W

hen Wild By Nature approached me about being on our front cover I was thrilled. My mantra of “live well, eat well, be well” is perfectly in sync with their mission, and seems to be what we all are striving for. Making an effort to eat healthier has become a main goal for many of us. Turn the page and keep reading, Mary tells their story and I think you will agree there is something at Wild By Nature that has your name on it.

I hope you are taking advantage of all the new delicious produce we have available during the fall harvest. The main reason for local, seasonal produce tasting good is that it’s grown in optimum conditions and it’s fresher because it reaches you sooner after being harvested. You may want to try one of the quick and easy seasonal recipes we share towards the back of the mag.

We are now settling into our routines after a rather fast but playful summer. I do hope that each of you really enjoyed it to the fullest. Although the beginning of fall can be harried at first, especially with the kids returning to school, it feels good to have a little more order.

As the days grow shorter and cooler, our lives transition back indoors, and our focus shifts to the interior of our home. Our instincts tell us it’s time to create a warm and cozy nest to weather out the fall and winter months. We share some great ideas for cozying up your home on our fall décor inspiration page from three talented ladies I met on Instagram.

For those of you who love the Rich Mahogany band, we get up close and personal with the band.

I am sure you would enjoy reading this article of the friendship of these local musicians and how it all began.

We are delighted to welcome our wise and very funny, dear friend Annie Niland whose column Raging Gracefully has kept her readership chuckling while providing astute social commentary. Annie’s fans will be thrilled to know they can continue to enjoy her writing in every issue here at the LIST. Also, Millie D. Yorkie, aka Dr. Mil, has found new digs at the List for her ever-popular column, Dogma. Dr. Mil’s sage advice to canine cuties and snarky sense of humor has catapulted her into celebrity status here on the South Shore!

I must make mention of October being Breast Cancer Awareness month. Cancer is, unfortunately, a disease that touches us all. It is important for not only all of us to band together and raise money to end this disease but also important to show our loved ones support as they go through this difficult time. Our local organizations, businesses and residents do such a wonderful job uniting together. Mondays at Racine is having their annual Long Island Beauty Ball for cancer at the end of this month. This showcase event will feature the health, wellness and beauty industries coming together and like-minded individuals and organizations looking to support the lives of those living with cancer.

May I finish by saying let’s look at the small things in life to make us happy, live in the moment and Eat Well, Live well, Be well.

BY MARY DONNELLY With so much emphasis on “eating clean” these days, people drive miles away from their home town to shop for hard-to-find products carried only by specialty stores. Good news…there’s no need to travel anymore! Wild By Nature, right here in our own neighborhood, offers a complete selection of fresh, natural and organic products. Locally owned and operated, Wild By Nature is a full-service marketplace providing a huge selection of wholesome products without forcing you to buy in bulk or pay premium prices. Like me, the store is a Long Island native that has a discerning eye for quality and values the concept of “buy local.”

Since opening in the summer of 2014, Wild By Nature is an inherently local marketplace that, despite its growth in recent years, remains focused on the needs of its neighborhood shoppers. In speaking with the management team here in West Islip, I’ve learned that each of Wild

By Nature’s five stores on Long Island has the autonomy to stock their shelves with products that are popular with their local clientele, and they love to honor special requests! Store manager Joe Scilla, who is as friendly as he is helpful, and his team prides themselves in giving their customers one-to-one attention that’s lacking in similar markets of its size. Because people know Wild By Nature by reputation: a full-size market that offers a variety of healthy, store baked breads, fresh local produce and grass-fed meats (as well as a huge variety of vegetarian and Vegan-friendly items), new customers will occasionally wander into the store to conduct on-site research about healthy, clean eating.

