ell, here we are! We are officially in the last month of the year. And what a year 2021 has been. There was so much anticipation coming into this new year to finally bid "good riddance" to 2020. While we were (and still are) dealing with the effects of COVID-19, with caution, I think I can speak for everyone that we were all looking to get back to a sense of normalcy; especially at this time of the year where it is normal to gather with friends and family.

One of the most difficult things to do during 2020 was to "plan". I would put dates and achievement milestones on the planner only to later cross them out. I finally got to a point where, due to discouragement, I just stopped using it. However, I have purchased my 2022 planner and have already begun strategizing for what I would like to accomplish next year.

I do believe there is something in writing down your goals and visions. I believe it to be therapeutic, but more importantly, I think it correlates to a principle I subscribe to called the Law of Attraction. The law of attraction is a universal principle that states you will attract into your life whatever you focus on. Whatever you give your energy and attention to, you attract. Author and motivational speaker Tony Robbins puts it this way "To get what you really want in life, you need a clear goal that has purpose and meaning behind it. Once this is in place, you can focus your energy on the goal and become obsessive about it.

When you learn how to focus your energy, amazing things happen."

What is even more eye-opening is to reflect on what you developed at the beginning of the year and marvel at what you were able to accomplish. My planning process is simple and encompasses personal and professional goals. In recent years, I have learned of friends who have been completing "vision boards" and even hosting vision board parties for this very reason, to write/visualize their future.

Not to rattle off a collection of quotes here, but since I love quotes, there are a couple that seems appropriate here. The first is "if you fail to plan, you plan to fail". The second quote is actually scripture that reads "without vision, the people perish" Proverbs 29:18. Now I am not a Bible scholar, as I am sure there is probably more to the scripture than my interpretation, however, I do know that the book of Proverbs provides wisdom and instruction and so I am fine with that.

As we close out 2021 and reflect on the year that was, I can say that I am extremely grateful for so many things. It goes without saying that working on The Midtown Press has been an incredible addition to my journey! So to every advertiser, reader, guest columnist, and supporter, I thank you from the bottom of my heart. There simply is no paper without you.

Holiday Spending Tips As the holiday-themed song states, "it's the most wonderful time of the year!" Sometimes it makes you wonder who exactly wrote the lyrics for the song. For a variety of reasons, this can be a difficult or anxious time of year for many people. With recent stories about rising inflation, increases in prices from everything from groceries, to paper supplies and even toys parents can feel even more pressure to get gifts under the tree without breaking the bank. It can be easy to go overboard on holiday shopping, however, with a little bit of planning and budgeting, it is possible to celebrate without spending all of your cash or maxing out your credit cards. Use these practical tips to ensure you stay on budget for the new year, rather than getting wrapped up in holiday spending.

• Set Holiday Spending Limits - Limit what you buy to what can safely come out of your bank account.

• Be Realistic About Your Budget - This is where "living within your means" becomes very important. You do not want to roll into 2022 like a bad hangover saying to yourself, "why did I do that?"

• Provide Personalized Gifts - Now is the perfect time to hone in on those arts and craft skills you picked up during the pandemic shutdown.

• Use Cash Instead of Cards - Paying with cash makes it much easier to visibly track your expenses, while a card is easy to swipe time after time.

Lastly, before you head to the store, make a list of each person you need to buy for, and allocate a certain amount of money for each of them. Don’t overspend by even a dollar.

This is important because if you start overspending before you know it, five dollars here and 10 dollars there, you can easily go into debt.

Remember to be honest with yourself. The last thing your friends and family want is to see you go into debt or further into debt.  T H E M I DTO W N PRESS / 5

Holiday Eating: Embracing our Family Traditions

A

fter last year’s quarantine holidays, this season we are more excited than ever to celebrate with our loved ones. Food is at the center of every holiday celebration, and not just any food, special dishes with history and love that feed our bellies and soul. For some of us, the thought of holiday eating can be stressful; trying to avoid overindulging, emotional eating, and weight gain. We have always heard about holiday weight gain and these numbers are exaggerated and not what we have been led to believe. The perceived holiday weight gain can be overwhelming and leave us with feelings of guilt and remorse instead of joy and happiness this time of year.

