2021 TRF Farmer of the Year Joe & Gene Broussard Joseph H Broussard III, known as Joe and brother David E Broussard, known as Gene have been farming together for over 45 years. Joe and Gene got their love of farming from their parents, J.H. Broussard, Jr. and Nona Mae, who started farming in 1948. The boys partnered with their dad in Broussard Farm Inc. and now own their own business, which is Broussard Brothers. They are currently farming 700 acres of Organic Rice and 400 acres of crawfish. In 2006, they went to all organic rice.

Gene and his wife, Becky, have 3 children: Kyle Broussard, Cade Broussard and Maddie Broussard Sexton.

Joe and his wife, Sharon, have 4 children: Alisa Broussard Bris-

tow, Hanna Broussard Leger, Jennifer Neel Hartman and Jason Neel.

Their many grandchildren get their passion for being on the farm and dreaming of being farmers one day by how much they look up and admire Crawpaw (Gene) and Peanut (Joe). These men will drop everything for the grandkids to give a quick farming lesson or just a hug and kiss. They will be the future on Broussard Farm one day.

They believe that their success comes from

how well they work with each other and are always trying to stay a step ahead of the game. They are known for working hard, helping others and always smiling.

From helping the community, giving jobs to Hardin-Jefferson Students, to always donating to school and church fundraisers. Even when things are not so good, you will hardly ever see Gene and Joe without a kind word and a smile on their face.

continuing the local sound. Their performances draw thousands at events for NFL, NBA and PGA. In addition, there is always a salute to their roots which is at the heart of BOD’s charm.To quote the band:“It‘s like Mardi Gras all year long.”

2010, he was inducted into the Louisiana Music Hall of Fame.

In 2011, he entered both the Gulf Coast Hall of Fame and the Cajun French Music Hall of Fame. He is also a member of the Louisiana Blues Hall of Fame. This year will also mark his continued activism in the Coastal Vision Foundation, the organization dedicated to restoring America’s eroding ocean coastlines. “We are losing 2,400 acres a year in Louisiana, alone,” says Toups. “And it’s not just the Gulf Coast. Look what our eroded coastline resulted in when Hurricane Sandy hit New Jersey and New York.

We’ll be doing several fund-raisers for the organization.”

Geno Delafose & French Rockin Boogie Geno Delafose (born February 6, 1971 in Eunice, Louisiana) is a zydeco accordionist and singer. He is one of the younger generations of the genre who has created the sound known as the nouveau zydeco. His sound is deeply rooted in traditional Creole music with strong influences from Cajun

music and also country and western. His father is the famous zydeco accordion player John Delafose.

Delafose was born and raised in Eunice, Louisiana. At the age of eight, he joined his father’s band, the Eunice Playboys as a rubboard player and continued to play with the band until

age 13 and hasn’t put it down since. He mixes Cajun sounds with the rhythms of zydeco, adding elements of soul music and Southern rock. He calls the revved-up result “ZyDecajun,” and his electrifying group,“a Cajun fusion band with a rock‘n’roll attitude.”

He has recorded more than a dozen albums

and toured to more than 20 countries.

His songs have been heard on such film soundtracks as Steel Magnolias and Dirty Rice.

Always in demand for session work in his native Louisiana, Wayne Toups has also been hired to back the British pop artist Thomas Dolby as well as many of the

2021 Pioneer Farmer of the Year Jerry W. Peveto

Although raised on a rice farm in Orange, TX, Jerry W. Peveto, a fourth generation farmer, had never envisioned farming as a career. His father, Allen W. Peveto, farmed many years in Orange and also in Nome during the late 1940s. Jerry’s brother, Flurry Joe, followed in their father’s footsteps and farmed in Orange before moving his family to Nome to farm from 1969 to 1972. The second oldest of the four Peveto brothers, Jerry was a talented athlete who played college football at Texas A&M in 1957-58, the last season Bear Bryant was head coach, and at East Texas State College, now Texas A&M Commerce. At East Texas State, the

team won the Tangerine Bowl in 1958 and 1959. Members of that team were inducted into the Athletic Hall of Fame in 2008. Jerry graduated from Sam Houston State in 1962, where rodeoing became his athletic pursuit. From 1962 until 1975, Jerry rodeoed as a member of the Professional Rodeo Cowboy Association, advancing five times to the National Finals Rodeo in Oklahoma City. Jerry also taught school from 1962 until 1966, including the last year at East Chambers Junior High, before leaving the classroom for the fulltime rodeo circuit and moving to Oklahoma. In April 1973 after winning the National Finals in steer wrestling the

previous December, Jerry returned to the farm following a family tragedy. His brother was killed in a tractor accident, leaving his pregnant wife and two young daughters. Jerry completed planting and later harvesting the rice crop, later purchas- ing the equipment from his sister-in-law. Thus began his last career, the one never planned for: farmer and rancher, lasting from 1974 until 2001. During this time Jerry and his wife Cynthia, a Hardin-Jefferson High School teacher whom he married in 1974, planted soybeans and rice and raised cattle. Their two sons, Jason Menard and Todd Peveto, worked on the farm for much of their childhood.

