Caldwell Shorter days and longer nights, challenging temperatures, and sometimes-hazardous roads can make winter seem like a time to simply stay inside by a warm fire with a hot beverage and a good book — or use a streaming service to catch up on a favorite series. Yes, those things are nice, but winter also offers some wonderful opportunities to get outside and have fun.

When nature lays down a nice blanket of snow, alpine skiers head to the mountains or small hills while Nordic skiers seek out trails through the woods. Snowmobilers take off across the meadows or hit the trails. Tubers find places to slide down the hills. Snowshoers take advantage of fresh snow to get a great physical workout while exploring the fields and wooded trails.

New Hampshire ski areas offer countless adventures, from lifts that provide breathtaking views and terrain to meet everyone’s tastes and abilities to off-slope activities and après-ski events. In addition to downhill skiing, many offer cross-country trails and tubing hills.

Ski resorts also offer a variety of dining options, with many also offering massages, saunas, and hot tubs. What smaller ski hills lack in amenities, they make up for with shorter lines and less crowding.

Abenaki Ski Area in Wolfeboro falls into the small-hill category. It is a community-owned ski area in operation since 1936, opening just one year after the state’s oldest ski hill, Black Mountain, opened. Abenaki still holds the record as the oldest community-operated ski area in the country.

Gunstock Mountain Resort in Gilford is owned by the county and operated by a specially formed commission. It

was originally created under Franklin D. Roosevelt’s Works Progress Administration and was known as the Belknap Recreation Area. It was spearheaded by a local ski club promoting a love of outdoor recreation. It opened in 1936 with four miles of terrain; today, it has 48 trails on 227 acres, with seven lifts.

Ragged Mountain in Danbury boasts 57 trails on 250 acres of skiable terrain, with a vertical drop of 1,250 feet.

Its former owner, Pacific Group Resorts, Inc., has just sold the ski area to a group of local investors.

Also among the smaller hills is Black Mountain in Jackson, with 45 trails on 143 acres of terrain, with five lifts.

Wildcat Mountain, with 48 trails, has the longest novice trail in New Hampshire, the 2.5-mile Polecat Trail.

King Pine in Madison offers 17 trails, with a modest 350foot vertical drop, making it ideal for all ages and ability levels. Comprising just 50 acres, it has five lifts and offers night skiing.

Tenney Mountain in Plymouth has about 50 trails and 1,500 vertical feet for skiers and riders of all abilities.

Waterville Valley Resort is among the larger ski areas, with Loon Mountain in Lincoln also being a major ski destination.

Snowmobilers have a choice of several trails on stateowned or -managed land maintained by the New Hampshire Bureau of Trails, while private landowners have granted access to snow machines as long as riders stay on the trail and respect the land. Local snowmobile clubs are responsible for obtaining landowner permission and maintaining the trails.

The New Hampshire Snowmobile Association maintains a free interactive trail map showing all of the state’s snowmobile trails, along with services close to them. Hard-copy maps of each trail system maintained by the local clubs are available by contacting them directly.

Those lucky enough to live away from population centers and who have snowshoes can just head out the door.

The snowshoes keep them from sinking and allow them to seek out quiet spots where the bare trees offer spectacular views of landscapes that are hidden during full foliage.

Those with little outdoor or snowshoeing experience can take part in one of the guided snowshoe tours offered by many of the ski resorts. Among them are Gunstock Moun-

tain Resort, Great Glen Falls in Gorham, and Jackson XC. Those who prefer to go out on their own might want to try the 40 kilometers of trail maintained by the Jackson Ski Touring Foundation. The self-guided trails are mapped and well-marked, with several “you are here” signs at the intersections.

The Loon Adventure Center in Lincoln offers a variety of snowshoe tours on scenic trails that meander alongside the Pemigewasset River, with switchbacks high onto Black Mountain. The Riverbank Tour along the Pemigewasset River follows former logging roads, while the Loon Peak Tour starts with a gondola ride to the summit of Loon Peak.

The North Peak Tour is a challenging trek that begins at the gondola summit.

