Editor’s Note

The sun can be a bit of a trickster at this time of year. From the confines of our home we feel a delicious warmth seep through the glass only to find on exit that the bright rays have done little to mitigate the cutting coldness of the wind. Back inside, we bundle up and then head out for a wander on the beach or a play in the park in our puffer jackets – the Coast still has lots of excitement in store for us in winter.

This August is especially exciting at The Millwater Mag. First off, it’s our seventh birthday! Thank you to all the contributors, advertisers, production and delivery teams and of course, our readers, for taking the Millwater Mag into your hearts and always being so supportive.

In the early days, The Millwater Mag was a platform for sharing information specifically relevant to our young and developing community. Seven years on, much of the development in Millwater is complete and we have become a much more established community, with the content of the magazine reflecting that and incorporate more of life on the Coast. This brings us to our next big reason for celebrating – from this month The Millwater Mag is expanding to include Orewa.

Neighbourhood Social Groups If you have read The Millwater Mag in the past, you will have seen stories and pictures of two Millwater social groups – the ROMEOs (Retired Old Men Eating Out) and the ROWENAs (Retired Old Women Enjoying Nice Afternoons). Both names were created, very much tongue-in-cheek, and purely for amusement. Please also see their latest reports in this issue of the magazine.

Organising the monthly activity can – and probably should – be shared equally among the members of the group. Numbers are best kept around 15-18, as many venues, including restaurants, may be unable or unwilling to accommodate larger groups.

Over the past seven years, both Millwater groups grew quickly to maximum strength and sometimes have waiting lists – and have received interest from people outside of their origins in Millwater. Now that the magazine has a much wider circulation, it might be useful to explain the structure and objectives of having such a group in your neighbourhood.

However, there is no limit on the numbers of groups that can be established! For example, there could be ROMEOs and ROWENAs operating independently in Orewa, Red Beach, Whangaparaoa, and so on. There is no copyright to the names and there are no membership fees or other admin stuff beyond taking turns to organise a monthly outing and then sending in a story to the magazine to say how much fun you had.

With new people moving into your local area, some may find it difficult to meet up and make new friends easily. Through a local social group, which anyone can set up as they did in Millwater, new arrivals soon become included in the neighbourhood. The structure is simple.

Feet feat for famine would definitely consider doing again. When I asked Cairo (16), who sliced his foot open halfway through the walk on an oyster shell, how it was for him, he said ‘yeah pretty painful, but it was fun and worth it in the end’.

Th walk is an amazing accomplishment and we should definitely be proud of the hard work the boys put in to raise money for children that are in desperate need. So far they’ve raised a whopping $1380, but they’re still taking donations and want to reach their goal of $1500. This month we’re taking a look at what these four year 12 boys from Kingsway College did for the 40 hour famine this year. Sam, Ben, Zach and Cairo decided that just going without food or a bed for 40 hours wasn’t enough. Instead, they walked around the Whangaparaoa Peninsula, starting and ending in Orewa, in bare feet!

The boys hiked over oysters, rocks and sand, even swimming in the mid-winter water in places to accomplish this huge mission and raise money for the cause. They started their track at 5pm on Orewa bridge and on day one they walked from Orewa to Stanmore Bay. On day two they went from Stanmore Bay to Gulf Harbour, roughly eight hours of walking, and then on day three they went from Gulf Harbour back to Orewa. In total they walked around 50km!

Zach (16) explained the experience, saying ‘It was really insightful to put myself under some of the conditions the people we’re raising money for have to deal with every day’. Ben (16) says for him the experience was a great accomplishment of a long term goal. Sam (16) said his experience was ‘painful and long’ but said it was something he

If you think this year’s huge hike was it for the boys, think again! They’re working towards walking around Kawau Island sometime in the future.

Employee or independent contractor?

In answer to the second question, it matters enormously. For example, a worker who was categorised as a contractor and had their agreement terminated could later claim that they were in fact an employee. That worker could then claim unpaid leave entitlements and KiwiSaver. The IRD may also look to claim unpaid PAYE from the employer, plus issue penalties.

