The old building in a rather sorry state - attracted a lot of pictures and Biggar residents on the day, getting one last look at the facility that our town owes its existence to. Musicians from across Canada converged on Biggar last week, celebrating the best in Canadian music with the Summer Sizzle 2018. The Canadian National Conservatory of Music (CNCM) made Biggar this years host, bringing in composers, guests, students and teachers, August 8 and 9. Tours through town were held, evening concerts, workshops, instruction and a love of music shared.

Biggar Central School and the Majestic Theatre were venues for a majority of events on the day, but the town was on display with many positive comments heard. A big thank you to all who attended and especially made this event in Biggar a huge success.

Council Minute highlights The regular meeting of Biggar Town Council was held July 17, at 7:15 p.m. in the Council Chambers.

Attending the meeting were Mayor Ray Sadler, Aldermen Alan Boyle, Penny McCallum, Kevin McNicholls, Kirk Sherbino, Edward Young, and Ivan Young.

Council resolved that the minutes of the July 3, 2018 Regular Meeting of Council be accepted as presented.

Keaton Donahue attended the meeting at 7:35 p.m. to voice his concerns to Council regarding Zoning Bylaw 15-763 issues.

Council resolved that Bylaw No. 18-805, being a bylaw respecting the Cemetery Bylaw be read a third time and adopted.

Council also resolved that Bylaw No. 18-808, being a bylaw to amend Bylaw No. 15-763 The Zoning Bylaw be introduced and read a first time.

Council resolved that the following financial reports for June, 2018 be accepted as presented: Bank Reconciliation; Statement of Financial Activities.

Council resolved that the general accounts paid in the amount of $747,669.27 and the gen-

eral accounts payable in the amount of $116,126.23 be approved.

Council resolved that the following correspondence be accepted for Council’s information and filed: Fire Department Payroll – January-May, 2018; Prairie Branches – Grand Opening; Newalta – Contaminated Site; Flaman Investigations – July 11, 2018 Report; Sask. Municipal Board – Notice of Appeal.

Council resolved that the quote from Catterall and Wright to survey the ditch along Highway 4 west in the approximate amount of $2,300 be approved and further that the quote to survey the entire area for the future drainage ditch project in the approximate amount of $6,200 be approved.

Council resolved that the correspondence from Hilary Grant requesting a copy of the 2014 report from Heritage Canada regarding the CN Railway Station be received.

Council resolved that they will authorize Administration to sign and submit the Easement Agreement with SaskPower.

Harvest slowly inches along Producers in the province have one per cent of the crop combined and two per cent swathed or ready to straight-cut, according to Saskatchewan Agriculture’s weekly Crop Report for the July 31 to August 6 period.

The five-year average for this time of year is one per cent combined.

Reported yields so far range from average to well-below average.

Fifty-five per cent of the fall rye, 15 per cent of the winter wheat, eight per cent of the field peas and seven per cent of the lentils are now in the bin.

One per cent of the canola has been swathed.

Harvest is most advanced in the south, where three per cent of the crop is combined.

Most producers in the central and northern regions are expecting to be in the field within the next few weeks.

There was scattered rainfall in parts of the province this week, with some storms bringing hail. While the rain was welcomed in some areas, it may be too late to benefit the south, where crops

are rapidly drying down.

Most crops remain in fair condition, although laterseeded crops need rain to help heads and pods fill.

Unity/Wilkie RCMP seeking individual wanted on warrant At approximately 4:45 p.m. on August 13, Wilkie RCMP received a complaint of a suspicious vehicle on a rural property along Highway 29 north of Wilkie.

When officers responded, they ran the plates which did not match the vehicle, a green Ford F350 truck; both were registered as stolen.

When officers approached the vehicle and advised the male that he was under arrest, he put the truck into reverse and backed into some bushes after striking a play structure on the property.

He then put the vehicle in drive and drove toward one of the officers on scene.

The officer did not sustain any injuries.

The driver then took off through the bush and into a field. Officers were unable to follow due to the terrain but continued to make patrols of the area.

As they came to another rural property, officers witnessed a white Ford F350 driving erratically heading north on a grid road. The green F350 from the previous incident was abandoned at this location.

