Babylon Carriage House LONG ISLAND’S LATEST TRADITION Sitting in the upstairs dining room of the Babylon Carriage House Bar & Grill, the open view to the first floor is dramatic. With its warm and elegant ambiance, the craftsman ceiling rafters are a historic reminder of days past when the Sherman House Hotel guests parked their horse and carriage here over a century ago. With 30 years of experience in the restaurant business, Jerry and Cindy Cusack have successfully transformed what was once a vacant garage into an architectural treasure. Today, as an award winning catering venue with a reputation for outstanding food, as well as great nightlife, the Babylon Carriage House has become a landmark on the south shore of Long Island. It takes a mix of talent and passion to have chefs continually create, as theirs do, exceptional recipes. Every night they offer several delightful dinner specials inspired by what’s in season. Selections from the House Menu include favorites like the Pan Seared Chilean Sea Bass served with Yuzu Emulsion over Lobster Risotto, or their famous mouthwatering Marinated Skirt Steak and sautéed spinach. On specific days, incredibly discounted specials can be enjoyed. Back by popular demand for its 11th year is the seasonal Lobster Bake special on Wednesdays. A shellfish lover’s delight, this harvest de mer includes a 1 ½ lb. lobster, clams, mussels, fresh corn on the cob and potato, all for an unbelievable $19.95! Not to be outdone is Prime Rib Sundays, 16 oz. Prime Rib served with potatoes, vegetables, and your choice of soup or salad for $24.95 ...the perfect way to end the weekend. On a warm summer evening, why not enjoy their latest signature cocktail, Sparkling Lemon Sangria, on the outdoor patio? Plan a night out with friends at their stylish and spirited bar. It has become the local hot spot. Friday Nights are lively with DJ TJ & Claudio spinning the best in dance and pop hits and DJ Muka raises the roof on Saturday Night with an edgy hip hop beat.

Their highly successful catering business is attributed to their consistency in serving excellent food, attentive service, and the variety of options available for catering any event. Voted best bridal and baby shower venue multiple times, they can cater a party for 25-300 guests. “We have rented the entire two levels of our restaurant for a wedding” the general manager, Melissa Morales, told us. Whether you have an Engagement Cocktail Party, Birthday Buffet, Awards Banquet, Bar Mitzvah, Family Reunion, or a Corporate Conference, Melissa and event coordinator, Chloe Virgona, will work to ensure your special occasion is everything you envisioned and more. The Babylon Carriage House provides the perfect combination of delicious food, a beautiful setting and professional staff. An award-winning recipe for success. We asked owner, Cindy Cusack, what she attributes to the success of her establishment she answered, "The restaurant business is a very demanding business; restaurants come and go so you have to be on top of your game. Every week we meet with our chefs to discuss new recipes and specials. Our bartenders have to come up with new drink recipes as well, and having an excellent staff and general manager, like our Melissa, are key. It’s not only our food that keeps guests coming back again and again; it’s also our service. Our servers are experienced and attentive. We are all a team with the same mindset, to make sure our customers have a memorable experience." Congratulations to Cindy and her staff for achieving a well-deserved reputation of excellence since 2003, and a special tradition honored in memory of Jerry Cusack…that his love and passion for family and friends will continue through the many joyous occasions celebrated at the Babylon Carriage House.