Waterville Valley Resort boasts 71 kilometers of Nordic trails that also are open to snowshoeing. Bear Notch in Bartlett has more than 65 kilometers of trails. Omni Mount Washington Resort offers trails that provide everything from an easy stroll to a backcountry hike, with groomed Nordic trails. Purity Springs Resort and Snowshoe Preserve in Madison has 20 kilometers of cross-country and snowshoe trails.

Keep in mind that venturing out into the wilderness can be dangerous, so make sure you are fully prepared for what you might encounter on such a trek. Before heading out on any winter activity, it is important to be mindful of safety. Tell someone where you plan to go and when you will be back. It’s always a good idea to snowshoe or use cross-country skis with a partner. Waterproof and insulated clothing is a must, while dressing in layers allows the trekker to adjust to changes in temperature and wind conditions. When heading out on trails, carry a trail

map, and stay on the marked trails. Bring plenty of water and high-energy snacks, as well as a flashlight.

If skiing or snowshoeing are too difficult, why not take a sleigh or carriage ride? Nestlenook Farm in Jackson has a 1.5-mile decorated trail of lights and lanterns, with sleigh rides every day except Thanksgiving and Christmas from November 28 until mid-March. Ride times vary from day to day. All rides are approximately 25 to 30 minutes long.

Then there is the old-fashioned tradition of ice-skating.

Skating has never lost its appeal and, when rivers and ponds freeze, people look for clear ice to skate upon.

As you can see, there are plenty of things to do outside during the winter, so, while being cozy and warm has its attraction, getting outside and experiencing nature is just as appealing.

Power Out? A Whole-House Generator Keeps Life Running Weather is unpredictable.

Strong winds or storms can wreak havoc on power lines, resulting in outages that may last hours or even days. People have come to rely on electricity, not only for comfort and safety, but to power just about every aspect of modern life. A power outage can be a minor disruption or downright dangerous, unless a whole-house generator can take over when needed.

What is a whole-house generator?

A whole-house generator, also called a standby generator, is a permanently installed system that provides backup power to a home during a utility outage. The generator typically runs using a natural gas or propane connection.

Unlike a portable generator, a whole-house generator is installed outside on a concrete slab. It is wired to the home’s electrical panel through an automatic transfer switch (ATS). This switch will continuously monitor the electrical grid’s power and start automatically if an outage is detected. When the power comes back on, the ATS will shut off the generator and reconnect the home to the grid.

New Hampshire is a wonderful place to live. Its varied climate presents a range of recreation opportunities, but also demands homes that offer a great deal of versatility.

To have homes that are efficient during all seasons necessitates creating a highly insulated, airtight “building envelope.” This means using high-efficiency systems, materials, and renewable energy sources. Regardless of the season, a home should be made as impermeable as possible to prevent drafts and air leaks. This is crucial for maintaining consistent indoor temperatures and air quality.

House insulation should exceed the 2018 energy code.

Structural insulated panels should be used to create an airtight structure that keeps the home warm in winter and cool in humid summers. Understanding Window Replacement: Types, Costs, and Key Choices Windows are durable, but they do not last forever. The experts at This Old House say the life span of home windows is between 15 and 50 years, with most reaching the upper limits of their life expectancy at around 20 years.

Once they reach this age, the seals begin to weaken or fail, and windows become susceptible to drafts and water seepage.

Replacing windows can be a good investment. Such a project is one of the more effective ways to elevate a home’s curb appeal and value. New windows are energy efficient and make homes more secure. They also tend to look better than old, fading windows. When pondering a window replacement project, it’s important to consider these factors.

Creative Pursuits Aren’t Just for Kids: How Adults Benefit From Hobbies Parents of young children have undoubtedly read or learned about the benefits of giving children time to engage in creative pursuits. Such activities can help foster cognitive development in youngsters, but the benefits of being creative don’t end in adolescence. In fact, adults also have much to gain from being creative as well.

A 2021 study published in the International Journal of Environmental Research and Public Health noted a positive relationship between creativity and subjective well-being in adults. Such findings are a feather in the cap of creative pursuits, and enough to compel some adults to wonder which hobbies they can pursue in an effort to ignite their creative fire. Creativity can be defined in a number of ways, particularly with respect to recreational pursuits, but various activities might be just what adults need to reap the rewards of being more creative.