Officers initiated a pursuit but ended it a short time later.

The white F350 has since been recovered, but officers are still trying to locate the driver.

As such, a warrant has been issued for the arrest of 38 year-old Sean Reid Schille in relation to this incident. Good news is only good if it is shared The Saskatchewan Taxpayers Federation is giving Harpauer the high sign for her April budget.

“Saskatchewan’s overall operational spending came in $489 million under budget. While spending for health and social services went up, spending was under budget in seven out of 11 major expense categories.

This suggests a shift in government culture. Every minister, deputy minister and assistant deputy minister now knows a world of woe awaits any frivolous request for new cash. Instead, the government is refocusing funding to work within existing budgets.”

Plus the province is now raking in $808 million in PST revenue largely due to the fact that consumers are paying the tax on more products now.

The provincial government is spending less. And, as the deficit is reduced so too are the interest charges on that money.

According to the Taxpayers Association this is progress.

All this is good news for the finance minister, the government and the province. All that remains now is for MLAs and cabinet ministers to explain their plans to the voters and taxpayers.

The unintended consequences of economic populism

by Glen Hodgson, Senior Fellow, Conference Board of Canada Populist governments have been democratically elected the past few years in a number of jurisdictions in Europe and North America. The politicians leading these governments usually have campaigned on an economic agenda that looks attractive to segments of the population, especially those who feel slighted by so-called “elites.” But the economic policies that emerge from a populist government are likely to have negative consequences for many voters and businesses – including those that may initially be supporters.

Our scan of populist economic agendas reveals many similar features. The agenda usually starts with criticism of existing government expenditures – both for the level of spending and who is getting the benefit of public dollars. Tax reductions are promised for the average citizen – and for businesses. All things considered, most of us would welcome paying lower taxes. However, detailed offsetting spending cuts are seldom identified beyond a generalized commitment to reduce waste in government. Spending increases might even be proposed to appeal to segments of the political base. Reducing tax revenue without a comparable pullback in public spending can mean continuing or rising deficits, higher public debt and interest payments that steadily absorb a larger

share of overall spending.

Tax cuts are sold to voters as the secret ingredient to send economic growth soaring, leading to equivalent or even greater government revenue and keeping budgets under control.

It is an argument comparable to the Laffer curve concept floated in the 1980s during the Reagan administration, when the U.S. budget deficit exploded. A more realistic economic outcome from populist tax cuts is a modest short-term bump, as we are seeing in the United States today – but with higher future deficits and debt, and little sustained improvement to the jurisdiction’s growth potential.

Populist leaders try to further their appeal by promising to lower prices on consumer products that are generally determined by markets, such as energy. Reducing prices by directly intervening in the market would cause distortions – and may even lead to shortages if producers respond by curtailing supply. Reducing taxes on these products could reduce the end price but would also require offsetting revenue, further cuts in spending or higher deficits.

A call to reduce government regulations is often a complement to populist fiscal policy. Populist governments assert that regulation is strangling business and putting restrictions on individual freedoms. Climate change is an example of an issue in which contradictions emerge in populist eco-

of concerns about lack of protection for Italian specialty foods.

The likely consequences of protectionist trade policy in the short term are tariff-driven price increases for U.S. consumers and businesses, and countertariffs from trade partners that will frustrate U.S. exporters’ access to other markets. In the months to come, we expect to read stories of exporters in both Canada and the United States losing market access, leading to job losses and firms in distress.

Economies will lose efficiency and the competitiveness gains that result from trade. An all-out trade war cannot be ruled out, one that would impair global economic growth.

What is the expected impact of a populist economic agenda? The details will change from case to case, but we expect a similar pattern to how things will unfold. Individual voters will likely warm to personal tax cuts, but these could be offset by higher prices for consumer goods as a result of tariffs on imports, as well as the prospect of eventual reductions in public spending. Financial markets and individual businesses might be initially enthused by lower taxes, but can become skittish as the effects and consequences of populist trade and economic policies become more evident. And we know that skittishness and uncertainty are not good for long-term investment or growth.

