Biggar ball players heading to U.S. for high-performance competition Three Biggar softball players will be part of a Saskatchewan contingent heading to Oklahoma City for a year-end competition.

Siena Ellis, Kalin Harrabek and Sydney Leschinski will be part of the Saskatchewan U16 North Team heading to Oklahoma this March 27 to 31. The three Biggar players, part of the west central region contingent, went through

Softball Saskatchewan’s 2018/19 High Performance Program, pitting themselves against the best of the province, training and testing over the past winter months.

Given a look-over by Saskatchewan coaches and trainers, Siena, Kalin and Sydney were three of nine picked from the west central region.

Saskatchewan is sending U14, U16 and

U19 teams.

The Oklahoma City event will be the kickoff to the summer season (remember, Biggar will host the Western Canadian Softball Championships this August 2-5) for Siena, Kalin and Sydney who will, no doubt, represent our province and our little corner of the world with exceptional skill and grace.

Nominations still open/needed for Mothers of the Year Nominations are still open for Biggar Prairie Branches annual gala Mothers of the Year celebration this May 7.

A short 150 word explanation is all that is required, telling of why a special lady is deserving of pampering at Biggar Prairie Branches Mother of the Year tea. The event, a fund raiser for Biggar Prairie Branches, brings people together to enjoy an afternoon of socializing, entertainment, treats and fun, excellent companionship, all

while helping one of the cornerstone organizations of our community.

Nominations are still being sought for the event - it’s not a competition, but rather a chance to acknowledge someone special. Nearby communities are also holding nominations for their Mothers of the Year, who will also be honoured at the Biggar tea.

Deadline for nominations is April 15.

Spring or budgets: both come hand in hand The aftermath of the federal budget will continue for a few days longer with stakeholders tearing it apart. The Canadian Taxpayers Federation says the Trudeau government has “betrayed Canadians who entrusted it to manage their money responsibly”.

That has a ring of truth to it when you consider that the budget delivers a deficit of just under $20 billion. It should also be noted that there is not a lack of revenue rather it is a matter of the government over spending. (Gee, I wish I had a bank like that!)

The numbers are staggering: adding $127 billion in new debt by 2024; the debt will rise to $761 billion by 2024; interest on the debt will rise from $26 billion per year to $33 billion by 2024. All this in a effort to buy votes.

Later on today (at the time of writing - Wednesday morning) the provincial government is set to deliver the provincial budget. While preliminary speculation is a move toward a balanced budget it remains to be seen just how much taxpayers will be hit. Then it will be another week or so of dissecting those numbers. Talk show hosts must be drooling.

Meanwhile some local pundits are telling me they are just plain tired of politicians using their money for unnecessary spending and bringing in regulations that only plug up the system.

So, let’s celebrate the arrival of spring. As Saskatchewanians know there is still time for another snow storm but here’s hoping we will get rain instead. So as we focus on spring there is one harbinger that is not welcome.

Potholes.

Federal budget continues the spending spree

by Jake Fuss, Policy Analyst, Fraser Institute and Milagros Palacios, Associate Director, Addington Centre for Measurement, Fraser Institute In this year’s federal budget, Finance Minister Bill Morneau confirmed the government is more than happy to continue down a risky path of deficit-financed spending. Once again, the government opted to throw money in every direction rather than demonstrate restraint and manage Canada’s finances more responsibly by proactively moving towards a balanced budget.

Throughout the 464-page Budget 2019 document, the government included several “goodies” including a new Canada Training Benefit.

And it set the stage for national pharmacare.

Of course, all of this spending comes at a cost.

Program spending is set to grow again by 1.8 per cent this year. This increase means program spending has climbed by $52.9 billion since the government’s first year in office and there are no signs this will slow down any time soon. In fact, Budget 2019 indicates that program spending is expected to increase by a further 12.1 per cent (or $39.7 billion) by 2023/24.

It didn’t have to be this way.

