How is there seemingly so much and so little going on at the same time?

It seems like both nothing and everything has changed since the last time I sat here writing a note for our latest Lakeside. Lord, does that seem like a lifetime ago. I don't remember too much about what was in that issue. No events, that's for sure. I don't really remember, for that matter, what day it is.

COVID-19 has rocked our world. Not in a fun way. We're trying to repoen our communities, but it's been hard and weird. So many businesses have taken a hit, so many moments and experiences lost, and Clarendon County and the Midlands have been in a COVID-19 spotlight we'd all rather skip out on.

There's a lot we can look to that's negative.

Let's not do that here.

Let's take this as a semi-escape. A hope for things to come, that things can adapt, that we can grow in the face of adversity.

I'm an optimist in my heart and soul and a pragmatic in daily reactions.

I'm excited to share this issue with you. We have events listed that haven't been canceled! Of course, that is all subject to change, but while we can still celebrate and look ahead, let's do it.

Lyme disease or COVID-19?

Symptoms could be mistaken, with serious consequences From Jory Brinkerhoff University of Richmond

S

ummer is field season for ecologists like me, a time when my colleagues, students and I go out into fields and woods in search of ticks to study the patterns and processes that allow disease-causing microbes – primarily bacteria and viruses – to spread among wildlife and humans.

That field work means we're also at risk of getting the very diseases we study. I always remind my crew members to pay close attention to their health. If they get a fever or any other signs of sickness, they should seek medical treatment immediately and tell their doctor that they may have been exposed to ticks.

When summer flu-like illnesses develop in anyone who spends time outdoors in areas where ticks are common, tick-transmitted diseases like Lyme disease should be considered a likely culprit.

This summer, however, the global emergence of the novel coronavirus and COVID-19 is presenting a whole new set of challenges for diagnosing Lyme disease and other tick-borne illnesses.

Lyme disease shares a number of symptoms with COVID-19, including fever, achiness and chills. Anyone who mistakes Lyme disease for COVID-19 could unknowingly delay necessary medical treatment, and that can lead to severe, potentially debilitating symptoms.

DELAYING MEDICAL TREATMENT CAN BE DANGEROUS As we move from spring into summer, and into the peak period of tick activity in much of the Northern

Hemisphere, time spent outdoors will increase, as will risk of tick-transmitted disease.

In some cases, there are key symptoms of a ticktransmitted disease that can help with diagnosis.

For example, early Lyme disease, which is caused by the bite of an infected black-legged tick, sometimes called the deer tick, is commonly associated with an expanding "bull's-eye rash." Seventy percent to 80% of patients have this symptom.

However, other symptoms of Lyme disease – fever, head and body aches and fatigue – are less distinctive and can be easily confused with other illnesses, including COVID-19. This can make it more difficult to diagnose a patient who did not notice a rash or was unaware that he or she ever had a tick bite. As a result, Lyme disease cases can be misdiagnosed. Nationally, Lyme disease may be undercounted to the point that only one in 10 cases is reported to the CDC. If Lyme disease is identified and treated quickly, two to four weeks of antibiotics can usually knock out Borrelia burgdorferi, the species of spirochete bacteria that causes it.

But delays in the treatment of Lyme disease can lead to more severe and persistent symptoms. If Lyme

disease goes untreated, neurological and cognitive problems and potentially fatal heart problems can develop, and painful arthritis that is much more difficult to treat can set in.

STAYING SAFE

Awareness is a key component of preventing and treating tick-borne disease. People should be aware of the activities that could expose them to ticks, and physicians should consider the possibility of tickborne disease, especially given the potential overlap in symptoms with COVID-19.

As with COVID-19, mitigation efforts can substantially reduce the risk of tick-borne diseases.

Wear long sleeves and long pants and use an EPAregistered repellent when you are in tick habitat, and check yourself thoroughly for ticks when you get home.

It is important to be aware of ticks when spending time outside, but fear of ticks should not stop people from enjoying nature.

Statewide deer harvest remains stable

esults of the 2019 Deer Hunter Survey conducted by the South Carolina Department of Natural Resources (SCDNR) indicate that the statewide harvest of deer decreased by only 1% last season.

Hunters harvested an estimated 105,201 bucks and 87,872 does, which made up a total harvest of 193,073 deer. That is just slightly down from the 194,986 estimated harvest in 2018, according to Charles Ruth, SCDNR Big Game Program coordinator.