There is no need to worry about enjoying food during the holidays. With a few adjustments and mindful eating, you can celebrate and enjoy those beloved dishes.

To sanely survive this deep sea of holiday treats a focus on mindful eating is helpful.

Mindful eating is not a diet or food restriction, it is about being fully aware and present about what we are putting in our bodies.

Being more mindful when we eat allows us to savor and enjoy food and prevents eating on-the-go, constantly reaching for snacks, or binge eating. Mindfulness allows you to enjoy holiday meals without guilt or remorse. There are a few suggestions you can follow to help you stay mindful through the holiday season.

For starters, when face-to-face with food, take a deep breath before digging in and consider how you are feeling. Are you stressed, anxious, tired, sad, or are you truly hungry? Take a few deep breaths and allow yourself a moment to relax, even if it is just for a few seconds. Our 8 / THE MIDTO W N P R E SS

emotions can direct us to reach for food as comfort and not because we are truly hungry.

Once you get your emotions in check, serve yourself a plate, walk away from the food, sit down and enjoy! It is better to serve yourself a plate with your favorites than to graze the buffet to prevent overeating. Another strategy for staying mindful is to eat and drink the holiday foods you love that bring you joy. It is easy to reach for those holiday donuts in the break room or scarf down Christmas cookies trust because they are available. Stop and think, is this a food I genuinely like and enjoy, or am I eating it because it is here? You may also eat food because you feel bad and do not want to be wasteful, think about sharing with others to spread holiday cheer.

In this season we are surrounded by special dishes everywhere we go; everyone has special recipes they cook and want to share them with you. If you can practice mindful eating, it is truly a skill that will get you through the holiday season and you can carry you into a healthier more joyous new year.

Holiday Sweet Potato Casserole

Ingredients

Instructions

3 large sweet potatoes (about 3 pounds) 1/4 cup milk, feel free to use dairy-free or lactose-free milk it works well 1/4 cup butter or ghee, melted 1 teaspoon vanilla extract 1 teaspoon cinnamon ¾ tsp nutmeg ¾ tsp ground ginger 1 teaspoon salt

1. Bring a large pot of water to boil on high heat.

2. Peel the sweet potatoes with a hand peeler.

3. Dice the potatoes into chunks and place them into the pot. Cook the potatoes for 20-30 minutes, or until the potatoes are fork-tender.

4. Drain the potatoes over a colander, and place the potatoes in a large mixing bowl and mash them with a hand masher or electric beater.

5. Pour the milk, butter, vanilla extract, cinnamon, nutmeg, ginger, and salt into the mixture and continue mixing until creamy.

6. Preheat your oven to 375 degrees Fahrenheit.

7. Make the crumble topping. Roughly chop the dates, pecans, and transfer them to a mixing bowl. Add the flour and butter, then mix thoroughly with your hands until combined.

8. Spread the sweet potato into an even layer in a 9 x 13-inch baking dish. Then sprinkle the crumble mixture on top.

9. Bake for 25-30 minutes, or until the top is golden brown.

Topping 1 cup pecans roughly chopped 4 Dates pitted and diced 1/4 cup flour, can use almond flour for a gluten-free option 2 tablespoon butter or ghee

To create a more creamier sweet potato layer, use a food processor, hand mixer, or stand mixer to blend.

To make it dairy-free , you can swap butter for ghee as well as use any type of nut milk.

Are Anonymous Code Enforcement Complaints a Thing of the Past?

Until recently, residents were able to voice code enforcement complaints anonymously. However, it might not be so easy to do so thanks to a new state law. Although Orange County officials are concerned this will deter people from filing complaints, they are adjusting to meet the law’s requirements while also making it as easy as possible for citizens to report potential violations.

