Do What You Love... BUT DON'T QUIT YOUR DAY JOB. By Michael Busch

A

s I turned 46 years old in 2012, I had never considered a career change or side business. I was a happily married father of three, and enjoyed my work as an independent financial advisor helping people plan for retirement or wealth transfer with life insurance. The only problem with the work was you had to be inside! Since an early age, I was always fascinated by everything about the Great South Bay. The weather, clouds, beaches, surf, and the fish and wildlife that called it home. My wife and I both grew up around boats and shared a love for the Great South Bay and Fire Island. We spent whatever time we could out on the water. I usually packed a point and shoot camera and snapped the sunset or some surf from time to time. That all changed in the Spring of 2012 when I finally picked up an entry level Nikon DSLR with a couple of lenses. One of my first shots with the camera was of a bald eagle. Suddenly I was hooked! Things got a lot more serious in late October when Superstorm Sandy rolled over Long Island, changing the beach landscape forever. I was able to capture some decent images and video, during and after the storm, around Bellport and also at Old Inlet where a new inlet was formed during the storm. It soon became clear to me that not only was the inlet beautiful, it opened up in the perfect location to help clean out the bay. I decided I would try to get the word out through my photography that the inlet should remain open and things kind of snowballed from there. I soon started a Facebook page and website, called Great South Bay Images, and started displaying my photography in local libraries, galleries, and MacArthur Airport. I also started printing and framing my work and am proud to have some of my photography displayed in homes and businesses around the country, including Geico Corporate HQ in San Diego and also some of my favorite restaurants. My photography has also been featured on The Weather Channel, Good Morning America, The New York Times, The Wall Street Journal, Fox News, Daily Mail, NBC, News 12 and USA Today. I am also a CBS 2 NY Weather Watcher with John Elliott and Lonnie Quinn, who feature my photos a few times a week.

I also branched into Aviation photography and ended up winning the Smithsonian Air and Space Photo Contest last year with one of my aviation images. While I enjoy shooting everything from Wildlife to New York City Nightscapes, my main focus continues to be the Great South Bay and Fire Island. I am also really excited about a new website I started last year called Fire Island and Beyond. It features some of the best photographers and marine scientists on Long Island with news, events, video, and photography from all over the Island. You might think that this all takes away from my day job, but the reality is if you love something you can make time for it. Most of my photo opportunities are at sunrise or sunset, and mobile technology lets me keep in contact with clients, whether I am tied to a desk or not. I have found that the same people interested in

a framed photo for their home or business have the same retirement and insurance needs as the rest of my clients. I have no idea how far my “side business” will take me, but I can honestly say it has changed my life in only positive ways. I have met great friends and brought on new clients that I would never have met otherwise. So my best advice would be to follow your passion and see where it leads… you may find a balance where you can do what you love without quitting your day job.

What is the line between vanity and self-preservation? Is it a thin one, and how do we know if we’ve crossed it? It’s a question worthy of both genders, but clearly, women grapple with it more than men. This too shall pass; they’re catching up to us. From all indications, we’re obsessed with both feeling and looking good. Baby Boomers, unlike their parents, view quality of life as mandatory, not optional, and they want to dress the part. They kicked limitations of age to the sidelines while wearing youthful game faces. Generation X and Millennials ran with it. America leads the race in cosmetics spending, but ranks 23rd worldwide in “satisfaction with life” polls. It’s no surprise that Sweden and the Netherlands spend the least on haircare, skincare, and makeup but have the best rankings in SWLI (Satisfaction With Life Index). They don’t strive to keep up with the Kardashians. That

said, meat keeps longer in cold temperatures. Insert smile. Still, an argument can be made for how looking good promotes feeling good. This works well for those who sell youth in a jar. But, what if we turn the tables and put feeling good in the driver’s seat? Despite a few bumps in the road, we arrive at looking good, or to be authentic, looking better. It’s a good thing. When digging into our pockets for quick fixes, would money be better spent on gym memberships that yield both feeling and looking good, or are we on the fast track to shortcuts? If all the anti-wrinkle creams and treatments live up to their promises, why are lines not so fine?

Conversely, there is something to be said for self-preservation. We don’t think twice about the upkeep of our houses and make repairs as needed within our economic framework. Shouldn’t the same apply to self-maintenance? Why is it that we’re comfortable posting before-and-after pictures of new kitchens on Facebook, but only confess to friends off-line that we’ve had a little work done? It’s amusing that the work done is always “a little”. It’s laughable when celebrities deny cosmetic intervention, even though we have their old movies on VHS. Cindy Crawford, Christie Brinkley and Victoria have secrets. They claim the age-defying answers are hidden in the products they sell. Blinded by the lights of soft focus cameras and expert makeup artists, we remain in the dark. It would serve us well to ask ourselves some hard questions: Is our quest for looking good in line with larger priorities? Will upgrading the exterior translate to the interior, or is it the other

way around? In essence, should we fix the roof first, or save face? The answers are personal. For those who avoid efforts to turn back the clock, buying into “beauty culture” means selling out. For others, staying in the vain-game means doing whatever it takes to remain a player. No judgment. So here’s the take-away: selflove means never having to say you’re sorry. However, for those of us who love cosmetics, we need to be at peace with our war paint.

