BCS2000 received their Fair Trade Designation, and they are ecstatic to be the first school in Saskatchewan to do so!

The Grade 6 class, along with their teacher, Ms. Diedra Whitell, worked very hard last school year to introduce BCS2000 to Fair Trade. The school will be gradually increasing awareness in their area, and they take pride in the work that they are doing while supporting workers and producers in the Global South.

“Today we send our congratulations to Biggar Central School 2000 on becoming the 21st designated Fair Trade School [in Canada], and the first in Saskatchewan,” said Julie Francoeur, Executive Director, Fairtrade Canada.

“It’s so encouraging to see that what started

out as a Grade 6 project to learn about fair trade quickly became a much bigger commitment to the movement as the students learned how it benefits farmers and workers in the Global South. Well done on your achievements, and what a great way to start the new school year by celebrating your designation!”

BCS2000 is committing to this Fair Trade initiative, as they have plans to continue and expand the availability of Fair Trade products in their school.

They are hoping to not only raise awareness within the school through classroom learning, but to also raise awareness in the community as a whole.

“We were very impressed by the creativity and curiosity for learning about fair trade that students and teachers at Biggar Central School 2000 showed,” explained Sean McHugh, Executive Director, Canadian Fairtrade Network. “Learning about where our food and other products

come from, and how we as consumers can make a difference in the lives of farmers and workers is the first step to becoming responsible global citizens. Congratulations to all students and staff at BCS2000 on being a Fair Trade School and the first one in Saskatchewan!”

Products such as coffee, tea, cotton, chocolate, bananas and more are often gathered in ways that are unfair to their workers, such as poor wages or unethical working conditions. Fair Trade supports better living conditions and wages for farmers and workers globally. Additionally, on each Fair Trade item, there is a premium paid.

This allows co-operatives to thrive by having the ability to upgrade their technology, build schools or wells, or to teach new farming techniques.

BSC2000 will continue its educational projects around Fair Trade as they seek to grow their support by, for example, buying fair trade cotton clothing for their bands.

Arts Council begins 40th season with legends The Biggar and District Arts Council begins their 2018/19 season September 29 and it promises to be a trip down memory lane.

Brenda Lee Cottrell and The Legends brings “The Memorable Music of the 60’s Legendary Ladies” to the Biggar Majestic Theatre, weaving a trail of nostalgia through the hearts and minds of all who attend. The show will highlight the great hits of Brenda Lee, Lesley Gore, Connie Francis, Loretta Lynn, Dusty Springfield, Petula Clark, and of course, the unforgettable . . . Patsy Cline.

The show is unforgettable, focusing on the era, not a genre. It is a timeless music that reflects a purer, more innocent time. It’s emotional music that ranges from ecstatic highs to gripping heartache. And with that, Brenda Lee Cottrell leaves her heart on the stage in every performance.

Sask. Book Publishing Week tour comes to Biggar The Lionel Jones Library in Biggar is hosting acclaimed and beloved mystery writer Gail Bowen and prolific climate journalist and writer Paul Hanley as part of Saskatchewan Book Publishing Week.

The event happens Thursday, September 27 at 7 p.m.

Paul Hanley is editor and co-author of “Earthcare: Ecological Agriculture in Saskatchewan” (The Earthcare Group 1980) and “The Spirit of Agriculture” (George Ronald, 2005). He was environment columnist with the Saskatoon

Award for Distinguished Scholarship. Paul’s biography “Man of the Trees: Richard St. Barbe Baker, the First Global Conservationist”, features a foreword by HRH Prince Charles and an introduction by Jane Goodall.

Celebrate the season “Life starts all over again when it gets crisp in the fall.” “Every leaf speaks bliss to me, fluttering from the autumn tree.” “Fall has always been my favorite season. The time when everything bursts with its last beauty, as if nature had been saving up all year for the grand finale.”

A few issues ago there was a beautiful fall scene on the front page.

Rich reds and yellows dominate the landscape in the fall.

While some bemoan the fact that summer is over and we are facing another winter season, there are others who embrace the fall season.

They love everything about the season -- the weather, the colours, the events, the falling leaves, the harvest.