According to Michael Infantolino, Vice President and General Manager of Wild By Nature Markets, many firsttime customers visit the store on the recommendation

of friends and neighbors. As more and more people are diagnosed with nut allergies, dairy-sensitivities, and Celiac disease, Michael made mention that the market’s staff will always take the time to make sure a customer is well-informed when making purchases. This is vitally important when allergies are a mitigating factor. “Oftentimes we have people come in with lists from their doctors,” added Joe. “We’ll walk around the store with them and show them their options to help them make the best decision of what to buy.” There’s also a whole section devoted to shopping for cleaning products free from pollutants and harsh chemicals. If your lifestyle or nutritional needs demand specialty products, you’ll be happy to discover that Wild By Nature stocks the products and brands within the entirety of its four walls that some other local supermarkets segregate into one “health food” aisle. As part of their dedication to supporting a healthy lifestyle and developing relationships with their local communities, Wild By Nature regularly hosts onsite wellness seminars on topics such as arthritis, meditation, nutrition, and even staying fit as you age. Upcoming seminars and events are posted on their website.

I’ll be honest; I haven’t given up on my favorite healthy “mom and pop” shops in our local villages, but I do find that Wild By Nature has so much more to offer. In addition to filling the aisles with a large variety of hand-picked products for the health-conscious consumer, a vast majority of ready-to-eat meals are prepared daily by an on-site chef.

I love the option to buy locally grown produce, and the fresh flowers always brighten my home for days. An in-house bakery offers various breads, special-occasion cakes and sweet treats, many of which are

Vegan or gluten-free. I also must throw in a shameless plug for the house-made Italian-style cookies. They melt in your mouth like no others I’ve purchased locally, and I like to consider myself a cookie aficionado.

This year I enjoyed a long beautiful summer filled with barbecues, weddings, and vacations. Come September, all of this celebrating had me feeling a little lighter in the wallet and just the opposite everywhere else! Because I had allowed some unhealthy habits to get the best of me, I’m working on getting back into a salubrious state of clean eating.

Resolving to cook fresh “clean” meals when I come home after a long day at work proves challenging. In the past, it was easy enough for me to eat at a restaurant or grab take-out, but the convenience of doing so also comes with a price. Not only is it difficult to monitor intake of fat, calories, and other nasties in restaurant-prepared food, the level of sodium I was ingesting left me feeling even more beat up at the end of the day. My friend, who is a working mother of two, faced an additional challenge of coming home to hungry miniature athletes in need of something fast and nutritious. We both decided to check out what Wild

By Nature is offering this season insofar as prepared meals “To Go.” We visited the store on an early weekday evening and were delighted to see that there was still an abundant selection. The deli features made-to-order wok and udon specialties, fresh juices, and store made salads that can be enjoyed in house at their cozy café-like seating area. If you’re hungry but not quite sure what you’re in the mood for, a plethora of options exist among the goodies in the cold case: chefstyled sushi rolls, generously-filled sandwiches and wraps, green and specialty salads. If the weather’s agreeable and you’re in the mood to heat up the grill, a nice selection of butcher-quality steaks, organic freerange chicken breasts and fresh fish fillets are available to take home

and pair with one of several available side items, such as butternut squash or garlic mashed-potatoes. Their mouth-watering rotisserie chicken is always a good bet as a hot entrée.

Feeding a big crowd this holiday season? Wild By Nature caters as well.

I made the mistake of going hungry. Not only did I leave with a delicious crock of “Chicken-Pot Pie” soup, but I also took home some breaded chicken cutlets, fresh organic baby spinach and mixed greens, and the highlight of my selection: some of the best eggplant parmesan I’ve had outside of my Aunt Margie’s kitchen.

My friend made her selections based on what she knew her kids would eat and what she wanted for herself, and since each package has enough food for two servings, she was able to buy something to satisfy everyone’s tastes without having to spend too much or have too much left over. The turkey meatloaf and “homemade” mac and cheese was a big hit with the hungry athletes.