Despite actual revenues from the last four years closely matching projections from Budget 2015, the government has increased spending by more

than $66.0 billion from the previous government’s 2015/16 projections. Five consecutive projected surpluses in Budget 2015 (totalling $13.1 billion) under the former government have turned into $75.5 billion in cumulative deficits, solely to finance this government’s spending. Even a small amount of fiscal responsibility could have prevented this. To make matter worse, Canadians have been told repeatedly these spending increases would improve the economy’s performance.

But Canada’s economy is beginning to falter and investment capital is fleeing the country. Growth in economic output slowed to a mere 0.1 per cent in the last quarter of 2018. Since the government first took office, foreign direct investment in Canada has declined by 8.4 per cent and non-residential business investment has shrunk by 5.5 per cent.

And remember when the government promised to balance the budget this year?

On Tuesday, Minister Morneau quashed whatever slim chance remained of that happening.

Instead, the government chose to run a $19.8 billion deficit in 2019/20 with no plan to return to balanced budgets in the near future. Cumulative deficits are expected to equal $76.2 billion over the next five years and federal debt is projected to reach $761.7 billion (or nearly 30 per cent of our economy) by 2023/24.

Of course, balancing the budget requires difficult decisions. In failing to balance the budget, the government is burdening future generations with the debt accumulated today and hoping that some future government will make the necessary difficult decisions instead. It’s a classic case of kicking the can down the road.

And yet, Canada already has a successful blueprint to follow. After three decades plus of deficits, Jean Chretien’s Liberal government reduced program spending by nearly 10 per cent from 1994/95 to 1996/97 and balanced the budget one year later.

The current government could have delivered a balanced budget by 2020/21 by modestly reducing program spending from 2018/19 levels by even 0.2 per cent (excluding the risk adjustment) over the next two years. The only thing standing in the way of that in this budget was the government’s unwillingness to do so.

Sooner or later, Ottawa will have to make hard choices about federal finances. With this budget, this federal government chose to continue playing fast and loose with our finances and spending money on whatever they could while waiting for someone else to deal with the fallout. And the longer they wait, the worse it will get.

Books can introduce you to a new world I often feel sorry for people who don’t read good books; they are missing a chance to lead an extra life. ~ Scott Corbett ~ There is no doubt you can lose yourself in the pages of a good book.

They can transport you to another world, experience another life and immerse you in an adventure.

Some might say books are outdated; not so.

Schools are constantly holding book fairs and teachers strongly encourage their students to read. There are reading challenges at libraries.

by Principal Leanne Gruending The sun is waking up a little earlier and I have hope that we are finally out of that deep freeze!

Thank you for everyone’s patience during the no bus days as it definitely changes some of the routines and practices we have here at school!

It also seems like we were blessed on February 28 with what seemed like the one nice day in the whole month of February for our Sledding Day at Eagle Creek. It was such a fun experience!

Looking ahead at March and April, we are at the tail end of our basketball season. Good job, boys, as you faced some tough competition at Conferences and best of luck, girls, as you head into Regionals this weekend ... Go Athletics!

Badminton has just started up, even though the season was pushed back a little bit due to the no bus days. Thank you to Mr. Walker for coaching the Senior Badminton team and I will be coaching the Junior Badminton team.

We have been lucky around the school lately with two presentations for our students this past month – Project Face Off, where members of the Saskatoon Integrated Drug Unit and the Saskatoon Blades came out to chat with our Grade 7-12s about the real life

dangers of drug use. We also had Andrew Bennett, an engineer from Biggar, come out to show our students the movie Dream Big that was all about the wonders of the engineering world.

The LAS School Community Council has once again sponsored our Willows Award Book exploration. The Willow Awards purpose is to promote reading and celebrate Canadian Literature. In our school, the SCC buys each classroom a selection of age appropriate books from the Willow Awards Finalists. Each class reads them and then students vote on their favourite book. Lucky for us, our students not only get to enjoy the books, but they also get to add them to their classroom library!

We also have Student led Conferences coming up April 10 and 11. Your classroom teacher will be sending you more information on SLCs shortly.

Once again, we will be hosting the Showcase and Silent Auction in the gym, so please make sure you pop by to see the amazing work our students have been doing!

