There is the skill required, the beauty of the billowing sails, the wind and the feeling of floating through the water and of course, the freedom from landlubber cares and worries.

Everyone from children to adults can enjoy the pastime of sailing and there are many organizations and programs that can get people out on the water. With some instruction, you can acquire the skill to man a sailboat.

The Lake Winnipesaukee Yacht Sailing School (LWSA) was founded in 1988 and its mission is to “promote and enhance engagement in the sport of sailing, with a particular focus on Lake Winnipesaukee. In pursuit of this mission, we are dedicated to eliminating barriers related to knowledge, financial means, disability, and age. As a non-profit charity, we operate for the collective benefit of the people and communities in the Lakes Region, both today and for future generations. In fulfilling our mission, we are committed to fostering values such as safety, self-confidence, teamwork, honesty, positive sporting attitudes, and a deep appreciation for our environment.” (www.lwsa.org.)

Classes in the sailing school are open for age 7 to adults and there is something for every skill level. The After-School Sailing program is open to students ages 8 to 16 from all area towns. Instruction in the sport of sailing is a very worthwhile after-school

activity and provides youngsters with skills that will last a lifetime of sailing.

Those who have never sailed before need not feel out of place as students are grouped based on age and proficiency level. This offers every student a personalized learning experience. Students will use Optimist dinghies, as well as 420 collegiate boats and RS Teras. Everyone will be given a swim test on the first day of class and all participants must wear fitted vest-style life jackets.

One of the most popular parts of LWSA instruction is Opti Racing and 420 Racing. The Opti Racing course is taught in Optimist sailing dinghies and is open to all who have taken at least one 101 course previously. Students will sail alone and improve skills such as upwind sailing, tacking, and jibing. The course will teach start sequences, course navigation, roll tacks, and basic tactics.

The 420 Racing course is taught in Club 420s and is open to all who have been recommended for level two or higher or for this course specifically. Students sail in pairs. The course will teach start sequences, course navigation, roll tacks, spinnaker use, and tactics and strategy. Students will have the opportunity to practice their skills against one another in practice races and will receive feedback both on and off the water.

LWSA also offers Adult and Ladies Lessons with Levels 1, 2 or 3 depending on experience with sailing. Private lessons are also available.

Mixed Fleet Racing is another segment of LWSA, with mixed-fleet, handicapped (PHRF) races, and courses circling the islands. The races typically take place on weekends. Participants can often choose between racing (spinnaker) and cruising (non-spinnaker) divisions.

What could be better than a sailing program that offers “sailing for anyone and everyone”? That is the goal of the Community Sailing Program run by the New Hampshire Boat Museum, in cooperation with the Wolfeboro and Tuftonboro Parks and Recreation Departments. The sailing programs are for all ages and take place at Albee Beach in Wolfeboro or 19 Mile Bay Beach in Tuftonboro.

Albee Beach offers youth and adult classes while 19 Mile Bay Beach has Keel Boat classes for age 16 and up. Beginners in the youth classes start in Optimist dinghies and the adults sail in Sunfish sailboats. All students are taught basic single-handed sailing skills.

At 19 Mile Bay Beach scheduled and private instruction from U.S. Sailing certified keelboat instructors is offered for all levels and experience. The bay is considered one of the most beautiful areas to sail when on Lake Winnipesaukee.

Yacht clubs around the Lakes Region are a place where members can socialize and talk about all-things- boating. The history of many clubs is interesting, but please remember, these organizations are for members and are private.

The Gilford Yacht Club is located on the southwest shore of Lake Winnipesaukee. The club began in 1933, and its goal was to foster boating on Lake Winnipesaukee. It is a family oriented facility, situated on Smith Cove in Gilford. Over the years, as the area grew, the Yacht Club came into being and continues to serve its members today with convenient facilities.

The Winter Harbor Yacht Club in Gilford started in 1940.

As the war swung into gear, the club activities understandably slowed but started up again after the war. It was a very different time, with less lake boat traffic and uncrowded public docks.

By 1949, the Winter Harbor Yacht Club members donated money to fund a permanent home port for their group. They found that home when they bought land on Welch Island. Over time, a larger location was needed and eventually they found the place they wanted, still on Welch Island. Thus, a new clubhouse was born.

Winter Harbor Yacht Club was a fun place for kids as well as adults, and children were allowed to build tree houses in the woods, according to information by Chris Christensen in an article on the history of the club at www.winterharboryachtclub. com. Kids learned to water ski, it is said, by towing an old outhouse door pulled by a small outboard!

Families enjoyed lighthearted activities such as an annual log race against Winnipesaukee Yacht Club members. There was a social aspect of the race with a shared meal. The Winter Harbor group also had an annual picnic cruise to Green’s Basin and a picnic on Rattlesnake Island.

For convenience, by the 1960s, electricity came to the island and later, phone service was added.

When it comes to socializing and boating, there is no better place than the Winnipesaukee Yacht Club (WYC). It was founded in 1937 based on the principles of teamwork and friendship which are the very cornerstones on which the club operates today. WYC is a private club, well known for many boating events during the summer season. The club promotes

sailing and sponsors several boating events over the course of the season according to www.wyc-nh.org Those interested in getting involved in the races should visit the website’s race calendar for dates and details. The club is located at 45 Dockham Shore Road in Gilford.

