm water in a small bowl and lightly stir.

4. Slowly pour in seltzer, mixing as you pour to avoid lumps forming.

2. Cover with a dish towel and put aside for 10 minutes

5. Add yeast mixture and stir until a smooth batter forms.

3. While waiting for the yeast to ferment, whisk together whole wheat flour, allpurpose flour and salt.

6. Turn oven to lowest heat possible (you will be warming the already made Injera bread while you continue frying the

remaining batter). 7. Line a baking pan with parchment paper and place in oven. 8. Heat a non-stick frying pan on low and drizzle 1 tablespoon of oil in the pan. 9. Once the oil begins to sizzle slightly, pour half a cup of batter into the pan, spreading it out to cover the entire bottom of the pan (the Injera bread should only be slightly thicker than a crepe so you have to move quickly to make sure the batter spreads before it begins to cook). 10. Remove from heat when bubbles begin to form and the surface is dry to the touch. 11. Move bread to oven and repeat steps 8 through 10 until you have finished using all of the batter (you may not need to use a full tablespoon of oil for each portion of Injera bread but make sure the pan isn’t completely dry). 12. Serve with your favorite dips or saucy meat dish. Note: Don’t be tempted to turn up the heat to speed up the cooking process; Injera bread should be sponge-like and not crispy.

1. The earliest known reference to Ethiopian Jews (also known as Beta Israel) is found in the personal diary of Eldad HaDani. He wrote in the 9th century about living in an independent eastern African Jewish state whose citizens considered themselves descendants of the tribes of Dan, Asher, Gad and Naphtali. 2. When Scottish explorer James Bruce traveled to East Africa in 1769 with the hope of discovering the source of the Nile, he also discovered a local Jewish population of an estimated 100,000 members, which was not known about in the western world. 3. Professor Joseph Halevy was the first European Jew to visit the Beta Israel when he traveled to East Africa in 1868 to learn about the community. 4. In 1904, Jacques Faitlovitch, an Ashkenazi Jew who studied Ethiopian languages under Professor Joseph Halevy, visited the Beta Israel and helped to bring several of the community members back to Europe and Israel to increase their Jewish education. 5. Since the 1980s, there have been several Israeli operations, including Operation Moses, Operation Joshua and Operation Solomon, to relocate the Beta Israel community to Israel.

WO KIDS, LOTS OF CHALLENGING DAYS, and ads promoting “You deserve it” equaled vacation. An enticing women’s retreat was advertised just at the right time, the price was okay, and the location was a.f.a.p. — as far as possible. I was eager to travel to somewhere way out and come back to see my home as new, fresh territory. The whole notion of a women’s getaway was a novelty to me, as I was pretty much new to womanhood altogether. A young mother, just barely four years after my wedding, I was finding mothering two rambunctious children extremely overwhelming. But new or not new, strange or not strange, my husband was already urging me out the door. He couldn’t wait for me to come back refreshed — a spirited mother who’d smile and croon that she loved mothering and she could do this all

day for the rest of her life, and who would never complain or cry that it was hard. So I paid at the first opportunity, studied the schedule until I knew it by heart, and made sure to go hungry for a while so I’d get my money’s worth. I packed my bags, knowing that what was leaving wasn’t going to return. All that negativity, the overwhelming helplessness I’d been feeling lately was going to disappear from my life. After all, I was going on vacation! This was not any ordinary women’s getaway, and that was all the more reason for me to go for it. It was set up in a wise, cost-effective manner: The meals and activities were prepared by a rotation of volunteers from within the group of vacationers, and nothing about the place was luxurious. But the bounty of nature, set off by miles from any civilized place, made up for luxury by


far. Everything added up to maximum rest, minimum cost and a bit of camaraderie if you wanted it. That little addendum was the most important part for me: if you wanted it. I signed up on my own and knew not a soul. I just knew it was far, transportation was viable, the food had a good hechsher — and I was going on vacation! I didn’t need — nay, want — any acquaintances. I wanted to be my own self, the one who could sometimes be a little offbeat, peculiar and moody — and it would be just fine. No one there to look over my shoulder, no one to frown if I just sat on the grass and dreamed, and no one to care what head covering I chose to don that day. I wanted out of the restrictive dos and don’ts of city and community living and to be free to do just as I pleased for a little while. Oh, and to take a break from mommying, of course. As much as I love my kids, I just needed to refresh. I arrived to this garden-inspired campus bright-eyed and excited. The spunky coordinator showed me around for a few minutes, and then ceremoniously led me into my room, which I would share with another two women. She rattled off their names and told me they’d be arriving soon. Great! I plopped down on the king-size bed and almost said aloud, “Now what?” It wasn’t a lack of activities that stumped me then, but the overabundance of options. I had schlepped along books, pads to scribble on (yeah, all of my deepest thoughts and aspirations), an mp3 player with relaxing music and soap for a bubble bath. Oh, and there was also a pool, and refreshments being served in the dining room right then. The food won, and I happily polished off a bowl of fresh fruit salad with crunch topping, some cake and a yogurt. Dinner was in just one hour, but when you’re on vacation you must eat as much as you can. I returned to my room and met my fellow roommates for the next sixty hours: two sweet, elderly women, who could have almost been my grandmothers. I do love the wisdom and serenity of the golden age. There’s nothing quite like sipping some tea and hearing advice from an aging Bubby. But I just wasn't comfortable with the notion of kicking off my heels and lounging around with women who were so many years my senior. I swallowed and smiled. Well, I could try to have fun. I sat on my bed and begin to unpack my things. Suddenly, sweet Mrs. Jacobs was sitting on the other side of my bed! I jumped up. “Uh — is this your bed?” “Oh, sweetie, they didn’t tell you? There is one double bed and one single bed in each room. Two women share a double bed — we can roll up a towel in the middle, or