Speaking of events this is the season for fall suppers and getting back to routine. Not just school activities but those of the many organizations in town. A time to mark dates on your calendars and come out to support the many events.

As mentioned previously there are changes to the landscape. One significant change to Biggar’s Main Street is the wide open space at the end. Where once stood a crumbling train station, now there is a gorgeous view. It may be somewhat limited when rail cars are sitting on the tracks, but still a great view.

Fall is time to start making plans for upcoming activities.

Registrations have already happened in many cases. Some may breathe a sigh of relief as they return to a familiar routine.

The Canadian economy at the precipice Steven Globerman, Resident Scholar and Addington Chair in Measurement at the Fraser Institute, Professor Emeritus, Western Washington University Any projection of the Canadian economy’s trajectory depends heavily upon one’s outlook for the ongoing NAFTA negotiations. If the United States and Canada renew NAFTA, the outlook for Canada’s economy will obviously improve relative to the current state of uncertainty. Conversely, a collapse of bilateral negotiations, and imposition of tariffs on Canadian auto exports to the U.S., would seriously damage prospects for the economy and the stock market.

Since President Trump’s election, serious and long-term damage has been done to the bilateral economic relationship and consequently to business confidence in the Canadian economy. Over the next two-plus years at least, a U.S. administration hostile to free trade—and to its trade relationship with Canada—will be in power. The political uncertainty surrounding potential trade actions

against Canada, with or without a NAFTA agreement in place, will suppress business investment in Canada.

Over the past few years, robust construction activity in the residential housing sector has buoyed the Canadian economy. This asset category accounted for about 28 per cent of total capital investment in Canada in 2014 compared to 34 per cent in 2017. Housing affordability in Canada is already stretched in Toronto and Vancouver and will become even more challenged with rising mortgage interest rates. Higher prospective interest rates in the U.S. imply higher rates in Canada, and the increase in Canadian mortgage rates will be sharper than markets currently expect if the Bank of Canada increases short-term interest rates to oppose a tide of selling in the Canadian dollar (triggered by Canada’s exclusion from a North American free trade deal).

Moreover, household debt as a share of GDP is at a virtual all-time high of around 100 per cent compared to around 59 per cent (on aver-

dian governments will likely act if a declining housing sector triggers a major economic downturn, rising public sector deficits and debt will constrain those actions.

By itself, an expected slowdown in U.S. economic growth may stunt Canadian economic growth. Any expectation of a significant boost in spending on energy projects seems overly optimistic in light of the indefinite—perhaps permanent— delay of the Trans Mountain pipeline project. Here’s a bit of trivia. By 1904 the Klondike was the largest gold producer in Canada and the fourth largest in the world. Gold is 19 times heavier than water. A gold nugget was discovered in the Klondike that weighed over 72 ounces. In 1898 it was valued at $1,158.

Today it would be closer to $30,000.

At one time Dawson City was the largest city north of Seattle and west of Winnipeg. Today it is run by Parks Canada which preserves the stories and history of the gold rush. Very few residents “overwinter� in the area and those that do experience limited hours of sun and cold temperatures.

One of the methods of transport was boats down the Yukon River.

More than 250 sternwheelers could be seen from 1896 to the 1950s.

The 500 mile journey from Whitehorse to Dawson took 40 hours.

The tune and the refrain is common in the area. It is said that one million people made the trek to the Klondike in search of gold. About 100,000 actually set off, 30,000 made it. Of that, maybe 100 actually struck it rich. The gold rush did not only happen in the state of Alaska but spilled over into Canada as well.

Dawson City, Yukon Territory was in the midst of this boom. It was a fish camp to the Trondek Hwech Nation.

A place where moose roamed but in two years it was transformed into a metropolis. The population slowly grew during the winter of 1897 but then spring came and the Yukon River thawed.

By May of 1898 boats arrived at the shores by the hundreds.

The Haywire Fix I checked back on an article we wrote some years ago about “Oddball Fixes” and found entered in the old L and T (Life and Time) so many more relevant pieces we hadn’t mentioned.

I decided to send a few more in to The Independent.

