Repeal of Country of Origin may be sign of apocalypse Despite claims to the opposite, the increasing chances of Donald (“You’re fired!”) Trump changing to I, Donald (”do solemnly swear”) Trump is not a FARM & FOOD FILE sign of the coming apocalypse.

By Alan Guebert Granted, the end could be closer than we think when any billionaire steps off his Boeing 757 airliner and declares, “I could stand in the middle of Fifth Avenue and shoot somebody and I wouldn’t lose voters.”

It’s more likely, however, the apocalypse will arrive in something far less breathtaking than a 757 and far more mundane like, say, a land-grant university extension bulletin. For example, here’s a Jan. 19 bulletin from Kansas State University that explains (I think) one of the many local options to 2016 federal farm program benefits:

“ARC pays the difference between the (5-year Olympic average MYA Price (OAP) X 5-year Olympic average county yield (OACY) X 86%) - MYA price X actual county yield. For example, $6.70 wheat OAP X 35 bu. OACY X 86% = $201.67) - $5.00 MYA price X 38 bu. actual county yield = $190 =$11.67 per payment ac. X 100 base ac. X 85% = $991.95.”

And, as I’m sure you noted while reading the explanation, this analysis is not complete because, of course, all is ...

“Subject to: Stop loss equal to 10% of gross guarantee or 10% X ($6.70 OAP X 35 bu. OACY) =$23.45 X 100 base ac. X 85% = $1,993. In this example, the payment is less than the maximum payment of $1,993, so FSA would pay $991.95 to the farmer.”

No, I’m not making this up. Congress, however, did. Yes, it’s crazy and yes, few on Capitol Hill know what this pretzelbending really means.

On second thought, this probably is more a sign of the times than a sign of

the end-of-times.

One sign the apocalypse is near is the dissidence on what the Center for Food Integrity says consumers want in food labeling and what farm groups say consumers will get in food labeling.

“It’s simple,” noted the very first sentence of a 2015 CFI report . “If you increase transparency, you will increase trust.”

The two groups most responsible for that transparency are “food manufacturers” and “(f)armers,” explained Charlie Arnot, CFI’s chief executive officer.

But while “consumers trust farmers,” Arnot said, “…they’re not sure they trust farming.”

That’s not clever double-talk; it’s an insightful explanation to the evergrowing disconnect between farming America and consuming America. In short, eaters like farmers; but they dislike how they farm.

That gap grew when farm and commodity groups successfully lobbied Congress last December to repeal Country of Origin Labeling for

imported meat and poultry. No COOL means less transparency and, in turn, less trust of farmers by consumers.

Now, just weeks later, a USDA Livestock, Dairy, and Poultry Outlook forecasts that U.S. consumers will see more imported, unlabeled pork in American stores because “COOL repeal likely means a slow increase of live swine imports.”

Interestingly, slow to USDA means that “Imports of Canadian live swine in 2016 are expected to increase about 9 percent, from 5.6 million head in 2015 to 6.2 million head this year.”

A 600,000-head increase in Canadian hog imports may not be apocalyptic to USDA, but the decrease it brings to domestic hog prices will trim U.S. farm profits while it pads global meatpacker profits.

That’s a terrible tradeoff — for farmers, consumers and the rural economy — now or in the best of times.

To the Editor: Minnesota is currently enjoying a surplus of about 1.1 billion dollars.

However, the current proposals by both parties don’t provide any relief for citizens who don’t own property or provide incentives to address the greatest challenge of our lifetime; which is health care. As the ecnomy picked up, most working class families have been asked to work more hours — providing less time for grocery shopping and healthy meal preparation. This has been a windfall to the fast food industry and the state of Minnesota through sales tax on lunch.

The State of Minnesota is missing out on a great opportunity to provide modest tax relief for all of the citizens of Minnesota, providing they make healthy choices for lunch. An employed family of four can easily spend $500 a year on sales tax just on lunch. This is a sneaky tax that hits working class families hard.

A much better way to give back some of this state’s surplus would be to have a sales tax waiver on lunches which contribute to a healthy lifestyle.

Requirements could be similar to other nutrition programs such as WIC. This

would provide the food service industry a major incentive to offer more healthy alternatives. There would be many long-term health benefits which would pay dividends by reducing our health care costs.

The benefits of this program are available to all citizens of Minnesota regardless if they own farm property, lake homes or single family homes.

College students would love this benefit (and we all know about the student loan crisis). For a family of four, this benefit would be about the same as proposals to reduce property taxes on 160 acres of farm land — provided they make the healthy choices for lunch. I believe this is a far better way to return the state’s surplus to the citizens of Minnesota.

We need a new generation of leaders who see the problems differently. However, getting into the legislature is a very difficult process for the average citizen. It requires raising a lot of money and time to get the message out in the public’s view. Current legislators have an enormous advantage.

short term. That’s because thanks to a devaluation of their currency, about 500 million bushels of soybeans sitting in storage because growers couldn’t afford the export tax are now being dumped on the market.

Q: You mentioned significant improvement in river travel for Brazil’s crops.

Baize: They can now transport a thousand miles upriver from their ocean ports. They’ve also improved channels on certain rivers so they can do barge traffic another 600 miles inland. These all flow into the Amazon. So for example, at Santé Rim where Cargill has a major facility, they now have an inland port facility where the river is 12 miles wide I’m told and over 200 feet deep. Yet you are 800 miles from the ocean. It would be much like taking an ocean-going vessel up the Mississippi to Minneapolis.

Baize: Their new government leader eliminated export taxes on wheat, corn, beef and sunflower seed which previously were in the 23 to 32 percent range. Plus they’ve cut the export tax on soybeans from 35 percent to 30 percent. The net effect is increased income opportunity for Argentina farmers.

New administration would have little impact on agriculture days. However, ask me five years from now if things are going to get better and we may still be in much the same situation. If we see interest rates suddenly jacking up, farmers could get in a world of hurt real fast.

Q: You travel the world, John.

Has agricultural technology now expanded worldwide?

Baize: American farmers still have a few advantages. New bio-technology coming out largely gets unwrapped first for us because we are first to get it approved. But after a year or so it starts showing up legally or illegally in Argentina, Brazil, Paraguay and elsewhere.

