AN AT TITUDE OF GR ATITUDE

an Attitude of Gratitude by Patricia Thomas

I have come to the conclusion that winter is not my favorite season. Don’t get me wrong, but having four seasons makes you appreciate one of the seasons more than the other three. I enjoy spring and the “greening up” of the flora and fauna, being able to open the windows in the house and letting the fresh air in. Even the spring cleaning gets my mood up and the energy flowing, but my favorite season is summer. Summertime and the living is easy, as the old song goes. I feel so appreciative to live on an island, Long Island specifically, that is so close to New York City AND the Hamptons, Montauk and the North and South fork. Here in Bay Shore and Brightwaters, even more specifically, we have the Great South Bay and the ocean, the ferries to Fire Island and the railroad to Broadway shows. The summertime is the best time to enjoy it all! My son is home from college for the summer and I want to spend some quality time with him before he goes abroad to study psychology in Copenhagen for the fall semester. So we kicked off the Memorial Day weekend going to the Bay Shore parade and then had

a barbecue with family and friends. It was nice that we got together and enjoyed one another’s company and it did not cost a fortune. Everyone offered to bring something to the party, so it was a potluck fiesta! That way stress levels were low for all and everyone felt better about contributing to the event somehow. This summer I also bought one of those New York State park access passes (Empire Pass) for my car, so we can go to the beach whenever it is possible. The pass is also good to gain entry to any of the New York State parks, like Belmont State Park for a reunion picnic, or if you are planning on going camping at Hither Hills State Park in Montauk. After seven visits, you have more than paid for the pass.

Shh, do not tell them yet but I have a week planned on Fire Island as a family unit, at a friend’s rental house, so that we can relax, unwind and slow life down a little bit. (Renting a house on Fire Island was on my bucket list). Sometimes we really need to be with our loved ones with nothing planned but sunshine (hopefully) and togetherness. Spending quality time with your family does not mean you have to spend a lot of money this summer. Even crossing something off your bucket list can be affordable. Reach out to friends and relatives and spend the best summer ever here. I am so grateful I was able to do this for my family. Enjoy you summer and always have an attitude of gratitude!

H O W TO P R E PA R E

Ceviche BY STEPHANIE RACANELLI

This recipe is super fresh and delicious. I make it often in the summer months when the local fish is in season. Don't be afraid that no cooking is needed, the acid in the limes will "cook" the flesh, changing the color and texture. When it's done, the fish will be softer and opaque. Always remember to cut your ingredients uniformly and always use the freshest fish available.

Ingredients: • 6 small fluke filets (only the freshest fish will do) Cleaned and dried, cut into 1" chunks

• 3 tbsp finely diced red onion

• 2 plum tomatoes-seeded and diced

• 2 tsp kosher salt

• 2 green scallions, chopped finely • ½ english cucumber, seeded and ½" diced • ½ red and ½ yellow bell pepper, seeded and chopped.

Directions:

• 1/4 tsp chopped cilantro • The juice of 4 large limes • 2 tbsp extra virgin olive oil • 1 tbsp red wine vinegar

Combine all ingredients and gently mix. Let sit in the refrigerator for up to an hour, until the fish is softer and appears opaque. Gently mix again before serving and enjoy! Serve cold with chips of your choice.

SUN, SAND & SURF

SUMMER LIST Captree State Park in Babylon is a popular fishing destination with charter fleets & piers. Join in on a charter boat for full or half day fishing trips. All gear provided.

Long Island is a captivating place, but the summer brings out the best of it's true natural beauty. Here are a few destinations you should take the time to visit this season, with images taken by the talented Vicki Jauron of Babylon and Beyond Photography.