It would take a lot of paper if a fellow were to list all the “haywire fixes” that have been used in the past. As a matter-offact it will mebbe use up quite a bit of Independent space just telling about the ones Yours Truly does readily remember!

Actually though, despite a whole bunch of criticism that is bound to be made about their worthiness, most worked quite well. Sure some, mebbe many of them, didn’t last that long or weather too well, but lots of them that Y.T. recalls as a kid were still there and still

being used long after he grew up! Little ideas that people had about making “at hand” repairs (hitches and gate latches, et cetera) often intending to really fix them up some day, but finding sometimes that they worked so well there was no need!

I remember my brother Bill coming home from school one afternoon with a poplar pole repair he had made out in the hills when one of the old buggy wheels broke.

Mebbe for a few hours there he did put a wheelwright out of business, but he did salvage a situation and bring the buggy home by using his own brains!

Bill never became a great inventor of anything (I don’t think he ever wanted to!) but all through his life he took great pride and found a mighty satisfaction in just fixing things!

I’m afraid that in our present “throw away” society, much of the fixing (and thinking) attitude has been left for someone else to do!

Mebbe Y.T.’s fears of a future, when people don’t have to think, are unfounded, I dunno.

But, much as the actions of our haywire past have been booed by those of our present, they did make a person realize a how much we can do to help ourselves!

One time when Y.T. was working as a debatable mechanic for a big outfit, a worn tie-rod end let the steering arm of a machine fall down when a fellow was driving it.

Of course the mill foreman wanted me to go down and fix it!

The machine was sitting in the busy service aisle, so, being an old farmer, Y.T. cut a foot-long piece of haywire from the spool in his tool box, tied the errant rod in place and

drove it slowly back to the shop.

The forman gave me the dickens for that and almost fired me right there.

It seems that I was expected to lie under it and fix it right there!

Oh, my legs might have been run over by the Bob Mason busy service aisle traffic, but there was compensation.

Years ago, I think it must have been in 1938 because we couldn’t afford to fallow in 1937, our fields were dotted here and there by huge Russian Thistle plants.

R.T. is almost unheard of now, but it used to be all over! They kept plugging up our cultivators, et cetera.

After a little thought Dad and Bill tied single trees to the ends of a hundred yard piece of fence wire, hitched a horse to each one and scraped the whole farm clear of thistle in a few hours!

Mebbe a lot of readers won’t remember things like this, because we have hundred foot sprayers now.

About 1936 or so, an engine connecting rod flew to pieces and cracked a hole in the side of our old 15-30. As the cracked part was part of the tractor, it looked like we would have to get another. But we had no dough!

After studying it for a while, Bill drilled a circle of holes through the cast iron around the busted piece, threaded them and bolted a patch over the break -- a haywire fix if one wants to call it that, but I imagine it was still on that old 15-30 when they melted it down to make tanks for WWII! There must be a long, long list of the little innovative things that people have made over the years!

When Y.T. looks through his L and T ring binders he finds many many entries like “plow-repair”; “axe-handle fix”; “strawstack pig-pen”, “windmill float” or just “Haywire fix”. As for muscle-bending shovel work... well..!

One afternoon, while working for a school-unit, Y.T. dug out a deep bur-

ied tank, and as he filled in the hole he rocked the tank back and forth, putting earth under it until it was on top of the ground and the hole all filled in.

When the boss came along he didn’t believe we’d done it by hand and asked the local backhoe operator who told him he’d never move the machine from his yard for less than 50 dollars.

So they only paid Y.T. a lousy 10 dollars!

You can’t expect a machine to work for nothing, eh?

Mebbe the only moral to this story is that the backhoe operator passed on some years ago, while Y.T., who handled the round mouth shovel (sweat sweat!), is still around. He’s old and beat up and bent over a little from too much shovelling... but he’s still around!

Using a piece of haywire as a temporary repair is actually kind of easy, kind of lazy economy wise mebbe, but easy.

Words are kind of like that too! All of us can use them, but some would rather say “yep” or “nope” “Let old Bob do it!”

So he keeps on writing!