We’ve an advantage over the Europeans because they simply don’t get it.

British farmers are now suggesting they drop out of the European Union so they can start using bio-technology like the American farmers. They think Europe today is turning into an agricultural museum. European governments have shown enormous capability to continue stupid policies. I think at some point it will shift simply

because if you can’t compete because of some people’s misplaced fears you won’t be viable. Then your leaders have performed an unforgiveable injustice to your ability to be a solvent and important provider to world food.

Q: On that issue, 9 billion people are predicted to inhabit the earth by 2050. Current world populations are about 7.2 billion. Will there be enough food?

Baize: Barring some major calamity, my thinking continues that come 2050, we will still have surplus grain production in this world. Looking at history and mankind’s ingenuity to increase yields, I’m confident the world will continue to be well-fed.

I’m 67 years old. In my lifetime, look at how much we have seen in growth of food supplies. We’re still seeing real growth of productivity — record soybean yields last year, record corn the year before. And there are other areas of the world that can come into production if prices are high enough, and governments permit private capital to go to work. ❖

though they may be about our agricultural industry, politicians tend to understand where their food comes from. The old story when I worked on Capitol Hill was, ‘Every state has two senators and at least one dairy cow.’

Agriculture will continue to have a disproportionate amount of power in Washington relative to its size and number of voters. Everyone knows we need a strong food supply, especially its importance to national defense.

Q: How serious is this farm equity situation?

Baize: I think the next two to five years could be extremely difficult.

We’ve got a high valued dollar which is pushing down commodity prices. We’ve got too much supply in the world with record crops in South America, near records in North America and as much or more soybeans being planted in 2016. Global recession is slowing down China, the biggest importer of agricultural products be that grains or livestock and poultry. Our products are likely going lower to meet world prices.

Q: Yet thanks to technology and better genetics, productivity keeps increasing?

Baize: Very definitely. You can’t slow the technology appetite amongst not only U.S. farmers but farmers around the world. I think soybean yields will be increasing at a faster rate than corn because of the influx of many patented soybean varieties now into the market.

Q: Your reading on the mood of farmers this year compared with previous years?

Baize: I look out over the audience and I see a look of worry ... perhaps better described as ‘confidence worry’. The past three to four years they were elated. They were making more money than they ever envisioned, paying down debts and getting in great financial positions. But now they recognize that ‘the worm has turned’ and they’re having to hunker down to figure out how to cut their costs, reduce their outlays, maximize their profits — if any. But American agriculture is still the giant, still financially strong and capable.

I can remember looking over farm audiences in the early 1980s. You didn’t see worry; you saw fear because they didn’t know if they could survive.

And many of them didn’t. It was terrible. Land values falling like a brick.

That won’t happen.

Farmer’s debt-equity ratios are much better than in the past. Most don’t need and won’t be buying new equipment. Yields are so much better these

Baize: We’re going to be seeing a rambunctious year in politics. That’s already underway. If for no other reason than Mr. Trump is going to get certain issues discussed that otherwise wouldn’t have been discussed. He is the absolute challenge to political correctness in the American scene. He’s made immigration an issue; he’s made Islamic migration a major concern; he’s made everyone aware of the need for a stronger, bigger wall across our southern border with Mexico. He’s rude, crude and liked! You have to admire how he handles the media.

He’s quick and clever at manipulating the media into covering him because they think he’s ridiculous and that has simply gotten him even more coverage.

The odds are the Republicans are going to win this election because we have a history in this country of going eight years before its time for a change in leadership from one party to another party.

Q: Should that happen, will our general population continue to be frustrated with the division within the ranks of Congress?

Baize: Probably not. You will just have a different set of people upset with Congress. The Democrats right now are upset because the Republicans are in control, but they like the White House. Republicans don’t like the White House right now, and many don’t like the Congress because they think the Congress is too conservative.

If you have a Republican in the White House and Republicans controlling both houses of Congress, we will get more things done but it predictably will alienate the Democratic side simply because they will not like a lot of what’s being done by this new Congress and President.

If Donald Trump were to get elected, he may become the most popular President in quite some time because he has support from Independents, Republicans and 20 percent of the Democrats. It will be interesting to see what happens.

Q: Should that scenario happen, any likelihood of major changes to U.S. agricultural policy and farm bill?

Baize: I think a new congress and administration would have little impact on agriculture. Agriculture has a huge amount of support regardless of who’s running the show. Uneducated

By DICK HAGEN The Land Staff Writer You’re seeing a few more of these strange structures dotting the Minnesota landscape. Hoop barns is the farm slang for them, but organic farmers call them high tunnel greenhouses. For Eric Branch and his twin brother, Carl Branch, their 24 by 96 foot high tunnel is generating enough income to finance their first year of college at the University of Minnesota, Saint Paul.

Eric is working on a plant breeding degree and Carl on plant biology. And these brothers are getting hands-on experience in their high tunnel produce and flower business at their farm Berry Ridge Farm, near Alexandria, Minn.

“We started in 2006. My dad had done some high tunnel farming earlier and he now has several structures. We got a loan from the FSA (Farm Service Agency) Youth Loan program. We built our unit and have now had 10 years of production,” said Eric.

Their structure started with a kit providing pre-fabricated hoops. The plastic vinyl covering was sourced locally. Getting it all together and

Due to growing concerns about leaching potentials of fall applications of anhydrous ammonia, Vetsch, Extension educators Brad Carlson and Ryan Miller tested N plus preplant and sidedress treatments, applied in combination in fall and spring.

“There is considerable interest in using sidedress N to fine tune current N recommendations. The typical practice is applying 60-75 percent of N prior to planting and then sidedress remaining N,” Vetsch said.

In these plots, sidedress N was applied as urea plus NBPT at V6-8 growth stage. NBPT reduces the risk of ammonia loss. Yields over this three-year study ranged from 220 bushels per acre and better at all three locations in 2015 with Lamberton data the highest, but lows in the 160 bu./acre category in 2013, also at Lamberton.

