Also a Culinary Institute of America graduate, Bryan brings several years of experience at top catering and event facilities on Long Island, as well as notable restaurants in Montauk, including Navy Beach, Gurney’s and the Crow’s Nest. Bryan is excited to join the team and collaborate on innovative and delicious menu selections. IT’S SUMMERTIME AND THE LIVING IS EASY AND BREEZY. This season, I’m all about capturing every moment of summer. These gorgeous days have called me to come outside – and so I did. My backyard has replaced my indoor spaces for as long as the warm weather will allow. Morning coffee, alfresco dining, entertaining, even working all take place in various shady corners of my backyard. I love it. Arranging my yard for comfortable and extended outdoor living was definitely a silver lining from the pandemic. I am also very excited to have a “Summer Bucket List” again! For me, it is all about getting out and experiencing the best of this season from all over our island. In this issue we have great places for both day trips and extended getaways – no plane ticket required - and so many fabulous places to explore this time of year. Summertime means our island is alive with the sound of music, from street festivals to outdoor concerts beside the bay and beneath the stars….we’ve included a long list of local events on both land and sea to mark on your calendar. Keep our magazine around as your summer guide throughout the season! We spend a good amount of the year tucked away inside. Here’s to warm weather, sunny days and toes in the sand. Smile…it’s summer. The pop-up picnic trend is becoming more of a formal affair with elegant and stylish design elements and decor now setting the table for breezy, laid-back lounging. It’s a fun and unique way to celebrate a special occasion or date.

We love this fresh lemon shallot vinaigrette as a topping for oysters:

First, select the ideal location… the beach, a park or even in your backyard. Then pay special attention to the details…that’s where the magic happens. Choosing the right table is essential for your comfort; it must be low to accommodate floor seating. Use poufs and pillows for seats. Plates, glasses, flowers, linens and decorative items can really bring your theme to life…get creative and have some fun with this. Serve a variety of gourmet finger foods, sliced fruits, cheeses, and light bites. For a match made in heaven, pack a cooler with prosecco and fresh oysters on ice. Remember to bring an oyster knife and plenty of lemon wedges.

1. Open oysters with a shucking knife. Separate the tendons at the top and bottom of the shell. Retain all liquids in the shell.

Oysters on the Half Shell with Lemon Shallot Vinaigrette 12 oysters 2 shallots, minced 3 Tbsp. fresh lemon juice 1/8 tsp. salt 1 tsp. tabasco 2 Tbsp. canola oil

2. Whisk remaining ingredients together in a small bowl. Spoon 1 tsp. of vinaigrette over each oyster. Serve immediately.

DEAN'S SEAFOOD MARKET

Off the Hook: Dean’s Seafood Market Grand Reopening! This classic, old-school seafood market now offers a modern-day menu with new specialties from both sea & land, catering services, and a grocery section complete with specialty items such as homemade sauces and jams, seasonings and fry batters, as well as fresh produce Just south of Montauk Highway lies Dean’s Seafood Market, one of Bay Shore’s locally-loved spots for fresh seafood. With renovations underway since January, many locals and loyal fans were wondering what was going on behind Dean’s closed doors. We chatted with owner Dominic Panzica to get the inside scoop on what’s new. “It was always my plan to renovate and redesign the space from when I purchased Dean’s Seafood Market back in 2014. I first started working at the seafood market back when I was attending SUNY Maritime Academy, and eventually ended up managing the store. In 2014 I had the opportunity to buy the business from the Dean Family, knowing it needed to be updated at some point. And here we are. The main building was built around 1905, and the space where our market is was added on sometime around WWII. It needed remodeling. With the last two years being so crazy from the pandemic, it just seemed like the right time. This business has been a staple for the community for a long time. This renovation allowed me to create more seating, offer more items, better services and a great menu for our customers, and of course, as always, continue to serve them fresh selections of the best quality seafood.”

From the Galley Renovating the building provided the perfect opportunity for Dominic to update the menu. While the popular North East seafood classics are still in place, Dominic has added several new selections, modern takes on old favorites, which incorporate

fresh and innovative ingredients. “I lived off of all types of poke when I was stationed in Hawaii during my military service in the Marine Corps.,'” said Dominic. “Naturally, I had to add a Hawaiian Ahi Poke' Bowl to our menu, which I think will be a big hit, as will be our “Knuckle Sandwich” – a lobster roll served up “Dean’s Style.” Ours is prepared New England style: butter-based lobster salad that is doubled with Alaskan King Crab leg meat and served on butter-toasted brioche'. We never use soft shell “chicks” - lobsters which are empty and tough – or imitation seafood fillers, only the best fresh seafood. It’s a large sandwich and it will not be cheap…but it will be the best lobster roll you can find. We have a spicy Southern Shrimp Boil with jumbo peel and eat shrimp, fresh chunked and marinated Yellow Fin Tuna, a serious stackable smash-style burger, and rotating weekly specials that give me some freedom to play around in the kitchen. We even have a kids menu for the little ones who prefer non-seafood selections. For the colder months we shift towards comfort food, and offer a variety of weekly soup specials. Our Shrimp Jambalaya was very popular last year.”