The Book Fair will once again be on during SLCs. Pop down and pick up some great finds for your home library! A portion of the sales from our Book Fair is donated back to the school so we can purchase more books for

our library.

Basketball at LAS The weekend of March 8 and 9 saw our Senior Basketball teams at Conference playoffs.

The boys were eliminated after a tough game against Mistawasis.

The Senior Girls came out of their Conference with wins against Biggar and Maidstone earning them a berth at Regionals where they will face Shaunavon. Congratulations, ladies and coaches!

Yann Martel’s Life of Pi sold more than 12 million copies and was on bestseller lists for more than a year. It was later adapted to the screen and became an award winner with four Oscars and a Golden Globe.

Martel has written many books but perhaps his most controversial is a collection of letters he wrote to then Prime Minister Stephen Harper entitled 101 Letters to a Prime Minister. In an effort to convince Harper the worth of books Martel sent him a book every two weeks for four years accompanied by a letter explaining the worth of the book. He never received a reply.

A personal choice is Stuart McLean and his Vinyl Cafe chronicles.

McLean, as the host of CBC Radio program The

Vinyl Cafe, turned his story-telling into writing a series of books full of humour. He was described as a “story telling comic” but he wrote both fiction and non-fiction and some of the subjects faced and overcame obstacles. He won the Stephen Leacock Memorial Medal for Humour three times. If you ever had the chance to see him in person you would understand why.

There are so many more Canadian authors that it is impossible to list all of them here.

Robert Munsch and his ability to write great children’s stories. Or Malcolm Gladwell with his ability to make sociology, psychology and social psychology interesting as well as informative.

Make a pledge to read a book during this month.

It can open up a whole new world.

Look alikes According to a census Y.T. read some time ago, there were seven billion people inhabiting our planet now... Seven billion!

No wonder we have so many look-alike!

I read an article quite a few years back, in which the writer claimed (among other things!) that the earth could only support five billion – but here we are!

Of course, a while ago, I saw another article claiming that times were so bad that now much of our affluent lifestyle was going to go down the drain. And yet it didn’t!

So much for statistics, eh?

All of us have a nose, two eyes, two ears and a mouth, and it almost stands to reason that out of seven billion people some of us must look alike!

One time, I forget exactly where it was, while in the army, we took a P.O.W. (Prisoner of War!) who looked very much as Y.T. does: tall, handsome, graceful, well proportioned, bright-eyed, et cetera, et cetera and even et cetera...

We didn’t speak the same language, although I imagine we had a lot of the same thoughts, (ie) Y.T. smiled as he said to the guy in his best French: “Mon Ami!” The P.O.W. glared back and said something like “Schweinshant” ... whatever that means!

Like looking in a mirror, eh?

Also, mentioning look alikes, I saw a pretty girl in a crowd one day.

“Hello Mary,” Y.T. yelled, because she looked exactly like a girl.

I met 70 years ago.

The girl have me a cold look (I’m kind of used to that!), a look that almost seemed to say “I wonder who that dirty old man is?” And she kept on walking.

I asked one of the local guys standing near, just who she was.

“Remember old Mary?” sez the guy, “well, that was one of Old Mary’s granddaughters!”

Of course Y.T. remembered Mary, but when the guy said “old” I darn near needed a pair of crutches to get out of there!

When Y.T. was a young schoolboy (some years ago!) like many another young fellow he fell for a pretty young schoolgirl.

Elsie never paid attention to him, but that didn’t mean he never had eyes for her.

At an old school dance Y.T. was standing in the “stag line”, trading some Grade 8 gossip with a friend, when suddenly the floor manager hollered that the next dance would be a “Moonlight Waltz”. Pretty romantic, eh?

Of course Y.T. immediately ambled over to where his dream girl sat talking to some girlfriends.

“Hello Elsie!” he greeted familiarly (well she was in Grade 7!).

“May I have the pleasure of this dance?”

She turned.

“Elsie who?” she sez in a strange voice. “My name is Madge and I’m Elsie’s cousin!”

Well, it was dark and she did look like Elsie!

At an ice carnival some years ago I said to one of the local men, “By gosh Bert, your twin daughters look so much alike how can you ever tell them apart?