Yet, most governments in Canada and Europe recognize the importance of policies to reduce greenhouse gas emissions. And a populist government has limited core policy options: to put a price on carbon, implement widespread and detailed regulations on business and consumers, and/or offer subsidies. Interventionist regulations and subsidies may prove to be more complicated, inefficient and costly than pricing carbon.

Another marker of populist economics is a preference for so-called managed or fair trade. Under this narrative, trade deficits are a sign of national weakness, so governments seek to block as many imports as possible while encouraging exports. Populist governments are often suspicious of free-trade agreements, and ready to introduce barriers such as tariffs and negotiated trade levels to try to benefit domestic industries. They focus on trade in traditional manufactured goods and pay little heed to economic integration, global value chains or services trade.

The Trump administration offers the most prominent example of a populist protectionist trade agenda. But Italy’s new populist government is balking at ratifying the Comprehensive Economic and Trade Agreement because

At this time dials, hands and lights will be removed and restored, the pendulum will be repaired, a lift will be installed. As for the tower, the cracks in the masonry will be fixed as will the frame that holds the bells. As with all older buildings it will be brought up to today’s fire code standards and health and safety measures.

Outlook canals back into the river, and it called for a 24-inch wide wall part way down!

Y.T. was operating a small Caterpillar machine and pushing clay earth over the bank for the men below to pack around it. One of the men came up and told me that the bank was going to cave in so Y.T. got off his machine, left it running and went down to see!

It just happened that someone drove up to where the machine was running and a young fellow jumped out and climbed onto it. Somehow the kid played with the levers until at last the machine jolted ahead! The “cat� went over a small stone and

In Saskatchewan, halfway between Kerrobert and Kindersley, is the town of “Smiley� which mebbe has other attributes, but has always caught Bob Mason Y.T.’s eye while flying over it! One time, many years ago, Phyllis, Jan, Jim and I went down to see a strange sight. There it was, the long white streak that Y.T. had seen from the sky. The long pile of stones that are a monument of the man known as “Stonewall Johnston�.

Quite a few years ago, when oil was found in that part of the country, Johnston dug a moat near his place, and the remaining pile of stones were left to get rid of.

And so Johnston started

what came to be a resort of a kind. He placed the stones in a long straight line from “here� to “there�, and over the years, with the help of some folks, called the place of “Stonewall Johnston�.

Many people have seen it over the years, and like Y.T., saw it from the air, and wondered what it was.

There it sits though and stones aren’t going to rot away. Go and see it sometime, or even take a ride on his boat!

Although the wall mentioned above was two-feet thick, I doubt if this next one was over a quarter-inch through, and was the cardboard one dividing the rooms of a small motel in the town where another fellow and Y.T. were attending a cribbage tournament.

One evening, as we were relaxing and having a few hands ourselves, we were surprised to hear a familiar female voice say, “Where is that @x#33 booze anyway? I’m sure I had it in my carrying bag when we came in!�

We were quite sure that we had heard that voice in one of the chairs! “The @x#33 stuff is right on the dresser where you left it,� sez another familiar voice. “You ought to be @x#33 a bit more careful where you put stuff!� “I bought a whole bunch of @x#33 just before we left home... hic!� sez the voice. “Bring out the @x#33 cards, so that we can have a @x#33 game or two!�

We used a few of their choicest words when we met them at the tournament, and they sure wondered where we had heard them. I was very quiet on the other side of the wall the next night!

I suppose one could keep on writing about walls, like the time Y.T. backed into a nun to dodge the falling wall in Veen! Or the bullet holes through the wall at Friesoythe, but the reader might think that violence is the thing!

As mentioned before, there must be hundreds of famous walls, but only one “Wallnut!�

During the service Elizabeth McMahon read a brief history of Leney Cemetery.

In the very early 1900’s, the Perdue Municipality set aside plots of land for cemeteries. Leney Cemetery was located one-half mile south of the village of Leney. The first plots

were surveyed in July of 1913. Trees were planted and later on a committee known as “Leney Cemetery Association� was formed to plan improvements, attend to all business matters and to have get togethers of all the surrounding districts to further beautify the cemetery.