In answer to the first question, there have been numerous high profile court cases that now set out how to decide if a worker should be a contractor or an employee. The key considerations are that: • New Zealand law does not treat ‘labels’ as a determining factor of the status of a worker • when determining whether or not a worker is an employee or independent contractor, you must look into what the “real nature of the relationship” is • the courts look at what degree of direction and control the company has over the worker and the greater the control, the more likely the worker is an employee • the courts also consider how integrated the worker is within the company’s business and the more integrated the worker, the more likely the worker is an employee • a contractor should take some risk around financial rewards for the services they perform and are usually expected to submit invoices and handle their own taxes, whereas for employees there is generally not the same type of financial risk/reward (as they are usually paid regular wages/ salary) and the employer usually handles tax by way of PAYE.

Being an employee definitely has some benefits: holiday pay, sick leave, KiwiSaver – plus the right to raise a personal grievance and access employment dispute resolution processes. For employers, having workers fit into the ‘employee’ category means the employer has clear rights to direct workers and have some exclusivity over who those workers can work for.

Being a contractor also has some benefits: the hourly rates are often better and typically contractors have the right to provide services to more than one company. For companies, having contractors means that minimum employment entitlements do not apply and a company can terminate a contractor arrangement reasonably easily.

So, who decides whether a worker is a contractor or an employee? And does it matter?

It is far better to be proactive and set your workers up correctly than deal with the fall out if things go wrong. Please contact our employment team for assistance.

The Green Spot Eco Tip of the Month

As we finish off another ‘Plastic Free July’, I hope many of you are reflecting on some positive changes you trialled for a more sustainable lifestyle. Early in my journey of waste reduction I made the swap from toothpaste in a tube to toothpaste tablets and I wrote about these in a previous article. Since then, mouthwash tablets have also become available. These are manufactured by Auckland company, PopCare. This ethical business has a circular economy philosophy, so they supply the tablets in tins that can be returned at their cost to be sterilised and reused. Their toothpaste tablets contain 1500ppm of fluoride, as per Ministry of Health guidelines.

More recently, PopCare have created a mango facewash in the same aluminium tins so ordering from them enables you to eliminate the waste from three of your daily use products. A subscription to these items will give you a regular discount and this can be easily managed or amended on their website. Look at comparable sales Rather than relying on the CV alone, it can be a good idea to look at comparable sales to find out how much homes in your area are selling for.

In an active market increased competition continues to drive up property values. If homes in your local area have sold for above the CV, it’s likely that yours will, too.

Consider a valuation You could also think about arranging for an independent third party to complete a formal valuation on your home.

This can provide a helpful estimate, but it’s worth noting that valuations can sometimes err on the conservative side and may not take into account the current market demands.

Why being a healthy weight is important Being a healthy weight reduces the risk of developing: • Type 2 diabetes – when our body struggles to maintain normal blood sugar levels. Art Speak Estuary Arts Members shine this August The annual Estuary Arts Centre’s Members Awards Exhibition is now on show in all the galleries until 29 August. The opening evening and award presentation was held on Friday, 30 July.

Every year the artwork gets better and better and this year is no exception. The Estuary Arts Members awards showcases artwork in all media by our growing artists and students membership base. This year’s theme is ‘Diversity’ and artists have pulled out all the stops to create a broad range of contemporary artworks. The only criteria is that artists must be current members and the membership runs from 01 July 2021 to 30 June 2022. Family membership is just $45 and you receive 10% discount on all EAC art classes, reduced exhibition entry fees, discounts to local framing and art supply shops and invites to members only exhibitions. This year we have more prizes on offer thanks to our generous sponsors. The overall winner will receive a prize package that includes gift vouchers, an art magazine subscription and $1000 cash. There is also a special prize for a student who has attended an art class through Estuary Arts Centre.

Being a member of Estuary Arts Centre is easy and affordable and opens up the doors to so many creative opportunities.