Coulter’s take home points were: • Increases in corn yield and net return are limited in frequency and magnitude with above-normal planting rates and uses of other inputs; • Weather can have a much larger impact on yield than agronomic inputs and it greatly influences optimum N management; • Have a Plan B and Plan C in case the weather causes challenges.

Coulter cautioned because of stagnant world markets, too much world production and the strong U.S. dollar, it looks like a tough year ahead for profitable crop production. In view of this challenging outlook, he suggested producers and crop consultants must also be economists with strict attention to details.

Coulter recommended controlling costs without impacting yield and conducting simple on-farm tests to evaluate your inputs. He advised being timely in planting, fertilizer application, pest control and harvesting. Coulter also reminded producers not to overlook the basics of crop rotation, hybrid selection, stand establishment and weed control.

By DICK HAGEN The Land Staff Writer ARLINGTON, Minn. — Discussing high yield corn systems, Jeff Coulter, University of Minnesota Extension corn agronomist showed his audience surprising yield data comparing three planting rates — 30,000, 36,000 and 42,000 at research centers in Waseca, Lamberton and Rochester. The 36,000 rate was the “yield champ” in seven of the nine comparisons.

There was also no yield increase with more than 30,000 seeds per acre in five of the 12 environments.

Studies were done in 2012, 2013, 2014, and 2015 at all three locations.

Coulter presented his findings at the 2016 Winter Crops Days from the University of Minnesota Southern Research and Outreach Center and the U of M Extension on Jan. 14, in Arlington.

Coulter also showed comparisons on two rates of nitrogen applications, 155 pounds per acre vs. 200 pounds per acre on 36,000 and 42,000 populations.

At Waseca, the 155 pound rate at 32,000 population showed a better net return three of the four years. At Lamberton, net return per acre at 42,000 population was a mixed bag; two years favored the 155 pound rate, two years showed the 200 pound rate slightly better. At Rochester, net returns per acre favored the 155 pound N application three of the four years.

“We’re seeing little value in going to the 42K rate and the higher 200 pound nitrogen application.

Organic non-GMO hybrid seeds can be profitable

Representing non-genetically modified organisms and an organic seed lineup, he’s open about the growing interest in their seed products, especially in view of the crunch time now underway in agricultural commodities, be that seed or livestock.

“Because Blue River focuses mostly on the certified organic seed products and non-GMO hybrids, we’ve seen exponential growth,” said Ausborn.

A national company, Blue River sells products from California to New York, Texas to Canada.

Blue River has experienced accelerated growth the past two years when corn prices got squeezed down from $7 to current $3.50 prices.

“Producers are looking for alternative ways to reduce their production expenses. The lower cost of non-GMO products is an obvious choice for many,” said Ausborn.

Retail price to farmers today for Blue River organic hybrids is in the $200-$220 range. And retail price for farmers growing and marketing organic corn is in the $9-$10 per bushel category.

costs and a doubling of value when you market your organic corn are key drivers of this expanding organic industry.

Ausborn noted that because of the rapid growth of the organic markets, a grower now has multiple options for where to sell.

“You can do either spot contracts (taking what you get on any given day) or forward contracts where you have selling price locked in before you even plant the crop,” he said.

And where are the biggest markets for organic row crops? Wisconsin, Michigan, Minnesota, Iowa, New York and Texas are top producers today, said Ausborn, but new growth is in the Southeast states where cotton and tobacco acres are cutting back considerably. He noted Georgia, Louisiana, Mississippi and Alabama are ramping up.

“Plus eastern Texas because adequate water supplies for rice production has become such an issue,” Ausborn said.

The perennial question in entering organic farming is weed control.

“It’s pretty much with iron,” said Ausborn. “That means hitching up your cultivators but what we suggest is getting in touch with growers in a given area who are already farming organically. There still aren’t any chemical fixes for weed control and likely won’t be if your ambition is organic marketing. The biggest thing is plant a little later and use your iron to be on top of weeds. Rotations are a big help also.”

Like most row crop farmers, wide rows in the 40inch category are history with organic farmers too.

Instead the 30-inch row predominates and 22-inch widths are gaining favor also. Increasing planting populations is a trend and that’s a weed control strategy.

“The more seeds in that row the less spacing there is for weeds,” Ausborn said.

Fertility rates for organic farming depend upon the management practices of each producer. Soil tests to determine what’s already there is a starting point.

“But we’ve got low-input producers working on sustainability who deliberately use minimum amounts of organic plant food to high-input growers who rely on special micro-nutrients through foliar

A partner company called CRD Advisors does the genetic research for new and better seeds for Blue River Hybrids. CRD Advisors has a corn breeding program with nurseries in Illinois, Ames, Iowa, and Sleepy Eye, Minn. New hybrids are added every year said Ausborn with maturities ranging from 76-day to 115-day. Of the 35 products for 2016, 10 are new offerings.

Ausborn noted that Blue River isn’t continually introducing new hybrids just for the sake of new materials.

“Farmers tell us when they find a product they like they want to stay with that product indefinitely. But at the same time when we have a new product with similar characteristics to an already popular hybrid but it has better yields, we emphasize the new product,” he said. “The life expectancy in our product lineup is 4 to 5 years these days.”

Ausborn said he’s aware of market forecasters who are talking $3.50-$4 corn for the foreseeable future.

Even though some economists are predicting corn and soybeans to be non-profit crops for 2016, he’s not predicting crop land will sit empty.

“Because of such an extended fall season, most growers got much of their ground worked up and fertilizer inputs taken care of already,” he said. “And I doubt soybeans will be picking up acres at the expense of corn.”

According to Midwest Organic and Sustainable Education Service, 108 firms are listed as buyers, brokers, sellers and marketing service providers of organic grain and feed ingredients across the nation.

Before he went organic, he was using the Jung Seed Company out of Wisconsin which was handling Blue River seeds.

“So I started organic with Blue River, then changed for a few years,” he said.

“Two years ago I checked their seed catalog and noticed some of the same hybrid numbers when I was originally with them so I went back to Blue River brand.”

DeWeerd’s corn yield was 120 bu./acre. He acknowledges that’s a modest yield because the non-GMO organic hybrids don’t have the gene traits and without herbicides weeds are usually cutting some yields. Cultivation is his weed control.

