With the holidays approaching, I write this with a joyful heart in anticipation of celebrating once again with family and friends this year. While I did enjoy being home for the holidays last year, I must admit, I really am looking forward to shopping, decorating, baking…pretty much doing all-things-Christmas this year! That was the wonderful inspiration for this issue. You may feel the same way, so we hope you enjoy looking through our holiday issue…we really had so much fun putting this one together! One thought I would like to share with you because, most importantly, ‘tis the season for giving. As you get caught up in the hustle and bustle of the holidays, please be mindful that it is not always the most wonderful time of the year for everybody. A simple gesture may give someone a little much-needed joy. Please consider putting just one of these on your to-do list:

• Give your time; schedule time to take someone to a store or go shopping for them. • Leave a note or send a card to let someone know you are thinking of them. • Make a call to someone you know who may be feeling lonely or sad. • Drop off some treats, or a plate of dinner, and pay a visit to someone who may be alone for the holidays.

It may turn out to be the best gift you give this year. Remember to keep the joy of the season in your heart… the size of the box is not important; gifts of time and love are always the best presents beneath the tree.

With This Ring...

For centuries, diamonds have been symbolic for an everlasting love to be bound by marriage. The name “diamond” stems from the Greek word adamas, meaning unbreakable. Finding the perfect love usually leads to searching for the perfect diamond ring. The ‘General Rule’ when purchasing an engagement ring is to spend at least 2 month’s salary on the ring, a small price to pay for a lifetime commitment of love. There are so many options available today for creating and selecting gorgeous engagement rings…beginning with the type of diamond.

With so much buzz about “lab-grown” diamonds, and December being the most popular time for couples to get engaged, we spoke with husband and wife team Joseph & Tina Tavella, owners of Argyle Jewelers in Babylon Village, to get an expert’s perspective on labgrown vs. mined natural diamonds. “Originally I was very skeptical about lab-grown diamonds until I really looked into them and started comparing,” commented Joseph, “When I saw the first one, I was so impressed… I felt that this was going to be a great part of our future at Argyle Jewelers. Because they are so affordable, it gives customers more options for purchasing larger stones with better color and clarity for a lot less money.”

NATURAL VS. LAB-CREATED DIAMONDS Lab-created diamonds, also known as lab-grown or man-made, are real, manufactured diamonds that can be produced to order in any desired size. The difference between a lab-created and a natural diamond is its origin. Natural diamonds take billions of years to form down in the earth and are retrieved via mining operations. A lab-created diamond is “grown” over the course of several weeks inside a lab using cutting-edge technology that utilizes hightemperature carbon growing and compression procedures which replicate the natural diamond growing process. The result is a manmade diamond that is chemically, physically, and visually the same as one created beneath the earth’s surface. Lab-grown diamonds and natural diamonds of the same quality look the same, even to a trained eye. Traditional jewelers' tools, such as microscopes or loupes, cannot detect the difference between a lab-grown and a natural, mined diamond. Joseph confirmed, “For the most part, you cannot tell the difference between an earth-mined and lab-grown diamond. They both have imperfections and various colors and are graded exactly the same by IGI (International Gemological Institute) and GIA (Gemological Institute of America). To distinguish the 2 diamonds apart, they have a laser inscription indicating the lab-grown status.”

Lab-grown diamonds have all the same physical and chemical properties of a mined natural diamond. Diamonds grown in a lab are atomically identical to the ones born in the ground.

Natural diamonds are a rare and precious gift from Mother Nature. A finite resource, they require extensive mining to unearth and locate where she has hid them. For years, the dark side of mining these brilliant gemstones was concealed by the diamond industry; however, the industry has worked hard at making change and most natural diamonds are now certifiably produced in non-conflict regions. Yet, some may argue the danger to the miners and damage to the environment via the diamond mines is not worth the prize. Less miraculous than natural diamonds, perhaps, but labgrown diamonds offer great value from their environmentally and ethically conscious approach: they are much kinder to the earth, much less dangerous to workers, and sustainably sourced. Natural diamond mines will eventually become depleted. And yes, one last difference between natural and lab-grown diamonds worth mentioning is their price tag. Lab-grown diamonds are competitively priced, generally ranging about 30% - 60% less than natural diamonds; however this can vary depending on the size and shape of the diamond.