Here’s the cherry on top: all of the ingredients of each of these products were clearly labeled on the packaging with information about allergens clearly delineated. My soup was gluten-free, and the nutritional information was even listed so I could enter the calories into MyFitnessPal. The customer-focused leadership that responds to the preferences of their local clientele makes this one of the best grocery shopping options around. A visit to Wild By Nature is a pleasant alternative to succumbing to unhealthy take out, and it’s also a surprisingly affordable natural foods market. Whether you’re shopping to stock your household with clean and natural specialty products, or if you’re shopping for the holidays, for the week, or just for today’s lunch, Wild By Nature is a onestop-shopping destination that has it all.

by Meeghan “The design of this tablescape focuses around linen and antique copper, along with apples and white and green accents. I wanted to keep my place settings simple for this tablescape to convey the feeling of our home which is casual, comfortable and rustic.

I draped the table with my natural flax linen tablecloth and used my plain white dishes in this setting, nothing fancy. Each setting started with my antique copper chargers and then I placed a wood charger on top. The two chargers together added a beautiful layered and rustic feel. Between my dinner and salad plates, I placed linen and lace napkins. Each place setting then got an apple, which I cored out to fit a tea light. Next to the ‘apple candles’ I placed a eucalyptus leaf. Not only did these place setting decorations compliment the centerpieces and add beauty to each setting, but they also were incredibly aromatic. I smell fall, y’all!"

Rich Mahogany Band

By Rachel Margaritis There's a certain magic to the idea of being in a band that makes musicians and music lovers of us all. What is it that tempts a group of kids out of sports and into their garages to perform for an audience of a few friends? What is it that holds us captive to that one, special song decades after we first hear it? This love of music is drawing crowds in record numbers year after year to see a small cover band from the Great South Bay area perform hits by the greats, and it's worth taking note of.

Rich Mahogany, made up of Greg Rabin on vocals and percussion, Michael Dickson on drums and vocals, Reed Hendricks and Pete Kletchka on guitars, and Kevin Dunn on Bass, is a GSB-based band that formed purely for kicks and a jam session at Rabin's brother's 40th birthday party eleven years ago. Though all had played music in some capacity through the years beforehand, none had done so formally together. Says Kletchka, Greg Rabin and bass player Kevin Dunn had never even been in a band. Rich Mahogany has phased members in and out at times, but currently includes additional members George McRedmond on bass, Rich Krabak on keys, and Tim O'Connor on guitar. Three of the original members are still a part, and all are from the town of Bay Shore.

The group practiced together and performed at the birthday party to rave reviews. "We started getting requests to play private parties and venues, and it grew from there," said Kletchka. In the time since that first party, the band has grown, as has its rapport and relationship with the South Shore. From those private parties, venues and festivals, the band's presence was requested by more and more fans until it became necessary for them to declare an annual "break" period just to have time off.

The band performs set lists including everything from the Golden Oldies to classic rock hits and Top 40 pop songs, noting they are a cover band, but not a "copy band."

"There's a difference! We make every song ours. We're not concerned with hitting every note exactly right, as long as we do our best and we're having fun and the crowd is having a great time. We do practice together at least 38 weeks out of the year. It's fun to be good,

but great is an epic feeling," says Kletchka.

Rich Mahogany's greatness is recognized by fans all over New England and has reached the level of fandom some original bands could only hope for. Fans plan their summer vacations around the dates of Rich Mahogany performances and show up in the hundreds for the band's annual show at Atlantique on Fire Island.

The togetherness and dedication of the band's members, along with their professionalism, friendship, and fun have kept them together for over a decade. "I am so ridiculously blessed to be playing with these guys. We're just solid guys with busy personal lives who get to blow off steam with like-minded, awesome people playing rock' n 'roll," says Kletchka. "There is more than one hundred years of music between us all, and I've only been playing for a few years," adds Rabin. Their varying musical resumes include record contracts, professional performing acts and even amateurs, but the band's connection runs deeper than personal achievements. "The people from Bay Shore that we grew up with, those people consider our shows a twenty year wide

reunion. People thank us for bringing everybody together from before and after us. It raises the hair on my arm to think about it."

