Florida Stone Crab Claws with Key Lime Mustard Dipping Sauce
Ingredients:
• 3 pounds Florida stone crab claws, medium-sized
• 4 Florida Key limes (or 2 regular limes), juiced
• 1 cup low-fat mayonnaise
• 5 tablespoons Dijon mustard
• Sea salt and fresh ground pepper, to taste
Preparation: Crack claws using a wooden hammer or a seafood cracker; remove shell and movable pincer, leaving meat attached to the remaining pincer. Set aside and keep refrigerated until use. In a small bowl, combine the mayonnaise, mustard and Key lime juice. Taste the mustard sauce and adjust seasoning with salt and pepper. Serve stone crab claws with the mustard sauce.

Sail Types: A Comprehensive Guide to 8 Types of Sails
Sailboats come in all shapes and sizes. And that means there are many types of sails on the market! For those who might not know, sails are made of canvas and use wind power to propel sailboats through the water.
Understandably, different sails are required for different types of sailboats. And sailboats are categorized by the number of hulls they have.
Monohulls have a single-hull design, catamarans have two hulls, and trimarans have three. Generally, sailors use catamarans for upwind sailing (but they can be used to sail downwind in certain conditions).
The type of sail you’ll need for your sailboat depends on the kind of sailboat you have. Additionally, sails are highly dependent on the wind and weather conditions.
Therefore, it’s always a good idea to have different types of sails on board to navigate the ever-changing weather conditions.
8 Types of Sails for Sailboats
As mentioned, you should carry multiple sails when sailing to prepare for various weather conditions. Here’s a brief overview of the types of sails for sailboats:
1. Mainsails: The mainsail is the largest and most important sail. Typically, it’s situated directly behind the mast — connected to the boom — and uses wind energy to move the vessel. The mainsail plays a significant role in
tacking and gybing, making it essential for any voyage. Since the mainsail is a larger sail, it doesn’t require wind to propel it forward. And the fact that it can be moved by moving the boom makes it uber-easy to operate.
2. Headsail: The headsail often accompanies the mainsail, though it is smaller in size. Regardless of your sailboat type, the headsail is positioned at the front of the mast – over the sailboat’s bow. Because headsails are small, they are helpful when navigating through windy conditions. Smaller sails catch less wind, preventing them from propelling your boat as strongly as larger sails. Additionally, headsails help lift, balance, and protect the vessel from inclement weather conditions. While the term ‘headsail’ refers to any sail in front of the mast, the jib is the most common type of headsail. (And when a jib is so large that it overlaps the mast, it’s called a genoa.)
3. Genoa: The genoa is a large sail that attaches to the front of the forestay. (In this instance, it’s similar to a headsail.) However, the genoa is larger than the headsail and overlaps the mainsail partially or completely to help the boat go faster. Genoa sails are useful when sailing through light or medium wind. You can also use it when the wind comes directly from the rear. If you use a Genoa sail during high winds, you’ll probably start sailing too quickly and put yourself and your boat at risk.
4. Spinnaker: The spinnaker is a large and whimsical (often colorful) sail. Spinnaker sails are usually symmetrical, allowing them to reach different points of sail. Generally, these are lighter sails and don’t cover the mast like the genoa. Because spinnaker sails are on the larger side, you have to be incredibly careful with them. Don’t use them in rough conditions. Instead, save them for sailing in low winds and calm seas.
5. Gennaker: As the name suggests, the Gennaker sail combines a spinnaker and a Genoa sail. They are as large as the spinnaker, although they’re not symmetrical. They come in handy whenever the wind changes from a pure dead run to a reaching point of sail, as sailors can navigate various wind types with the same sail. It’s still only meant for lighter and milder winds, but it’s more versatile than the spinnaker and genoa.
6. Light Air Sails: Light air sails are useful in calmer conditions when the headsail and mainsail alone aren’t cutting it. They include: Code Zero: A code zero sail is a gennaker sail ideal for sailing in light to mild winds. It’s designed to create lift and boost boat speed whenever regular sails don’t generate enough power. For that reason, many racers and cruisers use code zero sails to improve performance and gain control in various situations. Windseeker: This small, special sail is reserved for no wind or light wind.
Essentially, it helps boats remain maneuverable in extremely calm conditions. And for that reason, it’s valuable to long-distance sailors.
7. Storm Jib: Storm jibs can be used as a headsail whenever the weather is particularly rough and windy. Because it functions as a safety seal, it prevents boats from capsizing by reducing the sail area exposed to the wind. Therefore, it’s a necessary sail for every sailor.
8. Trysail: During strong winds and storms, sailors can raise a trysail — a small, triangular sail near the boat’s stern — for better control and stability. Generally, sailors do this whenever the mainsail becomes too large and challenging to maneuver.