“It’s easy,” replies Bert.

“After living in the same house for years you can tell them apart and never make a mistake.”

One of the twins went skating past.

“Hey Shirley!” hollers Bert. “Come over here!”

The pretty girl glides up: “I’m Sharon,” she said.

Well you can’t win them all, eh?

A while ago when Phyllis and Y.T. were in far-off Kelvington, I saw a very familiar Biggar face.

“Hello Larry!” I yelled.

“I’m not Larry,” was the reply, “but if you mean Larry Reinhardt from Biggar, I’m his twin brother!”

Like I say, when it comes to look-alikes you can’t win them all!

I golfed with a guy one time who had quite a resemblance to movie actor James Arness, and this fellow told me that wherever he went, par-

ents used to hide their daughter in the basement.

I’m not sure whether he was a great lover or not, but he sure told a good story!

There are thousands of cases of mistaken identity.

When we were Bob Mason building the divided highway south of Sherwood Park, Alberta, our son Jim had given me his old, beat-up hard-hat to wear.

But it was white! Everyone on construction knew that someone wearing a white hat was the boss!

Three very important looking men wearing very shiny hard-hats approached me one day.

“Do you mind if we cut a trench through your grades so we can put a television cable in?” they asked.

“Cut two or three trenches through if you want to,” I told them, “but mebbe you had better ask Bruce!”

“Why,” sez one of the guys looking at my hat, “aren’t you the boss?”

“Heck no,” Y.T. replied, “that dumb looking guy over there is!”

Because uniforms look

so much alike there were many instances of identity-blunders in the army, and though he won’t. Y.T. could mention a whole bunch.

Heck my old Major used to go into action wearing a soiled, crumpled jacket with no crown on the epaulettes, so that if he were captured he looked like one of the boys!

Years ago, one of my friends (now passed on) gave mw very high-class compliment when someone said to him: “Aren’t you Bob Mason?”

“No,” sez Jack. “I’m not, but sometimes I wish I was!”

How hard up can one get, eh?

China canola dispute clouds an already murky crop year

by Calvin Daniels The ongoing issues with canola exports to China has to have Prairie producers adding a wild card to the deck as they prepare to deal out their 2019 cropping intentions.

Canada’s trade diversification minister has come out with a statement calling on the Chinese government needs to “show us the evidence� of alleged impurities it used as justification for yanking Richardson International Ltd.’s canola export licence, details a recent StarPhoenix story. “The Canadian Food Inspection Agency inspected this canola, said it was of high quality as is the nature of the product that we export.

The Chinese say that it has impurities. We say to the Chinese, ‘Show us.

Show us a sample,’ � Jim Carr said.

It is more than likely the so-called impurities are nothing more than the Chinese government putting some trade

pressure on Canada as a way to show strength regarding issues between the two countries which have nothing to do with agricultural trade.

It is a tactic that definitely gets noticed here since in 2017, the last year for which annual data are available, Saskatchewan exported $3.6 billion worth of canola seed — about 26 per cent of all agricultural exports. China was among its best customers, buying $1.4 billion of that total, according to the Star Phoenix article.

Long term China is going to remain a buyer of canola oil based on a growing middle class looking for it on their store shelves.

But, short term the

commodity can certainly be a political football, which can raise some questions for farmers here headed to spring planting.

Farmers have never had control over political posturing using agricultural products as a hammer, and Calvin Daniels they have even less control over weather.

In December an article at theweathernetwork. com also has to be a wild card for famers in general and canola producers specifically. “The influence of El NiĂąo can be felt far and wide and heavy rainfalls, catastrophic flooding, and mass crop failures can all be attributed to

this powerful climate cycle. Early compilations of 2018’s data indicate that this year will likely become the fourth warmest on record, and the developing El Niùo event is increasing the odds that 2019 will be the hottest year that human life has ever experienced,� noted the article.

While the Chinese situation could be solved long before the 2019 crop is harvested and ready for sale, and weather has a tendency to moderate closer to the actual date of a forecast, the two factors do suggest canola could face some definite production and marketing challenges in 2019.