The lowly pigeon and selective breeding in agriculture

While city dwellers may look at the common pigeon as little more than flying rats, pigeon hobbyists raise a rather diverse range of breeds with huge diversity in the look of the birds, and what purpose they were originally bred for.

As an example the homing pigeon, derived from the wild rock pigeon as almost all pigeon breeds are, has been selectively bred for its ability to find its way home over extremely long distances.

The double muscled breeds are interesting in that a picture of a deeply muscled bull of one of the breeds occasionally gets posted to social media with a resulting outcry from some about it being GMO. The connotation of course being that GMO is bad.

There are certainly concerns in the public about GMO today, relating to the science of taking a trait from one species and implanting it in another.

But in reality we have been genetically modifying species for centuries.

Public input sought on Trespass Legislation The Government of Saskatchewan is reviewing trespass legislation to determine if changes are needed to better address the balance between rural landowners and the public.

Existing access and posting rules vary for different activities under The Trespass to Property Act, The Wildlife Act, 1998, The All-Terrain Vehicles

Act, The Snowmobile Act and The Provincial Lands Regulations.

These different rules may contribute to confusion on what legally constitutes trespassing.

As part of the review, the Ministry of Justice is asking Saskatchewan citizens for their input.

Rookie stars Acuna, Soto shining for Braves, Nats Baseball’s young stars are shining brighter every year.

Next year, say most experts, Toronto Blue Jays’ slugging prospect Vladimir Guerrero, Jr., will be the majors’ best rookie. Meanwhile, there’s a dandy battle for this season’s rookie of the year unfolding in the National League, as two future superstars with Hall of Fame credentials already, are having phenomenal first-year campaigns.

Juan Soto, a leftfielder with Washington Nationals who didn’t play his first game until May 20 and who won’t turn 20 until October 25, already has 20 home runs. He stands third behind current team-mate Bryce Harper and a Red Sox star from the late 1960s, Tony Conigliaro, for most homers hit by a teen-ager. Conigliaro had 24.

His main opponent for top rookie is Atlanta Braves’ leftfielder Ronald Acuna, Jr., who has played a key role in lifting the Braves to top spot in the National League East.

Acuna, 10 months older than Soto, came up to the Braves in late April and already leads the

team in homers with 25 (in only 365 at-bats). His slugging stats project to a 41-homer season if extrapolated to a full 162-game season.

Washington pitcher Stephen Strasburg is a big Soto booster.

“A guy throws a really good pitch and he doesn’t flinch,” said Strasburg. “He sees it early. It’s reminiscent of watching Tony Gwynn growing up, really.”

Acuna, according to MLB.com, is not only getting rookie-of-theyear love, but some baseball people are suggesting he may get more than a few votes for Most Valuable Player, even though he will wind up playing no more than 110 games. His 25 homers put him into exclusive company — only the seventh player under the age of 21 to bash at least 25 in a season. The first six to do so — Eddie Mathews, Orlando Cepeda, Al Kaline, Conigliaro, Frank Robinson and Mel Ott — are all in the Hall of Fame, according to MLB.com.

MVP talk may be foolish for someone playing only two-thirds of a season, but Acuna has been the best Brave during the past month, when they

broke open a close NL East race to establish a big lead over the Phillies and Washington for the division crown. As first baseman Freddie Freeman has slumped of late, Acuna and fellow rookie Ozzie Albies have carried the Braves to lofty heights.

With young stars like Acuna, Soto and Guerrero, who hit 20 homers in 95 minor league games this year, baseball’s future is in great hands.

Parents reminded to keep children’s vaccinations up-to-date Health officials last week were reminding parents to make sure children’s vaccinations are up-todate.

Free childhood immunizations are available for infants and school-age children in Saskatchewan to protect them against highly contagious and potentially serious diseases like measles, mumps, whooping cough and chicken pox.

“It’s important to have your children vaccinated on time and on schedule to ensure full protection, especially in schools or other settings where they are most exposed,” Chief Medical Health Officer Dr. Saqib Shahab said. “Recent measles outbreaks in Europe and other countries are also a reminder that infectious diseases can spread quickly, through travel and coming into contact with unimmunized or under-immunized individuals.”