“In my personal experience, the savings on smaller diamonds is about 50%, and as you get into larger caliber stones the savings can be up to 75%,” stated Joseph. "Our number one seller is engagement ring center stones,” said Joseph, “but we do also sell a lot of high-end and customdesigned jewelry made with lab-grown diamonds. Over 50% of our business is special order work. With our new CAD technology there is nothing we cannot create…if you can visualize it, we can make it. Also popular are larger purchases like diamond stud earrings, tennis bracelets, diamond pendants, eternity bands, and large diamond hoop earrings, which all render the most value compared to earth-mined diamonds. We do offer upgrade options on lab-grown diamond purchases at Argyle Jewelers. These diamonds are brilliant…you really need to see them to believe it.” Keep in mind, natural and labcreated diamonds are not in competition with one another; one is not necessarily “better” than the other. Finding Gifts & Joy this Holiday Season Holiday shopping mania has always been driven by FOMO. This year, the fear of missing out is amplified to maximum levels due to the fear of running out from the supply-chain backlog. As a mom, I've survived all sorts of holidays where hot items have been in short supply, from Cabbage Patch dolls in the ‘80s to Nintento and the pull-string Woody and Buzz Lightyear action figures in the ‘90s. I vividly remember feeling the agony of defeat after spending days traversing Long Island, hitting one shopping mall after another in a desperate attempt to locate the toy of the year, which was always inevitably at the top of my kids’ Christmas lists. Ugh…just thinking about it makes me want to reach for my wine glass. Many parents I knew waited on long lines into the wee hours of the night at toy stores, or paid exorbitant prices for “The Toy” so to have the perfect present under the tree on Christmas morning. But I just didn’t have it in me to do that. Time and budgets still ruled, maybe even more so during the holidays. I always wrestled with this. What reason would I tell my kids as to why Santa didn’t get them what they really wanted? Especially my son, who had a very short list this particular year, the only present he really wanted was the Woody action figure from Toy Story, and it was nowhere to be found. I’d felt the joy of the holiday season becoming overshadowed by the stress of the gift shopping. Reality check set in. I knew I had to turn things around… which, in doing so, resulted in a priceless life lesson. In the midst of unsuccessful gift-shopping madness, I had a magic moment of clarity about a gift I could give to my child that was far more important than having “The Toy” under the tree; here was a wonderful opportunity to teach my child empathy.

So on this particular Christmas past, presents were piled under our brightly lit tree, and Santa’s cup of cocoa was empty with just a few cookie crumbs remaining on the plate put out for him. It was a Christmas morning like all the others my kids knew it to be. As usual, they snuck down to peek at the tree in hopes of a visit from old St. Nick, then bounded back up to our bedroom, dragging my husband and I out of bed to get the present party started. Now came the tricky part; kids want presents on Christmas, not explanations, so I had to get this right. When the unwrapping frenzy had finished, my son was clearly disappointed that his top-ofthe-list gift was absent. Before tears could start, I pointed out a festively decorated envelope propped up against Santa’s empty mug of cocoa. It had my son’s name on it beautifully written in gold. Inside the envelope was a letter written by Santa himself, explaining that it was an unusually busy year up at the North Pole because so many kids asked for the same toys. Despite the elves’ best efforts, they just plain ran out of time and the materials they needed to make his Woody action figure, one especially for him, and they hoped he would be understanding of their difficult situation. Since he was a very good boy that year, and they knew he would understand their predicament, his Woody doll would be delivered to him as soon as the elves had finished making a fresh batch, which would hopefully be by the first

