It was a great start to the season for junior football players in Biggar. Kicking off with a win, September 4 at the Rec Complex versus the visiting Eatonia Spartans, the Green and Gold were never in doubt, leading at the half 32-8, finishing off with a 44-22 win, they simply dominated.

Next action for the Blazers is Tuesday.

Prairie Notes 2019 fall registration Prairie Notes will be holding its registration evening, Wednesday, September 18 at 7 p.m. at Redeemer Lutheran Church, 319 Seventh Avenue East.

This year a major change is taking place.

Our long serving director, Cathy Donahue, has decided to step away from being in front of the choir and will sing and help with accompaniment. Amy Klippenstein

will be leading Prairie Notes this year. She has had choral experience in a youth choir in North Battleford, directed by Diane Gryba, as well as in University with the University Chorus and Greystone Singers.

Peggy L’Hoir is back at the keyboards for another season which means we will have some fun while we work, and she will find a way for us to get those harmonies.

We would like to invite former members to join us if they are able to thank Cathy for her

years of making us sound good. We will have a thank you and registration time, and then will do a bit of a warmup and read through some new pieces. Practice in earnest starts the following week.

We encourage everyone who likes to sing to come out and give us a try.

We are looking for singers between 15 and 85.

We practice Wednesday nights from 7 to 9 p.m.

This year we will participate in the Canada Music Week Concert, November 19, the Carol Festival evening concert, December 3, and our Christmas Concert December 8. We sing a mixture of styles in popular, swing, gospel and contemporary with the occasional foray into classical.

Registration for the fall season will be $60 a singer or $100 for two from the same family.

Donor’s Choice set for Biggar campaign, October 1-3 The Town of Biggar blitz for the annual Donor’s Choice campaign is set to take place this October 1-3.

This year’s goal has been set for $30,000 with 33 charities included, 10 of which are local.

Donor’s Choice is a volunteer-run organization administering a once a year collection for these charities with the aim of making it easier for a donor to give and to keep account of when and what they have

given. The donor chooses as many charities as they wish to support and the amount given, and receives an immediate receipt.

Names and addresses are not given out to these agencies or any other appeal mailing list. No more than two per cent is held back for purchase of receipt books, postage and advertising.

The information sheets will be available for pickup at several locations including grocery

stores, drug stores, Royal Bank, Credit Union, New Horizons, The Independent, and the Rural Municipality office. You are encouraged to read the information to know how your donations benefit all.

You can have it filled out before a canvasser arrives.

The more canvassers who help, the shorter each route. If you can help, please call Shirley Laycock at 948-5303,

or Jennifer Campbell at 948-4460.

For your convenience, a canvasser will call at your home. However, if you are missed, you may take your donation directly to the Royal Bank in Biggar. Rural residents are encouraged to take their donation to the Royal Bank, as well.

Stay safe this harvest James Douglas said, “Our deep respect for the land and its harvest is the legacy of generations of farmers who put food on our tables, preserved our landscape, and inspired us with a powerful work ethic”.

No one knows that better than Saskatchewan farmers. Harvest in Saskatchewan is a super busy time for everyone.

So, if you come across farm machinery on the highway don’t be too impatient. Slow down and wait for a safe moment to pass. Be on the look out for farm trucks approaching the highway.

Likewise for the farmers -- be safe. Yes, it is important to get that crop in the bin but it is equally important to practise safety both when on the highway and in your farm yard.

Be mindful of power lines, of working around equipment, check and double check, look both ways.

Fargo was a popular truck at one time We have found ourselves in a position that we must have a farm auction. Anyone who has ever lived on a farm, or even stepped foot on a farm, knows there is lots of “stuff”. Chances are there are lots of buildings that house the stuff.

There are always bound to be some surprises when poking around.

One such surprise was the body of an old Fargo half ton truck. This one has four doors and is not an “old” model but a newer version. To me, it looked like garbage but the men were “oohing” and “aahing” over it.

Fargo Motor Corporation was created by Chrysler, although it operated outside the

parameters of that company. Fargo sold a line of commercial trucks from 1913 to 1922 which were very popular.

There were two lines of commercial vehicles. The lighter one was called the Packet and was based on the Plymouth Model Q. The larger one was the Clipper which was manufactured on the Chrysler 65 chassis. However, both lines used a mixture of Plymouth, De Soto and Chrysler parts. Later Chrysler bought Dodge company and the two lines of trucks were very similar.

The name Fargo didn’t last long in the United States. They were discontinued in the 1930s but the name was strong in

All Fargo trucks sold in Canada were manufactured in Canada. This was pointed out in all advertising for 20 years.

“Built by Chrysler . . . in Canada” was the tagline used. The message was loud and clear, so much so that Canadians actually thought it was their invention.

