No better way to cool off on a hot day than to make a slip ‘n’ slide. Here, kids from the Biggar Summer Day Camp and their counselors had a bit of fun, Friday at the Sandra Schmirler Olympic Gold Park, celebrating the theme ‘Wacky Water Day’. Drenching counselors, having water fights, and sliding off the summer heat was the best remedy for wickedly hot temperatures.

Premier Moe announces cabinet changes Premier Moe announced changes to his cabinet including a new Agriculture Minister and a new Minister of Highways and Infrastructure following the resignation of Lyle Stewart from cabinet for health reasons.

Moe made the announcement August 15.

• David Marit becomes Minister of Agriculture.

Marit previously served as Minister of Highways and Infrastructure.

• Lori Carr becomes Minister of Highways and Infrastructure. Carr previously served as Legislative Secretary to the Minister of Finance and Government Deputy Whip.

• Deputy Premier Gordon Wyant remains Minister of Education, while adding responsibility for SaskBuilds.

“I am confident that both Dave and Lori will bring an important perspective to their new portfolios, and I look forward to working with them as we stand up for Saskatchewan” said Moe. “I would also like to thank our Deputy Premier as he takes on additional responsibility in an incredibly important file to our province’s infrastructure

needs. Lyle Stewart will remain a strong mentor and advisor to our cabinet when it comes to supporting our agriculture sector while we stand with him in his battle against cancer.”

Stewart previously announced he was stepping down as Saskatchewan’s Minister of Agriculture to focus on his battle with cancer. Stewart will remain as MLA for Lumsden-Morse.

Premier Moe also announced that Lisa Lambert becomes Government Deputy Whip.

Harvest advancing due to hot weather Harvest is proceeding quickly in the province, due to the recent hot and dry weather according to Saskatchewan Agriculture’s weekly crop report for the August 7 to 13 period.

Five per cent of the crop is now combined and nine per cent is swathed or ready to straight-cut.

The five-year (20132017) average for this time of year is three per cent combined and four per cent swathed or ready to straight-cut.

Seventy-one per cent of the fall rye, 24 per cent of the spring wheat,

21 per cent of the field peas, 20 per cent of the lentils, three per cent of the durum and barley and one per cent of the spring wheat and oats are now in the bin. Six per cent of the canola has been swathed or prepared for straightcutting.

Harvest is most advanced in the southwest, where 10 per cent of the crop is combined.

The southeastern region has eight per cent combined and the westcentral and east-central regions two per cent.

Producers in the north have less than one per

cent of the crop in the bin, but many expect to be in the field soon.

The majority of the province did not receive any rainfall last week, although the Nipawin area reported 19 millimetres of rain, the Spiritwood area 22 millimetres and the Meadow Lake area 29 millimetres. Any further rainfall will come too late for many of the crops still in the field, as they are rapidly drying down.

Investigation revealed an SUV was travelling east bound on Highway 14. Another SUV pulling a small camper had proceeded south from the Highway 4 stop sign and crossed into the intersection.

Most crop damage this past week was due to lack of moisture, wind and extreme temperatures. Many southern and central areas of the province recorded tem-

peratures well above 35 C for a number of days last week; some areas such as Moose Jaw reported temperatures above 40 C. These high temperatures have caused crops to dry down rapidly, and yield and quality may be affected.

There have been reports of stubble and combine fires in drier areas. Producers are busy combining, swathing crops and hauling bales.

Letter to the Editor …

To the Editor, I am a board member of Biggar New Horizons, which I think, provides wonderful, caring service to seniors living in out town.

New Horizons holds potluck dinners and jam sessions once a month, as well as card parties, bingos, exercises, and shuffleboard tournaments. They hold an annual craft show and a yearly raffle. Bus trips take seniors to the Barn Playhouse as well as the Christmas light show at the Forestry Farm to mention a couple.

New Horizons also operates a courtesy car service for its senior members. This

is a well-used and much appreciated service which logged no less than 6,074 trips during the last fiscal year. In order to keep this service operating, we need volunteers. We need volunteers to drive the courtesy car one or two days a month and we need volunteers to man the office phones for half a day or more each month. Hours of operation are 9 a.m. to 12 noon and 1 to 4 p.m.