snowfall. I will never forget the look on my son’s face and the excitement of receiving this special letter. Hands-down the best gift ever. Our Christmas Day went on to be very merry and bright; we all learned something valuable that year. Here’s the best part… Fast forward to late January: the stores are full of Woody action figures at a fraction of the price they were only weeks before. I picked one up and prayed for snow. A few days later, my prayers were answered. The wooden garden bench beside our front door was visible through our foyer windows. This morning, it sat

quietly on our front porch under a blanket of snow that had fallen overnight. Everything was covered in white as far as one could see through our glass front door…everything except Woody. I remember my son standing in our foyer, looking out at the snow, then suddenly seeing Woody sitting on the bench wearing his cowboy hat and boots…and a gold bow. He screamed with joy, “Mommy it’s my Woody doll!! HE’S HERE!!” He leapt outside to grab Woody and almost didn’t see that there was something else left for him. There, written in the snow on the porch, was another note: “To Michael, Thanks for waiting! - Santa”

Some shelves may be empty again this year; remember that the best gifts you can give (or receive!) are not always found beneath the tree. - JL

Enjoy the Holidays!

Just Don’t Give Up the Ship The holidays are all about family, friends and food. Spend as much time as you can enjoying all of them…but do try to keep a healthy balance. Indulging in rich foods and treats not usually on the everyday menu is a large part of what we love about the holidays. We look forward to Christmas Eve dinner and dessert all year long. And the parties…yes, holiday parties will be a thing again this year. It’s ok to skip your regular after-work workout and go out for a holiday Happy Hour. Don’t beat yourself up for missing a Spin class or two. That said, boycotting the gym until after New Year’s while overindulging on cheesecake and Christmas cookies is just not a good idea. Trying to get back into a routine is hard, especially if you are carrying around a few extra pounds from the holidays…maybe even dating back to Halloween (who doesn’t love Twix bars?) Permission granted to enjoy the holiday feasts, but take these suggestions with you:

Chocolate Snowball Cookies

These nut-free rich chocolate cookies are favorites’ of kids and adults alike. Try to save a few for Santa! IN GR ED IEN TS

• 1 cup unsalted butter, softened • ½ cup powdered sugar • ¼ cup unsweetened cocoa powder (Special Dark is recommended) • 1 ½ tsp. vanilla • 2 cups all-purpose flour

• ½ tsp. salt • ¾ cup mini-semi-sweet chocolate chips • Additional powdered sugar for rolling (about 1 – 1 ½ cups)

D IR EC TIO N S

1. Preheat oven to 350°. Line two cookie sheets with parchment paper. 2. Mix butter, ½ cup powdered sugar, cocoa, and vanilla with an electric mixer until fluffy. Add flour and salt and mix until the dough comes together. Stir in the chocolate chips. If dough is too soft, chill it until you can work it easily with your hands. 3. Scoop 1 tablespoon-sized balls of dough and place on prepared cookie sheet. 4. Bake cookies for 7-10 minutes until bottoms are just slightly brown and the tops are no longer glossy. Cool for 5-10 minutes, until you can handle them. Fill a small bowl with 1 cup powdered sugar and roll each cookie in the sugar until coated. Place on a rack to cool. Once cookies are cooled, you may want to re-roll them in more powdered sugar.

Stay consistent on days you can.

It’s likely your regularly scheduled workouts will get dropped, so try to be consistent when you can. This will not only help keep the keep extra pounds from creeping on, it’s a major stress reducer and will help clear your head. It’s also a good way to have some time for yourself away from all the crazy.

Be flexible.

Even a little exercise is better than none at all; try to squeeze in any activity when you can. If your regular routine gets interrupted, do something different. Try an exercise class that you don’t normally go to; pair a few minutes of cardio on a treadmill or bike with a few short sets of weights; or even take a brisk walk around your neighborhood. 20 – 30 minutes of movement will benefit both body and mind.

Eat clean between holiday get-togethers.

