Ingredients

50ml Sipsmith Zesty Orange Gin

20ml fresh lemon juice

10ml sugar syrup

1 egg white

Fresh orange zest and an orange twist (to garnish)

Method

Add all the ingredients to a cocktail shaker

First, dry shake (without ice)

Next, add ice and shake again to form a creamy liquid Double strain into a chilled coupe glass Garnish with fresh orange zest and an orange twist Enjoy!

I am delighted to introduce you to the first issue of our new bi-annual members’ magazine, TIDAL. I know how important regular updates on news, events and our offerings at The Lensbury are, so I hope you like this new format. As ever, your feedback and comments are always welcome; please email us at feedback@lensbury.com.

Having joined the team during the summer of 2022, shortly before the Lionesses arrived for their victorious summer stay (more on page 10), I feel very proud to have joined this incredible organisation. With its warm and welcoming membership, great sporting heritage and stunning location, The Lensbury is filled with potential; I am enjoying working with our incredible team as we look to realise it! Thank you for your feedback and recommendations following our members’ survey at the end of last year. As we realign our vision and build on The Lensbury as a premium private Members’ Club and riverside destination, your input has been invaluable in setting our priorities for the year and giving clear direction for the years ahead. We couldn’t be more excited about the journey we are on, and with the introduction of TIDAL, we now have a platform to share stories, ideas, inspiration and new initiatives

with you, to keep you fully updated and your diary filled.

Included in this issue is our calendar of events, a sneak preview of our latest refurbishment plans, and some background around our new Charity of the Year, The Friends of Teddington Memorial Hospital. The summer is already shaping up to be another one to remember, with plans in place for our new Riverside Weekender family festival in July, the reopening of our Sipsmith Secret Gin Garden (by popular demand) and the launch of a ‘Lunch @ Lensbury’ picnic hamper concept, enabling you to make the most of our beautiful grounds in a truly alfresco fashion. These are just some of the exciting things planned on the horizon.. the team and I very much look forward to seeing you around the club this summer.

YOUR NEW MEMBERS’ CAFÉCOMING SOON

The team has been busy behind-the-scenes working on plans for an exciting new space for members and we are delighted to share a first-look at concepts for a new members’ café, opening later this year.

This new space will provide a dedicated social hub for like-minded members to relax, socialise or simply grab a pre or postworkout coffee. Located in the existing Dunbar Room, the members’ café is the first phase in our extensive redevelopment plan for food and drink spaces at The Lensbury over the coming year.

Designed to feel open, light and natural in style, the new area is the perfect spot for socialising with family and friends, reading the daily paper or catching up on a few of those all-important work emails. The caf é will feature sharing tables for member catch-ups, high bench style seating for laptop users and comfortable sofas for those looking to simply unwind.

Frances Blackham, Design Director from, Trevillion said, “The design will take inspiration from the stunning location, gardens and grounds and the rich heritage that surrounds The Lensbury. It is our intention to create a social space at the heart of the clubhouse with a homely feel by using natural and tactile materials with a fresh colour palette.”

Lukasz Stawicki, The Lensbury Operations Director added, “I cannot wait to see this new space take shape later this year and we are already working closely with the team to develop a fresh new menu, featuring delicious sandwiches, salads, bites and fresh bakes that can be enjoyed throughout the day. Aside from a new food offering, we are also looking to partner with a new coffee supplier to ensure that all-important brew is better than ever - watch this space!”

LIONESSES AT THE LENSBURY

A summer of success that inspired the nation.

The Summer of 2022 was certainly one to remember and one that will go down in history as the Lionesses roared to victory in the UEFA Women’s EURO final. Their 2-1 win against Germany in the final was the highest attended match in EURO history - for men and women - and the most watched women’s football fixture ever in the UK.

And so it was with great pride that we were chosen to host the Lionesses throughout the four-week tournament as The Lensbury became their basecamp for both sleeping and training.

It was their performances both on and off the pitch that captured the hearts of the nation and we took the opportunity to chat to England defender Jess Carter about how the team’s success has proved inspirational for so many. Jess said: “For us, we want to inspire the next generation. We want to inspire everybody but to be able to have little kids look up to

us and say ‘I want to be them’ and ‘I can be them’ is really special. For me, I just hope that people all over the world see this and encourage young kids to get involved, play football and follow their dreams.”