With the help of specialized equipment from Martel Brothers Welding of Nome, Jerry was able to work ground in the mud, harvest in wet fields. Hurricanes, red rice, market fluctuations, government regulations were all obstacles to overcome during these many years of farming.

The farm is now used by his son Todd for raising cattle. Jerry also served in sever-

al official capacities relating to agriculture.

He served as a director of the Jefferson County Farm Bureau and still serves on the nominating committee. He was elected to the Jefferson/ Orange County FSA

Committee and was a member of American Rice Growers CO-OP. Texas Rice Festival honored him as Farmer of the Year in 1987. While rice farming may not have been the career path of a young boy who

knew too well its hard labor, long hours, and the uncertainty of Mother Nature, farming proved to be a worthwhile, satisfying choice for 80 year-old Jerry W. Peveto.

2021 Cajun Award Recipient Carl Comeaux Carl Sweney Comaux was born in Iota, Lousi-ana, January 6, 1944, to Gabriel S. Comeaux and Audrey Mae (Crochet) Comeaux. My wife Brenda and I reside at 980 Vivian Street Bridge City, Texas, 77611. I retired from Parallax Builders (Houston, TX) in 2009. The company built schools and banks for which I was a project superintendent. I enjoy fishing, woodwork, and playing music. My grandfather’s, Ed Comeaux, and Valerie Crochet greatly inspired me to play Cajun Music; my greatest regret is that I didn’t get to play with them. I received my first guitar at age seven, but didn’t really start playing until my early twenties; I play rhythm and a little bass guitar. My brother, Johnny Comeaux, and I formed the “Boss Cajuns” in the mid 60’s; we played together for

over forty years. We are both semi-retirees at this time.I was fortunate to have sat in with greats such as Joe Bonsall, Blackie Forestier, Phil Menard, Leroy Broussard, Andrew Cormier, Aldus Roger, Sheryl Cormier, Johnny SOnnier, Darrell Higginbotham & Geno Tibodeaux. The “Boss Cajuns” and I have played many festivals, such as the Winnie Rice Festival, Vinton Cajun Festival, Orange Gumbo

cook-off, CFMA Festival, Salt Water Crab & Crawfish Festival, Go-Texan BBQ Cook-off Humble, TX. Bishop Byrne Wellness Festival, Pleasure Island Cajun Music Fest, Folk Life Festival San Antonio, Aransas Pass ShrimpaRee. It was an honor to be inducted into the CFMA Hall of Fame in Lake Charles in 2002, and an award of Excellence for the Dedication to the Cajun Culture and Music in 2016.

1 lb. lean ground beef 1 cup chopped onions 1 cup chopped green peppers 1 can tomatoes 1Tbls. Salt 1 Tbls. Chili Powder 1/2 tsp. garlic powder 3 cups cooked rice 4 cup shredded cabbage, about 1/2 pound 1/2 cup sour cream 1 cup grated Monterey Jack Cheese

Instructions:

Sauté ground beef, onions and green pepper until meat is lightly browned. Stir in tomatoes, seasonings, rice and cabbage.

Cover and cook 10 to 15 minutes or until cabbage is tender crisp. Stir in sour cream.

Sprinkle with cheese. Cover 2 to 3 minutes to melt cheese.

1 stick butter 2 cups creamy peanut butter 1 (16oz.) box powdered sugar 3 1/2 cups rice krispies Krispie Chocolate Balls 1 1/2 cup finely chopped pecans 1 (8oz.)

Hershey bar 1 (6oz.) pkg. milk chocolate chips 1/2 bar paraffin

into quarter sized balls and chill. In double boiler melt paraffin, add chocolate chips, chocolate bar and stir till creamy. Dip balls in chocolate mixture. Roll in finely chopped pecans. Set on waxed paper to cool. Store in air tight container.

