THE STORY BEHIND THE LESSING'S NAME

Six generations and a passion for hospitality that continues to evolve. If you’ve lived on Long Island for any length of time, chances are you’ve heard the Lessing’s name. You may know it from your favorite restaurant, your wedding venue, a golf course, or even the place you go to work or school. What you may not know is the story behind the name, or that it began more than 135 years ago with a single lunch counter in New York City’s Financial District. Now, with the opening of its new Great River headquarters, in a building the company finally calls its own, that history comes together under one roof for the first time. But the numbers aren’t really the story. How Lessing’s got there is.

1890 AHEAD OF HIS TIME When Maxwell Lessing opened his first lunch counter in New York City’s Financial District in 1890, he was responding to a city and a workforce that were rapidly changing. Office workers needed a midday meal that was quick, affordable, and convenient. Maxwell saw the opportunity and built his business around it. As more locations followed, he found another way to work smarter. Maxwell established a central commissary where baked goods, sliced meats, salads, soups, and other foods could be prepared in one place and delivered to his lunch counters, an innovative approach to serving a growing business, long before centralized food preparation became commonplace. What we now think of as staples of a typical lunch were novel then. Lessing’s history credits Maxwell with introducing sandwiches at New York City lunch counters and later becoming the first New York restaurateur to serve Coca-Cola. More than a century later, what stands out about Maxwell is not simply what he served. It was his instinct for seeing how people's lives were changing and finding a way to serve them better.

Nearly four decades later, the next generation recognized opportunity in a different kind of dining. In 1928, Lawrence Lessing approached American Cable and Wireless about operating its employee cafeteria. Contracts with companies including the New York Stock Exchange and Smith Barney followed, establishing what would become another major part of the Lessing’s business: food service management.


LESSING'S THROUGH THE YEARS

1970s–1980s LONG ISLAND TAKES ROOT By the late 1970s, another generation was ready to take Lessing's in a new direction. Jack Lessing and Larry Lessing III moved into the restaurant business, opening the Post Office Café in 1978 inside Babylon's former post office. Nearly half a century later, it remains part of the Lessing's portfolio. The idea would become something of a Lessing's signature: creating local restaurants inside familiar community landmarks. Library Café found its home in Farmingdale's former public library, while Goldy's Gems occupies the historic Southside Hotel building in Bay Shore. Tucked inside that business decision is one of those family details that makes history feel human. Jack Lessing once recalled that entering the restaurant business meant crossing a line his mother never particularly wanted crossed: "My mother, a devout Irish Catholic, never wanted the family to sell liquor." Post Office Café opened in 1978.

They did, of course. And restaurants would become a defining new chapter for Lessing’s.

1990s–2000s

FROM LANDMARKS TO DESTINATIONS By the 1990s, that same willingness to bet on unconventional spaces found a new outlet. The family began expanding into some of Long Island's grand historic estates, recognizing that these distinctive properties could become extraordinary settings for celebrations. Over time, the collection grew well beyond the traditional catering hall. Today, Lessing's wedding venues range from historic mansions and a medieval-style chateau to a castle, vineyards, waterfront properties, country clubs, and even a rustic barn. It also meant the Lessing's name became part of some of the biggest days in other families' lives, not just its own.

2011–2020 BEYOND LONG ISLAND In 2011, Lessing's food service division expanded into upstate New York and across New England, including Massachusetts, Rhode Island, and Connecticut. By 2020, the company had grown into Florida and come back to where it all began in New York City, adding Ellen's Stardust Diner and The Iridium to its portfolio. Growing this fast, across this many markets, meant the business itself had to change. Lessing's invested in the technology to give teams in different states the same visibility into performance that had once come naturally from working under one roof. Today, Lessing's Hospitality Group operates more than 100 locations across the Northeast and Florida. Its portfolio spans restaurants, historic estates and waterfront venues, corporate and academic dining, and even a presidential yacht and working ranch.