Dear Readers, WELCOME TO OUR SPRING ISSUE! There is something special about this time of year. Maybe it’s the longer sunny days, the evidence that mother earth is awakened and color has returned to our landscape. It may be the many smiles of our neighbors we now see outdoors. Or, maybe it’s all of the celebrations that come with this glorious season. From Mother’s Day brunches, to graduations, and all outdoor affairs - it’s a wonderful time of renewal. There is a definite energy in the air now that everyone knows for sure the winter weather is gone and the warm weather will continue to get nicer. Merchants by the bay are ready to start a new season and folks like you and I are in outdoor project mode, working in the garden or making the seasonal handy-man to-do list. Many restaurants are sprucing up their outside dining areas and opening the windows and doors to welcome the warm weather. In fact, every one of the restaurants in this issue offers al fresco dining. Whether it’s a restaurant, a beauty expert, or a home professional we have some great ones in our magazine we are happy to share with you. Plenty of windows to shop while strolling through the village. It’s impossible to walk past Bella Maison’s storefront window displays at their new location on Park Avenue without stopping and “oooo”ing. Beautiful vignettes of home furnishings at first glance; walk inside and you will find a collection of accent pieces for both you and your home. The owner of Bella Maison is interior designer Mary D’Andrea of MDA Design Ltd. Mary has done extensive design work in many beautiful homes all along the Great South Bay and has clients spanning Montauk to Manhattan. Charming and full of special finds, many which are handcrafted, Amity Anchor & Co. is filled with nautical and vintage decor. Their specialty is custom wooden signs. I had one made for my son’s room…love it! Amityville Men’s Shop has been flourishing for over 100 years. With an excellent selection of both formal and casual wear, their long standing history speaks for itself. Everybody’s crazy about a "sharp dressed man." A sweet-treat from The SugarChic is a must. Her salted triplechocolate cookies are addicting. She can create party-favor cookies for any occasion…even one to match a bridal gown. Too pretty to eat but too yummy not to!

I love finding great talented professionals and businesses to share with our readers. Mary is the creative force of MDA Design Ltd., a premiere Long Island design firm. Her office is housed inside Bella Maison, her Home Furnishing & Accessories boutique. THE LIST: What inspired you towards design? MARY: My grandmother actually had a degree from a college in New York City as a designer. Growing up my grandmother always encouraged me to draw, paint and use my creative side. I loved architecture and photography, as well as art and took several classes in high school. After HS I decided to go to Drexel University and major in Interior Design. THE LIST: Do you do consultations for, let’s say, color schemes or how to stage your house if prepping to sell it? MARY: Yes, for a small fee we will do various color schemes that include paint, possible fabrics and carpet samples. We also stage houses for many real estate companies. THE LIST: What are some of the smallest jobs you have done? MARY: A single window treatment in a bathroom, pillows for a sofa,

reupholster of a chair. There are many. We do not turn people away for a simple task. THE LIST: What would be considered a large job? MARY: We are presently working on two 8,000 square foot houses. We have been involved from the beginning. Once the architect completes his plans we are responsible for the kitchen design, bathroom designs, fireplace designs, built in shelving, woodworking details and obviously all of the paint selections as well as the furniture, carpet and window treatment. THE LIST: What is your favorite part of design? MARY: I enjoy the actual selecting of fabrics, carpets, furniture and window treatment. It is very rewarding to see a design come to fruition. In addition we are very involved with projects that are from the ground up. We specialize in bathrooms, kitchen and custom millwork.

As I looked around at the beautiful surroundings of her store while enjoying a peek at her design project portfolio, it became clear how incredibly talented Mary is. And so it gives me pleasure to know she will be an asset to our professionals highlighted in The List Magazine.

IN HONOR OF THE BRAVE by Rosemarie Kluepfel On the last Monday in May, schools will be closed, municipal parking lots vacant, and office buildings empty, replaced with parades and political speeches to honor the soldiers who died in service of our country, all in observance of Memorial Day. A day when thousands of wreaths and flags will be placed over grave sites and monuments across our great nation in remembrance of soldiers lost in the conflicts of wars. Some perished on the beaches of Normandy, the hills of Korea, in the jungles of Vietnam or the deserts of the Middle East. Still others lost generations earlier… all were soldiers that accepted the responsibility to defend America when duty called. With access to 24 hour news cycles, we can watch replayed images of smoke filled subway cars in Brussels, or the glass shard filled cafe floors of Paris, as constant reminders of the frailty of life and the liberties we too often take for granted. In New York, many can recall the

thick clouds of dust on 9/11, when terrorists took aim at our skyline. The Twin Towers, built to stand tall side by side, fell to their knees in succession as the world watched in disbelief. While the rubble was still being cleared from our city streets, thousands of men and women, in patriotic homage, enlisted into our military to fight the war on terror. Fifteen years later, the war on terror rages on. The world watches once again with heavy heart, as civilian casualties are taken away on stretchers, victims of those with a thirst for chaos and headlines. This Memorial Day, as we pay tribute to our deceased heroes, let us also renew our promise to support our troops, veterans, and their families. Our soldiers sacrifice so we can enjoy the freedoms our Founding Fathers forged into the framework of these United States in hope that the generations to come will no longer read of bloodshed in daily newspapers but in the yellowed pages of history books.