Jays won’t strike fear into A.L. opponents The clocks have sprung ahead, the NHL playoffs won’t begin for another three weeks or so, but it’s baseball season, so buy me some peanuts and Cracker Jack and take me out to the ballgame.

Major League Baseball has its earliest start ever, with the 162-game regular season kicking off March 28, not counting two games in Japan March 20-21 featuring Oakland and Seattle.

Canadians, of course, get excited about the Toronto Blue Jays, who are starting the season with a new manager, Charlie Montoyo, who replaces John Gibbons.

Montoyo could use some new pitchers, too, but the Jays didn’t do much in the off-season to address their mound situation.

Marcus Stroman is hoping to rebound from a 4-9 injury-riddled 2018, and he’ll pitch opening day against the visiting Detroit Tigers. After him, the Jays staff is suspect.

J. A. Happ (10-6) was the only Toronto pitcher to reach double figures in wins last year, but he’s wearing pinstripes in New York this year after a late-July trade last season. Free agent signee Matt Shoemaker, 40-32 in six seasons with the Angels, is slated to be the Jays’ second-game starter. The rotation of Stroman, Shoemaker, injury prone Aaron Sanchez and perhaps Ryan Borucki won’t instill fear in opponents. Jays fans,

however, will have lots to cheer for as soon as the can’t-miss kid (he’d better not miss) Vladimir Guerrero, Jr., joins the big-league club in late April. Fellow phenom Bo Bichette may also rise from the minors after a terrific spring at the plate.

Around the Big Leagues, eyes will be focused on Philadelphia, where Bryce Harper joined the Phillies with a $330 million 13-year contract, and San Diego, where Manny Machado signed with the Padres for $300 million over 10 years.

The Yankees, who belted a record 267 home runs last year, could exceed that mark this year, and probably win the A.L. East over defending Series champion Boston Red Sox. The Sox will likely be without closer Craig Kimbrel (who as a free agent still hadn’t found a new home as of press time). Houston Astros, led by the diminutive Jose Altuve, are still going to be powerful, and the Dodgers will once again contend in the National League, proving once again that money not only talks, it wins. Mike Trout of the Angels remains the game’s best player and fans in Atlanta will be anticipating more heroics from Ronald Acuna, Jr., last year’s rookie of the year.

Blazer Senior Boys season comes to a close

This past weekend the Blazer Senior Boys traveled to Regina to take part in regional playoffs.

In the Friday night game the Blazers played Regina Harvest City, the number one ranked team in the province. The boys stayed with them in the first half but eventually fell to them 45-86. The Blazers were led by Landen Boisvert with 13 points and 8 rebounds, Junel Villanueva with 10 points

and 4 assists and Ethan Massie with 6 points and 10 rebounds On Saturday the Blazers played Hanley who was ranked no.8 in the province. The game was close all the way with many lead changes. With the Grade 12s leading the way the Blazers came out on top with a 79-74 win.

A great way to end the season. The Blazers were led by Junel Villanueva with 26 points, Nathan

Hawkins and Darian Bartusek with 10 points each.

Andon Hawkins led the Assault on the Boards with 8 rebounds, with Ethan Massie chipping in with 7 boards The team will miss our Grade 12s, Nathan Hawkins, DJ Ferre, Junel Villanueva, Landen Boisvert and Henrick Labadan.

Saskatchewan innovators challenged to find private property access solutions March 13, while delivering the Premier’s address at the 2019 Convention of the Saskatchewan Association of Rural Municipalities, Premier Scott Moe announced an Innovation Challenge to find creative solutions in connecting would-be land users with rural private property owners to access land.

The Innovation Challenge stems from proposed changes to The Trespass to Property Act, which would require people to get permission from rural property owners to use their land for hunting, and other recreational activities.

Saskatchewan Association of Rural Municipali-

ties (SARM), with support from Innovation Saskatchewan, is leading the challenge and asking Saskatchewan technology startups, entrepreneurs, researchers, and students to find technology solutions to the following question: “How can technology be used as a tool to obtain permission from rural property owners before accessing their land?”

The ideal solution should create a convenient way for communication to occur between those seeking permission to access land and the landowners.