2026 & BEYOND More than 135 years later, Lessing's continues to grow while remaining deeply rooted on Long Island. Its ties to the community run through local organizations and causes, including Island Harvest and Save the Great South Bay, and through the people who have grown with the company. Some employees have been with Lessing's for decades, and in some cases, more than one generation of the same family has worked there. Michael Lessing doesn't take that for granted. His guiding principle: "In business, you're only as good as the people you work with." The new Great River headquarters gives that extended Lessing's family a home of its own. A floor-to-ceiling image of Maxwell's original lunch counter stretches across a wall, while family photographs and images of Lessing's properties tell the story of what came after. But it was also designed for what comes next: bringing people from across the company together so conversations happen more naturally, ideas are shared, and good ones can take shape. Now, as another generation carries the work forward, the responsibility is one the family takes seriously. As they put it: "Honoring that legacy does not mean simply preserving it. It means continuing to add to it." For anyone who has celebrated a wedding at one of Lessing's estates, grabbed a late-night bite at the Post Office Café, or grown up hearing the Lessing name without quite knowing the story behind it, that's the invitation. And for everyone who hasn't yet, there's a Lessing's table waiting nearby.

TWO LONG ISLAND BUSINESSES. ONE COMPLETE DESIGN EXPERIENCE. Zimmerman’s Furniture and Textile Mill End Shop bring more than a century of combined history and expertise in furnishings, fabrics, and home design. The Zimmerman family opened its original furniture store in Lindenhurst in 1954, and in 1973, Tom and Cindy Finlay opened Textile Mill End Shop at its landmark East Islip location. For decades, each built a reputation through hard work, personalized service, and expertise passed from one generation to the next. Zimmerman’s became known for fine furniture, rugs, and lighting. Mill End became a Long Island destination for fabrics, wallcoverings, and custom window treatments. Different families. Different specialties. Remarkably similar stories.

A LITTLE BIT OF KISMET When Jeff Zimmerman retired in 2019, he entrusted the business to longtime colleague and friend Ted Olander, the lead designer who had worked alongside him for years. Ted, an East Islip native, and Jay Dellacona took the reins with a simple goal: preserve what had made Zimmerman’s special while guiding it into the next chapter. That chapter arrived sooner than expected. The Lindenhurst

building sold, and suddenly the store needed a new home. After looking at many locations across Long Island, Ted and Jay found exactly what they were looking for close to home: space available next to Textile Mill End Shop. At first, the two businesses simply shared the property while operating independently. Then the natural connection became obvious. Zimmerman’s clients needed fabrics and window treatments. Mill End clients needed furniture. Anyone who has ever furnished a room knows the truth: a sofa leads to a rug; the rug changes the fabric choice; the fabric influences the wallcovering; and suddenly the windows, lighting, and entire space are part of the same conversation. Rather than remain neighbors, the businesses decided to combine their specialties and work side by side under one roof, creating a complete home design center. Dear Readers, Long Island changes with the seasons in a way that truly makes it special to live here. The changing leaves, crisp weather, cozy sweaters, and pumpkin-spice everything are just a few of the things I love about fall. What I hold most dear are the family traditions it brings back and the new experiences that come with it. Like many of you, I’ve lived here a long time, yet there is still so much to discover, close to home and across our Island. And for those of you new to the area, we’re so glad you’re here. In this issue, we share the stories behind a few Long Island names, some you may know well and others you may be meeting for the first time. You may be surprised by what you didn’t know. What's Old Is New Again As a new generation discovers the beauty of pieces with a past, a familiar name in Bay Shore antiques brings a longtime passion to a new store: Bluebird. For a while, it seemed everything in our homes had to be new. New furniture, new accessories, perfectly coordinated rooms, and often the same pieces we were seeing everywhere else. But the pendulum always swings back. Antiques and vintage pieces are finding their way into our homes again, and a new generation is discovering what longtime collectors have always known. A room becomes more interesting when everything in it doesn't come from the same place or the same decade. For Maureen Goltz & Michael Jordan, that appreciation for things with a past isn't a trend at all. Longtime Bay Shore residents may remember Maureen from Veronas, the antique shop that was a Victorian house near Main Street. Years later, her eye for finding something special has brought her back to retail with her husband Michael Jordan, former owner of Jordans Antiques. Bluebird Estate & Vintage is a combination of them both, which opened in Bay Shore in February 2026. But Maureen was reluctant to create the kind of antique shop many of us remember, where every available surface was filled and finding something special sometimes meant finding it beneath everything else. Bluebird was going to be different. Rather than more for the sake of more, Maureen and Michael