This applies to drinking as well…avoid alcohol and increase your water intake. Corinne Brown, Owner/Instructor of Fitness Incentive, Babylon Village agrees: "The holidays are a time of year when our healthy habits can often go off the rails. Partying and feasting often replace clean eating and exercising. It's important to remember that healthy and holidays are not mutually exclusive. You can enjoy the holidays while keeping up with your workout routines between the festivities, and by making the healthiest food choices possible. Health and happiness are all about balance, consistency, and commitment, never more so than when we find ourselves over-indulging in seasonal fun. You can enjoy the season AND stick with your exercise and diet. Come January, you'll be glad that you did!”

Red Velvet Krinkle Cookie

These chocolatey velvet cookies look festive and taste delicious. IN GR ED IEN TS

1/2 cup butter, softened 3/4 cup brown sugar 1/2 cup granulated sugar 2 eggs, room temperature 2 tsp. vanilla extract 2 tsp. red food coloring

• • • • •

2 cups all-purpose flour 1/3 cup cocoa powder 1 ½ tsp. baking powder 1/2 tsp. salt ¾ cup white chocolate chips

D IR EC TIO N S

1. Preheat the oven to 350°F and line a baking sheet with parchment paper. Set aside. 2. Cream the butter, brown sugar, and granulated sugar together in a large bowl until light and fluffy. Scrape down the bowl and add the eggs one at a time, beating between each addition. Add the vanilla and red food coloring, and mix well. 3. In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Add the dry ingredients to the wet and beat together until combined. Fold in white chocolate chips. 4. Fill one bowl with granulated sugar and one bowl with powdered sugar. Use a 1 tablespoon-sized spoon to scoop cookies out. Roll the balls first in the granulated sugar and then in the powdered sugar to completely coat the cookie balls. Place on the prepared cookie sheet an inch apart. Bake for 10 -12 minutes or until the cookies have puffed up and cracked, but are still a little gooey in the center. Allow to completely cool on wire rack.

Shortbread Cookies

These cookies are so easy to make and just melt in your mouth. Use festive cookie stamps to make them look as beautiful as they taste! IN GR ED IEN TS

• 1 cup (2 sticks) salted butter, softened • 3/4 cup granulated sugar • 2 tsp. vanilla extract

• 2 1/4 cups all-purpose flour • Decorative cookie stamps (optional)

D IR EC TIO N S

1. Pre-heat oven to 350 degrees. Line a baking sheet with parchment paper. 2. In a large bowl, combine the butter, sugar and vanilla. Using an electric mixer, whip for one minute, or until nice and fluffy. Slowly mix in the flour and stir until combined and the dough is smooth. 3. Using a medium cookie scoop (about 1 ½ tablespoons), scoop out the dough and roll into a ball. If using stamps, lightly flour the stamp. Then press down on the dough ball with the stamp until the dough is about 1/4″ thick. Gently pull the stamp away. Bake cookies for 10 - 12 minutes or until the bottoms are slightly golden. Be careful the tops or edges don’t brown. Let cool on the cookie sheet for a few minutes, then transfer to a cooling rack.

Pecan Pie Squares

These sweet & tasty bars are a fun twist on the traditional classic pecan pie. Chocolate can be added, which pairs wonderfully with the pecans. Give these a try…you may have a new family favorite for the holidays! ING RE DI E N TS

1 ½ cups flour ¼ cup brown sugar, packed ½ cup butter, softened 3 eggs, slightly beaten ½ cup sugar ¾ cup corn syrup 2 Tbsp. melted butter

• ½ tsp. salt • 1 tsp. vanilla • 1 ½ cup pecan halves, chopped • 2 cups semi-sweet chocolate chips (optional)

D IRECT I ON S

1. Preheat oven to 350 degrees. Grease a 9 x 13 pan. 2. Prepare crust: combine flour, brown sugar, and softened butter in a medium sized bowl and beat with an electric mixer until crumbly. Press evenly into bottom of prepared pan. Bake for 12-15 minutes. 3. While crust is baking, whisk together eggs, sugar, salt, vanilla, corn syrup, and melted butter in a medium sized bowl. Fold in pecans and chocolate chips if using them. 4. When crust is done baking, pour mixture over top of warm crust and bake for 25 - 30 minutes, or until filling is set. 5. Allow to cool completely on wire rack before cutting into squares.