Friends, Faith, and Fish: A Day to Remember Before the Storms After weeks of being landlocked by relentless wind and rough seas, Tania and I were itching to get back on the water. When the forecast finally promised a calm window before the tropical storms, Tania and I jumped at the chance to chase permit at the boils. Our buddy Vern, who recently moved over to Florida’s west coast, had been asking when we’d take him out for a permit, and this felt like the perfect shot. I also owed my good friend Bill a trip, so we rounded up the crew for what promised to be a special day.
We left the house about 6:00 am to ensure we had time to get ice and bait for the trip. I told Bill we would arrive at the dock about 6:30 am. Unfortunately, we got held up at the bait shop, and we were a few minutes late. It was about 7:00 am by the time the boat was loaded, and we were heading out of the inlet.
It was a beautiful ride out to the Boils, with light wind, calm seas, and a gorgeous sunrise. Everything was lining up for us to have a blessed day. Our prayer before arriving at the dock was that the Lord would provide us with His protection and keep us safe, open our eyes to see His creations, and provide us with a bountiful catch.
We all started fishing with 30g slow-pitch jigs. This was Bill’s first time jig fishing, and he was quite skeptical that these small jigs would catch us fish. But a few minutes later, Bill was the first
one to hook up and land a blue runner.
Shortly after that, all except Tania started catching ladyfish after ladyfish, with Bill catching the most. Bill caught so many, Vern made a joke about how good Bill was with the ladies, and we would have to tell his wife.
Tania was getting frustrated, as in the first thirty minutes, she had not caught a single fish. She had one sound bite, but that was it. She made a statement that it wasn’t her day to catch a fish. Shortly after her comment, Tania’s reel was screaming, and she was being taken around the boat. I knew she was on a permit. Tania was the one who started off the day of catching permit.
Shortly after Tania landed her Permit, Vern hooked up with something that made his drag start screaming. About 30 seconds into the fight, we saw a significant tarpon jump, and it was another minute or so before the fish broke him off. He was both disappointed and excited about the prospect of catching some large fish.
While we were fishing, we continually watched the weather, and at about 9:30 a.m., we heard a loud boom from the thunder. I have always been told if you hear thunder, the storm is too close; however, we looked at the closest lightning strike, which was more than 15 miles away, and the storm was moving away from us.
Over the next few hours, we ended up catching seven permit, one nice lane snapper, and a legal pompano. I caught three of the permits, Tania and Bill both caught two,