Between 2002 and 2015, the deer population in the state trended down with the overall reduction in harvest likely attributable to several factors, including habitat change, a long-term drought, two decades of aggressive antlerless deer harvest and the complete colonization of the state by coyotes and their impact on fawn survival.

Since 2015, the state's deer harvest has been stable to increasing, possibly due to declining coyote densities.

The fall of 2019 was the third season of the “all deer” tagging system and statewide limit on

antlered deer. While harvest increased (12%) since 2016, it is primarily due to an increase in doe harvest (18.0%) rather than an increase in buck harvest (9%).

“Prior to the tagging program, increases in harvest were normally the result of increases in the buck harvest or a more equal increase in buck and doe harvest,” Ruth said.

“This disproportionate harvest may be indicative of the new buck limit having the desired effect of decreasing pressure on bucks. It will likely take a few years for this to become clearer.”

Top counties for harvest in 2019 included Anderson, Laurens and Spartanburg in the Piedmont and Bamberg and Beaufort in the coastal plain. Each of these counties

exhibited harvest rates of over 12 deer per square mile, which should be considered extraordinary.

Though the harvest has generally declined from its peak some years ago, South Carolina still ranks near the top among Southeastern states in harvest per unit area.

All areas of South Carolina have long and liberal firearms seasons, and most deer (155,617) were taken with centerfire rifles in 2019.

Archery equipment (11,391 deer) and shotguns (17,956 deer) also contributed significantly to the overall deer harvest. In contrast, muzzleloaders, crossbows and handguns combined (8,109 deer) produced less than 5% of the total statewide harvest.

Other survey statistics indicate that approximately 126,283 South Carolina residents and 14,833 nonresidents deer hunted in the state in 2019. Deer hunters reported an overall success rate of 69%, which is outstanding.

Overall hunting effort was estimated at just over 2 million days.

The number of days devoted to deer hunting in South Carolina is very significant. It points not only to the availability and popularity of deer as a game species, but also to the obvious economic benefits of this essential natural resource. About $200 million in direct retail sales is related to deer hunting in South Carolina annually.

outh Carolina has already been impacted by tropical weather, and the official start to the Atlantic hurricane season was only on June 1. Amid a pandemic caused by the highly contagious respiratory coronavirus COVID-19, we also need to be preparing for this year’s potential storms.

There can be a lot to think about in these preparations, but state agencies have created campaigns to help sort through the information and provide actionable tidbits you can use today. South Carolina’s annual Hurricane Preparedness Week

was May 31-June 6, and the National Weather Service and S.C. Emergency Management Division provided information and advice to take now to help your response to when a hurricane impacts the area.

This information has been curated for what people inland most need to know. Impacts and preparedness for dangers like storm surge applies more to coastal regions, though it is still important to know.

SUNDAY – DETERMINE YOUR RISK

The Saffir-Simpson Scale, which determines what category a storm is on a 1-5 scale, with 5 being the worst, uses wind only to estimate potential damage. It does not tell you how much rain may fall or how high the storm surge may be on the coast. It doesn’t tell you about tornadoes, how large the storm is or about its potential path.

When is hurricane season?

The most active months are August-October, though, seeing as we had the second named storm of the season drop rain on us in May, they can impact the region as early as May and as late as November.

MONDAY – DEVELOP AN EVACUATION PLAN

Find out if you live in a home that would be unsafe during a hurricane. If you are, figure out where you'd go and how you'd get there if told to evacuate.

You do not need to travel hundreds of miles.

Identify a friend or relative who doesn't live in an evacuation zone or unsafe home and work it out with them to use their home as your evacuation destination. If possible, have multiple options and be sure to account for your pets.

TUESDAY – ASSEMBLE DISASTER SUPPLIES/HIGH WINDS

You need to have supplies not just to get through the storm but for the aftermath. Have enough non-perishable food, water and medicine to last each person in your house at least one week. Electricity and water could be out for at least that long.

Make sure you have extra cash, a 30-day supply of medicine, a battery-powered radio and flashlights. Many of us of have cellphones, but they all run on batteries. Make sure you have a portable, crank or solar-powered USB charger.

Fill up your car or a gas can before the storm. If the power goes out, you won’t be able to get gas.

High winds Even tropical storm-force winds (39-73 mph) are capable of tossing around debris. Seek shelter from the wind in a sturdy building before the winds arrive. Tropical storm-force winds usually strike hours ahead of the hurricane’s eye.