“Saskatchewan has a long history of innova-

tion and entrepreneurial achievement, and right now the technology sector in our province thriving,” Moe said. “We think there’s an opportunity to continue apply our Saskatchewan innovation when it comes to rural property access. We’re calling on our vibrant tech sector to bring ideas forward on how we can make it easier to ask for permission to access private land, and easier for property owners to respond to those requests. With the strong leadership and commitment of SARM, we’re hopeful our innovators and entrepreneurs will answer the call.”

“Providing the public a

tool to assist with receiving permission from rural property owners is important,” Saskatchewan Association of Rural Municipalities President Ray Orb said. “SARM hopes this initiative will assist in finding an innovative solution.”

Prior to the April 30 deadline for applications, there will be information sessions held in Regina, Saskatoon and online.

Application forms and further details on the program are available at innovationsask.ca. A winner will be selected through a competitive process involving input from key stakeholders.

The winner will then

receive funding of up to $10,000 and will work directly with SARM over the course of four months to develop a prototype of their technology.

“Our agriculture sector is at the forefront of innovation,” Minister Responsible for Innovation Saskatchewan Tina Beaudry-Mellor said.

“Saskatchewan is home to a growing and inventive tech sector, ready to create solutions. The Innovation Challenge is a great way to tap into the ingenuity and creativity of Saskatchewan people, and bring together the tech sector and SARM to find a solution that works

for both rural residents and the public.”

The Innovation Challenge was first launched in 2017 with the Saskatchewan Ministry of Justice.

The challenge sought technological solutions to address rural crime.

Saskatoon’s Rivercity Technology Services Limited won the challenge and developed a prototype during the 16-week residency. The company launched BeeSecure, an application-based tracking system and GPS device to alert land owners about irregular activity related to their property.

Sr. Blazer Badminton year gets underway The Badminton season is upon us. Both Senior and Junior teams are underway.

The Senior Blazer Badminton Team started off their year with a tournament in Rosetown.

All the teams played well and ended up with four of the five teams in the playoffs. Congratulations to Hanna Tuico and Janessa Bryan for winning the Girls doubles.

OBITUARIES Cheryl ARCHIBALD October 9, 1959 - March 16, 2019 The family of Cheryl Roberta Archibald sadly announces her passing. Cheryl passed away peacefully on March 16, 2019 at Royal University Hospital, Saskatoon, Sask. with her family by her side.

Cheryl was happiest when she was surrounded by her two sons and precious granddaughter and will be remembered and sadly missed by all who knew her.

Winter weights to be removed Effective March 15 at 12:01 a.m., any existing winter weights are removed for the entire province and allowable weights return to normal regulation weights.

“Winter weights are permitted on secondary highways so shippers can carry more weight during the winter months,” Highways and Infrastructure Minister Lori Carr said. “Our staff monitor road conditions carefully so the reversion to regulation weight occurs at the correct time, protecting our roads from damage during the spring melt.”

Winter weights typically run from about November to March. Once the road bed freezes it can

withstand heavier truck loads without being damaged Spring road restrictions are dependent on weather. Spring road bans are a tool that the province and rural municipalities have used for decades to mitigate damage to infrastructure during the sensitive thawing period. Typically, these road restrictions start in March in the southwest of the province, and the remainder over a two to three-week period. The spring road bans reduce allowable weights on RM roads and secondary weight provincial highways by 10 to 15 per cent and usually last for about six weeks.

Mandatory minimum standardized training for commercial semi drivers New mandatory standardized training requirements take effect March 15 for those wanting a Class 1 commercial licence in Saskatchewan to drive semi trucks.

The changes were announced in December

by Minister Responsible for SGI Joe Hargrave, after consultation with those in the trucking industry, training schools, additional stakeholders and other jurisdictions.

Changes were the culmination of work SGI began in 2017 to improve standards for training of commercial semi drivers.

“These changes will improve safety on our province’s roads by ensuring Class 1 drivers receive

more rigorous standardized training, based on strengthened curriculum requirements,” Hargrave said.