Of the live music scene on Long Island, Kletchka says "decent acts can work as much as they like, but regardless of their talent and love of one another, it's the fans that make the Rich Mahogany experience what it is. This band is blessed in that we have incredible fans who take the time, make the effort, and spend the money to come see us. We are always amazed and humbled by that." The band collectively doesn't believe the scene has changed dramatically, and that the live music scene is thriving. As the band looks ahead, they are receiving more and more requests to perform outside of Long Island.

Rich Mahogany has even been booked for a wedding in California, and it doesn't appear they'll be slowing down anytime soon. Says the band,” it's the fans’ response that makes all of the work and effort worth it.”

"We're very interactive with our crowd and each other. We're there to entertain you!

People are there for that. We recognize that, and love it, that this is our job. We entertain you before you go back to reality and it's an escape for us too," says Kletchka. "These guys make me laugh. It's a good group of friends and we get together and have a lot of fun. We all have a lot of stuff going on, but we each understand each other and the commitment involved," adds O'Connor. For a band that loves each other, their fans, and the music as much as they do, he adds that Rich Mahogany won't be leaving the Long Island scene anytime soon. "There's a lot of work that goes into this band, but we'll keep playing until it starts to actually feel like work."

She starting writing her column, Raging Gracefully because she’s committed to the idea that regardless of how old one becomes, raging as opposed to simply aging is the new paradigm for stalling Father Time. My mother had an awesome backhand. She didn’t play tennis, but her serve was powerful. Criticism and cutting comments, which she thought were funny, were woven into tight little balls and she lobbed them with speed and accuracy. Too often I felt more like an opponent and less like a daughter. I did my best to stay a moving target and bubble wrap my tender skin when barbs came my way, but I was always in her cross hairs. First born meant first on the firing line. As I grew older I understood that she had no filter. People who weren’t her children thought she was hilarious, so I laughed when they did, but not as hard. In the end she was generous. She left me a treasure chest of comedic material. Thanks Mom. Miss you. Sort of. Only kidding.

Now let's get funny.

So, courtesy of Margarete I actually look forward to backhanded compliments and well-meaning, but thinly veiled, criticisms because they are humorous writing prompts. My favorite one is “You look tired”.

Yep, after a wrestling with night sweats and its evil twin insomnia, there is nothing more giggle-worthy than to be reminded that fatigue tap danced across my face.

“Betty” aka “Soo-Jung” at my favorite nail salon has mastered gel manicures but is still working hard on her English. When she tugged on my hand and stated with Korean conviction, “Roo-ah tied!” I annoyed her and the rest of the staff by asking, “What?” too many times.

She tugged a bit harder on my arm and pumped her pointer finger towards my eyes. Finally, I had my “ah ha” moment. With my tongue in my cheek I quipped, “No, I’m not tired, just really, really old.” The rapid nodding of her head suggested enthusiastic agreement which appealed to my inner comedian. So for me, insults are the new funny. So, go ahead…make my day!

Putting Down the Cell Phone,

Can You?

A few years ago, I attended a concert at the cozy and compact Williamsburg Music Hall in Brooklyn. It’s a perfect venue for fans to get an up-close glimpse of their favorite band.

As the lights came up on the stage, the ambient glow of Smart Phone screens in the crowd illuminated the darkened theatre. As several concertgoers hit the “record” button to film the first song, the lead singer immediately scolded the crowd.

“Why can’t all of you put your (expletive) phones down and enjoy this moment we’re having together.”

It wasn’t as much as a fan-shaming tirade as it was a teachable moment. He went on to express frustration about how society has become addicted to cellular devices, equating it to drug addiction.

“Life exists without you having to photograph it or film it,” he continued.

What an epiphany! I’ve absolutely been guilty of watching cool things happen through the 2x4” screen of my cell phone, missing those moments in real life. We all are, and for some odd reason, it’s because we often feel the need to capture these moments on video to post to social media later. For what reason? To see how many “likes” and comments we can collect?