Following the Lionesses basecamp stay, Managing Director, Claire Llewellin-Davis said, “The team and I couldn’t be prouder to have hosted the Lionesses and to have played a small part in what was an unbelievable summer for English sport. The team’s performance both on and off the pitch has been an inspiration to us all and we are all delighted to see the long overdue rise and support of women’s football in this country.” Claire continues, “Over the years, The Lensbury has played host to many elite sports teams including women’s rugby and football teams and we are all looking forward to continue championing and supporting women’s sport in the months and years ahead, and building on the incredible legacy left by the Lionesses.”

Kids’ Activities

Let your little ones show off their best serve in our kids’ activity camps. Running throughout half-terms and summer holidays, it’s the perfect chance to learn a new hobby or take your game to the next level. With a mixture of half day and all day camps, we have sessions to suit a variety of ages.

A staplepiece of The Lensbury, our 24 magnificent courts, from grass to artificial clay, are the perfect place to practice your serves, learn from the experts and compete against The Lensbury’s best. Not only is The Lensbury the perfect place to play, it’s a great place to watch as well! Our annual tennis tournament puts the Lensburys’ best up against each other in a fierce match (with drinks flowing and some delicious snacks too, make sure you put this down in your diary!).

Renowned for our quality tennis facilities, The Lensbury courts have welcomed some of the world’s best players over the years including Jimmy Connors, Steffi Graf, John McEnroe, Björn Borg, John & Chris Lloyd with many more to come in the future!

Having cooked for historic figures in the past, The Lensbury members are in expert culinary hands with our Executive Chef Neil at the helm of the kitchen and we are looking forward to some exciting developments in the kitchen.

Keen to learn more about the man behind our menus, we caught up for a chat with our very own culinary hero.

What is your cooking style?

It’s a classic answer, but I would say it’s quite varied. I‘ve been lucky enough to experience and learn different cooking styles from so many people all over the world, from cooking for the South African army, ski seasons in Scotland and moving to the Isle of Man.

Throughout my personal life and career I’ve had the chance to try out so many styles of cooking so it’s quite hard to narrow down. But of course, if I follow my true South African roots, I love cooking foods over a long period of time - this probably comes back to my love for the South African Braai, which we often cook slowly to help enhance the smokey flavours into different dishes.

What is your favourite food?

T his question is always a hard one for chefs, but I’m going to have to say a Lamb Potjie (stew) cooked over the braai in a cast iron pot. Cooking a lamb stew on the braai really allows it to absorb the smokey flavours of the fire, adding to the already delicious taste.

Tell us about your plans at The Lensbury?

With spring just around the corner, I’m really excited to launch the new seasonal menu, which myself and the team have worked hard to put together. This year I’ve tried to add in some South African hints to the menu. I wanted to implement barbecue influences and hopefully give everyone some inspiration to try out some new recipes at home. I am also looking forward to sharing a newly developed outdoor dining experience this year including food in our Sipsmith Secret Garden, summer BBQs and picnic baskets to enjoy in our fabulous setting.

When did you first realise you wanted to become a chef?

As a young boy, I always remember being around the kitchen helping my parents. My mum worked as a caterer on the weekends and I remember helping my dad make different pickles and jams. I’m originally from Johannesburg in South Africa, where the cooking culture is extremely varied, so I grew up trying so many different foods and of course watching my parents cook on the famous South African Braai - this is similar to a typical English BBQ for those who don’t know, but slow cooked over a wood fire.

Tell us something we don’t know about you?

I ’ve been a chef for over 30 years now, starting at the bottom and working my way up to Executive Chef. I’ve experienced a lot of great memories in my time, cooking on private planes, boats and trains, you name it and I’ve probably cooked there! However, one of my best experiences was having the pleasure to cook for Nelson Mandela. I cooked for him whilst I was back in South Africa for a 2 week period and he was there for some well deserved time off. Besides the pressure, it was such a great experience for me and a monumental moment in my career. Fun fact, he really enjoyed eating simple food and some traditional dishes like Chicken Feet, and Cow Heels.