2 cans cream of mushroom soup 1 medium chopped onion 2lbs. crawfish tail meat 1 can cream of celery soup 2 tsp. chopped Jalapenos 3 cups cooked rice

Instructions:

In large pot bring 3 quarts of water to a boil. Add pasta. Wait for reboil. Stir frequently. Cook 12-14 minutes. Drain and run under cold water. Drain and set aside.

In medium sauce pan, melt 1/3 stick butter. Add squash spirals and potato spirals.

Saute 3-4 minutes over medium heat. Remove from heat and toss with noodles.

In same pan, melt other 1/4 stick butter.

Add red onion and colored bell pepper.

Saute until onion is translucent. Remove from heat and toss with noodles.

Refrigerate until cool. Add cheese. Bacon bits and dressing. Toss until well blended. Garnish with egg slices, croutons and green pepper.

Mix and cook all ingredients, once cooked add cooked rice and set aside. In the mean time, beat one egg white in a small bowl.

Wet Spring roll papers and set aside. Take a spring roll paper and dip one corner in egg white for your sealing corner. Take 2 tablespoons of cooled A-2-fay mixture and Richard Dommert place in spring-roll and roll up sealing.

When all are made fry in extra virgin olive Baytown, Texas oil and enjoy.

1 12 oz package of rice flour spiral pasta 1/2 cup butternut squash spirals 1/2 cup red onion chopped 1 8oz package Cheddar & Monterey Jack Cheese nugget blend 1 2.25oz package of ready to serve real bacon bits Instructions: Melt butter in medium saucepan. Add pea- 1/2 cup Italian dressing 2 eggs boiled hard nut butter, sugar, cereal and pecans. Roll

2 pkg. Mini assorted Sweet Peppers 1 8oz. pkg. Cream Cheese 1 small can Crabmeat, drained 1/2 cup cooked Louisiana popcorn rice Seasoning to taste 1 small can whole shrimp, drained Fresh chopped parsley

Instructions:

Rinse and dry peppers. Cut off top of pepper and remove seeds. Combine cream cheese, crabmeat, rice and seasoning. Use a piping bag or spoon to fill peppers with mixture.

Top with shrimp. Garnish with chopped parsley. Chill until serving.

12 oz. whipped Cream Cheese 1 bunch green onions chopped Tabasco sauce to taste 4 cups Good Cajun Rice Boudain 1 cup chopped pecans

Instructions:

Rice: 11/2 cups vegetable stock 1/2 lb. sausage, diced 11/2 lb. cups Arborio rice Creamy Sausage Rice and Shrimp 1 cup half and half 2oz. butter 1/2 cup whole milk (if needed)

Sauté ground beef, onions and green pepper until meat is lightly browned. Stir in tomatoes, seasonings, rice and cabbage.

2 cups cooked long grain white rice 6oz. cooked crab meat 1lb. shrimp - Boiled and Peeled 1/2 cup chopped onions 1/2 cup chopped bell pepper 1/2 cup pickle relish 1 cup mayonaise

Instructions:

Cook rice and cool completely. Combine all ingredients and toss lightly. Season to taste. Refrigerate until ready to serve.

Taste better if made the day before serving. Serve cold.

Mix: 11/2 lb. large shrimp 2 Tbsp. sour cream 1 box frozen green peas Seasoning 2oz. butter Heat BBQue Grill. Skewer shrimp and season to you taste. Cook on BBque til done. In a skillet warm the green peas.

Mix the rice, green peas and sour cream in a bowl. Adjust seasoning as needed. Place rice mixture covered with shrimp on a serving platter and enjoy.

Instructions:

Combine all ingredients in a large bowl and toss lightly. Serves 6-8.

Cajun Sushi Rolls

2 cups uncooked short grain rice 2 1/2 cup water 1/3 cup rice vinegar Cajun Sushi Rolls 1 tsp salt 1/4 cup sugar 1 tablespoon vegetable oil

Instructions:

Rinse the rice until water runs clear. Combine the water with rice in medium saucepan or rice cooker. Soak rice for 30 minutes before cooking. Cover and cook. Once rice is cooked, transfer to wooden or plastic container.

Do Not cover. Set aside to cool slightly. Prepare seasoning. Heat rice vinegar with salt, sugar and oil in a small saucepan. Cook over medium heat til sugar dissolves.

Cool, then stir into cooled rice with wooden spoon , not to damage rice grains. When you pour this into the rice it will seem very wet., keep stirring and the rice will dry up as it cools down. When rice is cool enough to handle make rolls.