The Weeping Beech tree and Adirondack Chairs in this photograph is just one of the beautiful sights at Bayard cutting Arboretum in Great River. For those who delight in outdoor beauty make it a point to stroll the many woodland paths of either the Bayard Cutting Arboretum or the Planting Fields Arboretum in Oyster Bay. Visit them online at www.bayardcuttingarboretum.com and www.plantingfields.org

Long Island has some of the most beautiful lighthouses, including quite a few that welcome visitors to climb to the top to enjoy spectacular views of the Atlantic Ocean. Some are accessible via private tours and boat trips. Two are a must see this summer, the Montauk Lighthouse which was commissioned by George Washington in 1796 and the Fire Island Lighthouse which has the original 1858 Frensel lens on display. You can climb both of them to the top. The road in this photo is titled “Road to the Fire Island Light House", located on the Fire Island National Seashore just east of Robert Moses State Park.

Do you know of Gardiner County Park in West Bay Shore? It’s located about a half mile east of the Robert Moses Causeway and it’s a nature-oriented public park on the Great South Bay. A short walk down a narrow path from its entrance on Montauk Highway takes you to the water and this is what you see. It’s known for being extremely dog-friendly, with many on-leash trails, a doggie water fountain, and a waste station.

The preserves and parks on Long Island offer a variety of experiences from the always bustling Eisenhower Park with its many activities and free concerts to beach parks like Jones Beach, Robert Moses and Montauk. This photo by Vicki Jauron was taken in Belmont Lake State Park located in Babylon. Whether it’s biking, hiking, picnicking or sitting on an inviting bench to slow things down, take advantage of our wonderful parks we are fortunate enough to have.

Long Island beaches have beautiful, fine white sand that feels great on your feet. On long island beaches the sun literally rises and sets around you. While some Long Island beaches are just sun, sand and surf, many Long Island beaches have activities such as golf, softball, concerts, fishing, hiking and cycling. This image by photographer Vicki Jauron is titled “Man and his footsteps" and was taken at Robert Moses Beach. Beautiful lavender fields are to be found at Lavender by the Bay in East Marion, just east of Greenport on Long Island. Walk through the fields and pick your own lavender during peak seasons and take home some of the wonderful lavender products they sell.

Q&A

stock is always warm and fresh and soft. It never has a chance to sit out or get chewy. It is so fresh and tasty and will make any antipasto platter or caprese a mouthwatering delicacy! Another popular item that we make two to three times a day is our caponata. Made with chopped eggplant, it is an antipasto dish or a side to fish or meat. The sweet/ sour taste is a taste all its own and if you’ve not tried it, it’s a must!

with Frank of Frank & Marias

The List: Frank, tell me a little history about yourself. Frank: My brother Dom and I were born in Italy and moved to the United States in 1966. As teenagers the two of us worked in Italian Pork stores and learned the business. I became a butcher and Dom favored culinary. Many years later we gravitated back to our passion and decided to open an Italian Pork store in the south shore of Long Island in 2005. The List: How did you decide that Bay Shore would be your new location? Frank: I knew about Bay Shore’s rich past, how it was a mecca for shopping and a destination for beachgoers. The people had pride in their community and it grew to become a great town. It suffered a bit, as did many towns, but I had a premonition that it was making a comeback. When I drove through the town in 2005, I just knew that this was the right spot. That’s when I made the decision to move my store here. The List: What sets you apart from other Italian specialty markets? Frank: I have a great crew here at Frank and Maria’s. We have Dom, Giovanna, Jason, Samantha, Alda, Felix and Antonio. We put customer service at the top of our list and it shows. We treat all customers with the same friendliness and warmth. The atmosphere in the store is familiar and welcoming. We strive to make our customer’s feel important-because they are! We will custom order items from our importers, find certain cuts of meat

The List: Tell us about the amazing olive oil you carry Frank: Our olive oil imported directly from Caltabellotta in Agrigento region of Sicily. It is full of flavor and color and we sell it in special refillable bottles. When you bring our empty bottle for a refill, we take a dollar off the price.