Why We LOVE "The Industry" BY ANDREW TARTAGLIA

IN THE RESTAURANT WORLD, we tend to call our industry “The Industry”. Some of us have taken long, winding paths, to end up here in this fast paced, taxing business. For others, like my partners and I, it’s what we’ve been doing our whole lives. It’s what we know and love best. As anyone in The Industry will tell you, it’s not all glitz and glamor. Having recently made the leap of faith from bartenders, managers, and chefs to local business owners, we feel blessed to be a part of, and have the support of, such a wonderful South Shore community. As we go “once more unto the breach, dear friends” to bring our vision of Coastal Kitchen & Daiquiri Bar to Bay Shore, we look, as always, to each other and our fellow

industry friends for inspiration. Folks on the South Shore know well that “a rising tide lifts all ships”. With such great restaurant scenes evolving in our towns, and many more in the works, there is a fantastic camaraderie and determined will to create greatness for our guests. Creative competition is built into our friendships in The Industry, and it breeds the kind of excellence we all strive for. Be it the coolest cocktails, the best burger, optimal location, the hippest new local products, or, more importantly, ways to give back to the community. Our South Shore restaurants are here because they love the South Shore and hope to continue to share that love with you.

Anthony & Zach of Coastal Kitchen & Daiquiri Bar, Bay Shore One of the things we love most about opening a new restaurant is seeing the entire project take form. Starting a new business, especially a restaurant, is a tremendous endeavor. Right now we are in the building phase and we love to unlock our creative side and draw from our experiences as motivation. Being in The Industry has afforded us the opportunity to travel and work in some really cool places, and the coastal, warmer climate destinations have really captivated us. Not just the beaches, but the people, culture, architecture, style, and, of course, the food and drink! I am passionate about the whole “Coastal” lifestyle and attitude, and hope to bring some of our travel-inspired ideas back to our coast here in Bay Shore. Being a long time member of this community and watching it grow has been very inspiring. We hope to bring a unique experience to town with our take on globally inspired coastal cuisine, cocktails, and atmosphere (complete with pool, darts, and shuffleboard).

Daniel Kitson of Henley’s Village Tavern, Brightwaters I’ve been working in the restaurant industry since I was 16 years old. Over the years, I’ve been a bus boy, waiter, bartender, line cook, bar manager and general manager. I purchased my first bar/restaurant, Mighty Quinn’s Pub, in my mid 20’s. Later that year, I partnered with a long-time friend in purchasing Declan Quinn’s in Bay Shore. After selling Declan Quinn’s, I went to work for the Lessing’s Restaurant Group. Learning from a company that’s been successful in the hospitality business for 125 years was an amazing professional experience. Over the last few years, I started comprising ideas for my next restaurant venture. I understood that the town of Bay Shore was developing a great restaurant scene and I really wanted to be a part of the rejuvenation. Living minutes away from the beautiful village of Brightwaters, I would drive through the four corners daily and pass the Toddler House. I felt that the size was perfect for the concepts I

wanted to execute, and that the location and surrounding village would welcome the revitalization of the location. It took some time, but I was able to purchase the Toddler House and create Henley’s Village Tavern. The amount of positivity and support for Henley’s throughout this town has been unbelievably humbling and exciting. I have ambitious goals for Henley’s. With the help of my chef, we strive to create a fresh, seasonally driven, healthy-hearty menu by molding traditional concepts of tavern, bistro, gastro, fine dining and comfort styles. To me, the restaurant business is about growing, adapting, acquiring knowledge, and, most importantly, believing in yourself, your staff and your town.

Surviving in “The Industry” requires incredible drive, passion and patience, with an adventurous palette and sense of fearlessness. Through years of hard work, travel and research, you realize in the end it’s all about love. Love for the people, food, and community. Being able to share a vision with so many wonderful guests from our community and beyond is a true blessing. The gratitude we feel when Salt & Barrel is filled with smiling faces brings a sense of pure joy and success. To have built a platform based on creativity both in and out of the kitchen has allowed us to educate people in new flavors and combinations within a culinary tale. We find tremendous pleasure introducing Long Islanders to a variety of oysters and a creative culinary/cocktail experience. Isn’t it exciting that some of the most flavorful oysters on the market right now are from our own backyard? Sustainable and locally sourced keeps us mindful and supports local business. There is so much excitement in an industry that is forever changing and continues to grow rapidly, just like our hometown of Bay Shore. FURNITURE DIY