There are a range of weekly art classes, after school art extension programmes and weekend workshops on offer and members receive discounted rates on these classes. We are also busy planning another fun school holiday programme for October.

There are a raft of interesting art workshops running in August and there is something for the beginner to the advanced artist.

There is a beginners soft pastel full day workshop with new tutor Nicola Warner on Saturday, 7 August, followed by the popular acrylic paint pouring and string pulling with Dil Schroff.

Fishing Spot with Tim

Winter fishing can be a challenge with a slow bite and inclement weather limiting opportunities to get out there. This season has been quite mild with some fresh (and frosty) starts leading into some warm days in between those huge weather systems.

The wind chill is enough to make you put on a few extra layers but I’m still wearing shorts out there!

This month we have been fishing outside of the cable zone with mixed results. Once again the sign of fish on the sounder was scarce with mainly baitfish showing rather than the red snapper marks we normally see. We have had to move around a bit to find the fish and once we found them, we motored upwind to set ourselves up for long drifts through the sign.

Sliders and Lucanus slow jigs continue to be our weapon of choice while trying out the new Ocean Angler Fish Finger jigs when the bite is on. Although the fishing was slow, we have caught some good, averaged sized fish simply drifting in around 50m of water east of Omaha and have managed to come home with a good feed of fish each time.

Reports from mates have been as successful, catching good sized specimens in close at Kawau Island using bait, Berley and live baits. I’m definitely going for an overnight bait session next time I go out after seeing photos of their results.

Spring is just around the corner and soon the weather will warm up. September normally sees some more settled weather and by Labour weekend we will be back into full action again. Make sure you book your boat in for a service before the summer rush. Check your wheel bearings on your trailer, charge your batteries and check your safety gear is current. It’s also a good time to do a stock take of your tackle so

you’re ready to go when the weather settles. My change in career will hopefully mean I’ll have more time on the water this season and I’m really looking forward to it. Until then – tight lines!

Millwater ROMEOs A great day out was enjoyed by the ROMEOs (Retired Old Men Eating Out) this month and in all there were 17 members who joined in. The day started off with a game at the Ten Pin Bowling alley in Whangaparaoa, where our teams took up four adjacent lanes for the morning’s bowling. This turned out to be a keenlycontested encounter, with the first three places going to John Green, George Forbes and David Lakin. Well done guys – it was a very competitive and a closely-fought event.

Afterwards, a very enjoyable lunch was had at El Cupo Cantina, adjacent to the Plaza in Whangaparaoa. Everyone found something on the menu to suit, and the pork spare ribs went down a treat with half of the members, although to be quite honest the delicious portions were so generous that they took some getting through.

Lunch was washed down afterwards with tea, coffee and cake at the home of the host. We also had a ‘round-robin’ with everyone outlining their lives and work attributes over the years. It was really interesting to hear everyone’s stories, which highlighted what a diverse crowd we are.

Designing Plumes concrete and glass. Leslie chose a concise palate of blue, gold, brown leather and wood to add warmth and make the space more welcoming, with elegant circular mirrors and rich, padded furnishings adding softness. She enjoyed the challenge of working with salon suppliers finding fit-for-purpose items that suited their design brief. ‘I now know quite a lot about the ergonomics of hairdressing’ she says.

Local designer Leslie Scott has been running her interior design studio, Project Design, since 2019. She’d been property developing with her husband for over 15 years alongside a career in biochemistry.

When she took time out from her career to have a family they ramped up the developing, building several spec homes and completing a number of renovation projects. Leslie enjoyed the work so much she decided to take a diploma in interior design and launched her own business, starting with colour consultancy and soon progressing to residential and commercial design projects.

A standout feature of the salon is the gorgeous patterned birch wood screens that Leslie salvaged from an interior design studio. When there weren’t enough she had extras made from templates. She’s passionate about sustainability and often repurposes items and salvages from renovations, on-selling or giving to charity. It’s a passion that Anoesjka shares, contracting a specialist salon recycler who takes and repurposes lots of their consumables –even broken hairdryers!