How to resolve Canada’s trade quagmire in the age of Trump

by Livio Di Matteo, Senior Fellow at the Fraser Institute and Professor of Economics at Lakehead University in Thunder Bay, Ontario The NAFTA negotiations continue to roller-coaster. The Trump administration is now in senior level one-onone NAFTA talks with Mexico, while President Trump threatens Canada with new auto tariffs, the silent treatment, and a Democratic governor calls on the president to cease his “childish” tweets at Prime Minister Trudeau.

Indeed, these NAFTA talks have been a wild ride, with surely more to come. It appears the United States wants a separate deal with Mexico, and then will likely use it as leverage to extract concessions from Canada.

This comes on the heels of the U.S. restarting negotiations with the EU with a moratorium on auto trade tariffs. While Canada and Mexico have insisted they were in this together and should form a united front, the election of Andres Manuel Lopez Obrador in Mexico appears to have thrown a new wrinkle into the process.

Canada is in a pickle. While our united front strategy with Mexico could have been interpreted as “ends

against the middle,” it turns out the ends do not really have the combined clout they imagined. The U.S. is playing hardball and our broad lobbying of U.S. Congressmen, Senators and State Governors apparently hasn’t impressed President Trump who still wants substantive concessions. Moreover, while it may be a negotiating ploy, the Trump administration has seemingly taken to a dislike to Prime Minister Trudeau in the wake of the G7 summit.

What the U.S. wants is what President Trump and his administration want, given that many American business people and politicians realize the potential damage to the American economy if NAFTA founders. President Trump is a mercantilist pure and simple—that is, he wants U.S. exports up and its imports down.

His main targets are the five top U.S. trade partners: the EU, China, Canada, Mexico and Japan. However, Canada and Mexico are the weakest links in this trade chain as China, Japan and the EU are nowhere near as dependent on the U.S. economy as Mexico and Canada.

Consequently, Canada and Mexico have the least leverage against the

products with as many other countries as possible. The seeds for this new normal are already in place with the European Comprehensive Economic and Trade Agreement (CETA) and the Comprehensive and Progressive Agreement for Trans-Pacific Partnership, but we must do more.

Canadians have grown complacent with their easy access to the U.S. market and we must sell ourselves and our wares with a new intensity.

Finally, as part of boosting our trade with other partners and reducing our dependency on the U.S., we should boost the demand for Canadian resources in other countries.

Much of our negotiating strategy on NAFTA has involved quiet assertions about the importance of our bilateral trade with the U.S. and how Canadian resources—such as energy—help drive U.S. prosperity. The Americans under Trump don’t seem to care. They take Canada for granted. We must find new customers for our natural resources, particularly oil and gas, and have the Americans compete for our business.

In the end, competition is not only good for small open economies, but it’s good therapy for trade bullies.

U.S. While the growth in trade since NAFTA came into effect in 1994 has been a source of prosperity, it has also made both Canada and Mexico more dependent on the American economy—more than 75 per cent of each country’s exports go to the U.S. with exports comprising 30 per cent of Canada’s economy and nearly 40 per cent of Mexico’s. On the other hand, only about 18 per cent of American exports go to Canada and about 16 per cent to Mexico. Clearly, Canada and Mexico are more desperate for a deal than the U.S. and that desperation will be used against us and the Mexicans.

So, what’s Canada to do?

There are short-run and longrun options. First, we need a deal with the U.S., and to get that deal, we must make a major concession, whether we like it or not, to protect the auto sector. That concession may be phasing-out our supply management system in agriculture. We should give President Trump a visible public victory he can crow about (and smile politely while it happens).

Second, in the long run we should ensure our trade is more diversified with new trade arrangements for our

Major infrastructure projects underway in Central and West Central Saskatchewan More than $90 million worth of construction is in progress in central and west central areas of Saskatchewan, which includes major capital investments such as twinning and maintenance work like seal coating. “Historic investments in roads across the province is a staple of our government,� Highways and Infrastructure Minister Lori Carr said. “I remind travellers to pay attention and be patient in work zones. Obey signs and slow down, so everyone can get home safely.�

Saskatchewan highways projects include: • Construction on new passing lanes on Highway 4 between North Battl-

eford and Cochin; • Grading for future twinning around Vanscoy on Highway 7; • Construction of new overpasses on Highways 11 and 12 near Martensville and Warman; • Surfacing on Highway 26 and several culvert installations between the Vawn access and Edam; • About 10 kilometres of surface improvements on Highway 51 about 10 kilometres west of the Highway 4 junction; and • Seal coating near Glaslyn and Macklin.