Hurricane-force winds can easily destroy poorly constructed buildings and mobile homes. Debris such as signs, roofing materials and items left outside become flying missiles in high wind. Falling trees can cause damage.

What to do before the wind starts • Secure loose items from outside before the wind starts.

• Trim trees and repair loose siding and shutters.

What to do during high winds • During high winds, avoid exterior facing rooms.

• Don’t take refuge in your car or in a camper.

Campsites are often full of trees.

WEDNESDAY – GET AN INSURANCE CHECKUP/INLAND FLOODING

Call your insurance company or agency and ask for an insurance checkup to make sure you have enough homeowners insurance to repair or even replace your home. Don’t forget coverage for your car or boat.

The amount of rain a storm produces is not related to the intensity of the wind. Weak hurricanes and even tropical storms have caused disastrous floods throughout history. Hurricane Joaquin in 2015 moved far to the east of the U.S., but a non-tropical low over the Southeast tapped into the hurricane’s moisture, causing the historic 1,000-year flood that greatly impacted the area.

What can you do?

Determine if you live in an area at risk of flooding.

If your yard or nearby roads around your home flood during ordinary thunderstorms, then you are at risk of flooding from torrential tropical rainfall. Those living near creeks, streams and drainage ditches should also closely watch water levels. During extreme events, even those areas that normally do not flood are at risk.

Stay aware of road conditions, and make sure your escape route is not flooded. Never attempt to cross flowing water; instead, “turn around, don't drown.” A mere 6 inches of fast-moving flood water can knock over an adult. It takes only 2 feet of rushing water to carry away most vehicles. This includes pickups and SUVs. Never allow children to play near streams, creeks or drainage ditches.

THURSDAY – STRENGTHEN YOUR HOME/TORNADOES

If you plan to ride out the storm in your home, make sure it is in good repair and up to local hurricane building code specifications. Many of these retrofits do not cost much or take as long to do as you may think.

Have the proper plywood, steel or aluminum panels to board up windows and doors. The garage door is the most vulnerable part of the home, so it must be able to withstand the winds.

Here are some tips • Keep trees around your home trimmed well before a storm to prevent damage from broken branches.

• Shop now for tested and approved window coverings to put up when a hurricane approaches.

• Bring loose outdoor items, such as patio furniture, inside.

• Secure all doors on your property.

• Move your car inside a garage or to a secure location.

Tornadoes Tropical tornadoes are often short-lived, but they can produce enhanced areas of damage. Sometimes, these tornadoes can occur in the outer rain bands well ahead of the center of the storm.

Have multiple ways to receive warnings so you can seek shelter quickly if a warning is issued for your area.

FRIDAY – HELP YOUR NEIGHBOR

Many people, especially senior citizens, rely on the assistance of neighbors before and after hurricanes.

46% of individuals expect to rely a great deal on people in their neighborhood for assistance within the first 72 hours after a disaster.

The basic steps for helping your neighbor are easy: • Help them collect supplies before the storm.

• Assist them with evacuation orders if needed.

• After the storm is over, be sure to check on them.

SATURDAY – COMPLETE A WRITTEN PLAN

The time to prepare for a hurricane is before the season begins when you have the time and are not under pressure. Take the time now to write down your hurricane plan. Know where you will ride out the storm and get your supplies. You don’t want to be standing in long lines when a hurricane warning is issued. Those supplies may be sold out by the time you try to find them. Being prepared before a hurricane arrives makes you more resilient to the impacts of wind and water.

HURRICANE PREPAREDNESS AND RESPONSE DURING COVID-19

Make sure you think about distancing and health precautions this hurricane season.

If you evacuate to a shelter or a friend or family’s house, bring items that can help protect you and others from COVID-19, such as hand sanitizer, cleaning materials and two cloth face coverings per person.

Children under 2 years old and people who have trouble breathing should not wear cloth face coverings.

Wash your hands regularly. If possible, maintain a physical distance of at least 6 feet between you and people who aren’t members of your household.

he temperature is getting hotter by the day, which means local lakes and campgrounds will be filled with opportunities for outdoors-inclined individuals and families to enjoy the summer season. From Kershaw to Clarendon counties, here are some nearby fun, active places that everyone can enjoy under the sun.