• Painting: Many adults who paint characterize this recreational activity as a great way to unwind and ease stress. Painting requires creativity, and even avid painters may not recognize that painting is a mental exercise that encourages problem-solving. That can have a profound impact on mental health, as a 2015 study in the journal Neurology found that adults who engaged in cre-

ative pursuits like painting were 73 percent less likely to develop cognitive issues that can lead to dementia.

• Writing: Writing is another creative pursuit that can make for a great hobby. Writing in a journal, even if it’s a recap of the day’s events and not writing fiction, can clear up mental clutter, which in turn can open a pathway to more creative thinking. Adults also can utilize a journal to do some creative writing.

• Knitting: Knitting is another hobby that allows adults to indulge their creative side.

• Playing an instrument: Learning to play a musical instrument affords adults an opportunity to express themselves. Playing a musical instrument also has been linked to a range of cognitive benefits, including sharpened decision-making, improved memory and focus and enhanced mental flexibility.

By Mike Moore The snow-covered lakes, rolling hills, and wooded shorelines are a big reason why the Lakes Region attracts year-round residents and visitors. Whether you are enjoying miles of snowmobile trails, exploring frozen lake paths, or simply taking in the peaceful winter scenery, the colder months in New Hampshire are a wonderful time to experience all the area has to offer. Throughout the snowy hills and valleys of the Lakes Region, a wide

variety of wildlife and birds also call this area home during the winter months, giving birders and wildlife watchers plenty to see while exploring frozen forests and quiet shorelines.

hundreds of species to be found right here. Wild turkeys, several species of woodpeckers, and American crows are frequently seen searching for food or nesting material throughout the winter.

The Lakes Region’s mix of deciduous and evergreen trees provides excellent habitat for these birds, with pine and oak trees offering shelter and food sources. Many homeowners keep bird feeders stocked through the winter months, attracting a variety of colorful visitors. Blue jays and cardinals are a delight to see perched on backyard branches, and their calls echo through neighborhoods later in winter as mating season approaches.

One of the more elusive winter visitors to the Lakes Region is the snowy owl. While sightings are never guaranteed, snowy owls occasionally migrate into New Hampshire during the winter months in search of food, spending summers far north in the Arctic. Birders often have better luck spotting snowy owls in open areas such as the fields around New Durham, the wetlands near Ossipee,

or along open shorelines of Lake Winnipesaukee where the forest is less dense.

Avid birdwatchers are also drawn to the region in hopes of spotting some of New Hampshire’s most impressive birds of prey. Among the most iconic is the bald eagle. With piercing yellow eyes and an enormous wingspan, seeing a bald eagle in flight is a thrill for anyone. Bald eagles typically soar with their wings held level, and their massive nests can often be found high in treetops near water. Fish and small waterfowl are their preferred meals, making the Lakes Region an ideal winter habitat. Bald eagles are frequently seen along the shores of Lake Winnipesaukee, Squam Lake, and Newfound Lake, where open water and fish are often accessible even in winter.

Another exciting find for birdwatchers is the peregrine falcon.

This endangered species is one of the fastest birds in the world and, like other raptors such as hawks and eagles, is admired for its power and precision.

Deep snow and thick forests create ideal winter habitat for many animals, particularly larger mammals such as moose and black bear. White-tailed deer, foxes, weasels, and woodchucks can also be found throughout the winter months. Not all predators hibernate like black bear; coyotes, fishers, and bobcats remain active and are best admired from a safe distance. Moose, in particular, are so large and unpredictable that observers should keep their distance. Areas around Sandwich Notch, the Ossipee Mountains, and the forests surrounding Newfound Lake are known for moose activity, especially during the quieter winter months.

State parks, conservation areas, and wildlife sanctuaries throughout the Lakes Region offer excellent opportunities to spot birds and animals. Places such as Castle in the Clouds in Moultonborough, Squam Lakes Natural Science Center in Holderness, and the Lakes Region Conservation Trust’s protected lands provide year-round access to trails and viewing areas. Visitors may encounter woodpeckers, warblers, and herons, as well as signs of otters and beavers along wetlands and waterways. When heading out for a wildlife or birdwatching excursion, it’s important to dress for the weather, carry maps or field guides, and be respectful of the natural environment.