Rolls: 3 cups sushi rice 4-6 sheets Nori cut crosswise in half 1/2 cucumber, peeled, seeded and cut into small strips Preheat oven to 350 degrees.

1/2 pound of shrimp, crawfish or imitation crabmeat cooked 8oz. block cream cheese 1 avocado, sliced thin or cut into strips On a medium baking sheet heat nori in oven 1-2 minutes until warm. Center 1/2 sheet Nori on Sushi mat. Wet your hands. Using your hands, spread a thin layer of rice on Nori and press. Arrange 1/4 of the filling of choice in a line down the center of rice. Lift the end of the mat and gently roll it tightly over the ingredients pressing gently. Roll it forward to make a complete roll. Repeat with remaining ingredients. Cut each Roll into 4-6 slices using a wet sharp knife. Serve with Soy, Teriyaki or wasabi sauce.

2 cups long grain rice 1 teaspoon oregano 1 tablespoon olive oil 2 cloves garlic minced 1 pound boneless skinless chicken breast cut in 1 inch cubes 1 teaspoon thyme 1lb. sausage Lemon zest 1 medium tomato chopped 1 cup tomato sauce 1 medium onion chopped 4 cups chicken broth

Instructions:

Heat oil in large heavy skillet on medium heat. Add chicken and sausage, cook and stir 5 minutes. Remove from skillet. Pour off excess oil. Add onion, cook and stir on medium heat until onion is softened. Stir in tomato, tomato sauce, spices, lemon zest and garlic. Return chicken and sausage to skillet. Add rice and stock; bring to a boil. Reduce heat to low; cover and cook 25 minutes or until rice is tender, stirring occasionally.

4 1/2 tbsp. butter Zest of 1 lemon Juice of 1 lemon Lemon for decoration 1 1/2 bags marshmallows (10 ounce bag) 2/3 cup Duncan Hines Lemon Supreme cake mix 6 cups rice Krispies cereal

Instructions:

Prepare a 8 x8 or 13 x 9 pan by greasing with shortening and set aside. In a large saucepan melt butter over low heat with lemon zest and juice. Add in the marshmallow sand stir until completely melted.

Slowly stir in dry cake mix. Once combined, remove from heat and stir in cereal.

Using a greased spatula press mixture into greased pan. Cool on the countertop for 30 minutes. Decorate with lemon twirls on top. Cut into squares and enjoy.

1 lb. crawfish tails rinsed and drained 2 eggs beaten 1 lb. shrimp peeled and deveined 2 tablespoon chopped jalapenos 2 cup cooked rice 1/2 can rotel drained 1 box jiffy corn bread mix 1 can cream corn 1/2 onion chopped 1 teaspoon baking soda 1/2 bell pepper chopped 1 teaspoon salt 1/4 cup green onion chopped 3 cup shredded mixed cheeses

1- 8 ounce pkg. cream cheese 2 cups sugar 3 eggs 3 1/2 cups sweet rice flour Instructions: 1 tablespoon baking powder Mix dry ingredients and in another bowl mix wet ingredients. Add together. Stir in Topping: shrimps and crawfish tails. Add cooked 1/4 cup brown sugar rice and mix well. Place in baking dish 1 stick melted butter and bake at 350 degrees for 45 minutes 1 tablespoon vanilla 1 -15 ounce can cream of coconut 1 cup until top starts to brown. milk 1 -8 ounce can crushed pineapple 2 tablespoons white granulated sugar 2021 Gate Ticket Price:

In large bowl cream the cream cheese and sugar. Stir in eggs one at a time. Mix the remaining and stir until smooth. Pour into a greases 13 x 9 pan. Sprinkle with brown sugar and granulated sugar. Bake at 350 degrees for 1 hour. Allow to cool. Cut into squares and serve.

Watermelon Rice Krispy Treats

Rind: 1 1/2 Tbsp. Butter 2 1/2 cups miniature marshmallows Center: 2 Tbsp. butter 3 1/2 cup miniature marshmallows Red food coloring Garnish: 2-3 tsp. milk chocolate chips for seeds Green food coloring 2 cups rice Krispy cereal Watermelon flavoring (I used a small Kool-Aid pack) 3 cups rice Krispy cereal Popsicle sticks

of pan and spread evenly, making sure it meet the outer ring.

Let cool and cut into 6-8 triangle pieces.

Add a few chocolate chips to each watermelon piece for seeds. You can the stick your Popsicle sticks into the center of the green rind if desired.

Set aside a little while before serving so triangles can set.