Eat Inside, On Deck or Takeout No jacket required, this is where seafood lovers go for the food. Dean’s is south shoresummertime-casual, nautically rustic with a few tables inside. A leisurely lunch or dinner can also be enjoyed on their outdoor deck. In the mood for takeout? From single orders to intimate gatherings and big celebrations,

Dean’s seafood can be delivered right to your door…or ferry. “We have a full catering menu available and also provide some really terrific options for at-home or off-premises celebrations,” Dominic told us. “We now offer mobile raw bars, lobster bakes, and authentic backyard boils - crabs, shrimp, lobster and crawfish that can take your backyard parties and special events to another level! The raw bar service can be sized to fit the customer’s needs, be it a small party, or a larger occasion which our Raw Bar Trailer is perfect for. We come to your event, set up, serve, and clean up. We are also continuing our long time support of Fire Island residents with our daily delivery service to the ferries for residential orders.”

The Market Menu and prepared seafood selections aside, it’s the fresh raw market that Dean’s is best known for, and Dominic is most proud of. “Our specialty is the fresh seafood selections we offer at our market. You just can’t find good quality, fresh, raw seafood anymore. Most supermarkets offer a second-hand seafood counter full of frozen product that has been sitting for who knows how long. We get fresh fish delivered daily. We cut and clean everything we sell in-house. I want the best quality for my customers, and my own family. I love to cook, food is what makes a home. You can have a bad day, but when you come home to the smell of something delicious cooking, everything instantly feels better. “

Known for its pristine beaches, Ocean Beach is also home to numerous restaurants and a bustling little town. Looking to do something different for a mid-summer night out? Maguire’s is a great place for cocktails and a dinner date. It’s the best spot to watch the sunset over the bay while enjoying a really delicious dinner. Thursday is “Lobsterpalooza” Night - they offer a 3-course dinner with either a 1 ¼ lb. lobster or prime rib, soup and garden salad served with corn on the cob and a baked potato. THE SUNKEN FOREST

Sailors Haven Fire Island's Sunken Forest is a rare ecological community. This old growth forest has been designated by the New York Natural Heritage Program as being “globally rare,” meaning there are few remaining occurrences of this assemblage of plants throughout the world. Mostly dominated by American Holly, the oldest trees reaching up to 200 years old, other species that can be found in the forest are Sassafras, Black Gum, Shadbush, and Oak. There is a double dune system that protects the Sunken Forest, as well as gives it its name. This special forest is comprised of a rare assemblage of plants and is yours to explore. Ferries run May to October from Sayville to Sailors Haven. Throughout the year you may stroll along the boardwalk, although facilities (restrooms) and other services are not available when ferry service is not operating.

Robert Moses State Park field 5 is the public gateway to Fire Island. A ¾ mile nature trail begins at the eastern side of field 5’s parking lot and leads directly to the Fire Island Lighthouse. Expect to see deer along this beautiful walk through the dunes, which is easy on the feet as the trail is a boardwalk, not the soft sand our ocean beaches are famous for. Do wear comfortable walking shoes and never leave the boardwalk as there are ticks in the brush as well as wildlife nesting areas. Consider carrying a backpack with water & snacks, sunscreen, a towel or beach blanket, and flashlight for the walk back to the parking lot, just in case your planned half-day trip serendipitously becomes a full-day outing. Once at the lighthouse, take the 182 step tour of the tower. See the panoramic views of the ocean and bay, Fire Island, Long Island, and on a clear day, the New York City skyline. Check their website to see a full list of scheduled events happening at the lighthouse.

From the lighthouse, about a 1 mile walk east is Kismet, the first and westernmost town on Fire Island. A perfect destination for lunch, the Kismet Inn and Dive are popular bayside bar & grills, and there is also a deli and a pizza parlor in town.

“Rocket Fuel” Recipe from the legendary CJ’s Restaurant & Bar, Ocean Beach ING RE DI E N TS

2 parts Coco Lopez Cream of Coconut 2 parts 151 Rum 4 parts Dole Pineapple Juice 1 part Amaretto

D IRECT I ON S

1. Add the Coco Lopez, 151 Rum and pineapple juice to a blender with lots of ice. Blend until smooth and pour into a tall glass (or preferably a large plastic cup…it’s a safer vehicle for this beverage) and float the Amaretto on top. Garnish with a cherry if you’re feeling fancy. 2. Plan to be incapable of doing much the next day.