Drivers need to obey signs, stay alert and slow to 60 km/ hr through the work

zone. There may be cases in work zones where workers are not present that require you to slow down. A sharp pavement drop or loose stones during a seal coat are examples of hazards that warrant a slower posted

speed.

The Government of Saskatchewan has invested more than $8.4 billion in highways and infrastructure since 2008, improving more than 13,000 kilometres of Saskatchewan highways.

I don’t really have a very scientific mind. Oh, I like science and can grasp the simple concepts. I loved chemistry and biology but was a complete train wreck when it came to physics.

I find the subject fascinating just don’t get too technical about anything.

One day when I was reading about the many moon colours I came across this website with a number of interesting facts about science. There is an old, old saying that goes: “It’s lonely at the top!”, and it is not only old but I’m afraid it is all too true!

We spend much of our short lives trying to get there, and sometimes succeed! But when we do, we look back and think, “I wonder how many friends I really lost just to get there!”

Here is an example!

For many years Y.T. worked with a man who had just that ambition.

He did everything in an effort to reach the top - and he made it!

But when he got there, he found himself sitting with one - yes one - friend, at his retirement party! It just so happened that Y.T.’s retirement party was at the same place, the same day, and about 50 of the boys came to see me off!

As we sat there, recalling many of the things

we had done together, John and his companion sat by themselves over in the corner.

John and his friend came over and tried to mix in, but the comradeship conversation lagged - we had nothing in common. He was a successful lonely man!

There were no more big stones on his small beach! I felt sorry for him!

Far too often, in our efforts to get ahead, we bypass the most important part of our lives: togetherness! It’s very lonely at the top, and often we bypass the things that make life worthwhile!

The second “Big stone on a large beach!” was an old army friend.

I met Lew when I first “joined up”, and we spent most of a year in the same camps. He never spoke of his fam-

I read in the local paper that he now had a large company (that his folks had left him!) on one of the main streets. One day I went in the big fine

Suddenly a voice boomed over the intercom: “Mr. Mason!

Come on in! I’d know that voice anywhere, forget all that secretary Bob Mason chatter!”

Y.T. went in! And there sat Lew at a big desk decorated with four phones. Lew smiled and slapped me on the back!

“Where have you been since 1945 anyway!” he said.

We talked about the army. Lew and Carl had been drafted to Italy, while Y.T. had been funneled to Northern Europe. We talked for a little while, and his “Big Rock” got smaller with each word. We talked of the places we’d been and what we had done.

Then one of his phones rang! And that was the end of our conversation.

I never saw Lew again!

Often I wonder where and how he liked being a “Big Rock” on his large beach.

I’m not exactly sure about this last one! Fred was headed in the direction to become a big stone on a big beach, but

he never quite made it!

When Colonel Dave Stewart was sent out because of “bad nerves”, Fred (who had much of what it took) became our colonel.

According to military records he had it all. His family was well known and respected, were fairly well-off financially, and he was well educated, was a fine athlete. He had many of the qualities needed, except for one thing! He was killed at Friesoythe, Germany on April 25, 1945.

Sorry Fred, we have missed out, and we wonder what you probably would, have done?

We can’t all be big stones, eh? And often I wonder...

Four ways to help prepare your kids for leaving the nest (NC) Moving away from home can be a stressful time for students as they try to manoeuvre many of life’s firsts.

This major milestone can be equally as difficult for parents not only emotionally, but also as they ready their kids to face the realities of being on their own.

Here are a few tips to help parents prepare their child for their first year away.

1.) Master the basics of banking. Most kids are likely familiar with their debit card and ATMs, but for some it may be the

first time they use a credit card or have to manage their expenses. Sit down and create a budget together so they understand the basics of money management and where to go if they have any questions.