For those who prefer to enjoy winter wildlife from the comfort of their vehicle, the Lakes Region offers numerous scenic drives. Routes around Lake Winnipesaukee, along Route 25 through Holderness and Rumney, or along Route 171 in Tuftonboro provide beautiful winter views and occasional wildlife sightings without ventur-

ing far from home.

Once the leaves have fallen and tree branches are rimmed with ice, winter wildlife becomes easier to spot against the snowy landscape. Whether hiking, snowshoeing, or simply enjoying the view from home, residents and visitors alike can catch glimpses of some of New Hampshire’s most memorable animals—from soaring bald eagles over Squam Lake to the towering moose of the Ossipee Mountains and the quick flash of a red fox crossing a quiet back road. Protect Your Home, Protect Your Lungs: Understanding Radon Risk Although radon is a naturally-occurring substance, it can be detrimental to human health. One of the dangers associated with radon is that it is not something that can be seen, smelled or tasted. Plus, it can take years before radon exposure begins to produce symptoms.

What is radon?

Radon is a naturally occurring, colorless, odorless, radioactive gas, says the Cleveland Clinic. It forms when uranium, a heavy metal found in the ground and in most rocks on Earth, decays and turns into another metal called radium. When radium breaks down, it becomes radon.

Typically, radon is in such small amounts outdoors in the air and water that it isn’t harmful. But if radon becomes concentrated, it can be toxic if exposure is high and extensive.

Are there symptoms of radon exposure?

Initially, a person may not realize that radon is posing a problem. Radon can get into the lining of the lungs when breathed in and will give off radiation. Over time, that radiation can damage the cells in the lungs and lead to lung cancer, says WebMD. In fact, radon is the second biggest cause of lung cancer after cigarette smoking.

Radon poisoning symptoms may start off small, and it can be challenging to connect them to anything amiss

until they are prolonged. There typically are not any symptoms until lung cancer has formed and progressed to a later stage. However, individuals should always be on the lookout for a prolonged cough, bloody mucus, unexplained weight loss, shortness of breath, wheezing, and chest pain. Frequent infections like bronchitis and pneumonia also are concerning.

Is radon more prevalent in particular areas?

Some types of soil are more permeable than others, which means radon gas can pass through more easily, says WebMD. Other soils may have higher concentrations of radon.

Soil that’s dry, cracks when dry, is on a slope or hill, or thin with bedrock close to the surface may contain excessive amounts of radon.

In the United States, Alaska, South Dakota, Pennsylvania, and Ohio are the states with the highest average levels of radon. In Canada, New Brunswick, Manitoba and the Yukon have the highest percentage of homes exceeding the safe radon guideline. Every homeowner is advised to test their home for radon.

Radon, although naturally occurring, is a threat to lung health. Since damage occurs over many years, it is essential to detect radon as early as possible to avoid prolonged exposure. ~Metro

According to the Federal Reserve Center for Microeconomic Data, credit debt exceeded $1.2 trillion in the United States by the end of the second quarter of 2025. Credit debt is also a fact of life in Canada, where a NerdWallet survey from April 2025 found 74 percent of Canadian adults use credit cards to pay for essential services.

Successful credit management can help consumers secure their financial futures. With that in mind, consumers can consider various strategies designed to help them use credit wisely.

• Recognize that credit cards are not additional earnings. A new credit card with a $15,000 line of credit is not the same thing as a $15,000 increase in salary. So, a new line of credit should not be viewed as new money to spend. Wise credit usage involves staying within one’s means and living on a budget commensurate with your earnings, which does not include your lines of credit.

• Pay balances in full at the end of each month. Though there’s no official number on how much of consumers’ collective credit card balances are due to interest charges, it’s likely fair to assume such fees factor heavily into many consumers’ monthly bills. Interest charges are only charged when balances aren’t paid in full each month, so consumers with the means to do so should aspire to have a balance of $0 by the end of each pay period. That’s more doable when consumers make wise decisions regarding when to use credit to make purchases. Avoid using credit to make impulsive purchases for items you don’t need and cannot afford. Use credit for

purchases you know you can afford to pay off before interest charges are tacked on.

• Don’t be too enticed to accumulate rewards or points.