SUMMER RECIPE: STICKY HOISIN AUBERGINE ‘RIBS’

VEGAN STICKY HOISIN

AUBERGINE ‘RIBS’

INGREDIENTS

‘Ribs’ Marinade

25ml Hoisin Sauce

10g Smoked Paprika

10g Garlic Clove (minced)

15g Cajun Spice

5g Five Spice

100ml Water

1kg Aubergines cut lengthwise into 4

Basting Sauce

15ml Tahini (sesame paste)

160g Hoisin Sauce

50ml Sweet Soy Sauce

To Serve

500g Tenderstem Broccoli

5g Coriander Leaves

3 Spring Onions (chopped into rings)

14g Sesame Seeds

CHEF’S TIPS

1. If you’re feeling meaty, swap the aubergine for some delicious chicken!

2. Blanch your vegetables to bring out all those tasty natural flavours.

3. If you don’t have any tahini, swap it with some roasted

4. sesame oil.

5. Never overcrowd the pan, a few items at a time works best!

6. There’s no such thing as too much garlic...

7. Finish your dish by squeezing some lemon over your food to enhance the flavours.

INSTRUCTIONS

‘Ribs’ Marinade

1. Pre-heat the oven to 180 °c.

2. Add all the ‘ribs’ Marinade ingredients (except the aubergine) into a saucepan and set aside.

3. Cut the aubergines lengthwise into 4 even ‘ribs’ and place on a baking tray and into the pre-heated oven for 15 minutes, turning every 5 minutes.

4. When the aubergines are nearly ready, head back over to the hob and bring the marinade sauce to the boil for 1 - 2 minutes. Do this on a medium to high heat whilst slowly stirring to prevent from burning.

5. Once the aubergines are evenly grilled, transfer the aubergine slices and the heated marinade into a bowl, coat evenly and place to the side.

Basting Sauce

1. Next, add all the Basting Sauce ingredients into a saucepan and bring to the boil, keep stirring until the sauce reduces.

2. Place the aubergine ‘ribs’ onto an oven tray (skin side down) and glaze the ‘ribs’ with the Basting Sauce and bake for another 5 minutes. Repeat this 2 - 3 times.

To Serve

1. Slice tenderstem broccoli and blanch in boiling salted water for 35 minutes. Serve on top of your aubergine ‘ribs’.

2. Sprinkle coriander, spring onions and sesame seeds on top.

3. Tuck in!

Myths around summer bodies are certainly true, they are built in the winter. But whatever your ambition, it’s never too late to start your fitness routine.

The spring and summer months are the perfect time to kick-start or intensify your training as increased levels of vitamin D improve natural day-to-day energy. The increase in this vitamin also releases hormones that help make us happier whilst also boosting our metabolism – improving calorie burn by up to 25%! Why wouldn’t you make the most of this extra calorie burn?

Our ancestors were built to hunt, lead active lifestyles and so establishing daily fitness routines in the spring can really help to offset the negative effects of a modern, busy lifestyle. Not only that,

1. Progressive overload

Make sure you keep track on what weight and repetitions you do for each exercise, so you can ensure you are gradually adding weight, to help your body adapt and build muscle.

2. Add pauses and slow tempo repetitions

Having control over the technique of any exercise is crucial when building muscle. Adding a pause where you find the exercise most difficult e.g. at the bottom of a squat, can help to build extra muscle without having to increase the weights, repetitions or sets.

Summer can be tough on our skin and sometimes we just don’t know what to do to help it. That’s why we had a chat with our specialist Spa Manager, Lauren Wicks, who gave us a handful of tips and tricks to help transition our skincare routines become a little more summer friendly!

SPF SPF SPF!

It might seem obvious, but of course I had to start with SPF. Daily use of sun protection is non-negotiable and even more vital during the summer months. It’s crucial that you stock up and remember to apply frequently throughout the day. UVB rays are even more prominent during the summer months and come directly from ultra violet light, so not applying your SPF regularly can result in burning layers of the skin which can lead to issues in later life. Hydrate

It’s essential to stay hydrated throughout the day, especially after a day of soaking up the summer sun. Water is a vital part of skin health and a fundamental part of everyday life, so getting in the litres is a key way to look after your skin.

Tip: Treat yourself to a hydrating facial at the start of spring, this will help clean up any blocked pores and hydrate your skin ready for the upcoming drier months.