In 1939 passenger car production was halted due to the start of World War II. That didn’t mean Fargo truck manufacturing was stopped, rather those vehicles were shipped overseas to be used by military. Over 6,000 Fargo vehicles

were produced for the war effort. After the war, production resumed and between 1942-47 over 22,000 Fargo trucks were made.

The public relations department of Chrysler Canada admitted the Fargo brand was easily recognizable and highly respected. Still, in 1972 the company decided to quit producing the truck.

Chrysler’s rationalization was that the Fargo was never anything but a Dodge with a different name.

Canadians felt differently. There was something unique about Fargo. It is gone . . . and for some it is sadly missed.

The front view mirror things, but the local history book sez that as far back as 3000 B.C., countries have made treatys, pacts, and had negotiations with other countries in order to boost trade, settle wars, ecetera.

There have been thousands of them, even great international ones like the League of Bob Mason Nations and now the U.N. And where are we?

All our man-made efforts to find world peace seem to be ineffective.

Considering the future though I read a piece in the paper the other day about “global warming�, and wondered what the scientists say about the three foot petrified trees found in the rocks of Banks Island!

I imagine Banks Island can be found on the internet, but mapwise it is one of the Parry Islands off the north coast of Canada!

I’m not up on my statistics by a darn sight, but the population problems of everything have been controlled by nature ever since creation, (until “man� has intervened) and Y.T. sure isn’t looking forward to when nature takes over again!

As little people, all of us thought about the future in terms of “They lived happliy ever after!!� which isn’t exactly right.

Later, we read what we thought were modern pieces like “Round the world in 80 days�... wow!

Hollywood made a few early attempts at forseeing the future, some of them even showing the Statue of Liberty lying broken on the beach, all of them full of doom and gloom... but here we are!

For a long time over the centuries, we found most of our peace in other newer lands where we could apply ourselves and do our thing without any interference or outside controls. But now most of the “other lands� ie. (again) America ecetera have been settled, and mabbe it’s time that we looked inward a little, eh?

The rear view mirror on my old truck sez that things are a lot closer than they seem, and yet Y.T., kind of wonders if our ideas about the future (this front view mirror) are much the same!

Far be it from Y.T. to try and steal some of Lewis Carrol’s smoke, by making that far-out title, but Alice (did) step through a looking glass, in one of his many stories.

Carrol’s writings have been read all over the world and in comparison, Y.T. Is lucky if this bit is read all over the Independent’s world.

Plato, the great Greek philosopher (who lived about 300 B.C.), thought that the society he was living in was pretty well advanced. As a matter of fact he once wrote that nothing could be said that hadn’t been said before (he must have heard a few legion jokes, eh?), and yet we have always thought that 300 B.C. was a long time ago!

Many of Plato’s teachings were about our human condition and many of his observations were that Temperance, Courage and Wisdom were necessary if we wanted to live a “just� life. But over the centuries since his time, things have sure changed!

urban waterways which are often under great pressure. Many events will focus on educational and public awareness activities while others will include river cleanups, habitat restoration projects, and community riverside celebrations.

Farmers have increasingly become aware of their potential impact on local rivers and streams, paying greater attention to protecting riparian areas - the interface between land and a river or stream.

The riparian area acts as a natural buffer to protect waterways.

Cattle producers are also moving away from having their stock drink directly from streams and rivers, protecting the waterways with off stream watering.

But, farmers are only one part of the equation in terms of protecting water resources in general, and rivers in particular.

“World Rivers Day

strives to increase public awareness of the importance of our waterways as well as the many threats confronting them,” said Mark Angelo, World Rivers Day Chair and Founder and Chair Emeritus of the Rivers Institute at the British Columbia Institute of Technology

“Rivers are integral to all life. Yet, many of the world’s waterways continue to face an array of threats and are often impacted by inappropriate practices and inadequate protection,” added Angelo.

While there do not seem to be major events

around the day locally, it is still an opportunity to think about the importance of our water resource in terms of our lives, growing food, transportation and recreation.

With its diverse importance we need to be vigilant in our protection of the resource.

Eastern Star makes theological awards Grand Chapter of Saskatchewan, Order of the Eastern Star ESTARL, recently awarded two Saskatchewan residents with scholarship funding to make their post secondary schooling in theological studies a possibility.

They approved the following awards.

Alexandra Wallace will receive an award of $1,526 plus the Emma Stevenson Fund in the amount of $173 for a total of $1,699. She is attending Emmanuel

and St. Chad College and is sponsored by Regal Chapter No. 132 Order of the Eastern Star.

