What is your cooking style?

It’s a classic answer, but I would say it’s quite varied. I‘ve been lucky enough to experience and learn different cooking styles from so many people all over the world, from cooking for the South African army, ski seasons in Scotland and moving to the Isle of Man.

Throughout my personal life and career I’ve had the chance to try out so many styles of cooking so it’s quite hard to narrow down. But of course, if I follow my true South African roots, I love cooking foods over a long period of time - this probably comes back to my love for the South African Braai, which we often cook slowly to help enhance the smokey flavours into different dishes.

What is your favourite food?

T his question is always a hard one for chefs, but I’m going to have to say a Lamb Potjie (stew) cooked over the braai in a cast iron pot. Cooking a lamb stew on the braai really allows it to absorb the smokey flavours of the fire, adding to the already delicious taste.