Previously, residents were able to voice concerns anonymously by contacting Orange County 311. This was an effective way for members of the community to report violations because they felt safer doing it without leaving a name. Senate Bill 60 was advanced during the 2021 Florida legislative session and recently signed into law by Governor Ron DeSantis.

In response to the new legislation, Orange County has coordinated with 311 to revise the questions asked by staff. Residents will now be asked to provide their names and address. If a resident elects not to provide those details but believes the violation may rise to meet the new standard, the information regarding the possible violation will be noted for the appropriate staff person to determine if it poses an imminent threat as stated in the law. 

Pine Hills Community Recognized by Proclamation The Orange County Board of Commissioners announced via proclamation designating December 12, 2021, as Pine Hills 'Re-Establishment Day'.

The Board of County Commissioners officially proclaimed Pine Hills 'Re-Establishment Day' as a day to recognize and honor the Pine Hills Community in their achievements, hard work, and dedication to their community. An inaugural Pine Hills Establishment Day Parade & Celebration, hosted by the Pine Hills Safe Neighborhood Partnership, Saturday, December 11, 2021, from 10:00 am - 1:00 pm. The event will feature resource vendors, food trucks, entertainment, giveaways, and more. BizLink Orange: A One-Stop Resource to Help Growing Businesses

Orange County has launched a new website called BizLink Orange to help businesses build their presence in Orange County. The site is a one-stop shop to access entrepreneurial resources including how-to guides, coaching, and other tools to help them start and grow their businesses.

BizLink Orange is a new economic development program managed by the National Entrepreneur Center and is already working with more than 40 participating organizations. BizLink Orange’s network of Resource Partners provides one-on-one business coaching and a wide range of business training topics, including business planning, loans/financing, marketing/sales, licenses/ permits, startup assistance, product development, training classes, government contracting, operations, human resources, accounting, and international trade.

Second Harvest Announces New President & CEO After a nationwide search, Derrick Chubbs has been selected as the President & Chief Executive Officer of Second Harvest Food Bank of Central Florida effective Jan. 1, 2022. For the past five years, Chubbs has been President and CEO of Central Texas Food Bank (CTFB) in Austin, the largest hunger-relief agency in Central Texas, providing more than 64 million pounds of food and grocery items to over 300,000 residents across 21 counties. In addition to guiding the food bank during a time of unprecedented need caused by the coronavirus pandemic, he has helped to lay a strong financial and strategic foundation for the future success of the CTFB. Prior to joining the Food Bank Network, Chubbs was with the American Red Cross where he held both regional and national executive roles. He began his professional career in the for-profit technology sector, holding senior leadership positions with companies such as IBM, Pervasive Software, and Dell before following his passion for community service. The group hosted its 14th Annual Pre-Thanksgiving Day Luncheon on Thursday, November 18, 2021, at scenic Orlo Vista Park. With dozens in attendance, the active group which boasts a membership of over 100, dined outdoors on a traditional Thanksgiving feast including turkey, ham, and all of the fixings generously provided by members of Kappa Alpha Psi, Inc. fraternity. Around Town Jerry Demings Center for Recovery and Re-Entry Community Celebration Event

T

he Bridges International’s Jerry Demings Center for Recovery and Re-entry hosted its Community Health and Wellness Celebration to commemorate the third year of service to the Pine Hills community. This family-friendly event was held on Friday, October 29th at Orlo Vista Park and featured food, music, prizes, games, and local vendors (including our very own SMILE Ice Cream) and non-profit organizations, along with COVID-19 testing and vaccinations. A visit from Mayor Demings who traveled by Lynx Bus to the event made the event complete! 

Holiday Turkey Donation to Central Florida Food Pantries

O

n Friday, November 12, 2021, Trustco Bank, which has served the Orlando and Central Florida community for nearly 20 years, donated 1,000 turkeys to Second Harvest Food Bank of Central Florida to support those facing hunger this holiday season. Eric Schreck, Executive Vice President & Florida Regional President of Trustco Bank stated that "supplying the turkeys was a no brainer." "You don't truly recognize the need until you are in the food bank." The event marked the second year in a row that Trustco Bank has supported the event. Three of Second Harvest’s local feeding partners picked up some of the donated turkeys. Those organizations were One Heart for Women and Children, Serenity’s Grace, and The Picnic Project. 