Routine vaccinations are free of charge and easily available in Saskatchewan at public health clinics (for pre-school

children) and through school-based programs (for school age students).

Infants and preschoolage children are eligible to receive the following free routine vaccinations: diphtheria, tetanus, pertussis (whooping cough), polio, haemophilus influenza type b, measles, mumps, rubella, varicella (chicken pox), meningococcal disease, pneumococcal disease, rotavirus.

School-age children are eligible to receive the following free routine vaccinations: Grade 6 students - hepatitis B, bacterial meningitis, varicella (chicken pox), human papilloma virus (HPV) vaccine; Grade 8 students – tetanus, diphtheria, pertussis (whooping cough) booster.

Public Health Nurses review the immunization records of students in Grades 1, 6 and 8 to check if they are up-todate for all age appropriate vaccinations. Parents will soon start receiving immunization information packages for children in Grades 6 and 8.

The Grade 1 students are very grateful for the help they received in tending the garden, especially to Mr. Leith Larson who helped them buy seeds and came to water and weed their gardens while they were all on summer holidays!

Last year, Biggar Central School 2000 Grade 1 students planted a garden of veggies to further their learning of plants, flowers and seeds, as well as prepare a place for their butterflies to be released.

The BCS gardeners are now harvesting their hard work, preparing their crop of veggies for a soup lunch they will prepare for their parents in October.

OBITUARIES Gabriel 'Gabe' SILVERNAGLE January

24, 1926 - September 7, 2018 Gabriel Silvernagle passed away peacefully at the age of 92.

Gabe was born in Scott, Sask. and moved to Biggar, Sask. in 1945. He started to work at the Dairy Pool as a butter maker and cream taster where he won many awards. After the creamery burnt down, he went to get his mechanic papers and worked for Cornish Garage for over 20 years, later working for Barr Motor Products until his retirement. He started his hockey career in Biggar, playing for the Legionnaires, coached the Biggar North Stars and played Oldtimers hockey which he enjoyed the most! He was on the Biggar Fire Department for 38 years as a volunteer.

After retirement Gabe and Doreen enjoyed winters in Yuma, Arizona and summers at Aquadeo Beach, Sask. He also enjoyed playing golf with his golf buddies and tinkering at the golf course. He played his last golf game at the age of 89.

He never left home without a tool box, just in case someone needed him.

Gabe is survived by his wife of 68 years, Doreen (nee Besse); son, Keith (Deb) of Biggar, Sask. and children, Steven (Shauna), Michael (Tanya), Ashley (Scott); son, Doug (Jean) of Biggar, Sask. and children, Michael, David, Lindsay (Steven); Gail (Larry) Tavanetz of Biggar, Sask. and children, Genni (Kaare), and Clarke; 12 great-grandchildren; brother, Ron (Genny) Silvernagle of Biggar, Sask.; special nephew, Dennis (Marjorie) Silvernagle of Crossfield, Alta.; sisters-in-law, Lee Silvernagle and Pearl Silvernagle; extended family and friends.

He was predeceased by his parents; brothers, John and Edward; sisters, Stephena and Barbara.

It was this love that gave her the determination to witness her two youngest boys, grow into young men. Merv enjoyed working alongside others for the benefit of the wider community.

While still on the farm, he served as a councillor for the R. M. of Prairie, a trustee for Biggar School Division #50, and on the boards of Mountrose Telephone Company, Battlefords Union Hospital, and the Cando Memorial Hall. In retirement, Merv assisted Joe Pyra with harvest, drove vehicles for Valley Ford, and for a short time, became a member-atlarge for the city council of North Battleford.

He loved being a member of the North Battleford Lions Club, devoting himself wholeheartedly to whatever service project was on the agenda. Merv also assisted many people with digging their wells through his talent for divining water.