In the fall time, business slows down a bit with kids going back to school and summer vacations are over, but this fall so far has been the slowest I have seen in 20 years. It’s not just me that is feeling it, but every charter boat that I know is saying the same thing. That’s a shame because the few trips that we have been on have been epic.
We had a small tournament to fish out of in Pompano with one of my clients. It was a meat tournament with kingfish, wahoo, tuna and mahis as targeted species. September is best known as swordfish, wahoo, and mahis and not so much for kings and tunas. We went a day before and loaded up on bait, catching threadfin herring, sardines, goggle eyes, and cigar minnows. We were 4 livewells full of bait. Most of the boats opted to troll planers for wahoo which is pretty good this time of year. We had so much bait that I opted to put up the kites. We caught kingfish, a decent mahi, blackfin tunas, bonitos and 2 sailfish. Pretty good for just a few hours of fishing. We then went offshore and looked for mahis. Within 20 minutes we found a small school of decent mahis and caught half a dozen. For some reason I decided to run farther offshore and look for better fish. After running for over 30 minutes and starting to second guess my gut instincts, we found a
massive school of good size mahis. We hooked a couple of mahis and suddenly there was a big explosion on one of our hooked mahis. Everyone though it was a shark, but I knew it was a big blue marlin. From the tower I could see the marlin coming at us. I yelled for Billy to get our big game leader and snap it onto one of our heavier rods and hook a dead mahi from the cooler and toss it in the water. He did just that and I put the boat in gear to troll the dead mahi and within 15 feet of the transom the huge blue marlin simply inhales the dead mahi. It’s now game on as we have hooked a big blue marlin. The angler did an amazing job fighting the fish and soon we had the leader on an estimated 450-pound blue marlin. That’s a big blue for us here in South Florida. We quickly revived the marlin and let her loose. Catching blue marlin in Miami is not that common and to have one eat withing 15 feet of the boat was amazing. I may have been second guessing my decision to go offshore, but through the years I have learned to always trust your gut. It was an amazing day with great people. Our next trip was to Bimini to go wahoo fishing. I also run another boat – a 44ft Contender named Kimbuktu and that is the boat we went on. The owner was on board as well as Billy. Our goal was to go high speed trolling for wahoo for a couple day. That is
and unfortunately, Vern lost the only one he had hooked. About 11:00 am, the sharks became very active. Vern had one on that was very acrobatic behind the boat. Unfortunately, none of us were filming to get it. But we were all in awe of the show the shark put on for us. We decided to call it a day at that point, as the storms were approaching, and we grew tired of losing gear to the sharks. Before we headed in, Vern asked if he could throw his barracuda tube at the buoy, knowing there were some large ones. His first cast, he hooked up, but jumped off very quickly. He told us he usually only gets one, but he kept casting. He finally hooked up and had a great fight, and right at the boat, the fish went airborne. It was cool seeing a huge barracuda jump so close to the boat. That catch was a great way to end the day.
We made it back to the dock, unloaded the boat, and cleaned the fish before the storm moved in. Right as I started to clean all my gear, it started to rain, and just as I finished up, the skies opened up and gave us quite a light show. Standing there, soaked but smiling, I couldn’t help but feel blessed. Days like this, filled with good friends, laughter, and the thrill of the catch, remind me of the Lord and the joy of times spent together on the water.

a kind of fishing that I truly enjoy. We crossed over, clear Bahamian Customs and Immigration and then went fishing. The first day we went 6 for 8 on wahoo fishing from noon to 4 pm. The second day we ended up catching 8 more wahoos and now had a total of 14 for our trip (you are allowed up to 18 in the Bahamas). With enough fish to feed and army so we headed back the next day. Not only was the fishing good, but the size of the wahoos was very good. This early in the season you tend to get a lot of smaller fish in the 20-pound range. All the fish we caught were much bigger and averaged 35-45 pounds. Another great trip with great people. As I mentioned earlier, business is down a bit. We are taking advantage of the slower time by working on the boat. We just installed the newest SImrad electronics. We now have 2 new Simrad NSS 4 16inch displays down below and a new 12-inch Simrad NSS4 display on top. We also have the new Simrad Halo radar that we will be installing in the next few weeks. In the next few weeks, we will also have Aquatraction replacing our flooring so we will be quite ready for our sailfish season and beyond.