“My 120-bushel yields aren’t so good but that $9 price covers all my expenses with a little margin still available,” he said.

For 2016 he’ll repeat his 2015 cropping program of 60 acres of corn, 40-50 acres of oats, 20-30 acres of peas, 25-30 acres of soybeans and 30 acres of rye.

He doesn’t seek out advance contracts from buyers.

“I wait until everything is harvested and in the bins,” he said. “Then I get on the phone and start calling prospective buyers. I’ll usually have a variety of different buyers each year because that’s just the nature of these markets.

There’s getting to be more buyers each year it seems.”

Cover crops DeWeerd sees value in cover crops in organic farming.

“We’ve been doing cover crops since 1971. We’ve always used red clover and the past few years we’ve tried some winter rye and radish, usually seeded after my soybeans,” DeWeerd said.

“I’ve seeded rye as late as the second of November. It didn’t come up in the fall but it did in the spring. We worked it down and planted soybeans in that field.”

DeWeerd said he thinks it’s important to keep something green on your soils.

“To me that means keeping your soil healthy so there is microorganism nutrient value. Cover crops just help build soil health,” he said. “They provide good protection against wind erosion. We get some brisk winter winds around here that can scour our soil surface quite aggressively some times.”

Cover crops can: • Scavenge nutrients to reduce fertilizer inputs. Rye and most cereal grains are good at taking up nitrogen left after the primary crop and holding it until worked back into the soil in the spring.

• Fix nitrogen to reduce fertilizer inputs. Very few plants are capable of

Donald DeWeerd, of Pipestone, Minn., was just sharing some marketing history of his organic crops in 2012-2014. The Land interviewed DeWeerd at the Minnesota Organic Conference, Jan. 8-9 in St. Cloud, Minn.

DeWeerd has been into organic farming for about 30 years with everything previously fed to his dairy cows. But when he sold the cow herd in 2001, he needed new markets for his organic crops. That meant certified production to get certified markets.

His entrance to certified organic farming dates back to 1998, gradually working his entire 200-acre operation into certified organic production. He has tried a variety of different crops along the way.

“Corn is my primary crop. But we do soybeans, wheat, oats, some peas, and some rye. And a good feature of certified organic crop production is that there seem to be more buyers each year,” said DeWeerd.

Currently, DeWeerd projects $8-$9 prices for his organic corn.

“But my high point was $16 for corn a couple years ago; about $12 on wheat,” he said. “With oats we’ve been running anywhere from $5.50 to as high as $7.”

Yields are the key determination of gross revenue per acre. And organic crop production generally takes a hit due to weeds and no herbicides. Even so, oats have been good. DeWeerd said around 65-bushel yields on oats the last two years but four years prior his oats were doing well over 100-bushel yields, with 110 bushels per acre for two sucessive years.

“Just good oat years in terms of weather, humidity, and moisture,” said DeWeerd. “This year we had the right amount of moisture but humidity stayed too high. Oats are a cool-season crop.”

Seeds With the entire farm certified, DeWeerd does some shopping for seed sources. At the St.Cloud event, eight different seed houses were selling seed to the over 620 organic producers in attendance.

“For a number of years I used a seed firm out of Illinois but they were mostly longer maturity hybrids; not the

Strong U.S. dollar makes U.S. grains a tough sell

By DICK HAGEN The Land Staff Writer It doesn’t matter which agricultural meeting you attend this winter, the farm income forecast is looking cloudy. I think we’re looking at a consolidation phase for the time being,” he said. “Biggest factor going forward I think will be our U.S. dollar index which is being inflated slightly by the rest of the world economies which are just flat out struggling.”

Bratland said other countries are investing in the United States which inflates our dollar. That stronger U.S. dollar is making us uncompetitive in world markets. In addition, he noted that we have burdensome supplies from back-to-back years of record production.

“The pipeline is full. Exports of our agricultural products are down,” Bratland said.

“Going forward, I think weather will have to be an issue. I’m talking severe weather that jeopardizes

soybeans than the United States. And the export tax on Argentina soybeans has been reduced from 35 percent to 30 percent; soy meal and soy oil export taxes reduced from 32 percent to 27 percent with the incentive of a 5 percent reduction per year for the hereafter. Argentina is a major competitor, especially to the China market.

Bratland notes some caution about U.S. weather forecasts for this spring.

The weather speaker at the Linder meeting predicted a strong possibility of a colder and wetter spring in the Midwest.

“We’ve been watching weather models for the past 30 days and will continue to study them for the next 60-90 days,” said Bratland. “There is a legitimate concern about La Niña setting up for this late winter-early spring. The last time we had a La Niña effect was 2012 and we ended up with something like a 123 bushel national corn yield. Such a disruption in 2016 would indeed impact commodity prices strongly.”

Non-GMO crops Organic crops aren’t making an impact on commmodity markets, said Bratland.

“The market premium is for real,” said Bratland, “but at this stage organics are such a small total that commodity pricing isn’t affected.”

Bratland said he thinks the United States needs to get more aggressive in promoting our corn exports as we’ve already done a good job with soybean exports.

“If or when this world economy starts stabilizing it will be positive for U.S. agriculture simply because we continue to be the world’s number one producer; our quality is the world’s best; and we can deliver to wherever the products are needed,” said Bratland. “That’s happening with U.S. soybeans. Foreign countries trying to better feed their people have learned that with soybeans they can meet the protein needs of their people with a third as many bushels.”

He acknowledges the non-GMO issue will continue to prevent U.S. exports into several countries. But he also recognizes the tremendous impact of today’s genetics on productivity.

“If we were still struggling with 120130 bushel yields I couldn’t imagine what grain prices would be right now.

There’s an old hymn, “Come, thou Fount of Every Blessing”, that you may have sung or heard your grandparents sing. It’s a good song, but let’s be real.

What in the world is an Ebenezer?

Ebenezer means “stone of help.” In the first half of the Bible known as the Old Testament, it was a stone. Basically it was a memory rock that helped people remember that God helped them in the past and He would be there for them in the future as well.