Poblano Rice Soup Yield: Makes 8-10 servings (about 2 1/2 quarts) 2 tablespoons butter 1 cup chopped onion 5-6 Poblano peppers, roasted, peeled, deveined and coarsely chopped Poblano Rice Soup 6-7 cups chicken stock, divided 2 (8-ounce) packages cream cheese, cut into chunks 3 cups cooked rice Salt and pepper to taste

DJ’s Boudain King Cake Loaf Yield: Each loaf serves 4 to 6 people 2 cans Original Crescent Rolls 2 links of DJ’s Original Boudain 3 Sharp Cheddar Cheese Sticks (Shredded cheese or cheese cubes will also work.)

1 Large Egg + 2 tablespoons of water + a pinch of salt (Egg Wash) 1 tsp TexJoy Seasoning 1 cup Shredded cheese 1/2 cup Fresh Chives 1/2 cup Crumbled Bacon 1 stick of Butter

Instructions:

Preheat oven to 350°F. Line a baking sheet with parchment paper. Open one can of crescent rolls. Place three rectangles of dough on baking sheet overlapping each other. Press seams together. Remove the casing of 1 DJ’s Original Boudain link by scoring the casing down the middle. Peel Instructions: off the casing and discard. 2021 Young Farmer of the Year Eric Flores Eric graduated from Bryan High School and attended The University of Houston where he received a bachelor’s degree in exercise science.

Shortly after graduation, he married Kacey White Flores and began working as a teacher and coach in Bryan, TX. In the summer that followed his first year of education, he began helping his father-in- law, Steven White, on the family farm, and quickly fell in love with farming.

Eric & Kacey moved to southeast Texas in 2012 and Eric began working on the rice

farm full time. He planted his first rice crop in 2013 and has continued to raise rice and crawfish for the past 9 years. Eric has gradually taken on more responsibility on the farm and has learned a tremendous amount from the Winnie rice farming community. Eric & Kacey have two children, Ralston and Rhett.

Ralston is 5 years old and will begin East Chambers kindergarten in the fall. Rhett is 2 years old and wants to be just like Dad. Both children love time spent on the farm getting muddy, riding tractors, and looking

2021 TRF Parade Marshall

Jeffrey Weldon Leger , “Little Jeff ” as he is known by, is the 2021President of the Texas Rice Festival.

He was born October 14, 1974, the oldest child of Jeffery Leger of China and Renee Riggs Greak of Sour Lake. Jeff was big brother to his sister, the late Amanda Leger Griffin, and brother Adam Leger. Jeff is a graduate of Hardin Jefferson High School. He currently lives in Beaumont with his wife, Sara and step-daughter, Taylor. He has 2 daughters, Kalyne and Tori. Kalyne lives and works in Austin and Tori lives in Dallas and attends University of Texas Dallas.

Jeff has a lot to be proud surrounded by all these lovely and talented girls. These girls and all of his family are the heart of his life. Jeff second love started early, flagging in the rice fields for his Dad. Jeff is now Vice-President of the family business, ”Twin County Air Ag”, where he works alongside his Dad and brother Adam. There is a good chance the airplane you have seen dipping and diving over the fields of Southeast Texas

Mayes Middleton, along with his wife, Macy, sons, Connor, Christian, Matthew, and daughter, Martha Ann, live in Wallisville, Texas. Mayes is a 7th generations Chambers County resident and Texan.

Mayes is President of Middleton Oil Company, an independent oil and gas company’s , and also runs his ranching, cattle, and farming operations. He and his wife support numerous local community organizations and faith-based charities.

Mayes was elected to the Texas House in 2018 to represent House District 23,

Jeff Leger

is piloted by Jeff. He takes great pride in his work. In 2017, the Texas Agricultural Aviation Association honored Jeff with the esteemed award “Pilot of the Year”.

In 2006, Jeff planted his first rice crop; he soon learned there was always work to be done. Building fences or cutting hay for the 250 head of cattle that graze on the family property. Jeff has been involved with the Texas Rice Festival since 1992 starting in the Agricultural Education Tent. Later He joined Reid Lowrance in heading up the Stage Crew where many long hours are put in getting the stage ready for the entertainers. In 2008, he Co-Chaired the Festival Support

Team. Jeff served as President of the Texas Rice Festival in 2010 and 2020. In 2017 Jeff, Adam and their Dad were honored when Twin County Air Ag was named Honorees of the Texas Rice Festival. In the last few years our community has recovered from hurricanes, area floods and much devastation, but, today we are moving forward together with the continued support of our sponsors and our many volunteers.