Helping families affected by congenital heart defects About one in every 100 children is born with a congenital heart defect (CHD), an abnormality in cardiovascular structures that occurs while the fetus is still developing. Many will produce symptoms at some point in their life, whether at birth or well into adulthood. Some can be devastating; others may remain completely benign. Little Gavin Mogil is not only one of that unlucky 1 percent; his CHD makes him more like 1 in 10,000. Gavin was born on November 23, 2011, with double outlet right ventricle (DORV) with transposition of the great arteries (TGA). His mother, 2005 Long Island Campus alumna Nicole Drossos Mogil, has to pause for a second to arrange the words from that mouthful of a diagnosis into the proper order. If you put him in a lineup with a bunch of other toddlers, you’d be hard pressed to identify Gavin as the “abnormal” one. He looks and acts the part of a healthy and active 2-year-

The Role of a Woman BY ROSEMARIE KLUEPFEL Daughter, Sister, Mother, Aunt, Grandmother, Teacher, Cheerleader, Friend, Nurturer, Caretaker, Volunteer, Activist, Lover, Wife, Partner, Businesswoman, Entrepreneur, Role Model, Mentor, Inventor, Leader and more..…whichever role women take on, one thing we can all agree on, is that women are resourceful, versatile and complex. After all there are no limits to what a woman can achieve when she puts her mind to it. During a woman’s lifetime, her roles may change from time to time but the impact women have had on others fill libraries. Understandably, since for most of us, it was a woman who taught us our first words and wiped our first tears, who encouraged us to give it our best and to smell the flowers along the way. A big sister told us it was okay to be afraid, and then

taught us to be brave. An aunt scolded us to stand up straight in one breath, and then gave us a much needed hug to help mend a broken heart in another. She was the mentor, who taught us the ropes at work and took us under her wing. Where would we be if not for the influence of women? We rely on women to have the answers when others only have questions, to find a way when others are lost, to be creative when others have put down their pens, and to give us hope when all else has failed. For me, it was my mother that was all of these things and more. She is small in stature but large in ideas. Like a flower she appears delicate, but is strong and resilient, refusing to bend to the forces around her. I credit her for raising strong willed children but never losing sight of her own dreams and aspirations.

As a woman, I have worn many of the same hats as my mother and more. Some hats I wore by choice, some because of good fortune, and others out of necessity. I am a mother, sister, aunt, friend, writer, entrepreneur and more, but as I look at my (gracefully) aging mother I know there may be a time when I must be the strong one, the one with ideas: the caretaker. Just another hat I hope to wear gracefully, like

my mother. A woman in her lifetime plays many roles that make her indispensable in the lives of others. For some of us we have friends who are more like sisters, and for others we have sisters who are also our best friends. Regardless of the hat they wear, let’s remember to thank all the wonderful WOMEN in our lives, not just on a Sunday in May but EVERYDAY.

SPRING/SUMMER FASHION 2016 Must Have, Must Go, Must Know WRITTEN BY CATHY BERGER

Even before the first hints of warm weather, we eagerly anticipate discovering the dramatic changes that will inspire fashion updating. What's noteworthy, splurge-worthy, and eye-opening for Spring/Summer 2016? I always look to my favorite bloggers, store racks, magazine editors, and go-to designers for ideas. Here are my picks for the best from this seasons' showcase:

1. THE ESSENTIALS Jumpstart the classics you've cultivated by adding a quality piece. The sailor pant is versatile and can be dressed up as well. These trousers feature double row of nautical buttons on the sides, and can be quite slimming. Minimalist lovers will look ideal in a mono color scheme Prefer a dress? For a night out, ramp it up with a shoulder cut out or a a 2-piece crop top/skirt set if your age and body warrants it. Otherwise, a graphic floral is this season's power print. Make sure your frame (the size of your overall figure) matches the size of the print i.e. if you are petite, wear a small pattern; if you are large-boned, you can carry a bolder one.