Double Cleanse

Double cleansing is a great way to remove all products applied to the skin throughout the day. With your skin already being drier, double cleansing is a great way to remove all the dirt without having to keep washing your face which can dry out the skin even further.

Tip : You may be asking why do I need to do it twice? Well, the first cleanse allows you to remove any products, dirt or oil that has built up throughout the day whilst you’ve been out and about

When loading on the SPF, moisturiser is quite often forgotten and replaced with suncream, however the key is to replace your regular one with a lighter one to help retain the moisture in your skin during the drier months.

Tip: Try keeping your moisturiser in the fridge, this will allow it to stay cool which also benefits your skin when applying!

Following a triumphant performance in last year’s Dragon Boat challenge with our women’s team winning their division and an incredible 2nd place finish from our mixed team, we are raring to go again this year. Raising money for our new Charity of the Year, The Friends of Teddington Memorial Hospital, we are taking on the tough competition from West London with our eyes fixed on the prize. If you are planning on visiting the Hampton Court Flower Show this year, let us take you with our chauffeur boat service and arrive in style! If you fancy something a little more active, try out one of our kayaks and take a trip down the river to see some of our favourite spots along the route including The Queens Promenade (2.1 miles), the Royal Canoe Club (1 mile) and Kingston Bridge (1.4 miles).

The Friends of TMH Marketing and Communications Manager, Christine Southern commented on the announcement: “We are delighted to have been chosen as The Lensbury’s Charity of the Year for 2023. It is fantastic that so many members voted for us. We look forward to partnering with The Lensbury to raise valuable funds for vital projects supporting the staff and patients of Teddington Memorial Hospital for the lasting good of our community.”

Our support will help raise funds for the following projects; refurbishment of the waiting area for relatives of patients to provide a more comfortable space, a makeover of their Wellbeing Garden to create a much-needed wellbeing haven, and other project-based initiatives including specialist medical equipment to support the community that is not funded by the NHS.

A Day In The Life Of Head Gardener Karl Smith

Ever wondered what it’s like to be in charge of 25 acres of glorious land? Wonder no more. Karl Smith, Head Gardener at The Lensbury is here to walk us through his daily schedule and shares some exciting upcoming projects with you.

“It’s the beginning of the month and we already have lots to prepare for the upcoming season. Myself and my colleague, Zoe, kick off with the monthly visual inspection of the grounds, this is part of our safety plan and also occurs when any high winds may arise throughout the season. With so many trees (322 to be exact!) throughout our grounds, there is a lot to look for during the inspection including:

Checking the base or buttress of the trees for any fungus, as this can be a sign of decay at the root. When surveying the trees it’s important to take an extra second to look around as fungus can often occur up the sides of the trunk. Some can be of no harm to the trees, but a firm tap on the side of the trunk will confirm if this is the start of decay or not.

Look for discolouration of the bark or peeling/damage to the trunk. These can also be indicators of poor health.

Look for any holes at the base of the trees.

Look up into the canopy of the trees. Checking for any damaged or broken branches is extremely important as these can become health & safety hazards. They can also be indicators of poor health which will require further investigation by an arboriculturalist.

Having completed the visual inspection, Karl and Zoe then take the time to help the wider grounds team with any upcoming events.

The Lensbury is home to over 300 different varieties of trees,from common species like Lime trees to the more exotic SorbusAria which produce white/pink flowers followed by red berries and beautiful autumn colours!

“As the day comes to a close it’s time for some grounds admin. Coming up this year we have some really exciting plans for the grounds. At the moment we have some fantastic daffodil crops along the river banks and front entrance, we plan to increase these displays and add some more diverse bulb schemes to brighten up the grounds during the summer.

Karl added “Another key project we have been working on is looking out for our local wildlife around The Lensbury. This project isn’t part of our daily routine as we try to encourage natural environments for the wildlife, however to help we have introduced some wood stacks around the perimeters of the site, this will help initiate some of the rarer Beetle’s Larvae to nest and predate, such as Stag Beetles.

“We have also encouraged wild flowers around our pond and other areas within The Lensbury to help feed the bees, butterflies and moths. We aim to create more wildlife corridors in the future to encourage more diversity of wildlife.

“We have planted over 10,000 bulbs of different varieties over the years, and the plan is to plant thousands more, particularly under the tree canopies where year round growth is difficult for other types of flowers and schrubs.”