wanted a curated collection of things they genuinely loved. Pieces chosen for their quality, character, beauty, or simply because something was eye catching. The result is a pretty, welcoming boutique, inviting shoppers and browsers alike to come in, look around, and discover something unexpected. Together, Bluebird owners Michael & Maureen source many of the pieces that find their way into the shop. They've created an eclectic mix of antiques, vintage finds, and carefully chosen new pieces, along with clothing, jewelry, linens, and other finds, all at a range of price points. That accessibility is important to them both. They hope anyone who comes through the door will have the opportunity to find something they love to take home. “In many ways the shop is a reflection of our taste,” says Maureen. “The things we choose to bring in are brands we love and use at home. Like Marius Fabre soaps, Harlem candles, organic lavender sachets and bouquets, palo santo, and sage. With vintage clothing we look for names, quality, designers, and a wow factor. We love Pendleton, vintage Louis Vuitton, and Ralph Lauren among others. We literally bring in new items every day.” ‘Vintage’ now feels less about filling a home with antiques and more about finding the right ones. A piece doesn't have to

match everything around it. In fact, sometimes the thing that doesn't quite match is what makes a room feel collected rather than decorated. And young shoppers are having fun with it. “Many shoppers coming in are young,” says Maureen. “It’s really fun. Our children taught us about the importance of social media when we opened the store, but these young customers are teaching us so much about what is ‘in,’ style wise—stacking jewelry, coach bags, Louis Vuitton, and more. We are seeing customers choosing items they plan on actually using. Gone are the

days of putting things away in a China closet for some day. Customers buy and use items, as it should be. Life is to be lived, items to be enjoyed.” Bluebird is excitedly planning for the Christmas season. Of course they will have plenty of vintage and antique Christmas items, and they look forward to providing a welcoming, cozy place where people can shop for a simple, inexpensive gift. No matter the time of year, there’s something joyful in finding a one-of-a-kind treasure from the past that will make you, or someone you love, smile for years to come.

ASHION F FORWARD THE FASHION TRENDS WORTH KNOWING. THE CLASSICS WORTH KEEPING.

Every season comes with a new list of what’s “in.” But great style has never been about checking every box. Fall 2026 gives us plenty to play with, from bold proportions and rich texture to updated tailoring, statement accessories, and unexpected color. Our take? Know the trends. Borrow the ones you love. And build the rest around the classics that have earned their place. This fall, some trends never really left. Polka dots and animal prints continue their reign, proving we're not done with them just yet. Accessories are also still holding strong this season: headbands and headscarves are everywhere, oversized statement bags are stealing the show, and yes, the 90s claw headband is making its comeback, proof that if you held onto it the first time around, your patience is about to pay off. Fringe isn't staying in one lane either; it's showing up on bags, jackets, and skirts alike, adding movement and texture wherever it lands. On the color front, chartreuse and burgundy are leading the pack, with pops of cranberry and red rounding things out. Bold stripes are also still having their moment, specifically collared long sleeve shirts and cardigans, while funnel-neck jackets bring an architectural edge to outerwear. And from the ground up, chunky-soled mules and Mary Janes are the footwear pick of the season. Trends may change the conversation each season, but the foundation of a wardrobe tends to change much less.

We asked Larry Strauch of LI Auto Concierge, whose years in the automotive business give him a firsthand view of what buyers are asking for, which models are getting attention and where the real opportunities may be in the market. Our conversation covers what shoppers should know before making their next move. THE LIST: Is there a better time of year to buy or lease? LI AUTO CONCIERGE: Right now, we’re coming into one of the best times of year to buy or lease a new car. Remaining 2026 models and incoming 2027s are being priced relatively aggressively compared with previous years.