something. I assumed you chose to share a bed and not sleep on the single one. Miriam—” she pointed to our other senior roommate—”took the single bed.” Now I wanted to cry. Okay, I was sharing a room. Okay, my roommates were three times my age. But one bed? Well, this was vacation, and by definition, things were temporary (and hopefully fun and delicious too). Could I swing this — and come home a new mommy? I tried to make the most of it. I read, sat and relaxed in the garden and swam in the pool. There were optional workshops and I participated in some, although belatedly realizing I’d have liked to be alone as much as possible.

I didn’t need — nay, want — any acquaintances. I wanted to be my own self. The meals provided enough social interaction for me. A decidedly significant benefit of this vacation was the boost in self-worth it gave me. I was a person who took care of myself, who rested when I needed to and who knew to enjoy herself. If nothing else, I got that. And then it was time to say goodbye to strangers who had been friends for a few hours and head back into life and its joys and challenges. I boarded the bus again, feeling refreshed and elated. Hubby and kinderlach, wait until you see the mother I’ve brought you! It was Thursday when I came home, and it was all about getting the house together and Shabbos underway. I looked forward to relaxing on the couch Friday night and reveling in my new energy. Well, I didn’t actually lounge on the couch. There were, baruch Hashem, my two children clamoring for attention. And then it happened so fast: she hurt him, he screeched, I held her hands while she tried to wrench them out until my hands hurt, and I fought back tears until my husband came home. My husband looked on in shock. My vacation didn’t solve everything after all. But maybe next time...

Nah. That's for us Monseyers. I’m thinking we should clean the area by the lake before all the visitors show up. Any offers? And let’s start charging for attractions. Monsey is getting famous thanks to The Monsey View. Everyone can join in this house-cleaning/organizing challenge process! We’re keeping it simple and fun!

THURSDAY, JULY 13 VANITIES Let’s talk vanities, inside and out. • Wipe down your vanity, scrub your vanity, rinse and dry. Sounds simple? It is. Try to keep the area around the sink empty, as it attracts germs and grime. • Empty the insides. Wipe down. Throw out hairbrushes with missing bristles or rusted, outdated hairsprays, old bandages, expired creams. • Use clear containers that you already have in your kitchen to organize bobby pins, pony rubbers, bandages, creams, etc. • One toothbrush per child. • I love the two-drawer organizer for under the sink. Keeps pull-ups, wipes, tissues, or the large mouthwash that doesn’t fit into the drawers or over the sink mirror. • Ideally, cleaning products do not belong in the bathroom. FRIDAY, JULY 14 SPICE CABINETS There are about 200 (kid you not, okay maybe a tad) different organizers for your spices. Assuming at the mo-

ment you don’t have anything, work with that. • You can use the 5x7 foil pans for now. One for the everyday spices, one for the everythird-day spices and one for the everyonce-in-a-while spices. The every-once-infive-year spice chuck out. • Thyme or fennel sound very sophisticated to own, but if you don’t use them, throwing out something that’s taking up space in your home sounds much more sophisticated. • Spices last a long time, yet the taste does dull after a while, so use your inborn chef judgment about what stays and what goes. • If you have double of one, combine the two. • Give it all a wipe down, and you’re good to go. CONTAINER DRAWER: Let’s make this even quicker than you think possible. Two questions, and you’re done! Do you really need 333 lids with 62 actual containers? Do you really need 333 containers and 62 lids? The answer to both of those questions, is of course, a resounding no. • Empty the drawer/cabinet, wipe down and pair your containers. As for the lonely rest, have them join the large white bag that’s waiting to be discarded. • If you don’t have any bins, use the 9x13 foil pans to keep the containers happy. SUNDAY, JULY 16 SHED No shed? This applies to your basement or attic or any storage area you have. This is a lengthy project, but that’s not our goal at the moment. No heavy organizing. • Get large clear containers. Everything that’s in the center of the room and blocking your path


