Vivid in my mind is the memory of a sweetshop decked top-to-toe with jars filled with jewel-like hard candies, rogue sherbet wafting up my nose, the aroma of a conglomeration of candies.

On a low-medium heat, warm up your frying pan and add in the pancetta/bacon lardon bits (I personally like them really crispy and so I leave them for around 3-4 minutes by themselves.)

Also stir in the onion and carrot and leave cooking until they start to soften.

Next add the garlic and leave to cook for about 2 minutes – any longer and the garlic burns and goes bitter. After this time, add in your fresh tomatoes, again mixing it all together.

Add in a dash of salt and pepper for seasoning. As well as this add the tomato puree and mix everything well.

Turn your heat to a high medium, and add in the mince, cooking until it is brown. Ensure to keep mixing everything together each time a new ingredient is added.

If you were using a normal, shallow fry pan up to this stage, this is when you would need to transfer everything to a saucepan. If you were already using a deep fry pan, continue with that.

Once the mince has browned, stir in your passata – and canned tomatoes if you’re using them.

Keep the heat quite high until your liquid comes to a boil, then lower the heat to a low, and leave your sauce to simmer.

At this point you want to start boiling water in a pan for your spaghetti. Add a dash of salt to your water - it gives the pasta a better taste and also boils the water faster. Once the water is boiled add in your pasta, and cook for the set time on the packaging.

Turn the sauce mix back up to a medium heat and add in all the spices and give it a really good stir, mixing everything thoroughly. Lastly, add your milk to thicken, again stirring, and 1 1/2 Tbsp of the water from your pasta. Continue stirring occasionally until your pasta is cooked.

Once cooked, drain your pasta and place into your bowls. Spoon a generous helping of sauce on top. (I personally sprinkle a little basil and parmesan on top but this is optional.)

Past Fashion Trends Making A Reappearance

e’ve all been there; you point out something in a shop that you like, and your mum or dad says something like, “I had one of those when I was your age”. Fashion is ever-evolving and new trends are invented every season, but somehow there are always pieces that have either stood the test of time and have always been around, or there are trends that make their way back into mainstream fashion a few generations later. This month’s issue features many articles exploring the theme of time, and so I thought I would search through my wardrobe to see if I could find any items that might fit to certain decades.

1970s fashion is full of big prints, flares, and A-line cuts.

The colour scheme also tends to lean warm, featuring a mixture of reds, oranges and browns – with some pops of blue, usually in the form of denim. Thank the 70s for introducing high waisted anything – a favoured cut for most skirts and jeans these days. For jackets, think of shearling-lined brown suede coats or leather jackets.

And for shoes, what looks better with a mini skirt than over the knee boots?

In my own wardrobe, I don’t have many prints or bright colours but I did find this shirt with a red floral pattern, and a darker denim button up skirt in an A-line cut. The ditsy floral print is a great way to bring the era into an outfit without having to wear a bold pattern if that’s not your style, as the colour scheme still feels very 70s. If I had over-the-knee boots I would have worn them but alas I do not, so ankle boots are my way of bringing the outfit into this moment in time.

The fashion of the 80s can be hit and miss, you only need to glance at The Breakfast Club to see the eclectic mix of trends, but thankfully the pieces that have stayed around are the wearable ones. Think acid wash denim, or even the trend of wearing workout gear as everyday wear – we’ve all done it. Other trends of note are crop tops or off-the-shoulder tops and dresses, the bardot trend is huge right now. The 80s also brought the rise of the classic Adidas Superstar trainers and Ray Ban sunglasses.

If I discount the workout gear in my clothes collection, then my 80s options are narrowed significantly. The look I ended up with is a casual one that is Springtime appropriate. I paired my mom-style jeans with Adidas Superstars and this off-the-shoulder slouchy jumper in a blush pink tone. The colour is very ‘in’ right now, but that silhouette is a throwback to the 80s. With a light pink belt to match, this outfit is nice and bright while channelling the 80s style in a casual way.

It’s completely insane to think that the first generation iPhone came out a whole decade ago, but indeed, this time ten years ago people had only just been introduced to a piece of technology which would inspire so much change in the future.

The first iPhone was rather impressive (for its time!)-but it was also considered large! With a 3.5” display and width of 11.6mm, it was certainly chunky. Spec-wise, it had a screen resolution of a mere 320 x 480 pixels (think rubbish quality 480p video on YouTube), with a miserable pixel density of 165 pixels per inch, meaning the overall resolution of the screen was poor: if you were to take a screenshot from that phone and view it on a big screen, you’d see a lot of pixelation. Much like with its single rear-facing 2 megapixel camera-again with the pixelation!