LI AUTO CONCIERGE: Absolutely. The Volkswagen Tiguan and BMW X3 are two that stand out to me. Both offer a lot for the money and are worth a closer look, especially for buyers comparing features, comfort, and overall value across brands. THE LIST: What are some of the biggest mistakes you see people make when shopping for or negotiating a new vehicle? LI AUTO CONCIERGE: One of the biggest mistakes is feeling pressured and caving in before you fully understand the deal. A vehicle is a major financial commitment, so take the time to make sure the numbers and terms work for you before you commit. THE LIST: With so much information available online today, what does an auto concierge provide that a buyer may not be able to do as easily on their own?

LI AUTO CONCIERGE: The Infiniti QX60, Volkswagen Atlas, BMW X3 and BMW X5 are all getting a lot of attention.

LI AUTO CONCIERGE: There is too much disinformation out there. I see it every day. People are using AI to shop for cars, and while it can be a great starting point, not everything they find is reliable or current. We can point them in the right direction without wasting their most valuable asset, time.

Butternut Squash Rigatoni Pie This Butternut Squash Rigatoni Pasta Pie is one of our favorite fall recipes, and one worth bringing back. It takes a little more effort to assemble, but the effort pays off with the wow factor in both presentation and flavor. It has all the comfort of an Italian pasta dish with the fall ingredients we love. Roasted butternut squash, garlic, shallots and fresh sage are puréed into a creamy Gouda sauce, then baked with rigatoni and topped with crispy, salty prosciutto. An elevated twist on the way we serve pasta that’s impressive for guests and perfect to make this season. INGREDIENTS

• 2 tablespoons extra virgin olive oil • 4 cups cubed butternut squash • 4 cloves garlic, smashed • 1 shallot, halved • 2 tablespoons chopped fresh sage • Chili flakes, to taste • Kosher salt and freshly ground black pepper

• 1 teaspoon honey • 1 cup milk • 1½ cups shredded Gouda cheese • 2 tablespoons salted butter • 1 cup shredded mozzarella cheese • 1 pound rigatoni • 8 slices prosciutto • 1 tablespoon fresh oregano leaves

DIRECTIONS

1. Roast the squash. Preheat oven to 425°F. On a baking sheet, toss the butternut squash, garlic, shallot and sage with the olive oil, honey and a pinch each of chili flakes, salt and pepper. Roast for 15 minutes, toss, then continue roasting for another 10–15 minutes, until the squash is tender. 2. Cook the pasta. Meanwhile, bring a large pot of salted water to a boil. Cook the rigatoni according to package directions until al dente. Before draining, reserve 1½ cups of the pasta water. Drain the pasta. 3. Make the sauce. Add the roasted squash mixture to a food processor with the milk, Gouda and butter. Add 1 cup of the reserved hot pasta water and purée until smooth and creamy. Season with salt and pepper. If needed, add a little more pasta water until the sauce reaches the desired consistency. 4. Assemble the pasta pie. Lightly grease a 9-inch springform pan with olive oil. Arrange the rigatoni upright, standing each piece on its end and packing them closely together, like little soldiers, until the pan is filled. Pour the butternut squash sauce evenly over the pasta, gently working the sauce into the openings of the rigatoni. Sprinkle the mozzarella over the top.

5. Bake. Arrange the prosciutto over the mozzarella and sprinkle with fresh oregano. Bake for 25–30 minutes, until the cheese is melted and the sauce is bubbling. 6. Serve. Let the pasta pie rest for 5 minutes before carefully removing the sides of the springform pan. Slice and serve warm. KITCHEN NOTE: Don’t have the patience to stand all that rigatoni upright? Toss the pasta with the sauce, top with mozzarella and prosciutto, and bake it in a casserole dish instead. You’ll lose the “pasta pie” presentation, but not the flavor. It’s just as delicious.

Classic Turkey Noodle Soup Use your leftover turkey to make this simple and delicious turkey noodle soup. With vegetables, garlic, and fresh herbs, it’s the perfect hearty and comforting soup for a cold day and a great way to use those Thanksgiving leftovers.