for them, make them a special sandwich, or offer advice on any of our products. Professional and friendly service is our main priority. The List: Briefly list the types of products that you carry. Frank: We carry Italian and Sicilian specialty foods and grocery items. We sell prime cuts of meats, Italian style veal cutlets, beef, lamb, poultry, homemade braciole, imported olives and cheeses, top of the line cold cuts, fresh pasta and so many homemade specialtiestoo many to list! We deal directly with D’Artagnan, who supplies our chickens, duck, veal, and the occasional rabbit if requested by our customers. We also offer a variety of Italian cookies and breads. The List: Tell me about some of your most popular and delicious specialties. Frank: The first thing that I know for sure is wildly popular and delicious is our artisanal Sausage. We have

been making it the same way, with attention to detail, for 35 years. We make fresh chicken and pork sausage every single day. We also customize orders if our customers request a certain diet restriction or specific ingredient that they love. There is a 5 lb. minimum for custom orders, but its well worth it when you’re getting something made by hand to your specifications. Another artisan favorite are our specialty burgers. We grind fresh prime meat every day and make our hamburgers to order. We will create your custom burger as requested. For example, the “Loaded Burger” is made with bacon, red onion and cheddar cheese mixed in. Another favorite is the chicken, spinach and feta burger. You can ask for burgers made with Portobello mushrooms, zucchini and Swiss cheese in the mix too! This is a great item to make your backyard barbeque a notch above the rest! Anyone who has tried our fresh mozzarella will agree that it is the best! We make it every day, three to four times a day. That way, our

The List: I know you cater because I’ve enjoyed your prepared foods at parties and barbecues. Tell me about it. Frank: We do a great deal of catering. Our artisanal burgers are requested a lot and our most popular dishes are penne ala vodka, chicken francese and glazed walnut salad. Everything is made fresh to order. Our customized wrap platters are a hit when you are invited to someones house and bring them. The List: Any last words or motto? Frank: If you have your health, family and friends and good food together you‘ll have a wonderful life.

summer

FIT-TIPS

Beaches and are open, flowers are blooming, pools are uncovered...The 2015 summer season is now in session! With the season stretching a mere 3 months, best to get out and about while the days are long, warm and beautiful. So ditch the gym and sweat outside!

Whether you are a day tripper or fortunate enough to spend a significant amount of your summertime at a vacation home away from your primary residence, your fitness routine does not have to suffer. Take your workout on vacation with you but leave your gym bag at home! Opt for outside activities instead: 1. Pack a totally portable jump rope in your suitcase. You can achieve a formidable cardio workout in 30 minutes alternating 2 – 3 minutes of jumping rope with 1 – 2 minutes of push ups, squats, or lunges. 2. Run (or walk) on the beach. Remember to slather on the sunscreen and bring a water bottle (or two) with you. 3. Go for a power walk in the park. Many of our local state parks have wonderful trails for both walking and hiking. Grab a trail map and the bug spray before venturing out. 4. Take a long bike ride. No room in the family car for bikes? No problem. Many cycle shops will rent bikes for the whole family for

extended terms. Best to call ahead and reserve them if possible. Don’t forget helmets! 5. Swim! Any stroke you are comfortable with works; sidestroke, breaststroke, even doggie paddle for 15 – 20 minutes. Floating on the inflatable swan raft does not count. 6. Bodysurf and play in the waves! 7. Go dancing! So many venues offer dancing under the stars during the summer months. Check out the Beach Huts at Tanner Park, Cedar Beach and Venetian Shores for live music all summer long.

Rest assured, your gym will still be there waiting for you come September. The summer waits for no one, so sweat out and enjoy it because it will be gone before you know it! Michaela Connors is a fitness instructor at World Gym in Bay Shore and lives on the south shore with her husband and two boys.

Looking to rent a beach bungalow in one of Long Islands many seaside towns? Log on to VRBO.com to find the perfect summertime retreat that suits your family. Enjoy!