4. NAIL COLORS Just like we swap out heavy coats for lightweight frocks, we would be remiss not to update our fingertips as well. The options are endless - even studded and tipped out styles from last year remain. Between the pastels and metallics and neons, I especially love this fresh one from Marc Jacobs.

2. LINGERIE With warmer weather, automatically comes less clothing. The sexy underwire-free Bralettes are perfect for warmer weather and are as functional as they are beautiful. Choose a soft bra, i.e a cropped top that serves as a bra and looks sweet and ladylike. Wear it for support & coverage under a loose tank top or sheer shirt. For more fun ways you can style it by pairing it with a pretty sundress or turning standard overalls into something sexy!

3. TOPPERS Nights and cool days require something stylish over our shoulders. For work, throw on a long sleeveless vest, either in a light knit or a tencel blend, to give sleek line to your look elongating you immediately. Occasionally we need something stonger! For rainy and windy summer days, new technology gives us modern features that offer lightweight insulation while casting off the wet weather. Look for flattering parkas or liana styles from The North Face which happen to be wonderfully affordable.

5. SHOES When it comes to these beloved accessories, details have always been what drives us to break out the wallets. In general, the new trend is less embellishments rather than more. Shapes are simple, colors are more subdued, decorative elements tend to be oversized. Many of us will be wearing backless shoes, particularly the mule, with its fresh retro Seventies-via-the-Nineties vibe. Gucci put just a few oversized pearls on the back of a strong statement mule With a thick heel and higher vamp, the "glove shoe" takes 2nd place as the It-Shoe of the season. Touted to go with just about everything, it removes warm weather's staple for a closed shoe: toe cleavage. And for that reason, I don't like it.


6. JEWELRY Besides the popular single earring options from last season... Open-ended chokers, bracelets and rings are all the rage. That extra "opening" gives a mental open air feeling, especially when weather turns downright hot and humid. Statement necklaces are still relevant, and will bring a signature addition to simple summer tee or dress.

Conscious eating and changing the way you look at food By Laura Mitchell Wilde

Spring is here! According to the Five Elements in Chinese medicine - Spring is about expansion. Like the Spring season that is upon us, eating healthy is about expansion. And I don’t mean adding extra pounds; I mean expanding our Self-awareness and trying something new.

When you change the way you look at things - the things you look at change.” -Dr. Wayne Dyer I love the above quote by Dr. Wayne Dyer. I like to expand this quote to the concept of nourishment. What if we change the way we look at our food? What kind of world would we live in if we all recognized that each bite we take adds to our mosaic? A mosaic of healthy food choices creates colorful, vibrant, and healthy patterns of wellness within our cells. What new choices will you make this Spring to add to your mosaic? I spent several years as a diehard vegan and recently began to feel that being overly strict with myself was adding to my anxiety. Food became stressful instead of joyful. I decided to try something new and practice a new concept I’d discovered called Conscious Eating. Being conscious of what I eat without being worried and fearful became my new approach. I still honor my food sensitivities but I have a better way of nourishing myself. Conscious Eating is when we slow down and become present to our Self (with a capital S). This is when eating becomes a mindful practice. And mindfulness becomes sustainable self-care. My choice to become a Conscious eater helped me focus on loving my body and myself. I no longer

thought I would die if there was one drop of butter in my food. It helped my friends, family and dates have less anxiety too. So this new way of looking at things seemed to transform other parts of my life. And I felt better than ever! I was more fun at parties and family get-togethers ‘says everyone everywhere.’ My food allergies seemed to diminish a bit too, as they are often made worse by anxiety. I have had many wonderful conversations about how humans eat with my friend Aimee Follette, owner of Sun In Bloom restaurant in TriBeCa and Brooklyn. She has a similar theory. When she opened her restaurants she didn’t make a big deal about her places being vegan. Instead, she made her guests’ experiences about making healthy choices that nourish their bodies. She was just named as a top 10 health conscious restaurant in NYC! As a Health Coach, losing my rigid judgments about foods allows me to meet myself and others right where we/they are with food. In order to be a mindful practitioner - this attitude is important. I began to look at food as expansive and freeing instead of as restrictive.