Kent Mohn will receive an ESTARL award of $1,526. He is attending St. Andrew’s College and is sponsored by Prince Albert Chapter No. 16 ESTARL, which stands for Eastern Star Training Awards for Religious Leadership is a program of the Order of the Eastern Star which gives financial assistance and encouragement to women and men dedi-

cating their lives to full time religious service such as Minister, Director of Religious Education, Director of Church Music. The denominations they represent must be registered with the World Council of Churches.

The members of the Order of the Eastern Star in Saskatchewan are happy to provide this assistance to deserving students and are proud to have a part in making these theological studies possible.

This yearĘźs Mystery Tour was the best ever

by Chasity Braitenbach New Horizons has had some exciting events over the last couple of weeks including the River Cruise/Mystery Tour, a clothing sale by Bax Empire, and a barbeque.

We also got the floors in the hall refinished and they’re looking amazing!

For the Mystery Tour on August 28 we decided to announce part of the mystery just in case we had anyone that doesn’t enjoy boat rides and we

decided that the other part of the tour would stay as a mystery. The tour started out with the mystery stop, which was the Saskatoon Forestry Farm and Zoo, where the “tourists� also had lunch. They then

proceeded down to the river to board the Prairie Lily riverboat to enjoy a sightseeing tour. We had a total of 41 participants that went on the cruise.

Feedback from the tour was completely positive.

One person even telling me that it was “the best Mystery Tour to date.�

On September 5 Bax Empire held another one of their ever-popular clothing sales. The brands that they sell are all Canadian including Alia, TanJay, PaPa, Winding River, French Dressing, Orientique, Renuar, Cativa, Habitat and Crazy about Black.

They also sold a variety of jewelery and accessories. There was a great turnout and even I found an adorable shirt that I couldn’t walk away from.

On September 6 we had a barbeque. We had a turnout of around 120 customers that came down to buy a burger and pop for $7.00. We made a great profit and everything went smoothly.

Recently, active learning has become quite popular, even finding its way into mainstream education as classrooms become increasingly digital. Children can now go beyond traditional classroom resources, learning more about anything they want with a simple click of the mouse.

With this in mind, here are a few easy ways to help your child be an independent, curious learner in the digital age: Create chances to safely explore at home. Pose questions to your kids about what excites them

and encourage them to learn more about that topic on kid-friendly, trusted Web sites. That way, they will already feel comfortable with new digital learning platforms at school to find out more about what interests them.

Highlight the fun in learning. Being a successful learner starts with having a positive attitude. Show kids that learning can be fun and exciting by thinking of ways to turn research into a game. Reward them with inexpensive prizes or more play time.

Chances are, the more fun children have learning, the more they’ll want to seek out new information and grow.

Allow your child to teach you. Challeng-

ing your kids to take the information they learn and apply it to everyday life is a great way to enhance understanding, while also helping identify areas for improvement. Encourage your kids to tell you what they’ve learned. Support your child as they navigate new information and help them learn by asking questions they may not have considered. HEICHMAN, RONALD ROBERT November 15, 1939 - August 9, 2019 Ron passed away after a recent diagnosis of stage four prostate cancer.

He was born to John and Annie Heichman on their farm north of Perdue. This is where he began his life's work as a farmer, doing it well and taking pride in all he did.

In the last ten years, he and Lillian devoted much time to regular visits with Curt Dagenais in Saskatchewan Penitentiary.

He was predeceased by his brothers Harvey (2009) and Walter (2017).

He is survived by his wife of 53 years, Lillian (nee Dyck); daughter Jennifer; niece, Anita Millan (Mikaela, Serena, Brianna, Kierra) and nephew Harold Heichman (son Elijah); all of Saskatoon; nephew and nieces Ken, June, Laura and Wendy in California; Vivian Thorarinsson who called him "Dad"; sisters-in-law, Louise Heichman and Sharon Heichman; brother-in-law Philip (Natalia) Dyck; cousins and friends.

A funeral service was held on August 14 at the Martens Warman Funeral Home. Interment took place in the Arelee Mernnonite Brethren Cemetery.

Have you ever experienced an incredible meal at a fine dining establishment, which included an intensely flavoured accompanying sauce?

Chances are you have.

These companion sauces, although sparse in volume on the plate, deliver unmistakable and compelling tastes reminiscent of the flavours in the food being served. With the knowledge of some sauce basics and some practiced perfection, anyone can accomplish this same feat in their home kitchen.

Long gone are the days that described gourmet cooking as dishes covered in thick glutinous sauces.

In today’s culinary world, our aspirations are to enhance food with sauces that are created from naturally occurring liquids in the recipe without a starch thickener. An accompanying sauce should be that: to accompany, not govern, the food.

Creating steam is the action of transforming water into vapour. When a sauce is simmering in a pan, and steam is rising from the pan, it is accurate to assume then, that the sauce is concentrating.