Valencia's Center for Accelerated Training Grand Opening

V

alencia College held a ribbon-cutting event on November 12, 2021, for its brand new, state-ofthe-art Center for Accelerated Training. Students, staff, elected officials, and community leaders came together to celebrate this needed community asset which increase opportunities for rapid job training in high-demand careers. Located at 437 WD Judge Drive in the Princeton Oaks industrial park. The Center for Accelerated Training will offer short-term hands-on training for residents to develop skills that puts them on the path to a quality career in a high-demand industry. The center has the capacity to host and train about 600 students in careers including carpentry, forklift operations, apartment maintenance, welding, and plumbing. 

Dorie Miller Memorial Post 331 Celebrates Veterans Day

E

ach year The Dorie Miller Memorial Post 331 of The American Legion of Central Florida celebrates Veterans day by placing new flags on the graves of veterans.

Additionally, the members host a ceremony to honor all military veterans who have served our great country both past and present. Q: How long have you been in your field and what made you want to get into the field of Pharmacy?

A: I have been a pharmacist for eight years now. My passion for medicine started as a child when I

witnessed my grandfather struggle with Diabetes. He never fully understood the importance of his medications or how eating healthy could drastically improve his quality of life.

Q: Can you briefly describe what a typical day is for you?

A: A typical day for me consists of counseling patients about their medications, health conditions,

and implementing lifestyle changes. Plus, I interact with healthcare providers on behalf of patients by addressing medication concerns and recommending medication alternatives thereby bridging the gap between patient appointments. I also provide COVID-19 vaccinations and testing to patients as well.

Q:

What are some of the common misconceptions that you have heard about pharmacists over the years?

A: Pharmacists only fill prescriptions is probably the most common misconception. No doubt,

filling prescriptions is a part of our profession. However, we play a major role in the clinical decision-making and health outcomes of our patients.

Q: What is the importance of medication management?

A: A review in the Annals of Internal Medicine estimates lack of adherence to chronic medications

causes nearly 125,000 deaths, 10 percent of hospitalizations, and costs the already strained healthcare system between $100–$289 billion a year. So, it’s crucial to help patients stay on track with their medications to reduce the overall costs to the patient and the healthcare system.

Q: Are there any resources or educational opportunities to learn more about medication safety?

A: There are tons of medication safety resources available. However, one of my favorite online

resources is www.consumermedsafety.org. This resource covers a variety of topics and addresses numerous medication concerns.

Mentors meet twice per month for approximately 30-45 minutes with their students at Evans High School to talk about personal, professional, and academic development, to share what is going on in their lives, and to help create a pathway to success. Each November, in celebration of American Education Week, business and civic leaders come into classrooms at Evans High School to talk with students about academics, careers, and the future. This year, Teachin returned to an in-person event and had its largest community participation yet.

On November 18th, students in grades 9-12 had the opportunity to hear from and talk with over 25 industry leaders from a wide variety of organizations and businesses in Central Florida including, Coke Florida, Valencia College, Orlando Magic, Hebni Nutrition, Jobs Partnership of Florida, Orlando Health and more. Pine Hills Establishment Day Parade Come one, Come All to the Inaugural Pine Hills Establishment Day Parade & Celebration. Two New Affordable Housing Projects Set to Get Underway in Pine Hills

T

he Board of County Commissioners voted unanimously to award $13.18 million to developers to build four different multifamily affordable housing developments in Orange County. Two of these developments will be constructed in Pine Hills.

The $13 million investment is the first from the Affordable Housing Trust Fund Program, which was established

by Mayor Demings’ Housing for All Task Force. The housing dollars will provide financial assistance to advance and facilitate the new construction of affordable, multi-family rental housing with an emphasis on serving low and very low-income households.