Many credit cards now incentivize credit usage with percentage cash back offers or points systems. But wise credit users know they should avoid using credit simply to earn cash back or points. While there’s definitely a benefit to cash back offers and points systems, credit should never be utilized simply to earn such rewards.

• Resist any temptation to take a cash advance. Cash advance offers from credit card companies can be tempting, but such offers typically begin accruing interest the moment cardholders take the advance. Those interest charges can pile up quickly and contribute to financial woes that necessitated acceptance of the advance in the first place.

• Adopt a sound approach from the get-go. Embracing these strategies from the moment you open your first credit card account can help you build a strong credit rating and financial reputation, which can pay notable dividends throughout your adult life. Consumers who establish a good financial reputation and maintain a strong credit rating are more likely to be eligible for lower interest rates on expensive items like homes and automobiles, which can save them tens of thousands of dollars over the course of their lives.

Warm Up the Season: Hearty Homemade Meals to Freeze Now & Enjoy Later

By Chef Kelly Winter is here once again, and though we all have our favorite comfort foods, sometimes we’re more tired this season, and it’s harder to make a meal for the family. One way to help make things go a little smoother is to spend a weekend day inside to prep and freeze meals for later.

I think we all do that at times anyway, but today’s theme is all about options for all of us. Freezer meals can provide a quick, healthy dinner on a busy weeknight, and I’m not talking about store-bought frozen dinners, but the soups, stews, and casseroles that I make ahead and freeze myself. Stored and reheated the right way, these freezer meals are just as flavorful as they were on the day they were made. With a stash of them on hand, making a delicious, healthy dinner is as simple as heating one up!

Let’s start with a couple of silky, smooth, delicious fall/ winter soups. This first one is exquisite with a unique combo of carrot, orange, and brie cheese. The hint of citrus from the orange and the savory flavors of thyme and garlic add an exciting depth of flavor to this eclectic soup. It’s a perfect “warm you from the inside out“ kind of soup, whether you eat it when you make it or once pulled from the freezer. As written, this recipe serves 4 as a dinner, so if freezing some for later, I strongly suggest doubling it up at minimum. Whether making a single or double batch, this will take you an hour.

1 tsp salt 6 cups chicken broth 1 tsp thyme 5 oz brie cheese rind removed, cubed ½ cup heavy cream ¾ cup fresh squeezed orange juice Pepper to taste On a parchment paper-lined cookie sheet, lay out carrots. Drizzle with 2 tbsp olive oil and ½ tsp salt, and toss. Roast at 400 degrees for 25-35 minutes. Add onion, garlic cloves, 1 tbsp olive oil, and ½ tsp salt and toss together and roast another 5 minutes. After roasting, place all the ingredients in a large pot with chicken broth and thyme and simmer for 15-20 minutes. Run an immersion blender through it until smooth or puree in a blender in batches and add back to the pot. Add brie, orange juice, and heavy cream, stirring until brie is melted. Season with pepper to taste. When cool, transfer to a large freezer bag or smaller freezer containers and freeze. I suggest pulling it from the freezer 1-2 days before wanting to eat and let it thaw in the refrigerator and heat on stovetop or in the microwave. I like to garnish with chopped chives and/or scallions.

One of my favorite fall traditions that translates to my winter eating, especially for my wife’s work lunches, is making butternut squash soup on Sunday afternoons. In the past, my go-to recipe has included spicey elements, but I found myself craving one that was a bit more traditional: a delicious, all-veggie, healthy butternut squash soup with ginger, sage, and rosemary. This vegan gem is creamy and nourishing, perfect for satisfying cozy cravings regardless of what season we are in. With only 10 ingredients, it’s easy to make. Cook in big batches today,

freeze, and enjoy it for weeks or months. This batch will serve 6, and prep time is 20 minutes if peeling the squash yourself, so if you buy it peeled, it will go together quicker. Cooking time is closer to 45 minutes.

Butternut Squash Soup 2 tbsp extra-virgin olive oil 1 large yellow onion, chopped ½ tsp sea salt 1 butternut squash, 3 lbs, peeled, seeded, and cubed 3 garlic cloves, chopped 1 tbsp chopped fresh sage ½ tbsp minced fresh rosemary 1 tsp grated fresh ginger 3-4 cups vegetable broth Freshly ground black pepper For serving Chopped parsley Toasted pepitas Crusty bread Heat the oil in a large pot over medium heat. Add the onion, salt, and several grinds of fresh pepper and sauté until soft, 5-8 minutes. Add the squash and cook until it begins to soften, stirring occasionally, for 8-10 minutes.