Not to be forgotten, the Wolfeboro Corinthian Yacht Club has a long history, and it serves its members with activities and boating. According to a page with the club’s history at www.wcycnh.com, it started in January in 1982 when John M. O’Connell, owner of Northeast Sail and Motor Facility, Inc. decided to sell his property on Nancy’s Way in Wolfeboro. He communicated his plan to Bob Hopewell, a customer and friend, and also told Bob of what he envisioned.

John’s dream was to not just sell his land but to create a yacht club with members as the owners. He envisioned a club house and got over 100 customers and others to show interest in forming the club.

By March of 1982, a group met and formed a board of governor for the new club. When the sale of the land was closed, there were 71 charter members.

Over the years, members have enjoyed socializing and boating.

In 1990, the club hosted the National Ensign Championship Regatta. Boats came from all over the country to race for the duration of six days.

The club continues to this day and is a special place for members with more to come over the ensuing years.

By Mark Okrant Upon viewing New Hampshire’s lakes for the first time, the late Mae West might have responded, “So many boats; so little time.” Come summer, it’s hard to argue. The lakes are alive from morning to sunset, and choosing how to spend a day on the water can be the toughest decision of all.

From the first quiet hours of early morning, when the water sits glassy and undisturbed, to the golden light of evening when boats begin to drift home, each lake offers a different mood— and each type of watercraft lets you experience it in your own way.

Fortunately, there are many ways to float, and each offers a distinctly different experience. Whether the goal is gathering with friends, chasing speed, harnessing the wind, or simply finding a quiet moment, there’s a watercraft to match.

For those who believe the best days are shared, pontoon boats

are hard to beat. Built on wide, stable floats with generous deck space, they are essentially living rooms on water. Coolers, conversation, music, and the occasional swim stop all come together with ease. Perfect for families, groups of friends, or anyone who prefers cruising over rushing, pontoons are best suited to calm, inland lakes and quiet coves. at home fishing at sunrise or chasing the last light of day across open water. For those who like to cover distance—or simply feel the wind—this is the way to go. On busy summer afternoons, they become part of the energy of the lake itself, adding motion and excitement to the broader scene.

Sailboats, by contrast, invite a slower, more deliberate experience. Powered by wind rather than engine, they reward patience and skill while offering a quiet that’s increasingly rare. There’s a rhythm to sailing—the trimming of sails, the reading of wind, the subtle shifts in direction—that turns an outing into something more intentional. With only the sound of water against the hull and wind in the rigging, sailing becomes as much about the journey as the destination. Open waters such as Lake Sunapee—or the broader stretches of Winnipesaukee—provide ideal conditions, where steady breezes and scenic mountain backdrops create a setting that feels both timeless and distinctly New Hampshire.

How to Safeguard Your Vision While Boating The great outdoors—and the water—beckon millions of people each day. From leisurely pontoon cruises to high-speed powerboating, spending time on the lake offers a host of physical and mental benefits. According to the American Psychological Association, exposure to nature has been linked to improved attention, lower stress, better mood, and a reduced risk of psychiatric disorders.

With so much to gain from spending time on the water, it’s no wonder so many boaters head out for spring and summer adventures. But while sunscreen and hydration are essential, protecting your eyes is equally important when boating. Sunlight reflecting off the water can intensify UV exposure, and wind, spray, and airborne debris can all increase the risk of eye irritation or injury. Here’s how to keep your vision safe while enjoying your time afloat: • Invest in prescription sunglasses if needed. Sunglasses are vital for shielding your eyes from the sun’s ultraviolet (UV) rays, which are especially intense on open water. If you normally wear prescription glasses, consider a prescription pair of polarized sunglasses for boating. Even contact lens wearers may benefit from sunglasses on the water—spray, wind, and pollen can irritate contacts, while sunglasses reduce glare and enhance visual comfort.

• Wear a hat or visor. A wide-brimmed hat or visor provides extra protection from reflected sunlight. While sunglasses are essential, hats add another layer of shielding against glare bouncing off the water’s surface. Even on cloudy or overcast

days, a hat can reduce the amount of UV reaching your eyes, making boating safer and more comfortable.

• Avoid rubbing your eyes. Dust, pollen, or water spray can irritate eyes while boating, but rubbing them can increase the risk of infection or injury. University of Utah Health notes that rubbing can introduce viruses or bacteria into the eyes via the conjunctiva—the delicate tissue lining the inner eyelid. When eyes feel irritated, it’s better to use saline drops or eyelid wipes than to rub, especially after being on a windy lake or river.

• Keep your hands clean. While it’s instinctive to touch your eyes after adjusting a hat or wiping sweat from your brow, doing so with dirty hands can transfer bacteria or debris. Frequent hand washing—or using hand sanitizer before touching your eyes—helps minimize risk while boating, particularly when handling gear, docking lines, or fishing equipment.

• Extra tips for boating enthusiasts: •Keep a microfiber cloth handy to gently wipe sunglasses and reduce water spots or spray.

•Wear wrap-around or side-shield sunglasses for added protection on high-speed boats or when sailing.

•Stay aware of reflective surfaces like white hulls, docks, and wet decks, which can increase UV exposure.

