Helpful substitutes for baked goods

This is for when you see that one recipe on TikTok or Pinterest and suddenly you’re half way through the recipe and you realise you don’t have a crucial ingredient. After all, who has tapioca starch on hand for cookies? (Maybe it’s just me who has the baking supplies of a 5 year old) but if you’re in the same boat here’s a list of alternatives that will get you cookies.

Self raising flour (1 cup)- 1 cup all-purpose flour with 1½ to 2 teaspoons of baking powder and ¼ teaspoon of salt

Tapioca starch/flour- cassava flour or arrowroot are best for baking, while cornstarch and potato starch work are better for thickening sauces all can be used in a 1:1 ratio.

Eggs- use either 60ml or half a medium banana to substitute one egg (use it in a recipe and not attempt fried)

Baking powder (1 tsp)- 1/4 tsp baking soda mixed with 1/2 tsp vinegar or lemon juice, or 1/4 tsp baking soda mixed with 1/2 cup yogurt/buttermilk.

Cocoa powder- Carob Powder: A 1:1 replacement, although it has a slightly different, sweeter, and nuttier flavour, Dark Chocolate (70% or higher): Melt and use in a 1:1 ratio, but reduce sugar and fat in the recipe to account for the sugar and fat in the chocolate, Hot Cocoa Mix: Use, but reduce sugar in the recipe significantly, as it contains sugar, dry milk, and cocoa.

Icing (or powdered) sugar (1 cup)- 1 cup of granulated white sugar, 1 tablespoon of cornstarch blended high speed until a fine powder forms.

yogurt substitute 1:1- in cooking or baking, use sour cream or buttermilk

Butter milk- 1 tablespoon vinegar or lemon juice mixed into 1 cup of milk.

Recipe inspired by one /year at books for cooks (pavlova and meringues p91)

Ingredients:

4 egg whites (room temperature)

240g of caster sugar

1 tsp of corn flour

1/2 tsp of vinegar

1 tsp of vanilla extract

300ml of heavy cream any fruit of your choice

Instructions:

1.Preheat the oven to 180C fan forced and line a tray with baking paper

2.In a stand mixer whisk the egg whites on high until soft peaks form Do not overmix

3. Then turn the speed to medium while slowly adding in the sugar until fully combined (the sugar should be dissolved and not grainy in the mix)

4.Reduce the speed to low and mix in the vinegar, corn flour and the vanilla extract

5 Scoop the mixture from the bowl onto the tray into a big round blob that's smooth on top

6 Bake in the oven for 5mins then turn the temp down to 140C fan forced and continue to bake for an hour then let the pavlova cool

7 While the pavlova cools, whip the heavy cream until it holds its shape Optionally add vanilla for sweetness/flavor

8 Cut up the fruits of your choice for garnish

9 Finally top the the pavlova with the cream and fruit and enjoy!

Gem of The Week

This week’s gem are Opals. In Ancient Rome opals were called Opalus. Bedouins once believed opals help lightning and came from the the sky during thunderstorms.

Opals are given to celebrate wedding anniversary's. Opals have 20% water contained in their silica structure. The man made version of opal’s are Opalites and they look a bit like shiny colourful sea glass. No two opals are the same including their patterns and the where the colours are.

Opals that are fine or small are cut into odd shapes to keep as much colour as possible. Opals aren’t that heavy so it is comfortable to wear big opals. There are a fair few opal farms and mines in Australia and they can be common if you’re in the right spot. Opals are Octobers birthstone. Because of the Opals colour, some Ancient Romans believed that they were the most precious stone ever.

For in them you shall see the living fire of ruby, the glorious purple of amethyst, the sea-green of the emerald, all glittering together in an incredible mixture of light — Pliny the Elder

The hues of the opal, the light of the diamond, are not to be seen if the eye is too near — Ralph Waldo Emerson