2.) Teach them a few easy recipes. Although they may have a school meal plan, it’s always nice to be able to make a few healthy, home-cooked dishes. They can even prepare frozen meals in advance that can easily be heated up during busy study times. Newer appli-

ances allow them to skip preheating and cook their favourite frozen pizza and lasagna with fewer steps.

3.) Help them learn laundry 101.

In the months leading up to the big move, have them do their own laundry and make sure they’re comfortable using laundry machines. Cover things like how to properly sort colours from whites, how to choose the right water temperature and wash cycle and to always check clothing labels for washing instructions. That way when they show up

on campus with their roll of loonies, they’ll be laundry pros.

4.) Treat their last summer at home like a test run. Pretend your child has already gone away to school and have them live at home as if they were living in their own apartment. This means doing everything from paying rent and creating a budget, to household chores and grocery shopping. At the end of the summer return the “rent” they paid, which actually turns out to be a helpful saving trick.

Change is in the air The face of farming could see some rather dramatic changes in the years just ahead as new rules, regulations and realities begin to be imposed from above and felt at the farm level.

Recent farm publication headlines suggest some dramatic changes could lie just ahead.

One of the first changes might not seem especially significant, but it is an example of the reasons farmers may see changes in what they are allowed to do on their farmers.

Health Canada is proposing an end the use of strychnine to control ground squirrels and is seeking public input on the matter until Sept. 27.

The proposal stems from a regular review of pesticides under the Pest Management Regulatory Agency.

Health Canada has said strychnine kills ground squirrels, also commonly called gophers, in its consultation document. However, and not surprisingly, they also noted it also kills non-target species that might eat either the poison-treated grain used to attract gophers or scavengers that eat the dead rodents. That

is bad news for all sorts of animals,hawks, owls, ravens, coyotes and perhaps most significantly in creating a push for a ban, the endangered burrowing owl and swift fox.

There is clearly a demand from the broader general public to preserve biodiversity whenever possible, and the efforts to protect the burrowing owl and swift fox have been significant as the pair are basically the poster children for disappearing native Prairie and its natural inhabitants.

No farmer wants to see the owls, foxes or other animals killed either, but they do recognize a need to control the ground squirrel as it burrows and mounds are a danger to cattle and machinery, and strychnine has been a tool in that control.

But there are increased environmental concerns at play now, and that may well mean a ban on

strychnine in the not so distant future.

And, in terms of environmental concerns there has been significant media coverage over bee deaths and the loss of wild pollinators.

More than one accusing finger has been pointed at the family of insecticides known Calvin Daniels as neonicotinoids as one of the culprits.

Well, over the next five years neonicotinoids will be phased out for Canadian use.

The pesticide, used in Western Canada mainly as a seed treatment, will be unavailable to farmers in some forms beginning in 2021.

The decision comes down from the federal Pest Management Regulatory Agency, a decision which follows an earlier move by the European Union to eliminate it. In

the U.S. regulators have gone the other direction, opening up its use in some cases.

This will again have an impact on how farmers do things in Western Canada as neonicotinoids are used to control a range of crop pests such as flea beetles in canola, and seed corn maggot, in peas, pea-leaf weevil and wireworms in wheat and other crops.

Certainly the area of crop protection products will be the one where environmental concern pressures will likely have their greatest effect.

But others factors will have an impact too.

Glyphosate is a widely used weed control product which has come under major scrutiny in the last few years in terms of whether the herbicide first brought to the market in 1974, causes cancer.

Recently a California jury found Monsanto liable in a lawsuit filed by a man who alleged the company’s glyphosatebased products, including the oft-farm used Roundup, caused his cancer and ordered the company to pay $289 million in damages. It is estimated the company

Petro opportunities near Kindersley dominate August public offering The Kindersley area was the primary focus of attention for Saskatchewan’s August public offering of Crown petroleum and natural gas rights held on Tuesday, August 14, which generated $6.5 million in revenue for the province.

This public offering, the third of six scheduled throughout the year, brings the total for the 2018-19 fiscal year to date to $25 million.

A total of 79 leases representing 17,595.832 hectares were sold in the Kindersley area for a total of $3,741,871.95. The

Stats tell the tale; DeGrom having a ʝCyʟ kind of year It’s rare that a pitcher with single-digit victories, playing on a sadsack losing team, is ever considered for the Cy Young award, but this year could be different.