Boating Adventures Around the Lakes

By Kathi Caldwell-Hopper Landlubbers often spend summer and fall weekends taking day trips. They drive here and there around the Lakes Region, stop at a favorite place for a meal and meander through unique shops and maybe find a treasure at an area antiques shop.

Boaters can do the same, but with a twist: they reach these fun places via their boat. A boating day trip can take one to many ports of call where you can have breakfast, lunch or dinner, go

shopping or take a museum visit, and much more.

Your boating day trip begins in Alton Bay, where you will find public docking spots near Rt. 11. You will see a pretty bandstand by the water and if you time it just right, you might stop for the treat of listening to an evening outdoor bandstand concert. The shows are presented by Alton Parks and Recreation and offer rock, country and other genres of music. Call Alton Parks and Recreation at 603-875-0109 for a list of shows.

There are restaurants aplenty in Alton Bay and of course, great ice cream places for those who are hankering after a sundae, cone or other treat.

At Alton Bay, a thrilling summer event takes place when the Waterski Bandstand Committee sponsors a Water Ski Show.

The show features the Maine Attraction water skiers from Sanford, Maine. Come by boat or land but be aware of parking restrictions for boats. Call Alton Parks and Recreation at 603-8750109 for exact event date and details.

Moving on from Alton Bay, your boating adventure will next take you to Wolfeboro, a very entertaining town with the distinction of being “The Oldest Summer Resort in America.” Boat docking is at the town docks area, with a lot of nearby eateries from sandwiches to pizza, casual meals and ethnic cuisine.

If you are boating to Wolfeboro on a particular day of the week, you will likely catch an outdoor (free) concert in Cate Park, next to the docks area. This year’s schedule is Cate Park Band on July 4; Windham Community Band on July 11; Soggy Po’ Boys on July 18; Michael Vincent Band on July 25; High Range on Aug. 1; Compaq Big Band on Aug. 8; Ball In The House on Aug. 15; Jimmy and the Jesters on Aug. 22; Eric Grant Band on Aug. 29,

with the season closing out on Sept. 5 with Billy D & the Rockits.

Music abounds in Wolfeboro and Great Waters Music Festival presents a variety of shows at both their Concerts in the Clouds line-up under a huge tent on the grounds of Castle in the Clouds in Moultonborough, as well as at Brewster Academy near the shores of Lake Winnipesaukee in Wolfeboro. You can take in a concert at either location, but if you are boating, you are sure of some great shows at the Concerts in Town at Brewster. The lineup includes Chanaticleer, with songs, harmonies and rhythms of spirituals, quartets, jazz and more on July 24 at 7:30 p.m. Mandy Gonzales takes to the stage on August 8 at 7:30 p.m. with an evening of Broadway music. Additionally, Gentlemen’s Quartet will take place on August 20 at 7:30 p.m. with modern, elegant music. Tickets for these shows are available at www.greatwaters. org. You can walk from the downtown area to the Wright Museum of World War II at 77 Center Street in Wolfeboro. This museum is truly amazing and tells, with great attention to detail, the story of the war that shook the world. According to www.wrightmuseum.org., “The Museum accomplishes its mission through careful preservation and thoughtful displays of its extensive permanent collection of 1939 – 1945 items; thereby building a reputation as a national repository for historically significant WWII items and memorabilia. For great outdoor music, the free concerts at the Center Harbor Town Bandstand are very entertaining. The shows are performed by the Center Harbor Town Band. The schedule runs from July 4, 10, 17, 24, 31 and August 7 on Friday nights beginning at 7 p.m. (With the exception of 4th of July concert on Saturday at 7 p.m.) Bring a blanket and spread out on the lawn for a fun evening of band music (with the 4th of July offering patriotic tunes).

Heading out on the lake once again, your next stop will be Meredith. Plan for plenty of time in the town, because there is a lot to do. Hello, Lakes Region Friends; When we are lucky enough to live near the incredible bodies of water in which we do, between the lakes and rivers, I think most wish they could utilize them 24/7, 52 weeks a year. I’ve been lucky enough to grab a few boat days here and there from my boat-owning friends and it’s quite easy to see how addicting it can be.

My contribution to today’s publication is fun, picnic style food to bring along for the day on the lake. Now, nothing against our many great local restaurants that are located in the six ports spread out all around the lake - but my focus is for you to enjoy the day on the boat, staying on the boat, and bringing some outstanding food to keep you happy over the course of the day. I am going to throw a whole bunch of options at you, and maybe you will use a couple over the course of the summer, maybe you will attempt most or all, not to mention these work just as well at home or on a regular picnic if you get the notion. I’ve got a fun appetizer, a couple of amazing salads, some lunch entrees, and a few fun sweets. Most are easy to put together and quick, and there are a few which need to sit for hours once made so they are ready to pack in the cooler the morning of boating.

A couple of these just need to be prepped in advance for last minute assembly while out on the lake. Let’s do this!

I am a huge fan of dips. I don’t think I’ve ever met a dip I didn’t like, and this one is a homemade version of one of the most famous and popular dips we know, and that’s onion dip. I first met the old school onion dip with sour

cream and a seasoning packet as a kid in the late 60s, I have thoroughly enjoyed it ever since. This homemade version however includes the real thing, plenty of fresh onions—oh let me rephrase, caramelized onions. Anyone who knows me knows that caramelized onions are one of my favorite things in the world. Sautéing them up is one of the best possible aromas a house can ever have. So yes, this dip is loaded with them with some other goodies and is absolutely delicious. It takes about an hour to put together, needs to be refrigerated for at least four hours, and makes just shy of 4 cups. Serve with chips, a great quality toasted bread and/or crackers, and fresh veggies.