GOODALE STATE PARK KERSHAW COUNTY

Those who love cypress trees will fall for Goodale State Park, as it offers one of the best kayaking spots in South Carolina.

The park has a 3-mile cypress canoe trail where visitors can bring their own canoes and kayaks or rent them for $7 for half a day or $12 all day. Nonmotorized fishing boat rentals are also available for the same price.

Though paddling in the cypress trees is one of the park’s popular activities, it also has more than 750 acres of parkland to explore in a day's trip.

POINSETT STATE PARK SUMTER COUNTY

Considered the mountains of the Midlands, Poinsett State Park offers an abundance of hiking trails and other outdoor activities for a fellow wanderer in Sumter County.

The park has more than 25 miles of trails to hike and bike, including the Palmetto Trail, which winds throughout the state. It also has a 10-acre lake that can be used for fishing or boat rentals.

Jon boats, canoes, kayaks, pedal boats and stand-up paddle boards are all available for rent at $10 per hour. The park also allows swimming at one’s own risk.

Though Poinsett State Park can be a day-trip adventure, the park also has rustic cabins, tent sites and RV camping available for those who want to get a camping experience not too far from home.

SANTEE STATE PARK ORANGEBURG COUNTY

For those who enjoy the lake life, Santee State Park is the perfect summer hot spot as it sits along Lake Marion.

The park offers various hiking trails, biking, swimming, pontoon boat tours, boat rentals and more for those who want to enjoy a day on the water.

The park also offers camping and cabin rentals for those out-of-towners or others who want to spend a weekend on South Carolina’s largest lake.

There are about 20 cabins along the lakeshore as well as 108 campsites at the Lakeshore Campground and 50 campsites at the Cypress View Campground. RV camping is also available throughout the park.

MILL CREEK PARK IN MANCHESTER STATE FOREST

Small town.

Big taste.

W

orking is as ingrained in Lucy Casselman as is flour in cake, chicken salad in the South.

A first glance may promote the idea that her bakery and café on the downtown Manning square in the town she loves was a longtime dream come to fruition. Just like the historic building whose contents, as of May, entice hungry regulars and passersby alike – Google brought two people from Hilton Head the other day – Casselman’s life has gone through turns.

Her collection of those turns is showcased in her shop. A mix of old and new, sweet and savory. Today, if you can’t find something to fit your food mood, then, Dorothy, you’re probably not in Kansas.

Walking in, you’re greeted with black-and-white checkered tables. Past them sit displays of dessert bars and a shining case of cookies. Walking to the back right, you'll find the cakes across from tall refrigerators of grab-and-go items. There are cookies and bars in varieties of every chip, chocolate, butter, nut, topping and flavor you’d want. There are loaded ‘taters and cans of Mellow Yellow, bottles of Michelob Ultra. Southern salads come in macaroni, pasta (different than macaroni), fruit, grape (different than fruit) and varieties of chicken. There are corn dips, buffalo dips, pimento, spinach, fiesta and something orangey, cheesy called Million $.

That’s just one snapshot.

“People ask for a menu, but we don’t have a menu because it changes every week. In the summertime, I make things like

tomato pie, and I like to use seasonal vegetables.

We use local farmers,” she said. “We may not have it in the store today, but we can do anything by order.”

The wall is decorated like a charcuterie of Southern style. There is a rolling pin on the bookcase shelves, porcelain and ceramic roosters, dolls, dishes, vases, a sign that says “Home Sweet Home” and a kitchen towel that says “Exercise makes you look better naked. So does alcohol,” another sign that says “This girl runs on cupcakes and Jesus,” a framed parchment showing the Declaration of Independence, photos of her seven (soon eight) grandkids, gold-spattered wine glasses, a plate that reads “If you feed them, they will come.”

A boy walks in.

“Hey, Holden,” Lucy says.

Holden wants a snack before piano practice.

“Mattie, get Holden a snack,” Lucy requests from the 15-year-old working behind the counter,

her oldest grandchild.

As Holden waits, unmissable to his right sits a large, old, heavy-looking black safe.

It was in the back when the building served as Brailsford Grocery. Lucy wanted it out front. After her grandkids tried to mirror the movies, listening to the ticks to crack the code on the dial lock, the former grocer’s grandson revealed he had the combination in his wallet.

Inside was one penny from 1974.

“We had to take a car jack to move it,” Lucy said. “I love it. I love the history of these buildings.”