According to the Pew Research Center, more than three quarters of adults in each generation own Smart Phones, and “Smart” they are, in a sense, in that they are convenient, constantly-connected personal assistants that help us navigate

life more efficiently. Yes, I love the fact that I can shop for dog food and coordinate Prime two-day delivery while waiting for a train, but most of my screen time is honestly wasted scrolling through Facebook and Instagram.

Have you ever heard of the acronym FOMO (Fear of Missing Out)? It’s defined by the Oxford English Dictionary as “anxiety that an exciting or interesting event may currently be happening elsewhere, often aroused by posts seen on social media.”

I’m guessing it’s this phenomenon that causes the average adult to spend up to two hours a day on sites such as YouTube, Facebook, Instagram and Twitter. Oddly enough, it’s not just Millenials that are guilty of this behavior. Many of us Gen-Xers and even some Boomers have fallen prey to the pleasure of socializing in the most anti-social way.

The truth is that adults are four times more likely to spend time engaging in social media versus actual inter-personal socializing. We’ve become so addicted to social media that we’ve started doing stupid things with it, like photographing our food. It’s far more likely that those who see a photo of your delicious steak will be sad that they weren’t invited to dine with you than impressed with the cuisine.

Perhaps it’s not too ironic that overuse of social media leaves some feeling profoundly isolated.

The real danger, however, is with our kids. Children entering 8th grade this year were born the year that Facebook

launched. It’s also quite likely that pivotal moments of their lives have been documented on the Internet. While many of us defend our use of social media as purposeful or a necessary means to stay in touch with friends and family across the miles, the truth is that we sometimes share a little too much in that effort to keep in touch. Did you post a picture of your child on the first day of school to post to social media? Did you include your child’s age, teacher’s name, and present career ambitions? Did you do so without fear or awareness that even on a seemingly friends-only Facebook page, potential predators can still easily access this information?

Have we lost sight of safety and common sense for the sake of social media “likes” and comments?

We have a choice. We can shrug our shoulders and accept that technology and social media has irrevocably changed our way of life, or we can recognize the faults in this behavior and make a conscious effort to appropriately disconnect.

Put the phone down. Enjoy live music without filming the show. Resist the urge to photograph your dinner. Log out of Facebook and Instagram for a day or two, and use your mobile device to call someone rather than to text them.

People move, parents age, and children grow up faster than we can imagine. Let’s not miss any more of it because we’re worried about forging superficial “virtual” connections.

Mammograms AND THE IMPORTANCE OF EARLY DETECTION Nina S. Vincoff MD

Most women know that October is Breast Cancer Awareness Month. But unfortunately, many women are still confused by the conflicting messages they hear about mammography and breast cancer screening tests. Approximately 1 in 8 women will develop breast cancer during their lifetime. Great progress has been made in treatment, but early detection remains critical to reducing breast cancer mortality.

The most important thing for women to know is that having yearly mammograms is the best way to detect breast cancer at the earliest possible stage. The data from multiple research studies has shown that the greatest reduction in breast cancer mortality occurs when screening mammography begins at age 40. There is no other test available today which is more effective at reducing breast cancer deaths than mammography.

A screening mammogram typically consists of two views of each breast, and takes approximately 10 minutes. The radiologist who reviews the mammogram may request additional views to help interpret the study.

It is important for women to understand that being asked to return for additional testing does not necessarily mean there is a suspicious finding. Additional imaging is needed in about 10 percent of cases. Most of the time, the extra views will confirm that the mammogram is normal.

Many centers are now offering 3D mammography (“Tomosynthesis”). Instead of two pictures of each breast, tomosynthesis allows the radiologist to evaluate many slices of breast tissue, each as thin as 1 mm.