1 ½ oz. Spicy Pepper Tequila* (recipe below) ½ oz. fresh lime juice ½ oz. organic light Agave nectar 1 ¼ oz. fresh cucumber juice Lime, sliced into quarters Thin cucumber slices Fresh dehydrated cilantro and kosher or sea salt for rim (optional)

Infuse 2 bottles of 100% Blue Agave Tequila (we like Espolon or Partida) for 3 days using 1 sliced Jalapeno pepper, 1 sliced Habanero pepper, 1 sliced Serrano pepper, and 1 sliced and roasted Poblano pepper. Stir twice daily and taste. It will be much spicier when tasted compared to when mixed with other ingredients…don’t be afraid to let it get spicy, the cucumber juice will cool it off.

1. Rim glass: Dehydrate cilantro by spreading 2 handfuls of washed & dried cilantro (with stems removed) on a parchment-lined baking sheet. Bake at 250 degrees for about 30 mins. until crisp. Let cool for 10 mins. Add cilantro and about 3 Tbsp. kosher or sea salt to food processor and pulse until granular, not powdery. Pour mixture into a shallow bowl. Cut a notch in a lime slice and run it all around the top of a margarita glass. Dip the top of the glass into the cilantro/salt mixture. Set aside. 2. Combine all liquid ingredients in a pint sized mixing glass filled with ice. Shake well then pour into glass (over ice if preferred) rimmed with cilantro/salt mixture. Garnish with cucumber slice.

Dog-Friendly Parks and Adventures in the Great South Bay Area and Beyond From beaches to hiking trails and family-friendly activities, our little island has it all. Fortunately, you don’t have to leave your dog behind. Here are a few dog-friendly summertime hangouts: Argyle Lake Park, Montauk Hwy., Babylon Village Waste bags are available, as well as benches and shady trees. There is also a playground for the little two-legged family members. Belmont Lake State Park, Alicia Drive, N. Babylon Located off exit 38 of Southern State Pkwy., enjoy walking the loop around beautiful Belmont Lake, which measures about ¾ of a mile. Cherry Avenue Dog Park, Cherry Ave., Sayville This dog park has a separate section available for small pups (25 lbs. or less) and also for larger dogs. Gardiner County Park, Montauk Hwy., W. Bay Shore Scenic trails and the beach are available to four-legged friends for a healthy walk, a game of fetch, and dip in the GSB. Hawley’s Lake Dog Park, George Street, Babylon Village Small fenced open play space. Great small dog park. Heckscher State Park, Heckscher State Pkwy., East Islip Take Fido for an exhilarating power walk through undeveloped trails located just west of the park’s toll booths. Pirates Cove/McAllister Park, Harbor Hills, Port Jefferson Dogs must remained leashed, but this is a dog-friendly hidden gem. Trees, hills, water…this place is picture perfect. Sands Point Preserve, Middle Neck Rd., Sands Point This 216 acre preserve has everything including a beach, English style gardens, hiking trails and even a castle! Castle Gould, built in 1904, was modeled after Castle Kilkenny in Ireland. There is a dog park called Charlie’s Run in the foreground of the castle. You and your canine companion can have a little adventure walking the wooded trails past ponds and over stone bridges, while enjoying scenic views.