Lucy also loves Manning. The life she has made for herself among people she loves being around.

They shop local when it may be easier and cheaper to go to Walmart during a pandemic, and they look out for each other.

She started baking from her house about 10 years ago, but she was limited in what she could do because state health regulations prohibited her from selling refrigerated items. No pies, no

cheesecakes, no chicken salad.

By the time she moved to her first shop catty corner to the Piggly Wiggly, she had already raised three children by herself while working two or three jobs at a time. She had already worked in catering with Brenda Lee for 20 years. She had already cleaned houses and decorated mobile homes to make ends meet and managed City Laundry and Cleaners.

She learned to cook from her mother. Her mother from hers. Lucy likes going through old recipe books and watching videos to teach herself newer techniques. Try it. If it doesn’t look right, take the icing off and try again.

Her childhood took place in Minnesota. Other than the snow, it had the same appeal of a small town we may find down here. Plus, her mother was from North Carolina, so she grew up with Southern cooking. After moving to Manning in 1979, she hasn’t wanted to live anywhere else.

baking and cooking, and people continued to love her baking and cooking every step of the way.

Her first shop had two tables crammed inside.

There wasn’t enough parking. The location was not primed for foot traffic. She initially thought she’d move into a shop and keep her main job managing City Laundry and Cleaners. Her typical 12-hour days now and a new café ready for baby and bridal showers, birthday parties, graduation celebrations, are a sign that didn’t work out.

“Once I got the bakery going, I just walked out of there and walked right into the bakery, and it’s been going ever since,” she said.

For Lucy, family is her center. She cooked up a hobby into extra money to support her family, and now her grandkids work with her. She hopes one of them will want to take it over some day.

“My children have been a big part of this. I couldn’t have done this without them. When we first opened, my two daughters and grandkids would help cook.

They were all here until I could get it built up,” she said.

Holden reenters, bicycle sitting outside. There’s no need to chain it up.

“Can I sit while I wait?” he asks.

Of course. Mattie gets him some water.

“That’s not mine. That’s just a local kid,” she says of Holden. Biological family or not, he acts comfortable enough for it to seem so. Like he’s sitting in his own grandmother’s home kitchen.

Dining DURING COVID-19

S

ometimes, it's perfect timing when a project comes to fruition. Wendy Davis, co-owner and co-operator of Manning’s Porter Jacks Grill, will attest to that.

She has had a plan to begin offering outdoor dining at her restaurant on Mill Street for two years. During the last year, she said, her open-air dining vision has been slowly in the works. She doesn’t buy anything new, so piece by piece she has collected items – tables, chairs, umbrellas – at flea markets, yard sales and auctions to repurpose for an eventual new outdoor dining area.

Near the beginning of this year, her husband and son took a grain bin and

turned it into a gazebo for the new addition. Then, in March, the COVID-19 pandemic began to sweep across the U.S., and indoor dining at restaurants became prohibited. Restaurants like Porter Jacks were limited to curbside pickup and delivery for part of the spring. Then, governors across the U.S., including in South Carolina, began to allow socially distanced outdoor dining in early May. Now, even as indoor dining areas have reopened, open-air dining has become a COVID-19 trend because of the evidence that the highly contagious respiratory virus is spread easier by having closer and prolonged contact

with others.

The timing for Davis’ outdoor vision couldn’t have been better, she said.

“We already had the plan rolling,” Davis said, “we just didn’t realize that God’s timing was perfect in that we would absolutely need it.”

On May 4, the first day Gov. Henry McMaster reopened outdoor dining in the state, Porter Jacks premiered its new set space for its popular lunchand-dinner menu.

Given social distancing guidelines, the open-air patio has about 12 tables spread 6 feet apart. It can seat about 40 customers, she said.

In the new gazebo, there are three tables, which can seat about 12 total.

It may not be quite the bustling café culture of Greenville or Charleston, but patrons can now enjoy their favorite Porter Jacks steak or shrimp and grits in the open air.

All restaurants are supposed to be operating at 50% occupancy or less with their indoor dining areas, according to state guidelines. That’s true for Davis, but the addition of the outdoor dining area has allowed Porter Jacks to about equal its previous dining capacity, she said.

As restaurants everywhere attempt to recover from heavy losses in the spring, Davis said she thinks that doubling up on sanitation efforts is critical. That includes using disposable napkins instead of linens, setting up extra hand sanitizer stations and sanitizing all menus after each use.