In fact, if Jacob deGrom of the New York Mets doesn’t win it, the commissioner’s office should launch an investigation.

DeGrom leads the league in a number of categories, chief among them earned-run average (it was a minuscule 1.71 after his third career complete game, a 3-1 win over the Phillies in mid-August), but the Mets were scoring only 3.4 runs a game for him (fourth fewest in the NL) and victories were hard to come by. His record was a pedestrian 8-7.

Normally, a pitcher with a gaudy 20- or 24-win season is an automatic winner but Felix Hernandez set a different standard in 2010 when he won only 13 games for Seattle but still won

the Young award, thanks to his impressive ERA, a low number of hits allowed and an impressive strikeout total.

Max Scherzer of Washington, who has won the Cy Young award three times, is deGrom’s chief rival for the National League award this year.

His 15 wins stand out and are a magnet to some voters who don’t look further than the wins category.

A USA Today feature quoted first-year Mets manager Mickey Callaway saying deGrom deserved the award based on his accumulation of sensational secondary stats, beyond wins. “It definitely looks like a Cy Young season,� Callaway told the newspaper. “He’s making a case for all those reasons you shouldn’t pay attention to some of the things that writers and players and coaches and GMs have valued in the past.

Stats Canada Numbers Show Strong Tourism Growth in Saskatchewan Saskatchewan’s tourism sector made significant gains in 2017.

Visits to and within the province by Canadians increased by 9.4 per cent from 2016, placing Saskatchewan well ahead of Canada’s overall growth rate of 2.1 per cent. Visitor expenditures showed even higher growth, with a jump of 10.4 per cent. Canadian visitors, including Saskatchewan residents travelling within the province, spent $1.88 billion in 2017.

“We are delighted by

the growth in the province’s tourism sector in the domestic market,” Minister Responsible for Tourism Saskatchewan Gene Makowsky said. “Saskatchewan has an abundance of attractions and beautiful natural scenery, and it is good to see visitors from Canada discovering what we in Saskatchewan have always known.”

To further increase engagement and drive visitation to the province, Tourism Saskatchewan has introduced new tech-

nologies and online capabilities over the last year.

Engagement on Tourism Saskatchewan’s consumer website has grown significantly between 2017 and 2018, with a 99.5 per cent increase in page views and average time spent on the site up by 85 per cent.

“Tourism Saskatchewan made a shift to focus on digital marketing strategies in recent years, and this move is paying dividends in visitor engagement and spending,” Tourism Saskatchewan

CEO Mary TaylorAsh said.

“It is gratifying to see that visitors are coming to the province in evergreater numbers to enjoy our diverse and unique tourism experiences.”

Several areas in Saskatchewan at increased risk of West Nile Virus

The Saskatchewan Health Authority is advising residents in the southern and central Saskatchewan to take precautions to lower their chance of contracting West Nile virus (WNV) infection.

Although mosquito numbers are relatively low this year, Culex tarsalis comprises a significant proportion of the total mosquito population. Culex tarsalis carrying the WNV has been confirmed from traps located in southern and central locations in the province.

The positive tests highlight the importance for residents of southern and central Saskatchewan to take precautions as they are now at a greater risk of infection, especially during the hours of dusk and dawn when mosquito activity levels are at their peak.

WNV is a mosquitoborne virus that can be transmitted to humans through the bite of an infected mosquito. The main species that carries WNV in Saskatchewan is Culex tarsalis. With the warm/hot conditions in the province over the last while, there has been a sharp increase in the number of WNV infected mosquitoes in the province.

Residents are reminded to continue to take precautions to lower their chance of contracting WNV infection. Typically, the Culex tarsalis mosquitoes that carry WNV are active from mid-July to the end of August.

Most people who get infected with WNV will experience no symptoms, or only mild ones like fever, headaches and body aches. However,

there is a small chance of developing a more serious illness called WNV neuro-invasive disease.

This disease can lead to inflammation of the brain and even death.

To reduce your risk of infection, residents are advised to take the following precautions to reduce infection from WNV throughout the rest of the summer.

• Wear an effective insect repellant containing DEET. Repellents with Icaridin and oil of lemon eucalyptus are also effective. Apply according to directions.