Water alone has no flavour, so as it evaporates from the recipe, residual flavours left in the pan are intensiChef Dez fied.

Not only does this affect taste, but texture as well.

With the evaporation of water content, the sauce also becomes less pliable or more accurately stated, syrupy.

This is vital for creating a sauce with texture and visual appeal as it coats the food being served.

An example of this technique would be a wine reduction sauce served with pan-seared steaks.

Sear the steaks in a heavy-bottomed stainless-steel pan until the desired doneness is achieved. Remove the steaks from the pan and keep warm while the sauce is prepared.

Let the pan cool down a bit, then carefully add one half cup or more of full-bodied red wine to deglaze the pan (removing the browned bits of flavour left on the pan from searing the steaks) with the help of a wooden spoon. Add some beef broth, a bit of sugar (to counteract acidity in the wine), and boil over medium to medium-high heat (stirring constantly). Add a bit of whipping cream for richness, season to taste with salt and pepper, and

reduce until syrupy. Take the pan off the heat and melt a teaspoon of butter into the sauce to give it a glistening appearance.

Serve immediately over the steaks.

In this example, the flavour of the steak remnants is incorporated into the wine. The wine and broth are reduced to eliminate their water content to increase flavour intensity and sauce density. Flavourings are added along with some richness from the addition of cream and butter to complete the sauce.

There are many other flavours you can add to create incredible sauces you can call your own.

Look at recipes and change them based on your taste preferences.

Be creative in your kitchen and experiment with this process.

With perseverance, I am sure you will be making restaurant quality sauce reductions in a very short time.

Dear Chef Dez: I tried making a beef stew without following a recipe, and it turned out bland and watery. What is the most important thing you can recommend to help me?

Rob M. Burnaby, B.C. Dear Rob. Other than browning the beef and making sure you have a good assortment of ingredients to provide a complex taste, I would recommend not adding any water. Water has no flavour and there are so many choices of liquids to add to recipes that do. Depending on what type of dish you are making, I would add wine, beer, broth, or juice (or a combination of these) instead of water. When water reduces you are left with nothing, but when one of these alternatives are reduced you are left with intensified flavour and colour.

Scallops in Sage Brown Butter Sometimes the simplest recipes are the best.

This recipe for scallops is the perfect example. However, when I say “simple” that means very few ingredients and fast to prepare.

Some people, however, may feel some anxiety when contemplating cooking scallops.

Let’s be honest, scallops aren’t cheap, and thus you don’t want to mess them up. Probably the biggest mistake made when preparing scallops is overcooking them. Your best plan of execution is a hot pan and a fast cooking process, so you still get the desired browning without overcooking them.

This recipe is unique because it pairs scallops with an herb that is usually reserved for the bread stuffing in a holiday turkey: sage. Sage with seafood?

Trust me this works.

Especially in the browned butter sauce in this recipe, which I will explain.

However, I first want to mention that this recipe is not the place for Chef Dez dried sage.

This must be fresh. The hot cooking of the butter releases all the beautiful fragrant essential oils from the fresh sage and results in a wonderful experience for your senses.

A brown butter sauce is probably one of the easiest sauces to make, because all you do is add cubes of salted butter to a hot pan.

“But won’t the butter burn?” you may be thinking.

it in their too long. Let me explain.

The old standby belief that butter will burn at high temperatures is true, and that is because of the milk solids in the butter. However, with “brown” butter (not “burnt” butter), the butter is taken out of the pan just when it starts to brown, before it gets to the burnt stage.

The result is a wonderfully complex tasting sauce. Just follow the rule: cold cubes of butter into a hot pan and swirl around until just starting to brown, then remove from the pan immediately (the pan will still be hot after removed from the stovetop, so burning could still happen even if the pan is not on the heat).

Having the butter cold from the refrigerator will help to keep the butter from browning too quickly.

Pan Seared Sage Scallops “The essential oils released from the fresh sage in this sauce make these scallops to die for” 12 large scallops; Salt and pepper; 1 – 2 tsp grape-seed oil or canola oil; 1/3 cup cold butter, cubed into Tbsp pieces; 2 tbsp chopped fresh sage.

1.) Preheat a heavy bottomed medium/large pan over medium-high heat until it is very hot.

2.) Pat dry the scallops and season them on both sides with salt and pepper.

3.) Add the oil to the pan and then immediately add the scallops one or two at a time. Cook in the hot pan for about 30 seconds to a minute on the one side until they are seared/browned.

4.) Flip them over, cook for another 30 seconds, then add the butter pieces one or two at a time until it has all been added. The butter will brown very quickly and immediately add the sage, stir and coat the scallops with the infused brown butter sauce and serve immediately.
