the leaves are changing colors and the kids are back at school…ah. My son came home from college in May. We packed all his earthly possessions from his dorm room into a rented SUV and drove home.

Ten hours in a car with a 19 year old! We had lots to talk about for .the first hour, and then he went for the radio. He changed the radio stations (Sirius) after every other song because, well just because. Along with all his possessions came two very large bags of dirty laundry!

I lost 60 hours of sleep this summer, waiting up at night for him to come home. It seemed a text around midnight from me: “When will u b home?” would illicit the response: “soon” or “shortly,” which actually meant around 1:30a. When he was away at school, I did not worry about what time he came home. After working 5 days a week, my weekends would be spent cleaning. Why bother? I would find dishes in his room with half-eaten sandwiches, or watermelon rinds or cookie crumbs on them. The piles of laundry were never-ending as he used two towels when he showered in the morning and then again in the evening before he went out. They were never the same two towels. He was out with his friends either at a party or just having “a slice” but I had to schedule family time with him. Sometimes he would sit in his room with his earbuds on, never hearing me call him down for dinner. I would have to send him a text. His dad drove him back to school on August 25th, to begin his sophomore year. As they motored away, I got teary-eyed. I miss my son and all his laundry, dishes and late nights. Children grow up so fast, and I am grateful he will be back again for a week at Thanksgiving.

Q: What are the differences between UV Tanning and UV free Tans? A: While there are many differences when comparing spray tanning to

UV beds and sunbathing, the biggest factor is safety and health! Many people are turning to spray tanning to get that beautiful bronzed look because it is MUCH safer than the alternative. UV beds have been around for decades and have been linked to skin cancer, including melanoma (the deadliest type of skin cancer), as has sunbathing. If that isn’t enough, premature aging is a HUGE factor when it comes to tanning in the sun and in UV beds. Unprotected exposure to UV rays has been known to break down the fibers and collagen in the skin causing loosened folds and wrinkles. Sunburns and hours of sun exposure also result in permanent dark spots, leathery texture of the skin and permanent darkening of the skin as well. The side effects of UV exposure may not show until years after a sunburn or suntan so avoiding UV exposure is essential to keeping your skin beautiful and healthy!

Q: Will I turn orange? Will I be too dark? A: This stigma has been associated with Spray Tanning for some time

now. Turning orange is only likely if one tries to tan themselves with an over the counter sunless tanner or tries to go too dark, too soon. JTM, DDS Brushing teeth twice daily, flossing every day, rinsing with mouthwash and only chewing sugar-free gum. The List How long should someone brush their teeth for? JTM, DDS Always brush two minutes, two times a day, every day. Research shows that brushing for two minutes is the single most important method for reducing plaque and preventing cavities, gingivitis and other plaque-related diseases. Brushing for two minutes twice a day is crucial to maintaining healthy smiles. Proper brushing technique cleans teeth and gums effectively.

Remember to replace your toothbrush every three to four months. Researchers have established that thousands of microbes grow on toothbrush bristles and handles. Most are harmless, but others can cause cold and flu viruses, the herpes virus that causes cold sores, and bacteria that can cause periodontal infections. The List How often should I floss? Life's Roughest Storms Prove The Strength Of Our Anchors As you all are aware, our community experienced a storm in August that produced record rainfall of over 14 inches in a 12 hour period. A number of residents and businesses have been affected by this and suffered loss. Unfortunately, Doggie U, Long Island’s largest indoor training facility, was not spared. Their building suffered flooding and a roof collapse. This caused major damage to the Agility and Obedience training equipment, as well as loss of dog food and merchandise. The owners, Rolissa and Ginny, stated that the process is already underway to move forward in getting Doggie U rebuilt and running, thanks to their wonderful members, friends and caring dog community near and far. Although they had insurance, with damage as significant as this, it is never enough. Some of their students have put in place relief sites to aid in the recovery. Ginny and Rolissa add that they are thankful no one was injured, and the losses were confined to things that can be fixed or replaced. Humbly, they feel overwhelmed to see the entire dog community continuing to help their own. Let’s share this information and continue to send support for the school dedicated to the well being of our pets.