Merven is survived by his wife of 43 years, Janis Stepko; his daughter, Rev. Karen Stepko of Rhein, Sask.; his son, Steven Stepko of Saskatoon, Sask.; his sister, Mary Marshall of Winnipeg, Man.; his mother-in-law, Jean Dahl of Kindersley, Sask.; two brothers-in-law, Dr. Aron (Diane) Dahl of Calgary, Alta. and Eldon (Cheryl) Dahl of Kindersley, Sask.; and six nieces and nephews, Teresa (Chad) Edwards, Christine (Daniel) Neilson, John (Brittany) Dahl, Shallon Dahl (Thomas Blatchford), Richelle (Isaiah) Ortman, and James Dahl. Merv was predeceased by his parents, Steve and Anna Stepkow; father-in-law, Elvin Dahl; and brother-inlaw, Gordon “Al” Marshall.

A Service of Thanksgiving for Merven’s Life was held on Wednesday, September 12, 2018 at Third Avenue United Church in North Battleford with Rev. Fred Tinio officiating. Merv’s daughter, Karen, delivered the eulogy and served as urn bearer; his nieces Christine and Shallon shared scripture readings; and his fellow Lions served as a Honour Guard. Music was provided by Glenn Goodman, the Third Avenue Sanctuary Choir, and Robert MacKay, who sang “Amazing Grace”.

Merv was interred at Prairie Willows Columbaria in the North Battleford City Cemetery.

In memory of Merven, the family requested donations, designated for ‘Home Care’, to the Battlefords Union Hospital Foundation, Box 1358, North Battleford, SK S9A 3L8.

Merven’s family would like to thank Dr. Lipsett, the Saskatoon Cancer Clinic, Battlefords Union Hospital, and Home Care for their compassionate care throughout his illness. Thank you to The Battlefords Funeral Service for assisting with the arrangements. We are very grateful to Rev. Fred Tinio for his pastoral care and to Third Avenue United Church for their hospitality. We appreciated both the delicious meal prepared for us by Second 2 None Catering and Nicole’s willingness to design a menu to suit our needs. Shannon Mary EHRY (nee Grondin) December 19, 1962 - July 28, 2018 Shannon Mary Ehry was born in December 19, 1962 in Edmonton, Alta. to proud parents, Stanley and Lorraine Grondin. The first six months of her life were spent in Lloydminster before her family moved to Biggar, Sask. when Stanley and Lorraine purchased the funeral home.

She enjoyed playing many hours at the park on 3rd Avenue. Many times, she would wheel a wagon full of dolls to the park, only to leave them, fill the wagon up with kittens and bring them home, much to her Mom and Dad’s surprise. She attended St. Gabriel School from Grades 1 through 9 before attending Biggar Composite High School for Grades 10 and 11. Finally she attended St. Angela’s Academy in Prelate, Sask. for her Grade 12 year.

Soon after she spent a semester in Regina under the care of her Auntie Shirley and Uncle Ian McKay studying Education before she steered her life in a different direction. She moved back to Biggar to marry her first husband, Camille Labrecque. The first of four boys arrived on February 19, 1981, and the couple welcomed Justin Camille Eugene Labrecque into the world. Her first child sparked the flames of motherhood and only a short year later saw their second child, Randyll Craig Labrecque, joining the family on April 30, 1982. Later on, Shannon and her two boys moved back to Biggar, Sask. where she started her schooling as a Funeral Director and Embalmer under the guidance of her father, Stan.

Shannon took a great interest in her children’s education, as a result she sat on the St. Gabriel School Board for three years. Additionally, she was a member of the CWL. It was during this time that she met Jerome Ehry, all thanks to a mutual friend. Three very short years later found Jerome and Shannon exchanging vows in Biggar, Sask. on October 22, 1994.

On July 18, 1995, Shannon and Jerome welcomed their first child Peter Stanley Ehry into the world. Shortly after moving to Landis, Sask. in 1997, Shannon and Jerome welcomed their second and final child, Thomas John Ehry on March 14, 1998.

Unfortunately, Shannon had many struggles in her short 55 years of life. She was diagnosed with an Auto-Immune Liver Disease shortly after Thomas was born in March of 1998. In April of 2001, Shannon’s life was forever changed when she had to say good-bye to her father whom sadly passed away. Two years later in 2003, Shannon took on her battle with brain and lung cancer.

Shannon had many loves in her life.