UNITED STATES COAST GUARD FLOTILLA 7-16 OFFERS SAFE BOATING CLASSES IN GULFPORT, FL, MEETS THE THIRD WEDNESDAY OF EACH MONTH. These classes qualify the attendee for the FWC Safe Boating Card. This card is required for most people born after January 1, 1988 to legally operate a power boat with greater than 10hp motor in Florida. The one-day class includes instruction on safety equipment, boat handling, rules of the road, navigation aids, communications, trailering, legal requirements and others. Power and sailboats are covered, as well as personal watercraft. Of course, besides making a boater in compliance, the main goal of the class is to create a safer boater. Flotilla 7-16 also performs free courtesy vessel safety inspections for power and sail boats, personal watercraft, and paddle craft. The inspector will come to your location, inspect the required safety features of your vessel, and if you pass will provide a safety sticker to mount on your vessel. But the vessel owner then knows of any deficiencies to correct before having an accident or being sanctioned by the Coast Guard. Despite numerous COVID-19 restrictions, more and more boaters are taking to the water to alleviate at-home boredom while taking advantage of the open-air benefits and more pandemic-free aspects of recreational boating. But if you haven’t been out boating in a while, are your vessel’s lights operating properly? Do you have a sufficient number of life jackets for the number of passengers aboard? Is your engine’s ventilation system up to par? To get you started on a new year boating adventure, now may be a perfect time to consider getting a 2022 Vessel Safety Check (VSC) offered by certified VSC examiners from the St. Lucie River Power Squadron, also known as America’s Boating Club of Martin County. These trained VSC examiners from the local squadron will point out safety features such as minimum requirements required by the U.S. Coast Guard, examine fundamental mechanical aspects of your vessel, and answer questions how you can have more fun safely on the water. These are just a few of the many discussion points covered in this voluntary examination. As an added plus, Vessel Safety Checks are free to boat owners. And if you don’t “pass muster” with the thorough examination, the summary report is yours and yours alone. BOATING CLASSES - A Vessel Safety Check is a complimentary check of your boat conducted by members of the Auxiliary, confirming that it meets both federal and state requirements for safety. No citations are issued, and the results of the safety check are not reported to any enforcement agency, but a decal is awarded to display when the vessel has passed the examination. The Vessel Safety Check (VSC) is performed at your boat, whether in a slip, at the launch ramp, or in your driveway, by a certified Vessel Examiner, at a mutually-convenient time. SARASOTA FLOTILLA 82 OF THE USCG AUXILIARY Florida law requires that any person born on or after Jan. 1, 1988, may not operate a vessel powered by a motor of 10 horsepower or greater unless such person has in his or her possession, aboard the vessel, photographic identification, a Florida boater safety identification card (or any other state’s boating card), and the registration for their vessel. Regarding the above law, which has been in effect for over a year, Flotilla 82 of the USCG Auxiliary, based in Sarasota, Florida (at Mote Marine) offers a 1-day course held on the last Saturday of each month. It starts at 9:00 am and completes at 5:00 pm. The course includes the USCG exam which, if passed, results in a Florida lifetime boating card/license. The cost for materials is $40 for the first member of a family and $10 each per additional family member. For more information, please call C. Have you been considering testing for your USCG Captains License, but keep putting it off because of time constraints? In just one three-day weekend, we will teach you everything you need to know to obtain this prestigious certification of Master Captain.

Student workbooks and study guides with sample test questions come standard along with plotting tools (dividers, plotting rulers, calculator, highlighter, pencils, erasers, and notepad). Students will also receive training charts, a USCG Light List reference guide and a Mariners School carry bag. Your tuition includes the exam fee and two additional retests if necessary.
If you cannot commit to taking the three, three-day weekends for the classroom course, we have an online course option available. You complete the course at home, or on the boat or where every you have internet access. You take a proctored exam with one of your instructors locally. No exam at the Coast Guard is ever necessary.

National Marine Institute
National Marine Institute’s prime mission is to provide marine science educational programs for children in South Florida. Established in 1996, this organization has educated hundreds of students through its FREE classes and educational field trips.
Classroom sessions consist of lectures, discussions, videos, and labs. The curriculum introduces oceanography, marine biology, conservation, and ecology, with a concentration on Florida’s coral reefs, mangrove hammocks, and the Everglades. Students experience airboat and canoe outings, beach cleanups, turtle walks, marine parks, science museums, nature centers, snorkeling, and other marine or educational locations.
Classes are modified for specific groups. Instructors work with Scout groups to earn Merit Badges, 4-H Clubs, Home Scholars, Marine Biology Clubs, public and private schools, Science Departments and others.
NMI does not receive any Federal or State funding and relies on private donors to support this program. Boat owners eliminate the expense and frustration of trying to sell their vessel, often receiving the same value in a combination of cash and tax deductions when they donate their vessel.