“It’s a good hike from the front door to the lake, but the waitresses have been doing lakeside pickup, too,” Staton said. “They either run it to the parking lot or the lake. We’ve been taking food to people on their boats to keep them from congregating outside their boats.”

D&H BBQ

Everybody knows that if you talk restaurants in Clarendon County, you have to include barbecue. And when you discuss the favorite Southern cuisine, you have to include D&H, also on Mill Street.

D&H has been a Manning institution in the same spot since 1947, and co-owner and co-operator Henry Brailsford has been there for 33 years.

With its popular drivethrough lane, D&H never closed during the pandemic, able to keep serving up its barbecue pork, chicken and sides. The restaurant also did takeout pickup services by phone order. Like other eateries, business was slow, but it has picked back up to some degree, Brailsford said.

In mid-May, D&H reopened its inside dining area when Gov. McMaster allowed that to begin on a limited scale across the state. The restaurant can seat about 35

to 40 customers inside with tables positioned 6 feet apart, according to Brailsford. When at full capacity, the dining area can seat 90 to 100 people, he said.

Plenty of hand sanitizer has also been available to customers, he said.

In May, employees prepared everybody’s meals because the popular buffet line wasn’t used.

In June, Brailsford's goal is to reopen the buffet line for customers who will wear plastic gloves as they go through the line to pick out their favorites.

Customers would use new gloves and new plates each time they go through the line.

Directions Beat butter, sugar, salt and vanilla in large bowl with wooden spoon or in stand mixer on low speed. Add flour, and mix to combine. Press dough into 9x13-inch buttered baking dish. Bake at 350 degrees for about 20 minutes until golden and set. Cut into squares while still warm. *From Martha Stewart

ho doesn’t love a July 4 potluck with friends, family and evening fireworks lighting up the neighborhood? Along with the grilled hot dogs and hamburgers is usually a bevy of delicious side dishes that are always hard to choose from (and some so tempting they disappear after everyone has snuck back to the buffet table for a second bite). Among my favorites have always been pasta salad and sweet treats. Here I'm sharing a recipe for a pasta salad with ingredients that are my favorites, along with the chocolate chip bars that my co-workers at The Sumter Item love so much. They’ll attest that these shortbread bars are best warm (*editor's note: We don't usually wait long enough to let any get cold). For a crowd, double the recipe and press it into a rimmed cookie sheet. If you want to prep them ahead of time, you can refrigerate the sheet overnight then let it warm up on the counter before baking. Be sure to cut them into bars before they fully set, as this is much easier and less crumbly. Finally, I’ve included a summertime staple: homemade strawberry ice cream. Impress your friends and family by making this treat yourself. If you don’t have an ice cream maker, you can put the mixture into a plastic container with a lid in the freezer and stir it about every hour as it solidifies. This will help break up any large ice crystals and give you a smoother mixture.

PASTA SALAD FOR A CROWD Ingredients 1 box rotini or your favorite pasta ½ cup mayonnaise 1 ½ cups Italian dressing 1 cucumber 1 small red onion Cherry tomatoes, halved Feta cheese, crumbled 1 large can chicken or other protein if desired (pepperoni is also great) Directions While the pasta cooks, chop the vegetables and add to a large bowl with lid. Add your protein of choice along with the cheese, and mix. Add drained pasta, mayo and dressing to bowl, mixing well to combine all ingredients. It’s best eaten the next day, and you might want to add extra dressing or mayo as the pasta will soak up some of the liquid overnight.

STRAWBERRY ICE CREAM

Directions Freeze ice cream machine freezer bowl overnight.

In small bowl, combine strawberries with lemon juice and ½ cup of the sugar. Stir gently and allow the berries to macerate in the juices for 2 hours. Strain the berries, reserving juices.

Mash or puree half the berries.

In medium mixing bowl, use a hand mixer on low speed to combine the milk and remaining sugar until sugar is dissolved, about 1 to 2 minutes. Stir in the heavy

cream, reserved strawberry juice, mashed berries and vanilla. Turn on machine, pour the mixture into the freezer bowl, and let mix until thickened, 20 to 25 minutes.

Five minutes before mixing is completed, add reserved strawberries and let them mix in completely. The ice cream will have a soft, creamy texture. For former consistency, freeze for about 2 hours.

Remove from freezer about 15 minutes before serving. *From Cuisinart