Tomosynthesis improves the detection of early, small breast cancers by up to 40 percent. Also, in many cases, 3D mammograms eliminate the need for additional testing, which reduces patient anxiety.

Breast ultrasound (“Sonography”) is another

tool which is used to detect breast cancer.

Ultrasound uses sound waves to evaluate breast tissue, and does not expose the patient to radiation. Ultrasound cannot replace mammography, because some types of very early breast cancers can only be detected with a mammogram. However, particularly for women with dense breast tissue, ultrasound can help improve cancer detection. Dense breast tissue is a normal condition seen in about 45 percent of women. Dense breast tissue is associated with an increased risk of breast cancer, and it can also limit the ability of mammography to detect small cancers. Women can learn whether they have dense breast tissue when they have their mammogram.

Breast MRI is an additional test which may be appropriate for some women. MRI uses magnetic waves, in combination with a contrast material which is injected intravenously, to detect breast cancer. As with ultrasound, there is no radiation exposure. Breast MRI may be offered as a screening test to certain women who are known to be at high risk for developing breast cancer. High risk may be due to family history, genetic testing, or other factors.

While no breast screening test is perfect, there are many good options available to detect breast cancer while it is early and treatable, and new technologies continue to be developed. All women should speak with their personal physician to determine which tests are appropriate for them.

Learning to Live in Balance

By Anthony Cerabino, BM, LMT, MSLAC Both learning about and teaching people how to take care of themselves have been the biggest motivators for me as a healthcare practitioner.

What I mean by “learning” is that each patient presents a unique challenge to me. I need to learn their story, their health history, their habits, their attitude towards life, and of course their lifestyle to get a big picture of what is going on.

I don’t mean to sound dark, but I want to be real. Cancer seems to be looming all around us these days. Oh, how I want to help everyone who has become a victim of this epidemic! Every day it seems I know someone who has been inflicted with this malicious disease. What is to blame for this cancer epidemic? Some basic daily life exposures may shed some light on this problem.

We know that our drinking water is full of chemicals. We know that the food we eat is full of artificial ingredients.

We know that the increasing amount of prescription drugs taken throughout the course of a lifetime is extremely toxic to the body. We know that the air we are breathing is polluted.

We know now, after many years of investigating, that our vaccines are full of toxins that can wreak havoc on our bodies.

We know that constant EMF (electromagnetic frequency) exposure, likely to be daily from our cell phones alone, are toxic to our body’s electrical system. Most everything in our home is built with some sort of chemical component, including preservatives in the wood beams that our homes are built with; toxic agents used to clean our houses and

also used on our lawns; glue that holds our rugs together; florescent lights; and even noise pollution from our TV’s. Let’s not forget the daily stresses of trying to make a living and pay our bills. The overconsumption of sugar, alcohol, caffeine and tobacco (including vapors) most definitely have to be considered as well. I am not trying to point out a gloom and doom reality; I am just presenting my observations of daily overexposure to toxic agents in our life that can be modified with some education and discipline.

Many times, especially with senior citizens, it seems like cancer comes on suddenly after some other trauma. With the constant barrage of toxicity throughout one’s lifetime, the immune system has been weakened, and finally cannot handle the stress of additional

trauma resulting in the dormant cancer cells becoming active.

We all need to recognize this pandemic health problem in our society. We all need to realize that we can make better choices to live healthier lives.

Simple choices, like using a water filter, eating organic foods, taking care of our emotional health, managing stress levels, and regular doctor and dental checkups can all add up to longer, healthier lives. I have witnessed far too many cases of this deadly disease and we need stand up and take responsibility for the things we can change to improve our well-being.

Be pro-active about making conscientious, healthy choices in your lifestyle, therefore improving yourself, so you may lead and enjoy your best life.

Studies show that exercise is in fact the best medicine for helping prevent major chronic diseases, such as diabetes, high blood pressure, certain cancers, and heart disease. Not only are we developing healthier bodies by improving our cardiovascular systems, our children are also witnessing the positive effects of being physically fit. Whether we’re playing sports as part of a team, or flying solo at the gym, training makes us feel good.