The longer I live the more I realize the impact of attitude on life. Attitude to me is more important than facts, the past, education, money, circumstances, failures, successes and what other people think or say or do. It is more important than appearance, giftedness or skill. It will make or break

a company, a church, a synagogue or a home. The remarkable thing is, we have a choice every day regarding the attitude we will embrace for that day. We cannot change our past…we cannot change the fact that people will act in a certain way…we cannot change the inevitable. The only thing we can change is our attitude. I am convinced that life is 10% what happens to me and 90% how I react to it and so it is with you also. We are all in charge of our own attitude.” A close friend shared this thought with me, after she read my book, Bird on the Tracks. I wrote about being hit by the train in Bay Shore 30 years ago. I decided to share how I managed to get back on my feet again after reading a recent article in the paper about

a woman being hit by a car and her posttraumatic stress disorder. I realized many people out there don’t know what to do first when life gets difficult. Outcomes in life in the end, are controlled by us. We can become determined, push through our problems and get even stronger or we feel sorry for ourselves. The feel good outcome: build personal strength with a smile. We seem to admire others that can do this but are not sure if we can do it ourselves. The short answer is YOU CAN DO IT, TOO. Galanga, an authentic Thai restaurant in Bay Shore, has a modest curb side appearance and a plain and simple interior that is comfortable enough for casual dining. In fact the decorator in me would add some custom built banquettes, add texture with coordinating fabrics and some mood lighting and this space could pop. Regardless of its lack of ambience, once you taste the flavorful food, this place will become a culinary favorite. I first learned of this still new to the area restaurant from my neighbor, who moved out here from Manhattan. She told me that it is by far the best place around for Thai food. Not so familiar with Thai food, it took me some time to get there but I recently made it a point to see what it was all about, and I was impressed. The most impressive attribute of Thai food is the technique of cooking and the balance of its intricate flavors. The chef combines a complex mix of at least three and up to four fundamental taste senses in each dish or the overall meal: sour, sweet, salty and spicy. Each of these flavors serves a purpose of its own, but also harmonizes with the other flavors to intrigue and excite your taste buds. There are levels of spicy (1-5) and you can request a milder or spicier version on every dish. Its distinctive taste is due to the abundance of fresh herbs and seasonings found in Thailand. Tamarind is a deep brown fruit that is somewhat sour and is used alone or in combination with lime juice. The primary salty element in Thai food is fish sauce. Freshly squeezed lime juice is a favorite choice in many Thai dishes. Additional flavors in Thai food come from coconut milk, garlic, galanga (blue ginger), coriander/cilantro, lemon grass, shallots, pepper, kaffir lime leaves, shrimp paste, and of course, chilies. Another major flavor is holy basil, grown in Thailand and is a notably different flavor than the basil we are familiar tasting spicy not sweet. My guests and I were greeted with a warm and pleasant welcome by Andy, who was knowledgeable and helpful in suggesting various dishes. Our meal began with an array of

appetizers, each outstanding. The first was a Chicken and Beef Satay, grilled, skewered, quite tender and accompanied by a delicious homemade peanut sauce. This dipping sauce is made with ground roasted peanuts and ingredients such as red curry paste, coconut milk, fish sauce and tamarind. The other three appetizers were fried, yet were not at all greasy. They flash fry to create a delicate crispy outside coating, locking in the flavor and moisture. The Thai style fried calamari (Pla Muok Tod) was excellent and the Curry Samosa is filled with a perfect combination of comfort foods; potato, onion, carrots, mushrooms, curry powder and other Thai seasonings. The Gang Sarong (Shrimp Noodle) was my favorite. It is flavorful and perfectly cooked shrimp delicately wrapped with shredded noodles, flash fried for a combination of crunch and succulence. We tried Tom Kha Gai, a spicy Thai coconut milk soup with chicken, mushroom, lime juice & galanga. The scrumptious Pad Thai, a popular Thai dish, is a combination of noodles with baby shrimp, egg, tofu, sprouts and ground peanuts. Along with the Pad See Yu, a dish of broad rice noodles with Chinese broccoli, eggs and your choice of beef or chicken, which was delightful. Khao Pahd Supparot, a coconut fried rice with chicken topped with ground peanuts & fried onions had a perfect combination of sweet and salty. The Basil Chicken, Gai Pahd Bai Ga-Paw uses a combination with other ingredients to impart a wonderful flavor to this chicken stir fry, a definite must try. The extensive menu is filled with an abundance of choices, so don’t forget to order Kao Niew Ma-Muang or fresh mango with sweet sticky rice topped with coconut milk for dessert. Galanga has a successful full take out business with its full menu available. Busier schedules and colder weather makes it a wonderful alternative to dining out. Whether you dine in our take out your palette as well as your pocketbook will be satisfied and I am indeed delighted to add this restaurant to the List. JL