She greatly enjoyed knitting and crocheting. Shannon also had a great love of musicals – she liked to play the piano for her own enjoyment. However, these

Merv was born on the family farm on March 20, 1935 to Steve and Anna (Smal) Stepkow. He grew up in the Cando District, where he completed grade eight at Beswick School. Merv moved to Saskatoon to continue his education in 1949, but due to his father’s failing health, soon needed to leave high school and return to the farm. When Merv married Janis Dahl in 1975, a new home was built for their family, where they lived for 25 years. They welcomed a daughter, Karen, in 1978 and a son, Steven, in 1980.

Premier Moe to promote Saskatchewan trade in China Premier Scott Moe left September 15 for a trade mission to China that will showcase the province’s strong, sustainable food, fuel and fertilizer sectors and will explore further trade opportunities between Saskatchewan and China.

The week-long mission involves meetings, events and speaking appearances with government officials and business leaders from the potash, agriculture, resource and carbon capture and storage sectors.

market, and he will be joined by a Saskatchewan Trade and Export Partnership (STEP) delegation of more than 20 representatives from Saskatchewan’s agriculture, agri-value, manufacturing and ag-biotech sectors, including industry associations.

“China’s most important trade and import needs align very closely with Saskatchewan’s most significant export sectors - namely food, fuel and fertilizer,” Moe said.

“Strengthening our province’s relationship with markets like China helps

keep our economy strong, diverse and growing. I am committed to getting Saskatchewan’s high-quality goods and resources out into the global market, strengthening and building trade partnerships around the world, and building a better, brighter future for our global community as a result.”

The mission aims to improve market access for Saskatchewan exports to China; to highlight Saskatchewan’s attractive investment climate; and to promote Saskatchewan’s global leadership in carbon capture utiliza-

tion and storage.

Highlights of the mission include: • a keynote address at the 2018 Carbon Capture Utilization and Storage Forum at the China University of Petroleum – Beijing; • advocating for the export of Canadian uranium to China as a safe and sustainable source of energy; • a breakfast and roundtable discussion with the STEP business delegation; • 17 meetings with government, industry and business leaders;

• a keynote address at a STEP-China Canada Business Council luncheon; and • a speech about the link between potash and improved crop yields for Chinese farmers at a Harvest Field Day event.

In 2017, Saskatchewan exported more than $3.5 billion in goods to China.

These exports have grown by 33 per cent since 2013. Saskatchewan was the largest agri-food exporter to China in 2017 with $2.8 billion in sales.

China has invested more than $1 billion in Saskatchewan over the last

ten years, and the province’s trade relationship with China has created nearly 14,000 jobs.

“With goods from Saskatchewan being exported to more than 150 countries, access to large and growing markets like China are the lifeblood of our economy,” Moe said. “Our government understands the value of supporting Saskatchewan businesses in one of the fastest-growing markets in Asia and places a high priority on continuing to develop and diversify these market connections.”

New Horizons Activities All board members were present for the New Horizons board meeting on Thursday, September 13.

Just before the meeting representatives from Biggar Credit Union arrived and presented the board with a cheque for $472.50 towards the courtesy car program. This represented their staff’s “Casual for a Cause” donations during the month of August.

The board decided to hold a fall cleaning bee

the morning of October 2. We will try and clean windows and organize the kitchen cupboards before old man winter makes his presence felt.

Pat Turner reported that she has workers lined up to put on a cash bingo the evening of October 3. She plans to advertise in Landis and Perdue as well as Biggar.

that arrangements for the annual craft sale are underway for November 6. Many of last year’s crafters want to return and we have some new people as well.

There was bingo in the hall the afternoon of September 13. Maureen Goring won the half-andhalf prize while Linda Vermette took home the blackout winnings.

(NC) Whether you get them from your local pick-your-own farm, farmers’ markets or in grocery stores, apple season is here. And with apple farms in full swing, there’s a bounty of varieties ready to be enjoyed.

But with so many to choose from, how do you decide which to enjoy as a snack and which to bake into an apple pie?

Here, Tom and Carol Chudleigh, founders of a pick-your-own apple farm, share their tips on fall’s favourite fruit.

Best for school lunches.