In 1939, a blue spruce tree was planted in the southeast corner of the cemetery by pupils of the high school, in memory

of the late E. P. Horton who was the organizer of the “Leney Cemetery Association�. One of those students, Dorothy Jamison, was in attendance at the service.

A cistern was put in by Mr. and Mrs. W.J. Weir in memory of their nephew, Arthur McCaffrey, one of 14 young men from the district who gave their lives in the war of 19391945.

Two or more clean-up days were organized dur-

ing the summer at which time trees and shrubs were trimmed, grass was cut and the driveways were graded. The ladies attended to the various ornamental plots.

In 1938, a memorial service was held and would continue to be held every year since.

Leney Cemetery continues to be a place of great pride for those who come to visit and pay respect to all who have gone on before them.

New Horizons Activities It’s been relatively quiet in our senior centre throughout the month of July and into August.

Nevertheless we held two bingos in July and another one on August 9.

Seems like our air conditioned hall is a drawing card on these hot days.

Casual Kaiser games took place most Monday and Friday afternoons.

The fittest seniors in town are our exercise

group who meet every Monday, Wednesday and Friday for half an hour of aerobics.

We had an attendance of 35 at our birthday potluck on July 9. Birthday girl, Florence Hammond won the half and half draw of $28 and donated it back. Thanks Florence.

Mavis Petch and Jim Wise thought the outside of our hall needed some

brightening and planted some flowers. We do appreciate your initiative.

We have a bus trip planned to the Barn Playhouse on Sunday, September 2. At present the bus is full and we’ve started a waiting list in case there are cancellations. If you are interested, please contact our office.

In spite of the fact that

many of our volunteer drivers are away during the summer months, we kept the courtesy car going for 21 days in July with an average ridership of 17 trips per day.

We have drivers for 15 of 19 days in August. We still need volunteer office workers for several days in August. Please contact the office if you are willing to help.

Of late the disruptions have generally been the result of the loose cannon American president Donald Trump, but other countries are getting involved in creating barriers largely based on creating trade barriers rather than because of good science or food safety reasons.

For example, a Brazilian judge recently suspended the use of products containing glyphosate, a herbicide widely employed

for soybeans and other crops in the country, as well as in countries such as Canada where most canola is resistant to the herbicide.

The federal judge ruled new products containing the chemical could not be registered in the country and existing registrations would be suspended within the next 30 days until the government re-evaluates their toxicity.

Glyphosate has been studied extensively since its discovery in 1970, and while there is a general distrust of science growing in the world, it is not likely the Brazilian government is going to discover anything new.

Construction underway on Highway 4 passing lanes $10 million of construction is underway on two sets of passing lanes on Highway 4 between North Battleford and Cochin. “With a number of lakes and the growing economy in the area, these passing lanes will improve safety for travellers along Highway 4,� Highways and Infrastructure Minister David Marit said. “As construction work progresses, please respect the work zone, follow the posted signage and slow

down.�

Traffic volumes for the stretch of Highway 4 between North Battleford and Cochin range from 3,700 to 6,900 vehicles per day. “We know the construction period will be an inconvenience when travelling between Cochin and the Battlefords, but it will be short-term and will ultimately prove to be a benefit to all especially those of us who frequently make the trip,�

Cochin Mayor Harvey Walker said.

Road work for the new passing lanes is now underway, so motorists should watch for flag persons, expect delays and be aware of sharp dropoffs, fresh oil and loose stones. A vehicle width limit of 3.5 metres is in effect.

Other Saskatchewan highways projects underway this week includes bridges and culverts:

Culvert replacement on Highway 9 near Hudson Bay; Bridge construction on Highway 55 west of Shoal lake; and Bridge construction on Highway 983 over Peepaw River west of Highway 982.

The Government of Saskatchewan has invested more than $8.4 billion in highways and infrastructure since 2008, improving more than 13,000 kilometres of Saskatchewan highways.

CanadaĘźs TV sports personalities: Who do you like?

Choosing your favourite television sports personality is hardly a scientific matter. It’s like asking someone to pick their favourite colour or their favourite brand of vehicle.