Caramelized Five Onion Dip 3 tbsp extra virgin olive oil 2 tbsp unsalted butter 1 large Vidalia onion, quartered and thinly sliced, 2 cups 1 large yellow onion, quartered and thinly sliced, about 2 cups 1 large red onion, quartered and thinly sliced, about 2 cups 6 medium shallots, halved and thinly sliced, about 1 ½ cups ½ tsp kosher salt, plus more to taste 6 scallions, thinly sliced 8 oz cream cheese, room temp 1 ½ cups sour cream ¼ cup mayo 2 tsp granulated garlic

¼ tsp cayenne pepper Fresh grind black pepper to taste Potato chips, toasted and/or crusty bread, carrots, celery, or other veggies for dipping Heat oil and butter in a large, deep skillet over medium high until butter melts.

Add sweet(Vidalia) onion, yellow onion, red onion, shallots, and salt; cook, stirring occasionally and folding onions into each other, until barely softened and just starting to brown, about 12 minutes. Reduce heat to medium-low. Cook, stirring occasionally, until onions are caramelized, about 35 minutes, adding scallions halfway through cook time. If onions start to stick to skillet or brown too quickly, add a splash of water to skillet. Transfer mixture to a large bowl, and place cream cheese on top; let cool completely, about 30 minutes. Stir onion mixture until cream cheese is fully incorporated. Add sour cream, mayonnaise, garlic powder, and cayenne to onion mixture and stir well to combine. Season with salt and black pepper to taste. Cover and chill for at least 3 hours or up to overnight. Let the dip stand at room temperature for 30 minutes.

Serve with your favorite dippables and dig in. As much as I still love the old school version of onion dip in a pinch, it doesn’t hold a candle to this batch.

One of my favorite things about a great salad is a fun eclectic mix of ingredients that aren’t necessarily the norm, and as in many recipes, mix and change ingredients around to make your taste buds get excited. A

Cobb Salad has always been a “Go-To” for me with the chicken, bacon, eggs, cheese, tomatoes and often avocado with a great house dressing. I love them. First on today’s list is a fun variation to a traditional Cobb Salad that I know you all will dig in. This will feed four of you at minimum!

Cajun Shrimp and Cashew Cobb Salad with a Lime Cilantro Dressing

1 lb or more bacon, cooked crisp, cut coarsely, fat saved 1 ¼ lbs shrimp. I suggest 16/20, shelled and deveined, tails off Coarse salt and fresh grind black pepper Cajun seasoning ½ cup extra virgin olive oil 1 tbsp fresh lime zest ¼ cup fresh squeezed lime juice 1/3 cup packed chopped fresh cilantro Salt and Pepper to taste 10 cups of your favorite lettuce. I prefer ¾ romaine, ¼ watercress, thinly sliced 1 pint cherry/grape tomatoes, quartered 4 hard boiled eggs, peeled and chopped. I use an egg slicer, slicing in one direction, give it a quarter turn, and do it again 2-3 avocados, peeled, pitted, and sliced 2 cups whole salted cashews 1+ cup of crumbled feta cheese, crumble bleu cheese, or whatever sounds good to you

Cook the bacon in a large skillet. Place the bacon on paper towels to drain, then chop. Save the bacon grease. You won’t need a lot for this recipe, but bacon grease is like gold in my kitchen for other recipes.

Keep 2-3 tbsp in the skillet, season the shrimp with salt and pepper, and then generously Cajun both sides of the shrimp and cook in the bacon grease for about 2 minutes on each side. As for the dressing, whisk together the oil, lime juice and zest, cilantro and salt and pepper and refrigerate. Quarter all the tomatoes, dice

the eggs, slice the lettuce, and bag all the ingredients individually. Bring the avocados whole and prep those on your boat to keep them bright green. Once ready to eat, mix all the greens with ½ of the dressing, and then in stripes over the top, start with lines of shrimp and cashews in the middle, then going back and forth on either side, do stripes of bacon, tomatoes, cheese of choice, eggs, and lastly the avocado slices. For appearance purposes, separate similar colors when laying down the layers. Drizzle the remaining dressing equally over the salads and dig right in and enjoy!

The ingredients in this next quick, delicious salad go so well together and this very simple salad goes together in no time at all, and as the last one and most of today’s recipes, it can easily be prepped at home and thrown together on the boat.

You actually could mix this one up in the morning just before leaving the house before jumping on the boat.

How is that for simple???

OK, it’s time for a couple entrée lunch items that are good for the picnic lunch on the lake. Both will likely be a little familiar to most, but I do like to add my twist on things.

One is a staple sandwich, and one is something to cook at home the night before and serve at room temp on the boat.

Although I’m not giving any recipes for fried chicken and such, that is always a great option as well. Fried chicken at room temp, or a roasted whole chicken can always be used, and will be loved, but I’m going in another direction. My options are mini Italian sandwiches, and a Bacon Quiche.