67 Steps Beach, Sound Rd., Greenport FYI - A Southold Town parking permit is needed to park in the adjacent parking lot. Situated on the North Fork in idyllic Greenport, it’s easy to see why 67 Steps Beach is loved by both dogs and their humans. Its stunning sunsets, giant boulders and crystal blue water are unlike anywhere else on the island. Once the sun sets, head into Greenport Village for some of the most dog friendly-dining. Claudios, Lucharitos and Little Creek Oyster Farm & Market are all great spots to share a meal with your dog. Waterdrinker Farm, Wading River Rd., Manorville A pet-friendly farm with barnyard animals and fun family activities. Their sunflower fields are in full bloom just as you are reading this! Bring your furry friend for a stroll through their sunflower festival, but don’t forget to bring a leash. After you’ve had your fill of flowers, swing by the dog-friendly Long Island Farm Brewery for a cold one! Winery Hop the North Fork Baiting Hollow Farm Vineyard, Palmer Vineyards, RGNY (formerly Martha Clara) and Croteaux Vineyards on the North Fork are all dogfriendly. Some of the wineries offer vineyard dog-walks and even allow dogs inside the tasting room. Even though your dog can’t help you decide which bottles to purchase, rest assured that your tasting experience will be a doggone delight. leader in the real estate industry, Ramsay Realtors has helped so many families in our community find a house that became a home. Drive through any of our south shore neighborhoods or Main Streets and you’re likely to see the Ramsay name over and over again in front of properties that are up for sale. Husband and wife team, Rick and Tammy Ramsay, owners of Ramsay Realtors, don’t take that lightly; they are very grateful to have earned that trust from the community, with three generations of their family having worked hard to gain it. Ramsay Realtors was established back in 1974 by Rick’s parents, Eric and Joyce Ramsay, who were partners both personally and professionally. Originally in the life insurance sector, Eric Ramsay was introduced to the world of real estate by Nicholas Racanelli, Sr., another familiar name in our community. Well-liked for his integrity and business acumen, Eric experienced success quickly and developed his real estate business executing land deals. He played an instrumental role in residential developments, including The Admiralty, Southwood Estates, Captree Landings, Pathey Gardens, Emerald Woods, Windcrest, Providence Park and Baywoods. Choosing to follow a different path, real estate was not on Rick Ramsay’s original agenda. A graduate of George Washington University, Rick initially had his sights on selling stocks on Wall Street, not houses off Main Street. However, the stock market crash of October, 1987, had Rick changing his path and turning towards real estate. He worked and learned under the guidance of his parents for nearly a decade. In 1997, Joyce suddenly passed, prompting him to step in as partner to his dad and assist with the everyday dealings of the business. Rick worked side by side with his dad until 2004, when Eric lost his battle with lung cancer. Rick took over the family business after his father’s passing. Married since 1995, Rick and Tammy first met on a blind date. They had an instant connection, fell in love and married soon

after. A graduate of Dowling College with a degree in business and education, Tammy worked part-time at the office with Rick, eventually stepping in full-time to help with the business after Rick’s dad passed. Eric was an exceptional mentor to Rick and Tammy, who continue his legacy today. With hard work and dedication, and in a loving tribute to Eric and Joyce, Rick and Tammy grew the company from an office of 12 agents to one of 53, now ranked 4th by the Long Island Board of Realtors for total volume in Suffolk County with over $485 million in sales since 2021. Ramsay Realtors is now one of the leading real estate offices specializing in luxury waterfront residential and commercial real estate listings, industrial properties, and rentals. Our south shore is a very special place; it is not just an area of expertise for Rick and Tammy, it is their home. It has been home to the Ramsay Family for over fifty years. The first-hand knowledge gained from living in an area for several decades is extremely valuable when offering guidance and assisting others in finding a home in the area. Real estate aside, the Ramsays are deeply rooted here, and their commitment to the community is evident from their philanthropy. What most people may not know is how generous and supportive the Ramsays are of their community. Their legacy is multigenerational and can be traced back to 1939 and Rick’s great grandfather, Frank Gulden, who served on the Southside

Hospital Board as its chairman for decades. The Gulden Pavilion, which is home to Southside Hospital’s radiation oncology program, is named for him. Fast forward to present times, working together, the Ramsay Family has raised over $100,000 in support of Charlie’s Champions Foundation for children with leukemia at Winthrop Hospital. They are also longtime supporters of Northwell Hospital (and 2x past honorees), Good Samaritan Hospital, Bay Shore Schools, Bay Shore Fire Department, Bay Shore/Brightwaters Little League, Just for the Kids Foundation, The Morgan Center, Hospice Care, Maggie Fischer Great South Bay Swim, Sounds of Silence Run…and the list goes on. In addition, Rick has been a board member the Great South Bay YMCA, and also President of Oconee Board in Brightwaters. It’s impressive how much they give, and heartwarming that they are happy to do so. Bravo. When not in the office, Rick spends most of his free time with his boys. When they were younger, Rick never missed a game, be it on the baseball field, lacrosse field or tennis courts. He coached little league for eight years and was always an encouraging voice on the tennis courts. Growing the family business was a full team effort, but always took a back seat to raising their three sons. Today, Jack, 19, plays Division 1 lacrosse at Sacred Heart University, and Rick & Tammy continue to attend the majority of his games. Matthew, 22, is currently pursuing a degree in business at Farmingdale State College. Eric, 25, joined the family business in 2019 after graduating from the University of South Carolina with degrees in both finance and real estate. After only two years in the business, Eric was voted one of Long Island’s Board of Realtors Top 20 Agents Under 40. Both Eric and Matthew are NYS Licensed real estate agents, and Jack is currently in the process of acquiring his real estate license as well. When the family is not visiting Jack and cheering on his games, they spend much of their time golfing, boating, and just enjoying hanging around their home with family and friends.