When Leslie met client Anoesjka van der Walt to discuss her salon fit-out the two realised they had a lot in common. Both were juggling busy home lives as Mums with businesses that were rapidly taking off. Anoesjka had been a nail technician for five years in South Africa before arriving in New Zealand and setting up a small nail station in her home. Her business had grown too big to run from home and, looking to expand, she’d bought the empty site at 1 Arbors Track. She needed Leslie’s help transforming it into an inviting collaborative salon space.

Plumes opened in February with three nail technicians, two hair stylists and a beautician who all welcome their clients as family. Anoesjka loves the salon Leslie helped her create and six months down the track, the two are still supporting each other. Leslie has become a client of the salon and though she’s now busy with three new projects, she gets little calls from Anoesjka, ‘Help Leslie, I need blinds!’

Having it all now. All I could think about was getting home to my darling girl who brought me both the highest highs and lowest lows I had ever known. (By the way, she still does!) I remember thinking to myself ’This isn’t right. You shouldn’t want to be home. You’re a feminist. What’s wrong with you?’ After having my second child almost two years later, I left the workforce altogether.

Corporate me was gone. Instead of mourning her loss, I celebrated it. I didn’t become someone less than. I was still the same person. I could be anything, even a Mummy.

Unfortunately not everyone agreed. Apparently I wasn’t fulfilled or challenged and was shackled by the restraints of the past.

I should get back to work and be a productive member of society.

Wait a minute… I chose this. Investing time in the business of raising children is productive to society. So when asked ‘what I did’, my answer was that I was in leadership development, raising the nation’s future leaders.

The first generation of born-and-bred feminist are discovering there’s a price to pay regardless of our choices.

Ten years later the time came for me to re-enter the workforce. And I found it was again my turn on the Emotional Rollercoaster! Thoughts echoed, ‘I should put my family time above finances. I only have a limited time with my children, I should cherish it.’ Here’s the thing: my family cherishes food, clothing, shelter and holidays away together too, so back to work I went!

I am a child of the ‘70s, born into the era of Charlie’s Angels, The Love Boat, Dallas, Dynasty and Mork and Mindy. Raised on a diet of confidence, assertiveness and a self-belief that I could be anything I wanted because I was no longer shackled by the restraints of the past. I was equal.

At the tender age of 23 I found myself working with a company that was experiencing growth. Opportunities were met with tenacity. I was on the rise. So much so, that my husband was able to quit his job to retrain in new profession. No problem.

We are a team.

PROPERTY TALK with Grayson Furniss

Franchise Owner, Residential Specialist It’s always interesting when putting together the statistics for the most recent month, to see if it turned out as expected. June played out pretty much as predicted with some key numbers worthy of discussion. I guess the most important number for many is the median house price. It’s certainly the one most spoken about in the media. In June we have seen a slight decline. In reality it is the second month in a row that we’ve seen a reduction in the median and while at first glance this may support the notion of us coming off the peak of the market, there is more to the story.

Sales volumes for June are down. It’s not from lack of demand but purely the lack of property on the market. The sales mix for June was also slightly different from previous months, with more smaller houses being sold. When combined with the low volume this has skewed the median and average lower than otherwise may have been the case. Probably the most important number in the list this month is the average days to sell – 28 days is the lowest we have ever seen this number with the long term average sitting at 71 days. This accurately reflects what we are seeing in the market, with strong demand for housing in Millwater and a real shortage of options to buy.

So, the current situation reasonably clearly determines what the immediate future of the market in Millwater will look like. An ongoing shortage of listings will ensure those properties that do come to market over the next couple of months will attract strong attention and generally achieve high prices. Beyond this period, heading into spring we are expecting listing numbers to increase, probably only marginally with high pricing levels continuing. We do expect more buyer reluctance as prices go beyond what many are willing or able to spend, particularly in the light of interest rate increases. This would further play into the concept that we are at or close to peak prices, with further significant increases unlikely to be sustainable.