I’m a big fan of both, and don’t pay attention to the rumors that real men do not eat quiche. As for the Italians, these are not the Italian you get at a sub shop, and as much as I love any and all Italian sandwiches, this is one my mom came up with when I was a kid over 50 years ago, and I love them. What my mom did was dice the meats and veggies and cheese, put them in a bowl with Italian dressing, and when ready to eat, with a slotted spoon, spoon the mixture into the classic New England style frankfurter roll, the flat sided rolls. I have always thought those rolls are one of the

best white breads ever. They has a nice sweetness to them and I refuse to use the alternative hot dog roll. When I am at home, I will grill the roll on both sides before I fill with “guts”, as I like to call it. The average guy can eat at least 3 of these in a sitting, maybe 2 for the ladies, but it is amazing how addicting these are. My Mom was ahead of time in that nowadays they call them a chopped meat sandwich.

Everyone has their individual tastes and what they like in their sandwich, but here is what I go with. Adjust accordingly. This will get over a dozen sandwiches and the meat combo is fine for days under refrigeration so once the guts are mixed, you can make a couple sandwiches in a minute.

Mini Italian Sandwiches 1 lb of salami of choice, diced 1 lb of ham, diced 2 diced green peppers 2 diced sweet onions 2 diced tomatoes 1 jar of sliced pickle stackers, diced 1 lb of sharp cheddar, diced 1 tsp dried oregano ½ tsp dried basil 1 tsp granulated garlic 1 tsp of celery seed 1 tsp of black pepper 1 12 oz bottle of Italian dressing As many New England style frankfurter rolls as you will need

OK, things are simple now putting these together.

Dice the meats, veggies and cheese, put into a container with all the spices and dressing and combine very well. It is best if it sits for a day or so and then serve as them as you need them. A slotted serving spoon is key in that you want most of the dressing to spill out of the spoon when you stuff the rolls so the roll doesn’t get too wet. I guarantee you will inhale these babies!

Whatever you don’t use on this day will work great for a few days. When I make them at home, we chip away for a few days with these. Reminds me of Mom! Another great luncheon item which I have always loved is quiche, and yes, although I’m all guy, don’t pay any attention to the adage back in the day that “Real men don’t like quiche” because in all my days in professional kitchens, my kitchen crew inhaled quiche like they did air. Baking off a quiche or 2 the night before boating and bringing along for the ride the next day is a great idea. Quiche is a great dish at room temp. This version is a bacon and Swiss gem but as I have said many times, you can make this dish to your own liking. If you are a seasoned veteran at making your own pie crust, please do your thing. If you don’t, I suggest buying a refrigerated store-bought version. Prep and

cooking time for these are 60-70 minutes and usually each quiche gets you 6 pieces.

Bacon & Swiss Quiche 1 pie crust, whether homemade or a prebought crust 12 thick slices of bacon, cooked crisp 4 eggs 2 cups of heavy cream ¾ tsp of salt ¼ tsp of black

Roll out your pie crust into a 9-10 inch pie pan. Let it sit in the refrigerator while prepping the rest of the quiche.

Preheat your oven to 425 degrees. In a medium sized bowl, beat eggs, cream, salt, pepper with a whisk. Mix in half of the cheese to the mixture and spread the rest of the cheese over the bottom of the crust and top with the crumbled bacon, then pour the egg mixture over the bacon. Bake for 15 minutes or so, then turn down the oven to 325 degrees and continue to cook for 30-40 minutes. If you insert a knife and it comes out clean, it’s good. If using it strictly for the boat picnic, again, let it cool before wrapping.

Let’s give you some fun ideas for something sweet as well since our sweet tooth is always looking for some goodies to munch on over the course of the hot day. I’ve got a few options for you and some need to be cooked in advance or at least prepped, but these are all easy and the end results are tremendous. I’m going start off with some scrumptious oatmeal raspberry bars that are good any time of day for sure.

These are cooked in a 9x9 baking dish which usually gives me 9-12 pieces depending on how you cut them. Prep and cooking time is barely an hour. Let it cool before cutting and wrapping. 10 to 1 you will make these many times if you cook these once.

Oatmeal Raspberry Bars

1 ½ cups rolled oats 1 cup of wheat, oatmeal, or almond flour, or all purpose 1 stick of butter, softened 2 tsp ground cinnamon

¼ cup vegetable oil ¼ tsp baking soda Small pinch of salt ½ cup packed brown sugar 1 cup raspberry preserves, ideally seedless if possible

In a standing mixer bowl, combine the butter, oatmeal, flour, sugar, cinnamon, baking soda and oil and mix until well blended. In a 9 x 9 glass baking dish, spray with pan spray and line with parchment paper, and then spray the paper as well. Spread half of the mixture into the pan and press into the paper/dish. Top with the raspberry jam, and then, crumble with the remaining dough all over the top of the jam and bake in a preheated 350 oven for 35-40 minutes. Pull, let it cool and cut into squares or bars and wrap.