Add garlic, sage, rosemary, and ginger. Stir and cook for 30 seconds to 1 minute, until fragrant, then add 3 cups of the broth. Bring to a boil, cover, and reduce heat to a simmer. Cook until the squash is tender, 20-30 minutes.

Let cool slightly and pour the soup into a blender, working in batches if necessary, and blend until smooth. If your soup is too thick, add up to 1 more cup of broth and blend. Season to taste and serve with parsley, pepitas, and crusty bread. Like the previous soup, when freezing, make sure it is completely cooled before packaging it for

the freezer and pull a day before needing it under refrigeration and cook via stovetop or microwave.

There aren’t many styles of food I dislike, and I do love anything to do with Mexican food, so this one is a huge winner in my book. Taquitos are a stuffed and rolled tortilla, usually made with chicken or beef, and typically fried and served with dipping sauce. They can be done with either flour or corn tortillas, but if making in advance, I suggest finding a combo flour/corn tortilla as they hold together better and are less likely to crack, especially compared to corn tortillas, which have a high tendency to crack and break. For the filling for this one, I use jackfruit, the largest of all fruits that often works as a meat substitute and is much healthier and absolutely delicious. Although a little pricey, it is worth it. If preferred, you can easily stick to beef, chicken, or shrimp, or make a variety of taquitos when freezing to change things up now and then. Unlike the typical restaurant preparation, I bake them as opposed to frying them. By using the jackfruit and baking, these are a fairly healthy alternative to going out to eat. This recipe is good for 1214 taquitos, and they take less than a half-hour to prep and 35 minutes to cook.

Homemade Taquitos For The Jackfruit 1 can of jackfruit, 20 oz, cored and shredded 1 tsp extra-virgin olive oil 2 garlic cloves, grated 1 tsp cumin 1 tsp coriander Pinch cayenne pepper ½ tsp sea salt Freshly ground black pepper 1 can diced green chiles, 4 oz, drained For The Taquitos 12-14 flour/corn tortillas, or flour ¾ cup refried beans 1 cup jack cheese ¼ cup chopped scallions Extra-virgin olive oil cooking spray Guacamole, Pico de Gallo, cilantro, Serranos for optional toppings Preheat the oven to 400 degrees and line a baking sheet with parchment paper. plastic films and lay the taquitos on a platter or plate in the single plastic wrap. The main reason for this is to make it easier to unwrap them when they are thawed.

The cooking process is the same as described earlier.

For the most part today, I have been sharing some fairly healthy recipes great from freezer, and that theme continues with my all-time favorite veggie burger. I’m a big fan of black beans and even more so when it comes to building the perfect veggie burger. Hands down, this black bean burger recipe is the best one I’ve tried. The patties are hearty, well-charred, and packed with bold flavor. They’re delicious with classic burger fixings like ketchup and mustard, but if you ask me, a slather of chipotle mayo or a scoop of guacamole really takes them to the next level. This recipe is for 6 burgers, so plan accordingly. I know most of you have put the grill away for the winter, but come summertime, these are as awesome off the grill as they are in a cast-iron pan on the stove. The best part about making these for the freezer is that they only take 15 minutes to make. One thing to remember when making these is when grating the onion, use the large holes on the grater. You will end up with a lot of liquid. I suggest straining them in a small strainer, but there is no need to squeeze the liquid out, as a little of the onion juice is a good thing.

Black Bean Burger 3 cups cooked black beans, drained and rinsed 1/3 cup grated yellow onion 2 garlic cloves, minced 2 chipotle peppers from a can of chipotles in adobo, diced 2 tbsp adobo sauce

1 tbsp tamari 1 tbsp balsamic vinegar 1 tsp ground cumin ½ tsp sea salt ½ tsp freshly ground black pepper 1 large egg 1 cup panko breadcrumbs Extra-virgin olive oil, for brushing Cooking spray, if grilling Hamburger buns, for serving Desired fixings, for serving In a large bowl, combine the beans, onion, garlic, chipotles, adobo sauce, tamari, balsamic, cumin, salt, and pepper. Use a potato masher to mash until the mixture holds together but still have some visible chunks of black beans. Add the egg and use a spatula to fold until combined. Then, fold in the panko. Use your hands to form the mixture into 6 patties. The mixture should be cohesive and a little wet. If it’s too wet to handle, chill in the fridge for 20 minutes to firm up or mash your beans a little bit more. Heat a cast-iron skillet over medium heat.