CHINESE MEDICINE Back to Chinese medicine theory: Spring corresponds to the element of wood, the color green and our liver and gallbladder. The wood element also corresponds to our eyes. Our eyes are about holding a big and beautiful vision for ourselves. The gallbladder influences our courage and conviction to make decisions and carry out the vision. When our liver and gallbladder are in balance, we are more mentally and spiritually focused and decisive about our purpose in life.

EXPAND YOUR CHOICES I have noticed that many of my clients think eating healthy is too difficult. They’ve often made pre-judgments that it is about deprivation. Instead, try adding something new. Try adding leafy greens to strengthen and cleanse the liver. When you add a green drink or apple carrot ginger juice per day or a dairy-free, organic smoothie in the morning your body begins to naturally crave new and healthier choices. Will power becomes a non-issue. Adding foods that are densely packed with plenty of nutrients per calorie helps you gradually and naturally move away from refined sugar and processed foods without the crazy cravings. When we change our focus on what TO eat instead of what NOT to eat, we become empowered. You won’t be constantly hungry, energy levels improve, and your skin may improve too. It’ll be hard to ever go back to being your old self.

EATING LANGUAGE Instead of saying I don’t eat meat...say: I eat lots of vegetables and fruits. Instead of saying I don’t eat dairy...say: I find that almond milk works well for me. Instead of saying I don’t eat gluten...say: I eat food that makes me feel great and keeps my energy levels high.

HOW WE EAT Being a more Conscious eater also includes being mindful of how and what we are doing while we eat. Eating while watching violent movies or tv shows isn’t the best thing for us. Trying something new might mean slowing down and just eating. Keep it simple. Try eating without the crutch of your phone or any media. Perhaps you can only make 5-10 minutes for this stillness at the beginning of your meal. Still, it will calm down your nervous system which makes your stomach more ready and able to digest food.

As we move into spring, slow down, enjoy each bite, and create a beautiful mosaic when you make your food choices. Embrace the idea of trying something new! 1 inch diamonds). Pat the meat dry with paper towels and rub with 1 tablespoon of sea salt and pepper-then let sit at room temperature for 1 hour. Bring your vinegar to a boil with the brown sugar, red pepper flakes, 2 teaspoons sea salt and 2 teaspoons of pepper-stirring until the sugar dissolves. After letting pork sit; heat a large frying pan on high heat for 3 minutes, add 1 tablespoon of oil and then brown the pork shoulder turning every 60 seconds to sear the outer edge-not cook the meat completely. Set aside when done; then slice the small sweet onion and place half of it in the bottom of your crockpot; set your pork on top of the onions, covering it with the remaining onions. Pour the liquid ingredients over top of the pork and onions; then cook, on low, for 6 to 8 hours or until the pork is cooked through and pulls apart easily with a fork. When finished remove the pork to a large cutting board and shred using two forks. Toss with a 1/2 cup of the cooking liquids from the crockpot before serving.

3 cups mixed savoy & red cabbage 2 small carrots, grated 1 small red onion, sliced 1/2 tsp dried red pepper flakes 1/2 tsp oregano

2 tsp olive oil 1 tsp sea salt 2 tbsp brown sugar 1/4 cup apple cider vinegar 1/4 cup apple cider (or juice)

Directions: Blanch the cabbage with boiling water for 1 minute. Discard

the water. Place the cabbage in a large bowl with the remaining ingredients, tossing to combine. Then place in the refrigerator for at least 2 hours before serving.

HOMEMADE BARBECUE SAUCE Ingredients • 2 cups approx. of remaining cooking liquid from crockpot, onions removed • 3/4 cup Ketchup

• 1 tbsp brown sugar • 1 tsp fine sea salt • 1/4 tsp cayenne pepper

Directions: Stir all ingredients together in a bowl until sugar dissolves and then serve, chilled or as is. LAST STEP: Slice and brush rolls with melted butter, then toast under the broiler, being careful not to burn them... Finally serve everything together, piled up high on your toasted buns top with BBQ sauce and slaw.