It comes down to personal preference. You like green? I think blue is better. You’re a GM guy?

I’ll take a Ford.

Same goes with TV sports personalities.

There are dozens to choose from, in a number of categories: Playby-play; colour commentators; analysts; interviewers; program hosts; anchors. Some are smooth, some aren’t.

Some are more professional than others. Some are truly annoying. Some are simply terrible.

I say toe-may-to, you say tom-att-o. I say left, you say right.

So take the following with a grain of salt but let’s have some fun.

Play-by-play — Jim Hughson, CBC’s No. 1 hockey guy. Knowledgable, knows when to shut up, keeps his cool.

Runner-up — Dan Shulman, so easy to listen to a ball game with him

describing the action.

Colour commentator — Russ Howard, explains the strategic nuances of a curling game better than anyone. Runner-up — Kelly Hrudey, enthusiastic, former goalie knows hockey.

Analyst — Elliotte Friedmann, the most informative and believable guy on TV. Runnerup — Bob McKenzie, only Friedmann has more hockey scoops.

Interviewers — CBC’s Scott Oake, no contest.

Treat to watch him get his subjects to open up and divulge the most interesting nuggets; Runner-up — Sara Orlesky, who always asks the right questions of CFL players.

Program hosts: Rod Smith, who steers CFL on TSN. Well organized, lets his colleagues do most of the talking. Runner-up — Ron MacLean, who is not the star of Coaches Corner, but so clever with the English language.

There is always something happening at the museum! by Delta Fay Cruickshank for the Biggar Museum & Gallery Books, books, books! Because of the generosity of the Biggar public, we have hundreds of books in the gallery for the Annual Book Sale! There is still time left for you to stock up for the winter’s reading!

Also in the gallery is an art exhibit called “Station Memories�. These works of art were created by the Biggar Art Group. They used photographs from the museum’s

archives and from these created paintings of the Biggar Railway Station, in its better days.

So, the station is gone.

The view is pretty spectacular now, no longer rot and neglect! Now, we have homeless pigeons!

Our annual barbecue was held, despite the record breaking heat, on Friday, August 10. Our master chef of the barbecue braved the heat!

The tables and fans were set up in the gallery, lots of water was made available, and everyone enjoyed a delicious lunch, burgers and homemade desserts!!

The Summer Sizzle event attracted many to our town! The first night

of the event was held partly in the museum and gallery. So many people attended, and got to tour

the museum and experienced Biggar throughout the ages!

December 26, 1924 - April 21, 2018 On Saturday, April 21, 2018, Herbert Raymond Timpe of Osoyoos, B r i t i s h Columbia passed away peacefully at the South Okanagan G e n e r a l Hospital, Oliver, B.C. at the age of 93 years. He was b o r n December 26, 1924 in Alix, Alta.

He was predeceased by his parents, Otto and Georgina Timpe; brother, George; sisters, Marjorie (Harold) and Irene (Paul); first wife, Gladys Timpe and his second wife, Teresa Timpe.

Herb will be fondly remembered by his loving family including daughters, Pat (Terry) Timpe-Rothenburger, and Janice (Dean) Archdekin; step-son, Wim (Greta) Verwoert; grandchildren, Ryan (Sara) Archdekin, Brennon (Mandy) Archdekin, Rychelle (Scott) Campbell, and Erin (Brad) Salazar; great-grandchildren, Jack Archdekin, Chael Salazar and Cain Salazar as well as his long time beloved companion, Ellen Solvason.

Herb was a proud W.W.II veteran and was the last surviving member of his Westminster Regiment. He is a lifetime member of the Royal Canadian Legion and travelled to Holland for the 60th Anniversary of the Liberation of Holland.

He worked 39 years for the Canadian National Railway and for the Corp of Commissionaires after retiring from the CNR. Herb loved adventure and travelled extensively in the US and Canada. Pat and Janice enjoyed yearly summer vacations when they were young.

After retirement, he went to warm USA locations for 28 years.