Did you know that people still use Ebenezer reminders today? I read about one lady who keeps an old suitcase by her front door to remind her that this world is not her home; she’s going to live with Jesus in heaven one day.

I have a stuffed bunny near my computer where I write. It’s over 30 years old and looks ratty and worn. My dad gave it to me when I was 5 years old and very sick in the hospital. During my nine-day hospitalization that bunny stayed by my side. Today that bunny is an Ebenezer, daily reminding me of my dad’s love and my Heavenly Father’s healing.

Another Ebenezer that is a physical reminder of God’s spiritual truths are journals. When you write down the awesome things that God is doing in your life, it’s like setting up an Ebenezer stone and saying, “This is how God has helped me!” When you are weary, tired, or sad, you can reread your journal and be encouraged. And in years to come it will encourage your kids, your friends, and your community, too.

Ebenezer memory rocks can be journals, a ragtag bunny, a shadow box filled with treasures, a favorite toy, or even a rock. It’s anything that helps you remember God’s faithfulness in the past, which in turn gives hope for the future.

So what’s your Ebenezer? I may just throw a toy at Elizabeth’s forehead to remind her of hers. But stop and think about you. Whether you believe it or not, God is with you and watching over

“Sorry, Reagers,” she said. Regan didn’t respond. Beth kept picking up and never saw it coming. Her 14-month old walked up to her and threw one of the stray toys at her head.

As the story concluded, I thought Elizabeth’s sisters were going to lose it.

In front of our fireplace their hearts warmed at the thought of Elizabeth dealing with what she had dealt them over the years. And as Elizabeth recognized her self in the story, they laughed and squealed, “Write this down! You have to write this down!”

If only I had done the same. Over the years cute stories about our girls were retold a time or two, but I rarely put them to paper. Just keeping up with toddler life was about all I managed at the time. And now I wish I had done what we tell Elizabeth. Write it down.

It’s not just the old, over-stressed, and over-committed who suffer memory loss. We all do! Here’s the thing – remembering matters. It matters for us and for those who follow in our steps.

And as sweet as it is to remember the memorable quips and accounts from the past, there is something deeper that takes place for those who trust God with their very lives.

When we write things down it is a visible, physical reminder of what is in our lives. This is our reality. And for those who trust in God that visible, physical reminder is hope! Yes, things may look dark for your future, but in Jesus there is light. Yes, it seems as if there is no way out of this mess, but in

Pork Board recipes provide flavor with comfort Cookbook Corner

By SARAH JOHNSON The Land Correspondent Did you know it takes 80,000 American pork-producing families to keep us bacon-lovers happy? Blessings upon the pork farmers, because without them we’d be missing all those wonderful sausages, chops, loins, roasts and hams. Pork is the most widely eaten meat in the world.

The National Pork Board certainly knows all this, and periodically issues booklets of recipes to encourage us to keep on eating it and perhaps try something new. Here are some pork recipe suggestions that are easy on time as well as on the budget from the “Farm Table to Family Table” 2003 booklet by the National Pork Board.

■ When the weather outside is frightful, a bowl of hot soup is sooooo delightful. The comforting flavors, smells and textures of homemade soup are always worth the little trouble

they are to prepare, like Bow Tie Sausage Soup.

into 1/2-inch slices. In 12inch skillet, cook onion and garlic in hot oil until lightly browned. Stir in sausage, bell pepper and wine. Cook and stir over medium high heat until sausage is heated through. Stir in spinach.

Cook and stir for one minute or until spinach starts to wilt. Serve with mashed potatoes.

■ Skip the fat-laden Chinese takeout and enjoy your own version of that yummy orange sauce you crave over tender, lean pork strips instead of batter-fried meat chunks. Carrots, celery and cashews add nutrition, flavor, texture and eye candy. You can use this sauce with chicken as well, or make a vegetarian version (just don’t tell the Pork Board).

Orange Stir-Fry Serves 4 1 pound pork tenderloin 1 tablespoon grated orange rind 1/2 cup orange juice 1 tablespoon cornstarch 1 tablespoon soy sauce 1/3 cup corn syrup 1/4 teaspoon ground ginger 2 teaspoons vegetable oil, divided 2 large carrots, peeled and sliced diagonally 2 stalks celery, peeled and sliced diagonally 1/2 cup cashews Cut pork tenderloin into thin strips.

Set aside. Combine next six ingredients, stirring well. Heat one teaspoon oil in nonstick skillet over medium heat. Add carrots and celery, stir-frying about three minutes. Remove vegetables; set aside. Pour remaining oil into skillet. Add pork; stir-fry for about three minutes. Return vegetables to pan; add orange juice mixture and cashews. Cook, stirring constantly, over medium-high heat, until thickened. Serve over hot rice, if desired.

■ Those who enjoy a little sweetness with their meat will love Spiced Pears and Pork Chops, a flavorful pairing of tender (and oh-so-easy) pears with convenient, lean and tasty boneless pork chops. Utilizing basic pantry ingredients, this one-skillet dish could become your next go-to recipe for a quick meal anytime.

■ When you’re in the mood for some “speecy spicy” stuff, rustle up some of this Sausage and Chipotle Mashed Potatoes (with fresh spinach). This is a prime example of using simple, fresh ingredients to create culinary masterpieces and practically anyone can do it at home. Save yourself the pain of expensive restaurant food, roll up your sleeves and surprise yourself with how good it can taste.

Sausage and Chipotle Mashed Potatoes Serves 4 3/4 pound cooked, smoked Polish sausage links 3 medium potatoes (about 1 pound) 1/4 cup plain yogurt 2 canned chipotle peppers in adobo sauce, finely chopped 1 tablespoon butter or margarine 1/8 teaspoon salt 1 medium onion, halved lengthwise and thinly sliced 1 teaspoon minced garlic 1 tablespoon vegetable oil 1 red bell pepper, cut into thin strips 2 tablespoons dry white wine 5 cups coarsely chopped fresh spinach leaves Peel and quarter potatoes. In medium saucepan, cook potatoes, covered, in boiling, lightly salted water for 20-25 minutes or until tender. Drain and mash potatoes. Stir in yogurt, chipotle peppers, butter or margarine, and salt.