INGREDIENTS

• 2 tablespoons butter • ½ cup diced yellow onion • 2 carrots, peeled and diced • 3 celery ribs, diced • 2 cloves garlic, minced • 1 teaspoon poultry seasoning • 8 cups low-sodium chicken broth

• 3 sprigs fresh thyme • 1 bay leaf • 3 cups cooked turkey, chopped or shredded

• 8 ounces wide egg noodles • 1 tablespoon chopped fresh dill • Salt and freshly ground black pepper, to taste

DIRECTIONS

1. Melt the butter in a large pot over medium-high heat. Add the onion, carrots and celery and sauté until softened, about 5 minutes. 2. Add the garlic and poultry seasoning and cook for another minute. Season lightly with salt and pepper. 3. Pour in the chicken broth and add the thyme and bay leaf. Bring to a gentle boil. 4. Add the egg noodles and turkey. Cook for 8–10 minutes, or until the noodles are tender. 5. Remove the thyme stems and bay leaf. Stir in the fresh dill. Taste and season with additional salt and pepper as needed. Serve warm. TIP: Don’t toss the turkey carcass. Use it to make homemade turkey stock, then substitute it for the chicken broth in this recipe for even more flavor. MAKE AHEAD: The soup will keep in the refrigerator for up to 4 days. The noodles will continue to absorb the broth and soften as the soup sits.

Caramel Apple Bread Pudding Caramel apples are one of our favorite fall treats. This bread pudding brings those same cozy flavors to the table and makes a delicious addition to a fall or holiday dessert spread. INGREDIENTS

• 6 cups day-old sourdough bread, cut or torn into small pieces* • 3 cups apples, peeled and diced • 5 large eggs, beaten • 3 cups half-and-half • ½ cup packed light brown sugar • ¼ teaspoon salt

• 2 teaspoons vanilla extract • 2 teaspoons apple pie spice • 1 (14-ounce) can sweetened condensed milk

• 1 (11-ounce) bag Kraft caramels, unwrapped

• ¼ cup butter, cut into small cubes

*Sourdough adds a subtle tang that balances the sweetness of the apples and caramel and holds up beautifully in bread pudding. Plain white bread may also be used. DIRECTIONS

1. Preheat oven to 350°F. Lightly grease a 9 x 13-inch baking dish. 2. Toss together the bread and apples and transfer to the prepared baking dish. 3. Whisk together the eggs, half-and-half, brown sugar, salt, vanilla and apple pie spice. Pour evenly over the bread and apples, gently tossing to coat. Let stand for 15 minutes to absorb. 4. Combine the condensed milk and half of the caramels in a microwave-safe bowl. Microwave for 1 minute and stir. Add the remaining caramels and continue microwaving in 30-second intervals, stirring between each, until melted and smooth.

5. Dot the bread pudding with butter and drizzle with about half of the caramel mixture. 6. Bake for 45–55 minutes, until the center is set but still slightly soft. Let stand for 5–10 minutes. 7. Reheat the remaining caramel sauce until pourable and drizzle over each serving. Serve warm, with vanilla ice cream if desired. MAKE AHEAD:

Assemble through Step 3, cover and refrigerate overnight. Allow a few extra minutes of baking time if baking directly from the refrigerator.

Pumpkin Pie Martini Creamy, spiced, and just sweet enough, this fall martini tastes a little like pumpkin pie in a glass. Serve it after dinner or shake one up when you're in the mood for something decidedly fall. Makes one cocktail. INGREDIENTS

• 1½ oz vanilla vodka, such as Stoli Vanil or Absolut Vanilia • 1 oz Irish cream liqueur, such as Baileys Original Irish Cream • ¾ oz pumpkin spice liqueur, such as Hiram Walker Pumpkin Spice or Mr. Stacks Pumpkin Spice

• Ice • Ground cinnamon or freshly grated nutmeg, for garnish Optional Graham Cracker Rim

• Finely crushed graham crackers • Maple syrup, for rimming the glass DIRECTIONS

1. If using the graham cracker rim, pour a small amount of maple syrup onto one plate and crushed graham crackers onto another. Lightly dip the rim of a chilled martini glass into the maple syrup, then into the graham cracker crumbs. 2. Fill a cocktail shaker with ice. Add the vanilla vodka, Irish cream, and pumpkin spice liqueur. 3. Shake vigorously until very cold, about 15 to 20 seconds. 4. Strain into the prepared martini glass. Finish with a light dusting of cinnamon or freshly grated nutmeg and serve immediately.