He was always very giving of his time and volunteered as the assistant manager with the Biggar National Hockey Team, he raised a great deal of money as a volunteer with the Royal Canadian Air Cadets in Biggar, Sask. and enjoyed playing Santa Claus for the children at malls in Edmonton, Alta.

Herb was an avid hockey fan with his favourite team being the Edmonton Oilers. He also enjoyed playing pool with friends and dancing every Saturday with his “Dancing Partner”, Ellen Solvason.

In lieu of flowers, donations/tributes are gratefully accepted for the Canadian Cancer Society or a charity of one’s choice.

A Celebration of Life was held at 2:00 p.m. on Thursday, April 26, 2018 at the Oliver Seniors Centre followed by a graveside urn interment and committal at the Osoyoos Lakeview Cemetery with John Nunes officiating; Poppy Tributes, Royal Canadian Legion; Bugler, Lori Martine.

Hay yields are below average overall. Estimated

average dryland hay yields for the province are: 1.1 tons per acre for alfalfa and alfalfa/ bromegrass; 0.9 ton per acre for other tame hay; 1.0 ton per acre for wild hay and

1.6 tons per acre for greenfeed.

Estimated average irrigated hay yields are: 2.8 tons per acre for alfalfa; 2.7 tons per acre for alfalfa/bromegrass; 2.2 tons per acre for other tame

hay; 2.0 tons per acre for wild hay and 3.3 tons per acre for greenfeed.

The majority of crop damage this past week is attributed to lack of moisture, strong wind and high tem-

peratures. Some areas, including Cabri and Leader, received hail that caused severe damage to crops.

Producers are busy harvesting, hauling bales and desiccating crops.

Lyle Stewart to step down as Agriculture Minister Lyle Stewart announced August 9 he will be stepping down as Saskatchewan’s Minister of Agriculture to focus on his battle with cancer.

Stewart will remain as MLA for Lumsden-Morse. “I was recently diagnosed with colorectal cancer and will be undergoing several months of pretty aggressive treatment,� Stewart said. “Agriculture is a very important portfolio in this province and it has been Lyle Stewart a tremendous honour to serve as Saskatchewan’s Agriculture Minister under two great Premiers over

the past six years. However, given my current circumstances, I didn’t feel I would be able to give that position the attention it deserved, so I have asked Premier Moe to appoint a new Minister.�

Premier Scott Moe said he is sad to lose Stewart from cabinet, but his first concern is for Stewart’s health. “First and foremost, Lyle Stewart is my friend, so the most important thing is for him to deal with his cancer,� Moe said. “Everything else is secondary.

Lyle has been a great Agriculture Minister and I want to thank him for everything he has done for the ag industry in our province.�

Moe said he expects to name a new Agriculture Minister next week. Stewart will remain as Agriculture Minister until a new Minister is appointed.

Feds pony up $30.9 million on gas tax The Government of Canada has delivered the first of two, more than $30.9 million, instalments of the federal Gas Tax Fund (GTF) to Saskatchewan for the 2018-19 fiscal year.

In total, the province will be provided with more than $61.9 million within that period.

Investing in modern, efficient public infrastructure is key to promoting economic growth, strengthening the middle class and developing healthy sustainable communities, they added.

The GTF is a long-term, indexed source of funding that supports local infrastructure projects across the province each year.

Some planned projects funded this year include installation of culverts in the Rural Municipality of Pleasantdale No. 398, construction of a new skating arena in the Town of Assiniboia, and expansion of a water treatment plant reservoir in the Town of Strasbourg. Local roads and bridges, sport infrastructure and drinking water are only three of the 18 project categories eligible

for funding under the program. This wide range demonstrates the flexibility of the GTF in allowing communities to direct their allocations to their most pressing local needs. “Local governments know best what their communities need and the Government of Canada is proud to deliver stable, long-term funding that they count on to develop and maintain their public infrastructure,�

Minister of Infrastructure and Communities François-Philippe Champagne said. “By investing in our communities, the Government of Canada is promoting economic growth and environmental sustainability, strengthening the middle class and helping ensure all Canadians have access to the opportunities they need to succeed.â€? “The Government of Saskatchewan is proud to play a role in administering the federal Gas Tax Fund program, which invests in municipalities across our great province,â€?