We are expecting interest rate increases to have a more profound impact on the market heading into winter 2022, with the expectation there will be some slowing of demand. The current shortage of supply nationally will continue to confound would-be sellers as the options for them once sold remains difficult. Building costs and timelines will continue to increase as inflation and supply issues take hold. Overall it appears the market is going to remain tight, costly and somewhat difficult for some time to come, meaning longer term planning is required around housing decisions. If you are considering that your current housing doesn’t fit your long term plans, please feel free to get in touch for an obligation-free discussion. Millwater Midwinter Christmas Charity Dinner charities: Love Soup and the Hibiscus Coast Community House Food Bank.

The Trumpet Guy John McGough was generously sponsored by the Mike Pero Millwater Fund. Owner of millies café, KK, provided free use of the venue and was happy to agree a special meal deal for Rotary. Meal tickets included free entry to the raffle, for which Liquorland Orewa donated three NZ craft gins, local couple Janet and Colin Thrush donated a Nutri Bullet Dessert Bullet, KK provided a $50 voucher, and Bunnings Silverdale donated a selection of popular gardening and BBQ items. Local Board member and talented graphic designer Andy Dunn donated for auction an original one-of-a-kind, signed canvas, with his uniquely amusing interpretation of the Andy Warhol can of soup – which raised an additional $170 on the night.

Raising funds to help local Hibiscus Coast charities can be difficult in this ‘new normal’ COVID-19 era, but the recentlymerged Rotary Club of Orewa-Millwater has delivered a great success with its innovative entertainment evening at millies café in Millwater.

On Saturday, 26th June evening, 80 guests sat down to a sumptuous Christmas dinner of roast turkey (with a vegetarian option chosen by 13). This was followed by sticky Christmas pudding before all were entertained by The Trumpet Guy, John McGough. Playing his brand new trumpet with its distinctive up-curved horn and also his flugel horn, John entertained brilliantly with favourite tunes and Christmas classics, interspersed with humour and his distinctively mellow singing voice.

Luck is what happens when preparation meets opportunity Mastering the Art of Public Speaking Extraordinary things happening to ordinary people. The book became a finalist and was awarded the 4th place in the prestigious Ashton Wylie NZ unpublished manuscript competition. Along with the book recognition came the new and daunting task of promoting her book to large groups of people. This is where the Toastmasters Club was able to help. Anca discovered that confidence can be gained from overcoming fears such as public speaking. By regularly delivering her speeches within a relaxed club setting with a supportive and encouraging group of people, Anca’s confidence grew quickly, culminating in her bringing the Humorous Cup to the local club here in Silverdale.

Whether it is to win a cup, make friends or gain confidence to speak publicly in the workplace and other areas of life, Toastmasters provides a fun and motivating environment for members to grow and learn.

Silverdale Orewa Toastmasters Club meets in Orewa every fortnight on a Thursday evening. Visitors are always welcome.

Silverdale Orewa Toastmasters Club are very proud of their member Anca Joicey, who won the Humorous Competition at the Toastmasters International District 112 (New Zealand North) convention in May. Anca has only been a member of Toastmasters for 12 months, so this is a great achievement. Anca threw herself down the road of this exciting adventure, having no idea where it would take her, trusting that the learning and the fun along the road would be worthwhile. As she continually challenged herself, taking on board the feedback she received, both from member evaluations and from her mentor, she was rewarded with the prestigious cup. When you add to this the fact that English is not Anca’s first language, the outcome is indeed very impressive.

9. The most surprising inclusion in the discussion document is that they are considering rollover relief both in respect of bright-line rule and interest deductibility on transferring properties into a trust or transferring rentals into a look-through Company.

The Government have released a design of the interest limitation rule and additional bright-line rules that is quite detailed and has some points which I think are taxpayer friendly. Here are nine key points of interest: 1. Interest limitations will not apply to property outside of New Zealand.

2. Interest limitations will not apply to the home. For example, if you rent out three bedrooms of your home, interest expenses will be deductible as usual.

3. There’s a fair bit of detail on what they anticipate a new build to be, but the underlying philosophy is that the concession is available where there is an increase in housing supply.