This next one also has some help from berries considering these being soft and chewy blueberry cookies with fresh blueberries, white chocolate chunks and gooey cream cheese and blueberry jam filling in the center. To say these are outstanding would be an injustice as I know many who have told me these are their favorite cookies ever. I have rarely made a single batch of these as they do seem to have that ability to magically disappear in the bat of an eye. Prep will take a half hour, 20 minutes to cook, although there is a 2-hour break where the dough is refrigerated, and this will yield a dozen of some of the most scrumptious cookies you

In a small bowl whisk together the first 4 ingredients and set aside. Cream butter and sugar at a high speed for about 2 minutes, until light and creamy. Add egg and vanilla and mix to combine. Run your mixer on low, mix in dry ingredients mix. Fold in about ¾ of white chocolate chunks, reserve remaining to press on top of cookies. Finally, fold in blueberries with a rubber spatula, but do this gently and try not to break the

berries. The dough will be thick and sticky. Cover and refrigerate for 2 hours. To make the filling, mix cream cheese, vanilla, and powdered sugar just to combine and place in the fridge. When ready to bake, preheat the oven to 350 degrees and line baking sheets with parchment paper. To assemble the cookies, scoop one heaping tbsp of dough and make a deep bowl in the middle. Fill with 1 tsp of cream cheese mixture and about ¾ tsp of blueberry jam. Top with ½ tbsp of cookie dough and seal any openings. Roll gently to make a ball. Press a few white chocolate chunks on top and sides of each cookie. Before baking, freeze cookie balls for 10 minutes. If you don’t have enough space for the baking sheet in the freezer, place rolled cookies on a tray or dish lined with parchment paper and freeze, and transfer on baking sheet when ready to bake. Arrange cookie balls onto baking sheet leaving 3 inches apart, because the cookies will spread while baking. Bake 16-18 minutes. Cool on baking sheet for 10 minutes, then transfer on a rack to cool completely.

fortable saying many of you haven’t combined those before. This one combines a NH favorite, and that is our own pure maple syrup. Not only does the cookie portion of these snickerdoodle whoopies contain the maple syrup, but the filling is also maple flavored. This recipe also calls for maple sugar, which can at times be hard to find. I substitute cinnamon whenever I can’t find it and the recipe comes out just as delicious, just a little different. Regardless of which ingredient you use, you have yourself an unforgettable winner, my friends.

The cookie part of the recipe will get you 24-30 cookies, which will give you 12-15 snickerdoodle whoopies once you fill them. Let’s get at it, you won’t regret it!

Maple Snickerdoodle Whoopie Pies with a Maple Cinnamon Buttercream Filling For The Cookie 2 cups flour

1 ½ tsp baking powder ¼ tsp baking soda 1 ½ tsp cinnamon ½ cup butter, softened 1 ½ cup granulated sugar, separated ¼ cup real maple syrup 1 egg ¼ cup maple sugar, (King Arthur makes one) or 2 more tsp cinnamon

Maple Cinnamon Buttercream Filling 1 stick unsalted butter, room temp 2 cups confectioner’s sugar 1 tbsp milk 2 tbsp pure maple syrup ¼ tsp cinnamon

For the cookie part, combine the first four ingredients until blended. In the bowl of a standing mixer, cream the butter with ½ cup of the granulated sugar until fluffy. Beat in the egg and maple syrup. Gradually add the dry mix to the wet until everything is just combined without over mixing. In a small bowl, combine the remaining one cup of sugar with either the maple sugar or 2 tsp of cinnamon and mix well. Preheat your oven to 350 degrees. the balls on ungreased cookie sheets, about 2 inches apart from one another, and slightly press them so the bottom is slightly flat, so they won’t roll around. Cook for 8-10 minutes or until the cookies are somewhat cracked on the top. Although they may still look wet in the middle, they will be fine. After a few minutes of cooling on the pan, transfer to wire racks to finalize the cooling process. For the filling, using either a standing mixer or handheld electric mixer, beat the butter on low until fluffy. Add the powdered sugar, about ½ cup at a time, still on low speed with the mixer. Add the milk, maple syrup and cinnamon. Beat for 3-4 minutes on a medium speed, stopping only to scrape the sides periodically. Match up the cookies as best as you can in uniformity. They all “should” be similar in size and shape, but sometimes you never know. Add a generous sized tbsp of filling to the flat side of one cookie, slap the matching cookie on the other side and slightly turn them into one another to form the best whoopie pie ever.

Today’s final recipe is a classic known to all, except served in a jar instead of at a campfire. Yup, we are talking S’mores in a jar: served with a spoon as a yummy cold treat to enjoy on a hot day. This recipe is made in a small jar or glass and covered and refrigerated until ready to eat with a spoon. I make these in ½ pint, 8 oz, canning jars and all you need are 4 ingredients. This recipe is for 8 of them but if you want to make them bigger or smaller, that is your call.

S’mores in a Jar

2 boxes of chocolate pudding mix Milk according to the recipe 2 cups graham cracker crumbs 12 tbsp marshmallow fluff Make the pudding as directed on the box. Using half pint mason jars, place about ¼ cup of graham cracker crumbs on the bottom of the jar, then approximately ¼ cup of pudding, 2-3 tbsp of marshmallow fluff, and top with more graham cracker crumbs. Seal tight and refrigerate. Put in your cooler when you go out on the lake. The kids will love them as well as the adults.

Staying Safe on the Water

By Mark Okrant New Hampshire’s lakes, rivers, ponds, and streams host thousands of boaters. It would be truly unfortunate for on-water recreation to become unhealthy or lethal. Fortunately, most of such outcomes can be avoided by taking precautions. What follows is a description of opportunities to engage in safe boating programs.