Funding for the allocated to the two Pine Hills developments includes $5 million for the Orlando-based Banyan Development Group group as part of a $31.5 million project. Banyan will build 156 units in a multi-family complex for low-income households. The site sits at the northeast corner of West Colonial Drive and North Pine Hills Road, a few blocks west of the entrance to Barnett Park.

Developers pledged to set aside 39 units for very-low-income households.

Weekley admits there is more work to be done, but he is emboldened by the fact the community is much bigger and more engaged than ever—and that residents are sincerely appreciative of the things the Improvement District is trying to accomplish.

“Easing the affordable housing crisis is critical to the overall health and welfare of Pine Hills,” according to Sam Weekley, Executive Director, Pine Hills Neighborhood Improvement District.

COVID-19 CORNER COVID-19 VACCINES FOR CHILDREN AGES 5-11 The Centers for Disease Control (CDC) provided final approval for the Pfizer COVID-19 vaccine to be administered to children ages 5-11 years old. Parents are encouraged to speak with their pediatrician about whether receiving a COVID-19 vaccine is appropriate for their children, as well as if the vaccine is available through their office.

Other vaccination option for this age group include: • Orange County Public Schools: The Florida Department of Health and Orange County Public Schools (OCPS) have partnered together to administer the Pfizer COVID-19 vaccine for children ages 5-11 years old.

• Federal Retail Pharmacies: Parents of children ages 5-11 years old can contact their nearest Federal Retail Pharmacy location to check if vaccines for this age group are being administered.

COVID-19 VACCINATION OPPORTUNITIES Orange County Health Services offers COVID-19 vaccines as well as all three COVID -19 vaccination boosters to the community at the Barnett Park vaccination site.

D

uring the week of Thanksgiving, my son Christian had a birthday and turned 18 years old.

Combine that with the fact that my daughter Madison will turn 21 in a few months and it made me feel old. I actually had a birthday that week myself and turned the ripe "old" age of 47. When I mentioned this to one of my friends, they laughed and mentioned that I should feel happy about my situation and that they were a bit jealous because, with an eight and 10-year-old, they felt that they were at the other end of the spectrum.

I

I do feel good about where I am currently in my current stage of life. At the ripe "old" age of 47, I feel like I’m just beginning to hit a stride and feel so inspired and hopeful about what’s next. I have several friends who are doing incredible things including traveling, starting businesses, running for political offices, and doing things that make a direct impact in our community. In some ways, I do feel a bit of pressure to compete. While there is no real competition (except for with myself) I do feel the need to push myself. In keeping honest with you, there are times when things can feel overwhelming but I have always believed in the old adage that God never gives you more than you can handle! So you will never hear me complain as I count it all as blessings. For the most part, I am a one-man show. It is part of the growing process and I do look forward to the day as the paper continues to grow and I have a staff to delegate work to. However, until that time it is just me. Because of this, I do take the time to relax where ever I can as I do believe that maintaining balance is healthy.

It takes the equivalent of a full week to pull together all of the elements that make up an issue. For the most part, I spread it out over the course of two to three weeks to reduce the pressure of the pending deadline. Part of the process of publishing an issue includes creating the online version of the paper which can be found at www.themidtownpress.com. The platform that is used to publish the online version of the paper has built-in analytic tools that allow us to see how many people have accessed the paper, what stories they have read, and where they are viewing the website from. To provide easier access to the data, the platform has an app that administrators can download which I did. Little did I know that I would receive notifications every time someone accessed the site to read the paper. I was pleased to see that over 200 unique visitors had accessed the site and from as far away as Washington State. What is also as impressive is running into somebody and they comment about something they read in the paper. While it shouldn't surprise me, I will get a bit tickled about that that someone actually took the time to read what is in the paper. It just goes to show the responsibility that comes along with publishing a paper.

There are a lot of exciting updates that I am looking forward to. So for those of you who have taken the time to read the paper, a huge "thank you" and please continue. The best is yet to come so in the meantime, I'll just keep writing!