Brush with a little oil and cook the burgers for about 5 minutes per side, until charred on both sides, turning the heat down as necessary. The exact timing will depend on the heat of your stove and cookware. Alternatively, preheat an outdoor grill to 400 degrees. Lightly brush the patties with olive oil, spray the grill grates, and grill for 8 minutes on the first side and 4 minutes on the second side. Serve with hamburger buns and desired fixings.

When freezing, wrap each burger individually twice in plastic wrap tightly and then put them all in a large ziplock bag. Thaw for 1 day in your fridge and then cook as

described above; although once frozen, they cook best when still a bit frozen. Top with cheese and all the other goodies that sound good.

My most popular at-home frozen meal is lasagna.

There are many great reasons for that, as if you make a large pan of it, eat 4 pieces at dinner with the family the first time around, that still gives you 8 large pieces to wrap individually to freeze for future meals. A total win/win. Another of my favorites is stuffed shells, where you stuff them in a baking dish, wrap and foil it, and pull the whole dish a day or 2 before and cook it all. Stuffed shells generally won’t get you the same number of servings as the lasagna, but making the shells isn’t nearly as time-consuming as making a large pan of lasagna. These spinach and ricotta stuffed shells are such a comforting, flavorful dinner. These stuffed shells are saucy, cheesy comfort food at their best. It takes 30-40 minutes to put this together, and this serves 6, so it’s perfect to make in advance for when you know you won’t have time to prepare anything but still want an amazing dinner. Cooking time will be 30-40 minutes, depending on whether it is still a little frozen.

Stuffed Shells 18-20 jumbo pasta shells Extra-virgin olive oil, for drizzling 5 oz fresh spinach 2 cups ricotta cheese, 16 oz ¼ cup grated pecorino cheese, plus more for sprinkling 2 garlic cloves, grated 1 tsp dried oregano 1 tsp lemon zest ¼ tsp red pepper flakes

¾ tsp sea salt, plus more for the pasta water Freshly ground black pepper 2-3 cups marinara sauce, plus more for serving Chopped fresh parsley, for serving Preheat the oven to 425 degrees if making and cooking right away. Place the spinach in a steamer basket and set over a pot with 1-inch of water. Bring the water to a simmer, cover, and let steam for 1 minute, until the spinach is wilted. Transfer to a strainer and squeeze out the excess water and chop the spinach. In a large pot of salted boiling water, cook the pasta shells for 10 minutes, until al dente. Drain and drizzle with a little olive oil to keep them from sticking together. In a medium bowl, combine the spinach with the ricotta, pecorino, garlic, oregano, lemon zest, red pepper flakes, salt, and several grinds of pepper. Spread the marinara in the bottom of a 9x13 baking dish. Stuff each shell with the filling and place in the dish. Cover with foil and bake for 20-30 minutes. Serve with more marinara on the side. If freezing, place a layer of plastic film directly on top of the shells, then top the dish tightly with foil and pop in the freezer.

Pull it from the freezer in the morning before cooking it for dinner, and put it in your fridge. Pull from the fridge a half hour before cooking, preheat oven to 425 degrees, take the plastic wrap off the shells and re-foil, then cook for 30-40 minutes or until heated throughout. Heat extra marinara while the shells cook, as well as some garlic or other great bread, and make a yummy salad to go with it. If you care to, for the last 10-15 minutes, you can add more sauce to the pan to cover the shells and cover with a layer of shredded mozzarella.

Cordon bleu with its chicken, ham, and Swiss cheese, combined with the Tetrazzini with the chicken, mushrooms, onions, cream, garlic, parmesan, breadcrumbs, and pasta makes for an outstanding dinner. Not only is this amazing when made fresh, but it’s also just as good if frozen and cooked weeks later.