INGREDIENTS: For t he cookies: • 2 cups all-purpose flour • 1 1/3 cups rolled oats (not instant) • 1 1/4 teaspoons baking powder • 1 1/2 teaspoons ground cinnamon • 1 teaspoon ground ginger • 1 teaspoon fine salt • 1/2 teaspoon ground nutmeg • 2 sticks (8 ounces) unsalted butter, at room temperature • 1 cup packed dark brown sugar • 1 cup granulated sugar • 1 large egg, at room temperature • 1 teaspoon vanilla extract • 1 (15-ounce) can pumpkin purée (not pie filling; about 1 3/4 cups) For t he glaze: • 1 1/2 cups powdered sugar, sifted • 3 tablespoons plus 1 teaspoon milk (not nonfat), plus more as needed • 2 tablespoons maple syrup INSTRUCTIONS For t he cookies: Heat the oven to 350°F and arrange the racks to divide the oven into thirds. Line 2 baking sheets with parchment paper; set aside. Whisk the flour, oats, baking powder, cinnamon, ginger, salt, and nutmeg in a medium bowl to aerate and break up any lumps; set aside. Place the butter and sugars in the bowl of a stand mixer fitted with a paddle attachment and beat on medium speed until lightened in color and fluffy, about 5 minutes. Stop the mixer and scrape down the paddle and the sides of the bowl with a rubber spatula. Add the egg and vanilla, return the mixer to medium speed, and beat until incorporated, about 30 seconds. Stop the mixer and scrape down the paddle and the sides of the bowl. With the mixer on low speed, add half of the reserved flour mixture and mix until just incorporated. Add half of the pumpkin and mix until just incorporated. Repeat with the remaining flour mixture and pumpkin. Drop 8 dough rounds per baking sheet by the scant 1/4 cup, staggering them 2 inches apart on the prepared sheets.

Place the remaining dough in the refrigerator. Place both sheets in the oven and bake for 12 minutes. Rotate the pans from top to bottom and front to back and continue baking until the cookies are golden brown on the bottom and around the edges, about 12 minutes more. Place the baking sheets on wire racks and let the cookies cool on the sheets for 3 minutes. Using a flat spatula, transfer the cookies to the wire racks to cool completely. Let the baking sheets cool to room temperature and then repeat with the remaining dough (you can use the same parchment paper). When all of the cookies are baked, set the pieces of parchment paper aside. For t he glaze: Place all of the ingredients in a medium bowl and whisk until evenly combined. (You may need to add more milk by the 1/2 teaspoon if the glaze is too thick to drizzle.) Place all of the cooled cookies on the reserved parchment sheets. Dip a fork into the glaze and drizzle it over the cookies in a zigzag pattern. Let the cookies sit at room temperature until the glaze has set, about 20 minutes.

Italian Stuffed Artichokes

YIELDS: 6 servings | PREP TIME: 20 min | COOK TIME: 30 min

INGREDIENTS:

Mix into a large bowl and add bread crumbs, Parmesan cheese, Romano cheese, green onions, parsley, garlic, salt, black pepper, and cayenne pepper; toss to combine. Cut about 3/4-inch off the tops of each artichoke. With your scissors, snip off the pointed ends of each artichoke leaf. Rub a lemon on the cut ends to prevent browning. Slice off the stem end of each artichoke so that they sit up straight. Spread the leaves of each artichoke as much as possible, and pack in a generous amount of bread stuffing around each artichoke. Tap each artichoke gently to let any loose stuffing fall off. Stand them in a casserole or roasting pan just large enough to hold them in a single layer. Add water to a depth of 1 1/2 inches. Pour a generous amount of olive oil over each artichoke, letting it seep in. Top each artichoke with a slice of lemon. Bring the water to a boil, cover, reduce heat and steam the artichokes approximately 1 hour (depending on size of artichokes) or until the leaves pull off easily. Test for doneness by pulling out a leaf and tasting for tenderness. Check the water level after about 25 minutes, and add more if necessary. Serve hot or at room temperature. The stuffed artichokes can be prepared in advance and reheated before serving. Any leftover stuffing keeps for 2 weeks in the refrigerator and longer in the freezer.

Option: Place Mozzarella or Fontina cheese over the top and place briefly under a broiler until cheese melts and begins to brown. Top with Garlic. Makes 6 servings.

What began as a monthly program has grown into a nationally recognized charity with services being provided every Monday and many other days as well. Currently they have 10 salons across the country and one salon in London providing the Mondays Program. Their vision is to be able to educate other communities on how they can meet the needs and challenges of their own community members stricken with this disease.

Long Island Hospitality Ball Fundraiser The 2014 Long Island Hospitality Ball was held in June at the Crest Hollow Country Club in Woodbury and successfully raised $361,000 for the American Cancer Society. The gala was created and organized by Keith Hart, a hospitality industry mainstay and cancer survivor, to raise funds for charity by showcasing offerings from the region’s top restaurants, wine and spirit brands, nightclubs and entertainers as well as hotels and catering halls. “A food industry showcase”, it was a night of sensory delights - light, sound, food and drink - enjoyed by 1,500 guests and made possible by more than 150 industry sponsors. A Gala affair indeed for a fabulous cause. The List Magazine wants to give special thanks of appreciation to all the wonderful organizations, volunteers and Long Islanders who are so dedicated in helping to raise money and awareness for ALL CANCERS among other special causes.