Verde Kitchen and Cocktails

Spicy Cucumber Margarita Ingredients • 1 ½ oz Spicy Pepper Tequila (recipe below) • ½ oz Fresh Squeezed Lime Juice • ½ oz Organic Agave Nectar • 1 ¼ oz Fresh Cucumber Juice • Fresh Cilantro dehydrated and sea salt for rim (optional)

Our refreshingly cool Spicy Cucumber Margarita is one of the biggest hits this spring season at Verde Kitchen and Cocktails. The sweet, earthy and bold flavors pair extremely well with almost any dish from salads to ceviche, guacamole and tacos. Using fresh ingredients is the key to any good cocktail, especially when using fruits & vegetables. This margarita is the epitome of spring time in a glass, and it’s good for you!

Cocktail Recipe 1. Spicy Pepper Tequila- Infuse 2 bottles

of 100% Blue Agave Tequila (we like Espolon or Partida) for 3 days using 1 sliced Jalapeno Pepper, 1 sliced Habanero Pepper, 1 sliced Serrano Pepper & 1 sliced AND ROASTED Poblano Pepper. Stir twice daily and taste. Remember it will be much spicier when you taste it compared to when you mix everything together. Don’t be afraid to let it get spicy, the cucumber juice will cool it off in the drink!

2. Organic Agave can be found in almost any supermarket or specialty grocery store. Use a light agave, not an amber. The amber agave tends to taste a little darker, smokier and has hints of molasses

3. Dehydrated Cilantro Sea Salt Rim- Spread out 2 handfuls of cilantro on an oven pan and leave at a low heat until crisp, add sea salt or kosher salt and pulse in a food processor until granular, not powdery

4. Combine all ingredients in a pint glass

filled with ice: Shake and pour into a margarita glass rimmed with dehydrated cilantro sea salt rim.

Babylon Boutique Offers A Semi-Permanent Eyebrow Fix MICROBLADING IS THE NEWER, MORE REFINED PERMANENT MAKEUP FOR BROWS. Permanent makeup sounds like a drastic beauty treatment, but Little Lash Boutique in Babylon Village is now offering a newer technique called microblading that offers more subtle results. Traditional permanent makeup has been around a long time, but this newer technique uses micro-pigmentation to create a natural look. Microblading creates a series of pigmented hair-like marks and is considered semipermanent, rather than permanent, lasting up to three years. Full eyebrows have been in fashion for several years, and a fuller look is youthful and flattering. With age, and some medical conditions, brows can become sparse, and women who pencil their brows in every day are flocking to a more permanent solution. Joann Donnelly, owner at Little Lash

Boutique, says that "microblading is the best thing that has happened to eyebrows in recent history. These look like actual hairs. All of our clients no longer feel the need to fill in their eyebrows after getting the microblading procedure done." A brow specialist at Little Lash Boutique explained that as a colorist she mixes and perfects the exact shade of pigment to match the client's natural color. Clients report that it doesn't hurt, but they feel a little itchy right after. Because microblading doesn't use a traditional tattoo gun, it doesn't form a big scab. And unlike traditional tattooing, Donnelly added, the lines won't bleed under the layers of skin as time goes by. "With microblading the hair strokes stay sharp and mimic your natural hair color." The process begins with a consultation

at the boutique, where the client's natural brow is shaped, and a tint is applied so the client can visualize and confirm the shape that will be applied. At the next appointment the technician performs the microblading: individual "hair" strokes of pigment are applied just under the skin with a pen-like instrument. The appointment can take up to three hours. First a specialist applies a topical numbing gel to the brow area, then scrapes and prepares the skin before applying the pigment strokes. Then 30 to 60 days later, the clients come in for a third appointment where the brows are perfected and any alterations made. Some redness after the initial microblading is the only side effect. The brows will appear darker for a few days as they heal, and then reach their permanent shade.