Guidelines to help protect yourself from holiday fraud and shopping online. Experts say fraud attempts increase about 30% during the holiday season. Here are some tips for safe online shopping.

1. Closely monitor your debit/credit card transaction history It’s important to review your account regularly, but it’s critical during the holiday season when you are using your cards for more purchases than usual. Report unauthorized transactions or discrepancies in your account immediately to your bank or credit card company.

2. Do your holiday shopping with reputable retailers.

Stick with retailers you know and trust. Bookmark their sites to go there directly rather than clicking on offers in ads, emails, or text messages. That will help protect you from realistic looking fake stores designed to look just like the sites of trusted retailers.

3. Only shop on secure sites

If you're sticking with well-known retailers, their sites should be secure. But if you're shopping at smaller or independent shops, look for a little lock icon in the top left corner of your

browser bar when you're on the site. A secure site's URL should start with HTTPS and not HTTP. You might have to click on the URL to see the HTTPS. Secure sites use SSL (Secure Sockets Layer) encryption to keep data in transit hidden from hackers.

4. Learn to spot holiday shopping scams.

Common scams include advertising amazing "deals" and setting up fake online stores to collect credit card numbers and other personal info from unsuspecting shoppers. Stay away from offers and sales that seem too good to be true.

5. Safeguard store accounts with strong passwords.

Did you create an account, instead of checking out as a guest? Make sure to protect that account with a strong password so a hacker can't get into your account, steal your information, or make a purchase with your card. Keep in mind, it's also a good idea to decline to save

your card information on a retailer's site to keep yourself even safer.

6. Don't shop on public Wi-Fi.

It may sound nice to do your holiday shopping at a local coffee shop, but shopping online from your laptop, tablet, or phone while connected to public Wi-Fi can open the door to hackers. Public WiFi connections are often unencrypted and unsecured, leaving you vulnerable to a man-in-the-middle (MITM) attack that could allow a scammer to grab your name, address, credit card number, and other personal information.

7. Use digital wallets to pay.

Take advantage of the latest forms of encryption protection digital wallets provide for personal information. Use Apple Pay, PayPal, Venmo, or other digital wallets to purchase items whether you are buying in-store or online.

8. Banks don’t text

Your bank will never ask you for personal information by text or phone. Anyone who contacts you directly asking for personal information over the phone, via email, or social media is likely not authorized to do so. Avoid giving out personal information or clicking on links that claim to be sent from your bank or financial institution.

9. Set account alerts

Most financial institutions offer customizable transaction alerts via email or text, so you can be notified every time a transaction over a specific amount is made in your account. Setting alerts will give you peace of mind that no one else is shopping with your cards.

Blackberries make this fresh and citrusy, but not too sweet. The perfect cocktail to warm Santa after a long night’s ride. I N G R ED IEN TS :

• Frozen cranberries • Orange peel, julienned or thinly sliced • Fresh thyme

• 2 - 3 tsp. sugar • 3 – 4 fresh basil leaves • ½ fresh lime • 1/4 cup blackberries • (or 1 tbsp blackberry preserves) • 2 oz. bourbon whiskey • ice cubes • 2 oz. club soda

1. Place thyme in a cocktail shaker and bruise it gently using a spoon or muddler.

1. Into a cocktail shaker, combine sugar, basil leaves, lime, and blackberries. Muddle to break up the berries, basil, and lime, and to dissolve the sugar. Add bourbon.

2. Add ice, cranberry juice, orange juice, gin, and Grand Marnier. Shake well. 3. Fill 4 glasses with ice, pour in the cocktail, and garnish with frozen cranberries, orange peel and fresh thyme.

2. Add a generous amount of ice, shake to chill and combine. 3. Fill an old-fashioned glass with ice. Strain cocktail over ice, top off with club soda. Garnish with additional basil, berries, and lime if desired. Enjoy immediately.