should be placed in a bin. • Large items should be rearranged to the side. • Our goal today is to clear the center of the room and make an accessible pathway. MONDAY, JULY 17 SHED CONTINUED Now you have a path set out for you to make the rest of your job easier. • Grab four garbage bags. Our goal today is to fill up these four bags to either give away or throw away. • 15 second decisions here. Old baby clothing you love, but yellow? Throw. • A pot that’s been sitting for years, as a just in case? Give away. • Still holding on to all the cassettes? Give half, save half. • For every added garbage bag you fill, 50 extra points! TUESDAY, JULY 18 BOTTOM SHELVES OF CHINA CLOSET A standard closet has 4–6 sections, double shelves. Some have two drawers. • Take it all out. The siddurim, Tehillims, the 94 chasunah bentchers... • Prepare a bag for shaimos. • What else do you keep there? • How many dreidlach are you keeping for next year that are floating around the drawer? • Photo Albums: Number them and place them in order. • Candles, foil candle holders? Place in a bin. • Tablecloths: Fold flat to avoid creases. • Anything else you keep lurking around that goes unused should be abolished from the closet. Those shelves tend to gather quite some interesting stuff that never get used. I would tell you to put some stuff in the shed, but put it in a place you haven’t organized yet. Catch you later, Sara!

Real Estate Summer Travel and House Swaps WHILE TRAVELING IS FUN, one can discuss the pros and cons of how to travel. Some families like roughing it — backpacking and camping; some like long road trips, and others like to fly to exotic places and stay in hotels or resorts or even private villas. No matter what, what do you do with your home while you are away? We discussed in a previous issue how to secure your home and protect your home from thieves and damage while the occupants are away, but how about a novel idea, to rent out your home when you are away? My family did this a few times. We did a “house swap.” We traveled to the West Coast and moved into another family’s home, we used their cars etc., and they did the same at our home! It helped that we knew the family and we trusted them. We had a great time, and because we didn’t have to spend money on housing, an otherwise unaffordable trip became affordable. There are many families who have summer homes or others who go away for the summer, and they have successfully rented out their homes while they were away. If you are renting the home to a stranger, how does this work? What are the pitfalls? If you plan to do this, what should one be careful about?

Here are 8 tips from someone who knows, Moshe B., who has done this many times. 1. GIVE YOUR TENANTS SPACE. Declutter, remove personal items and create shelf, drawer and hanging areas for their belongings. Store your valuables in locked closets or off the premises. If you are concerned about kashrus, lock cabinets with your things and be prepared to kasher your kitchen when you come home. The home must be thoroughly clean. These steps — which include emptying food from the refrigerator and kitchen cabinets — can take as long as a week! This is why some people don’t bother with short-term rentals. 2. PROTECT YOUR FURNITURE. Double up on mattress pads. If you’ll be buying a new sofa, choose some-

thing durable — like leather — or consider slipcovers that can be laundered between rentals. These items are especially susceptible to stains and spills, which can be costly, if not impossible, to remove. Leave coasters on wooden tabletops and consider covering tables that are heavily used. A piece of Plexiglas cut to fit the night tables can avoid watermarks and other stains that tenants may leave over. 3. HAVE BOOTS ON THE GROUND. This might be a cleaning lady who comes weekly (at your tenant’s expense) or a handyman whom you pay to handle maintenance and repairs in your absence. You, or that person, should do an initial walkthrough with your renters and show them how everything works. A walk-through can also reduce calls from guests and avert damage. Whether you hand over the keys yourself or have your representative do it, insist that the tenant lock and unlock each door before you leave. Do this no matter how much the tenant insists it’s silly or unnecessary. In an ounce of prevention, spray all the locks with WD-40 lubricant shortly before tenants arrive. This makes the bolts turn more easily and decreases the likelihood that new­comers will yank — and potentially break — the hardware before they get accustomed to the mechanism. 4. LEAVE NOTES AROUND. A lengthy house manual will get less atten­tion than a single page with key information. Put Post-it notes in spots that require special care; for instance, a reminder not to leave wet bath mats on the wood floor. In a couple of locations, you can leave picture frames with more


detailed precautions, such as not to flush diapers, baby wipes or paper towels down any of the toilets. Don’t worry that guests might think you have gone overboard: You can’t take their vigilance for granted, and there is no harm emphasizing the care you expect them to take. 5. COVER CONTINGENCIES. Notify your homeowner’s insurer that your house will be rented and find out if there is a different cost or if different coverage is required. Most insurers will continue covering the dwelling and your personal liability — say, if the tenant’s child fell down the basement stairs and was injured — but some exclude your possessions while the house is rented. And they typically won’t cover your tenants’ belong­ings. (Make this clear in a lease.) Homeowners who rent out their places through Airbnb and Homeaway automatically get supplemental property insurance through the company. There are other insurance policies available for short-term tenant rentals. 6. REQUIRE A SECURITY DEPOSIT. With extended stays, it makes sense to charge a security deposit equal to about half the weekly rent. Some recommend 10 percent of the total tab. Hold the security deposit long enough after your tenant leaves to discover any damaged or missing items; “One month is acceptable,” says Terry Baum, a broker with Warren Lewis Sotheby’s International Realty in Brooklyn. 7. COMPARE RENTAL PLATFORMS. You may consider renting your home through vacation rental platforms like Homeaway and Airbnb. Read the rules carefully before using either platform. 8.