4. The exemption means that interest will be deductible from the point of acquisition if you buy one of these properties within 12 months of the Code Compliance Certificate (CCC) being issued or from the point of CCC being issued if you develop it yourself.

5. The concession will only apply to new builds where CCC is issued on or after 27 March 2021.

6. The Government are also considering whether the concession on interest deductions should apply only to the first owner of the building or whether it can pass on to subsequent owners.

7. Additionally, there is a concession for developers, which is process until the point of sale or issue of CCC. If you retain it as a rental once you have CCC, you then qualify for the new build exemption.

Millwater ROWENAs The June outing of the Millwater ROWENAs (Retired Old Women Enjoying Nice Afternoons) was to the local Wade Tavern in Silverdale. Fourteen ladies attended on a very pleasant winter’s day. The Wade was very busy with a number of groups for lunch that day, but every credit to the chef and staff; all meals arrived in good order and all arrived together, so no one was left waiting.

The menu choices were varied and the food was very good, so compliments were expressed by everyone. It was a sad day as it was the last time that our honorary member Sue Gerrans would be able to join us. Sue and her husband (honorary ROMEO Gus) were finally leaving NZ in mid-July after being here on extended visas since January 2020 due to COVID-19.

It was with mixed emotions that we said our farewell to Sue; sorry to see her leave, but delighted that she and Gus will be able to make plans for their future.

Fine Travel Destinations – Azur Lodge A slight detour this month, as I have recently returned from a wonderful stay at Azur Lodge. Azur Lodge is a luxury boutique lodge located only a five-minute drive away from Queenstown.

Built on a hillside, its nine private villas have stunning views of Lake Wakatipu and the mountain ranges. Return airport transfers are included in the rate and you will be met on arrival at the airport by one of the wonderful Azur Team members.

New Sick Leave Rules 2021 entitlement accrued. From 24 July 2021, an employee will be entitled to 10 days sick leave after their first six months of service and a further 10 days of sick leave 12 months after their first sick leave entitlement accrued.

Applying the new rules How the new rules apply will depend on when an employee started work. In summary: An existing employee who has been employed for longer than six months by the time the new rules come into effect will be entitled to 10 days sick leave on their next entitlement date after the rules come into effect; An existing employee who has been employed for less than six months by the time the new rules come into effect will be entitled to five days sick leave after six months continuous service and a further 10 days sick leave at their next entitlement date; and A new employee who starts work on or after 24 July 2021 will be entitled to 10 days sick leave after six months service and a further 10 days at their next entitlement date.

In the event of your death, the funds bypass your estate and go directly to the remaining policy owner. This therefore avoids the insurance funds becoming part of the deceased’s estate, which would create delays in accessing the funds which, in turn, can cause mental and financial stress and anxiety for the surviving family. This type of ownership, however, might create problems when a marriage or partnership breaks up, as both parties will need to agree to split the policy.

Don’t be caught short. The ownership structure of your personal insurance policies is more important than many realise. It’s critical that the policy ownership structure is matched to the circumstances of the life insured and policy owner(s). There are a number of policy ownership structures, with all having their advantages and disadvantages. Irrespective of the policy ownership structure chosen, it is essential to have an updated and unambiguous will. Two common policy ownership options are sole and joint policy ownership.

Sole policy ownership With sole policy ownership the life insured is also the policy owner. In case of death the policy will be paid to the estate and distributed in accordance with your will, if you have one. Local Asian Corner Mahjong

Just like driving, you may show an unknown side of yourself when playing Mahjong, such as a lack of patience, having difficulties making decision, cheekiness, or being a bad winner or good looser.

On a positive note, Mahjong is a game that requires the skills of good memory, concentration and eye-hand coordination.

Shuffling and stacking the tiles requires arm, hand and finger movements that are good exercise for seniors, and some studies have shown that Mahjong can improve symptoms of dementia. As far as I know, most Kiwis don’t involve money in the game, playing as a pure leisure activity.