Fueling our bodies adequately when being physically active is vitally important for proper cellular and physiological functioning, which help keep us strong and healthy.

Without careful consideration of taking in sufficient micronutrients, you can be setting your body (or your child’s) up for failure.

For peak performance and

fitness, training needs to be paired with proper nutrition. Nutrition seems to be a lacking component these days. We are training harder and demanding more from our bodies, but lacking balanced and timely meals for proper biochemical responses. Minerals play a leading role here. A wellbalanced diet is the key to getting enough minerals and optimum performance.

There are approximately 21 minerals that are essential for life. The top 5 directly linked to athletic health are calcium, potassium, sodium, phosphorous and magnesium.

Calcium and iron are frequently lacking in diets of teen athletes and individuals who engage in a vigorous workout routine.

Potassium is an electrolyte that works in conjunction with sodium to balance water content within cells throughout the body. It helps stabilize our bodies after a strenuous workout.

Sodium and potassium play a huge role in muscle contraction.

These important minerals are responsible for proper nerve function and adequate muscle contraction. Loss of either mineral will be evident by muscle twitching or muscle weakness.

Parmigiano-Reggiano cheese, shaved into thin strips with a vegetable peeler FOR THE DRESSING • 1/2 cup extra-virgin olive oil • 1 1/2 tbsp red wine vinegar • 1/2 teaspoon salt • 15 to 20 grinds freshly ground black pepper DIRECTIONS 1. To make the dressing: In a small bowl, whisk together the vinegar, salt and pepper. Add the olive oil in a slow, steady stream, whisking constantly until blended.

2. In a large bowl, toss together the radicchio, endive and arugula. Add the vinaigrette and toss again.

Adjust the seasonings with salt and pepper. Gently toss in the cheese.

Easy Pumpkin Pie Nothing warms up the house like the aroma of pumpkin pie baking in the oven This recipe calls for canned pumpkin. Using fresh pumpkin is awesome; the amount of work required to prepare it is not. This pumpkin pie is easy to make and everybody loves it.

INGREDIENTS • 9” single unbaked pie shell (try

3 eggs ½ cup white sugar ½ cup packed brown sugar ½ tsp salt 1 tsp cinnamon 1 ½ tsp pumpkin pie spice 1 cup half & half ¼ cup heavy cream 1 3/4 cups organic pumpkin puree

DIRECTIONS Preheat oven to 425 degrees. In a large bowl, beat together eggs and white & brown sugars. Mix in salt and both spices. Gradually stir in half & half and cream. Gently mix in pumpkin.

Pour filling into pie shell. Bake for 10 minutes in preheated oven; then reduce heat to 350 degrees and bake for about an additional 45 minutes, or until filling is set, checking center after 40 minutes.

Apple Crumble This is a delicious alternative to Mom’s Apple Pie. It is a simple recipe, delicious with a scoop of vanilla ice cream as a dessert, or as a breakfast treat the morning after a big holiday dinner.

INGREDIENTS • 6 large green apples, peeled, sliced then cut in half • ¾ cup white sugar • 1 tbsp flour • 1 tsp cinnamon • 1/3 cup water • 1 cup quick-cooking oats • 1 cup flour • 1 cup packed brown sugar • ¼ tsp baking powder • ¼ tsp baking soda • ½ cup butter, melted

DIRECTIONS Preheat oven to 350 degrees. Lightly spray a 9”x13” pan with non-stick cooking spray. Place apples in pan.

Mix together the white sugar, 1 Tbspn. flour, and cinnamon. Sprinkle over top of apples. Pour water evenly over top of apples. Combine oats, 1 cup flour, brown sugar, baking powder, baking soda, and melted butter. Using your hands, crumble evenly over top of apple mixture. Bake for 40 – 45 minutes until top is brown and bubbly.