Africa and southwest Asia. The name Nigella damascena relates to Damascus is Syria. The seeds of a species called Nigella sativaare produce the seeds of black-caraway often called black cumin. These black seeds are used as a spice and taste like a combination of onions, black pepper and oregano.

I read there is archeological evidence these seeds have been found in several sites in ancient Egypt including Tutankhamen’s tomb. The earliest written reference to Nigella sativaare is thought to be in the book of Isaiah in the Old Testament, where the reaping of Nigella (cumin) and wheat is contrasted.

Nigella flowers are fluffy and the

seed pods that develop are intriguing with their tan color and purple side stripes. The seed pods can be dried and used in arrangements. Cut the stems while the pods are still green and fresh and tie the stems in bundles and hang upside down to dry. The seed pods can be cut in half to show off the starshaped seed chamber.

These dainty annuals self-seed readily and if left over the winter without deadheading will produce a wave of volunteer plants. They are easy to control by weeding and hoeing out excess plants. They have tap roots like a carrot and transplanting is best done when the plants are very small.

Nigella Damascena, commonly called love-in-a-mist is a fascinating annual which we started growing a number of years ago from seed ordered through a catalog.

It earns its common name because the foliage, which is ferny and looks like fennel, forms a mist around the flowers. The blooms come in blue, white and shades of purple. Blue is our prominent color because it is rarer.

Mature plant size is about 15 inches high and it blooms from late spring through early fall. It thrives in full sun to partial shade and likes a moist welldrained soil.

Love-in-a-mist belongs to the buttercup family Ranunculaceae and is native to southern Europe, North

The following market analysis is for the week ending Jan. 29.

CORN – Corn action was flat through mid-week to the point where “boring” would have been a good description. Prices pressed lower on Jan. 28 as corn was pulled lower by soybeans when the U.S. Department of Agriculture announced a large export sales cancellation by China. Funds added to the pain of the bulls with selling. Export sales were delayed until Jan. 29 since Washington was essentially closed early in the week after snowstorm Jonah rocked the East Coast. Corn finished PHYLLIS NYSTROM the week near its weekly high on CHS Hedging Inc. St. Paul month-end positioning and despite a surge higher in the U.S. dollar when Japan unexpectedly cut its interest rate. The Bank of Japan will charge 0.1 percent interest for excess reserves! Corn closed higher for the third consecutive week with a key reversal higher to end the month.

China did act on its plan to cut domestic corn prices, saying the market will determine the price they pay to growers for reserve corn. China wants to reduce the amount of corn and corn products it imports. This increased concerns about U.S. corn and corn product exports to China. The China National Grain and Oils Information Center said at least 20 corn cargoes or 1.2 mmt of corn have been bought for the first quarter. Indications earlier in the week were that two of the cargoes would come from the United States with the majority being

Here we go again, another several weeks of erratic swings in the livestock markets. This is particularly true in the cattle market; hogs have remained relatively quiet with steady price improvement unlike the rapidly changing cattle.

The main reason for the instability in the cattle market is the continuation of the battle between supply and demand. For weeks this battle has gone on and there currently does not seem to be an immediate change in this battle. There is a real conundrum with the fundamentals of the cattle market. There is a smaller supply of cattle as JOE TEALE reported by the U.S. Department Broker of Agriculture as evidenced in Great Plains Commodity the latest Cattle on Feed report Afton, Minn. released Jan. 22. The USDA projected that there were just slightly fewer cattle on feed as compared to a year ago, as well as cattle placed in feedlots. The report also indicated there were more cattle marketed than the previous year. This report continues to reflect lower numbers than a year ago.

At the same time the USDA released the Cold Storage report which indicated we once again have more beef in storage than a year ago. It also reflects, for more than six months in a row, beef in cold storage was continually greater than the previous month.

Thus the battle between supply and demand continues. Overall, for the past several months, the lack of demand for beef, not the supply of cattle, has dictated the direction of cattle prices. This is not likely to change much in the weeks ahead until the disparity

Now’s the time when producers throughout the Midwest are providing their lenders 2015 year-end balance sheets for review of their operations and for discussing future financing opportunities. The sample size I’ve seen so far is small, but overall it appears some producers took a step back in net worth and in liquidity (working capital position) even though we had outstanding yields throughout most of Minnesota and Wisconsin.

One of the primary reasons for balance sheet deterioration is lowered grain inventory values from a year ago of approximately $.60 per bushel on corn and $2 JOEL LARSON per bushel on soybeans. With AgStar Financial Services unpriced grain valued around Credit Director Blue Earth, Minn. $3.25 per bushel for corn and $8.10 per bushel (at year-end in southern Minnesota) this adds up to some real accrual losses over all your bushels and some significant reduction in working capital position. A review of AgStar’s projected Margin Manager for 2016 corn and soybeans is showing estimated nonland costs of around $550 per acre for corn and $300 per acre for soybeans. This would include all inputs, insurance, fuel, repairs, labor, interest, and depreciation (everything except land cost and family living expense). Add your land costs (both owned and rented), ex. $225/acre + $50/acre for family living (operator draw) and you are at $825/acre for corn and $575/acre for soybeans. In a 50-50 rotation of corn

Live hog prices increase good as it represents the likely best value to the consumer at this time.

Even though export business has been slowed by the strong U.S. dollar, the better domestic interest in pork is represented by the steady to slightly climbing pork cutout values. Overall, this would indicate the possibility of hog prices moving a bit higher in the short term. The problem would be that the demand for protein is highly competitive and with the economy on shaky ground at this time, rallies may be muted. Producers should keep an eye on market conditions and protect inventories when warranted. ❖

The CBO baseline projections for the 2016-17 soybean crop included planted acreage of 83.0 million acres, yield at 46.0 bu./acre, production 3.776 billion bushels with ending stocks at 466 million bushels. On the January crop report the USDA used 82.7 million acres, yield at 48.0 bu./acre, a crop of 3.93 billion bushels and ending stocks of 440 million bushels. ❖

Working capital key in ’16 LARSON, from 18 and soybeans this is an average of $700 per acre to put in 2016’s crop.