On the night at church though, I chose Chinese animal chess to share. Those are teenagers not seniors after all!

A while ago I was asked to bring some games to church to share a slice of our cultures with a group of youth. It was a tough request as I honestly had no resources at home to bring.

Looking through drawers I have found a set of miniature toy Mahjong.

I wondered, is it appropriate for the occasion? In our culture, Mahjong always involves money and is considered gambling.

Even though it was a toy, we still could not persuade ourselves to share it with the teens.

Mahjong is probably China’s most successful invention at all time. Despite being around for hundreds of years it still remains extremely popular with all generations. It has also spread across many Asian countries, with many developing their own version of the rules.

As I mentioned earlier, there is always money involved in Mahjong playing; even when playing with family members, putting a few dollars of chips down increases the fun and excitement. However, it can create a gambling addiction, therefore children are usually not allowed to play. In our family even watching around the table was prohibited until we were in our teens.

For the Chinese it’s common to set up tables of Mahjong at functions and events as a fast way to warm up with strangers.

With hands busy shuffling and stacking up Mahjong bricks, eyes are busy tracking the progress, and the mind is busy in working out a strategy. Everyone is in a race to form the winning hand.

This is a game that requires a lot of attention, so chatting a line or two on some random topic between turns is all you can do.

silver beet leaves. Cull them or use bird friendly bait to restrict their populations or all your new seedlings will disappear overnight

This reduces transplant shock and allows them to come into leaf and flower as they adjust to their new situation. Using Garden Mix or Nutrasoil in the planting hole adds fertilisers and compost to condition the existing soil. If you’re digging into clay soil, add a handful of gypsum in the bottom of the hole to soften the clay pan and allow roots to penetrate. Mulching and staking will improve tree establishment as the season warms up and spring winds arrive.

The state of staffing in the local hospitality trade But the hospitality trade is now facing an unprecedented shortage of all ranges of cooks and chefs. New Zealand, being an island nation, has always relied on foreign chefs to make up the shortfall of our local workforce. When I started cooking, these kitchen staff came from Europe, then from the Pacific islands, then Asia and most recently from Indian. These countries all produce great cooks/chefs and have been an awesome way to keep our hospitality businesses thriving. With the onslaught of COVID-19 around the globe and the shutting down of New Zealand’s boarders to all foreigners, we are in the unprecedented position of not having enough kitchen staff for our hospitality needs.

Top Auckland restaurants have recently had to close at an extremely high cost to their business just to give their staff a break, due to under staffing. In the future if this continues we can expect hospitality businesses to close and prices to rise. Hopefully our boarders will open sooner rather than later and help our hurting hospitality businesses. Don’t forget to support local as you are helping secure the future of our local eateries.

Local Recipes Indian Chicken & Prawn Biryani (Serves 4-6) Ingredients 50gms tandoori paste 700gms large diced skinless chicken breast or thigh (boneless) 3 Tbsp canola oil 50gms butter ½ tsp each of fenugreek and red chilli flakes 8 crushed cardamom pods 4 whole cloves 3 bay leaves 1 tsp each of coriander seeds and cumin seeds 1 Tbsp mild curry powder 7 cloves finely chopped garlic 30gms finely chopped fresh ginger 2 finely sliced brown onions 1 cup raisins (soaked in boiling water for 10 minutes) 2 ½ cups basmati or jasmine rice (soaked for ten minutes and drained) 250gms prawn cutlets 1 bunch sliced spring onions 1 small bunch fresh coriander 1-1.2ltr boiling water with 35gms of Vegeta or chicken stock powder

Method Add tandoori paste to diced chicken, mix well and marinate for an hour.

Pre-heat oven on fan bake to 170C. Pre-heat heavy-bottomed saucepan with tight fitting lid on medium heat. Add oil and butter then fenugreek, cardamom pods, red chilli flakes, cloves, bay leaves, coriander seeds, cumin seeds and mild curry powder. Stir with wooden spoon for 1-2 mins. Add chopped garlic and ginger, cook for 1 min. Add sliced onions, sweat onions till soft, around 3-5 mins (don’t brown). Turn heat from medium to high. Add chicken and sear outside stirring often, for around 2 mins. Add rice and raisins, cook for 2 mins. Add prawns, spring onions, coriander and sauté for further 30 seconds. Add boiling stock to top of mix (around 1ltr). If you add all the stock (1.2ltr) you will have a wetter Biryani) up to you.