Plan on this taking you up to 35-40 minutes to prepare.

If freezing, once it is completely made, put it uncovered in the refrigerator until morning, then wrap in plastic, then foil, and freeze until needed. Once it’s ready to cook, plan on 45 minutes to bake. If cooking it when you make it, it’ll be more like 30-35 minutes to bake.

This will feed 8.

Chicken Cordon Bleu Tetrazzini ½ cup unsalted butter, divided ½ yellow onion, chopped 12 oz button mushrooms, sliced, optional 2 garlic cloves, minced ¼ cup all-purpose flour 3 cups chicken stock 2 cups heavy cream 2 ½ - 3 cups cooked chicken, chopped 1 ½ cups ham, chopped 1 lb spaghetti, cooked according to package directions ¾ cup Swiss cheese, grated Kosher salt and freshly ground black pepper 1 cup Panko breadcrumbs ½ cup Parmesan, grated Preheat oven to 400 degrees and grease a 9x13-inch baking dish with nonstick spray. Set aside. Heat a large skillet over medium heat. Melt ¼ cup of the butter, then

add onions and shrooms if using them. Cook until done, about 5 minutes. Add garlic and cook for one minute more. Sprinkle flour over onions, cook one more minute while stirring, and then whisk in chicken broth and heavy cream. Bring to a slow boil, reduce heat, and continue cooking until mixture has thickened, about 5 minutes, stirring occasionally. Season to taste with salt and pepper and stir in chicken, ham, cooked noodles, and Swiss cheese. Pour mixture into prepared baking pan. Melt remaining butter in a microwave-safe bowl and then stir in breadcrumbs and Parmesan. Sprinkle breadcrumb mixture evenly over casserole. Bake until hot and bubbling and breadcrumbs have browned, 30 minutes. Let cool for 5 minutes before serving. Enjoy. If freezing, pull the day before cooking it and thaw in the fridge. Pull 30 minutes prior to cooking and follow above directions, remembering it will take closer to 45 minutes to bake.

This last one holds a very special place in my heart, as this one has been a staple in my life since I was as young as I can remember: Tourtiere, alias Canadian meat pie.

This originated in Quebec province of Canada and is a common dish during the winter months up north. Like many recipes, there are quite a few subtle twists on it, but the usuals are ground pork and beef, potatoes, onions, garlic, a few spices, all baked between a top and bottom pie crust. Back in the day, most everyone topped theirs with ketchup at the dinner table, but over time, I have seen a few things used from gravy to cranberry sauce, and my favorite, Cholula hot sauce, although most still prefer the ketchup. en of these, some to give out as presents and some for us to chip away at during the winter, and that was a beautiful thing. This recipe makes 2 pies, and they freeze wonderfully. If you make your own crust, you know how long that takes. To make the filling, plan on 30-40 minutes. You will not be disappointed. Once the pies are cool, double wrap in foil and pop them into the freezer.

Tourtiere 2 lbs lean ground pork 1 lb lean ground beef 1 onion, minced 1 clove garlic, minced 1 tbsp salt 1 tbsp pepper 1 potato, finely diced ½ cup milk ½ tsp ground cinnamon ½ tsp ground cloves 2 pie crusts, tops and bottom, homemade or storebought Combine the ground beef, ground pork, onion, garlic, salt, pepper, potatoes, and milk in a large skillet. Cook over medium-low heat, stirring occasionally, until the meat browns and the potatoes soften. When the meat and potatoes are cooked through, mash the ingredients until smooth. Stir in the cinnamon and cloves. Remove

the pan from heat and allow the filling to cool slightly. Spoon the mixture evenly over the two pie shells, then top each pie with a pie dough topping and pinch the crust’s bottom and tops together.

Use a sharp knife to add slits to the top for venting. Once the pies are at room temp, cover each pie with two layers of foil and place them in the freezer until ready to bake. Once ready to cook, transfer the pie to the refrigerator to thaw overnight.

Preheat the oven to 350 degrees and place the thawed pie in to bake. Cook covered for 45 minutes, then remove the foil and continue cooking for another 10-15 minutes, until the crust is golden brown. The pie can also be cooked frozen by adding about 30 minutes to the cooking time.