Highlights of the changes include: • Drivers seeking a Class 1 commercial licence in Saskatchewan to drive semi trucks will be required to undergo a minimum standardized 121.5 hours of training (in-classroom, in-yard and behind the wheel) focusing on priority curriculum areas including basic driving techniques, professional driving habits, vehicle inspections and air brakes.

• More rigorous driver’s tests, aligned with the

new curriculum.

• A 12-month safety monitoring program is in place (as of December 4, 2018) for all new semi drivers; SGI is monitoring semi drivers more stringently for a year post-testing so remedial action can be taken if there are safety concerns.

• Class 1 road tests will be undertaken with SGI examiners only (previously, certain accredited training schools were allowed to test students).

A standardized curriculum has been rolled out to training schools across the province since the changes were announced in December.

According to Food Banks Canada’s HungerCount 2018 report, there were 1.1 million visits to food banks in March 2018.

And 35 per cent of those who visited last year were children.

During the winter, donations to the local food bank peak around the holiday season, but are often at their lowest in the spring and sum-

mer. This spring, as we gather around our dinner tables with our family and friends, let’s think of our neighbours and share what we can with others.

When grocery shopping, pick up an extra can of beans, fruits, and/ or vegetables to add to the donation bin at the front of your local store.

If you are hosting friends and family for dinner, ask them to bring a non-perishable donation for the

local food bank. You can also get competitive with your colleagues and challenge them to collect food or monetary donations to help make a difference in your local community.

While non-perishable food items are always put to good use, monetary donations are also very useful to, as they allow food banks to purchase fresh items such as produce, bread and milk.

You should cook topless I have been a Culinary Instructor in British Columbia for over 16 years and I love sharing tips and tricks to help people improve the results of their cooking.

One suggestion I have been preaching for years is to cook topless. Now before we get too carried away, I am not suggesting you cook half-naked.

What I mean by “cooking topless” is to cook without a lid on your pot or pan.

Now every recipe is unique, but for the most part when you are simmering a soup, stew, or sauce, chances are you will have better results if you do it without a lid.

The reasoning for this is really quite simple and logical, and my goal is to get you to rethink your cooking habits.

When you simmer anything without a lid, what do you see rising from the pot or pan?

The answer is quite obvious: steam. What is Steam? This answer to this is even more obvious: evaporated water.

This leads me to ask you three more straightforward, but very important questions:

1.) Does water have any colour?

2.) Does water have any flavour?

3.) Is water a liquid?

There is water content everywhere in many ingredients.

There is water in vegetables, meat, broth, juice, et cetera.

So, even if you haven’t added any water specifically as an ingredient, you can still cook water out of your recipe by cooking it out of your ingredients. But why is this such a benefit?

Water is a colourless and flavourless liquid and three magical things will happen when you cook without a lid: 1.) You will have darker colour to your recipe.

2.) You will have increased flavour in your recipe.

3.) Your recipe will be

thicker.

Taking the some of the water component out of your dish through steam will always achieve these results. Now, sometimes you may be happy with the amount of colour, flavour, and thickness in a recipe before simmering, and if that’s the case, then Chef Dez cook with the lid on.

This whole discussion brings me to one more tip I want to share with you: If water is listed as an ingredient in a recipe, I want you to always question it. Based on obvious findings above, we have determined already that water has no flavour or colour.

So, why would you add it? When water is listed in an ingredient list, in small quantities (less than two cups), I want you to think to yourself “Do I have anything other liquid in my fridge

or pantry that would complement the recipe and has more colour and flavour than water?

Perhaps some wine, juice, beer, or broth?

The results will always be more colourful and flavourful.

Now, I am not suggesting to always substitute water with something else, I just want to make you aware of this instead of following a recipe by the seat of your pants. You will be a better cook if you know when and how to improvise. When water is listed, just question it, that’s all. If there is a more appropriate substitute in your kitchen, you’ll figure it out.

For example, all recipes that use cornstarch will state to dissolve it in water. I will use anything but water in these instances. Even though it just may be a few

tablespoons, why would I use it when I could add something better? It’s just using some common sense, and the more you do these substitutions, the better you will get at it.