• Reduce the amount of time spent outdoors between DUSK and dawn.

The mosquitoes that carry WNV are most active at dawn and dusk and in the early evening. They are especially active for two hours after sunset.

• Dress appropriately.

Wear long sleeves and long pants (wear lightweight clothing to minimize the potential for heat-induced illnesses).

Mosquitoes may be more attracted to individuals wearing perfumes and colognes.

• Mosquito-proof your home. Make sure that DOORS and windows have tight fitting screens.

Repair or replace screens that have tears or holes.

• Drain standing water.

Mosquitoes require water to complete their life cycle. Eliminate or reduce all sources of standing water where mosquitoes can lay eggs like wading pools, wheelbarrows, containers, rain downspouts and gutters, pet dishes and birdbaths, etc. Reduce places in your yard where adult mosquitoes can thrive like tall grasses and weeds.

September 4, 1941 - August 20, 2018 Ellen Beaulah ee Oystryk (nee McLean), a long-time resident of Biggar, Sask. passed peacefully the morning of Monday A u g u s t 20, 2018 surrounded by family.

Beaulah was born in Wadena, Sask., September 4, 1941 to George and Lillie McLean, the second oldest of six children. The family lived in various communities within Saskatchewan with Beaulah spending her formative years in Wadena. After finishing school Beaulah moved to Regina to begin her career at SaskTel and a long-distance relationship with Ted Wolff. They married on September 6, 1963 in Regina and moved to the Wolff family farm at Hendon, Sask. in 1964 where they raised five children and spent the happiest years of her life being a mother.

In 1980 Beaulah and the children moved to Biggar, Sask. where she became a Special Care Aid working at the Diamond Lodge and then opening Beaulah’s Care Home. She spent the remainder of her career providing the utmost care and comfort for seniors in the community.

In 1992 she married George Oystryk and her family expanded with addition of two step daughters. Beaulah and George spent much of their years together dancing and enjoying their friends and family. In retirement Beaulah and George moved to their acreage enjoying country summers and wintered in Arizona. She was diagnosed with ALS in the spring of 2016 and moved into the Biggar Long Term Care Center the fall of 2017.

She will be sadly missed by all of her family and friends. She was predeceased by her mother, Lillie and father, George; brother, Doug; and sisters, Jeanette, Valerie and Beth.

She is survived by her husband of 25 years, George; sisters, Muriel and Caroline; daughters, Loretta, Lorraine, Lynnette, Myrna and Lynn; sons, Mike and Mark; and numerous grandchildren and great- grandchildren.

The family would like to extend a heartfelt thank you to the nurses and staff of the Biggar Long Term Care Center and all that provide care to others in their time of need.

Saskatchewan leads Canada in wholesale trade growth Saskatchewan’s June 2018 wholesale trade numbers increased by 7.7 per cent, compared to June 2017 (seasonally adjusted) - the highest percentage increase among Canada’s provinces and higher than the national average of 3.9 per cent. “Saskatchewan’s wholesale trade numbers are showing strong yearover-year growth,� Trade and Export Development Minister Jeremy Harrison said. “These numbers indicate the strength and resilience of our province’s economy, which is sustained by diverse sectors that continue to attract investment and other opportunities.�

Industries which saw the highest increases on a year-over-year basis include food, beverage and tobacco (19.7 per cent), motor vehicle and parts (11.2 per cent) and machinery, equipment and supplies (8.5 per cent) all seasonally unadjusted.

On a monthly basis, wholesale trade decreased by 1.4 per cent in June 2018, compared to May 2018, the fourth in percentage change among the provinces.

Wholesale trade totalled nearly $2.3 billion in June 2018, seasonally adjusted.

Introduction to Shellfish Part 2 of 3

As part two of a series of three columns on shellfish, this one will continue to focus on crustaceans.

Crustaceans is the grouping that represent crabs, lobsters, shrimp, crayfish, et cetera. They are all more “creature like” than mollusks (the other shellfish category which will be my focus in the third instalment) because of their visible legs and eyes. They are usually thought of only living in saltwater, which is true for the most part,

but there are some forms of crayfish, crabs and shrimp that also inhabit bodies of fresh water.