Bring to boil, cover with round of greaseproof paper, place the lid on top and place near the bottom of your oven for 25-30 mins.

Remove from the oven and remove the lid. Allow to sit for 5-10 mins. Remove paper and gently mix the biryani. Serve with fried shallots on top. AMAZING!!!

Savoury muffins with cheese and sweetcorn Makes 12 muffins Prep Time 5 minutes Cook Time 20 minutes

Ingredients Dry ingredients 2 cups self-raising flour 1 tsp baking powder 1 tsp salt 1 ½ cups grated strong cheese (mature cheddar/ parmesan) 1 cup can of tinned sweetcorn, drained Wet ingredients 2 eggs, beaten ½ cup bland oil (sunflower or vegetable, not olive) 1 cups milk semi skimmed or whole milk 1 tbsp oil to brush the tin

Method Preheat the oven to 200C. Brush the inside of a 12 muffin tin well with oil.

Mix all of the dry ingredients in one bowl. Mix all of the wet ingredients in a bowl or jug and stir until well mixed.

Plop the wet mixture into the dry and mix until totally combined. (Don’t over mix, but do check thoroughly as there are often pockets of dry flour hiding).

Scoop into the muffin holes. You can reserve a handful of cheese from the main mixture and sprinkle on top of the scooped muffins if you like. Bake for 20 to 25 minutes or until golden brown.

Note: You can use muffin cases if you prefer but as these muffins don’t have a huge amount of oil in the mixture, they can stick a little to the paper.

Notary Public vs Justice of the Peace original is genuine. For example, to verify a person’s residential address, the notary would take a declaration from the person and obtain evidence of the address, such as a search of the LINZ register, or view a tenancy agreement, bank statement or utility bill. When a school certificate or a university degree must be verified, the notary must establish directly from the school or university that the certificate was issued as stated on the certificate.

Notaries must also maintain a protocol in which copies of all documents certified or witnessed by the notary are kept. The notary must produce a copy of any document bearing their signature, if called upon.

In 1961, several countries signed the Hague Apostille Convention, which means those countries agreed to recognise each other’s notaries. When a document is certified by a notary public for use overseas, the recipient country will often request that an Apostille be affixed to the notary’s certificate. The Apostille is a certificate issued by the Department of Internal Affairs confirming that the signature, stamp or seal of the notary is genuine.

You will only need a notary to witness your signature or provide a certificate if the document has to be used outside New Zealand.

In ancient times, when most people were unable to read or write, they would go to a scribe to write up their important documents, such as contracts and their last wills. The origin of the office of notaries can be traced back to those times.

Notaries became established in England in the Middle Ages and one of the requirements for appointment was that the man (certainly not a woman!) had to be literate. The man also had to be familiar with the work of a notary public, be of good character and be born of a ‘holy wedlock’!

Times have changed. Nowadays, a notary must be a lawyer (man or woman) with at least ten years’ experience and it is now acceptable to be born out of ‘holy wedlock’. But notaries in New Zealand are still appointed by the archbishop of Canterbury. The appointment is handwritten in the same old language and still mentions that the notary is literate.

The difference in New Zealand between a notary public and a Justice of the Peace (JP) is that a JP is a volunteer from the community who can witness signatures and certify documents as true copies. They can also take affidavits and statutory declarations. A notary public does the same but only for documents destined to be used overseas. Also, Justices of the Peace a do not charge for their services, whereas notary public do, usually on the same rate as they charge for their legal services.

Say you need a certified copy of a document such as a passport, driving licence or degree certificate. There is a difference between certifying that a document is a true copy and verifying the document. Notaries are sometimes asked to verify a document.