A combination of your own working capital and borrowed money (operating loans) are needed to meet your cash needs in putting in a crop. Assuming you can borrow about $450 per acre for operating (dependent on collateral such as your crop insurance guarantee) leaves a producer’s share to put the crop in of approximately $250 per acre of working capital ($700 per acre average corn-soybean costs less $450 per acre operating). Therefore, the minimum amount of working capital a grain producer needs is right about $250 per acre.

As you likely heard in 2015, one key to helping get your own individual plan together is having adequate working capital in your business — not only for putting in this year’s crop, but to cover for the next few years of lower prices, compressed margins or even losses.

How is your individual balance sheet structured? Is it appropriate for the times we are in and for the size and age of your operation? It’s possible your balance sheet may need to be rebalanced so you are positioned with enough working capital to meet your needs. The following strategies can help.

• Move current debt (possibly from your operating loan) to an intermediate term loan amortized at five or seven years. This is a popular strategy for clients who paid cash for capital purchases, like equipment or tile, in recent years and now need to replenish that cash and rebuild working capital. If, in the next few years, you are able to capture better prices or you can get your costs reduced to profitable levels, paying off debt early is another consideration.

• Move current debt or intermediate term debt to a longer term, using real estate as collateral and the equity

you’ve built in long term assets.

Although, this does not remove your debt, it could improve your cash flow while also rebuilding working capital.

Again, this is a strategy to give you more time to get your cost structure in line with decreased crop prices. If you select this strategy, be sure to consider how it impacts your overall land costs.

• Consolidate debt. In our present (attractive) interest rate environment, it might be a good strategy to consider consolidating multiple loans into one and stretching them out to improve cash flow and current debt requirements while also locking in a good fixed interest rate. Having fewer loans can also simplify your repayment schedule. Always consider matching payment dates to your income stream. (Exmaple: When do you deliver your grain?)

• Sell off nonproductive assets. Are there assets on your balance sheet that are no longer needed and, if sold, the proceeds could be used to build working capital or pay down debt?

Start with reviewing your detailed balance sheet. Make a priority listing of assets that are no longer necessary or don’t fit into your future plans.

Consult your tax advisor on the impact this may have on your income tax management.

Now is an excellent time to meet with your lender to discuss your balance sheet structure and projection including a per acre projection (margin manager) and review if you have enough working capital.

SOYBEANS — Soybeans followed the same pattern as corn for the first half of the week, although in a much wider range. The Jan. 28 USDA announcement that China canceled 395,000 metric tons of U.S. bean purchases (9 percent of current U.S. open sales to China) sent prices spiraling lower, trading to its lowest level since Jan. 12. This was the biggest single “flash” cancellation since December 2012. Heavy fund selling and improving weather for South America added to the negative tone. Argentina is being monitored for dryness in the southern regions, but chances for rain are in the forecasts for the first week of February (albeit slimmer chances than what was expected early in the week).

Soybeans closed on a strong note of month-end buying, counter to the dollar roaring higher.

In the weekly export sales report, sales were within expectations at 23.8 million bushels; but were the third lowest of the marketing year. The yearly commitments are running 9.5 percent behind last year, but that’s close to the USDA’s projection that exports will fall 8.3 percent year-onyear.

Crude oil moved steadily higher this week as talk of the possibility of production cuts circulated. According to reports, Russia has indicated they are now ready to meet with the OPEC members, specifically Saudi Arabia, to discuss lowering production. Russia

South Africa released its corn crop estimate this week, about a month earlier than normal due to its severe drought. They pegged production at 7.4 mmt of which 3.2 mmt is white and 4.2 mmt is yellow. This would be the country’s smallest crop since 2007; but not as small as the pre-report trade estimate for 6.686 mmt. The USDA is carrying their crop at 8.0 mmt and last year they produced 9.94 mmt. South Africa has projected they may need to import 5 to 6 mmt of corn this year. Trade chatter this week included suggestions that Russia may try to implement an export reporting system similar to the USDA’s to get a better grip on its export system.

Weekly export sales were at the low end of expectations at 32.2 million bushels. Total export commitments are 26 percent behind last year and the USDA is projecting an 8.8 percent year-on-year decline. We will need to average 27 million bushels of sales per week through the end of the marketing year to hit the USDA’s 1.7 billion bushel forecast. Weekly ethanol production was down 22,000 barrels per day at 961,000 bpd. This was the smallest production level in two months, as margins have been negative for that same time frame. Ethanol stocks were down 500,000 barrels at 21.4 million barrels — the first drop in four weeks.

The Congressional Budget Office released its 2016 Baseline for Farm Programs Budget Projections this week which were largely ignored. It is forecasting corn acres for 2016 at 90.2 million, yield at 167.8 bushels per acre,

Pessimistic mood hung over International Dairy Forum HighGround Dairy’s Eric Meyer. speaking in the Jan. 29 DairyLine, reported that the mood at the International Dairy Foods Association’s Dairy Forum in Phoenix was much colder inside than outside.

Citing poor U.S. exports and “relatively better-than-expected milk production in the U.S.,” Meyer warned that U.S. cheese prices would likely remain in the $1.40-$1.50 per pound level or slip some in the first half of 2016.

Butter has better fundamentals, he said, and the price is at a record level for this time of year. Although, the latest Cold Storage reports call into question what butter futures are looking like.

The Chicago Mercantile Exchange’s butter rule change starting Feb. 1 may also weigh in by allowing more product to come to the CME, he said.

“While there is some potential for weakness here, no one is anticipating butter entering a bear market like we’re seeing in other commodities.”

As to the Dairy Forum, Meyer said there was a lot of pessimism expressed.

“The story was on Europe,” he said.

Europe’s November milk production was up 5 percent from a year ago. Most expect output between December and March will even accelerate so “with Europe pumping out as much milk as they have and the U.S. being better than expected, and with New Zealand being down only 1.2 percent in December, it is a bit of an oversupply situation that may overhang the U.S. market for a while,” he concluded.

■ The dairy industry will lose one of its long-time leaders. Connie Tipton, president and CEO of the IDFA announced Monday that she will retire at the end of 2016.

American cheese, at 700.7 million pounds, is a record high for December — up 2.4 million pounds and virtually unchanged from November; but 72.9 million or 12 percent above a year ago.