Government Relations Minister Warren Kaeding

said. “This federal funding allows local governments to put infrastructure funding toward projects to best serve their communities and citizens.�

Communities can invest across 18 different project categories. They can use the funds immediately for priority projects, bank them for later use, pool the dollars with other communities for

shared infrastructure projects or use them to finance major infrastructure expenditures.

Through its Investing in Canada plan, the Government of Canada will invest more than $180 billion over 12 years in public transit projects, green infrastructure, social

infrastructure, trade and transportation routes, and Canada’s rural and northern communities.

Introduction to Shellfish Part 1 of 3 Whether it’s steak and lobster or linguine and clams, shellfish is a popular choice at market seafood counters and restaurants. Shellfish can be divided into two main categories; Crustaceans and Mollusks, and due to the vast size of this topic this will be the first of three instalments. I will discuss the main aspects of these two divisions without focusing on one particular type of shellfish in too much detail.

This column and the next instalment will concentrate on the aspects of crustaceans and a third column will focus on mollusks.

All shellfish are invertebrate sea creatures, meaning that they do not have an internal bone system like fish which are called vertebrates.

Almost all shellfish have a hard outer shell that protects their soft bodies from predators and the environments they thrive in. Crustaceans is the grouping that represent

crabs, lobsters, shrimp, crayfish, etc. I will focus on crabs and lobsters in this column, while leaving the discussion on shrimp, prawns and crayfish for the next.

Buying shellfish live is almost always preferred, but many don’t have this option at their marketplace. When live is an option, it is usually only crabs and lobsters in the crustacean family that are available.

There are many ways to cook a live crab or lobster. The most common way is to submerse it headfirst into a pot of boiling water to kill it instantly. Crabs are then boiled for approximately 6 to 10 minutes depending on their size, and lobsters are usually 5 to 6 minutes per pound. Due to the labour required of picking the dispersed meat from crabs, they are almost always cooked this way rather than trying to extract raw flesh which is more difficult.

Another option for kill-

ing lobsters is to hold it down firmly on a cutting board and plunge the tip of a chef’s knife into the head before cooking it.

This should be done immediately before cooking it to ensure optimal freshness and flavour, as the rule of thumb for raw crab or lobster is to cook it in the live form.

Raw crab and lobster flesh deteriorates very rapidly.

Lobsters are also very tasty if split in half and opened up, brushed with oil, lemon juice, and seasonings and then grilled on the barbecue. When splitting in half, you can cut right through to serve as two halves, or cut from the underside but not all the way through

the top shell and serve as a whole split lobster. If prepared in this manner, you will want to weigh down the tail portion as it will curl up and lose contact with the grill.

Another way to avoid this is to cut the tail section completely through while leaving the body halves connected Chef Dez by the top shell. With either grilling option, the large claws should be cracked beforehand as this will assist in cooking the claw meat at the same speed as the exposed body and tail flesh.

both cases is located just behind the eyes, and should be removed and discarded. With crabs, the feathery gills located on each side of the body under the shell are also discarded.

Dear Chef Dez: I know it’s better to buy live shellfish, but our grocery store only offers frozen crab legs. Are they cooked already? For a nice crab dinner, how do I cook them and for how long?

Harold M. Saskatchewan Dear Harold, Usually frozen crab legs are already cooked prior to freezing, and the easiest way of preparing them is in a steamer.

Submersing them in boiling water, which is a preferred technique for live crabs, will cause more flavour loss with frozen crab legs rather than steaming. The amount of cooking time will depend on the size

of the crab legs. Bring a couple of inches of water to a full boil in a pot while in the meantime arranging your crab legs as evenly as possible in a steamer basket. Once the water is boiling, place the filled steamer over the water and immediately cover with a lid.

Normally the cooking process should take anywhere from 6 to 10 minutes, but the safest way is to use an instant read thermometer. There is almost always a cracked part of the shell to allow for the thermometer to be inserted. Find the thickest flesh to do this with, and serve when the internal temperature reaches 170 degrees Fahrenheit. They are best served simply with dishes of warming melted butter for dipping.