The New Hampshire Marine Patrol’s approved safety courses are available both in person—classrooms hosted at town halls, libraries, or police departments—and online. Topics typically include navigation rules, required safety equipment, state boating laws, and aquatic invasive species prevention.

Emergency preparedness on the water is a must. It is strongly recommended that boaters have a baseline kit on any powerboat and larger paddle craft. This includes a: 1.

U.S. Coast Guard–approved life jacket for each person; these must be properly sized and readily accessible 2. sound-producing device such as a whistle or horn 3. throwable flotation device 4. set of navigation lights if you will be out near dusk or dark 5. charged cell phone in a dry bag 6. quick reference to New Hampshire boating laws and symbols Boaters are expected to follow these basic emergency habits: a) file a float plan with someone on shore (who, where, and when you will be back). b) check weather and wind, especially on Winnipesaukee and other big water bodies where conditions can change fast c) if you see someone in trouble, call 911 and clearly state the name of the lake, the nearest town, and any buoy or landmark.

These will guide Marine Patrol or local fire/rescue to the scene of an emergency.

Authorities clearly require courteous boating and lake etiquette of all boaters. What this means is operating watercraft safely, quietly, and respectfully so everyone—outdoor recreationist enthusiasts, wildlife, and shoreline owners—can enjoy the water. These are some simple practices to remember: • prepare your boat (load gear, drain plug in, have lines ready) in a staging area at the dock before you back down the ramp, so you don’t block others

• once you are launched and loaded efficiently, move your boat off the ramp to a courtesy dock or away from the area before organizing people or any remaining gear • tie up so you are not taking more space than needed, and avoid blocking fuel docks, water access, or others’ slips Once you are on the water, be certain to keep a safe distance from other boats, docks, and swimmers. Many agencies within New Hampshire recommend staying at least 200 feet from shore and other vessels.

Also, while you are moving, be certain to: • obey “No Wake” (approximately 6 miles per hour) and speedlimit zones, especially near marinas, narrow channels, and swimming areas • control your wake by slowing down when passing fishing boats, paddle craft, or smaller vessels so you don’t swamp them or erode shorelines Be certain to practice right-of-way and navigation courtesy. If you are piloting a powerboat, it is your responsibility to give way to vessels constrained by activity (e.g., sailboats under sail, fishing boats with lines out, all paddle craft). You should always pass from port-to-port when meeting head-on. Power boat operators should maintain course and speed when you have the right-ofway so other skippers can predict your movements, and signal or clearly maneuver early when you are giving way. Within ski or tow-sports areas, follow local patterns (generally counterclockwise) and keep clear of non-towed boats and paddlers.

Social behavior is also the responsibility of each boat operator and passenger. This includes keeping noise and unruly behavior to an absolute minimum. Boaters should lower the decibel level of any music and be certain that engine noise does not become

Make this part of your normal pack-up routine—no boat moves off the ramp until a quick walk-around confirms it is clean, drained, and drying.

Any person piloting or being a passenger aboard a power boat must take the responsibility to insure her or his survival.

Formal swim lessons are usually offered through town recreation departments, YMCAs, some lake-front camps, as well as American Red Cross programs labeled as “learn to swim” or “water safety.” Boaters are expected to avoid interfering with swimmers and sunbathers. In New Hampshire, roped-off swim areas (“swim lines”) are typically within 50 feet of shore. Any exception requires a waiver and still must be in shallow water (no deeper than about 6 feet). Power boats must stay well clear of designated swimming areas and respect posted “No Boats,” “No Wake,” or “Swim Area” markers.

By following these procedures carefully, you, your passengers, as well as any others within the vicinity of the water will enjoy a fun, safe season.

PWC Operating Rules

• Wear a personal floatation device (PFD). All riders must wear a Coast Guard-approved PFD that is suitable for PWC use.

• Wear protective clothing. Severe internal injuries can occur if water is forced into body cavities as a result of falling into the water or being near the jet thrust nozzle. All riders must wear a wet suit bottom or clothing that provides equivalent protection. Footwear, gloves, and goggles/glasses are recommended.

• Know boating laws. In New Hampshire a PWC operator must be 16 years of age or older.

• Attach engine shut-off cord (lanyard) to wrist and keep it free from the handlebars so that the engine stops if the operator falls off.

After riding, remove cord from PWC to avoid unauthorized use by children or others.

• Ride within your limits and avoid aggressive maneuvers to reduce the risk of loss of control, ejection, and collision. A PWC is a high performance boat – not a toy. Sharp turns or jumping wakes or waves can increase the risk of back/spinal injury (paralysis), facial injuries, and broken legs, ankles, and other bones. Do not jump wakes or waves.

• Do not apply throttle when anyone is at rear of PWC—turn the engine off. Water and/or debris exiting jet thrust nozzle can cause severe injury.

• Keep away from intake grate while engine is on. Items such as long hair, loose clothing, or PFD straps can become entangled in moving parts resulting in severe injury or drowning.

• Never ride after consuming drugs or alcohol.