Lake of the Woods in Kenora Ontario, where we vacation quite frequently, is a perfect example of this. There are many crayfish to be found and some fisherman focus solely on these for their catch of the day.

The availability of prawns and shrimp is much more common than crayfish. Rarely available live, the markets near the coast will have prawns and shrimp available fresh (never been frozen), however elsewhere they are usually purchased either

frozen or thawed from frozen. Small shrimp are also available in cans.

Prawns and shrimp as we know them in the market are actually only the tails of these creatures.

Some prawns are available with the legs and shell still attached, but rarer are some larger varieties sold in whole form, eyes and all.

When purchasing them frozen, there are many options and you will need to take into account how you plan to serve them, when making your selection.

Very small shrimp, whether frozen, thawed or canned, are always sold pre-cooked, but with larger prawns

one also has the option of purchasing them raw.

Frozen cooked prawns should be purchased for recipes that require little or no cooking of them since they are already cooked.

Overcooked prawns are very rubbery and less flavourful.

Examples of applications for cooked prawns would be for a salad, Chef Dez shrimp cocktail, or for adding at the end of a cooked dish. Proper thawing of your prawns is recommended to prevent bacteria growth.

Whether cooked or raw, the recommended procedure for thawing them is in the refrigerator over a period of 24 hours. This is a gradual thaw that keeps them in a safe temperature storage zone. If you are in a hurry, then a water thaw can be acceptable as a second choice. This

is done by putting the frozen prawns in a bowl in the sink. Fill the bowl with cold water and continue to run a slow stream of cold tap water into the bowl. The water level will obviously overflow so make sure that drain is open. Keep running the stream of cold water until the prawns are thawed approximately 15 to 20 minutes depending on their size.

Raw prawns purchased fresh, frozen or thawed obviously need to be cooked, but one should never overcook any shellfish, because they become rubbery. They should only be cooked until they just turn pink for optimal flavour and texture, and be served immediately. Raw prawns are available peeled or unpeeled, with or without tails, and deveined or not. Deveining of larger prawns should always be done. The “vein” is the long dark intestine imbedded along the top length of the prawn. If the prawns you have purchased are not deveined this can be easily performed by running a knife blade along this

line until it is exposed.

It then can be simply pulled or scraped out.

Prawns that still have their shell on, but have already been deveined are frequently called “zipperbacks”. These are perfect when you want to serve prawns as a finger food when your guests peel them as they eat ... aptly called “peel and eats”.

Dear Chef Dez: I heard someone referring to prawns as a 20, 25. What does this mean?

Rachel T. Airdrie, Alta Dear Rachel, This is referring to their size. A 20/25 prawn is large. It means that there are approximately 20 to 25 prawns per pound.

Therefore, prawns considered to be 32/36 would be much smaller, as there would be an average of 32 to 36 per pound.

Four self-care tips for first-year students (NC) Adjusting to a new life away from home can be challenging for firstyear students, especially when they’re used to being cared for by their parents.

Now, with the onus on students to take care of themselves, it’s important for them to prioritize health and well-being as key ways to manage stress and excel in school.

Parents, you can help your students succeed by encouraging them to practice these essential self-care tips for a healthy and balanced life: 1.) Stay active. A busy schedule may leave students feeling unmotivated to exercise, but it doesn’t take hours at the gym to see the benefits.

They can try walking,

biking or rollerblading to classes across campus, or signing up for a fitness class with friends. Any movement or time spent outside will be beneficial to overall well-being.

2.) Make nutritional choices. While it’s easier said than done, it’s important for young people to try cooking for themselves whenever possible. Encourage them to try prepping nutritious meals that can be taken to campus and eaten between classes during the week. If their residence or apartment has newer appliances, they’ll be able to adjust bins, shelves and drawers to make room for prepped meals and ensure healthy snacks are easily accessible.

3.) Attend social events.

University is about having fun. That’s why students are better off trying not to let stressful exams and group projects get in the way of making new friends and taking a mental break. Joining a team or club on campus or seeing how they can get involved within the local community will help them feel connected and engaged.

4.) Get enough sleep.

It’s easy to stay up late when cramming for a final or watching movies with roommates, but it’s important to get a good night’s sleep. Not only will they be more alert in class, but they’ll have more energy throughout the day.