Total cheese stocks hit 1.15 billion pounds, unchanged from November; but 127.9 million pounds or 13 percent above 2014.

Dairy Market News’ weekly milk production update reports that milk output is steady to increasing at seasonal levels across most of the country. However, marginal drops in output are reported in a few areas.

Fluid milk sales vary across the regions. Bottling orders in the East were strong, due to the wintery snow storm. Milk transportation delays were expected because of cancellations as the storm developed. Sales into bottling moved lower in the Midwest as orders for specialty products declined.

Arizona reported steady to lower fluid sales, as sales picked up in the Pacific Northwest. Cream is available across the regions, with the majority of interest coming from butter manufacturers. Supplies in the Midwest are being augmented by loads from the Northeast and West. With the Super Bowl fast approaching, interest in sour cream type products and dips continues to rise.

November packaged sales totaled 4.2 billion pounds, down just 0.3 percent from November 2014, according to Dairy Market News. Conventional product sales totaled 3.96 billion pounds, down 0.2 percent from a year ago. Organic products, at 199 million pounds, were down 0.9 percent.

Organic represented about 4.8 percent of total sales for the month.

Whole milk sales totaled 1.2 billion pounds, up 5 percent from a year ago; with year-to-date sales reaching 12.5 billion pounds, up 4.1 percent.

Looking January to November, total packaged fluid milk sales hit 45.1 billion pounds, down 1.4 percent from the same period a year earlier. Year-to-date sales of conventional products, at 42.9 billion pounds, were down 1.4 percent.

■ Cooperatives Working Together accepted eight requests for export assistance from Dairy Farmers of America, Northwest Dairy Association (Darigold) and Tillamook County Creamery Association to sell 921,532 pounds of Cheddar cheese and 663,592 pounds of whole milk powder to customers in Asia, North Africa and South America. The product was contracted for delivery through July 2016.

Western cheese output is steady. Manufacturers say there is enough milk to meet processing needs but additional loads of milk are not as readily available as they were over the winter holidays. Cheese stocks have grown, albeit slower than in some other regions. Inventories of barrels continue to be heavy and blocks are long. Contacts say cheese with some age is definitely long and harder to place. However, a few manufacturers report a little tightness for fresh cheese.

The resilient spot butter closed the morning of Jan. 29 at $2.22 per pound, up a nickel on the week and 47 cents above a year ago when it plunged 20 cents to $1.75 per pound. Thirteen cars exchanged hands on the week at the CME. Dairy Market News says the Central butter market is steady to firm, although market participants find it difficult to reconcile the current prices and stocks on hand. “Manufacturers indicate most orders for spring holiday coverage are two to three weeks out, but a few orders were placed in the last few days.

Butter makers say cream supplies are fairly well balanced. Although additional spot loads of cream are available, many processors are content to use the cream they have rather than seek additional loads.”

The block Cheddar held at $1.46 per pound, 7.25 cents below a year ago, and the barrels stayed at $1.43, 7.5 cents below a year ago.

The only activity all week was two unfilled bids of each Friday at the existing price.

“The impact on cheese sales increases attributed to the Super Bowl is a discussion topic which seems to have stretched over several months,” according to Dairy Market News. “In reality, most orders for retail or food service frozen pizza cheese that will be consumed before or during the event have been filled.

Cheese manufacturers are now looking forward into spring.”

Dairy Market News goes on to say, “Some Midwest cheese manufactured for sales to eastern customers was not sold or shipped as a result of the substantial snowstorms over the weekend. This resulted in some increase in manufacturer inventories.”

Dairy Market News warned that “Strong domestic milk production seems to be a likely reality in coming months. Midwest weather quickly bounced back from a cold spell and now looks to remain mild in coming weeks, which will keep the milk flowing. The same is true in the EU. The outcome will be continuing strong cheese production on both continents.

t’s possible that cold weather makes for vibrant rural communities. Embarrass Township, in St. Louis County, Minnesota, may be an example of that cold weather-warm community phenomenon. Lying in Minnesota’s North Woods with the Embarrass River flowing through it, this place is very rural. And it is notorious for intense cold.

Twenty years ago, on Feb. 2, 1996, Rowland Fowler walked out of his house in the woods along County Road 21 and over to the little white box in the park in front of the Credit Union. The thermometer read -64 F. That is the lowest of all temperatures recorded in what locals humbly call The Cold Spot.

Fowler has recorded other tree splitting temperatures. It was -54 F on Jan. 7, 2005. On Jan. 24, 2013, the thermometer fell to -42 F. Embarrass responds to these temperatures with Finnish conversation gettogethers at the town hall in the winter and at the Nelimark Homestead Museum in the summer. The conversation gatherings are held Thursday afternoons. The exercise group meets after that. The exercise group also meets on Tuesday afternoon and the Ladies Coffee group meets Tuesday morning.

“The coffee group is one of our most popular groups,” Diane Nelmark, the township clerk, said. “I think more people use the town hall because it’s open and I’m here four days a week.”

There are also meetings of the 4-H club, the town board, the Embarrass Regional Fair Board, the Fair Board’s monthly pancake supper, and the Sisu Heritage cultural organization.

Sisu Heritage sponsors the conversation gatherings, operates the Nelimark Homestead Museum, and runs summer tours of the restored Nelimark and Pyhala Finnish homesteads. They are also restoring the Seitaniemi house-barn homestead.

The Fair Board has been holding a regional summer fair for three quarters of a century. The 2015 fair, at the Embarrass Timber Lodge, featured a horse show, livestock exposition, craft displays and sales, food vendors, and a demolition derby among other things.

The township itself doesn’t sponsor many events. They focus on providing a warm community space for gatherings.

“The only event we do,” says Nelmark, “is the Ice Candle and Holiday Gathering.”

This year volunteers made 600 candles. On Dec. 19, 2015, they placed them in the cemetery before dusk. The cemetery glowed with soft light as night fell and the community quietly passed through the resting place of their ancestors. Afterwards, they gathered at the town hall to celebrate.

“It was hard this December,” Nelmark said. “It was so warm, 200 of the candles melted.”