• Right of way. Follow basic boating rules. Sailboats (under sail),

large commercial vessels, and fishing vessels always have the right of way. Stay to the right when approaching an oncoming craft, so that it passes on your left side. When overtaking another boat, pass on the right or left, but stay clear. If you’re about to cross paths with another boat, the craft on the right has the right of way. Slow down to let the boat continue its course, then pass behind it. Even when you are sure you have the right of way, a good safety rule is to never insist on it.

Always ride defensively.

• Wake crossing. If your course takes you across the wake of another boat, make sure your visibility is not obstructed by that boat.

Stay far enough behind it so that you can see if other traffic is coming your way.

• Operating speed. Follow local regulations regarding speed limits, whether posted or not. In congested areas, lower your speed.

• Passengers and guests. Never carry more than the maximum passenger load specified for your craft. If you loan your craft to a friend, make sure he or she is of legal age, knows how to operate your craft, and is fully aware of these responsible boating rules. You are responsible when you loan out your PWC. • Riding position. Passengers should hold on to the person in front of them or the handhold while keeping both feet on the deck for balance during operation or they can lose balance and be injured.

Never allow a passenger to ride in front of the operator.

• Maintenance. Check your craft internally and externally before you get on the water. Make sure the throttle and all switches are working properly, that fuel and battery lines are properly connected, that no fuel is leaking, and that cables and steering are functioning.

When preparing to go out on a vessel, the operator must check that the legally required equipment is on board.

Personal Flotation Devices (PFDs) • All vessels must carry one wearable (Type I, II, III, or V) USCG-approved life jacket (PFD) for each person on board. Type V PFDs must be worn to be acceptable.

• All life jackets must be in good and serviceable condition and must be readily accessible. The life jackets must be of proper size for the intended wearer. Sizing for life jackets is based on body weight and chest size and can be determined by the manufacturer’s label.

• In addition to the above requirements, vessels 16 feet in length or longer (except canoes and kayaks) must have one Type IV USCGapproved throwable PFD on board and immediately available.

• Children 12 years of age or younger must wear a USCG-approved life jacket at all times while underway on a vessel, unless the vessel is completely enclosed by railings at least three feet high and constructed such that a small child cannot fall through them. It is strongly recommended that children of all ages wear their life jackets.

• The operator of a “ski craft” must wear a USCG-approved life jacket.

• At what age are children required to wear life jackets?

All children 12 years old and younger must wear a life jacket when being transported in a boat. It is recommended everyone wear a life jacket.

• Is it legal to have alcohol aboard a vessel?

Although it is legal to have alcohol aboard a vessel, operators found to be impaired to any degree will be arrested for boating while intoxicated. In addition, check with the local town where you will be boating for any ordinances prohibiting alcohol in public places.

• How do you know the capacity limit of your boat?

On most boats, the capacity for the boat (weight limit and number of LOGO WITH DOG HEAD persons) is listed on a plate located near the helm (operator's area).

Individuals must be a minimum of 16 years of age to take the test and must get at least 80% to pass the test. If the individual fails, he/she will have the option to take another test at another date or pursue another option for certification. Individuals must provide picture identification at the time of the test.

Healthy Sun Exposure on the Water Summer in the Lakes Region are synonymous with time on the water—cruising across the water, anchoring in a quiet cove, or enjoying a full day dock-to-dock. With longer days and bright sunshine, boating season draws people outside to soak up the sun’s warmth and all the mental health benefits that come with it.

Time spent on the water is not only relaxing, it’s also a natural way to boost vitamin D—often called the “sunshine vitamin.”

According to the National Institutes of Health, exposure to sunlight for five to 30 minutes a day, several times a week, is typically enough for most people to produce adequate vitamin D. That’s especially important considering many people are deficient, and low levels have been linked to conditions such as hypertension, diabetes, heart disease, and weakened bones.

But a day on the boat often means extended sun exposure, amplified by reflection off the water—raising an important question: how do you balance healthy sun exposure with protecting your skin? While vitamin D production is most effective without sunscreen, too much unprotected exposure increases the risk of skin damage and cancer.

The good news is that boaters can safely enjoy long days on the lake with a few smart precautions: • Plan your time wisely. The sun’s rays are strongest between 10 a.m. and 4 p.m.—prime boating hours—so take breaks in shaded areas like a bimini top, canopy, or lakeside restaurant.

• Ease into exposure. Enjoy a short window (no more than

about 30 minutes) of direct sunlight for vitamin D, then apply sunscreen promptly.

• Reapply often. Water, wind, and toweling off accelerate sunscreen wear. Follow product directions carefully, especially after swimming.

• Choose the right SPF. The National Cancer Institute recommends at least SPF 15, though many dermatologists suggest SPF 30 or higher for extended days on the water.

• Dress for the conditions. Lightweight long-sleeve shirts, UVprotective clothing, polarized sunglasses, and wide-brimmed hats go a long way when you’re out on open water with little natural shade.

• Watch for reflection. Sun exposure is intensified on the water, increasing the risk of burns—even on cloudy days.

• Protect younger passengers. Severe sunburns, particularly in youth, can significantly raise the risk of melanoma later in life.

Make sun protection part of every boating trip for kids and teens.

It’s not always easy to define how much sun is too much. Factors like skin type, UV index, and time of day all play a role. On a typical summer day, fair-skinned boaters can burn in as little as 10 to 15 minutes during peak sun.