“Overall, Galas are one of the most popular apple varieties because of how sweet, crisp and juicy they are. They’re a sure bet with kids,” explains Tom. Another option available at pick-your-own farms is the Mini Kerr apple. This variety is just as crisp and delicious as the Gala, but much smaller - about the size of a golf ball - so you can toss a few into your child’s lunchbox.

Best for fruit platters.

Avoiding browning is key to a perfect platter, which makes the Cortland and Creston (a Canadian-

bred apple) an excellent choice. “If you’re cutting them up and serving to guests, I always recommend Cortland or Creston apples - they don’t brown as quickly and keep their crisp and delicious look for longer,” says Carol.

Can’t find them in your local grocery store? Honeycrisp apples are another great option.

Best for pies. There’s more to look for in a dessert apples than sweetness. Carols says that good baking apples have a balance of sweet-tart flavour and texture. “We use Northern Spy apples to make our Apple Blossoms and pies because they stay crisp when baked, holding their shape without turning into mush.” In case you can’t make it out to your local pick-your-own farm or farmers markets where the Northern Spy apples are found, Carol also recommends Ambrosia or the more readily available Golden Delicious and Granny Smith.

Best for wine and cheese.

Truth be told, plenty of apples pair deliciously with wine and cheese.

“Farm fresh apples bring a natural twist to a cheese board,” says Tom. “But it’s about finding perfect pairings.”

Honeycrisp apples pair beautifully with Camembert and Cabernet Sauvignon. If you like a stronger cheese, Mutsu apples are a delicious option that pair with Gorgonzola and Merlot.

Building the perfect sandwich/burger This new school year, and the repeated task of packing of kids lunches again, got me thinking about sandwiches.

When you make sandwiches (or even burgers for that matter), do you fly by the seat of your pants? Simply throwing together ingredients haphazardly between bread/buns, or is there an art form about it? A mapped-out procedure, if you will?

No, I don’t work as a sandwich artist for the popular submarine sandwich chain. This is just something I have learned over the years.

This technique I am about to share with you has been tried, tested and true. I have experimented many times over with numerous ingredients, in different combinations, and my steadfast rules are accurate.

These steps will have you making sandwiches and burgers better than you have ever done before.

Now these rules won’t apply to simple kids’ sandwiches (like peanut butter and jelly, and such), they are meant for more ‘complete’ sandwiches.

Read along and you will understand.

If you are vegetarian or vegan, I will apologize in advance that I have not included your preferences in this scientific breakdown of layering ingredients.

Most sandwiches and burgers consist of a bread top and bottom with a meat protein inbetween. The secret lies in the placement of all the other ingredients.

Should you place them below the protein, or above the protein?

My unwavering crite-

ria for perfection are simple: strong tasting ingredients should be placed below the protein, while light and creamy ingredients should be placed above the protein.

and how does that make a difference? Isn’t everything just chewed up in our mouths anyway and make for the same intermingling of flavours regardless of how it was assembled beforehand?

Not exactly.

We have a myriad of taste-buds located on different areas of our tongues and they do not all pick up the same flavours. That’s the best way I can describe it from a chef’s perspective.

Now when I say ‘strong tasting ingredients’ I

mean stuff like ketchup, relish, mustard, barbecue sauce, onions, pickles, hot peppers, et cetera. Anything that has a strong, overpowering, or pungent flavour. These should be placed below the protein.

‘Light and creamy ingredients’ would include lettuce, tomato, cheese, mayonnaise, et cetera and should be placed above the protein.

I know I have only included handful of examples of each type of strong, or light and creamy ingredients, but I think you get the point. With anything you are wanting to place inside a sandwich or burger, I simply want you to decipher it into these two simple categories and place it as stated.

Trust me, it

will make a huge difference.

Not a believer? Then put it to the test: build your sandwich or burger as I have suggested and take a bite. Then cleanse your palate with a drink of water, turn the sandwich upside down and take another bite. You will find that the first bite just tastes better.

I also have one more important tip for you: if you are adding lettuce and tomato, make sure you season with salt and pepper – it makes a world of difference as well. This is not the time for table salt however; I want you to use a pure salt (kosher, sea, Himalayan pink, et cetera) because in raw applications like this, table salt will taste too chemically directly on your tongue.