Written by Matthew Ambrosio As a regular gent who likes to look good and not over spend, I can appreciate “mom and pop” clothing shops that are not only well priced, carry stylish clothes but of course, are located here in my native land of Long Island’s south shore. I have a mantra, “fashion is only expensive if you have no taste.” I grow tired of individuals dropping designer names and tell you how much it cost without solicitation. Yes, it’s true money can buy many things, but it can’t buy taste. On to my point; whether you are independently wealthy or on a budget, you can save some cash and find attractive styles within local shops that have more character to offer than

Dry to Wet to Dry Perfect for a day where you feel amphibious. A muscle exposing tank and quick drying board shorts will prepare you for the wetness you so much enjoy on a day the sun is blazing. Don’t forget the floating sandals in case you get pushed in without notice.

department stores. I like to be smart with my money while I also like to look good, and this is how I do it. Remember, style is not about the clothes you wear, it’s about the attitude you carry. Long Island has several climate personalities. I am sure you will agree the two most popular for the summer are super hot days on the ocean, and cool summer evenings at a waterfront lounge. Based on my extensive knowledge of both and the demand for new clothes, I went shopping. After filling in the friendly shop owners on my planned activities, I was provided with attire that looked great and was appropriate for the occasions. Even better, it didn’t cost a lot.

Even on the hottest days, there can be a chill when partaking in local nightlife, especially bay or ocean side. Don’t wind up underdressed and uncomfortable for the night out. Lightweight cotton tops mimic a second skin that keeps you covered but not “covered.” Pair a dark top with classic white pants to give personal style a little more punch. Since you’re mostly covered and its summer, forget the closed shoes and keep it casual. Tip: Always call ahead and ask about the dress code. Open toed shoes for men are not always adequate. AVAILABLE AT: In2ition Mercantile, Montauk Hwy - Oakdale NAVY V-Neck Organic Cotton Tee $22 • White Carpenter Pants $25 Yellow Paper Bead Necklace $15

Guys, take the summer and make it yours. Explore new spots off the mainstream and pick up some attire that’s cool but not costly. Mom and pop stores take the time to carefully select the goods they carry, and believe it or not, after my experience, can compete with

larger retailers. I got personalized service and found a lot more I liked compared to prior shopping in bigger stores. Next time I need something to wear, I’ll walk across the street. Matthew Ambrosio, Stylist www.ambrostyle.com

MUST KNOW

GOOD READS

goodreads Summertime is about vacations and getting together with family and friends, but it’s also about relaxing. What better way to unwind than with a day at the beach, or pool reading a good book. Here’s our list of great summer reads. If you like your beach reads to be soapy, sassy, and packed with romance, then this recent release is a must-read. Beach Town tells the story of Greer Hennessy, a movie location scout who is at risk of losing her job unless she can find the perfect town to shoot the studio’s next big movie. When she finds a great location, she comes into conflict with the local mayor, who doesn’t want a Hollywood film crew invading his peaceful town. Packed with lots of steamy romance and tons of drama, this is the perfect book to read on a hot summer day. Have you been binge-watching episodes of the Wolf Hall TV series? Then it’s time to read the book that started it all. This award-winning book explores life at the court of Henry VIII, with lots of scandal and intrigue. The focus, refreshingly, is a little bit less Anne and Henry, and a bit more Thomas Cromwell. This historical novel is great for history buffs, but fans of TV shows like Scandal and The Tudors will also find a lot to like here.

Arguably one of the most hotly anticipated books coming out this summer, Mr. Mercedes re-introduces characters last seen in King’s novel Mr. Mercedes. While elements of this novel’s plot seem reminiscent of King’s earlier story Misery, voracious Stephen King fans are eager to get their hands on this thriller.

Fire Island National Seashore The general rule of thumb is that New York beaches are dog friendly during the off-season, but from May 1 to September 30, dogs are either prohibited or limited to certain hours. Many Fire Island beaches allow dogs between March 15 and Labor Day on the bayside beaches of Fire Island. Check before you plan your visit with your dog by calling the individual beaches.