Furniture "Rehab" BY MARY DONNELLY

I love visiting thrift stores in search of treasures, hoping for those needle-in-a-haystack like rare finds. While browsing the West Babylon Salvation Army during a half-price sale, I stumbled upon an older solid wood credenza in excellent condition. It would have worked perfectly as a media cabinet for my den, but its style didn’t match my existing furniture. For just fifty bucks, how could I go wrong? On Pinterest, I learned about something called Chalk Paint, which was invented by British artist Annie Sloan. It’s a decorative paint engineered for ease of use by DIY dummies like me. This brand is sold in a few specialty boutiques on Long Island, including Suite Pieces, in Huntington Station and in Massapequa. Valspar also offers it’s own affordable “chalky finish” paint for purchase at Loews. First, I removed the cabinet doors and hinges, the drawers and the tarnished pulls. I lightly sanded the wood to remove the glossy finish. I then applied three coats of paint over the course of three days, sealed everything with a satin acrylic wax, and installed new brushed-nickel pulls that I purchased online. I replaced two drawers, opting to

replace the third with a custom cut wood shelf. For a grand total of $115 and some elbow grease, I managed to transform a thrift store credenza to a uniquely beautiful piece that I will treasure for years to come. It’s easy to begin your own furniture rehab project. Plenty of how-to videos and articles are available online, and Suite Pieces offers monthly DIY workshops in their shops. Be careful; it’s addicting! After receiving so many compliments on this project, I’ve since “rehabbed” an oval stand mirror and my kitchen cabinets. My next project is the biggest one yet: I will transform 1950s-era bedroom furniture once owned by my grandparents!

If that isn’t enough, laughter is like taking an internal jog; massaging interior organs while toning abdominals. In today’s world, we could all use, not just a few, but many more good laughs… That’s why we’re gearing up for a great night of hooting, howling, roaring laughter! Mondays at Racine Cancer Care Foundation is an in-salon + spa program located in Islip, NY, where every Monday we provide free beauty and wellness services to people living with cancer. These services lead to a marked improvement in their appearance and makes their self-confidence soar, which empowers a return to normal activities. Many are able to rejoin the workforce much sooner than without these services. Mondays at Racine has modeled this program for any Salon, Spa, or Yoga Studio to license. Since 2003, more than 6,000 cancer patients have received Monday at Racine’s complimentary wellness and beauty services. Thousands more have participated in their expert-led educational and charter programs. INTERESTED IN VOLUNTEERING? Blood Orange Margarita FROM VERDE KITCHEN & COCKTAILS

Blood oranges are usually only in season and of good quality in the winter. They are citrusy like an orange, with a unique, almost raspberry flavor to them. They're by far our most popular Margarita when we have them in stock, and pair very well with most of our foods, especially Peconic Bay Scallop Ceviche that we also use fresh blood orange juice in. Ingredients

Use a jigger to measure all ingredients. Build in a pint glass without ice, and then add ice after all ingredients are in. Securely top the pint glass with a shaker tin and shake vigorously for 10 seconds. Pour into a salt rimmed Margarita glass. Enjoy!

Spaghetti Alla Carbonara BY STEPHANIE RACANELLI

This winter, why not make something for dinner that makes coming home on a cold day more enjoyable? A perfect comfort dish to soothe your spirit is a pasta with a sauce of few ingredients; the authentic Italian preparation is silky and heavenly, bursting with satisfying flavor and texture. Ingredients • 2 tbsp unsalted butter • 4 tbsp extra-virgin olive oil • 8 oz (approx. 3 slices, ¼ inch thick) pancetta, sliced into thin strips (Boar’s Head brand sells a prepackaged, cubed pancetta that is good also) • ½ large yellow onion, chopped • ¾ cup dry white wine

• 2 whole eggs plus 2 egg yolks • 6 tbsp grated cheese (I prefer an equal mixture of Parmigiano-Reggiano and Pecorino-Romano) • 2 tbsp flat leaf parsley, chopped • ¼ tsp salt • ¼ to ½ tsp freshly ground pepper (your preference)

Directions 1. Bring a large (4 quart) pot of salted water to boil. 2. In a medium sized skillet, add the butter and olive oil and cook over medium-high heat until the butter is melted. Add the pancetta and cook until it just starts to brown. Add the onion and cook 2 minutes- adjust the heat so that the pancetta does not become crispy. When the onion is just turning translucent, add the white wine and simmer until the wine is reduced by half. Turn off the heat and set skillet to the side. 3. Begin cooking the spaghetti in your salted, boiling water.

4. In a large bowl (big enough to hold all of your pasta), gently beat the eggs and the egg yolks, the cheese, parsley, salt and pepper. 5. When the spaghetti is cooked al dente, place the skillet containing the pancetta mixture on high heat for a moment to heat through. 6. *Drain the spaghetti (reserving a cup or two of the pasta water) and immediately add it to the bowl of the beaten egg and cheese mixture. Gently toss until the spaghetti is completely coated with the egg and cheese mixture. Promptly add the contents of the skillet to the bowl of coated spaghetti and gently toss again. If you feel it is too thick, add some reserved pasta water until desired consistency. *These last steps must be done quickly as the pasta/pancetta mixture provides the heat which lightly cooks the eggs. 7.
